VEGETABLES: 1 aubergine, 1 courgette, 1 red pepper, 1 bunch spring onions, olive oil, salt.

DUKKAH: 1 / 2 dl pistachio kernels, 1 / 2 dl hazelnuts, 1 / 4 dl sesame seeds, 1 tbsp fennel seeds, 2 tsp chilli flakes, 2 tsp salt flakes.

Slice the aubergine and courgette, cut the pepper into boats, halve the spring onions and toss everything in the olive oil. Grill on a hot grill or on a grill pan. Season with salt.

Toast the pistachios and hazelnuts on a dry pan. Then toast the sesame and fennel seeds. Crush everything together before stirring in the chilli flakes and salt with the nuts and seeds.

CHIMICHURRI: 1 clove garlic, 1 large handful of flat leaf parsley, 2 large handfuls of coriander, 1 small handful of oregano, 1 / 2 - 1 red chilli without stalk and seeds, 1 / 2 dl red wine vinegar, 1 / 2 dl olive oil, salt.

ASPARAGUS: 1 bunch green asparagus approx. 500 g, 2 cos lettuces in boats, 2-3 handfuls of pea shoots, 1 mozzarella, olive oil.

Break off the ends of the asparagus stalks. Steam the asparagus for 1 minute in salted, boiling water. Drain. Arrange the asparagus and lettuce on plates. Top with pea shoots and mozzarella, and finish with the dukkah. Serve immediately.

Finely chop the garlic, parsley, coriander, oregano and chilli. Stir in the vinegar and oil, and season with salt. Serve the grilled vegetables with the chimichurri.
