EDITOR’S LETTER HW

In an instinct to survive, we as humans are creatures of habit. Regardless of our ability to think rationally, the instinctual, animal part of the human condition tends to dictate our way of thinking. We give in to mental patterns, which creates repetitive actions. This was the dilemma that the great American Architect Frank Lloyd Wright was haunted with. Luckily for the world, he came up with an influential resolution for it: organic architecture. The implication of the word ‘organic’ is exciting because it connotes truth and origin, life and earth. The thought that every living thing is related – the wooden bench made from the wood of a Swedish forest tree, the tabletop made from the quarried Carrara marble from Tuscany, the silk rug from worms in China – is a compelling one, particularly when humans are a part of this web. This issue explores ‘organic’ as it relates to the home – in design and materials. All three homes highlighted this issue are brilliant examples of an organic approach, while the features all tie in through materials, locations or concepts. SPACES HW The entrance to the villa bridge is made out of natural teak while the large pivotal front door is in oiled teak. A thin glass line in the door allows the outsider to catch a glimpse of the view to come, while doubling as a peep hole for the insider. An extensive use of travertine offers a highly natural feel

ou just know this villa is going to be special at first glance; situated high on a steep hill facing the sea, the building sits in the landscape both by its form and that of the materials used.

Architect Ray De Micoli: “The clients originally asked us to re-model the existing house on the same site, but we quickly convinced them to demolish and re-build. After visiting the site with the old house, the choice was clear; I was sure we could do so much better by starting afresh and creating something special. Looking back, I have no regrets.” The choice of materials and craftsmanship are exceptional. The vein-cut travertine floor against the cross-cut travertine cladding, the raw teak wood bridge against the elegantly oiled teak wood of the large pivoting front door. This is a production of superior materials – the characters are all the same, excellent and natural, just playing various roles for different functions throughout. Even the garage driveway looks good. Separated from the entrance by one of the three entrance-shading citrus trees, the change of natural travertine to natural Porfido stone flooring makes the divide official.

Clever Mediterranean vegetation hugs the entrance with a palette of various palms, pines and succulents, Birds of Paradise, citrus and olive trees. The entrance bridge leads to the front door, which includes a thin glass line through the teak serving as a peephole for those inside, as well as a view teaser for those on the outside. Back to the top, past the staircase on the same floor, the main bedrooms are situated; to the right, the guest quarters, all of which enjoy the spectacular view. Down the staircase again, the formal entertaining areas comprise of large open single and double height rooms, broken only with a split-level and one small wall. Architect David Anastasi: “The creation of the sequence of spaces was all about the sensory experience. It begins from the entrance courtyard, which greets you with the soft shade and the fragrance of citrus trees, as well as the sound of flowing water. The path across the bridge onto the sheltered entrance porch conjures interest, where the door reveals a glimpse

of what’s to come. With its low curved ceiling, the entrance itself instils a feeling of shelter, while offering a prospect over the formal entertaining spaces below and beyond. The route down via the staircase (which is situated perpendicular to the main axis of the house) is treated as a transition, and contrasts in both form and colour. The experience here again is multisensory with the wide spiral offering a steep gradient on the inside edge and a more relaxed shallow gradient on the outside edge. The volumes of the formal areas downstairs, although open plan in nature, were carefully sized – both in plan and in section – so the feeling of the space changes from each position, allowing a visual connection to the entrance, while the main focus is on the view to the pool, valley, sea and sky beyond. The pool and barbeque areas overlooking the view are the home’s sweet spots. Large glazed apertures bring the outside in and the proximity of the pool creates a myriad of 029

The casual open plan dining area and kitchen leads on to the pool area so that the indoor/outdoor divide is minimal

reflections. This is where the bulk of entertaining takes place, and although the garden isn’t large considering the size of the villa, there are a lot of paved functional spaces. Details, such as the external and internal Travertine, used in different forms and finshes throughout, the light neutral Crema Marfil marble flooring, and the prevalent solid wood is where the organic element of this design really comes in. The intersection of these different materials has been studied in detail where shadow gaps and trims define the edges. Interior Designer Caroline Webb: “The materials selected combine to form an articulated harmonious palette; different natural stones and woods were used extensively in different textures creating subtle contrast. Similarly, our meticulous approach to the detailing of ceilings, fitted furniture and bespoke items, such as full height doors continues this theme.”

