Our aim here at Atlantis is to wow our guests and this goes also for our food and beverage offerings, which we hope you are enjoying as much as we enjoyed creating. Welcome to the third issue of Atlantis, The Magazine! This issue is dedicated to our most ‘delicious’ stories. Since its opening in 2008, Atlantis, The Palm has long been considered the culinary destination in Dubai, offering a variety of dining experiences that are as unique and multi-faceted as the resort itself. We are very excited to add to our already diverse selection of 23 restaurants and bars another sensational outlet – Bread Street Kitchen & Bar by the internationally renowned chef Gordon Ramsay. Bread Street Kitchen & Bar will follow in the steps of its highly successful London counterpart, offering an eclectic restaurant and bar space creating an atmosphere-led, high quality dining experience serving a British European menu. David Brown Automotive made its US debut with a contemporary GT boasting the heart and soul of a classic Showcasing the best of British craftsmanship, bespoke carmaker David Brown Automotive premiered the Speedback GT at The Quail, California’s most prestigious motorsport event. Hand built in Coventry, the car is a made-toorder fusion of the Jaguar XKR and the Aston Martin DB5 augmented with modern mechanics and traditional British materials. Featuring exquisite details including hand-formed panels,
hand-crafted interiors and even a fold-down picnic seat, the sleek lines and sculptured design are inspired by the simplicity of supercars of the sixties. Retailing at around $750,000, each Superback GT takes six months and input from a team of around 50 people to create. Using the Jaguar XKR convertible as its foundation, the car features the same front-mounted 5 litre V8 supercharged engine, pre-strengthened chassis and an identical wheelbase. Modern engineering sees the vehicle go from 0 to 100 in 4.6 seconds with a top speed of 240kph. Paying homage to the Touring Superleggera-designed Aston
Martin DB5, the model made famous by Sean Connery in his James Bond era, the Speedback’s Aston Martin persona is undeniable, especially from a rear vantage point. 20 FOR THE LOVE OF CHOCOLATE
Atlantis, The Magazine sat down with Oussama Choucair, CEO of gourmet Middle East-grown chocolate brand Patchi, to find out about life as a chocolatier

O
riginating from Lebanon, the story of Patchi began in the 1950s, when a young Nizar Choucair started helping out in his family’s confectionary shop. From the age of 11, he would spend school holidays and weekends crafting, tasting and selling chocolate in the familyrun store so that by the time he left school, he was officially a chocolate aficionado. According to Nizar’s son and Patchi UAE CEO, Oussama: “He [Nizar] is often quoted as saying he had chocolate in his blood.” And it was this sweet tooth that essentially propelled Nizar to success, realising his dreams when he opened the first Patchi boutique in 1974, in the heart of Beirut. From the beginning, exceptional care and attention has been given to every aspect of the chocolate crafting process at Patchi, an effort that has paid off with the brand growing to be one of the most-loved in the Middle East region. The company draws distinction from the family history of confectionary, pairing it expertly with methods from the chocolate masters of Europe. “Our production and outsourcing are on a par with Swiss and Belgian chocolatiers and we use Swiss technology in our manufacturing,” Choucair explains. “With cocoa obtained only from the Theobroma cacao tree, the sources of our import remain the secret behind our best quality of cocoa beans.” Today, Patchi is more than just a chocolate brand. With its own printing and packaging plant, a silver and porcelain factory and a division focused solely on producing handmade flowers and intricate accessories to adorn the chocolates, it’s an entire production. With over 80 varieties of chocolate on offer, there’s also specialised lines released to celebrate a variety of festivities. Choucair acknowledges this with pride: “Patchi celebrates every occasion with our customers, from Ramadan to Adha, Christmas to Diwali and even Chinese New Year – we are at the heart of these joyous events.” Having risen from a small store in Lebanon to one of the biggest luxury chocolate manufacturers in the Middle East and beyond, Patchi clearly understands its customers’ tastes and needs, something that has allowed it to stand the test of time over 40 years and, by the taste of things, for many more to come.

