SUMMERS IN SANNAT BY ELISABETH CARDONA
042 welcome to I’m quite certain that by this time of summer, the majority of us wish for nothing more than stillness, silence and sweet shade. It’s no conundrum why Gozo is the destination of choice during this time - it’s the epitome of relaxation; quietude and calm, rolled into a parcel of charming character. This issue, we focus on three homeowners who decided that visiting Gozo was not enough – a space that they can call their own on the island was a must. Homeowners Giuseppe and Patricia Piazzi invite HOMEWORKS to their stunning home in Munxar. The casually chic organically-based house of character is an eclectic mix of pure Gozo essence with distinct designer style and details. (Page 20) HOMEWORKS found a summer home in Nadur, which is a perfect display of how different styles and ideas can come together in the same space. Rachel’s sense of style is nothing less than spectacular - a balance of the romantic, the Bohemian and the elegant. (Page 30)
The Hideaway Home BY JO CARUANA

Jonathan Bonnici has poured his heart and soul into creating the ideal weekend rest haven for his friends and family. HOMEWORKS explores his gorgeous summer home in Sannat on (Page 40.) Renowned for being the interior designer on the American version of ‘Queer Eye for the Straight Guy’, Thom Filicia talks to HOMEWORKS about the colour red, his apartment in Soho and his new programme ‘Dress My Nest’. (Page 52.) With land at a premium, gardens have become a luxury. HOMEWORKS explores the modern alternative at Gozo’s new Fort Chambray – the communal garden. (Page 68) The Gozo issue certainly wouldn’t be complete without featuring two of Gozo’s top chefs in Sunday Lunch with Delicata on page 77. Chef Joseph Spiteri from Maji Wine & Dine and Chef Frank Refalo from Aztec Restaurant & Lounge Bar bring us two dishes each, offering great inspiration for those long summer Sunday lunches. Hopefully you’re reading this issue swinging from a hammock or waste deep in a pool in Gozo. If not, perhaps this issue will make you feel as though you are. Enjoy!

MARIA PSAILA IS THE WINNER OF THE VASE FROM PRESTIGE INTERIORS, WORTH €55.61. Maria wrote: Dear Editor, “I would like to congratulate you on the way HOMEWORKS is presented, packed with wonderful ideas on how to decorate the house. Apart from being distributed free with a local newspaper, it is also better than any other similar magazines. Every house is equipped with a number of electrical appliances, which need to be carefully chosen to suit the needs of the family and also use the least possible energy consumption. It took me some time to select the appliances for my new home since I had to visit certain outlets to gather information and choose the best ones. It would be a great idea if you could offer some product reviews on certain appliances, so that we can make a better choice without a lot of hassle.” Maria Psaila
READERSWROTE “Well done for a wonderful, superb and interesting magazine. I read it with great interest and I’ve been keeping each and every issue as my home encyclopaedia. My two sons have to get permission to grab a copy of HOMEWORKS off the shelf!

I wish to see some information on how to design different corridors. We’ve moved from a small maisonette to a three-storey house and I am finding it very hard to cope with three levels. I have almost completed each room, but the corridor, which is long and wide, is a problem. My main requirement is that it’s full of light. An article on suggestions and advice on this subject would be very helpful.” Maria Schembri

