2 cups of flour

2 cups of fresh or canned whole kernel corn

½ teaspoon of salt

1 tsp of baking powder

½ cup of milk or coconut milk

½ cup of sugar

1 teaspoon of vanilla extract

2 large eggs

¼ cup of melted butter

Preheat your oven to 350° F. And prepare (grease) an 8x8 pan with butter. In your blender or food processor, add the corn and milk. Blend until smooth and add all the other ingredients and continue to blend until smooth and thoroughly mixed. Pour into your baking dish and bake for 60 minutes. Allow to cool for at least 30 minutes before serving. It is great with milk!