TALKS CHOCOLATE With so many varieties of chocolate on offer at Patchi, which is your favourite? Honestly, it’s too difficult for me to choose a favourite, since each flavour has its own appealing taste and aromas.
What new developments can chocolate-lovers look forward to? We’re always researching new flavours, in fact, we recently developed five new flavours for the UAE market, designed to appeal to the local palate.
Tell us about Patchi at Atlantis, The Palm. Since its opening, Atlantis, The Palm stood out as a must-see destination, attracting tourists and celebrities from around the world, we knew we had to be there. Patchino Aqua is our special line for kids. Exclusive to the resort and featuring adorable characters and marine designs, it has been a great success with the younger guests.
Dealing with chocolate on a day-to-day to basis, do you ever feel sickened by the thought of it? You would think so, but that’s not the case. I enjoy every bite as if it was my first. erluti is one of the world’s most iconic gentlemen’s brands – but it took a woman to really put it on the map. When the bright-eyed, pixie-haired Olga Berluti joined the family business as an apprentice in 1959, the house had been producing bespoke leather shoes for almost 80 years. Movie stars, politicians and even eminent fashion designers flocked to its Paris boutique, and yet Olga wasn’t satisfied. A keen artist, she began experimenting with tanning processes, using natural minerals to dye its fine leather creations a rainbow of colours. While she tinkered in the workshop, her cousin Talbinio held the company’s reins, the third generation of his grandfather’s business. In 1962, a young Andy Warhol came to the boutique on Rue Marbeuf, and sketched out a pair of “square and impossible” shoes – an order that would change the company’s fortunes forever. Olga crafted a pair of loafers with an angular toe, coloured in a vivacious hue. They were the work of an apprentice, crafted awkwardly from scarred leather. But Warhol saw past their imperfection, and was charmed by Olga’s assertion that she chose the blemished

material because it came from unruly cows – rebellious creatures just like him. “In the future, I only want shoes made from the hide of wayward cows!” Warhol replied – and a Berluti classic was born. Now, 53 years on, the Andy model remains one of the marque’s most sought-after designs. The coloured patina that Olga pioneered has also become a signature of Berluti – and countless other brands have followed suit. Olga

and she continues to work on exclusive designs. Her leather skills have, of course, improved immeasurably – she created the divine Venezia leather, with a finish so soft and so durable that it remains the brand’s most popular material. It’s this passion for craftsmanship and innovation that keeps Berluti at the forefront of gentlemen’s shoemaking. Many of its clients prefer anonymity, but high-profile customers include Yves Saint Laurent (it was he who introduced Warhol), the Duke of Windsor, Arnold Schwarzenegger and Robert de Niro. Berluti delights in its subversive charm: “The House cultivates an art de vivre that rejects the boredom of banality,” reads its mission statement. It’s an ethos that permeates the brand’s
flagship boutique, a centrepoint which was established by Torello Berluti in the 1940s. After inheriting the business from his father Alessandro – Berluti’s founder – he chose 26 Rue Marbeuf, an esteemed location close to the Champs-Elysées. The current design was inspired by Olga’s signature patinas (indeed, it was her who commissioned the décor), and is adorned with a few fascinating heritage pieces from Berluti’s illustrious past. It feels slightly more like a convivial gentleman’s club lounge than a shoe boutique. Whether in Paris or in one of Berluti’s international stores, almost every bespoke client is met by one man: Anthony Delos, Berluti’s Bespoke Shoemaker. He’s a master craftsman,

who joined the company from his own handmade shoe company in rural western France. Today, he travels all over the world, meeting customers who shun prêt-à-porter designs in favour of hand-crafted individual pieces. It’s a profession that takes him from Paris and London to Russia, the Middle East and Asia, measuring and delivering the leather works of art. “Bespoke is the ultimate personalisation in the world of luxury,” muses Delos during a rare lull in Dubai. “The perfect shoe is one that combines a man’s personal taste and unique flair with absolute comfort based around the shape and anatomy of his foot.” But Berluti’s bespoke offering goes beyond