Ray De Micoli: “Natural lighting was given priority in our scheme. It was an exercise in finding a balance in the type of natural light. The sea view is towards the north, which brings in a cool light; in the main reception areas we balanced this with the warm south light from the large window behind the staircase, and elsewhere we used skylights.” Various skylights were built in to all the window-less rooms so that the whole house was light balanced and evaded darkness – in bathrooms and walk-in wardrobes specifically (strategically placed in the shower or above a vanity unit to hone the natural light to the right places). Adjacent to the formal entertaining areas is the private and more casual open plan living/ kitchen area, which is so close to the exterior grass that it almost seems as if it’s sitting in it.

This idea continues with the horizonless distinctly shaped mosaic-tiled pool. The designers wanted the pool to be a bright blue that would interact and create a seamless connection with the horizon, sea and sky. The limestone near the pool was chosen because it’s lighter, less hot and non-slip, as well as creating a striking contrast to its neighbouring teak decking. The pool has different zones – an area for children to play and an area for adults to lounge (inclusive of the Martini seat, which is brilliant for resting drinking glasses effortlessly while leaning back to take in the sun). The goal of balance was definitely achieved here; from outside to inside, and then once in, that vision is balanced to what you see outside. The lighting is stunning throughout, all the while, the eye never managing to stray from that fusion of sea and sky for too long. 032

he homeowners of this San Pawl Tat-Targa villa wanted to get out of the previous hubbub and compressed living conditions of central urbanised areas within a multi-unit dwelling. They had a need to return to nature, which is why we called this project simply ‘Back Home’: as in, a return to our roots in nature.

The project needed a lot of work. The house had planning irregularities, poor links to the basement, a worn and mossy pool area, humidity in the basement and poor use of space, including overly proportioned hallways; a typical nonchalant hallmark of houses of the era. Moreover, the fantastic view potential was stunted due to a lack of openness, which also translated to a lack of a link to outdoor areas.

Integrating the functional uses of a family room dining / breakfast space and a kitchen in the pivotal position of overlooking the garden

Needless to say, the ball and chain was an imposition and not a choice. A substantial part of the rear part of the house needed structural alterations and parts of it needed to be demolished from the side curtilage (area of land attached to a house forming one enclosure with it). This cleanly made possible an insertion of natural light and ventilation to the basement by way of a yard; an important first intervention. Secondly, the disjointed vertical circulation needed to be tackled. 037

Here, the potential of the spiral staircase that was previously untapped became the spine in the virtual centre, with which we could access the basement by way of a carefully inserted comfortable spiral staircase. For drama and necessity of a sense of place, a circular skylight was punctured in the ceiling above subtending the centres of the existing and new circular staircases. As a result, a mesmerising oculus was born, to let in that all-telling spot of sun as it slides around the hallway in synchronicity with the motion of the earth. A cool and shaded outdoor dining area for those great day barbeques and evening cocktails. Peeking from below are the skylight eyes of the fitness area, which tune in to natural illumination

From then on, the details were many, and the choices of materials, products, textures and colours were all selected to work with the main concept of the project. Worth mentioning is the central hand-crafted and curved storage cabinetry staircase that cleverly halves the width of the stairs when viewed from below. This makes for a visual feast of slimmer spiralling ribbons rising up into the volume. Couple this with concealed lights that also get caught in the vortex, and the eye just sweeps the space with pleasure. 039

The multifunctional ‘tree-trunks’ hallway unit is also rather quirky. It starts by partially screening off the dining living area from the hallway, whilst affording a glimpse through. It also houses lights to give the impression of the sunrays streaming through trees. The functionality completes the purpose of the unit by providing storage to put your shoes and keys when you return home and a clever slide-out mirror to make sure the homeowners are ship-shape to face the world when they’re ready to go conquer it.

ookie the Cat slinks along the edge of the grey sofa amongst a variety of patterned scatter cushions, listening in as the homeowner says, “We’ve managed to mix our eclectic pieces with a modern backdrop design, created by Adrian Micallef. We wanted to bring character and warmth into the space, and we achieved this through our travel collections, materials, colours and features.”

