The Protea Hotel by Marriott Johannesburg Balalaika Sandton has undergone a series of renovations, updating the upmarket Sandton venue’s facilities and elevating its appeal to both business and leisure travellers in the City of Gold. ollowing the return of late-night dining in recent months, Joburg’s second favourite off-hours meal – lunch – is making a triumphant comeback of its own. With indoor and outdoor dining, ‘the secret garden’ and a deli section, The Blockman is the perfect place to take the diner who wants it all … or isn’t sure what they want. Its captivating striped awning on an emblematic corner in Parkhurst fast lures you in. Step through the doors and come face to face with stunning wood paneling, gold touches and all sizes of steaks sizzling on the indoor grill. Now, all you want is to devour your succulent beef. Luckily, this is the tastiest you can find – you’ve come to the mecca. The steak has never been less humble.

Go to town on the best steak in the city at The Blockman It’s no surprise that Parkhurst’s 4th Avenue is full of modern spots for shaking hands, cutting deals and perhaps even an afternoon glass of prosecco. But leisurely lunch meetings are no longer reserved for investment bankers and high-power business associates. The Blockman, a brand-new chef-driven restaurant helmed by Vassilios ‘Basil’ Holiasmenos, strips away the rigid formalities of dining while focusing on the impeccably cut steaks, warm service and relaxed casual ambience (nonetheless, dress to impress). The Holiasmenos family – who also own Kolonaki Greek Kouzina and Modena Italian Eatery – have invented an alternative to the steakhouses appealing to the stereotypical ‘power lunch’ crowd. At The Blockman, they buy the whole carcasses sans the middle men and age it themselves, all while introducing expert chef Basil’s seasonal, globally influenced cuisine and maintaining the roots that the community knows and loves. The spot’s location – the huge premises vacated by Craft – adds the posh vibe and makes it prime real estate to attract Joburg’s fashion crowd. No expense was spared in the design of this extraordinary steakhouse teeming with pretty people. Sit in the buzzy wood- and leather-clad outdoor dining area with irresistible dressed-down appeal, among the plush chairs and flattering lighting. With its crowded atmosphere, you can assure that no one will hear your conversation. An extensive cocktail menu features well-balanced, bespoke renditions of classics to help break the ice. Our top pick is the orange-tinged Leather Me Up – a mix of Inverroche Amber, Cointreau, citrus and rose with remarkable depth. However, perhaps one of the best-executed cocktails right now is the Smoke ‘n Bone: Notes of tarragon, tea, plum and chocolate bitters assert themselves aromatically, while bone marrow fat-washed Woodford Reserve adds body and mouthfeel, working with the port and Muscadel to round out the punctuated finish of bitter ingredients. Beyond that, the fantastic sommelier’s wine list is eclectic, with a focus on bold pours, ensuring there’s something for every palate – even the unexpected oenophile. Take his suggestions on what pairs well with the incessantly imaginative cuisine.

The kitchen gives mighty slabs of beef a serious workout, but there’s something for everyone. Start off with the phenomenal mussels, a crowd favourite served with grilled leeks, pancetta, garlic, ciabatta and white wine butter emulsion – a little dollop of savoury paradise. The charcoal grilled lamb tails with tzatziki, mint and black garlic are a perfect representation of the creative menu that will have you reaching for your iPhone. Then, move onto one of the steak selections that are plated to impress and more than satisfy the meat-hungry. Some of the standouts include a 400g rib eye with mushroom cream, wild mushrooms, bone marrow dauphinoise and fresh truffle; a 300g rump with Madagascan pepper sauce, roasted onion and thyme mash, orange zest, slow-roasted onion, black garlic and spring onion; a 300g fillet with Bordelaise sauce, carrot purée, roasted butternut, sweet potato and bone marrow; a 750g to 800g picanha (a prime sirloin cut); a 1.2kg tomahawk; as well as Jersey beef, Black Angus beef and local wagyu. Premium cuts are butchered and dry-aged on site, seared on the grill for a crisp, brown crust and basted in butter just before serving … perfection. Just in case you were questioning it, you will regret not partaking in their side of deep-fried camembert and fruit preserve. Chef Basil places a premium on the sensory experience of the palate and consistently delivers one of the best experiences you’ll have anywhere. So, although the steaks with a pleasingly crusty, cast-iron sear are the main event here, just about everything on the menu is worth a try. Choose from chicken thighs, lamb roulade, duck breast, game fillet, miso and honey glazed pork belly or line fish of the day done the chef’s way. The restaurant

