arlo and Stefania Schembri are an industrious couple. Both designers, they have created Carlo & Stefania Design, which possesses a portfolio abundant with design projects, ranging from interior spaces in private residences, commercial areas and catering outlets to jewellery design and urban regeneration.

The couple never stop, which is quite remarkable considering they have two young children – Julian and Sophie – to look after, as well as maintaining their enormous Rabat townhouse. Stefania is home for the children but also works on a diverse range of projects. Currently, she is working on the interior design of various residential projects, as well as designing uniforms for a number of large corporate clients. Meanwhile, Carlo has just completed the re-branding of PBS, has just finished designing Angelica Cupcake Cafe in Archbishop Street, and is in the final stages of designing Talbot & Bons Deli Cafe at Skyparks. The couple spends time in Italy when they can. There they have just created three stands for MA DE Expo and Cersai Exhibitions. Concurrently, they’re working on three collections that will be launched at next year’s furniture fair in Milan.

This is such a busy couple and yet, their priority seems to be their significant home life. The theme is set at their two hundred year-old townhouse in Rabat this Christmas. It starts with a platinum twigged arch, which frames the striking Flos Taraxacum 88 pendant light by Achille Castiglioni. Deep red poinsettia plants invite visitors in, leading the eye to a glimpse of the overflowing presents beneath the enormous Christmas tree. Oversized metallic multicoloured plastic balloons and Christmas decorations hang from the ceiling, revealing just how high 13 metres actually is. 031

Carlo and Stefania’s son, little Julian also puts the enormity of the space into perspective, as he runs across the polished glass floor, his little sneakers squeaking. Julian’s younger sister Sophie is in tow, the two figures so tiny against the giant backdrop. The colours, sparkle and fantastical enormity must be a child’s absolute delight. Stefania’s reaction to her children is uplifting, giving off the sense that this really is a family home and that it’s for the children to enjoy as much as it is for the adults. In the same way that the entire house overcomes the difficulties of extracting a maintainable and convenient home out of an old townhouse, each room combines the warmth of classic with a contemporary spin. The epitome of Christmastime cosy, the formal dining room sits next to a comehither lounge area. The dining room is where the family gets together for Christmas day lunch with every traditional accommodation possible. A complete polar opposite of the dining room is the ultra modern stainless steel kitchen; an example of how the couple skilfully balances convenience with lustre. 033

hen Christoph and Gerlinde Rattasits moved to Malta because of Christoph’s job, the couple began their property hunt not knowing exactly what they were looking for. They viewed houses of character in Zebbug, old townhouses in Sliema and even new apartments in all areas of the island. After seeing enough to figure out what kind of home they wanted (something old and unconverted), they started looking in Valletta.

Gerlinde. “We were so impressed by the city: the palazzos, the churches, the bastions, the atmosphere, the culture, the theatre… When we decided on Valletta, it was definite. We knew that this was where we wanted to live.”

“Our advice to anyone renovating a place in Malta for the first time would be to buy something with existing permits, or have a lot of time and patience!”

The renovation of the old house took place in several stages. The first step happened in 2004 and took about nine months. The walls had to be scraped, while concrete walls that were built in the 1950s and 60s had to be removed altogether. The house had to be brought back to shell form and then started again. The electricity and drainage was done again from scratch, while new walls and rooms were built. The couple also opted to install new flooring in the old Maltese style. The second stage of the renovation was done about five years ago, which was the construction of an extension on the former roof. The last stage was three years ago when the couple decided to fully build the second floor: a new staircase leading up to the roof, a huge room for their daughter, and on top – a swimming pool with a roof terrace. “This was so much work, but worth it because the view from the roof is just wonderful!”

The children play different musical instruments, so the couple is thankful that there is enough space to allow for it, otherwise it would be uncomfortably loud in one room. “It’s great to have so much space; the kids love to play hide and seek around the house and with the two staircases (one new and an old garigor) it’s a lot of fun. The house is also great for entertaining and big parties are not a problem at all.”

Gerlinde’s favourite spaces of the house are the sala on the first floor, the entire downstairs area and the roof terrace. “In summer we have a lot of barbeques up there and we spend lazy Sunday afternoons by the pool. We have a perfect view of the fireworks festival, which is great because I just love fireworks.” The couple don’t hesitate when asked what their biggest obstacle was. “We have quite a lot of experience from refurbishing apartments in Vienna, but Malta is definitely different. In Austria you have a clear building scheme with unmistakable rules and regulations. You know what can be done and what can’t, and when you apply for a permit within the given parameters, the permit is granted in a matter of a few weeks. Here it took ages to get the necessary permits (all together three years!) and we are still waiting for another approval for small changes. Our advice to anyone renovating a place in Malta for the first time would be to buy something with existing permits, or have a lot of time and patience!” Now that the couple have experienced life in Valletta for a few years, they wouldn’t want to live anywhere else on the island. “It’s a fantastic place to live. We don’t need a car for shopping, going to the cinema or going out for dinner; it’s never more than a ten-minute walk. I love Valletta at night, as it’s so quiet and the street lamps create such a nice, cosy atmosphere. Also, you have most of the events going on in Valletta – the jazz festival, Notte Bianca, wine festivals, the fireworks festival, several festas and the arts festival – all of this is at our doorstep. It’s truly fantastic.”

