Hi.

So, where’ve you been? Haven’t seen you in a while.

BECAUSE IT ALL STARTS WITH THE MENU Talking to a guy I’ve known for a long time in the food business and he asks me: “So what’ve you been up to? I haven’t seen you in a while. Did you fall off a cliff or something?”

“No, not a cliff. No, I took a deep dive into the restaurant business. Never knew how much fun an exciting career in foodservice could really be. You want onion rings with that? Boss is running a special.”

BECAUSE IT ALL STARTS WITH THE MENU

We cut our teeth in the food business with Anchor Food Products. Back when they were cool. Back when they were growing at 1,000% per year. We did everything for them, from brand development to building two training trucks. It was one helluva ride.

“We’ve been so fortunate to have a partner that can bring our vision to life.”

Anchor, Appleton, WI

Wells’ Dairy, Blue Bunny Ice Cream was a client for nearly 15 years. That’s three times the national average for advertising firms. In fact we were with them longer than anyone in their marketing department. We developed advertising, videos, packaging, sales materials and introduced new products for them. And yes, we did stay overnight in LeMars. Eat at Archie’s if you go. Great food, perfectly kitchy atmosphere.

“They are able to make our brand relevant to consumers and the trade.” Blue Bunny • Wells’ Dairy, LeMars, IA www.hotoperator.com • 1-800-316-3198 X332 • Oshkosh, WI

BECAUSE IT ALL STARTS WITH THE MENU

This is a billboard project that we developed for Connie’s Pizza.

This is a billboard project that we developed for Sportsman’s Grill.

We also developed a menu for them.

We made the menu for them, too. The recession nearly got them - but the billboard helped. So did the menu.

Nice people, fun projects.

BECAUSE IT ALL STARTS WITH THE MENU Engineering coupled with great design is very powerful. This customer worked with us and then a distributor came along and wanted to “update” the menu for free. The client nearly went for it, except he asked us what we thought of the ideas from the distributor. It was great for the distributor, but bad for the restaurant operator. The distributor had told them to sell more spaghetti with a $6.00 contribution to margin. Except everything we had highlighted had over $9.00 of plate contribution. So we asked if the customer would rather have $6.00 or $9.00.

“They made it really easy to understand how menus work.”

Cibo, Fond du Lac, WI

We created this piece nearly seven years ago. They use the colors on the left in spring, and the color scheme below for fall. HotOperator recommends updating your menu at least twice per year - preferably four times per year - because that’s how often people change their eating patterns. By the way, we developed the logo type, too.

“They really elevated our brand. Gotta love that.”

BECAUSE IT ALL STARTS WITH THE MENU We’ve taken another turn in the food business with Face Book, Twitter and E-Mail marketing. Start with a Rewards Club to get permission to communicate with your guests. Then start a conversation. Keep it conversational, share posts about your life, your food and your promotion. But be careful of shameless commerce. And listen to feeback.

“Start a conversation with your guests, and build a community.” Sergio’s Appleton, WI www.hotoperator.com • 1-800-316-3198 X332 • Oshkosh, WI

BECAUSE IT ALL STARTS WITH THE MENU Menu boards are generally about transaction speed, but in the case of Pazini’s, it was about creating something fun and exciting as well as being functional.

Menu boards require the same attention to detail as any other menu system. Fast casual, quick service and drive thru are all set up to provide the fastest possible transaction speed.

Fast, easy to read and timless to look at. Maybe we should have charged them more. Now I’m starting to sound like a general contractor.

Time is money in the QSR segment. Our endeavor is to make menus that are both elegant and easy to read. This makes them easy to order from and that speeds up the transaction.

BECAUSE IT ALL STARTS WITH THE MENU

Menu design can be timeless. Often that’s what great design is. Sure, making something trendy can be fun, and we’ve done it. But we prefer a timeless look. By way of example, this Brit’s menu was design-engineered more than 5 years ago.

A lot of what we do is help food people come up with new items and develop new looks. Here are some samples of things we did recently. By the way, the food shots were done on an iPhone. Eat your heart out, Domino’s.

Miscellaneous projects we worked on recently. “HotOperator created the best menu we’ve ever had.”

BECAUSE IT ALL STARTS WITH THE MENU Elegance may be the hardest adjective to express visually. The Red Shell is part of Lettuce Entertain You, and we design-engineered this menu with a removable “Catch Of The Day” area in a primary location on the menu. In this way, they can update the menu on a daily basis, and still have a well engineered menu.

POP is a fun restaurant in Minneapolis. They already had a great logo, and we developed this menu to take advantage of the creative already started. Sometimes elegance is overrated.

“Elegance requires simplicity. It’s a lot tougher than it looks. Damn near impossible sometimes.”

Red Shell, Chicago Suburbs

“Screw elegance. We just want to have fun! ”

BECAUSE IT ALL STARTS WITH THE MENU “So, how about those rings?” I had a lot more to tell, but I could see the guy was getting itchy to get moving. “Don’t take this as an all or nothing proposition, but it is a proposition. We could be your new agency, or support your old one. Not that they would like the help, but this is about your happiness, not theirs. And we’re full service, so if you don’t have the heart to tell them, we can off your old agency for you. No charge for that service, BTW.”

Does eating in a restaurant every day for lunch qualify as foodservice experience? If you’re asking us, we don’t think so.
