What’s the most popular Arabic dish in Dubai? It’s hard to pick just one as there is such a variety, but mezze, kebabs, dolma and tagine are always popular. When it comes to dips, hummus with pitta is by far the most common and shawarma – stacked meat on a vertical spit that’s sliced as it cooks – is a meal in itself. Which foods are visitors usually keen to try? Most tourists have adventurous tastes and are curious to try something new, such as Omani shuwa – meat slow cooked with a special blend of spices – or even lamb brain.

Are there any Arabian dining customs we should know about? If you visit someone’s house for dinner, food is often placed at the centre of the table and shared – especially meat and rice, which are served in huge platters. Seating may be in the traditional majlis style and people tend to eat with their hands. If you are invited for dinner, don’t forget to thank your host for a meal well served.
What’s a common ingredient used in Middle Eastern fare? Bread is a staple across the entire region and is eaten in some form at almost every meal. In addition, most meals tend to start with a wide spread of mezze and dips. How did you become a chef at Al Habtoor City Hotel Collection? I’m from Hyderabad, where the food is an amalgamation of Moghul, Turkish, Arabic and local cuisines. I think this is what led me to explore the cuisines of different countries. My own style is a blend of innovation and creativity fuelled by my passion for food. I worked in India and Oman before arriving in Dubai and making my way to Al Habtoor City. What sort of Arabic food is on offer at your restaurants? We offer contemporary Arabic cuisine with a touch of international flavour. Our must-try dishes include quinoa falafel, traditional mezze, mixed grills and seven spice baby grilled chicken. Tell us about your journey as a chef. I’m from Mauritius where we have a real mixture of cuisines. Our ancestors came from all over the world so I’ve always been around Indian, African and Asian food. When it comes to Arabic food, what dish is a ‘must try’? Harees – boiled, cracked or coarsely ground wheat mixed with meat – is often a new experience for visitors. The consistency varies between porridge and a dumpling, which peaks the interest. Once we explain what it is, our guests usually give it a go. What’s a common thread of Middle Eastern cooking? I’d say the most common factor is a passion for food and a shared love
for cooking. That said, one ingredient that I really love working with is pomegranate molasses – it’s simple yet so delicious. Tell us about your journey to Al Habtoor City? I started working as a golf caddy and, when I was 16 years old, was caddying for a chef who took me under his wing. I studied for two years in Mauritius before moving to this part of the world to further my career. I worked in Ajman, then Abu Dhabi, including on Yas Island, and now I’m happily part of the family at Al Habtoor City.

Tell us about Middle Eastern food. As home to the world’s oldest civilizations, Middle Eastern food is as ancient as it is delicious. It’s easy to understand why it is now enjoyed around the world. How did you discover your passion for cooking? When I was younger, I learned everything from my mother as she was always in the kitchen cooking delicious dishes. Today, I’m proud to be part of the family at Al Habtoor Hotel Collection and I make a keen effort to stay abreast of what’s going on in the culinary world of the Middle East. What’s the most popular ingredient in Arabic cooking? Probably Arabian spices, but the exact type of spice that is used varies from region to region.

What’s the most popular local dish? Falafel – a deep-fried ball or patty made out of chickpeas, herbs, onion and garlic. People like to eat it at any time of the day. It’s crispy on the outside but satisfyingly soft on the inside. It’s delicious! What’s your favourite dish to cook? When I’m at home I love to cook Egyptian lamb fatteh with Arabic tomato sauce and a fresh green salad. Tell us a bit about the Arabic food at The St. Regis Dubai? We specialise in modern Arabic food that everyone enjoys. Our most popular dish is the lamb shank, which is served with mashed sweet potato, mint sauce and seasonal vegetables. Hayley Skirka kickstarts a stylish stay at W Dubai - Al Habtoor City by fueling up on fun at W / Brunch on the seventh floor
A cheer filtered through the restaurant as a woman dressed top-to-toe in pink took to her feet to announce to her table of friends that she was expecting a baby girl. Then, as the cheers grew louder, a similarly bright pink cake, topped with a giant sparkler and carried by two members of staff, weaved its way towards her. As gender reveals go, this was how to do it in style. While that celebration played out to my left, to my right a sushi chef had drawn a crowd to his seafood-stacked station (lobster and crab on slabs of ice) by artistically twirling his utensils in the air before slicing clean through pink and red hunks of salmon and tuna fish. In front of me was a dessert station of such colourful artistry you’d be forgiven for thinking you’d stumbled onto the set of Charlie and the Chocolate Factory – three chocolate fountains pumped out an endless flow of the sweet stuff, myriad brightly coloured donuts hung from a faux tree, and giant glass jars overflowed with candy and jelly beans of every hue imaginable. Friday W / Brunch at W Dubai - Al Habtoor City really is a feast for the eyes. While fellow diners indulged in pass-around and extravagant buffet options inside the venue, outside on the hotel’s Wet Deck waiting staff delivered trays laden with food and drink to those enjoying a more relaxed brunch from the comfort of their sunbeds, stationed by the glistening swimming pool – à la carte orders are available to save you having to leave your cabana.

