Welcome to our 2021 catalog! Dear Growers, If ever there was a year for holding tight to our plants, this was it. As the pandemic upended our daily habits, as we navigated new forms of work and schooling, as our worlds turned upside down—there was the garden, just as it always has been. With its gathering of boldly-colored petals and soothing greens, the garden was a celebration of togetherness during a year in which we spent so much time apart. For many of us, a future without a garden is now unthinkable. Our seed company, like many others, welcomed many new gardeners this year—and we did our best to handle the logistical challenges posed by this dramatic increase in demand. If you ordered from us in mid- to late-spring, you likely faced a long wait as we spent every day in split shifts, powering through orders while doing our best to keep the whole team safe during the initial spike of COVID cases here in New York. It was a time none of us will ever forget, and we remain grateful to have played a role in helping gardeners—both novice and experienced alike—find ground amidst such uncertainty. While this experience was the defining feature of the year, there is plenty of other news to share: • 12 New Art Packs. We really love this year’s new Art Pack varieties; together they comprise a standout collection of art and seeds. (See them on page 8!) • 20+ new vegetable, flower, and herb varieties. Our beautiful trials garden led us to 20 great varieties that we were able to add to the catalog immediately and even more that we’ll be adding to our farm plan for production this year. • A new retail shop! You can now pick up your orders and shop our in-person retail storefront. Curbside pickup available. See page 2. • More tools and supplies. While good seed is the foundation of every garden, many crops cannot be grown successfully without key tools and supplies: an efficient hoe, a harvest knife, row cover, trellis netting, and more. So, we will be adding to our selection of farm and garden necessities as the year progresses. Check online for the newest items! • More varieties in larger pack sizes. We’ll be adding additional pack sizes for most varieties over the next few months to accommodate the needs of larger-scale gardeners and farmers. We have all learned this year that there is no plan that can survive a pandemic, no harvest that is guaranteed. And in the midst of this intense uncertainty—and in spite of it—what did we do? We farm first.

Four Fold Farm—named in honor of our Art Packs— is the beating heart of the Hudson Valley Seed Co.

Our production fields allow us to steward a wide range of vegetable and flower crops and to produce Certified Organic seed for hard-to-find varieties. And in our trials, we evaluate potential new additions to the catalog in the form of a gorgeous garden. This year’s season was a challenging one—and a short one. We had accumulating snowfall on May 10th and, in mid-September came a pummeling of four straight nights of frost—the earliest we’ve ever seen a hard frost, much less four consecutive ones! Despite these climatic quirks, the crew produced big beautiful crops that we are excited to share in 2021. In a very real way, the farm keeps us grounded, in touch with the daily joys and challenges of growing. Being rooted in agriculture strengthens our partnerships with amazing, dedicated seed farmers around the country, and helps us better serve you year round.

Red Giant Mustard

A robust and beautiful mustard green. Its leaves are green with a deep purple hue, thin and very soft when steamed or sauteed. Shanghai Baby Bok Choy

The best open-pollinated baby bok choy of our trials! It grows exceptionally quickly; it tolerates both cold and heat; it can be sown in succession for crops nearly all season long. Tatsoi

Tatsoi is delectable. When quickly braised with garlic in oil, it softens into a tapestry of sweet leaves and tender stems that are hard to beat. It’s also a beautiful plant, forming a swirl of little spoon-like leaves that are of a deeper green hue than nearly any other plant in the garden. Extremely cold hardy. 45 days. Certified Organic. Tokyo Bekana

At full size, fast growing Tokyo Bekana resembles young Chinese cabbage leaves. It may be grown successfully as cut-and-come-again, or thinned to grow to maturity for harvest as a bunching green. Tomatoes There truly is nothing comparable to a freshly harvested, sun-kissed, home-grown tomato. This seed comes from the original indeterminate strain, created by William Woys Weaver in 1986 by crossing San Marzano with Yellow Brandywine. Sunchokes

Sunchokes, aka Jerusalem Artichokes, are an easy-to-grow crop that is native to North America. Above ground, they form splendid stalks of yellow flowers that look like sunflowers. Below ground, they form tasty tubers that are sweet and starchy with a unique, artichoke-like flavor that shines especially well in puréed soups. Sunchokes have a reputation for being difficult to rein in, but in our experience all that is required is to mow the perimeter of your patch when the shoots are 4-12" tall. So, it’s better to plant the tubers in a spot adjacent to a mowed lawn than in a prepared raised bed or other spot where mowing is more difficult. Cover Crops Cover Crops Cover crops are powerhouses for the garden, providing nitrogen or organic matter—or both!—to the soil. Even small raised-bed gardens benefit from the weed suppression and mulching effect of a cover crop. Consider your timing and capabilites for turning the soil, then choose a crop to match.

Austrian Winter Peas

The best winter cover for home growers. Seed two weeks before your last frost date for best results. Even small plants can keep soil in place and overwinter, and they start putting on growth as soon as the soil thaws. The big perk: Austrian winter peas are quite tasty, and shoots can be “gleaned” from the crop in the early spring when there are no other greens in the garden. Buckwheat

This quick-growing tender annual easily outcompetes summer weeds and builds plenty of organic matter. Sow anytime during the warmer months. Just make sure your crop does not set seed, as buckwheat can be weedy if allowed to self sow. Crimson Clover

Crimson clover flowers are gorgeous, but this nitrogen-fixer is also a nutritional powerhouse for the soil. Sown in the fall, it puts on good growth before severe cold arrives in November or December. At that point it goes dormant, then springs back again in early spring and flowers in late spring. It can also be sown in early spring; it grows quite quickly and can be mowed and easily incorporated into the soil at any point. Field Peas

Field peas have incredible nitrogen fixing qualities, plus they winter kill: they’re a great cover crop for

Hairy Vetch

Hairy Vetch can be planted in either early spring or late-summer/ fall and is winter hardy, putting on lots of quick, green growth in spring on sprawling long vines. The thick mats of vines are great at adding organic matter, and are excellent for weed suppression. Said to be one of the best nitrogen-fixers, reportedly more efficient than peas. Medium Red Clover

Clover fixes loads of nitrogen, produces a moderate amount of organic matter, and draws nutrients up to the surface from deeper in the soil, making them accessible to vegetable crops that follow. Red clover is a perennial, and will not winter kill. Sow in spring, summer, or fall, and mow to prevent seed set. Oats and Field Peas

This blend is a perfect, simple mix for a spring, summer, or fall cover crop. Both oats and field peas are quick to germinate in most soil conditions, and in typical zone 6 or colder winters they will winter kill (though in milder winters the oats may survive). The peas add loads of nitrogen to the soil, feeding the oats, which produce plenty of organic matter in stalks and leaves. Added bonus: the pea shoots are edible and the purple flowers are pretty.