The young couple wanted an organic feel to the apartment, but real materials are costly and they were on a budget. Adrian’s solution to this came through carefully chosen materials and colours. For instance, the flooring is a textured neutral dark concrete. A mixture of real and laminate woods appear throughout, so that it’s not easy to distinguish the difference. A prominent grey Ash wood laminate was used for the panelling behind the television, but then right next to this, the dining table is made of olive tree trunk wood, which shows a lot of grain and veins. Benches in natural light wood line the bar of the kitchen. Sisal rugs across the apartment further increase the natural and organic feel, as well as offer further warmth. Since the homeowner needed to base his office from home, Adrian designed an office that leads on to the dining room, which can then double as a boardroom. In order to save space, the dining room is sectioned off from the kitchen area with glass so that it is divided, yet still open plan. This is also a clever way to keep the dining room at the right temperature. 043

A large dining table and open plan kitchen were a must for the couple that love to entertain. Completely bespoke by Adrian, the dining table has two legs so that the table appears as if it’s coming out of the wall. Adrian says of the hardwearing olive tree trunk wood, “This is such a hard wood that if you touch it, you can feel the grains.” The mirror then makes the table look as if it’s longer, as well as making the overall space appear larger. The homeowners’ love of wine inspires the upper shelf for various wines, which doesn’t use up precious floor space (as well as the built-in wine bottle holder on the side of the kitchen cupboard). Adrian went with the colour chartreuse green for this area, as well as above the kitchen bar. “The olive from the tree of the wood we used is this green colour so I wanted to integrate it with the dining table and light fittings. I felt that this was a natural way to choose the best colour – I mean, what better hue to go with than that of the fruit of the tree?” The dining table pendant lamp lighting is in the form of cups to illuminate diners and food to the dramatic ‘Scorsese effect’. This brings about a connection on the table without lighting up the entire room.

Bespoke details designed by Adrian (such as the wooden light fittings over the kitchen bar in the same olive wood as the dining table) help keep the organic continuity subtle. The feature above the kitchen island conceals the ac unit, which leads to both the kitchen and living room. Adrian: “We designed quite a few features throughout the apartment that conceal unsightly areas or mess. For instance, the white media unit in the living room has a concealed door to hide the woofer. I used the same material that was used in the curtain to allow the sound to permeate through. Gas tanks for the fireplace and stove are hidden in a unit within a cupboard outside the terrace.” The small terrace off the living room offers some greenery to the space with its decked flooring and flowerpots. The homeowner says, “Although it’s small, the sun is there in the morning and it’s great to have a nice coffee while reading the paper.” The hallway ceiling is clad in panelling for continuity, while the corridor itself is lined with a mixture of frames depicting family and friends. was inspired by Adrian’s idea to bring the outside in, as well as to conceal the shaft. “I wanted to feature a typical Maltese window to make it look like you’re outside. There’s storage space behind it and the shelving conceals a shaft. It’s a fun way to conceal a shaft window, and to get light out of it still, as well as to create extra hidden storage space. Petunia flowers further enhance the sweet Mediterranean feel.” The wood panelling looks fantastic, but was no easy feat to install. Adrian: “The panelling is difficult because of our weather and the different temperatures. Also, in this particular space there is the central heating and ac. As wood moves and expands, it was really important that it was laid in professionally. The homeowner wanted warmth and the feel of wood. Wallpaper and paint are options, but I find that wood brings more warmth.” The bathroom design came from the same inspiration. The guest bathroom is made with dark bamboo wood, which is a less expensive alternative to teak with its hardwearing properties. This, contrasted with the rest of the bathroom in white, makes for a spalike feel. The bedroom boasts wooden panelling for the back wall with pendant and reading lamps built within.