“I am always delighted when I see another HOMEWORKS included in the Sunday newspaper, as I have time to browse through it. I have kept all the copies, which are superb. My husband and I have been living in a terraced house for over twenty-five years and have been discussing how we could give our home a new look by incorporating antique furniture with more modern furniture. We would really appreciate and article about this. Keep up the good work and thanks.” A. Gauci
NEEDSYOU! HOMEWORKS READERS are invited to submit interesting photographs and a brief description of their homes, which may be distinct in their architectural design. COLOURS THIS YEAR Go Green:
Green may just become the newest “neutral” color. Used as a subtle backdrop to reflect an enhanced eco-consciousness, green is representative of the growing environmental movement. Mid-tone hues of fern, palm, pine and sage are being used on their own or coupled with clear blue or aqua, to create a living space that conjures up a sense of outdoor-friendly living. Sandy tans and warm browns can be intermingled to complete that earthy and eco-friendly feel. These combinations are an especially exciting choice for bathrooms, kitchens and family living spaces.
Sophisticated Elegance:
Gaining popularity in 2008, black and white paint hues have enhanced opulent living spaces that are filled with accessories, crystal lighting, mirrors and rich fabrics. Metallics and high sheen finishes along with rich textures benefit from the sophistication of this striking palette. For an unexpected colour punch, add cause related hues such as dramatic red or maintain the room’s classic undertones with subtle pink or taupe. Dramatic and sophisticated, black and white has become the backdrop for this season’s glamorous spaces. Black and white schemes look great in master bedroom suites and living rooms.
Crewel Colors:
The crewel colour palette reflects homeowners’ returning interest in crafts, home cooking and family focused activities. These hues add a soulful and personalized feel to any space. Handcrafted items create a sense of stability and security and these warm, creamy rich colours can do the same. Rich cranberry reds, warm browns, along with pumpkin orange help to create a nurturing and caring environment. Crewel colors remain an excellent choice for kitchen or dining areas and can be warming in family spaces.

IT WAS ONLY MEANT TO BE A SURPRISE BIRTHDAY TRIP. IT WASN’T INTENDED TO BE THE MOST IMPORTANT REAL ESTATE DECISION THE COUPLE EVER MADE. IN MARCH OF 92, GIUSEPPE AND PATTI PIAZZI ARRIVED IN GOZO ON A FRIDAY. BY SUNDAY, THE COUPLE HAD PURCHASED THEIR DREAM HOME IN MUNXAR.
B
y the August of the same year the couple had purchased the dilapidated farmhouse, they had finished the reconstruction of the master bedroom, bathroom and kitchen – enough to make the space liveable. For every year from then up until 2002, the Piazzis stayed in the house during the month of August, investing time in different areas of the space on each visit. They would come, lead a secluded life for a month and then spend the rest of the year working and travelling. As it does for so many, Gozo became a very special place for the couple. In May of 2007, the couple decided it was time to make the big move and leave behind their fast paced Milan fashion industry life in exchange for time-whittling Gozo. Giuseppe. “We knew we wanted this life. We wanted to secure a place and have this to look forward to, post career. The business just reached a natural end. For three or four years we knew it was happening. Things just changed too much.”
The feeding troughs in the kitchen were left untouched in order to respect the history, as well as to keep the character of the space.

When the couple bought the house, there was nothing to it. It had been abandoned for fifty years and was a far cry from the chic haven it has become. The rooms were bare and crumbling, the garden a mesh of overgrown prickly pear bushes and weeds. The construction wasn’t easy, particularly because the couple were away for so much of the time. Giuseppe. “For the first part of the construction, the work was quite poor and I only started realising when I got stuck into it myself. You can’t do up a place from another country, it just doesn’t work. You have to be there. You have to find good people who are good at what they do and you have to be present. It’s very difficult to achieve otherwise.” The house’s labyrinth effect was left unchanged, which is ideal for summer, but slightly less practical for winter. The Piazzis remain unfazed: “It’s obvious that not everyone will see it our way, but it doesn’t bother us in the slightest… we
see the raindrops like a blessing from the skies!” Giuseppe worked on the stones manually for five months straight last year and now “knows each stone, each nook and crook like the back of his hand”. He took all the cement that had been spread between the stone that was lethal to the limestone and through research and persistency, found the old recipes to mix the terracotta with another element to re-plaster the stone seams. Giuseppe spent countless hours scraping and brushing, slowly making his way around the house to take all the cement away before it did more damage. “We find ourselves fortunate to have travelled far and wide on this planet, but to have found a haven to decorate with our personal tastes at the pace we desire is nothing less than a wonderful gift. The time it took to work on each stone gave us the opportunity to invest more time in the design, as well as to find the right scents and colours for each room, building our own little eco village.”
The house’s labyrinth effect was left unchanged.