the form and fit of a shoe: it extends to Olga’s colourful patinas, to hand-crafted unique embellishments, and to ‘tattooing’ on the leather – depicting everything from simple monograms to elaborate family crests. “It is imperative to include the client in the entire process,” says Delos. “Choosing the leather samples, patinas and shaping their last [the unique model around which the shoe is constructed]… We come up with the perfect creation together.” There are 12 craftsmen in the Berluti workshop, a busy studio around the corner from the Paris boutique. Each set of made-to-
measure shoes requires 50 man-hours, but the processes can take up to six months to complete. That figure rises to 150 hours (and nine months) for a pair of bespoke boots. Delos may be on the road much of the time, but he is a craftsman at heart. When he joined Berluti, he pledged that he would make at least one pair of shoes in his own studio per month. After owning his own much smaller-scale company, is Delos daunted or inspired by Berluti’s legacy? “The basics of luxury shoemaking remains the same at the core, but it has evolved so much with the introduction of new leather and technology. When you work for a brand which holds over 120 years of mastery and heritage in the shoemaking field, one can only be inspired.” It helps, of course, that Delos has some of the industry’s most talented craftsmen at his service. The resident shoemakers train at the Compagnons du Devoir, a dedicated school with a specialist six-year course. In order to qualify as a ‘master’, students must take additional study and have ten years of experience under their belts – only then can they graduate to Berluti’s bespoke offerings. Many of the clients are anonymous, but do the craftsmen create shoes with a particular client profile in mind? “The Berluti customer is very unique,” says Delos. “An international, chic man, who is stylish, educated and loves the product.” He could well be describing himself… So which is Delos’s favourite Berluti style? “The Alessandro. It is traditional and elegant, very symbolic of the brand.” And in a vibrant patina, of course – in honour of Olga.