The bedroom was designed to appear completely different to the rest of the apartment. Adrian: “The aim was to make it a different section altogether. I wanted to create something of a haven. I wanted to make it lighter and so brought in a completely different colour palette, such as the white flooring, blue wall and yellow accents.”

The wooden cladding creates warmth in the bedroom, as well as bringing in a natural feel. The panelling was no easy feat, due to Malta’s high humidity

The homeowner: “I want to feel free in my bedroom and I love the idea of feeling like I’m sleeping outdoors with a lot of space around me. I like the glimpse of teak in the bathroom for this reason as well.” All the furniture is wall-to-wall fitted in the bedroom and the wardrobe is comfortably walk-in. The overhead soffit is equipped with intelligent lighting so that it can be dimmed and set to five different scenes. The curtain and roller blinds are electric, which are tuned in with the intelligent lighting. To make the en suite bathroom as warm as possible, underfloor heating was installed. Adrian says, “It’s a great idea to install in a bathroom because it’s not that expensive for small spaces, and it makes the room so much more comfortable.”

The homeowners say, “We wouldn’t have done anything differently. Every space is utilised exactly as we wanted. When people come over, they perch on the island, then move on to the dining table. During the day, our office spills on to the dining table and it becomes a boardroom. In the evening, we go to our room and we cut away from everything in a light, warm room with plenty of space. The whole apartment is ideal for us. Apart from this, friends and family confirm that they really like it, which is a validation to us that we made the right choices.”

In an instinct to survive, we as humans are creatures of habit. Regardless of our ability to think rationally, the instinctual, animal part of the human condition tends to dictate our way of thinking. We give in to mental patterns, which creates repetitive actions. This was the dilemma that the great American Architect Frank Lloyd Wright was haunted with. Luckily for the world, he came up with an influential resolution for it.

I

In the late 19th century, architects were creating buildings based on repetitive patterns. Not unlike present day, materials and budgets frequently predetermined the type of residence that would be built. During Wright’s time, one style became prevalent and copied, which made people unaware of their surroundings with a complete lack if individuality in their homes and offices. If we analyse the appeal of nature, a lot of it is in its randomness. Wright explored this and as a result, became resolved in following this model of nature; an unmethodical yet evolved one that would function totally accurately. The plight consumed him, as he resolved never to create two buildings the same. Even his behaviour became arbitrary and unpredictable. This is when it began – Wright’s cast-off of routine in order to obtain mental fluidity. Three projects followed after this epiphany that would bring Wright to notoriety and set the precedence for architects to come. During the Depression, as a response to waning commissions, Wright founded the Taliesin Fellowship, which was an

apprenticeship school devoted to teaching architecture and other activities that Wright believed to constitute “a noble existence”: farming, gardening, cooking, music, art, and dance. Wright’s apprentices lived, ate, and slept at Taliesin, and worked with him as crucial contributors to many of his most well-known creations. When the legendary architect opened Taliesin West in the Arizona desert, he demanded that his budding apprentices spend weeks out in the desert, building their own shelter and subsisting on the “fat” of the land. Going back some years to 1926, in a letter to clients Mr. and Mrs. Darwin Martin, Wright wrote of the design of their summer estate project, Graycliff, “Coming in the house would be something like putting on your hat and going outdoors.” Later referred to as “the jewel of the lake”, the architect was inspired to create a home that was transparent, with views through the building to the lake beyond. Terraces and cantilevered balconies also encouraged lake views, and water features throughout the landscape were designed by Wright to echo the lake as well. A few years later, Wright was commissioned to design the notorious Fallingwater vacation home. In a response to his lack of inspiration, he chose to ignore the impending work and deadlines. After substantial time had elapsed and the client became vexed, he demanded to see the design instantly. Allegedly in a fit of creative energy, Wright began to design the house and decided there and then that it would not face the waterfall, but rather incorporate it.