Cuttings from Morea, Maui and the Sannat cliffs surround the pool area.
The now pool area was a prickly pear forest, so when Giuseppe began working on the landscaping, it was something of “a Crocodile Dundee” experience of chopping and digging. The cranes and bobcats arrived later, invading the garden and under Giuseppe’s green thumbed direction, cuttings from Morea, Maui and the Sannat cliffs came into bloom. The pool was the perfect final touch addition. The decision was made to keep the feeding troughs in the kitchen as they were found in order to respect the history of the space, as well as to add character. The actual workspace is tiny, but Patti has organised it in such a way that everything can be found and is easy at hand. Patti. “Even if we knew that keeping the feeders in the kitchen would be sacrificing space, there was no way we could eliminate them. It would have been a crime to destroy all that stone and history…think of all the meals served in those feeders…! The space is functional and easy to clean and like this we have ample orange storage. We fill the feeders up with oranges – they make perfect holders!”

Undoubtedly, Patti and Giuseppe share a passion for design. The couple share the same tastes and collect things together on their travels, each to-die-for item at a time. Patti. “Research of fabrics, colours and all that, suddenly came to use here. All those things that we’ve collected throughout our lives and never brought out have all been placed here. That’s when you know it’s home; when you know it’s time to settle everything. It means it’s the house you’ve really chosen. It’s not a career hustle – you’re choosing it because you really want to be here. Gozo has that – you want to be here. There is really something special about the place and there’s something of a code between the people who live here.” Since they purchased the space, Patti has been dreaming of opening it to the public as a boutique hotel. “I’d love to pamper guests through every sense and I think Gozo has the natural ability to do that. We have been scouts and image-makers for over twenty years – we know how to find the final product. We know what would be perfect here or there. We cringe from pretension, but we know what we like. Our taste is ours and it comes from the soul, as well as the various moods we are in. Giuseppe has taught me to never hesitate moving and changing colours… it’s the elisir of life! Even setting the table and serving coffees requires a certain touch. The presentation is food for the eyes and senses… should the boutique hotel fantasize its way to reality… well, it would be all the more fun!”
“...That’s when you know it’s home; when you know it’s time to settle everything. It means it’s the house you’ve really chosen...”

itting by the pool of this expansive, picturesque farmhouse is nothing short of idyllic. Nestled into the alleyway of one of Gozo’s smaller villages, it serves as the getaway spot for owners Rachel and Michael. Rachel: “We wanted somewhere we could truly relax and get away from it all; Gozo is ideal because even if something urgent should come up, we’re only an hour away from home – it’s very convenient. When we found this house we weren’t looking in earnest, but our friends were. We had become used to house-hunting for them by default! The fact that the pressure wasn’t on probably made it easier. When we came across this property we immediately knew it was the one.” Michael: “We were looking for something special, not just a small house or apartment. This house’s potential was immediately obvious, as it was much larger than most of the ones that we had seen and had an adjoining field (now the garden), as well as a very pleasant view. We wanted a project that we could really sink our teeth into, and that’s exactly what we got. The house originally consisted of a small courtyard with an animal shed, two separate rooms and a corridor – that’s all! The land surrounding it was completely abandoned and simply housed a couple of lemon trees, but you couldn’t even see that from the house as at the time there were no windows facing outwards.” Today the house has been completely transformed into a property with four en-suite bedrooms upstairs and a large, open-plan living area downstairs – not to mention the sprawling lawn and garden.

“...WE WANTED A PROJECT THAT WE COULD REALLY SINK OUR TEETH INTO - AND THAT’S WHAT WE GOT...”
Michael: “A huge amount of structural work went on and our contractor (Joe Dimech) was fantastic at following through architect Saviour Micallef’s plans. The two existent rooms were opened up and one of the small yards was roofed over to become part of the indoors; by building further around the house we also gained more space upstairs. Landscaping the pool and garden area offered a lot of challenges as we had to plant some of the larger plants (such as the palm tree and olive trees) before finishing off the building works, otherwise they wouldn’t have fit through the door! The overall rustic and traditional feel has been maintained but at the same time it’s definitely very contemporary. ” Despite the fact that this is essentially a summer home, Rachel and Michael have been careful to ensure that all creature comforts are close at hand and that the house feels lived in.

