welcome to Welcome to the big issue on small spaces. This edition of HOMEWORKS brings you spectacular homes that maximise their limited space. Great architecture and design in Malta is invariably linked to the clever utilisation of limited space – the size of these spaces is becoming increasingly irrelevant. Architect Matthew J. Mercieca brings us an untouchable instance of smart design with Michael Zammit Maempol’s home in Birkirkara. The home offers a large amount of natural light, even though the ground floor consists of the typical layout of small rooms accessed via a central courtyard. Architect Mercieca pulls it all together on page 22. Interior designers Penny Apap Brown and Anabel Caruana play with space to bring an innovative indoor/outdoor area to an urban bachelor apartment on page 34.

On page 44 Interior Designer Michele O’Reilly creates a boutique bonbon of an apartment with eclectic furnishings on bustling Tower Road. This sea-front apartment is in one of the oldest of the newer apartment blocks in Sliema, which had architectural oversights that needed attention. Designer O’Reilly improved various elements, such as the tiny balcony with inadequate lounging space and lack of the sea view from certain rooms. What better time to start planning for interior upgrades than when the family actually has time off from work and school? This issue of HOMEWORKS offers an extensive exposé of great sofa buys on page 54. Still in tune with the theme of this issue, living in a small space doesn’t have to mean compromising on your outdoor space. Penthouse owners Annmarie Coppola and Mickael Marceau have created a brilliant outdoor area, inclusive of every element needed for outdoor entertainment and relaxation. Find inspiration on how to have it all on page 66. Also, don’t miss our HOMEWORKS survey on page 086. Help us make sure we’re bringing you the best photography, layout design and editorial possible. My best advice to HOMEWORKS readers: take this quiet time of year to sit down with the family and start planning for the autumn season. By the time next month’s HOMEWORKS Living & Dining Rooms Special Edition will be published, it’ll find you raring to go!

DAVID MUSCAT IS THE WINNER OF THE UMBRA WINE RACK, COURTESY OF GIFTS&MORE – TOPLINE. David wrote: Dear Editor,

“We really look forward for every new issue of HOMEWORKS. It’s always full of new design ideas. In particular we love to read about the design philosophy and concepts of the various case studies presented in each and every issue. The current buzz phrase that we’re becoming accustomed to is ‘energy saving’. It would be really interesting if you presented us with case studies of residences, which were constructed and designed with the inclusion of energy saving materials and techniques.” David Muscat

READERSWROTE “Each time I get your free copy of HOMEWORKS I realise how fortunate we all are to benefit from such a magazine full of useful information. My fiancé and I would both like to express our gratitude for all your tips, ideas and help. In the landing, at the top of our stairway, we have created a glass feature in the floor and we would very much like your help. We would appreciate it if you can give us any ideas of what we can put into this feature to make it eye catching and attractive. Thanks once again and keep up the marvellous work. Thumbs up to HOMEWORKS!!!”

“My husband and I live in a rustic farmhouse in Zebbug and have had the same style since we moved in over ten years ago. Lately, I have become more and more interested in the French style of chateaux. I would like to learn how to mix this look with the rustic Maltese style. I think the result would be really interesting. I hope that an article like this may appear in a future issue and look forward to seeing it one day. Thanks for all the HOMEWORKS and keep up this fantastic magazine!” Maria Muscat

HOME MAINTENANCE CHECKLIST TALKS TO THE EXPERTS AND BRINGS YOU A CHECKLIST OF ALL THOSE THINGS AROUND THE HOUSE THAT NEED ATTENTION AT THIS TIME OF YEAR. THIS WAY, YOU’LL BE FULLY PREPARED BY THE TIME AUTUMN SETS IN. INTERIOR UPGRADING “If you’re planning on doing any interior changes during the rest of 2009, now is the time to start planning. Most families have a couple of weeks off from work so this is the best period to sit down together with all the year’s issues of HOMEWORKS and start organising. When September comes around you can get estimates on all the elements you want to change or upgrade and by early winter you’ll be ready for the cooler winter months.”

