Explore the unique character and flavours of the finest, rarest chocolate from the world’s greatest cocoa regions in The Rabot 1745 collection. SEEKING THE FINEST COCOA You can take it from us, the small, 16th century village of Chuao, located in the Aragua valley of northern Venezuela, is a hard place to reach. You can’t get there by road or by air. The only way is by boat, or on foot, across the cloud forests of the Cordillera mountains to the south. But Chuao’s very isolation has made it one of the most sought-after cocoagrowing regions on Earth. Life in Chuao is cocoa, and has been for over 300 years. Here, a 125-strong farming cooperative grows the rare Criollo bean, the most subtle and complex of the beans – and by far the most difficult to farm. But local farmers have had generations of experience to master its whims and quirks, employing ingenious dams and irrigation systems constructed with banana leaves. And the region’s unique terroir – high humidity and heavy rains that wash rich, fertile silt into the valley from the mountainsides – creates ideal growing conditions for Criollo. The village’s 140-hectare plantation produces only 20 tons of beans a year, fermented using the ‘wooden box’ method and dried on a plaza in front of the village church. As you can now discover for yourself, the result of their labours is spectacular. We bought five per cent of their harvest for our chocolatiers to produce a masterful 70% dark – a prima donna of chocolate, with an interplay of cream and caramel with malt and raisins, roast nuts and elegant poise. The story of our Venezuela Chuao 70% Dark is just one from our new range of exceptional, rare and original chocolates – the Rabot 1745 collection – an exploration into the deepest regions of pure, single-origin chocolate from around the world, to create a nuanced, complex and hugely rewarding cocoa experience.

Just as with fine wine, the terroir, fermentation and heritage of different cocoa strains combine to create distinctive chocolates with their own flavours, textures and personalities, defined not just by their regions but the history of the communities who farm them. Starting from our Rabot Estate plantation in the Caribbean, we’ve voyaged across the globe from Venezuela to Vietnam, Peru, Madagascar, Java and beyond to seek out the most impressive and unique cocoa harvests. Our master chocolatiers evaluated each one to decide which recipe would do them justice, summoning the elegant, aged-Burgundy notes of our Peruvian Pichanaki 75% Milk, and unleashing the intense, dominating tones of espresso and leather in our Coastal Ecuador Hacienda Iara 100% Dark Organic. You’ll find the name of each chocolatier and the roasting times, conching times and temperatures used on each label.
As well as solid, pure-chocolate tablets, The Rabot 1745 collection also features filled vintage chocolates with exquisite pralines, ganaches and caramels. And to offer a truly intense, pure-cocoa experience, we’ve reserved some of the finest Rabot 1745 roasted beans to create ‘Super Booster Tubes’ – pure cocoa nibs from the world’s finest harvests enrobed with the chocolate they can create. The experience is sheer cocoa bliss: a shot of cocoa’s healthy antioxidants and its natural stimulant, theobromine, to feel focused, energised and on top of the world. THE WORLD’S FIRST SINGLE-CÔTE CHOCOLATE The centrepiece of the Rabot 1745 collection is not just a single-estate chocolate, but a ‘single-côte’ chocolate. We think it’s the first of its kind in the world, taken from just one area of the terroir of our Rabot Estate, to produce a pure expression of our planation’s unique strain of Trinitario cocoa. The Saint Lucia Rabot Estate 70% Dark is made using a mix of 50 to 80-yearold trees and new 3 to 5-year-olds grown on our plantation’s Marcial Côte in rich and fertile volcanic soil. After harvesting and drying the beans, we roast them for 25 minutes at 125°C before conching them for 70 hours to produce a broodingly powerful chocolate with notes of Shiraz wine, antique oak, roasted cocoa and stewed spiced plums. THE HEART OF RABOT 1745 The name of our rare and vintage collection, Rabot 1745 – bestowed only on cocoa of the highest standard – comes from our own plantation, Rabot Estate. First established in 1745, near Soufrière on the island of Saint Lucia just above the equator, Rabot’s old estate house still stands proud beneath the twin Piton Mountains, a hardy survivor of old wars between the British and the French, fierce hurricanes, and the ravages of sun and sea. We’ve restored the estate into a bountiful garden, carefully husbanding rare types of Trinitario beans first recovered from the Amazon basin in the 1930s. For us, the name Rabot stands for all the enduring values we have learned since we first became cocoa farmers ourselves. ENGAGED ETHICS After we took over the Rabot Estate planation, we set out to restore cocoa farming as a viable and sustainable enterprise on Saint Lucia. We’re now partners with more than 150 other local farmers, making a long-term commitment to share know-how on improving quality and yield and building a prosperous future for all. We’ve taken our responsibility to the island community seriously, tripling the ‘dollars in the pocket’ for every pound of cocoa from every grower, and treating each one with the respect that cocoa farmers have long deserved but all too often gone without.