Rachel: “We do come here as often as possible so the decor is very personal to us; it doesn’t feel like we did it up in a hurry, but instead is a collection of items that we have built up over the years and brought back with us from our travels. It may break all the rules of design but the overall effect is much more appealing.
the items that fit it like a glove; the result is much more special and unique. My favourite part of the whole house is the kitchen. We entertain a lot over here in order to really make the most of the house and garden.”
For instance, there’s a touch of ethnic but nothing too over - powering; I believe that you can easily blend styles but you mustn’t let one over power the other. I love natural fabrics, colours and textures and together, with our chosen furniture, that gives the house a very pleasing feel.
Michael: “The garden was something we focused on as we really wanted it to feel as though it was part of the house; during construction we opened up three large arches that overlook the outside and which added a lot of light it created a flow between the two areas. We love the outdoors and it was the extensive land that sold the house to us in the first place. Now it too has a style of its own and it’s very conducive to a few days rest!
I also opted for a few key pieces and made them a feature of the whole house, such as the root table in the living room, which originated in Burma. Instead of focusing on everything being perfect we have enjoyed hunting for
Because the house has been created in a style we’re very comfortable with, coming here never feels alien or unwelcoming. It’s the perfect solution, a home away from home and a true retreat.”

Summers in Sannat Jonathan Bonnici has poured his heart and soul in creating the ideal weekend rest haven for his friends and family. HOMEWORKS explores his gorgeous summer home in Sannat. Words: Elisabeth Cardona Photography: Allen Venables Furnishings, sofas, curtains and accessories by One Two One Interiors.
This is Jonathan’s second summer at ‘Dar Il-Palm’. He purchased the home in shell form and had the vision for it the moment he saw it: “I saw it and fell in love with the palm tree in the back. This, plus the open view, are what made me immediately go for this space.” There are a lot of other reasons for his choice. He wanted a summer home with the romantic feel of an old farmhouse without compromising on open plan living. He also wanted an abundance of natural light. The light pouring in from the entrance right through to the huge doors overlooking the pool area in the back was another important attribute to Jonathan’s
decision to take the space. “This house allows the line of sight to keep going upon entrance – no winding corridors and low ceilings that force the eye to go to different walls.” The abundance of light was further enhanced by fitting a skylight and enclosing the courtyard, which now houses a bright and modern kitchen. This has truly become the heart of the home where guests gravitate to.

The style of the house is genuinely tasteful, with just the right balance of old and new. “I tried to blend everything with the restful location”. The house opens up into the Gozitan countryside and borders mature fields. This presents a continuously changing landscape of earthy tones, as seasons change from the golden tones of summer to the greener hues of winter. “I kept the colour scheme neutral, from the white and stone walls of the interior to the earthly mosaic of the white washed pool outside. The result is one in harmony with its surroundings. Nothing stands out on its own but contributes to a restful ambiance that encompasses the landscape”. “For the interior furnishings I looked for earthy things, but I still wanted an elegant home. Above all, I went for things I like. There are a few antiques and then a mixture of other items. My personal favourite is the marble sculptured table base. I found it when I was on a business shopping trip in Italy and am thrilled that now it forms the base of my dining table where I share so many good meals with my family and friends. It’s really common to furnish a home with things that are reminiscent of its style, such as contemporary or classical. However, I choose things that I truly like, irrespective of their style. I feel that a careful mixture of personal finishing touches will ultimately personalise a home and give it its unique flavour.”

”…The result is one in harmony with its surroundings. Nothing stands out on its own but contributes to a restful ambiance that encompasses the landscape...”
The kitchen was finished in the same colour as the stone, so that there was an uninterrupted transition. The modern space flows into the classical dining room, which is unobtrusively divided by a small step. Roman blinds, made from gorgeous fawn coloured fabric, allow the view of the kitchen to be blocked off from the dining room when guests are enjoying dinner. Structurally, everything was focused on circulating light – even the front door with its traditional shutters was built in a way that allows the light to flood in while shut. Artificial lighting was

professionally planned and in the evening the mood changes, as the house is lit up with various low voltage pockets of lamp light, accent lighting and up lighters. Comfort was also a priority. “I wanted the house to be comfortable and fresh.” Bulky furniture was avoided and all fabrics were made from natural fibres, mostly cotton and linen. The English sofas in taupe chenille are especially comfortable and ideal for winding down.

