Look for five star standard when eating out A
NEW Food Hygiene Rating Scheme (FHRS), which launched in 2012, has changed the way food business hygiene standards are displayed to consumers.
The new scheme provides information on food hygiene standards to help people to choose where to eat out or shop for food. The new scheme builds on the success of Scores on the Doors. This is a national scheme developed by the Food Standards Agency (FSA) and run locally in partnership with Kirklees Council. Food businesses such as restaurants, takeaways and pubs are inspected by food safety officers to check their hygiene standards meet legal requirements. The hygiene standards are rated on a scale from zero at the bottom (meaning ‘urgent improvement necessary’) to a top rating of five (‘very good’). These ratings will be available for anyone to view on the FSA website at food.gov.uk/ratings. The food business will be given a sticker and certificate and encouraged to display these at the entrance of their premises. Customers will be able to easily see the rating and decide if they want to go in. Cllr Peter McBride, Cabinet member for Investment and Regeneration, said: “Scores on the Doors was a successful scheme but we opted to change to the FHRS as we can see the benefits for local businesses and their customers. “Having a single scheme which is consistent nationwide means that the rating will have the same significance wherever people are buying food. “The public can use the information when deciding which food outlets to visit and we hope that food businesses will recognise that displaying a good hygiene rating is good for business. “We will continue to offer support to businesses scoring a low rating.” To check the Food Hygiene Rating of any business go to www.food.gov.uk/ratings.

A clean kitchen begins with the chef H
ygience in the kitchen of any restaurant begins and ends with the chef in charge.
He or she is in overall control of the kitchen and needs to ensure a spotless environment. What does a career as a chef involve? Chefs prepare, cook and present food using a variety of cooking methods. To become a chef you need to have a keen interest in food and cooking, the ability to work late and long hours under pressure, high standards of cleanliness and hygiene, and creativity and imagination for food presentation. What training do you need? You would usually start as a kitchen assistant
or trainee chef, also known as a commis chef, spending time in each area of the kitchen and learning a range of skills. With experience, you can move onto being a section chef, also known as station chef or chef de partie, where you would be in charge of an entire area of the kitchen. The next step up is sous chef, where you run the entire kitchen on behalf of the head chef, who is responsible for creating and updating dishes and menus. You may not need any academic qualifications to start work as a trainee chef, but most employers will prefer a good general standard of education, possibly including a hospitality or catering qualification. There are around 250,000 chefs and cooks in
the UK, but there is apparently a shortage of skilled chefs, which means there should be plenty of opportunity for career progression. Work can be found throughout the UK in every area of the industry including hotels, restaurants, wine bars and cafes, as well as within education, the NHS and the Armed Forces. With qualifications and on-the-job experience, you could progress to the position of head chef or kitchen manager/ supervisor. There are usually more opportunities for promotion in larger kitchens. Experienced chefs sometimes set up on their own or teach catering or professional cookery in colleges.In any kitchen the cleanliness of the establishment begins with the chef in charge.

Word spreads and then you have a problem. With the introduction of the
food hygiene awards, many restaurants have taken great steps forward in order to improve their rating. Gone are the dodgy kitchens of the past, replaced instead by pristine and modern kitchens which are a credit to the owners. Staff from the local council regularly check to see what is going on in local kitchens. This ensures that standards are upheld and the health of the general public is maintained. Next time you go out to eat, check the restaurant’s rating. Five star is obviously great but four stars show that establishments are making great improvements. It’s up to you then to decide on the lower scores!!

A survey of 4,000 people has found that people spend more money on Italian food than any other type of meals. The average person spends £571 annually on eating out at Italian trattoria, compared to £421 on French bistros and £370 in tandooris. Pasta and pizza accounts for almost half of the average person’s yearly expenditure on restaurants. The survey found that Britons spend an average of £1,513 a year on eating out, although one in 10 admit to eating their way through between £5,000 and £10,000 worth of restaurant bills. And the British are losing their traditional reticence when it comes to complaining about the standard of food, the survey found. Nine out of 10 people said they send their meal back to the kitchen if they are not satisfied. But while restaurant-goers have no qualms about sending back their meals, the wine list can still faze them. Seven out of 10 people said they tasted wine before allowing it to be poured, but only half said they would be able to tell if it was faulty and one in five would never send a bottle back - even if they hated it. If you are dining out with children, always check out the restaurant’s menu options for younger members of the family. All too often they just offer burgers or nuggets and chips when really many children are willing to try more grown up dishes. A good idea to get them used to eating a varied diet is to visit a carvery and allow them to choose their own meat, potatoes and vegetables, of which there is usually a good selection.