The client loved the concept and Wright was further encouraged by the experience. He had forced his mind to see the project without research and in the now. It proved successful to create something entirely new without any preconceived pattern.

Fallingwater was probably the most famous of Wright’s residences, inspired by his desire to place the occupants close to the natural surroundings, with a stream and waterfall running under part of the building. Wright didn’t want them to just glance at the view, but rather become a part of it. Constructed over a ninemetre waterfall, the house appears much larger than it is. The house was more of a design for a family getaway, rather than for a primary home. The construction is a series of cantilevered balconies and terraces, using limestone for all verticals and concrete for the horizontals. The Taliesin West studio complex in Arizona was a laboratory for Wright until his death in 1959. It now functions as the Frank Lloyd Wright School of Architecture. 057

MATERIALS Predominately made of wood, furniture is typically constructed of one of three kinds; hard, soft, or engineered. The kind will determine how long the furniture will last, and how well it will age. Hard wood from deciduous trees (oak, mahogany, teak, walnut, etc) is the most durable and long lasting. Typically, the wood is air and then kiln-dried to take away all the moisture. It’s possible to find good quality furniture in soft woods from Coniferous trees (pine, red deal, cedar, etc), but they’re less durable and more prone to scratches and dents, requiring more care. The best fabric companies will use organic materials. Belgian company Designs of The Times focuses on the delivery of quality fabrics though the best materials. Find it at LOFT

When buying a quality piece of furniture, rock or jostle the piece to test for sturdiness. It shouldn’t creak, distort or jiggle, and it should be level with the floor. Occasional table by Danish company HAY from LOFT

The majority of furniture produced today is made from engineered wood, which includes a range of derivative wood products that are manufactured by binding the strands, particles, fibres, or veneers of wood, together with adhesives, to form composite materials. Typically, sawmill scraps and other wood waste are used for engineered wood, but whole logs are usually used for veneers, such as plywood, MDF or particleboard. When it comes to upholstered pieces the material used to upholster the piece is very important. The weave should be tight – a loose weave will catch and later, wear badly. Like with furniture, the best looking fabrics are made from organic materials – silk, cotton, etc, although they may not necessarily be the most durable.

Nowadays, dovetails are machine-made, but they should still fit tightly and not have to be nailed to fit. Good joints can also have dowels or screws, but will never be stapled. Any glue used will not show outside the joint.

Look for corner blocks which add to the strength and stability of a piece. These are not visible from the outside, but bolt to both sides of interior corners.

Sanding, staining, and finishing are part of a good quality wood finish process. Sanding should be smooth so that when felt, there are no rough patches in the furniture. A good quality staining will be even, without any dark spots. All sides and the ends should be the same tone. The finish should be smooth and free of rough spots, dust specks, or bubbles. Look for depth and richness in the finish, which comes from several light coats of finish with sanding between the coats. In order to reduce the chances of swelling or shrinking, a quality piece is finished on the back and on the underside as well.

A good quality desk or chest of drawers may have dust panels or thin sheets of wood between drawers in the body of a chest or desk. This not only makes them stronger structurally, but also keeps dust away from clothing or papers. Drawers should effortlessly slide with glides and have stops to prevent them from being pulled out altogether. Likewise, doors

and the ends should be the same tone. Look for splintered edges, spots, dust specks, scratched or dented surfaces, or bubbles. A good quality finish should be smooth all around. Look for depth and richness in the finish, which comes from several light coats of finish with sanding between the coats.

WITH FURNITURE PIECES Rock or jostle the piece to test for sturdiness. It shouldn’t creak, distort or jiggle. It should be level with the floor.