I DIDN’T THINK I’D BE A MODEL WHO LIVED IN NEW YORK, BUT I KNEW I WAS GOING TO LEAVE THE VILLAGE
E
very interview with Irina Shayk begins with the same question. Every single interview. Whether she’s featured in a national UK newspaper or on one of America’s biggest talk shows, the first query is always “Where are you from?” – to which Shayk, by now surely tired of explaining her roots, trots out the tales of her childhood. Go on, Google it: this really is the formula. But the journalists aren’t lazy – they’ve got a nose for a great story. Shayk is one of the world’s most beautiful women, but nobody had heard of her just a few years ago. She hasn’t just risen to fame – she’s rocketed. So where on earth has she rocketed from? Irina Valeryevna Shaykhlislamova certainly wasn’t born with a name for showbiz. She grew up in Emanjelinsk, a small town three hours away from St. Petersburg, with a music teacher mother and a coal miner father. It was a simple childhood, spent “planting potatoes and tomatoes,” she told USA’s V magazine in a rare candid interview. “I’m completely a village girl. We planted that garden because we had to eat.” But she had bigger ambitions: “I knew I wasn’t going to be a village girl forever. I didn’t think I’d be a model who lived in New York, but I knew I was going to leave the village.” Shayk got her chance when her sister Tatiana dragged her to beauty school. Irina had been a reluctant guinea pig (“She would test her hair and makeup products on me, dye my hair, pluck my eyebrows…”), but talent scout Guia Jikidze happened to be in town when the sisters were in class. Jikidze was the man who discovered Natalia Vodianova – aka ‘Supernova’, a Russian beauty who signed a seven-figure modelling contract with Calvin Klein. He immediately twigged Shayk’s star quality. Jikidze asked Shayk if she’d like to work in Paris, so she packed her bags, shortened
her name, and headed to the City of Light. A dream come true? “I like Paris, but I prefer St Petersburg.” After a couple of frustrating years competing against European models, she turned her sights to New York. In 2007, Shayk hit the big time. She was discovered by Sports Illustrated, the apex of glamorous, sunkissed eye candy – and became the first ever Russian to grace its cover. In New York, that gawky gardening teenager had blossomed into a show-stopping model – a Russian reinvention of the American Dream. As the shoots came rolling in, so did the accolades: Shayk was voted ‘Sexiest Girl in the World’ by the readers of DT magazine, and reached number 10 in both the ‘Top 20 Sexiest Models’ (models.com) and ‘100 Sexiest Women in the World’ (FHM, 2011) lists. But the magazines weren’t the only ones sitting up to take notice: Portuguese footballer Cristiano Ronaldo became a permanent fixture on her arm when the pair started dating in 2010. Shayk graced the cover of more magazines – but this time, Ronaldo was at her side. They became one of New York’s most photographed couples, splashed across the media in paparazzi shots, fashion campaigns and features. In 2014, they posed for a shoot by Mario Testino for Spanish Vogue – the coverline ‘Amor y Fútbol’ (Love and Football) writ large in thick gold type. As life would have it, the couple split in February 2015 amid stories that Ronaldo had cheated. Since then, Shayk has been linked to American actor Bradley Cooper – although she remains tight-lipped about their relationship. Perhaps Shayk is learning from her mistakes? “The thing you realise as a public person is that press attention is part of your job,” she said in an interview with the UK’s Telegraph newspaper. “Of course, sometimes you want to hide and don’t want the attention, but it doesn’t matter what’s said. My friends and family know me”
That desire for privacy is at odds with Shayk’s livelihood – after all, she’s made a living from posing in the public eye. But she has a strategy: “If you’re happy you build a wall around you,” she told V. “What’s important to me stays behind that wall.” Maybe we’ll never see behind the wall, but in front of it Shayk is feisty, flirty and forthcoming. In television interviews, when not fielding questions about her love life with a tight-lipped grimace, she’s light-hearted and fun, ready to be the kooky-sexy combination that raises ratings and eyebrows. Her outfits are always skimpy, her English cutely broken, her smile permanently a mile wide. She plays up to the ditzy model stereotype too – on the Ellen DeGeneres show, she was asked to spell her last name but almost wasn’t up for the task. “It’s difficult. I don’t know if I can do it,” she said as she smoothed down her glossy hair. “Thanks to God I have good memory.” And her favourite writer? “Dostoevsky,” she told the Telegraph. “If I’d been around in 1867 I would [have] loved to date him.” Is the dizziness genuine, or a calculated, disarming act? Who knows. But one thing is clear: Shayk is ambitious. Last year, she made her silver screen debut in Hercules, the Greek mythology transformed into a big-budget Hollywood movie. She played Megara, “A very small role but a very important character for the movie,” she told UK Vogue. “When you’re on set for modelling, even for a lingerie shoot, you have maybe 10 people behind the camera, but on a film you have 200 people! You have to perform and you have to forget that you’re a model; you have to be real. It’s certainly very different.” Is this a permanent move away from modelling? “It’s my first time, but hopefully not the last time. Modelling opens so many doors – television hosting, acting, designing – so you can never plan. Let’s see.”

