WATERMELON FETA MINT SALAD Ingredients: •
One medium size watermelon (or half a large one)

Handful of chopped mint leaves
•
Block of feta cheese
•
Juice from one lime
Chop up watermelon into one-inch chunks. Combine with mint leaves in a large bowl. Just before serving, crumble feta into the bowl and toss gently together. Squeeze lime juice on top. Enjoy!
