Then on each subtopic you can add related concepts or even keywords you find for them.

It’s very beneficial to follow this structure if you are for example writing blog posts because you can write different articles for those subtopics and then link them to a pillar page that talks broadly about the main topic and therefore rank higher.

Similarly with video, you can also produce multiple videos that tackle subtopics and then rank 3 or 4 videos for the main keyword or topic instead of just one and link all of them in each other's description and in a playlist to increase watch time.
