After reviewing all of this year’s issues of HOMEWORKS, it reminded me that this industry has so many talented individuals, all with mutual respect for one another, all collective in their yearn to push the envelope. I’m so pleased to have the privilege of working with such accomplished HOMEWORKS contributors, but I also want to thank my immediate team – Marc Spiteri, Troika Zammit, Andrew Farrugia and Jon Bajada – for making it all happen every month. This issue is a testament of all the elements coming together to create a great edition; apart from three stunning homes, it’s jam-packed with yuletide trends and inspiration. Our woodland winter wonderland decorating feature is extensive, exposing totally different trended themes (page 052). Our craft guru Anne Marie Quercia brings us some big ornament ideas using very little (page 059). An article on real versus faux Christmas trees unveils some aspects not often considered when choosing between the two (page 071). We wouldn’t pass up the opportunity to show off some truly amazing nativity sets – Tonio Grech and Louis Carabott offer insider tips on how to make the most genuine ones possible (page 075). And of course, Christmas just wouldn’t be Christmas without the food. Chef Joe Vella lays on an unconventional three course Christmas lunch spread this issue. TRENDS This year’s Christmas trends are divided into three divergent styles. Alpine is all about the traditional cosiness of Christmas. Bird, heart, reindeer and gingerbread shapes in the classic deep reds and greens are prominent. Icy is all about that winter wonderland feel, although this year the darker blue is more of a cauliflower shade mixed in with baby blues and greys. Organic is very popular this year with eco-friendly features and elements brought in from nature. Earthy tones dominate this look against a backdrop of real Christmas tree greens

The colossal late 18th century eclectic dining room is impressive with its magnificent ceiling fresco
urchased ten years ago, Gloria Camilleri’s renovation priority of this magnificent Sliema townhouse was to retain its authentic features: “I wanted to respect the original architecture, as it’s a gem well worth preserving, but I also wanted a practical contemporary and liveable homely space using the grand areas as a backdrop.”

The townhouse needed attention to say the least; all plumbing and electrics had to be redone, the ceilings and bathrooms changed and the carpentry replaced. Apart from extensively restructuring, Gloria also built an extra bedroom and a much needed washroom. En suite bathrooms were added with each bedroom and as required, to a total of six bathrooms, living up to the demands of a contemporary lifestyle. Gloria went about converting the space into a contemporary style by retaining and respecting the townhouse’s original features and modernising them by using neutral contemporary colours. They also made it a point to work with, and not against the main elements, creating a focus based on the existing features for each of the more significant spaces. The colossal late 18th century eclectic style dining room is impressive with its magnificent ceiling fresco. “It was actually in very good condition at first, but it was damaged by flooding during restructuring works and had to undergo total restoration.” The space was planned as a dining area and was intended to house a lavish dining table and chairs, as well as the elaborate antique mirror that currently hangs on one of the walls. Opulent curtains were included to zone the large sitting/ dining room when required and to delineate, as well as control the light entering from the window niches at one end of the room. The room was paved using the original damaged 029