Jonathan has always loved design and now owns a highly successful home furnishings business, using his creativity to source original merchandise. “I’m quite creative and I tend to have vision. It seems to come naturally to me. I don’t have to think about it – I can feel what’s going to work and what isn’t. The thing is, I’m also rather meticulous. I usually know exactly how I want something to look and I’m not happy before it’s done the way I need it to be.” For someone who doesn’t have a lot of time to relax, this space in Gozo was quite a leap for Jonathan. “I’m not one to sit around unoccupied, but I do relax when I’m here. Life is just different in Gozo – there’s a much more laid back attitude and it applies to everything. Malta has become cosmopolitan and although it’s great, it’s definitely more hectic. I feel that Gozo offers more of a Mediterranean lifestyle.” Jonathan used Gozitan craftsmen and workmen, whom he found easy to work with: “They understand what you want to do and somehow they do it. For instance, for my railings I went to a blacksmith with a rather unusual design. He’d never done it before and the design meant that he had to manufacture over 20 metres of railing by hand. I’m very happy with the result.” A turnkey watched over and directed the project, while Jonathan came down on a weekly basis to oversee the progress of the work. Together, they managed to finish the house in six months.

interview WITH THOM FILICIA
RENOWNED FOR BEING THE INTERIOR DESIGNER ON THE AMERICAN VERSION OF ‘QUEER EYE FOR THE STRAIGHT GUY’, THOM FILICIA TALKS TO HOMEWORKS ABOUT THE COLOUR RED, HIS APARTMENT IN SOHO AND HIS NEW PROGRAMME ‘DRESS MY NEST’.
Over here in Europe we have zoomed from minimalist to art deco in a rush. Design houses like Alessi are saying that Baroque is next. What do you say? Right now its about timely and the timeless. My style right now is classic meets modern, with detail and interest. Think classic interior design with a twist – clean lines combined with a more liveable feel than modern furnishings tend to have. Think traditional styling paired with strong, graphic patterns. Time-honoured classic simplicity and unexpected modern flair is my vision. I love the purity of simple strong lines, a muted palette with splashes of bold colour and rich, startling textures and patterns. I like to push boundaries in my designs and create unique and elegant spaces defined by beauty, comfort and style. The end result is always about creating space for living and working that’s bold in its approach, but that is classic, contemporary, and will stand the test of time. How do you go about building a design up in a space that completely uninspires you, or that has a lot of obtrusive elements? I don’t love period rooms. I don’t love mid-century houses with all the mid-century furniture. I like spaces that are about the people who live there, as opposed to it being all about the architecture. I like a room to tell a story. So I get inspiration from the owners and their stories to create a warm, friendly, inviting and relaxing space for people to enjoy. So I strive to incorporate meaningful objects. What is your favourite colour in the whole wide world? Red – I love the strength of it!