Every good restaurant should be about a `fine dining’ experience

HE phrase `fine dining’ conjures up an image of an immaculate waiter with white gloves serving equally divine food.
That’s ideally how we would all like to be wined and dined. Unfortunately day to day life is far removed from such a perfect world and we usually dine out in a much more relaxed world in the casual surroundings of a village restaurant, a local pub etc. If you've ever been a dinner guest in a restaurant, you'll know a good dining room isn't all about the food they serve! A place where you and your guests should be able to relax, unwind and feel at home, the dining room of any establshment is an important part of the overall experience. As such it deserves a bit of attention, so if your entertaining space is looking a bit sorry for itself, it could be time for a revamp to tie in with new attention to detail in the kitchen itself. Restaurant owners need to ask themselves what type of 'look' they want to create. Is it aimed at families, couples or groups of people. Ideally it should be able to adapt to any use. The decor of the room should reflect the type of atmosphere that you would like to create. Key trends for restaurants at the moment include whites, shabby-chic wood, farmhouse tables with eclectic mismatched chairs and benches, along with black gloss and chunky dark and oak woods remaining popular front-runners. It's a good idea to take into account functionality and practicality as well. If children are regular visitors, then opt for furnishings which won’t easy mark or spoil. Lighting is also crucial, especially as restaurants are frequently used at night. A stylish pendant or low-hanging chandelier is ideal, plus downlights with dimmer switches are an easy way to create that cosy atmosphere. Add to this a scattering of candles (not scented, you don't want it to affect the aroma of the food) and the room's complete. When it comes to picking a colour scheme, deep reds, terracottas, spicy oranges and earthy browns are said to stimulate the appetite, plus are an excellent way to create a suitably intimate and relaxing mood. If you're nervous of using strong colours, however, opt for one accent wall with the remaining surfaces a neutral shade like cream, ivory and beige. Of course when all this complete, keep it spotlessly clean for the real `wow’factor.

■ COFFEE CULTURE: The demand for coffee culture continues to grow in the UK
Coffee culture and takeaway market continues to grow I N recent years we’ve become a nation of coffee lovers and coffee culture is everywhere.
Coffee shops have been defying the recession by snapping up yet more space on Britain’s high streets as figures suggest the daily cup of coffee is one treat consumers cannot do without. While retailers have been falling by the wayside amid the recession, recent research showed growth in the overall number of coffee outlets in major UK cities more than doubling to 7% in the past year. However they all need to remember that the local coffee shop or national chain still needs to maintain its hygiene standards. The six largest coffee chains in the sector increased their space by 47% in the year to September 30, the study from The Local Data Company showed. The figures are surprising given the expectation for recession-hit consumers to ditch discretionary spend. The boom in coffee shop culture in the years running up to the economic crisis saw UK town centres almost taken over by coffee chains, often with more than one of the same brand in the same high street. Sam Hart, an analyst at Charles Stanley stockbrokers, said consumers have instead been far more worried about splashing out on big items, such as televisions and sofas, than low value everyday treats. “It’s no real surprise that coffee shops have held
up well in the recession – we’re talking about a pretty low average spend,” he said. “There’s also a slight cultural change going on – a shift towards the coffee shop culture where consumers expect higher quality standards of coffee.” Coffee shops are not just places for workers to get a quick caffeine hit or to maintain contacts, but for teenagers, families and pensioners to meet – in many places they have replaced the pub or the post office as the hub of the community. The continued growth of small and large firms alike shows that the coffee culture which has developed in the UK in the last decade is not a trend but is definitely here to stay.” It is a view backed by research firm Allegra Strategies, which predicts the wider market is also in line for further growth as Britain’s appetite fails to subside. It expects the UK coffee shop market is due to hit £2bn in consumer spending.