The existing height of the space was used fully to create a loft-style library, which is extremely functional. The raw metal flooring and a brushed stainless steel backsplash add to the utilitarian feel, but the use of bright warm colours and animal printed fabric give the space a particular character and warmth
marble flooring that was reconditioned and cut into smaller slabs. The floor in the adjoining sitting room had to be replaced entirely due to its poor condition. This room is isolated from the exterior dining spaces to the side of the kitchen by an elegant corridor paved in oversized contemporary glass slabs and leads to a guest toilet, clad in marble and designed to complement the grandeur of the nearby spaces. In the casual open plan kitchen area, Gloria wanted to create a library in combination with the living areas. “I loved the idea of using the existing height of the space fully. With the loft style library, this area is not only more interesting aesthetically, but also extremely functional.� The height of the space lent itself well to the introduction of a mezzanine level and a library area. The kitchen is an extremely functional space, designed to cater for frequent entertaining. Custom-designed raw metal flooring and a brushed stainless steel backsplash add to the utilitarian feel, but the use of bright warm colours and animal printed fabric give the space a very particular character and warmth. A large built in fireplace and custom designed unit in the combined living area extend this warmth over the entire room. Gypsum niches on the walls facing the street side of the house enhance the remaining columnar features in the room, while gold string curtains soften the light entering from the two windows. At the far end of the kitchen, a double height metal and glass structure fill the kitchen and library spaces with light and lead on to an outdoor dining area that in turn connects with the lower levels of the house. With regards to the master bedroom open plan with the roomy bathroom, Gloria wanted en suites in every bedroom. The solution was to take up a smaller bedroom and link the two for a more dramatic overall feel. The large openings in the space bathe the interior with a strong light that can be controlled by the wooden shutters fitted here and in the bathroom. The bed occupies the centre of the space and a large all-glass walk-in wardrobe at one end hides away all state-of-the-art services that complement this room. A wooden flooring installed across the room connects the original restored fireplace in the bedroom with the bath in the bathing area. The free-standing jacuzzi bath is clad in solid stone slabs and occupies the centre of the room, while the shower area and toilet occupy a separate cubicle that can be closed off entirely in the same sliding opaque glass doors as used in the wardrobe areas. A large dining terrace, fitted with a separate kitchen and guest toilet occupies the rest of this floor. More bedrooms are located on this level and in the upper level. They are light airy spaces having a contemporary feel and equipped with all the modern comforts, yet they remain firmly grounded within the tradition of the house in which they are to be found.

SPACES HW he house was originally a classic Maltese home with arched doorways and segregated rooms. The new homeowners wanted classic contemporary décor, which was elegant and stylish, yet comfortable and practical. They wanted a palette of soothing colours and textures, and above all, a final product that wouldn’t date.

Pippa Toledo put forward a design that originally seemed daunting, as it involved gutting out the entire house, bringing it back to shell form and starting from scratch. Pippa immediately suggested demolishing the dividing walls in order to create a large open plan area. In an effort to bring the outside in, Pippa introduced imposing floor to ceiling apertures. In nine months the entire house came together, allowing the new homeowners to enjoy their home just in time for the winter. As you walk through the white, high gloss double doors at the entrance, vision is immediately drawn to the internal courtyard feature, which is visible through a full height fixed glass pane. The Iroko decking in the courtyard provides a nice contrast to the white pebbles at the base of the grey tiled wall feature. The cladding seen on the courtyard wall is reflected in one of the dining room mirrors. The waterfall in the back garden is visible through the dining room’s giant glass windows to stunning effect. This consistency in design is a signature of designer Pippa Toledo’s. Even though she created immense open spaces to let light in, she also tied in every area of the house with the use of colour, textures, fabrics and features, such as wall cladding, custom made high gloss white furniture, large mirrors and other expert touches, which offer the illusion of more space.

The sitting room is a cosy space complete with a woodburning fireplace. Again, the mix of textures, colours, and fabrics is evident and carefully thought out in every corner of the room. A custom-built library and home office sit comfortably under the wooden clad staircase, making for clever use of every corner. Pippa: “I love a project such as this where I can literally strip everything down to a skeleton and start from scratch. We went the whole nine yards with this one. We maintained the grey, white and natural wood tones from the inside out and finished it off seamlessly with soffits, down-lighters and an intelligent lighting system, music and an AC system. Having the place done up in time for Christmas like this just makes the entire place come together as a home!� 040

his Naxxar dwelling wasn’t always a home; it has been used as a temporary nunnery (while the current nunnery of Naxxar was being built), a band club (this year celebrating their 150th anniversary), and also as a theatre. Now, it is home to a family who wouldn’t consider ever living elsewhere.