MOULD PREVENTION If your home is prone to mould (most homes in Malta are) now is the time to start preparing for prevention. If you have traces of mould stains from last winter, make sure they are painted before the rain starts, as it will be impossible to do it once the damp sets in. Immediately after painting you’ll need to see which method you’re going to use this winter to keep the mould at bay.”

POOL INSTALLATION PLANNING “If you’re thinking of installing a pool at home, now is one of the best times to do it. If the winter is a wet one, works will be postponed and pool installation companies get a backlog of work. Come

springtime, the works that were scheduled to be finished throughout the winter will take priority to new work. The best thing to do is start planning as early as possible so that you have as many long dry days as possible to complete the project.”

GARDEN FURNITURE CARE “It’s the time of year to start considering whether you’re going to store your garden furniture away or cover it. Materials like teak can take weathering, but ideally you don’t leave it exposed, otherwise there will be more work to do in spring. Rattan, plastic and stainless steel furniture is the same but it should at least be covered. Custom-made covers are a good idea but storing them away is even safer. Start thinking about your spot!”

GARDEN MAINTENANCE “There are a lot of things that need doing in the garden at this time. Pick herbs for fresh use and for drying. Harvesting will keep them growing longer. Order spring bulbs for planting and forcing. Check that your mulch hasn’t decomposed and add more as needed. Spread a mid-season layer of compost or manure. Keep deadheading and harvesting. Leave some annual seeds to self-sow. Start saving seeds and taking cuttings. Remove any diseased foliage now,

so it doesn’t get lost in the autumn leaves. Cut back the foliage of early bloomers like hardy geraniums, to revitalize the plants. Pot up perennial divisions for spring plant swaps. Sink the pots into the ground this autumn and they’ll be one less chore in the spring. Plant trees, shrubs and perennials now, so they can take root, and keep them well watered. Get your autumn-blooming flowers planted so they’ll bloom on time. Start moving houseplants back indoors, so they get used to the limited sun exposure and humidity.”

WATERPROOFING “Now is definitely the time to think about sealing your roof, as it will be as dry as it’s ever going to be. We do tailor made membrane, which allows the homeowners to do the protecting themselves. It’s important to do it before the rainy days set in.”

There’s a new King of the colour charts: grey. The hues of this palette have begun to play a bigger role, calming down our interiors and becoming the new neutral. Grey of course is not standing alone; today’s young, eco-minded consumers are enjoying life’s luxuries but bringing their inner ethic voices with them. The new luxury palette reflects botanical hues (think deep red hibiscuses amidst a backdrop of soft turquoises and greens), and natural flower and root dyes to tint silks and cashmeres. Mineral (think mother of pearl and warm metallic shades) is looking great combined with earthy sensibility with refined taste. Greens have outgrown their rustic roots and ethical extravagance is the new status symbol.

LIVING TO THE MAX: AN OLD BIRKIRKARA HOUSE HAS BEEN GIVEN A CONTEMPORARY FEEL AND ITS OWNER, MICHAEL ZAMMIT MAEMPEL THE PERFECT ENTERTAINING SPACE. 022

A double-glazed skylight was built above to allow for the creation of the central core, as well as allowing the walls to be cut through. It permits light to emit the four ground floor rooms, as well as helping to gain space downstairs.

he immediate appeal to Michael Zammit Maempel was the building’s ‘good vibe’ and the amount of natural light it had, even though the ground floor consisted of the typical layout of small rooms accessed via a central courtyard. Michael engaged his friend, architect Matthew J Mercieca to bring a mix of rustic and modern to every room, to use every existing corner, create storage space where possible and very importantly, not to have perfectly square rooms. The owner’s dislike for right angles is one of those idiosyncrasies that have helped the property to acquire an identity of its own. Mercieca’s firm of designers and architects took care of every stage of the project. To create symmetry for the façade, a window was opened. Knocking down the

triple-thickness walls surrounding the yard was a complicated procedure due to its crucial role in the building’s structural strength. This created a more open space which became ‘the perfect entertaining area’. With the kitchen as a natural magnet, even though guests may spread out into the surrounding rooms, the feeling of an intimate gathering is not lost. Inevitably, people congregate round one of Michael’s favourite features, the kitchen bar. The front room, now a dining room, was obliged by MEPA to have its original ceiling of kileb and xorok tal-qasba retained. It has one original wall while the exterior wall has been faced with gypsum. The antiporta was set back to create extra storage at the sides, while its frosted glass door brings more light into the home.