“We were booked into the appropriately named Fantastic Suite, with a circular bed as its centrepiece” The experience, and that’s exactly what it is, of Friday brunch brings the W brand to life, and acts as a great taster of what you can expect from a weekend stay at this unique hotel, perfectly positioned to embrace the high energy of the adjacent Sheikh Zayed Road. Having unpacked our overnight bags just a few hours before brunch began, my partner and I were quick to get the impression that the fun vibe envelops everything inside the hotel. From the 30 th level check-in area which also happens to be the site of the funky W / Lounge, to the canary-bright, state-of the-art workout venue FIT, and on to the top floor BOA Lounge and Club replete with glowing, descending catwalks and a trance-like show of illuminations, this hotel is a

We were booked into the appropriately named Fantastic Suite, a sweeping space spanning 117 sq m of curved elegance and boasting an over-sized circular bed as its centrepiece. Your eyes are drawn in every direction as the numerous decor quirks vie for your attention; a white, curved leather sofa, cerise pink illuminated artwork, and a soaking tub positioned in the middle of the lounge. In-suite products are all provided by spa brand Bliss and an evening delivery of a cocktail glass filled with M&Ms and a glittering high-heel shoe containing the hotel’s weekly newsletter are further mood-setting style statements. As at brunch, entertainment is served at the futuristic Korean-with-

Angular swivel chairs offer super cool views of the city skyline below, while a glass fronted open kitchen makes for a great focal point as chefs slice and chop in rhythmical movements that look almost choreographed to the restaurant’s funky house music. Meanwhile, my expertly crafted drink comes served in a tiny glass teapot from which I pour into a minute tumbler, felling very Alice in Wonderland. It’s yet another example of the attention to even the tiniest detail that defines a stay at the W Dubai Al Habtoor City, undoubtedly the city’s coolest destination this summer. Although it’s believed to date back as far as 600BC, it was the roaring days of the early 20 th century that saw the sport of polo make its high-profile debut in the US. Matches would take place on Governor’s Island in Manhattan and summertime in New York soon became synonymous with high-profile polo matches that were hugely social affairs attended by the crème de la crème of society. Among its most enthusiastic supporters, was the Astor family – founders of the St. Regis brand – who quickly became avid fans of the sport. As well as spectating and hosting
post-match parties, John Jacob Astor IV and his family also hosted visiting polo players at the landmark St. Regis in New York, giving rise to an iconic link between the St. Regis name and the sport of kings. The advent of WWII halted this legacy and it wasn’t until Starwood acquired the St. Regis brand in 2007 that the hotel group returned to the sport – hosting a polo tournament in New York that very year. Since then, the legacy has gone from strength to strength with St. Regis co-hosting the 2008 Manhattan Polo Classic – the first tournament to be played on
Governor’s Island in 70 years. Now comes the launch of The St. Regis Dubai, Al Habtoor Polo Resort & Club, the legendary brand’s world-first equestrian-inspired resort. Polo enthusiast Mohammed Al Habtoor, CEO and vice chairman of the Al Habtoor Group, announced the launch of the resort saying: “We’re proud to debut the first St. Regis polo resort in the brand’s history. Polo is a growing sport in the UAE and the resort offers the best equestrian facilities in the region.” With polo having first made its way to UAE shores in 1974, it’s a fitting home.