also features vegetarian dishes such as burrata to whet your appetite for what’s to come plus spiced roasted cauliflower with toasted almonds and lemon aioli, making it a solid spot to impress without overcompensating. For dessert, it’s all about the signature honey and saffron semifreddo – a frozen mousse topped with roasted stone fruit, mixed berry gel and honeycomb. Whether you’re trying to impress your soulmate, the serious gastronome in your life or the client who likes dining on perfectly executed versions of steakhouse classics, you can’t go wrong at The Blockman. Not to mention, chef Basil’s restaurants are where you’ll find friendly service, no pretense and more bang for your buck (as compared to some other restaurants on the strip). You’re never out of wine, your plates are whisked away as soon as you’ve taken the last bite and if there is, in fact, something you need, your server will help you quickly and with a smile. Add in a happy, lively atmosphere and a comfortable setting with lavish appeal, and The Blockman can hold its own with the city’s more traditional steakhouses. The best restaurant in Africa – is it worth the hype? The beach shacks of Paternoster – a remote fishing village two hours from Cape Town – call to mind creamy mussel pots, grilled crayfish with garlicky butter, strings of seashells, unpretentiously mismatched wooden furniture and the feeling of sunshine on the skin. Among the many winners at The World’s 50 Best Restaurant Awards 2021, the 20-seater Wolfgat, located in a humble cottage above the beach, has been named the 50th best restaurant in the world and the best in Africa. We snapped up seats at this off-the-beaten-track spot months in advance to see if it’s worth the hype – and the significant detour out of the city.

First impressions. Like a kind of mirage, a cluster of impossibly white buildings receding into the distance appears from the coastal path on the rugged West Coast peninsula. From a whitewashed heritage fisherman’s cottage with just 20 seats, chef-forager and home-grown native Kobus van der Merwe is shaking up the sleepy fishing town of Paternoster. Wolfgat’s name translates to ‘wolf cave’, referencing an archaeologically significant cave with remnants of an early civilisation, whose entrance is rumoured to be directly beneath the terrace. Fun fact: 2,000-year-old bones were found here during an excavation not too long ago. It couldn’t be closer to the water, with open-porch dining that looks right onto the beach – and pods of passing whales and dolphins. The kind of place you can while away an afternoon, drinking natural and organic wines paired with a foraged beach vegetation menu. alongside a delightful wine list, Wolfgat has an ambience that feels like home … and a sprinkle of seaside magic. Essentially a one-room affair, it’s a tiny restaurant that’s about as far away from the glamorous city life as you can get – think animal hides; rough-hewn pottery; pale blue doors; shades of pearl and oyster; nicely spaced-out tables under wooden slates; a fireplace for cooler months; a free-standing counter used to plate the food in full view; and shelves of ingredients like shrubs, homemade vinegars and flavoured salts covering one wall. The relaxing and unpretentious space feels fresh in its un-décor. If it sounds pretty obscure, it is. In this case, tiddly size does nothing to diminish the appeal – instead, it forces the diner to direct serious attention to the plate. It’s important to note that Wolfgat cannot be compared to the likes of La Colombe Restaurant (81st in The World’s 50 Best Restaurants 51-100 list) and FYN (92nd), so leave your haute cuisine expectations at the door.

The story with the food. Chef Kobus has gained a cult following for his South African take on veldkos – or ‘field food’ in Afrikaans. Even with a R1,050-a-head price tag, this far-flung destination for coastal cuisine can be a tough reservation to score. Still, it’s worth the hassle (and cost) to experience ingredients that you’ve never tried before, such as seaweeds, wildflowers, indigenous shrubs and seasonal wild herbs, served raw or only minimally altered. The strandveld fynbos – the West Coast’s unique flora on the windswept dunes – changes with the seasons, so the wildly imaginative seven-course tasting menu varies with the seasons and the weather, depending on what chef Kobus finds on his daily field trips. In a word, we’d describe the food as mind-bending. Our meal started with heavenly fresh-baked sourdough flatbread to dip into a pan of bubbling hot butter with bokkoms (dried fish). Another six courses followed, written on the menu with brief descriptions accompanied by the Latin names of the plants featured in the dishes, but explained verbally by chef Kobus himself. The beauty, tradition and craftmanship of veldkos – often inventively presented on stones or plants with a wood or shell spoon – incorporates unfamiliar ingredients specific to the region, like the strandveld snacks. A refreshing wild oyster, creamed white mussel served in its own shell along with a limpet (another bivalve), ground up with white wine and butter and served warm, was served in shallow bowls on beds of locally found stones. Catch of the day, served raw with brakvygie (an evergreen and fast-growing succulent), ginger, sea moss and kapokbos (wild rosemary) followed – sophisticated tweezer food that’s not cloying, just exactly precious enough. Waterblommetjies, meaning ‘small