THE GROUND-FLOOR STAIR AREA HAS FIVE FUNCTIONS: A SPARE TOILET, A STUDY, A HALLWAY, VERTICAL ACCESS AND STORAGE SPACE, AN INCREDIBLE FEAT FOR AN AREA OF NOT MORE THAN 10 METRES SQUARE. The cosy living room has an oak floor with under-floor heating and concealed diffused lighting both at ceiling and floor level. The custom-built triangular wall unit allows for storage space and creates the all-important irregular shape that Michael requested. The ground-floor stair area has five functions: a spare toilet, a study, a hallway, vertical access and storage space, an incredible feat for an area of not more than 10 metres square. The most impressive feature of the home, one that has contributed most to its practicality as well as being a conversation piece, is undeniably the glasscovered courtyard. Mercieca: “The double-glazed skylight was essential to the creation of the central core and allowed the walls to be cut through. It permits light to emit into the four ground floor rooms as well as helping to gain space downstairs. It also gives an indoor/outdoor feeling while facilitating circulation between the rooms. It is a steel structure of rectangular hollow sections which are quite pleasing to the eye. We created a gutter on one side and gave it a slight slant into the existing drain.

The courtyard floor has been retained at its original lower level. The fact that it steps down gives off the feeling of stepping outside and the use of darker floor tiles also contributes to this effect.

“The courtyard floor has been retained at its original lower level. The fact that you are stepping down gives you the feeling of stepping outside, which would not have been achieved had we kept the same level throughout. The use of darker floor tiles also helps create this outdoor effect.” On the first floor, the original stone xorok ceiling in the guest bedroom was replaced after it was found to be in danger of collapse and new timber beams were installed. This room was designed to be self-sufficient, with its own stepped-up wet area. A small balcony space was created to overlook the skylight and enhance the feeling of being outdoors. Large windows were added throughout the first floor to let maximum light through. In the main bedroom, the architect took advantage of the room’s high ceiling to create a loft and walk-in wardrobe, both for storage purposes and to break up the rectangular shape. The impressive oak on steel-framed structure is the work of David Abela who was entrusted with all the carpentry in the home. The loft storage area – essential for storing seasonal items such as fans and heaters – is accessed by an ingenious sliding ladder. Inside the wardrobe, finishing touches on the carpentry are currently under construction, with storage boxes being built and lighting panels yet to be installed for even down-lighting.

“...I JUST LOVE THIS HOME. IT’S BEEN DESIGNED WITH EVERY PRACTICALITY IN MIND AND REALLY SUITS MY PERSONALITY...” Still a work-in-progress, the bedroom will soon feature a timber wall unit which will provide a much needed desk area. The lighting in the bedroom is an impressive mix of fixtures featuring both white and yellow bulbs, which can create an infinite combination of effects and brightness. A steel and oak spiral staircase was installed to allow access to the roof, access previously having been possible from exterior stone steps. This outdoor area was enclosed to create the present ensuite bathroom.

THE LIGHTING IN THE BEDROOM IS AN IMPRESSIVE MIX OF FIXTURES FEATURING BOTH WHITE AND YELLOW BULBS, WHICH CAN CREATE AN INFINITE COMBINATION OF EFFECTS AND BRIGHTNESS.

The mix of practicality and style runs through every floor of this compact home, including the roof area. A laundry room with a high roof was added to provide the necessary functions as well as extra storage possibilities. Its twin doors have frosted glass to allow light to penetrate and additional iron gates which provide security, access for pets, and will allow upwards movement of hot air out of the building. The roof has been divided into two main sections, one as the service roof and the other to function as the main summer outdoor entertainment area. Plans for its finishing touches include raised timber decking and a gazebo to be constructed in wooden-clad steel. Michael: “I just love this home. It’s been designed with every practicality in mind and really suits my personality. Inside, the space is larger and sunnier than one would imagine. In winter especially, it’s amazing to lie on the floor under the glass roof, reading the papers and just seeing the rain come down over you. I entertain a lot and everyone who visits feels at home too.”