The couple says, “we lived in Naxxar after we married and our daughter was born. We used to go on walks through the village and we would always admire this lovely garden we passed by. We hadn’t even ever discussed the prospect of moving when one day we saw this advert in the paper about a house for sale and fell in love with the way it was described. We had to go see it and when we visited, we discovered it was the same house with the garden that we had admired on our walks. Within a week, we sold the ‘bachelor pad’ we were living in and moved into the house a week later.” The previous owner’s partner was an English interior designer, which resulted in the décor being something of an English cottage style; a multitude of fabrics, patterns, and a lot of clutter. When the couple moved in, they retained some of the style but de-cluttered, as well as connecting the two separated structures, which must have been this way for well over a hundred years. A logga, or corridor upstairs was also later added and closed in. In terms of the interior décor, the couple manage to strike a balance of old and new. The lady of the house spent her childhood in Asia before returning to the UK with her parents, the influence of which can be found throughout in some pieces that she has inherited and others that she has collected. The couple also make it a point to bring back a new memory from each travel they embark on. “Every piece in our house has a story. We love that because we’re surrounded by things that mean something to us.” 045

In terms of choosing things together and being in agreement of style, the couple has a unanimous policy: “Our way of revamping is to change furniture and fabrics. There are some pieces that either of us inherited from our families before we got married, but when it comes to making any new purchases, we make sure that we’re a hundred percent in agreement before buying. We do get carried away with fabrics. If we’re buying for the dining room, we try to keep in mind that we’ll probably have to live with it for some time, whereas fabrics in the living room come and go more often.” “We upgraded the kitchen about five years ago, which was a great idea. It’s always been our favourite area of the house, as it’s open and easy to talk to whoever’s around while cooking. We always have our meals at table and when it’s casual, amongst the family, we eat at the dining table there.” Entertaining family and friends is high on the couple’s priority list. The house is a labyrinth of room after room, each one equipped for a different type of entertainment, all wrapping around the garden, which brings in lots of light, as well as lush greenery. “This is a great family house and we love it when it’s full of people and life. When our daughter was younger, she used to have so many parties with lots of children coming over. Now that she has flown the nest and gone abroad to university, the house fills up in summer when she and her friends are visiting. We were the only ones of the family that could sit down 65 in one go, which meant that Christmas lunches were always held at our house. We loved it. Now, the family has gotten so much larger so it’s impossible to have everyone over but we still celebrate Christmas in a big way with family and friends. This house… it’s like Christmas all year round. Regardless of the season, we still entertain as often as possible – we even had a fundraising event for the S.P.C.A in the garden.” 047

Every year they paint something so that there’s a consistent upkeep. They have installed an industrial solar system, which means that they virtually never have to pay for water. An extremely large well provides water for all the toilets and garden watering. Benjamin Franklin once said, “A house is not a home unless it contains food and fire for the mind, as well as the body.” This is precisely what this home is – a place of vitality and warmth. And this is by no accident – the homeowners have made it this way; a place where friends and family feel that they have reached a haven. “This is home to us in the real sense of the word. We wouldn’t give it up in a million years.” 048

FETCHING BONNIES You’ll need • Kartuncina • Magazine (the paper will react to the water of the glue so choose one with thick pages) • White glue • Brush to apply glue • Large needle and thread to hang the birds • Cutter Method 1. Copy the pattern on the kartuncina; repeat, placing the pattern at the right angle with the first one (so the directions of the fibres of the kartuncina are crossed because you do not want the bird to roll on itself). 2. Cut the two shapes and glue them together. 3. Choose a patterned page in your magazine, apply a little glue on one side of the bird and then glue. The paper will be humid and fragile with the glue, so leave it to dry before cutting the extra around the bird shape. Repeat on the other side. 4. Mark the position of the hole, pass the thread with a strong needle and close with a knot. 059

FRAME YOUR MESSAGE
You’ll need • Seven frames - Ideally all different shapes to create an interesting effect. Try not to get them bigger than A4 paper unless you have a large format printer • Paper • Scissors • Computer and printer • Nails and hammer for hanging Method 1. Measure the mounting area of each frame. 2. Using a word processing software (i.e. Microsoft Word) scale the letters to fit the individual frames. 3. Once completed, print and mount into the frames. If the frames are smaller than the paper, trim the paper with scissors until the paper fits. 4. Mark the position of each frame on the wall. Hammer in the nail and mount. Alternately, you may place frames on existing shelves.