“...Time honoured classic simplicity and unexpected modern flair is my vision...”
What is the most inspiring place on the planet to you and why? I find inspiration in so many things. Especially nature. One of my favourite pieces in my apartment is a piece of driftwood mounted on a pedestal. I love putting those raw pieces in very refined spaces and balancing things that are modern with very, very classic pieces. I really like that sort of tension and layering in a space. As people worldwide are becoming more design conscious, there seems to be a surge in homeowners going out and buying furniture and décor from shops, taking it home and placing it exactly as they found it. In turn, people are simply duplicating style and a result a lot of homes look like “department store homes”. How do you think people can deviate from this and find the creativity within themselves to bring their own personal style into their homes? My philosophy is the same whether it’s a $200 chair or a $20,000 chair. What is the character of this piece, and how does it relate to the way you live and where you live? It’s all about form following function. You should think of good décor as a good friend. The same thing you look for in a friend, you look for in an interior. It should be attractive, interesting, warm, inviting , comforting, makes you feel good, dynamic, intellectual, fun and have a sense of humour. If you could do the interior design for any space, what would it be? My dream would be to do a yacht or an aeroplane. What does your home look like? My apartment in Soho is a modernistic and sophisticated meld of glass and art, but my lakeside bungalow in upstate New York is furnished in a woodsy style I like to describe as ‘’lake chic.’’ What book is on your bedside table? My book! It’s called ‘Thom Filicia Style’ and features some of my Dress My Nest case studies. What is your most prized possession? I like meaningful objects in my home, like the pair of sterling birds I inherited from my grandmother, or the old hook I kept from Summer camp. Precious things tell a story! My favourite accessory is a fishing reel I found in Las Vegas - I hang all my keys from it. I was inspired to buy it because it was the first natural item I saw in the glitz and glamour of Las Vegas! New episodes of Dress My Nest air Mondays at 8:30pm on The Style Network, on Melita channel 265.

With land at a premium, gardens have become a luxury. Fort Chambray presents a modern alternative – the communal garden. Photography: Mark Cassar Text: Jo Caruana
Owning one’s own piece of earth is becoming increasingly difficult. Buildings now extend upwards not outwards and the first thing to go is the garden – so an alternative for green-fingered folk is a must. The rise of the communal garden is something we’ve seen of late – sprawling complexes which incorporate green, outdoor spots for their residents: a place where residents can feel at one with nature even if that nature doesn’t belong entirely to them individually. Michael Caruana, the man behind the expansive Fort Chambray development atop Mgarr Harbour is adamant that the complex incorporates plenty of outdoor room and believes that communal gardens are a way of the future. “Gardens are a must and my vision for Fort Chambray has always respected that. I’ve wanted to get it just right – the right amount of colour to complement the buildings and to create a contrast with the sea. From day one of construction we set to work planting trees and shrubs so that by the time all the work is finished, the garden will already feel established.”

The winding walkways through Chambray are evocative of a desert oasis, with sand-coloured stones offset by natural-coloured wood and bright-green plants. Clearly Michael’s passion for aesthetics and atmosphere has created this magical blend.
“... OPEN SPACES ARE AS IMPORTANT AS THE UNITS THEMSELVES; I WANTED TO CREATE A BALANCE BETWEEN WHAT IS PRIVATELY OWNED AND WHAT IS SHARED...”
“We’re dealing with a historical spot so this element took a lot of consideration – that historical element is respected, catered for and believed in. Open spaces are as important as the units themselves; I wanted to create a balance between what is privately owned and what is shared. There’s a community aspect to the concept of the complex. Our residents can wander around the garden, meet people in one of the shady walkways, sit on one of the benches and stare out at the view, lie on the lawn or by the pool, or take a dip in the pool with their neighbours and friends. It’s a shared space that can be a lot of different things to a lot of different people, yet still feel personal and unique. Creating that atmosphere has been a delightful challenge.” It’s a challenge which has served the area well, as each space within the finalised Phase One of the complex feels comfortable, welcoming and relaxing – a haven within what will eventually become a bustling spot. “I was careful with my choice of plants. Primarily I wanted Washingtonian Palms because they are my favourite – the gardens are literally littered with them. They are beautiful to look at and provide all-year greenery. Plus they grow upwards, which means they do not take up too much space on the ground and will eventually provide shade. Until they reach that point, they remain small, bushy and equally pleasant aesthetically. The array of other plants we opted for are all ever-green in order to provide year round colour – some are flowering, while others aren’t, but they all add that little something to the space.”