INTERIOR DESIGNERS PENNY APAP BROWN AND ANABEL CARUANA BRING AN INNOVATIVE INDOOR/OUTDOOR AREA TO AN URBAN BACHELOR APARTMENT. The owner’s brief for his three-bedroomed corner apartment was for something masculine and uncomplicated: “I wanted a modern, minimalist home where I can just switch off after work. I’m a real outdoor person, a sport and fitness fan, I only spend time at home when I want to be alone or enjoy the company of friends.” A colour scheme of black with neutrals was immediately agreed upon. During their initial conversation, the owner mentioned that even though the corner apartment fulfilled his requirements on most counts, he wished he could have had a terrace. So Interior Designer Penny Apap Brown looked at the property with an eye on seeing what she could do to give him more of an outdoor space. “The first thing I noticed about the apartment is that it has so much light. After looking at the living space – a large area with great natural light I suggested an ‘indoor terrace’. A bright, corner apartment in such a location enables him to have some outdoor dining. I decided that the existing sliding double doors could easily be lifted out the window end of the dining area We created gypsum cavity walls to store them behind, thereby increasing the depth of the terrace. The amount of daylight in the apartment allowed the use of a multi-tone laminate parquet throughout, without making the space seem smaller or darker.

The dining area can be closed off from the living room, thus becoming open to the elements. Cavity walls faced in mirror to give the illusion of a larger space.

Island serves as a bar area and meeting point when entertaining, while also providing an alternative casual dining area.

A GLASS WALL ALLOWS THE LIVING ROOM TO BE COOLED WHILE THE DINING AREA, WITH ITS SLIDING WINDOWS OPEN, CAN BECOME AN OUTDOOR SPACE, OPEN TO THE ELEMENTS.

“We then created a glass wall, half fixed and half sliding, between the living and dining area. This can be closed off so that the living room can be cooled while the dining area, with the sliding windows open, can become an outdoor space, open to the elements. This was quite a unique thing and very satisfying because we transformed a property that wasn’t really perfect to the client’s needs and managed to reinvent it. “We faced the cavity walls with mirror to give the illusion of the space being bigger. A green space inside this indoors/outdoor area was created with planters.” Having previously lived in a large house, the owner was accustomed having a separate dining and sitting room, so his dining area was a hit on two counts. The island in the kitchen is another important feature because it serves as a bar area and a meeting point when entertaining, while also providing an alternative casual dining area. Penny: “Although the terraces are on the small side, I wanted to give a sense of green, so we laid artificial turf and included plants. The client uses his laptop a lot so we introduced a multi-functional coffee table, which looks normal but you can lift a section up to the optimum height for working or eating while watching TV.”

The cow skin rug in a warm caramel and black was one of those pieces that was not in the original plan, but once seen, was impossible to resist. The wonderful amount of daylight in the apartment allowed Penny to use a multi-tone laminate parquet throughout, without in any way making the space seem smaller or darker. Instead, it added richness and warmth. Distinctive striped curtains and Roman blinds were chosen to remain within the monochromatic palette. All curtains have black-out lining and venetian blinds were used to filter in the light while still providing privacy. The corridor had to serve as a storage area and the intention was to use the first part as a designated gallery space for personal photos. Therefore the walls were left purposely plain, incorporating directional ceiling lights that can highlight certain photos. Lighting is an important element throughout the apartment. An intelligent system was installed whereby different moods can be achieved throughout and both sound and temperature can be controlled. Halogen downlighters pull warm light onto the wood tones on the floor. In the corridor this creates very pleasing circles of gold light.

THE OWNER CHOSE A CUSTOM-MADE HEAVENLY BED, WHICH HAS ADDED STORAGE UNDER THE MATTRESS AND UPHOLSTERED SIDES AND HEADBOARD.