WITH UPHOLSTERED FURNITURE Check the seams of upholstered pieces. The stuffing material should not be visible – the seams should be tight, straight and there should not be broken threads. Check that the upholstery is on both sides of the cushions. (A new way to cut corners is to only up the upholstery material on the top and sides and use a cheap material on the bottom).

WITH RUGS Look for unattractive dark lines or scratches across the surface of a wood finish. This is proof of poor sanding, as well as patches. Improperly sanded wood does not take stain evenly, thus resulting in patches. Inspect the finish from different angles to check for blotchiness or scratches.

Look at the back of the furniture piece to see that it is not shoddy. A good quality piece will be superior from front to back. Check how the feet of the couch or chair are attached – they shouldn’t be screwed in, but rather the legs should be all one piece with the frame.

In wool rugs, look for the individual knots at the back. The wool should not feel dry. Look at the material – organic materials, such as bamboo, silk, leather, goat hair, wool and polyester fibres equal quality. Wool from high altitudes is the best kind.

MELINA SCODANIBBIO HIGHLIGHTS THE IMPORTANCE THIS EVERGREEN, HARDY AND AROMATIC PLANT HAS BEEN GIVEN SINCE ANCIENT TIMES The botanical name is said to derive from the Latin laudari, to laud or praise and nobilis, noble or famous. A symbol of victory, honour, fame and wisdom, laurel wreaths have been used to crown athletes, emperors and generals by both ancient Greeks and Romans. Later, in medieval times and the renaissance, poets and academics were awarded wreaths of leaves and berries, the bacca laurea, which is the root of contemporary words like baccalaureate and poet laureate. Legends, folktales and superstitious beliefs surrounding this plant are abundant. Greek mythology recounts that Apollo, god of light, healing and prophesy, insistently, and unsuccessfully, pursued the beautiful nymph Daphne, who was then turned into a bay tree by her father, to protect her virtue. In memory of his lost love, Apollo proclaimed the plant sacred and forever wore a crown of its leaves. Laurel was also believed to protect from disease, evil and lightning, while the death of a plant was considered a terrible omen. The laurel is native to the Mediterranean basin, where it grows spontaneously in maquis and woodland, but is also extremely popular as a landscape plant. It is usually found as a large shrub, but in ideal conditions can slowly develop into a tree of over 10 metres. The dark green leaves are oval, leathery and of course intensely fragrant. An even higher concentration of essential oils is found in the small, blue-black berries, which follow the inconspicuous, star shaped cream flowers. Laurus is a very easy plant to grow as long as a few basic requirements are considered. It prefers full sun or light shade, and most types of soil are suitable, but they must be free draining. GARDEN HW Despite the many aesthetic qualities, it is laurel’s unique flavour and fragrance that it is mainly grown for. The leaves can be used fresh or dried to season soups, stews and marinades, meat, chicken and fish dishes, as well as custards and other milkbased desserts. The dried berries have a stronger aroma and are also used in cooking. Bay also has countless other uses and beneficial properties. The essential oil extracted from the berries is used in perfumery, soap and candle making, liqueurs and as a topical cream to treat sprains, bruises and arthritis. A leaf infusion soothes cold and flu symptoms, stimulates the appetite, aids digestion and added to a hot bath, helps to relieve tired, aching legs. The essential oil from the leaves is antiseptic, alleviates migraines and headaches, and eases nervous tension and depression. MAKE IT: SIMPLE BAY LEAF RECIPES Bouquet garni: Bay is an essential ingredient of ‘bouquet garni’, a little bundle of herbs used to flavour slowly cooked dishes, such as soups, stews and casseroles. A basic recipe consists of two bay leaves, six sprigs of parsley and a couple of sprigs of thyme, tied with string or wrapped in muslin. Leaf infusion: 5 or 6 leaves in a cup of boiling water, steeped for ten minutes. For the bath add a bunch of leaves to a pot of cold water and simmer for 20 minutes. Natural insecticide: sprinkle a mix of dried bay leaves, cayenne pepper, tansy and peppermint in the garden.

