Catching Up With FRHI Hotels & Resorts by Katie Skrzek on Nov. 27, 2014

Last week I attended a breakfast for FRHI Hotels & Resorts at The Plaza Hotel in New York. Held in The Oak Room, the roundtable featured a snapshot of the hotel group’s three brands: Fairmont,Raffles and Swissôtel. Kevin Frid, President, Americas for FRHI took us through a presentation describing the three brands and what the future holds for FRHI. The group’s corporate vision is “to be the world’s preferred hospitality company.” This sentiment rings true through FRHI’s luxurious properties and global growth. Currently, FRHI consists of more than 110 hotels in 35 countries — and growing. Fairmont has 68 properties; Raffles, 11; and Swissôtel, 31. Over the next three years, look out for dozens of new hotels all over the world, including Raffles Jakarta (opening 2015), Raffles Warsaw (opening 2016), Fairmont Austin (opening 2017) and Swissôtel Hangzhou (opening 2018). To give a feel for the variety FRHI Hotels & Resorts offers, the room was set with mock-ups of each brand’s décor. Fairmont’s display included an animal-print rug and decorative mirror wall hanging all in a mod style. Raffles’ design reflected a more traditional aesthetic of rich leather chairs, a gold bar cart and a bookshelf with vintage books. Swissôtel featured a plush, white carpet, unique framed prints on the walls and pillows using fabric from a local supplier with a pattern to look like the alpine snow flower.

At a Glance Purportedly “the most photographed hotel in the world,” the 611-room Château Frontenac looms like a castle-cum-fortress on a prime perch over the St. Lawrence River.

Review The Frontenac has long been Québec City’s iconic grand hotel, and few castles or forts are as large as the structure, which contains copper towers, turrets, terraces and more than 600 guest rooms. There’s an elegant entrance complete with liveried doorman standing sentinel out front. The vast lobby, with its coffered ceiling, can get so busy at check-in time that velvet ropes mark off lines for guests to wait. The hotel, which opened in the late 19th century, was clearly modeled on Europe’s grandest properties. Today, it hosts more meetings and conventions than diplomats and dandies. After a much-needed renovation in 2014, the grand dame features rooms that are quite nice, and for those who want to be located in Upper Town, the Frontenac is the only luxurious option. All of the rooms are different in minor ways because of the building’s eccentric architecture, so a junior suite may have a slanted roof or a circular area in a turret. Of course, the most requested rooms are those with views of the river, but even some of the interior rooms overlook gardens or attractive angles of the building’s fantastical architecture. Indagare Tip: The Fairmont Gold rooms on the 14th floor do not have direct river views, but the rooms are larger and come with access to a club lounge with its own concierge and snacks served throughout the day. It manages to make the massive hotel feel a bit more intimate.

Who Should Stay


Families with young children and those who views such kid-friendly amenities as a heated indoor pool, many restaurants, a large gym, an entire floor of boutiques and a canine ambassador on premises as a plus.

Who Shouldn’t Stay Anyone whose idea of a blissful hotel stay is ruined by the sight of people streaming off of tour buses. The property was built to handle crowds—and it does. – Melissa Biggs Bradle

It's officially the time of year to enjoy sweets as scenes instead of -- or before -- eating them. Visit gingerbread house displays or grand competitions around the nation to enjoy the seasonal treat. The 22nd annual National Gingerbread House Competition The largest gingerbread house competition in the USA was held at the Omni Grove Park Inn in the Blue Ridge Mountains of Asheville, N.C. The competition boasted more than 150 designs and took place on November 17 holding four categories: adult, teen, youth and child. All entries are on display for free viewing through January 1.

Other Omni Hotels & Resorts are offering similar experiences, including Omni La Costa's First Annual Gingerbread Festival in Carlsbad, Calif. on display December 5 through January 5 and Omni Barton Creek's 7th annual Gingerbread House Competition in Austin, Texas on December 2. Taste of Home's Gingerbread Boulevard This season, Taste of Home magazine is introducing the first Gingerbread Boulevard in New York City's Madison Square Park on December 9. The display is unlike any other, consisting of three life-sized gingerbread houses each celebrating a flavor of the holidays: Peppermint Place, Cocoa Cottage and Cinnamon Shack. The unveiling is taking place during the annual Madison Square Holiday tree lighting and will be on display through December 23.

The Fairmont San Francisco Gingerbread House Witness The Fairmont's towering two-story Gingerbread House in the hotel's grand lobby during the annual Gingerbread Holiday Open House on November 29. The San Francisco location has been transforming into a "Winter Wonderland" for more than a century with family festivities and must-see decor. The house is made from an impressive 7,750 pieces of home-baked gingerbread, 1,500 pounds of royal icing, 700 pounds of candy and 895 hours of work by the Pastry Shop and Engineering Department. Guests can also expect an extended railroad track, North Pole Nook and Gingerbread Doghouse. The amazing displays can be viewed until January 1.

Christmas at the Galt House For the fifth year, the Louisville, Ky. Galt House Hotel is hosting a Christmas event full of activities and attractions, including a gingerbread house contest and display. All houses are completely edible and will be judged based on categories like creativity, holiday theme, architecture and originality. The 47-day celebration also includes events like a "luminaries" show and breakfast with Santa. Professionals, amateurs and businesses will have their entries on display for guests of KaLightoscope: A Christmas Carol to see until January 1.

Three Gingerbread Lanes in New York Chef Jon Lovitch's Guinness World Record-breaking Gingerbread Village at The New York Hall of Science in Queens, N.Y. has expanded to almost unimaginable heights. What was 157 gingerbread houses in 2013 is now a 450-square-foot village with 3,000 pounds of icing, 600 pounds of candy from 14 countries, 600 pounds of gingerbread dough, 1,000 houses, 95 trees, six cable cars, an underground candy subway station, and even more. Smaller versions of Lovitch's village will be on display at The Algonquin Hotel Times Square in Manhattan and at the New York Marriott at the Brooklyn Bridge. View the large display now through January 11. The Sheraton Seattle Hotel's 22nd Annual Gingerbread Village The Sheraton Seattle Hotel lobby will again be home to a Gingerbread Village creation made by the property's culinary team and area architecture firms. The tradition brings more than 100,000 visitors and this year's theme of "Jingle all the Way" will show edible candied scenes from holiday tunes like I'll Be Home for Christmas and Santa Claus is Coming to Town. The scenes are made from 1,200 pounds of dough, 800 pounds of icing, 200 pounds of white chocolate and 250 pounds of almond paste. Visit the attraction until January 4.