EASY PEASY MOBILES Craft 4
MAGIC WASHERS You’ll need • Set of small aluminium cake cups • 2 paints in contrasting colours (here we used Brolac eggshell red and Brolac eggshell mustard) • 3 or 4 small branches • Thick thread (or thin rope) • Needle • Glue Method 1. Cut the cups to so that just the disk is on the bottom 2. Lay the disks flat and apply a coat of paint. Leave to dry and paint a second coat if needed. Leave to dry and repeat on the other side. 2. With the other paint, use the thin brush to add a design to the washers. Leave to dry and repeat on the other side. 3. With the needle, pass a thread through the top of the disk and close in a loop. Repeat for each disk. 4. Create two or three larger loops with the thread and hang the branches on top of each other. When you find the balance point, add a small drop of glue to secure. Then add the decorated disks on the branches and secure with glue when you’re happy with the display.
You’ll need • Set of metal washers • Two paints in contrasting colours (here we used Brolac eggshell red and Brolac eggshell mustard) • Two brushes (medium and thin) • Assorted ribbons to hang the decorated washers Method 1. Protect your working space. Lay the washers flat and apply a coat of paint. Leave to dry and paint a second coat if needed. Leave to dry and repeat on the other side. 2. With the other paint, use the thin brush to add a design to the washers. Leave to dry and repeat on the other side. 3. Pass a ribbon through the centre of the washer and close it in a loop with a knot. 063

WRAPPED ORNAMENTS You’ll need: • Styrofoam balls • A variety of material scraps • Pieces of holly berry and pine needles • Thin red string Method 1. Cut out a scrap of fabric about 25 x 25cm and lay a ball on top of it. Double layer with tulle for a fun effect. 2. Gather up the fabric and tie it closed with ribbon, tying it tight. Trim off the top and poof it out. To create a ‘sweet wrapper’ effect, bunch up and tie both ends. 3. Add in a sprig of evergreen and tie a small bow with the red string. 4. To add a hanger, put ribbon around the ball and snip a little hole in the bunched up top. Poke more ribbon through it.

There is nothing more Christmassy than the smell of pine needles. On the other hand, do you really want the hassle of those little needles all over the floor? HOMEWORKS brings you a few things to remember when choosing between a real or faux Christmas tree
CHRISTMAS TREES ARTIFICIAL VS. REAL The first thing that many think of when considering buying a real Christmas tree is the lovely scent it releases. The second thing they think of is the mess the dead pine needles leave behind. Artificial trees have become increasingly popular in the last couple of decades, as manufacturers have been able to make them look more and more genuine, as well as making them easier than ever to assemble. For those that don’t have a lot of time on their hands, artificial trees can be extremely convenient, as they can be dismantled and stored from year to year, without the hassle of having to go out and buy a real tree every Christmas. In addition, a major advantage is that artificial Christmas trees don’t have any needles to clean up.
Artificial Christmas trees can be set up much earlier and left up longer than real trees and buying artificial helps prevent the cutting down of a live tree. Coarse needles will never prick fingers, so artificial trees are easier to decorate. A lot of artificial trees also tend to have a fuller look. Many think that it’s not ecologically friendly to have a real Christmas tree. However, faux ones are also a concern, as they are made from non-renewable petroleum. Despite them being safer, they can still catch fire, which will cause a release of toxic fumes. Also, artificial trees cannot be recycled; when taken to the landfill they last many years and when burned – again, release toxic fumes.