IT’S A SHARED SPACE THAT CAN BE A LOT OF DIFFERENT THINGS TO A LOT OF DIFFERENT PEOPLE, YET STILL FEEL PERSONAL AND UNIQUE.
Michael was also careful that the plants should need minimum maintenance: “As so many people will be using the area, the less work that has to go into it, the better. While we have several full-time gardeners caring for the gardens all year round, I didn’t want the trees to continuously shed their leaves, as this could create problems for pool maintenance. Instead we opted for ‘tidier’ varieties.” The large communal pool area, which includes a beautiful wooden deck blends in effortlessly, as the chosen paint colour of the pool was beige – a much more natural alternative to the white that is usually used, giving the pool a bright blue colour. “Once again I knew what I had in mind for the pool area and worked with Architecture Project (AP), our architects for this section, to ensure we got it just
right. The pool is expansive, with plenty of scope for socialising or quiet solitude. As we are surrounded by the sea at Chambray I was sure that water should remain a key factor – when you’re in the pool, you can see the sea, which allows you to feel completely entrenched in it.” Aside from the more obvious elements, special attention was given to every stage of the development of this garden including lighting. “Here atmosphere is everything and lighting could make or break that. For this reason I was adamant that it needed to be soft, subtle and in keeping with the overall feel. There are no lampposts but instead we’ve hidden lowlights among the trees so that they can be lit up at night; all the arches in the walkways have been specially lit too to emphasise their grandeur.”
Essentially, the communal garden parts of Fort Chambray are all part of what it’s striving to create – a truly unique and charming spot for a luxurious Mediterranean lifestyle. “We have a massive amount of space at our disposal and I wanted to make the most of that. People come here and they love it because it’s so special and the gardens are vital within that. Personally, there is nothing more wonderful than sitting down on one of the garden benches, watching the ferry crossings and gazing at the cliffs and open sea. Open space and nature is all part of our concept for truly luxurious living and that’s exactly what we’ve created.”

SUNDAY LUNCH With Emmanuel Delicata Winery This Sunday Lunch is brought to you by Maji Wine & Dine Chef Joseph Spiteri & Aztec Restaurant & Lounge Bar Chef Frank Refalo. Bill Hermitage from Emmanuel Delicata Winery has selected the ideal Delicata wine to accompany each dish. Photography: Alan Carville
Pan Seared Goose Liver Foie Gras with Baked Apples, Wild Berries and Fruity Glaze Ingredients Serves 4 Foie Gras 500g goose liver foie gras (125g each piece) salt and pepper Baked apple 2 granny smith apples 6 whole cloves Wild Berry Sauce 50g strawberries 50g blackberries 50g blueberries 3 tbsps sugar 150ml port wine Method:
Chef Joseph Spiteri
Step 1 - Foie Gras Season the foie gras with salt and pepper. In a pan over high heat, sear the foie gras, browning them evenly, about 3 minutes per side. Remove from heat. Step 2 – Baked Apples Preheat oven to 180C. Wash the apples and stick 3 cloves into the skin of each apple. Bake for approximately 12 mins. Remove from oven and core the apples from the top, using an apple corer. Slice the apples in 5mm rings and put aside. Step 3 - Wild Berry Sauce Preheat the saucepan. Place the berries, strawberries, sugar and port in the saucepan over a high heat until the port is reduced. Remove from the heat. Step 4 – Assembling Arrange 3 apple rings in the centre of each plate. Place the foie gras on top of the apple rings. Finally, pour the wild berry and port glaze on top. Garnish with fresh rosemary. BEST WINE ACCOMPANIMENT: 2007 CASELLA MOSCATO. One of the world’s classic combinations is Foie Gras and Jurancon or Sauterne, although in some instances the sweet wine can slightly overpower this rich dish. Goose liver foie gras is strong flavoured and therefore requires a wine that is equally as strong. But in this particular dish we have other ingredients like baked apples, cloves, wild red berries and port, all of which lend themselves towards a sweet white wine partner. Combine all of these rich and fruity flavours together and you will find that a well chilled Casella Moscato is a surprisingly good match.

