EDITOR’S LETTER HW
According to the International Labour Organization’s World Employment Conference in 1976, the measurement of pure poverty attempts to define the absolute minimum resources necessary for long-term physical well-being. Even if we take it for granted, we know that shelter is one of them. As a result, we began the whole nesting concept a long time ago. Evidence has been unearthed that our ancestors attempted to make their homes more habitable from as far back as 5,000 years ago. They were extremely resourceful; they made paint by using pigment from minerals and binding it with animal fat and eggs. They then decorated their cave interiors with it, painting chevron and zig-zag designs on the walls. We’ve come a long way in half a Kilennium. Basing an issue of HOMEWORKS on a nesting theme could be done at virtually any time because it’s the essence of the home, but we thought November more apt with the onset of the cooler months and the instinct to begin making our interiors as comfortable and cosy as possible. Winter is coming. This issue of HOMEWORKS hopes to get you ready for it in style!

CLAUDE WROTE:
THE ARCHITECTURAL ISSUE
“It’s difficult to suggest topics and features to bring up in HOMEWORKS as you have already delved into such a vast area of home design. What I suggest is a feature about brass décor, which is making a comeback. Brass works well in old houses, but can also be matched gracefully with contemporary design. The feature could also deal with the best ways to preserve brass and keep it in the best possible condition.”

The homeowners’ brief was a concoction of warm spaces accentuated by their love of natural wood, retro and distinct one-off pieces, whilst retaining maximum practicality and functionality. The architect’s and homeowners’ mutual respect for steel and natural materials was exploited while the architect carefully introduced hints of Nordic and industrial design. The architect developed the homeowners’ thoughts and presented a concept using the natural textures of the raw materials; mainly wood, steel and marble. The real wooden oor lan s act as a warm can as or w at lies a o e. On entering the home, a relatively vast space greets the isitor a nting t e itc en as t e main oc s o t e s ace. The kitchen, custom-designed by the architect, consists of a sharp masculine island in brushed dark grey stone, which is balanced by the natural oak backdrop of the back mass. The clients’ love for steel and functionality was also translated into a walk-in pantry combined with an exposed multifunction vertical black steel mesh. The architect introduced contrasting shiny hammered-brass touches – another natural material reminiscent of industrial design – within the kitchen handles and light fi t res. T e omeowners s en a lot o time tra elling aro n various cities, both for work and for leisure. The selected materials, together with the organised melange of exposed artefacts bestow that desired urban feel to the space. The guest WC on the same level takes the guest by surprise – to a certain extent. The black Venetian plastered walls provide a backdrop to another expanded steel mesh; a turquoise sheet metal basin and a signal orange movable storage unit. I DREAM OF VERSATILE DESIGN A design, that is still comfortable when you awake, is the best dream of all. A few simple movements are all it takes to adjust the position of the headboard, which can assume different positions to ensure maximum comfort, even when sitting up in bed to read or work. The back of the headboard features two spaces that can hold extra pillows, a blanket or a bedspread. The metal base further highlights the bed’s original design.
as the Sofa Collection. The range of functions is also extensive: two beds are available with space-saving storage bases with precision movements; one model also has an adjustable headboard. Designed in collaboration with major names from the world of design, the collection is 100% Made in Italy.

A passion for detail means not only paying attention to every aspect - however small - of what we design, but also breathing life into a particular taste. And nothing brings a bed alive like its bedlinens. Which is why we have completed our Beds and Accessories Collection with three exclusive bedlinen ranges to use in a matching or contrasting way. As tactile as linen or as sensual as satin. From cold, rational tones to warmer, brighter hues. All embellished with stylish details.
I DREAM OF TOTAL COMFORT We have always been committed to quality. And when it comes to sleep, quality is the most important thing of all. Which is why we decided to enter an exclusive partnership with TRECA, leading manufacturer of highend mattresses. Since 1935, TRECA has controlled the entire production process, from the choice of raw materials - all strictly of the highest quality - to the smallest details of the finished mattresses, which are still hand-sewn today. The axial layout of the property (as well as the sun and privacy factors) was an important factor in determining the position of the swimming pool. The effect of the rotation of the loggia was to blend in the new volume better within the existing structure. A PRINCELY TABLE TOP Mediterranean Ceramics were recently commissioned to produce a volcanic ceramic table-top depicting the eight-pointed Maltese Cross to donate to Prince William while he was in Malta, and another to the Pope by HE Marie Louise Coleiro during her visit to the Vatican. Designed and fired at the Mediterranean Ceramics workshop in Ta’ Qali, these table-tops are part of the revival of ceramic craftsmanship undertaken by the company. www.mediterraneanceramics.com
NENDO’S ICE CREAM CAKE VILLAGE Nendo’s “village” design for an ice cream cake will be sold at the Häagen-Dazs shop on the Champs Élysées in Paris at Christmas time. ‘Christmas is about homecoming, about spending time together with family, so we created a cake that’s a small village, composed of houses clustered closely together.’ The houses themselves are created in milk chocolate, filled with fudge and pieces of caramelised nuts. The rooftops have different patterns, and are dusted with a white chocolate powder, so that the village is nestled gently and quietly in the snow. Customers who purchase more than one cake receive a chocolate “bridge”, which allows them to connect several villages to each other, turning the cakes into “long, thin villages” and “big villages” on the table-top for large parties. www.nendo.jp