water flower’, were bedded on amasi and duineseldery (sea parsley), topped with kiesiblaar (little mallow or cheeseweed) and suring; a small plant with bright yellow flowers and leaves like shamrocks that’s native to South Africa, where it’s endangered. Mussels ‘Leipoldt’ from nearby Saldanha Bay came with wild garlic masala, peach mebos and sambals. A lush medium-rare portion of blesbok loin, served with klipkombers (a type of seaweed), sea lettuce and seekoraal (samphire), was the first main course. We were a little disappointed that for this course, the pescatarian menu simply replaced the local antelope with pickled beetroot, despite advising Wolfgat of dietary requirements upon booking. (The restaurant makes it clear on their website that they’re unable to accommodate any menu changes on the day.) However, the second main course – angel fish, dune spinach and sweetcorn – was beautiful, but also intriguing. Pelargonium capitatum (a shrubby or bushy, low-growing plant) ice cream with pear and almond provided the finale. Some of the dishes, the dessert for example, may be austere in presentation, but that’s understandably part of the appeal. There’s a considered approach to every dish – house-made, housesalted, house-pickled, house-churned – resulting in cuisine that straddles tradition and innovation. The wine situation. Begin with a signature cocktail, then head straight to the wines from organic vineyards such as Mother Rock, Intellego, Wildehurst, Cape Rock and AA Badenhorst. The hyper-local diligence is likewise applied to the brief wine list, which includes bottles from local Swartland and Olifants River Valley right over the hill. There’s a wine-pairing add-on to the tasting menu (R850), but we recommend ordering by the bottle from the boutique selection of alternative, unfiltered, natural-ferment wines. Despite that the food is helplessly heterogeneous from course to course, it’s not foolish to commit to a full bottle of the astounding Mother Rock Kweperfontein Chenin Blanc. With its yeastier characteristics and a cloudy appearance, it’s certainly not a wine made to have mass appeal. This characterful and very well-balanced chenin blanc doesn’t look or taste like a typical wine – in fact, it tastes more like a sour beer or kombucha – but it’s vinified with finesse. Poured into delicate stemware, the nose shows top notes of flowers and herbs before peach, pear and citrus. We also ordered a bottle of the more fairly priced Lemberg Rosie’s Blanc de Noir from Tulbagh – an easy-drinking rosé with red berries and a lively acidity. 24 | w w w.s c en ein t h ec it y.c o.za | Summer 2 0 2 1

The service. The staff, most of them women, have no formal training. But don’t let that – and the informal uniforms – fool you. In a tasting-menu-only restaurant, timing is everything, and this team is flawless in executing it at just the right rhythm. You’ll have a lot of questions about the food and wine, and they’ll all be answered by chef Kobus. Prepare to hear a lot of Afrikaans spoken, which is sort of how it goes with cult (but not fussy) restaurants. Voices never climb to overexcited levels, but it’s clear everyone is having a good time. Is it worth it? Unpretentiously locavore-ish, welcoming and personal. Wolfgat is a revelation that deserves its cult status. It’s totally worth it to celebrate an anniversary or special event – for the seven ethereal mini-courses of uniquely wild flavours of South Africa alone. With that being said, don’t necessarily believe the hype. You can’t compare a foraged lunch or dinner at Wolfgat to the delicate presentations, modernist bits and bobs or legendary bastions of molecular gastronomy that you may have experienced at some of the city’s upscale stalwarts. That wouldn’t be comparing apples with apples. Wolfgat is a three-hour pared-back, no-tablecloth rustic dining experience you likely won’t forget. Come with an open mind to tick it off your ultimate foodie bucket list and you’ll have an unforgettable meal.