GOAT CHEESE AND BROAD BEAN TORTELLACCI

Ingredients (serves 2) 150g 100g 30g 200g 3tbsp

goat cheese broad beans, peeled onions flour ‘00’ Dante extra virgin olive oil

Method 2 40g 20g

eggs cherry tomatoes parmeggiano cheese fresh herbs

For the dough, mix the flour, eggs, olive oil and a pinch of salt together, and add a little cold water if needed. For the filling, chop the broad beans into small pieces and mix with the goat cheese, then add the salt and pepper. To finish, fry the cherry tomatoes with onions, olive oil and some fresh herbs.

BEST WINE ACCOMPANIMENT – 2012 MALTESE FALCON CHARDONNAY - I.G.T. MALTESE ISLANDS “This is a very clean, mild pasta dish with no real strongly flavoured ingredients for the wine to cope with. The strength of the goat cheese used could increase the overall ‘gaminess’ of the dish, so I would go for a white wine that is soft, well rounded with medium to low acidity. It needs to be an un-oaked dry white that’s concentrated, having enough body and weight to just blend in with the other subtle flavours of this dish, but not dominate them. The Maltese Falcon Chardonnay has all these attributes and will pair up admirably with this fresh and tasty plate of pasta.”

GRILLED MILK-FED VEAL ON CRUSHED BROAD BEANS

Ingredients (serves 2) 2pc 200g 60g 40ml 20g

veal broad beans onions fresh cream garlic butter

Method Grill the veal on a very hot grill, then cook for four minutes in a medium oven. Leave to rest for three minutes and pour over the garlic butter before serving. For the broad beans, sweat some finely chopped onions and the broad beans, add the fresh cream, salt and pepper, and leave to reduce for four minutes.

BEST WINE ACCOMPANIMENT – 2011 MEDINA SYRAH - D.O.K. MALTA “With this beautiful cut of succulent milk-fed meat you could easily drink a full-bodied white wine with it, if you so preferred; and it would go equally well with the delicious crushed broad beans as well. But I am going to suggest a red wine, but it needs to be one that’s crammed with concentrated ripe fruit flavours that’s low in tannins. The strong tannins that can be found in a lot of red wines just aren’t required for a cut of meat like this; they will simply overpower it. This is a juicy, almost creamy piece of veal, with very little else in the recipe interfering with it. The Medina Syrah is a vibrant, juicy red that will not only compliment the meat in the middle perfectly, but will also marry fantastically with the delicious charred flavour that you will get once the outside of this meat has been grilled.

CARROT CAKE

Ingredients 2 160ml 200g 350g 50g 180g

eggs vegetable oil sugar carrots, grated walnuts flour

Method 1tsp 200g 50g 2/3tsp 200g

mixed spice cream cheese butter vanilla essence icing sugar

With a wooden spoon in a big bowl, mix the eggs, sugar, and then the oil. After the mix is smooth, incorporate the dry ingredients starting with the carrots, walnuts, spices and the flour. Bake for about 45 minutes on oven temperature 170 degrees. For the topping, mix the cream cheese and butter for a few minutes, and then add the vanilla and icing sugar and mix till smooth. Allow to rest in the fridge before serving.

MALTESE ISLANDS “This intriguing dessert has a number of ingredients, such as walnuts, mixed spice, cream cheese, vanilla and of course – carrots – all of which marry together fantastically to produce what to me is more of a pudding than a cake. In fact, for me the term carrot cake does not necessarily do this delicious dessert justice; something maybe a little less ‘vegetable-like’ might, in my opinion, make it far more appealing. Maybe something a little bit more regal like an ‘amber-spice cheesecake’. Anyway, whatever the name, it is delicious and deserves a rich, sweet, opulent white wine to accompany it, which is why I have opted for the aromatic, fruity, sweet Casella made from Malta-grown Moscato grapes – the perfect accompaniment.”