allace Chan lives a simple life. He has a humble apartment in Hong Kong, and takes the ferry to work every day – he’s a jeweller by trade, making brooches and necklaces and sculptures by hand, and he has lived in this city all of his life. It would be an unremarkable story, were it not for Chan’s inimitable creations: one of his most recent pieces of jewellery sold for $75 million in Paris. Chan’s work isn’t quite as modest as his lifestyle. I must admit, I was cynical when I first heard about this humble star of the jewellery world. “It is not important where I sleep, what I eat or how I go to work,” says Chan, from his office in Hong Kong. We are chatting via email, but I’m pretty sure he’s picked up on my scepticism. Can he really retain such strong values while creating fine jewellery for the rich and famous? “I am simply content as long as I can continue to create,” is his concise answer. “I started as a carver and sculptor in 1973 and have got used to working with my own hands. When I have a vision, I mold with clay, mixing the materials, making the tools and so on. I prefer it this way as it is a direct expression of the images on my mind.” And does he really make everything by hand today? “Yes; that is where the joy is.” Chan’s creations are more than just jewellery – they’re miniature works of art. ‘Return of the King’ is a white jade, diamond and titanium cuff bracelet, but its sheer detail and impossibly intricate carving, make it look more like a relic of an ancient civilisation than a mere bangle. ‘The Mighty’, a sparkling, spindly ant-shaped brooch is really a tiny sculpture: the insect’s body is made from silky pearls; its antennae are topped with rubies. Chan is fascinated by nature – “Beauty is everywhere, the veins of a leaf, the strength of an ant” – but it is more than just a source of inspiration. For his butterfly brooch, he incorporated the actual wings of a real butterfly: “No matter what gemstones you use, it is very difficult to convey the colours of the butterflies.” The wings are encased beneath a veil of gemstones, and bestow a rainbow of vivid hues. The urban energy of Hong Kong is a constant stream of inspiration: “Growing up here has allowed me the opportunities to learn from philosophies of the East and of the West,” says Chan. “Anything that comes my way can be inspiring. I am highly curious. I absorb like a sponge.” He is also deeply Buddhist – and travelled with a Zen master for six months in the early days of his career. “That was when I first began meditation, it helps me reconnect different dots in my mind and generate creativity.” I’m beginning to understand how this artisan jeweller reconciles his haute couture creations with his humble lifestyle. Quite simply, he is a craftsman at heart – a devotion which surpasses any suggestions of grandeur. It doesn’t matter to
Chan how much his creations cost – only that he has the opportunity to make them. Am I on the right track? “My work has become my life,” Chan confirms. “Instead of the ‘great success’ that people see, this is the greatest thing that has happened to me, the meaning of existence: I create therefore I am.” This passion for creation is rooted in the most basic of instincts: the fight for survival. “In 1973, the stock market crashed and my father lost everything. My siblings and I had to start working full-time to sustain our family. I started on this path out of the purest idea that only through hard work could food and warmth be obtained.” To support his family, Chan created art and sculpture works, then turned his hand to stupas before discovering his talent for fine jewellery. His breakthrough came while tinkering in the workshop in 1983, when he invented the ‘Wallace Cut’, a technique of carving motifs into gemstones. “The idea fascinated me. So when my carving skills started to mature I began the experiments.” The painstaking technique creates a striking 3D image within the stone – and the detail is jaw-dropping. The ‘Now and Always’ pendant is perhaps the finest example of the

But with the square cut of the gem, four faces appear in flawless symmetry, surrounded by a glittering frame of opal, sapphire and diamond. For Chan, the materials he uses aren’t just the world’s finest gemstones – they’re treasures to be nurtured: “I look at the main stone, I communicate with it and we are in love. I want to bring out the best of it.” He is also famously choosy when it comes to commissions – legend has it, he has turned away some high-profile would-be clients. “It is not really about whether I like or dislike someone,” he says. “It is about having the perfect homes for my creations.” It’s this ingenuity that has secured Chan at the helm of China’s fine jewellery world. His creations are the country’s most sought-after – but how do such accolades make him feel? “I am honoured and overwhelmed. It occurs to me that people do not see me as a random individual; they relate me - and my work - to my country. The development of fine jewellery had been dormant in China for a few hundred years, and it is time for the dormant to wake and join the world.” Chan’s enduring sagacity and steady hands make him the perfect man to carve out the future.

From professional skier to podiatrist, Bastien Gonzalez is known as pedicurist to the stars. We chatted with him about his legendary Studio treatment
B
asing its roots in tradition, a Bastien Gonzalez pedicure certainly puts the emphasis on the ‘cure’. Partly inspired by his 90-year-old grandmother’s nail care rituals, and partially based on the Latin translation of pedicure - which means feet treatment - the man that Vogue deemed, “the name to watch if you want your feet to stay beautiful,” seems to have revolutionised the nail industry. Gonzalez explains: “I wanted to create a full treatment, a treatment to the literal meaning.” Available at ShuiQi Spa, Bastien’s podological makeover involves drilling, buffing and shaping nails until they are barely recognisable. Polish is rarely applied, due to the damaging effects of varnish, and a massage, focusing on each muscle group from toe to knee, concludes the therapy. Gonzalez came to his fascination for foot care completely by chance. “I used to be a professional skier. I broke my knee and met a podiatrist for physiotherapy - my passion was discovered!” he accounts. After studying the subject for three years, he opened a podiatry studio in upmarket Place des Vosges in Paris and in two short years had amassed quite a following. “Everybody asked me, ‘Bastien, how did you become so famous in Paris so quickly?’” he recalls. “I liked to say, I serve the best coffee in town to all my clients! A luxury moment, mixing quality and services so naturally.” And it’s that luxury combination that has propelled him to the forefront of the best spas in the world, garnering him a reputation as pedicurist to the stars. Stories denote he’s worked with the likes of Gwyneth Paltrow and Naomi Campbell but Gonzalez remains respectfully quiet on the matter saying only: “Several names of my guests have appeared in interviews but I’ve never given them myself. If you want to work with the most talented and famous people in the world, you never go out with them, you never stay with them, and you