Real trees are, of course, renewable resources, and most garden centres operate on the principle of re-growing their farm. However, real Christmas trees are more of a fire hazard than artificial trees, which typically have some flame-retardant qualities. Real trees require the maintenance of consistently cleaning up of the needles. Real trees can also trigger allergies in some cases. An alternative to the traditional looking Christmas tree is to be creative and make a completely different tree yourself. There’s nothing that brings on the true Christmas spirit more than elaborate nativity sets. HOMEWORKS finds two truly outstanding nativity creators who offer their insightful tips on how to create an impressive Christmas crib

Louis Carabott - Tips 1. Build the crib in stages. 2. Make the buildings out of balsa wood and cover in putty. Sprinkle with fine dust for more effect. Paint with a mixture of enamels and oils. 3. To make domes, use plastic tops from aerosol cans, such as deodorants or hairspray. 4. For the terrain, use a mixture of sand and the building mixture of white cement and PVA glue. Apply this on the basic structure, which can be formed from expanded polystyrene. Then give it a coat of water, paint and add brown dye to create different shades of browns and ochres. Once that’s finished, apply a generous coating of PVA glue and leave it to dry for a couple of days. Later, dilute mixtures of oil paints with white spirit to create different greens and browns. Work it around the nooks and crannies. Once this is dry, dip a flat household paintbrush in a lighter shade and rub it vigorously on a cloth. Then, use the dry-brushing technique to go all over the groundwork. This way, the highlights really pop out.
5. Do as much research as possible on the time when Jesus Christ was born so that you can depict the crib as accurately as possible. For instance, there shouldn’t be any windmills, as they did not use them in Bethlehem. There were only grottos with animals and the occasional dwelling, which were very basic. Animals like donkeys, camels, bovines, goats and sheep were common. 6. Make pumpkins from sculpting putty. 7. For the landscape, collect things from a simple garden; lichen, skuk, pebbles, little stones, etc. 8. Create trees from little bushes found in Malta’s countryside. 9. Small lanterns really add an atmosphere – you can find them from electrical shops. 10. Use flickering bulbs for campfires to simulate a burning fire.

Tonio Grech Tonio Grech - Tips 1. Begin with a plan of the nativity scene in your mind. Remember to make a strong and sturdy base for the crib; you do not want everything to crumble at the end when finishing off with small touches. 2. Even if the crib is small, using different levels gives it a much better perspective. 3. Use natural material, which Malta’s countryside is full of; stones, pieces of dead trees, (Harrub are the best), gheruq tal qasab, zkuk tad-dielji amongst others. 4. Don’t be afraid to mix different materials – this gives the crib a more natural look. 5. Use LED lights in dimmable, different colours. They’re available in small sizes and are safe, since they use 12 volts DC. 6. The presence of running water gives the impression that there is something alive in the crib. 7. To make a natural sky, the best thing to use is a dark blue cloth and a couple of fibre optics ends. Fix them
through tiny holes in the cloth and connect them to a light source. They’re better if they flicker, as they emulate real stars. 8. With regards to the figures, place the big ones in front and the smaller ones at the back. Use lots of sheep, but place them in flocks, as opposed to randomly. 9. To light the cave, place two light sources at 90 degrees to each other to prevent shadows. 10. Use mostly green and blue lights on the outside of the crib, and red and yellow on the figures. Use ultra violet to light up the figures’ faces, which will give them a natural look. Tonio Grech has been creating his nativity scene voluntarily at the MUSEUM Boys section of Nadur for the past 16 years. Broccoli, Stilton and Pear Soup
Ingredients (Serves 4) 1kg 80ml 100g 2 25g 50g 100g 200g Handful
large heads of broccoli hot chicken stock stilton, crumbled firm ripe pears butter celeriac celery onions, chopped of toasted flaked onions, to garnish
Method Cut the broccoli into florets, but do not waste the stalks. Peel off the tough skins from the stalks and roughly chop up the tender core. Fry the onions with some oil and butter, add the celery and celeriac, add the broccoli and add the chicken stock. Bring to a boil and cover the pan. Cook for five minutes until the broccoli is tender but still bright green.
BEST WINE ACCOMPANIMENT: 2011 VICTORIA HEIGHTS CHARDONNAY D.O.K. GOZO “Pairing up a wine with soup is always difficult, but when you have ingredients such as stilton, celeriac, celery and ripe pears in it, it’s even more difficult! The amount and strength of the stilton used in the recipe can alter the flavour of the dish incredibly and if Stilton is unavailable and Roquefort, Gorgonzola or Danish Blue are used as a substitute, the flavour between one soup and another will differ dramatically, depending on the degree of ‘saltiness’ within the blue cheese. On top of that, of course you have the sweetness of the pears. My final choice would have to be a ripe white, although a medium dry rosé might be interesting, so I’ve gone for a clean, fairly buttery Chardonnay from Gozo; and if you can find a 2010 vintage rather than a 2011, it will probably be an even better accompaniment.”