Disneyland Resort Debuts Gingerbread House If you happen to be in "The Happiest Place on Earth" this holiday season, add a visit to the Grand Californian Hotel & Spa to your schedule. The west coast is presenting the tasty display November 27 through January 4. PPG Place in downtown Pittsburgh is showing the 12th Annual Gingerbread Competition creations made by students, chefs, individuals and organizations as part of their Wintergarden exhibits and displays. The gingerbread houses are presented with local artist Don Jones' model train pieces as well as a coated holiday decor and various winter activities. See the houses through January 7. The Ritz-Carlton, Charlotte's Holiday Viewing Experience The Gingerbread House for Santa's Elves is part of The Ritz Carlton's extensive holiday lobby scenes this year, standing at 12-feet-wide and 10-feet-high thanks to its own clock tower. The structure connects to a cottage garden with live trees and elves from Mark Roberts' "Elves Days of Christmas." Expect a macaron tree, Candy-Land, croquembouche tree and more through December 28. MORNING Start your day at the hotel’s Portobello Market & Fresh Bakery, which features fruit smoothies (if you’re feeling healthy) and the Belgium Hot Chocolate Experience (if you’re really not). Opt for the creamy confection of caramel, maple, chocolate and whipped cream—it’s so rich that Forbes would be tempted to profile it. Next, suit up for the day—you can rent everything from skis to stylish jackets at the Fairmont—and hit the slopes. There are two major mountains to tackle: Whistler (1,530 metres high) and Blackcomb (1,609 metres), both of which boast more than 100 runs and award-stacked pedigrees that would make Meryl Streep blush. The views on the mountain are similarly astonishing: Powdery peaks rise in the distance like giant snowy linebackers huddled against a cornflower-blue sky. (In addition to #nofilter, be prepared to add #nowayyy.) To switch mountains, take the Peak 2 Peak gondola, which glides along for more than four kilometres, offering gorgeous scenery and the perfect opportunity to warm up and chill out—or make out, depending on the state of your lips. AFTERNOON On Whistler Mountain, stop for lunch at Steeps Grill & Wine Bar, the most romantic restaurant in the sky. The locally sourced Hecate Strait Halibut is a favourite, as is the Pemberton Beef Burger with Tomato Jam and Caramelized Onion Aioli. It invited North Americans to enter a holiday video. Up for grabs was a three-night stay at a Fairmont destination, a Go-Pro camera and a $500 Visa gift

card. Ms Vioni’s husband, Rob Arthurs, was a whizz at making home videos and so they decided to enter. “I thought, ‘Wouldn’t it be cool if we won and got to go to Bermuda?’,” she said. Her dream came true. Theirs was one of 42 videos selected. In a stroke of luck they were chosen to stay at the Fairmont Southampton. “I did think a little about which destination I would want if we could choose,” Ms Vioni said.

“When we found out we won and that they had picked for us to go to Bermuda we were ecstatic. First of all Bermuda is a good place to go for a three-day trip and it’s only two hours away from our home in New York by plane. But she said “the really bizarre thing” was that she was planning to host a business event here next summer. “I have my own company, Hedge Connection, which allows professionals to meet, connect and network online,” she explained. “I decided some time ago that I would host my next big event, a global fund forum, in Bermuda seeing it used to be a hub for lots of hedge fund activity and those are my clients. “Bermuda has since lost some of that business to Cayman Island due to various factors, so my hope was that we could bring some of that back to Bermuda.” The family had a whirlwind tour of the Island when they visited ten days ago. They toured the Town of St George, visited Crystal Caves, went on a private tour on a pontoon, enjoyed some snorkelling and swam with the dolphins. Mr Arthurs got to ride on a scooter for a few hours, and the entire family enjoyed dinner on a private beach at the hotel and a meal at Waterlot Inn.

“The best part of the trip was really how well the staff at the hotel treated us,” Ms Vioni said. “When we arrived they were only required to put us in a basic room, but they put us up in a suite with four bathrooms. “We paid so that our six-year-old son, Logan, could join us and when he saw the room he asked us if all hotel rooms were like this. He couldn’t believe how big it was. “They also put gift baskets, candy and chocolate in our suite and it was fun to watch my son’s reaction to everything. “He got to experience all these unique experiences and we were really escorted around from one event to the next and treated to a lot of really nice things. Just the overall experience was really positive.” Since their stay, the Westchester, New York family has been working on a video showcasing the best of Bermuda. When FRHI Hotels & Resorts acquired a 50 percent stake in the historic 279-room Claremont Hotel, Club & Spa in March, the move was consistent with its long-term growth strategy. “The 1903-era hotel is very much a luxury property and located close to a key gateway market—specifically the San Francisco submarket of Berkeley, Calif.,” FRHI President for the Americas Kevin Frid told a media roundtable in New York last week. “In addition, every property in our portfolio is branded under one of our three luxury brands: Fairmont, Raffles, or Swissotel. So The Claremont is scheduled to carry the Fairmont flag once extensive upgrades, which are already underway, are completed,” he said. Currently owned by Qatari and Saudi Arabian interests and headquartered in Toronto, FRHI manages 110 hotels in 35 countries. Fairmont is the largest of the three brands with 68 hotels. “We’re rather unique in the industry in that we’re a multi-brand company, but all of our brands are in the luxury category,” Frid noted. That said, the company goes to great lengths to differentiate the three within the crowded—and highly competitive—luxury space. Frid describes Raffles, the smallest of the trio, as “uber luxury,” while Fairmont is about providing guests with “genuine connections” and Swissotel superior “quality of life.” The company positions itself as a management company, pursuing third-party management deals, though as with The Claremont will take an equity stake when it identifies a property in a market where it wants one of the three brands represented. “Our intention is to be asset light in terms of ownership, but there continue to be opportunities in strategic locations where it makes sense to have skin in the game,” said Frid, who was named to his present role 14 months ago, having been with Fairmont and its at-the-time sister brand Delta Hotels since 1982. New York is one of those high-value markets. The roundtable was held at The Plaza in New York, a Fairmont managed hotel. But neither Raffles nor Swissotel has a flag there, though Swissotel had managed The Drake, which has since been demolished. So New York is high on the wish list, as is Paris for Fairmont and London for Raffles. There’s not a lot of luxury hotel new construction today, especially in markets like North America and Western Europe, Frid acknowledged, citing high barriers to entry, scarcity of prime building sites, and high costs. What little new development there is will likely be conversions. Asia and the Middle East, on the other hand, have seen significant hotel development in recent years, especially in China, “with developers approaching us with projects,” Frid noted. The three brands combined, for example, have 10 hotels open in China with an additional 12 under construction or in the pipeline. Frid, however, said he expects the pace of luxury development in China to slow in the coming years. “The real demand now is for more mid-price product,” he explained. A bright spot in terms of North American luxury development has been mixed-used projects, whether the mixed use is residential or office in addition to lodging. Confirming the industry consensus, he said that 2014 has proven to be a positive year for occupancy, rate, and profitability. “The luxury segment, in particular, has done well and the fundamentals look good going into 2015.” All industry segments are performing well, added VP of Sales and Marketing for the Americas Jeff Doane. “Leisure and individual business travel came back first, following the recession, while the group segment lagged. But now group is growing at a healthy pace as well,” Doane said. Asked about which countries or regions he saw coming into their own as luxury destinations in the next few years, Frid cited Mexico and South America. “The Mexican economy has rebounded recently and an area like the Rivera Maya has really emerged strongly,” he said. “Likewise, the western coast of South America holds a lot of opportunity for us,” he concluded, noting that Swissotel already has a foothold in the region with hotels in Quito, Ecuador, and Lima, Peru, with a hotel in Guayaquil, Ecuador, due to come on line in 2017.