illennia have passed since the high culture of Atlantis, the legendary lost city, sank into the ocean. Since then, the myth has captivated imaginations and dreams the world over and at Atlantis, The Palm the parabolic creatures and discoveries of this revered utopian society have been unearthed for all to see. On a bid to continuously uncover the story behind one of history’s greatest mysteries, the team at The Lost Chambers Aquarium recently discovered another fascinating creature to add to the legend; the rare albino alligator. With milky-white skin and vivid pink eyes, the Atlantean version of this discovery states that the creatures were found lurking far below the surface, in a cave eternally-shielded from the dazzling rays of the sun. Legend also has it that their diet consisted of minerals; hence their stone-like, marble appearance. Excited to meet the new additions in person and find out more about these unfamiliar animals residing in the abyss at the heart of The Lost Chambers Aquarium, we spoke to Nicholas Derbyshire, the man in charge of the newcomers.
Having first appeared on earth around 37million years ago, alligators have since evolved to near perfection which is perhaps one of the reasons why these new albino-trait alligators are so rare. Nicholas explains: “It’s a really rare occurrence, this albino mutation, so much that there’s none in the entire Middle East. They are so unique, so rare, that even people visiting from the States or South Africa where alligators are common have never seen an albino one. These guys really are capturing people’s imagination.” In fact, it’s believed that only one in every 100,000 alligators carries the albino gene. In the wild, being that chosen one spells disaster. “Very soon after they’re born, they either get sunburned because they don’t have the melanin pigment to protect them from UV rays or they are spotted by predators because they’re white – which doesn’t work well as a camouflage,” says Nicholas. At Atlantis, The Palm, the two-year-olds have nothing of the sort to worry about. Their living area has been specially designed for the
brothers from Florida, who currently measure about a metre each in length. “We’ve heated the water – it’s just like a little Jacuzzi in there – and they have a rock island with little heat pads of varying temperatures on it so they can move around and get whatever temperature they want,” adds Nicholas. Watching them swim around in their own little alligator cavern, the pair are almost cute, interacting playfully and each having their own distinct personalities. Speaking with Nicholas, it’s clear the trainer already knows his new arrivals well: “Bruce is the dominant one, he’s a little bit bigger and will do things like playfully dip Blue under the water. They are brothers so they romp around together, pushing and play-biting.” Barely able to survive in the wild, the team at Atlantis, The Palm hope that by getting to know Blue and Bruce they can find out a lot more about these animals and help to conserve this critically endangered species. After studying veterinary medicine in her native Portugal, Dr. Ana Salbany embarked on a new adventure, leaving Europe for Dubai to take charge of marine mammal care at Atlantis, The Palm. We take a look at a typical day in her world…
8:30am My team and the trainers meet at the pool to start the daily health examinations; checking that all of the dolphins are in good shape.
10:30am I take samples from the animals that are scheduled for examinations as part of our preventive medicine programme. This helps us to notice any changes before they become a problem and involves carrying out ultrasounds, checking blood and taking samples.
4pm Time to focus on management duties. We’re a team of five and I work closely with other managers to make sure everything works well. There’s lots to organise, meetings to host and scheduling to do to ensure everything runs like clockwork.
6:30pm We spend the last moments of each day getting everything set up so that we are entirely prepared for the next day.
11am I head to the lab and begin processing samples. If the trainers notice anything unusual while working with the animals, they call me to come and check it out.
7pm I’m home, but on-call 24-hours a day. My phone never leaves my side in case there’s an emergency.