Escalope of Turkey with Sautéed Vegetables

t urkey escalope, 150g each pecorino cheese parmesan cheese, grated parsley, chopped thyme olive oil egg yolks asparagus cherry tomatoes
red pepper, diced yellow pepper, diced aubergine, diced courgette, diced olive oil garlic, crushed whole garlic basil leaves almonds, roasted pistachio, roasted of balsamic vinegar sea salt & crushed pepper corns
Method Coat the escalope of turkey all over the egg yolks, Parmesan cheese, Pecorino cheese, parsley, thyme, salt and pepper. Heat the olive oil in a pan and fry the turkey over high heat for two minutes on each side until golden brown. Dice all the vegetables. Heat three tablespoons of olive oil in a large frying pan; add garlic, peppers, aubergines, courgettes, basil and fry over a high heat for three minutes until just tender. Take off the heat and dress with some oil. Drizzle with oil and balsamic vinegar, salt and pepper. To serve, spoon the vegetables in the centre of the plate and put the turkey escalope on top. Serve with some chive mash potato, grilled cherry tomatoes, butter fried asparagus and deep fried sage.
BEST WINE ACCOMPANIMENT: 2011 GRAND VIN DE HAUTEVILLE VIOGNIER, D.O.K. MALTA “For those of you who would prefer a red, choose a light to medium bodied fruity red with low tannins, but a fullflavoured dry white with good weight would be my first choice. Because of the slightly salty Pecorino and Parmesan flavours that will coat the white meat escallops (which are then to be fried and accompanied with butter fried asparagus and other sautéed vegetables), this dish would probably benefit from a wine that is cold, crisp and fruity; but at the same time it needs to have the body to cope with the fairly stronger elements of this dish, such as the peppers, the cheese and the roasted nuts.”

MALTA LIQUEUR WINE “Chocolate and Moscato are a classic combination and especially when oranges, vanilla and caramelised chestnuts are used in the recipe as well. This rich, tasty dessert requires a wine that is as equally rich and sweet, and because of the little bit of age of this particular wine, delicious mature honeyed flavours intermingle with the creamy elements of this dish perfectly. The mouth-feel of this wine is also important, as it has the weight and viscosity to complement the sweetness of the dish whilst remaining crisp enough to refresh the palate and counterbalance the stickiness of chocolate sponges.�

Chocolate sponge method Combine all the dry ingredients together in a bowl. In another bowl combine the liquids together. Then with a blender mix the dry ingredients liquids. Bake for 30 minutes, oven mark 180C. Cool completely and then cut the cake in round slices.
Chocolate cream method Boil the milk with the sugar and orange zest. Then add the egg yolks and whisk until creamy. Remove from the heat and add the chocolate and the softened gelatine. Cool in the fridge.
Caramelised chestnuts method Boil all the ingredients together until the chestnuts become soft. Cover with the sponge and finish with chocolate cream. Let it set in a refrigerator for two hours or allow it to get cold. Dust lightly with cocoa powder. Garnish with orange segments and mint.