Rack of Lamb 1kg french rack of lamb 1tsp sea salt 20ml olive oil 3tbsps dijon mustard Mashed Potatoes 4 medium sized peeled potatoes 1 tsp wasabi 50g butter 30ml milk grated fresh nutmeg Chinese Cabbage ½ chinese cabbage, thinly sliced 10ml pumpkin seed oil salt and pepper Method: Step 1 - Crust Whiz herbs and breadcrumbs together in a food processor. Add the olive oil, mix well and put aside. Step 2 – Rack of Lamb Preheat the oven to 180C. Move oven rack to centre position. Season the lamb all over with sea salt and olive oil. In a preheated pan sear lamb for 2 mins per side over a high heat. Remove lamb from heat and brush with mustard. Roll in the bread crumb mixture (step 1) until evenly coated. Roast the lamb in a preheated oven for 10 to 12 mins or until pink with no blood. Remove lamb from oven and carve the ribs in 12 pieces. Keep warm. Step 3 - Mashed Potatoes Put the peeled and quartered potatoes in a pot with enough cold water to cover them. Bring the water to a boil. Cook until the potatoes are tender when pierced with a knife for about 15 mins. Drain the potatoes and mash them. Blend in wasabi, butter, milk and fresh nutmeg. Step 4 – Chinese Cabbage In a preheated pan heat the oil over medium heat and sauté the Chinese cabbage. Stir constantly for 3 or 4 minutes until tender and crisp. Season with salt and pepper. Step 5 – Assembling Place Chinese cabbage in three small portions on every rectangular plate. Pipe the mashed potatoes on top. Sit 3 pieces of the rack of lamb against the mashed potatoes. Garnish with marjoram.
Maji Wine & Dine
BEST WINE ACCOMPANIMENT: 2006 GRAN CAVALIER BARREL MATURED SYRAH. Oak aged, soft red wines and lamb have always had a comfortable relationship, as their flavours marry so well together. However, normally Syrah might be a little on the strong side, but in this instance we have Wasabi potatoes and a herb crust for the wine to contend with. Also the 2006 vintage of the Gran Cavalier was a light and delicate vintage and its soft, leathery, easy drinking style makes it a good pairing partner for this dish.

Tagliolini Neri with Lobster Ingredients Serves 4 1/2kg 2 200grms 1 2 1
fresh tagliolini neri cooked lobster tails halv ed cherry tomatoes teaspoon chopped garlic cups lobster stock touch of cream tablespoon olive oil pinch salt and pepper
Method: Heat a heavy based saucepan. Add olive oil and garlic, heat till browned. Add cherry tomatoes and lobster stock and reduce by half. Meanwhile, place pasta in boiling salted water for four minutes.Simmer the sauce and add the lobster tails. Mix all together and serve. BEST WINE ACCOMPANIMENT: 2006 GRAN CAVALIER BARREL FERMENTED CHARDONNAY (BRONZE MEDAL WINNER 2008 CHARDONNAY DU MONDE, BURGUNDY, FRANCE). This is a rich, full flavoured dish with creamy overtones and therefore demands a white wine with the same credentials. The Gran Cavalier Chardonnay with nearly two years age is full and buttery and has soft vanilla flavours coming from its barrel fermentation in French oak. The combination of flavours from the actual lobster meat and its rich lobster stock sauce that permeates through the creamy pasta when eaten with this well chilled Chardonnay, is a delightful combination that works really well.

Grilled Striploin Steak Marinade ingredients Serves 4 2 1 1 3 4
cups white wine tablespoon lemon zest teaspoon thyme tablespoon soy sauce striploin steaks, 400g each
Method: Mix all the ingredients together for the marinade. Add the beef and leave in the refrigerator for 2 hours. Grill to your liking. Serve with roasted potatoes and seasonal vegetables. BEST WINE ACCOMPANIMENT: 2006 GRAND VIN DE HAUTEVILLE SHIRAZ CABERNET OF GOZO. This is a simple ‘no frills’ combination of fullbodied red wine and a nice juicy steak. The steak is simply marinated with ingredients that just make it taste and cook better. The way you grill the meat will affect the end taste, but in most instances a full-bodied red wine is what you will need. Even the potatoes and vegetables offer clean uncomplicated flavours. This dish is just about good beef and good red wine. The Shiraz Cabernet that I have chosen also has some oak aging, together with some bottle age. That means that the tannins will be soft, but the fruitiness still very pronounced in what is still a relatively young red wine.