QUEBEC CITY, QUE.—The bitter October wind outside the historic Fairmont Le Château Frontenac hotel in Old Quebec City is raging with the fury of a scorned lover. Old-fashioned lampposts, spilling golden light against the charcoal sky, illuminate the effects of its wrath: heads bow, bodies bend, gloved hands reach for collars; a maple leaf flag pulled high on a pole stands straight out as if starched; a slight girl in a puffy red jacket is shoved off her feet, a crimson streak flailing. I watch the vignettes from above, nestled at a cozy table for two in the Champlain, the hotel’s fourdiamond restaurant. My husband sits directly across, happily finishing his five-course discovery meal, a build-your-own tasting experience. Each course has been skillfully paired with wine by our endearing polyglot waiter Manuel, who has been working at Fairmont for 22 years.


Turning my attention to the flickering tea light, I feel relief for the girl in red who managed to stay on her feet, then realize with a start that the one in immanent peril of being swept away, is me. I’m staying in a Middle Ages-Renaissance castle, feasting on what I would best describe as edible contemporary art presented on a series of white porcelain canvases; earlier in the day, I was strolling hand-in-hand along cobblestone streets with Robert, my prince charming of 20 years this very month. It’s a fairytale wedding anniversary; who wouldn’t be swept away? The next morning it’s overcast and drizzling as prince charming and I zip east on Route 138 towards Charlevoix, a ruggedly handsome region located on 6,000 sq. km. of Canadian Shield surrounded by rolling hills, quaint coastal homes, and, to the south, the mighty St. Lawrence, one of the longest rivers in the world. Charlevoix is well-known and loved for its Flavour Trail, a mapped route of local farmers, producers and restaurateurs who open their doors to the public. Along the marked route you’ll find oyster mushrooms growing in a 4,000-sq.-ft. facility, a bakery in a restored 1827 mill, Canada’s biggest emu farm (home to more than 400 birds) and much more. After last night’s five-course feast at the Frontenac, we’re in need of an intervention. Reserve nationale de faune du Cap Tourmente, conveniently located along our route about one hour east of Quebec City, has several walking trails to burn off calories consumed, and calories yet to come. A wetland of international significance, Cap Tourmente is home to 30 mammal species (several of them at risk) and I’m most curious to see the Greater Snow Geese, who use this area as a stopover on their migration south. For $6 per adult, we have access to an interpretation centre which has detailed dioramas and 20 km. of hiking trails. The drizzle has stopped just in time for us to meander along a 1.1-km. boardwalk, which brings us to a covered lookout with a line of viewing scopes pointing towards the St. Lawrence. I breathe in the fecund air, a mix of salt and marsh. Here we meet Miriane Demers-Lemay, an enthusiastic biologist bundled in woolen scarf, toque and mittens. Demers-Lemay tells us the Greater Snow Geese, numbering in the tens of thousands, use the estuary as a stopover during their migration south. Peering through the scope, I see white specs in the distant low tide, flitting on glistening wet sand, and wonder why they look so frantic. “Ah, oui! They are eating bulrushes,” Demers-Lemay says. “To prepare for their long flight, they eat constantly, cutting the thick roots and stems with teeth like saws.” Bending over, she digs around in her bag, then quickly pops back up with a placard showing a photo of those saw-like teeth, rows of sharp points equally sized and perfectly suited for the job. I’d love to stick around, but we also want to save time for the Flavour Trail, so, thanking DemersLemay, Robert and I depart and are soon back on Route 138 heading for Domaine de la Vallée du Bras, the world’s first tomato vineyard. Yes, tomato wine. Located on the outer edge of beautiful Baie St-Paul, we meet Pascal Miche, president of the company and producer of Omerto tomato aperitif. The strapping Miche is the grandson of Omer Miche, who first developed the recipe in 1938 as a way to prevent a bountiful tomato crop from going to waste.


Due to our limited French, Robert and I are struggling to understand Miche who is all smiles and excited gesticulations. But, as we sip the fruity and delicate golden elixir, I realize words aren’t necessary. Robert’s facial expression says it all, as mine must, too: tomatoes never tasted so good. There’s no better companion for wine than cheese. With that in mind, we set off for Laiterie Charlevoix Economuseum in Baie St-Paul proper, where I’m particularly interested to see their 1608 cheese. It’s made from the milk of the rare Canadienne cow, the only North American-originated dairy breed. Just three herds totalling some 1,800 cows now exist, and they live right here, in Charlevoix. Laiterie Charlevoix Economuseum is a sprawling property with several buildings, including a retail store, a factory, a greenhouse and a museum. We approach a man unpacking boxes to ask about the Canadienne cow cheese. Pulling bricks of cheese from a box, Richard says the primary differences are the extra richness of the milk’s butterfat, and the limited quantities produced by the Canadiennes compared to other dairy cows. Guiding us to the coolers, Richard says, “I have five minutes.” Over an hour later, we’ve learned about the 1608 cheese and each of the other six varieties, plus the fact that Richard married into the Labbe family, offspring of the 1948 founders. Now he’s asking if we have time to see the sustainable water treatment system, which is heated by burning methane gas, a byproduct of whey in the cheese-making process. Richard is delightful, and the stories about working the night shift in the factory so the curds can be sold fresh next day are engaging, but it’s close to 4 p.m. and we’re ready to unwind at our final destination, Fairmont Le Manoir Richelieu in Malbaie, a 40-minute drive east of here. Like the Frontenac, the Richelieu is a castle perched atop a cliff overlooking the St. Lawrence. Unlike the Frontenac, this is a country-style setting and the raging wind we experience in Quebec City is nothing but a whimper here. As we enter the grand lobby, with its high ceilings and walls covered in original artwork, that dreamy feeling of living a real-life fairytale washes over me again. “Welcome, Mr. and Mme. Savor the frozen north in Banff Hockey, frozen lakes, ice sculpture and frosted Canadian Rockies greet winter visitors.