Apart from the difficult time it took to get there, the family is clearly happy with the outcome of their renovation. When gazing up at the 12 metre-high wall in the glass roofed courtyard, hearing the sound of a violin and saxophone being practiced simultaneously, it’s evident that this is a family comfortable in their living environment – a little slice of Vienna right here in Valletta.

s the homeowners of this stunning Valletta house stepped foot in Malta, they were convinced that this was a good place to invest in. The couple were looking for a place where they could feel comfortable and unwind during certain parts of the year.

“It’s positively brimming with history, yet it’s bursting with an international ambience. It was a perfect location for us in this sense. The people, the culture and the architecture made moving here hard to resist.” The most important aspects to finding the right home was that it was spacious and situated in a central location. The Ursula Street property fit all three of the criteria perfectly. “When we saw it for the first time, we knew we wouldn’t have to do very much to it to make it a comfortable home.” Upon entrance, the hallway leads right through to the small courtyard, the grand wrought iron railed staircase off to the left. The courtyard allows for infinitely more light than would be available otherwise. Extremely convenient for receiving guests, to the left of the entrance there is a small foyer room, which leads through to the dining room, and then on to the kitchen.

“Who knew that such grandeur could lay behind the unassuming doors along Ursula Street?”

The kitchen is highly unusual with a traditional arched wall unit, which works as both a chimney and an extractor. As a result of this feature and the unpolished wood, the style of the kitchen appears very ‘country’.

Unsurprisingly, the one thing that the homeowners insisted in installing was a lift, which is situated to the side of the kitchen allowing the homeowners to go up and down the different levels as they please. The guest bedroom, as well as a small library and a formal sitting room are situated on the first level, while the second level is where the homeowners spend most of their time – here, an extremely large, casual sitting room with an impossibly high ceiling is where the couple watch television and unwind in front of the enormous stone fireplace. The previous homeowners were both internationally renowned artists. Remnants of their quirky and design orientated tastes have been left behind in art, chairs and lighting designs, which mix remarkably well with the rustic elegance of the architecture. 051

Various sumptuous shades of deep red are brought in through the accessories, such as the rugs, curtains, artworks and cushions, which create a striking contrast with the light and natural backdrop, as well as the deep greys of the furniture pieces. Entirely different styles are brought together to create an eclectic look, such as the Versailles-like gold gilded marble topped console next to the Ron Arad ‘Big Soft Easy’ chair by Moroso. The second level is also where the study is situated, which then leads on to the master bedroom. The third level – the roof area, offers a substantially large rooftop art studio for the lady of the house. The room is large enough to also act as a conservatory, which overlooks the glorious view of Fort St. Angelo and Grand Harbour – an almost illogical reminder that this enormous house is actually located in Valletta. There’s no point mincing words – this house is absolutely stunning on every level and in each charming little nook. Who knew that such grandeur could lay behind the unassuming doors along Ursula Street?

DECORATE! Decorating is not difficult to do during the festive season, since there is so much available for Christmas. Since there is ample opportunity to use a wide variety of colours, Christmas fresh floral can be simple and elegant – white roses, snowed conifer branches and twigs. Place them in a basket or in a clear vase to keep the focus on the arrangement itself. Create wintry looking pieces by filling a combination of vintage and contemporary vases with sparse white flowers. The great thing about table settings is that they’re something that can be organised and finished well ahead of time. Leaving it until the last minute can be stressful and it allows problems to enter. One of this year’s colour palettes is a lovely cauliflower blue mixed with white and earthy neutrals. Pops of natural floral on the table create an interesting rustic aspect to an elegant setting. To make things simple, a good recipe for a serene elegant base is to include clear or crystal glassware, white, silver or glass candlesticks and flower vases, a white or cream-coloured tablecloth, napkins and candles. CHRISTMAS FEATURE HW GET THE DRINKS READY There’s nothing cosier or welcoming than the smells of Christmas and of course, a good lunch party can’t be so without a good lunch. If the atmosphere is right, your guests will want to take it all in and enjoy it, meanwhile anticipating the lunch to come. Creating a special festive cocktail will add to the immediate celebratory spirit and put your guests in a cheerful mood. It’s worth keeping in mind that not everyone will enjoy drinking cocktails so having a beautifully decorated ice bucket with good wine chilling

will make guests feel that they are welcome to relax. Also, another thing to keep in mind is that if you’re a one-man host, cocktails may not be the best option, especially if they need to be freshly made. If it’s a more casual dinner party, you can always nominate a friend to be the official cocktail maker. There are so many cocktails that can be made, but to really get people into the yuletide mood, serve up this different take on the traditional Christmassy egg nog.