A creative way to open up a bedroom: scenic wallpaper

A major part of the budget went on furnishings such as gypsum, mirror and glass. Penny: “We installed the full-wall mirror in the first bedroom because of its current use as a fitness room. A glass door was placed two-thirds of the way down the corridor to divide the personal area – the main bedroom, bathroom and study – from the rest of the home. “I chose to maintain the look of the length of the corridor so when dividing if off with an opaque glass door, I left a clear glass section at the bottom to achieve a continuity of the parquet. The two sides are mirrored to give it some length. “Behind these mirrors we created storage specifically for suitcases and sports equipment, which allows for no clutter to be seen. Rather than enclosing it with wooden doors, we installed Roman blinds for convenience.” The colour scheme in the main bedroom is a continuation of earthy colours, mainly browns and creams, to give a luxurious feel.

Uplighters and a pebbled area were installed along one wall and the client chose a wall mural, which gives the room more of an outdoor feel and looks particularly spectacular when lit up at night. The owner chose a custom-made Heavenly Bed, which has added storage under the mattress and upholstered sides and headboard. To give more space to the main bedroom, Penny opened a new aperture between the bedroom and the adjacent room (a study) and installed a black wardrobe with mirrored sliding doors into the study, which allowed for a much bigger wardrobe space for clothes and additional storage, while freeing up the bedroom. The overall result of this Sliema apartment is a sophisticated living space that provides a serene oasis to come home to. The owner is thrilled with every feature of his new home. “This is one place where I can go after work and be organized – it relaxes me.”

THIS PURPOSEBUILT APARTMENT WAS TRANSFORMED INTO A CHIC AND COSY SETTING BY THE USE OF CREATIVE COMBINATIONS OF FABRICS ON FURNITURE AND WINDOW TREATMENTS. This sea-front apartment is in one of the oldest of the newer apartment blocks in Sliema. The architects had used certain elements, we could call them mistakes, that would not have been included today – like a tiny balcony with inadequate dining space and no sea view from the kitchen. Upon moving in, the owner chose to carry out a gradual renovation. The most significant change was to open up a wall so that she could enjoy the sea view from the kitchen, as well as to make it more practical for entertaining. She updated the space with parquet and new doors throughout. The browns and greys of the wallpaper soon became the stimulus and the inspiration for a redesign of the entire living and dining space. The owner, a career woman who has a particular affection for boutique hotels, wanted to recreate a similar chic, comfortable, sanctuary feel within her own home. It was also important that the décor be unique, “unlike anything that could be ordered from a catalogue”. Interior Designer Michele O’Reilly: “This is why we went for mismatched furniture, different colours and a riot of textures throughout. These go from the printed PVC sofa, to suede, crushed velvet, rattan, snakeskin, mosaic and fur on the seating”. Michele’s team gutted the apartment so that the walls could be re-plastered with a new soffit including lighting, sound and air-conditioning installed. In the hall, directional halogen spots highlight the owner’s art collection. The dining area is the first space seen upon entering, therefore it was key that the chandelier make a bold statement. The rope lights around the dining table give this its own shape and area, also echoing the split-level space. Storage being an important consideration, shelving and cupboards were added around the new kitchen window, with matching sliding doors to section off the kitchen when needed.

A chic, comfortable, sanctuary feel, similar to that of a boutique hotel through the daring use of various materials and colours; PVC, suede, crushed velvet, rattan, snakeskin, mosaic and fur. In the dining area, shelves and cupboards were added around the new kitchen window, with sliding doors to section off the kitchen when needed.

Wall-to-wall mirror creates the illusion of a larger space. The TV pulls out and swivels, allowing those sitting on the sofa to view it comfortably. The facing of strong purple leather tiles on the unit results in a soft, flush vertical surface, which contrasts with the roughness of the sisal carpet.

The owner’s existing glass top dining table, was changed from oval to rectangle in keeping with the scheme. The eye-catching Italian drinks cabinet with inset crystal detailing is part of a ‘his and hers’ set, the ‘hers’ being tailor-made for jewellery storage.

An illusion of a much bigger space was created with the addition of a wall-to-wall mirror. Opposite, the TV was installed on a fitting that both pulls out and swivels. A facing of strong purple leather tiles in the unit resulted in a soft, flush vertical surface, which contrasts with the roughness of the sisal carpet. The same purple was chosen for the microfibre sofa and as accent colours on the walls.

The client’s ‘just surprise me’, brief was for the most challenging room, a small bedroom that was being re-purposed as a TV room.