Cantwell Seattle Times travel writer BANFF, Alberta — This little town tucked in a cranny of the Canadian Rockies reminded me of Leavenworth, the mock Bavarian village in Washington’s Cascades. Subtract the oompah bands. Add hockey players. And much bigger mountains. It might be a cliché to talk about Canadians playing hockey, but if you visit in winter the proof is right in the schoolyard’s open­air ice rink in the middle of town. Early to late, locals skate the free public ice. And many bring sticks and pucks. While Leavenworth is nicely ringed by Cascade Mountains splendor, Banff has the mighty Rockies. These are huge, at­the­end­of­the­street mountains, created by millennia­long crashing of tectonic plates. It makes for jagged, angled and multilayered peaks on which you could cut a continent. Incidentally, the 9,836­foot massif that crouches like a town­eating cougar over Banff’s main drag is called Cascade Mountain. To a visiting Washingtonian, that seemed a bit of an eye poke. But there’s undeniable majesty there. And with snow frosting every peak, a winter visit to mile­high Banff and nearby Lake Louise can be an eye­popping introduction to life in the frozen north. A tourist burg Banff, pop. 7,600, is no big city. It’s a tourist burg, dating to construction of the town’s most distinguished edifice, the Banff Springs Hotel, which perches on a hillside above town with an expansive view of peaks all around. Opened in 1888, it’s one of a string of hotels the Canadian Pacific Railroad built to spur use of its new cross­Canada railway. “If we can’t export the scenery we’ll import the tourists,” said Sir William Cornelius Van Horne, the railroad’s general manager at the time. The nearby Chateau Lake Louise in Banff National Park and the Empress in Victoria, B.C., are among other hotels built in that effort. A good introduction to Banff, I found on the afternoon of my arrival after a 90­minute drive from the Calgary airport, was British­style high tea in the Fairmont Banff Springs Hotel’s Rundle Lounge ($41, reservations recommended). Just out the window is Mount Rundle, actually a 7.5­mile long series of diagonally thrusting peaks made of ancient ocean bed, topping out at 9,675 feet. Contemplate that wilderness wonder while you indulge in the peak of civility with a choice of a dozen specialty teas, including the Banff Springs Blend. Tasting notes describe it as a mix of black teas from Assam (“for a thick, malty character”), Kenya (“for floral­like flavor and golden, coppery infusion”), Ceylon (“for an airy, piquant flavor”), China (“giving a burgundy depth and light, oaky notes”) and South India (“for a lovely finish”). Walk, or climb ice Most of Banff is flat and walkable, or you can get a $5 all­day pass for the local bus that includes the up­the­hill Banff Springs Hotel and edge­of­town attractions. Downtown includes plenty of shopping, several museums and a scenic walking path along the winter­frozen Bow River. On my visit last winter, a midtown man­made ice wall was available for public climbing, left over from a three­day Ice Climbing Festival set to repeat this winter (Jan. 30­ Feb. 1). There are three to four souvenir shops to the block; here’s where to get your maple­leaf hockey jersey. Also find a wide variety of small boutiques and outdoor­oriented stores, in case you forgot a winter hat. A central visitor center (224 Banff Ave.) that includes representatives of Parks Canada is a good place to pick up tips. I enjoyed a walk through the by­donation Whyte Museum of the Canadian Rockies, with intriguing details about the challenges of railroad construction in this rugged country and the miseries of early­day outfitters who wrote home about bad days “when the sugar and salt got wet and the beans went sour and the bacon musty” (111 Bear St., whyte.org). Fine dining isn’t a big draw in Banff — one tourist spot, the rustic Grizzly House, has a sign wooing diners with “steak and cheese fondue; buffalo and caribou served.” But in the heart of the Rockies I enjoyed, of all things, an authentic Irish pub, the St. James’s Gate — so authentic that it was designed and built in Dublin and transported to Canada in shipping containers. They served savory Steak and Guinness Pie, $16, with my favorite Kilkenny­brewed Smithwick’s Ale on tap (207 Wolf St., stjamesgatebanff.com). I also liked Magpie & Stump, a cozy eatery that looks like the inside of a trapper’s cabin and serves gourmet Mexican food (203 Caribou St.; magpieandstump.ca). I split a four­day visit between the town and Lake Louise, about a 40­minute drive northward. My January stay at the iconic Chateau Lake Louise was highlighted by the annual Ice Magic Festival, featuring ice­sculpting competition that brings master carvers from around the world. In gardens between the hotel and the lake — frozen from November to May — I roamed among a dozen phenomenal sculptures, left on display until they melt, which can be many weeks. Last winter’s sculpture theme was the Winter Olympics, with 9­foot­high ice figures ranging from a snowboarder with a huge (icy) roostertail to ice dancers (literally) who looked as if they’d just stepped into the rink. “The craftsmanship to sculpt something like this from a concept to the actual thing is just amazing,” said visiting Chicagoan Wayne Erck, pausing as he pulled his grandchild on a sled. This winter’s sculpture theme will be “Wonders of the World.” In summer, Lake Louise is a tourist draw for its turquoise color. In winter, the frozen lake was perfect for ice skating on a groomed circle where carvers created an ice castle. The snow­dusted frozen surface of the 1.2­mile long lake, framed by Valhalla­scale mountains and glaciers, is also popular for cross­country skiing. Or take a 45­minute stroll on a lakeside path to see eerie blue light glinting off a frozen waterfall, where you’ll often see ice climbers. Other diversions: snowshoe trails, dogsled adventures, or a sedate horse­drawn sleigh ride along the lake’s edge. The 4,200­acre Lake Louise Ski Resort, one of the largest in North America, is 10 minutes away (ski​louise.com). Hot springs, too After enough exercise on my final day, I found my way back to town for a preflight dip at Banff Upper Hot Springs, a tourist attraction since 1886 ($6.30­$7.30; hotsprings.ca). I’d brought my own trunks, but I wish now that I’d tried one of the spiffy one­piece, 1920­style tank suits — same for men and women — that they rent for a couple bucks inside the historic brick bathhouse. The air temperature was 26 degrees Fahrenheit, while the hot­spring­fed outdoor pool was a toasty 102, sending up clouds of steam that at times obscured the splendid mountain view. When the sun shone through, it was like moonbeams through wood smoke. I paddled about and approached an older gentleman who was getting happily parboiled as he hung on the pool’s edge. He said he lives nearby and soaks here daily. “For me, in winter, this is like my little bit of Florida, eh?” It’s how they cope in the frozen north. Savor the frozen north in Banff Hockey, frozen lakes, ice sculpture and frosted Canadian Rockies greet winter visitors.