CHRISTMAS FEATURE HW EGG NOG MARTINI Serves 8 Ingredients 224g sugar 55g corn starch 1tsp ground nutmeg 2l whole milk 6 large egg yolks 720ml brandy

The Method Set a large fine-mesh sieve over a large bowl. Place the bottom of the bowl in an ice bath; set aside. Off heat, in a medium saucepan, whisk together the sugar, corn starch and nutmeg. Gradually whisk in 1 litre of milk, taking care to incorporate the corn starch. Whisk in the egg yolks.

Whisking constantly, cook over a medium heat until the first large bubble sputters (10 to 12 minutes). Reduce the heat to low; cook, whisking constantly, one minute more. Remove from heat; immediately pour through the sieve into the bowl. Stir in the remaining litre of milk. Let it cool completely in the bowl still set in the ice bath. Just before serving, stir in the brandy and ladle into glasses. Garnish with nutmeg.

Chefs Michel Vergnaud and Sean Gravina at Chez Philippe bring us a deliciously decorative Christmas lunch, while Bill Hermitage at Delicata Winery suggests the ideal wine accompaniment PUMPKIN AND PANCETTA RISOTTO WITH CINNAMON Serves 4

Ingredients: • • • • • • • • • • • •

1kg pumpkin 800g Arborio rice 250g cubed pancetta 2tsp ground cinnamon 1 clove garlic 1 large onion 1tbsp honey 1 large glass white wine knob of butter parmesan cheese few leaves of sage 2l chicken stock with pink peppercorns and sage

Method: Preheat the oven to 180°. Thickly slice the pumpkin leaving the skin on and reserve one slice (which you need to cut into bite size pieces). Put into a roasting dish. Sprinkle on the cinnamon, drizzle the honey and olive oil, and season. Roast for 20 minutes until tender. In a frying pan, fry the pancetta until crispy with the reserved pumpkin. Cook until it’s very soft and add some sage. Make a basic risotto recipe. When the pumpkin is ready, peel off the skin and blend to a puree. Mix in with the risotto and check the seasoning. Add the butter, Parmesan cheese, the fried pancetta and the reserved pumpkin. Leave to rest covered for five minutes, then serve. “In reality, a light red bodied would probably work well with this dish, but assuming this dish would be served as a starter I would rather opt for a white wine and then move onto a red for the veal main course. The main flavours the wine needs to contend with are the smoked, slightly salty taste of the pancetta and the sweet spiciness of the cinnamon and honey, plus the Parmesan cheese; all fairly strong individual ingredients. Therefore the white wine required needs to be weighty and full flavoured, soft with fairly low acidity and rich or ripe enough to cope with the sweetness of this dish. My choice would be a full-bodied, rounded dry white wine made entirely from the Viognier grape, Grand vin de Hauteville. Moreover, the 2010 vintage is a D.O.K. Superior wine, which means it has a bit more natural alcohol and weight in the mouth.”

CHRISTMAS FEATURE HW VEAL CHRISTMAS PARCELS Serves 4

Ingredients: •

• • • •

1kg fresh veal fillet (ask your butcher to clean and portion it) 500g puff pastry 1 glass red wine a few sprigs of fresh thyme beef stock

Method: Heat oven to 200°. Roll out the pastry and sprinkle with the chopped thyme. Roll again to incorporate the herbs with the pastry. Cut out 12cm rings and place in a buttered mould. Bake blind with baking beans or rice for 10 minutes. Remove the beans or rice and cook for a further five minutes. Season the meat with salt and pepper and seal in a very hot pan for one minute on each side. Place in a roasting dish and finish cooking in the oven (10 minutes for medium rare meat). When it’s ready, allow it to rest for a couple of minutes. Take the juices from the roasting pan and add to the frying pan. Add a beef stock pot, a glass of red wine and more fresh thyme. Let it reduce until it thickens. Place the meat inside the pastry case, drizzle some gravy and garnish. Serve with vegetables of your choice and potatoes.

“There are no real strong flavours in this dish for the wine to compete with, although I would definitely go for a medium or full-bodied red wine, as long as it doesn’t overpower the roasted veal. The degree of fresh thyme used needs to be considered but if used conservatively it shouldn’t alter the overall flavour profile of the entire dish, just complement it. Maltese Sangiovese is a grape that is producing medium-bodied, soft, red wines with a subtle spiciness to them and the 2009 vintage Medina Sangiovese has enough maturity and bottle age to make it the perfect accompaniment to this festive main course.”