Top tip: Make your reservation at Wolfgat even before you book your ticket to Cape Town. If you can snag a table, plan your trip to Paternoster from there. Wolfgat is booked solid for more than three months and reservations are always snapped up within minutes when they open. Keep an eye on their Instagram page for a heads up on when the next availability will be released on Dineplan (reservations can only be made online). Wolfgat opens for lunch on Thursday to Saturday at 12h30, and on Sunday at 12h00. Set adjacent to the Terra del Capo Tasting Room that showcases the Italian-inspired Terra del Capo wine range, this intimate restaurant is shadowed by olive trees growing on its outdoor terrace. The surrounding gardens are majestic, with trimmed hedges, giant trees and flowing grasses, which make the whole place feel wonderfully discreet. The gentle scent of rosemary and basil dispensing their fragrances throughout adds to the experience. The food here is pure poetry and presentation – no one on earth does small plates with the devotion of the Italians. It hardly matters whether you opt for a glass of wine or bubbly; the olives will be briny, the bread will be soft, and the sights will be beautiful. Order up one of the rustic-style platters of buttery cheeses and paper-thin-sliced salami, Parma ham, mortadella and coppa. If that’s not enough, make sure you sample the creamy burrata paired with blistered tomatoes and a basil dressing; crispy salt and pepper squid served with a saffron aioli; poached chicken tonnato salad that packs the best in seasonal flavours; salty, rich Parma ham wrapped around sweet and juicy melon; and silky seared springbok tartare – they’re dependably stellar. The Italians say that “a meal without wine is like a day without sunshine”. Indeed. So, what should you be drinking? The coastal town of Paternoster’s exhilarating coastline, spectacular sandy beaches, whitewashed fishermen’s cottages and stunning seascapes feel like freedom itself. With ample sun, good-natured locals and a cluster of little white houses perched behind a vast deserted beach, this quaint fishing village up the West Coast (145km from Cape Town) is ideal for experiencing a slow, gentle pace of life. To enjoy Paternoster in guaranteed privacy, the relaxed and quietly off-beat Gonana Guesthouse – one of our favourite little finds – should be firmly on the ‘must-visit’ list. Tucked away down a side street, it feels light-years away from the hustle and bustle of modern Cape Town. Once inside the indoors-outdoors lounge upstairs (the heart of this little hotel), the space is welcoming and open to the elements, like the sofas overlooking the coastline and rattan pendant lights swinging in the sea breeze. And then, suddenly, there it is … the sea, right below you. It’s a view that makes you stop walking and talking and just breathe it all in. The property is as secluded as it is charming, and a go-slow ethos runs right through this place. Its eight guest rooms lack televisions, every lodging option has an ocean view and the on-site dining facilities are openair. Add the vivid blue of a solar-heated swimming pool against the entirely white surroundings and the whole place has an extraordinary presence. Rooms, pared-back and pin-drop quiet but for the trill of seabirds and crash of waves, are designed with a stylish hand in clean lines, a restrained palette and a stripped-down simplicity. It’s the kind of coastal hideout you’ll want to return to again and again. But for all this attention to detail, Gonana Guesthouse is essentially a barefoot hideaway where throw-on-and-go kaftans rather than shoes take precedence in the dress code. Consider a week (or four) at the meticulously appointed Twelve Apostles Hotel and Spa, with fynbosclad mountainside to one side and the vast expanse of the ocean to the other. The upscale white hotel – named after the Twelve Apostles Mountain Range that runs parallel to the coast from Camps Bay to Llandudno – manages to ably combine the endless, peaceful landscape with the modern comforts of a top-tier escape. The air is as clean and pure as the waters of the Atlantic Ocean, and the coastal swath is the stuff postcard photographers dream of. You come here to be far away from everything – fighting the urge to sit back, relax and do absolutely nothing is futile. We recommend booking a quiet and tucked-away Mountain Facing Room, decked out with riotous pattern, lots of blue and white hues, elegant mirrors, covetable headboards, throws and cushions galore as well as accessories inspired by oceanic elements. These extravagantly decorated rooms – including the boudoir-like bathrooms, soap and pillow menus, and in-room toiletries enriched with botanical extracts – feel every bit as wild and elemental as the sea. Yet given the rugged natural beauty, fynbos fragrance, chorus of the birds and breathtaking views, carefully considered details seem like an unnecessary distraction. Rooms from the upper floors have optimal sea views, too. The main draw here, though, is the dining: The mountain-facing Café Grill, with a coolly muted feel, serves stellar salads, sandwiches, wraps, amped-up burgers and visually pleasing sushi, while seafood-centric suppers of sophisticated dishes prepared by chef Christo Pretorius are served in Azure Restaurant. The restaurant spills out onto the sunny terrace when it’s warm, where you can sip locally distilled gin and order the freshest raw West Coast oysters served with an accompaniment of lemon cheeks, cracked black pepper and mignonette salsa. You’ll be very well placed if you’re planning to visit the Constantia Wine Route, Simon’s Town and Kalk Bay, too, but the location doesn’t matter – the hotel is the destination. The clean, modern design mixes raw materials that lend an inviting warmth with luxurious touches like radiant heated floors and a DStv-equipped flat-screen TV – and the location can’t be beat. Our suite had a base palette of taupe, grey and off-white, an indoor seating for admiring the view or reading, a great balcony, plenty of storage and a freestanding bath from where you can lie back and see the vineyards. A huge viewing window faced the garden, which in summer is shrouded with flowers freshly dampened by the rain. The eternal landscape, nature-filled views and sky-blazing sunrises are what sold it to the owners – it’s not hard to fall under the same spell. For breakfast, the menu is rustic but wholesome and inventive. The deceptively virtuous ‘South African omelette’ – filled with cheese, sliced biltong and caramelised onion, served with deliciously golden-brown homemade bread – tastes sensational. FOR ADVENTURE BOSCHENDAL ORCHARD COTTAGES A back-to-the-land farm stay worlds away from the bright lights Sometimes a bit of space and quiet is all that’s required. Throw in clean design, whippet-fast Wi-Fi and the most modern of mod-cons and you get Boschendal’s fresh, neutral-toned Orchard Cottages. Amid a collective craving for more rural surroundings, these beautifully restored cottages set 2km from the main Werf area (you’ll need a car) are indulgent heaven on rarefied earth. Although the cottages themselves flaunt their elegance, interiors are minimalist and more about texture than colour – taupe, greys and whites breeze through the rooms, elevated by jute rugs, handcrafted ceramics, colour-saturated Le Creuset stoneware for morning coffees and fleece blankets for wrapping up to watch the sunset with an ice-cold glass of rosé. Then there’s the terrace, which catches the dusk light just right and is ideal for sunbathing, stargazing or sitting out on listening to birdsong. A wood burner, freestanding tub and sofa that seems to engulf every limb keep things snug in winter (or, let’s face it, those chilly Franschhoek summer evenings). Our cosy and eco-considered one-bedroom cottage was an escapist space that embodied that kick-off-your-shoes feeling of staying at a friend’s home. The scent of wild rosemary and lavender filled the air … it was perfect. The materialisation of the interior décor and furnishing plays an important role in the design. The interior evokes a moody yet tranquil atmosphere to give the space a classic contemporary feel. The restaurant is divided into three main seating areas which lends itself to areas of intimacy and privacy as well as more relaxed social spaces. The main dining space is openvent bar area and open view into the kitchen adds both energy and movement to the experience. The new external terrace is one of the main features furnished with custom lighting and hanging plants. Marble Group is once again pushing the boundaries of luxury, and everyone’s invited. Get ready to dress up, show up and break free this Summer as Zioux {pronounced Zoo} which has officially opened its stained-glass, over-the-top doors. “The world has changed, but people still love to go out and have fun,” explains Gary Kyriacou, founder of The Marble Group. “We see people are looking to escape when they’re out – Zioux is the place for them to let go.”