Cantwell Seattle Times travel writer BANFF, Alberta — This little town tucked in a cranny of the Canadian Rockies reminded me of Leavenworth, the mock Bavarian village in Washington’s Cascades. Subtract the oompah bands. Add hockey players. And much bigger mountains. It might be a cliché to talk about Canadians playing hockey, but if you visit in winter the proof is right in the schoolyard’s open­air ice rink in the middle of town. Early to late, locals skate the free public ice. And many bring sticks and pucks. While Leavenworth is nicely ringed by Cascade Mountains splendor, Banff has the mighty Rockies. These are huge, at­the­end­of­the­street mountains, created by millennia­long crashing of tectonic plates. It makes for jagged, angled and multilayered peaks on which you could cut a continent. Incidentally, the 9,836­foot massif that crouches like a town­eating cougar over Banff’s main drag is called Cascade Mountain. To a visiting Washingtonian, that seemed a bit of an eye poke. But there’s undeniable majesty there. And with snow frosting every peak, a winter visit to mile­high Banff and nearby Lake Louise can be an eye­popping introduction to life in the frozen north. A tourist burg Banff, pop. 7,600, is no big city. It’s a tourist burg, dating to construction of the town’s most distinguished edifice, the Banff Springs Hotel, which perches on a hillside above town with an expansive view of peaks all around. Opened in 1888, it’s one of a string of hotels the Canadian Pacific Railroad built to spur use of its new cross­Canada railway. “If we can’t export the scenery we’ll import the tourists,” said Sir William Cornelius Van Horne, the railroad’s general manager at the time. The nearby Chateau Lake Louise in Banff National Park and the Empress in Victoria, B.C., are among other hotels built in that effort. A good introduction to Banff, I found on the afternoon of my arrival after a 90­minute drive from the Calgary airport, was British­style high tea in the Fairmont Banff Springs Hotel’s Rundle Lounge ($41, reservations recommended). Just out the window is Mount Rundle, actually a 7.5­mile long series of diagonally thrusting peaks made of ancient ocean bed, topping out at 9,675 feet. Contemplate that wilderness wonder while you indulge in the peak of civility with a choice of a dozen specialty teas, including the Banff Springs Blend. Tasting notes describe it as a mix of black teas from Assam (“for a thick, malty character”), Kenya (“for floral­like flavor and golden, coppery infusion”), Ceylon (“for an airy, piquant flavor”), China (“giving a burgundy depth and light, oaky notes”) and South India (“for a lovely finish”). But one night, she disappears, and there is a ransom note on the bed made of half-eaten chocolates. mystery with heroes and requisite villains, mysterious clues and nail-biting adventure. Averbeck writes with the assurance of a super storyteller, a knowledge of cinema a San Francisco. "Fleabrain Loves Franny" by Joanne Rocklin (Oakland) (Amulet Books, an imprint of Abrams, $16.95, ages 8-12).

This is a book to savor. It is set in Pittsburgh in 1952, at the time of this country's terrible polio epidemic. Rocklin has w medical struggle with imagination and wit, creating a well-read, erudite flea whose friendship with Franny helps her difficult ordeal and become stronger. If you loved "Charlotte's Web," you'll be delighted by Rocklin's latest. "Mission: MARS" by Pascal Lee (Mountain View), illustrated by Ryan Hobson (Scholastic, $6.99, ages 9-12).

For the middle-school student interested in science and space travel, this book is a bonanza. Lee, a planetary scientist Mars Institute, has written a highly informative and intriguing basic training handbook. The tone is conversational, a fascinating as it prepares the reader to embark on a mission to Mars. Lee assists you in finding Mars in space, prepari navigating in space. He shows you how to survive in an extremely hostile environment and how to explore the red pla Mars might transform so that humans in the far off future might dwell there. Throughout, Lee makes accessible comp with Hobson's visually colorful layout, add enjoyment to the journey. "Ship of Dolls" by Shirley Parenteau (Elk Grove) (Candlewick Press, $16.99, ages 8-12).

This is a historical novel that focuses on an actual Friendship Doll exchange in 1926 between the United States and Japan. Eleven-year-old Lexie, living with her grandp wants to rejoin her jazz singer mother in San Francisco. So, when Lexie hears about the school contest that will send the winner to San Francisco for a farewell ceremony determined to win it. That means Lexie must write the best letter and make a simple extra dress for the doll. But of course, there's a conniving rival, many obstacles and Hinamatsuri is the annual Japanese doll festival that inspired the story. While, sadly, the friendship dolls could not prevent the war hovering on the horizon, the story w young girls today. "Open Mic, Riffs on Life Between Cultures in Ten Voices" edited by Mitali Perkins (Orinda) (Candlewick Press, $15.99, ages 12 and up).

Ten young adult authors write about what it's like to grow up in a multicultural family or environment. Some selections are funny, some are poignant, and some are har relevant in today's world and should be part of every school library. "Brazen" by Katherine Longshore (Woodland) (Viking, Penguin Young Readers Group, $17.99, ages 12 and up).

Ambition, treachery, treason, lust and actual love all abound in Longshore's look at the court of Henry VIII in 16th-century England. Loosely based on historical events, known Mary Howard. At 14, she was wed to Henry FitzRoy, the illegitimate son of the king, but at royal command, they are to be kept apart until they are older. Like ma she belongs to a father or a husband or a brother. And no one dares disobey the king. But Mary wants to belong to herself. Although the king plays a wily game with peo and Fitz manage to meet and fall in love. Fairmont Offers "Fantastic Finds" Savings

Fairmont Hotels & Resorts is featuring several of its North American properties as part of the "Fantastic Finds" deal, which runs through the end of the year. Guests planning a getaway to one of the participating locations will receive 20 percent off the best available rate along with a complimentary room upgrade at check-in when they book before December 31, 2014.

At the Fairmont Le Manoir Richelieu in Québec, visitors can take in the scenery of the region of Charlevoix and ski in in nearby Mont Grand Fonds, or the Massif de Charlevoix. Guests are also welcome to relax at the full-service Amerispa after a full day of activities.

Another Québec retreat, the Fairmont Le Chateau Montebello, is located on the Ottawa River, halfway between Ottawa and Montréal. Known as the world's largest log castle, the destination specializes in such winter sports as cross-country skiing, dog-sledding and tubing.

Today, Arruda oversees a staff of four full­time administrators and from 100 to 200 kitchen staff. This team oversees meals ranging from breakfast meetings to fancy weddings, intimate functions to corporate events for thousands of guests. All told, this adds up 140,000 meals a year.

That was 1969, and that was just the start. Besides his job at the Queen Elizabeth, Arruda took on side jobs at premier Montreal caterers. Why? "I wanted to study the business and see if I could bring good ideas back to the hotel," he says. And he did indeed bring back good ideas: "This is how I got the idea to eventually offer outside catering services," he says. "I had watched our guests leaving the hotel to attend receptions in off­site venues and thought, 'Why don’t we offer to provide the foodservice for those events?' We started small and within a few years, we had gotten very good at it." By 1992, the off­premise catering operation was handling big galas for the Musée d’Art Contemporain, the Montreal Symphony orchestra and other prestigious events. "We quickly became known as a high end caterer," he notes.

Armando Arruda's entry into the world of high­end hotel catering is really a family affair. He started at the tender age of 15 ½ after moving to Montreal from his native Portugal. He was hired at the landmark Fairmont the Queen Elizabeth, where his brother was already working, as a busboy.

Although every event is important to him, Arruda is particularly proud of some of his large­scale, off­premise events. An early effort was an event for 2,600 guests on top of a mountain. "We were 3,000 feet above sea level with no running water, no road, and access only through gondolas [to create] a five­course meal," he recalls. Another big, dramatic event was the Grand Prix du Canada, which required 32,000 covers in three days, all without benefit of running water and no kitchen space. Instead, his team worked in eight tent kitchens serviced by refrigerated trucks. Despite his own stature as a mentor to hotel culinary professionals, Arruda still credits his own mentors from his early days.