HW CHRISTMAS FEATURE PISTACHIO, ROCKET & RED BERRY TART Serves 4

Ingredients For the pastry: • • • • •

250g flour 125g butter 1 egg yolk 10g sugar 20ml cold water

For the pistachio créme patissierè: • • • • • • • •

250ml whole milk 60g sugar ½ vanilla pod 2 egg yolks 20g custard powder 25g butter 2tbsp pistachio paste handful roasted pistachios, roughly chopped

Method for the pastry: Preheat the oven to 180°. Put all of the ingredients in a bowl and mix with your hands until you form a ball of dough. Add some more flour or water if the mixture is too wet or too dry. Leave to rest in the fridge for 20 minutes. In the meantime, make the pistachio créme patissierè.

Method for pistachio créme patissierè: Bring the milk and vanilla pod to a boil then remove from the heat. Whisk the egg yolks and sugar until the sugar has dissolved and then add the custard powder and incorporate. Pour the boiling milk into the mixture and mix. Pour back into the saucepan and bring to a boil while mixing continuously. Allow to boil for two minutes and then remove from the heat. Stir in two tablespoons of pistachio paste and butter. Cover with cling film and leave to cool down.

Flour the surface and roll out the pastry. Put in one large or four individual moulds, which are buttered and floured. Bake blind for 15 minutes with baking beans or rice, then remove them and bake for another 10 minutes uncovered. When everything has cooled down, pour the créme patissierè into the mould. Garnish with chopped pistachios, baby rocket and red berries.

“Even though this isn’t the sweetest of dessert dishes, I would still serve a rich sweet white wine with it to round off the meal. There are a lot of ingredients in this pastry that will be complementary to the delicious flavours of the Moscato grape in this Hauteville Liqueur wine, such as the vanilla, the custard, the roasted nuts, the red berries and the pistachio paste. All will marry well with this opulent, syrupy smooth sweet wine, especially when it’s served nice and cold in a fine elegant glass at the close of your Christmas lunch.”

The Therme at Vals, which was the first building featured in this travel series, is now acknowledged as one of the most beautiful buildings of our time. The outdoor pool of the baths looks onto the landscape of the steep slope on the hillside where this villa is located. Architects Bjarne Mastenbroek and Christian Müller of SeARCH and CMA respectively dug out the hillside and placed the house into the hill, without obstructing the baths’ heavenly view or their unique aura

t is customary in Switzerland that a timber frame is built on site to represent the proposed volume of the building. In this way, all those around can see the actual future physical volume of the building on site, and raise their concerns, if need be. In this case this exercise was unnecessary. Thumbs up is deserved to the local council that issued the permit for this building.

In Archdaily’s words: The Local Authority’s well-intentioned caution, that unusual modern proposals were generally not favoured, proved unfounded. The planners were pleased that the proposal did not appear ‘residential’ or impose on the adjacent baths building. The scheme was not perceived as a typical structure but rather an example of pragmatic unobtrusive development in a sensitive location. The placing of the entrance via an old Graubünder barn and an underground tunnel further convinced them that the concept, while slightly absurd, could still be permitted.

So much so that, after its construction, a private house was deftly placed in the slope, enjoying views towards the emerging circular perimeter and courtyard. Bedrooms are cleverly juxtaposed. Several Dutch designers were brought in to further enhance the interior, thus making it a clever match of Dutch design and Swiss quality. The exposed concrete finish is in contrast with natural stone and timber. The challenge of this building must have been the complex detailing and waterproofing. The result is a well-mannered architectural insertion to sensitive environs, which should serve as a model for sustainable development. Readers interested in spending time at the baths may be interested to know that this hidden gem is available for three days for as little as €825 during low season.

Method 1. Download the template from the HOMEWORKS (Malta) Facebook page enlarging it to desired size. 2. Cut the decorative paper so that it’s flush with the top of the hurricane vase and the paper ends overlap by about 1.3 centimetres. 3. Lay the template on top of the decorative paper, then place both on top of the dry sponge. Use the skewer to transfer the pattern. 4. Following the pattern, punch the decorative paper with the hole puncher. 5. Wrap the paper around the hurricane vase and secure with tape.

Trace the paper angel shape from the template onto a plate with a fluted edge, and cut out with a utility knife. The two cuts for the wings should be different: one made from inside out, the other from outside in. Embellish the edge of the plate with one or two decorative hole punches. 3. With the angel facing you, shape her skirt into a circle. Slide the outside cut over the inside one to make wings. Curl some paper around a skewer and make a name card. Secure it in her hands with a dab of glue.