Located next door to Saint in the MARC Sandton, described as a playground for the adventurous, Zioux is creating a buzz in the heart of Sandton – with the high-energy and playful Saint on one side, and Africa’s largest stock exchange on the other.

The food is not a traditional sit-down offering either. Instead, a classic retro-revival of nostalgic menu items and small, decadent plates. On certain days of the week, Zioux will also feature extravagant brunches and high teas.

The 400m2 space is a merger of a bar and a restaurant on an international level – a luxurious lounge where guests can indulge in Champagne, cocktails and a menu featuring an extravagant selection of dishes designed to be shared. Each corner and surface have been carefully thought through and pays homage to the 70’s era. The space is intimate and seductive.

“We cater for a diverse but specific crowd,” explains David Higgs, co-founder of The Marble Group and the artistic mind behind the globally-inspired menu. “Food has always brought people together, and we’re going back to that, it’s just going to be really opulent and playful.”

“Zioux brings warm authenticity but also decadent detail to life,” explains Interior Designer, Irene Kyriacou. “Everything in the space is custommade and intricate to create an air of comfort and timelessness in the inside-outside space.” Marble Group has once again partnered with GRID to design the look and feel for Zioux. The centerpiece to Zioux is the onyx marble back-lit bar. It is flanked by booth seating, a raised VIP