Chef Mark Briffa at Venus Restaurant brings us some great wholesome recipes to get us in the mood for autumn, while Bill Hermitage at Delicata Winery brings us the ideal wine accompaniments Recipes: Mark Briffa, Venus Restaurant, Bugibba Wine Recommendations: Bill Hermitage, Emmanuel Delicata Winery Photography: MAS Cutlery: Butlers
HOMEMADE RABBIT RAVIOLI WITH RABBIT RAGOUT Ingredients (serves 4) 1 rabbit 50ml white wine 20g garlic 100g onions 200g flour ‘00’ 15ml olive oil 2 eggs Parmesan Method For the dough, mix the flour, eggs, olive oil and a pinch of salt together and add a little of cold water if needed. For the filling, fry the rabbit with the garlic and onions and finish with the wine, cover and simmer for about one hour until soft. Take the meat off the bones and cut into small pieces, fill the ravioli and cook for about four minutes. For the sauce, strain all of the juices and reduce in a sauce pan until nice and thick. Finish the ravioli with some Parmesan on top.
BILL’S WINE RECOMMENDATION: 2013 MEDINA CABERNET FRANC - D.O.K. SUPERIOR MALTA “This delicious, fairly mild dish, with its sweetish reduced red wine sauce requires a red that’s soft, smooth and full of ripe fruit flavours. It’s important that the wine is low in tannins; don’t choose anything too full bodied or astringent, as it will overpower the rabbit and clash with the sauce. The hot climate, gold medal winning Cabernet Franc is a good option; it’s packed with concentrated fruit, quite firm, yet easy drinking.” 089

LOCAL PORK CUTLET WITH CARAMELISED APPLES Ingredients (Serves 2) 2pc pork cutlets 1pc apple 30g butter 5g fresh thyme 100ml red wine 30g sugar carrots zucchini red peppers
Method Pan fry the pork in oil and butter and cook in the oven for five minutes. Leave to rest before serving. Peel and cut the apples in wedges and cook in the same pan of the pork with some sugar. Cook until soft and golden brown. Cut the vegetables and cook in water with olive oil, salt and pepper.
BILL’S WINE RECOMMENDATION: 2013 GRAND VIN DE HAUTEVILLE VIOGNIER - D.O.K. MALTA “Pan-fried pork cutlets can be enjoyed equally with either dry white wines or light to medium-bodied reds, depending on your preference and the other ingredients included in the recipe. For this particular dish the only ingredient that has leant me towards a white is the caramelised apple - they would clash terribly with a red. The white needs to be fullflavoured, with good weight and bags of flavour like this Maltese hot climate Viognier.” 091

CARAMELISED BAILEYS CRÈME BRULEE (WITH BISCOTTI AND WALNUTS)
Ingredients (Serves two) 100ml milk 100ml fresh cream 1pc vanilla pods 1 egg 2 egg yolks 30g sugar 40ml baileys liquor Method Bring the milk, cream and the vanilla pods to a boil. Whisk the eggs and sugar and pour over the milk and the Baileys gradually. Set in ceramic Bain-marie containers and cook for 35 minutes at 160 degrease. Use some walnuts and biscotti to serve.
BILL’S WINE RECOMMENDATION: 2013 GRAND VIN DE HAUTEVILLE MOSCATO – D.O.K. MALTA LIQUEUR WINE “A classic combination: a creamy crème brulee and a rich sweet white wine. The combination of the caramelised sugar, the creamy vanilla and sweet Moscato is a match made in culinary heaven. Make sure the wine is well-chilled though, so that it’s cold enough to refresh the palate, as well as complement the food.” 093