Dubai’s best seafood restaurant has a new chef at the helm and he’s very, very happy to be here aving started his career scraping fish from pans in the freezing cold grounds of a Brittany restaurant, it’s no wonder that Gregoire Berger, Ossiano’s Chef de Cuisine, has a smile on his face. “I love my job very, very much,” he says, “I love this restaurant, I’m so happy to be working here.” And all of this is delivered with a passion that’s all too clear to see. Having launched a restaurant in Casablanca, cooked privately for the President of France and served plenty of face time in one of the world’s busiest Michelin-starred restaurants, Gregoire isn’t afraid of a challenge. Which is a good thing given that Ossiano is already the winner of a rare hat-trick in the annual Time Out Dubai Restaurant Awards, how does he plan to make it any better? “This is the best seafood restaurant in Dubai,” he agrees. “We have the Gout de la Mer and so many guests come specifically for that. For me, it’s obligatory to keep this - I don’t want to change it.” That, however, is not to say that the Frenchman isn’t making an impact. Having created a menu that retains the best of the old whilst introducing mouthwatering new dishes, there’s now an abundance of variety on offer coupled, of course, with one of the most spectacular restaurant settings in the world. THE MAINE LOBSTER POT IS AN EXPERIENCE IN ITSELF
teeming with marine life, Gregoire is adamant that the main attraction should be the food. “The idea behind the changes is that Ossiano is, first and foremost, a restaurant. Guests might come because of the aquarium, but I want them to come back for the food, it shouldn’t be secondary.” And secondary it certainly is not. The Maine Lobster Pot is an experience in itself, with the chef slicing truffle at the table and inviting diners to get involved in the spectacle of it all, smelling the herbs and spices before they are added. The sumptous Alaskan King Crab is expertly paired with grapefruit and watermelon rendering it unmistakably refreshing. There’s also a daily market menu, prepared by Chef Gregoire and promising six-courses of the freshest ingredients around. Despite being at the highest end of the fine dining spectrum, Gregoire is determined to
ensure guests receive good value for money. “It’s an expensive restaurant and it’s a beautiful place, but we make sure that guests are more than satisfied. To me, it’s important to satisfy each and every table - I drive my team crazy asking them if everyone is happy, but when you pay a premium you cannot have mistakes. It has to be worth it.” Perfection is the goal and something Gregoire instills in the entire team. “When I build my menu, I involve all my chefs. Their creativity is included as, at the end of the day, they do a lot of the cooking - and they have to be invested in it to ensure it’s right.” And while many chefs have a reputation for being fierce or fiery, that’s simply not how
Gregoire operates. “I want people to be happy, it’s important to be kind to everyone. When I worked in Morocco, I went in and was a typical French chef, yelling at everyone. Within a week, they all hated me and I realised that in order to change others, I had to first change myself. Here everyone comes in with a smile, and the guests really feel it.” Gregoire explains his vision for the future: “Ossiano is beautiful, but we need to bring out the best of it. It’s like a stone - even if that stone is a diamond - you have to cut it properly to see the best of it.” And with a focus on exceptional ingredients, stunning plating and befitting value, Chef Berger looks set to make Ossiano shine even brighter.