Mismatched furniture, different colours and a “riot of textures create a relaxed chic look.

Custom-made storage surrounds the window and TV unit incorporating lift-up doors in brown. This long and narrow space was given deep and wide storage boxes in front of the window whose lids lift out, very much like those found on yachts. A cream motorised roller blind is used for TV watching during the day. The result is a dark, sophisticated cinema feel. The living room was originally used as two separate areas, with one side typically dedicated to TV watching. Michele devised a plan to allow for maximum enjoyment of the compact outdoor space while simultaneously creating a larger unified space for entertaining.

A new sisal carpet gave it an instant facelift and the feeling of increased space. To mitigate the restrictions of the small balcony, the outdoor rattan furniture was brought inside and once the doors are fully opened, huge planters, a teak window seat and an Italian Lemani mosaic chaise longue create a very relaxing indoor-outdoor space. Potted bamboo, white orchids and yuccas add to the conservatory feel. The Italian wenge coffee and side tables in the living room have useful and quirky features such as an ice bucket, ashtray or candle. Michele added a transparent perspex table in the hallway with the same slanting lines, which incorporates its own flower vase.

Unusual of curtain treatment schemes, each area of this space was given its own personality in terms of the style and materials that cover the windows.

HW38 1.2 (SOFA FEATURE 2).indd 51

Instead of having uniformity of curtain treatments in the living and dining areas, every space was given its own personality. The conservatory’s rattan Roman blinds are neighbours to crushed velvet self-designed silvery grey curtains by Carlucci. A similar velvet fabric was introduced in the dining room, this time paired with a darker tone at the centre and sides. Michele: “This subtle colour change, like a fading in and out, echoes the

striped fabric on the dining chairs and the floral cotton Cassaro weave for the sitting room blinds has a similar tonality.” A crushed velvet was used on the banquette, which visually joins the two areas while providing seating from either side. The snake skin on the banquette lends further polish to the living area. Flashes of colour on the plush velvet cushions from a selection of Cassaro fabrics create a wonderful contrast with the PVC chocolate brown sofa from Belgium, which in itself contrasts with the other seating. Michele: “I particularly like the double seats on this banquette, an original touch that allows two people to sit at the head of the table.” This is an apartment of subtle contrasts that plays with the gamut of materials and textiles, from transparency to solid steel, wood to fur. Throughout, the apartment is cool, serene and exudes confidence. The owner explains that at night, looking out over the twinkling lights of the bay, there is a totally different atmosphere and one which leaves her with the delightful feeling that she is in a different country. Design mission accomplished.

Choose the right furniture. Choose durable furniture that withstands the elements. Penthouse apartments can be extremely windy, even in the summertime, and if they’re on the seafront, that wind will be mixed with sea salt. In this case, if you’re going for wood, make sure it’s teak. If your outdoor area is guarded against the elements, rattan furniture with washable covers is a good idea.

Make it soothing with water. There’s something about water that’s serene and peaceful. Enhance those relaxing moments with a patio-size water garden. Find one with a small pump so you can enjoy the sound of water trickling over stones or through a bamboo spout. If you have the space for it, a small pool on a terrace will transform the entire area.

Use charming accents. For a Bohemian chic look, use items that you once loved but are too worn to work within the home. Spruce the items up with some paint or new material to give them an updated look. Create privacy. A factor to seriously consider, there are a variety of ways to create privacy. Plants are always a fantastic option, but depending on the degree of privacy needed, other subtle partitions can be used, such as bamboo, wood or wrought iron. Use light. Give your outdoor space personality at night. Whether to illuminate a dark space or add ambiance to your favourite seating area, outdoor lighting can be just the touch of evening pizzazz your space needs. Choose solar products or low-voltage, energy-efficient bulbs to conserve resources.

Soften the space with a flowers and plants. The idea of an outdoor space is to enjoy the outdoors. If the space is bare, it can have a bland feel to it. Flowers and plants add colour, character and oxygen to a space, so enjoy your favourite plants up-close and personal. Use taller plants to offer more privacy. Don’t forget about shade. If you live in an apartment or maisonette, it’s unlikely that your outdoor space will come complete with a large shade tree. It’s not necessary – don’t forget about canopies, umbrellas and pergotendas. Another option is to create a wooden trellis and grow plants over it, such as bougainvillea or grapevines.