Edmonton art gallery trip! Woohoo!

That’s right, folks. It’s an Edmonton art gallery trip, a wild and crazy cultural vacation to that big prairie city in the province of Alberta in good old Canada – though now I pause to think about it, Canada’s not that old. It was founded in 1867, which would make it, um (pause for calculation), 147 years old. That means Canada was only 46 when the Hotel Macdonald opened in Edmonton in 1915.

tell you, opened exactly 100 years after Sir John A Macdonald was born, which is why it was named the Macdonald, after Canada’s first Prime Minister and one of the Fathers of Confederation. What? You’re getting bored? Okay, let’s move on to our Edmonton art gallery trip!

Art starts here

Where to begin your Edmonton art gallery trip We begin where any good art trip should start. At the bar. In this case the Confederation Lounge in the Fairmont Hotel Macdonald. It’s not always (as in never) easy for a solo female traveller to walk into a lounge and sit at the bar, but I did it anyway because 1) I was hoping someone would take pity on me and talk to me and 2) I wanted a lobster salad.

The things you learn in a bar When no one took pity and acknowledged my existence, I solved that pesky situation by intruding on the conversation beside me. This is how I learned that the Washington Capitals had been staying at the hotel. When I texted my husband this exciting bit of information, he texted back, Get Alexander

Ovechkin’s autograph.

Who? Once I had established who Alexander Ovechkin is (famous hockey player and captain of the Washington Capitals, and yes, I do realize everyone in the hockey-playing world knows this except for me), I also determined that he had checked out earlier that day. Then the man sitting beside me went off to the hockey game so I didn’t learn any more about hockey.

Alexander Ovechkin was here!

Exciting hockey gossip in Edmonton Except I did learn a little – all unsubstantiated rumour of course, which is the very best kind of all.

Apparently Alexander Ovechkin was in the lobby of the hotel and a little girl asked him to take a photo with her, and he said, “sure,” and then a well-dressed woman asked for a photo with him and he said “no.” Just to be clear, that well-dressed woman was not me. (It will be a scorching day in a prairie winter when anyone describes me as well-dressed, though I really do try.) Plus, as was established earlier, I didn’t know who he was (though I do now).

Sir John A Macdonald is in the building

The Fathers of Confederation mural in Edmonton When there was no more gossip to be had, I swung around and checked out the 18-foot-long mural, the Fathers of Confederation, hanging high on the back wall. While it’s not the original Fathers of

Confederation by Robert Harris, who was commissioned to paint it in 1883, and which was burnt to cinders in a fire in the Parliament Building in 1916, this reproduction of the Fathers of Confederation is nonetheless famous as well because it was painted by an important political artist named Frederick Challener. In fact, there has been a spirited debate over the years about whether this particular Fathers of

Confederation in the Fairmont Hotel Macdonald should be termed a reproduction or if it’s an original in its own right – because that’s what art people do in their spare time, they get worked up over issues such as this. (PS: It’s not a debate that has ever kept me up at night.)

As an interesting side note, Fathers of Confederation paintings seem to attract trouble. Not only did the original burn up, another famous reproduction – if, in fact, it can be deemed a reproduction – in Charlottetown, Prince Edward Island, was vandalized in 2000, and in 1965, the Fathers of

Confederation here in the hotel was nearly destroyed after heavy rains caused damage to the plaster walls behind it. But we can relax. No lasting harm was done, and the Fathers of Confederation, including Sir John A Macdonald, watched over me sternly as I finished my glass of prosecco and went up to my room.

Made of patinaed (no, that’s not a typo) zinc, glazing, and stainless steel, the Art Gallery of Alberta is, according to the architect’s project description: “a building of dramatic forms and geometric complexity. With both orthogonal volumes and the curvilinear “borealis”, the careful selection of exterior surface materials brings unity to the overall architectural composition.”

Allow me to translate this into English The Art Gallery of Alberta is very curvy, reflective and shiny.

An Edmonton art gallery trip break I know you’re excited, but before you race off to the Art Gallery of Alberta, conveniently located downtown on Sir Winston Churchill Square, you should know that Canada’s luxury department store, Holt Renfrew, is also conveniently located just a few blocks away. You should also know that there is no provincial sales tax in Alberta! So you could be excused for taking a break from your Edmonton art gallery trip, even though you haven’t actually seen any art other than the Fathers of

Confederation, and that was possibly under the influence of alcohol because it hangs in a bar.

Coat check If you do make a quick trip to Holt Renfrew, please check to see if the Andrew Marc Lara leather and lambskin winter coat I want is still there. I put it on hold, and then couldn’t decide if it was true coat love or not, and finally, overcome with indecision, I let it run free. And now I’m thinking that if I had the coat probably it would change my life. Probably I’d be more creative. Probably it’s an artwork in its own right and therefore an investment … oh, forget it. Back to our Edmonton art gallery trip!

Does a trip to the West Edmonton Mall constitute a valid part of an Edmonton art gallery trip? Hm. Debatable. If you want to take a side trip to the West Edmonton Mall, which, of course, used to be the very biggest mall in all the land (until 2004), feel free. Between trips to Victoria’s Secret and the roller coaster, check out the two installations by Montreal sculptor Pascale Girardin: 1) The white ceramic floating flowers, symbolic of the Alberta Wild Rose, hanging in the Rose Court and 2) The 140 handmade glass ‘oil’ droplets surrounding the pre-existing Oilmen Statue. The West Ed Mall wasn’t on my agenda, however, because I decided improving my mind at the Art Gallery of Alberta was more important – probably even more important than a new Lara coat from Holt Renfrew – though I may change my mind in January when I have nothing but memories of http://wanderingcarol.com/edmonton-art-gallery-trip/

By this time my mother and sister Rebecca had arrived in Edmonton because my mother, artist Dorothy Knowles, was having an art opening at the Douglas Udell Gallery on 124th Street, so we all went to the Edmonton Art Gallery together (just as soon as I had dragged them to Holt Renfrew to take another look at that coat.)

A bad boy of the art world If you don’t know Henri Toulouse-Lautrec, but I’ll bet you do, let me recap. Toulouse-Lautrec was a French Post-Impressionist painter, one of those decadent bohemian artists who lived in Paris in the late 1800s, drank absinthe and got up to all kinds of no good. Translation: he painted prostitutes and dance hall girls. You’ve probably seen his posters of the Moulin Rouge.

Kick up your heels with Toulouse-Lautrec

The Art Gallery of Alberta – a cultural institution The Art Gallery of Alberta also had an exhibition to mark its 90th birthday – which makes it only nine years younger than the Fairmont Hotel Macdonald and, therefore (pause for calculation) only 57 years younger than Canada. It’s the oldest cultural institution in Alberta and to celebrate there was an exhibition of some top Alberta artists including, coincidently, an ex-boyfriend of mine who will remain nameless in case he prefers anonymity. (And if you have never heard of a Masters of Visual Art, you would not be the first. Or the last. But nonetheless, I have one.)