It’s food that you’ll be craving.” Ramsay has been thoroughly involved in every aspect of the development, and isn’t afraid to get stuck right in. “Gordon is very much hands-on. He knows what he wants; he’ll be in the kitchen, tasting what everyone is doing,” says Cesar. “He might come for lunch or dinner but he’ll also be back there, tasting from the pot or scooping a spoonful from a bowl of whatever the chefs are working on at the time.” Hailing from a family that love food, it’s no wonder that Chef Bartolini had a culinary calling. His grandfather used to grow vegetables and keep chickens in the backyard and he was preparing his own lunch since he was old enough to catch the bus. Having worked for the Gordon Ramsay Group in London for over seven years, and boasting a culinary career that spans three continents, why did he decide to take up the challenge? “It’s exciting, it’s Gordon’s biggest launch and the concept is awesome, it’s pretty cool,” enlightens Cesar. Despite having only been in the city a few months, it seems that he is settling in well. “Dubai is excellent. From the produce you can get, to the lifestyle, the culture…everything. And I love the weather.” Bread Street Kitchen & Bar is ideal for casual family dining or late night bites. WHAT’S ON THE MENU? When it comes to the food at Bread Street Kitchen, there’s an ethos on simple dishes done well, using first-class produce and drawing from British tradition, yet the menu is entirely international. Chef Bartolini says: “The food is from around the world, there’s a bit of everything; Italian, a bit of Asian and fusion dishes.” Local ingredients are also represented, says the chef. “We’re not going to compete with the local cuisine, but we’ll include regional ingredients and flavours depending on the season, and definitely make them into specials.” Otherwise, the focus is on sourcing as much British produce as possible, from the butter
to the cheese. Stand out dishes include the Tamarind chicken wings, which come in a spicy, sweet sauce. The roasted cod served with crushed potatoes, caramelised onions and a beautiful baby artichoke and lemon sauce is another top choice. One of Gordon’s own favourites is the beef wellington which is set to be served up in style. The steak with mac and cheese is another you don’t want to miss, as it’s Chef Bartolini’s favourite dish to cook. Look out too for the generously topped oven-fired flatbreads, which introduce exciting toppings like butternut squash puree, pine nut pesto and delicately crisp chicken skin to the palate.

A DRAMATIC STAGE FOR DUBAI’S NEXT CHAPTER ATLANTIS, THE MAGAZINE
Being billed as the city’s newest cultural icon, the Dubai Opera House is set to open next year and aims to bring the art form to the masses
Launched by His Highness Sheikh Mohammed Bin Rashid Al Maktoum, Vice President and Prime Minister of the UAE and Ruler of Dubai, The Opera District in Downtown Dubai is set to become the cultural hub of the region. And the shining star at the centre of this development is the multi-billion dirham Dubai Opera House. This 2000-seat, multi-format venue draws its inspiration from the traditional sailing vessels of the Arabian Gulf, having been styled on the classic wooden dhows synonymous with the Dubai Creek. With ambitious plans to be as iconic as the world-famous Sydney Opera House - one of Australia’s top tourist destinations that has a history spanning over 40 years – the Dubai Opera House really is set to revolutionise the city’s cultural scene. The bow of the structure will contain Dubai Opera’s main stage, orchestra and seating areas as well as proposed sky gardens and restaurants while the elongated hull area will cater for taxi services, parking and valet. Thanks to exceptional planning and design, the venue will have the capacity to be transformed easily from theatre to auditorium, exhibition hall or lobby space. Almost half of the seating will be removable thanks to the use of hydraulic technology coupled with huge garages beneath the theatre that will offer storage space. A series of towers on stage will create an acoustic shell surrounding the orchestra, allowing the venue to perform as a concert hall. This innovative set-up means that the venue will be able to host almost any show in the world. Steering the helm of the new development is Jasper Hope, ex-Chief Operating Officer at London’s world-famous Royal Albert Hall. Bringing with him a wealth of experience gained in one of the world’s most prestigious cultural

and entertainment facilities. Hope is excited for what the Opera House will mean for the city of Dubai. He commented: “Dubai Opera is a fantastic development with tremendous potential to serve as the Gulf region’s defining destination for cultural events… An iconic development such as Dubai Opera will be a catalyst for the city’s cultural scene and serve as a magnet to attract international professionals and large-scale productions, further building Dubai’s reputation globally.”
When complete, the entire cultural district will cover 5-acres of land and will include a modern art museum, art galleries, two art-hotels and residences as well as shopping destinations, restaurants and waterfront promenades. Opera Grand will be the first residential tower in the district and is set to attract culture enthusiasts who want to live right at the heart of Dubai’s newest space.