Add wind chimes. Wind chimes are a traditional, yet stylish part of the outdoor lifestyle. You can find wind chimes made from bamboo, teak, and stainless steel to create the windy, musical melody that best fits your home.

CUISINE

EASY DOES IT...

IN COLLABORATION WITH EMMANUEL DELICATA WINEMAKER, CHEF RUBEN FARRUGIA FROM RUBEN’S DRIVE IN, QAWRA BRINGS YOU THREE VERY EASY RECIPES, PERFECT FOR THOSE EVENINGS WHEN YOU WANT THE QUALITY WITHOUT THE WAIT. BILL HERMITAGE SUGGESTS DELICATA WINES TO COMPLIMENT EACH DISH.

Deep-Fried Camembert Ingredients 1 1 cup 1 cup pinch ½ tsp ½ cup

round camembert cheese (approx. 350g) flour milk salt baking powder plum sauce

Method: Mix the flour, milk, salt and baking powder together. Dip the cheese round in the mixture and then deep fry until golden brown. Serve with plum sauce and a small salad. BEST WINE ACCOMPANIMENT: 2008 PJAZZA REGINA WHITE I.G.T. MALTESE ISLANDS – CHARDONNAY VIOGNIER VERMENTINO. “This is a rich, full flavoured first course. Although the coating is very delicate the cheese itself is fat and creamy. In addition, you have fairly strong sweet and spicy elements within the sauce itself. All in all a dry white wine with bags of flavour is what’s required and ideally something with a clean, well balanced level of acidity with good fruit. I have therefore chosen the Pjazza Regina White, which has a good weight and mouth-feel, enough to cope with the Camembert. The fruitiness and freshness of the wine will adequately cope with the spicy sauce. Make sure the white wine is well chilled and this food and wine combination is a great partnership.”

Fettuccine Drive-In Ingredients 250g 4 1/4th 100g 100g 12 100g splash

fettuccine mushrooms, sliced green pepper bacon shrimps fresh mussels calamari rings soya sauce

Method: Boil the fettuccine. In the meantime, minus the soya sauce, pan-fry all the other ingredients. Then add in the cooked fettuccine along with the splash of soya sauce. Add salt and pepper to taste. BEST WINE ACCOMPANIMENT: 2008 PJAZZA REGINA ROSE I.G.T. MALTESE ISLANDS – GELLEWZA GRENACHE. “There are a number of fairly mild seafoody flavours in this dish, such as mussels and prawns, as well as slightly stronger ingredients like calamari, bacon and olive oil. Although an easy drinking, dryish, unoaked white wine will go perfectly well with this dish I have opted to go for a rosé. Mainly because this particular Pjazza Regina Rosé is off dry and that little bit of sweetness will go very well with the prawns but will also counteract the slight saltiness from the bacon. Once again the wine needs to be well chilled if it is to be enjoyed at its best.”

CUISINE

Duck a l’orange Ingredients I 1 cup 1 cup 1 tot ½ cup

whole duck (average of 2.4kg) water orange juice gran marnier demi-glace

Method: Roast the duck in with the cup of water for 1½ hours. Reduce the orange juice and Gran Marnier in a pan and then add in the demi-glace. Pour on top of the roasted duck and serve. BEST WINE ACCOMPANIMENT: 2008 PJAZZA REGINA RED I.G.T. MALTESE ISLANDS – SYRAH MERLOT SANGIOVESE. “This succulent meaty duck dish with its sweetish orange sauce requires a full flavoured red wine that is low in tannins but high in fruit. The Pjazza Regina Red is just that. It’s easy drinking enough to blend well with the sweeter flavours of this dish whilst still having enough body to cope with the meat. In addition this wine has a small percentage of Maltese Sangiovese in the blend, which has a lovely peppery flavour that counter balances the sweetish citrus flavour in the orange sauce. During the summer months take care not to serve this delightful wine too warm; an hour in the fridge just before drinking might not be a bad idea.”