Edmonton art galleries – 124th Street District The area of Edmonton along the north bank of the river valley at the west end of Jasper Avenue is sort of a happening place where a number of local art galleries are located (13 to be exact). According to the 124 Street neighbourhood’s website, they “are the refined district for food, fashion

and art in the heart of Edmonton.” No doubt I brought the tone of the place down, not being nearly as refined as I would like people to think I was, but nevertheless, 124 Street in Edmonton is a neighbourhood, if you’re interested in art, you might want to check out.

More Canadian artists in Edmonton Then Clay Ellis, a local sculptor, who constructs to-die for sexy sculptures out of polished steel and colour and gloss (in a complicated manner that he explained to me but has now gone with the wind out of my head) strolled in. And at Scott Gallery at 10411 – 124 Street, there was a show by Harold Feist – yes, father of the famous Leslie Feist – whose abstracts I have known and admired for years. (I wish I had a picture, but I don’t – I’m so tempted to steal one off the gallery website, but I’m a better person than that.)

As part of the final phase of its expansion, The Plaza Food Hall, the culinary European-inspired destination at New York's Plaza hotel, has added the café Épicerie Boulud by Chef Daniel Boulud. A final set of new shops is set to open its doors the week of November 24, 2014. Chef Daniel Boulud’s café will offer contemporary French cuisine inspired by the seasons, and accompanied by wine and beer. Dishes range from the classic Jambon Beurre with house cured ham, salted butter and gruyere, to Pain Bagnat with olive-oil cured tuna, butter lettuce, nicoise olives and avocado on rosemary focaccia. The salads change seasonally to reflect fresh ingredients while the Nicoise and Traditional Cobb are staples. The market will offer the chef’s signature Viennoisserie and house-made charcuterie alongside his famous all-beef wiener, topped with sautéed onion, frisee and a relish of pickled vegetables. In addition, his Banh Mi has a lemongrass and red curry link that sits atop country pâté finished with a radish-carrot slaw. The Jeffrey Beers-designed café balances food hall motifs and the contemporary look of the Épicerie Boulud brand. The space itself is anchored by white columns, covered in antique beveled mirror, as seen throughout the Food Hall, and incorporates white marble counter tops outfitted with dark wood. Épicerie Boulud’s signature fresh breads are arrayed on open shelving, while pastries and sausages are displayed in custom glass cases.

WHAT: The Raffles Hotel group is spreading its wings from its Singapore base. Istanbul makes its 10th property (number 11 is coming to Jakarta soon). Just opened in September, there are 181 rooms and suites. Even the most basic room category measures 678 square feet, the largest entry-level rooms in the city, and include spacious terraces, walk-in closets, iPads with local info pre-loaded, free Wi-Fi, marble baths with rain showers and deep soaking tubs, and views. Oh, and a personal butler comes standard too. WHERE: Part of Istanbul's new Zorla Center, a complex of 200 shops (everything from Gap to Gucci) along with condos, a performance center and theater managed by New York's Nederlanders, restaurants (including an outpost of Eataly) and offices, the hotel is located in a calm business and residential neighborhood on the European side of Istanbul on a hill overlooking the Bosphrorus. Istanbul's modern (and cheap) metro system is a three-minute walk away three stops and you're in Taksim Square. WHY: If you haven't visited recently, know that today Istanbul is much more than historical treasures such as the Blue Mosque, Topkapi Palace, Galata Tower, Basilica Cistern, the Grand Bazaar and Hagia Sophia. In recent years the city has welcomed a vibrant cultural scene, with art galleries (over 200 have opened in the last five years), museums, performances by local and international stars, annual festivals, and a lively nightlife scene. The local edition of Time Out (monthly) is thicker now than the London original, if that gives you any indication. And of course it's the gateway to the country's other must-sees (Cappadocia, Ephesus, Pamukkale), all an hour away by Turkish Airlines. WORKING WELL: Service is smooth and general manager Tarek Mourad has assembled a winning team (440 staff for the 181 rooms). Especially appreciated by those who still read printed material in bed, there are strong bedside reading lights. And who doesn't like a bathtub with a view?


NEEDS IMPROVEMENT: Very little. One minor quibble is a lack of a 110-volt outlet by the desks, which should be standard in any new hotel hoping to attract North American visitors; there is one in the bathroom but most appliances with polarized plugs--the ones with one prong slightly bigger than the other--won't fit. (Housekeeping will provide European adapters and voltage converters on request so that you don't fry your WaterPik). Also, rooms lack hair dryers. MUST TRY: A short walk from the hotel in the Zorlu Center, two-Michelin-star chef Massimo Bottura has opened his first restaurant outside of Italy (book well ahead). Although it doesn't quite have the panache of the Singapore original, the hotel's Long Bar has indoor and outdoor seating and live entertainment, including a resident lady DJ.

No, there's no Istanbul Sling on the menu. And save time for exploring the hotel's 33,000-square-foot spa with Turkish hamams, saunas, steam rooms, and Jacuzzis. The naturally lit indoor pool and outdoor pool with its waterfall, cabanas, and panoramic views may be so tempting you never leave the property. The Technogym fitness center is open 24 hours a day. Fairmont Hotel opens life-sized gingerbread house for holidays By Allie Rasmus, Reporter

SAN FRANCISCO (KTVU) -- The Fairmont Hotel in San Francisco opened its spectacular two-story, life-sized gingerbread house to the public this weekend. The structure is the largest house of its kind in California. The house is made of a compostable wooden frame, 8,000 gingerbread bricks, more 2,000 pounds of icing and about 1,000 pounds of candy. At 22 feet tall and 23 feet wide, it's larger than some apartments you might find in San Francisco. “It's made of actual gingerbread cookies. I had no idea,” said John Nguyen of San Jose. Nguyen came to see the display with his two young daughters and was impressed by the construction. “My mom kept saying it's one of the coolest things she's ever seen,” said 11-yearold Ayden Thomas of Sacramento. After setting eyes on the dazzling display, Ayden agreed with his mother. “The effort and the spirit that goes into it. This is what makes it all something,” said 86-year-old San Francisco resident Charlie Flood, who came to the hotel with his wife, Sybil. Flood said they pay a visit to the Fairmont's life-sized Gingerbread house every year. Kimberly Tighe, the Executive Pastry Chef for the hotel, knows all about that effort. She bakes every gingerbread brick in the hotel kitchen. Tighe, along with the hotel's directors and the hotel's engineering department, start planning for the life-sized display in August. The Fairmont Hotel has had a gingerbread house on display in their lobby every year since 1908, but 2006 was the first year they displayed a life-sized house. Tighe said the display has become larger and more detailed every year since then. This year's house was no different. The plexi-glass windows have icing and candycane trim designed to look like the décor of a classic San Francisco Victorian house, like the Painted Ladies. “I like how near the roof there's a bunch of candy canes used as the window,” said Thomas as he admired the candy-cane trim. Engineers and carpenters construct the wooden frame of the house in a warehouse off-site. Once the framework is completed, it's Tighe's turn to construct the sugar-filled facade. “We end up putting about 300 to 400 hours of labor into the candy and the bricks and all that,” she said. Tighe said the secret to sturdy construction royal icing, which is made from powdered sugar and egg whites. “Everything attached to the house is attached with royal icing, and the reason you want to do that is it will attach very hard,” she explained. She said it is almost as strong as cement and that when she uses it to secure the gingerbread bricks. “It's just like you'd be putting down tile. We use trowels, and we use spacers to line up the bricks,” explained Tighe. Tighe said the finished product and the reaction it gets make the effort all worth it. “Our guests are very appreciative. That's the best part: how many people say Thank you,” she said. The Gingerbread house will be on display in the lobby of the Fairmont Hotel until January 2. Hotel Law: The Biggest Challenges Given the size and scope of the international hotel industry, the subject of hotel law is equally varied and vast. From development deals to management agreements; from food and beverage liability to labor and employment; from claims management to anti-trust matters; to legal concerns surrounding the issues of risk, safety and security, the practice of hotel law relies upon the expertise of many different kinds of legal specialists and practitioners. Though the subject matter is broad, there are several pending legal issues which will loom large in 2014 and beyond. The Affordable Care Act will be fully implemented in 2014 and its impact on hotel companies and their hiring practices is still to be determined. Other significant labor issues to be addressed include lawsuits pertaining to tip credit and tip pooling; wage-hour audits conducted by the Department of Labor: ongoing negotiations with unions involving living wage issues and the right of workers to organize; and increased pressure on hotel operations to be fully compliant with the Americans with Disabilities Act. On the business side of the industry, it is expected that there will be a wave of new hotel development that will engender all the related legal issues – land acquisition, entitlements, joint ventures and other financing, selection of hotel operators and brands, along with Hotel Management and Franchise Agreements. In addition, it is projected that there will be a substantial increase in foreign investment – particularly from the Chinese. Chinese investment will involve all the normal legal issues of an investment from due diligence, acquisition and financing, but will add layers of complexity to deal with tax and other international issues involving direct foreign investment in the U.S. These critical issues and others pertaining to Hotel Law will be explored in the December issue of Hotel Business Review. Santé chef de cuisine Andrew Cain knew immediately what the glossy chrome-plated tool at the new Williams-Sonoma store in downtown Sonoma was. He picked it up, admiring its cast metal heft. “It’s a duck press,” he said of the curved, foot-plus-tall creature with a wheel on top and birdlike webbed feet at the bottom. “You put a whole roast duck on it, press, and it releases the bones and catches the juices, so you can make a classic sauce tableside.” For home cooks, the $2,295 toy might be a bit ambitious, unless they regularly prepare canard à la rouennaise in the 19th century French style. Very few U.S. restaurants, even, would consider making the refined dish today, but Cain has been thinking about bringing it to the menu of his upscale restaurant in the Fairmont Sonoma Mission Inn & Spa. Having Williams-Sonoma open less than 3 miles away might make that happen sooner than later, he was thinking. The shop’s debut last month at the site of the original store near Sonoma Plaza is a boon for cooks of all kinds, Cain decided, as he browsed recently with a reporter. When the first Williams-Sonoma opened in 1956, it made its mark with cutting-edge cookware, personally tested on site by founder Chuck Williams along with friends, chefs James Beard and Julia Child. So it’s a bit ironic that while still holding true to the innovative model, this new incarnation also might be bringing customers in for a valuable look at the past. Cain and the resort’s executive chef, Bruno Tison, share 60 years of French culinary training between the two of them, said Cain, and both are culinary history buffs. That’s how he knew a ramekin-looking thing could be used to make a chartreuse, a layered dish of braised vegetables and game favored by Carthusian monks in the 15th century. He’s doing petite versions of the dish at Santé, with root vegetable, savoy cabbage and duck confit. Yet he figured that many chefs today likely haven’t seen equipment such as a cylindrical pâté en croûte and pan de mie mold, set behind glass on a wall that anchors what was the original store’s 570-square-foot showroom. The shadow box is filled with vintage tools, as is another display area next to the new demonstration kitchen hung with copper objets d’art like a tarte tatin mold similar to one Cain is currently using to make apple puff pastries. Then, he spied a Lodge saute pan ($45), and his eyes lit up. “I was given an 8-inch model for my 10th birthday, and I still use it,” he said, adding that he now has several larger sizes, too. “It’s perfect for home cooks. You can pan roast whole chickens, make omelets, sear or fry anything, since it’s nonstick cast iron and gets better as it’s seasoned. I’ve traveled back and forth across the country with these pans.” Three years ago, Lodge introduced a seasoned carbon steel pan that cooks like cast iron but without the weight and with faster heating. Chef Cain paused at what looked like a white porcelain teapot with two wood sticks poking out of the top and side, opened the lid and frowned. “A butter churner, I think.” But it was a hot chocolate pot, a 1965 Pillivuyt Louis XVIII of France collectible, and the wood wands were for pulverizing whole cocoa beans ($395).

Tools of the trade - SFGate Guessing is part of the fun of shopping at the store, said Cain, admitting that he had a date with his girlfriend to scour the aisles again later that day. “Any culinarian likes to look at gadgets,” he said, picking up a tiny boxwood mustard scoop ($4.95) and noting it would work well for gourmet salts, too, since silver spoons are reactive and can distort flavors. Every chef needs a good set of Mauviel pots and pans ($1,200 for a six-piece set with lids), or a Le Creuset Dutch oven ($280), said Cain. “They last longer than you will,” he promised. “I am buying Le Creuset for a friend’s wedding gift next month.” Not every home chef might covet a Castle ice cream mold from Portugal, circa 1960 and looking indeed like a European spired fortress ($195). Still, it was tempting — “You could break out some ice cream or even a box cake mix at home and be done,” Cain shrugged. It’s fun to play, after all, and who knows what joy an egg topper might bring to breakfast table? “This is very European,” Cain said, opening and closing the stainless-steel scissors with whimsical chicken-shaped handles ($39.95) that neatly snip a perfect circle from the tapered top of a soft-boiled egg. “It’s a beautiful gift for someone who collects things.” And as customers shop, they can challenge themselves to expand their horizons. Cain paused by a Mauviel turbotiere ($1,975), a diamond-shaped, heavy-gauge, lidded copper pan designed for poaching a whole turbot, with an insert rack to remove the entire fish without breakage. It was not to be confused with the Mauviel copper salmon poacher ($1,350) next to it. “They’re very classical — you don’t see them often in the U.S., since cooking fish like this is very labor intensive,” said Cain. “But it makes a wonderful statement at a holiday buffet.
