Jerry Thomas The first-ever superstar bartender had humble beginnings. Born in the small town of Sachets Harbour, New York, Jerry Thomas started his career in the local taverns before he went in search of gold in San Francisco’s gold rush. But it wasn’t long before he was back behind the bar… in San Francisco, New Orleans and New York. His most popular drink quickly became the Blue Blazer – a mix of hot water and whiskey that he set on fire between two cups. Delicious! Back in New York, Jerry opened his own bar, which was soon frequented by the stars of the day. He became known as the ‘superstar bartender’ but sadly died of a heart attack just before Christmas 1885. Here’s to you, Jerry!

HISTORY’S FIRST COCKTAIL The year was 1586 and people drank alcohol for breakfast, lunch, dinner and in-between. The reason? Well, the water wasn’t so clean back then so, alcohol was the safer choice! This was especially true for those sailing the oceans, when boats could be out at sea for months at a time. Rum, beer, wine and other alcoholic bevvies kept the sailors in good shape. But on one trip they needed something more. When Captain Drake found his men sick with scurvy, he sent them ashore to ask the island natives for a cure. They returned with a solution in ‘cocktail’ form – a mixture made from the bark of the Chuchuhuasi tree, distilled water, juice, sugar cane, mint and lime… the world’s first recorded cocktail!


THE HISTORY OF GIN Gin gets its strong flavour from juniper berries and its name means ‘juniper’ in both French and Dutch. Its use can be traced back as far as the Middle Ages, when it was considered a herbal medicine, whereas now it is one of the most popular spirits in the world. It was in the 11th century that monks started flavouring crudely-distilled spirits with juniper berries. It was also used as a treatment for the Black Death – although we have to admit it didn’t make much difference. Nevertheless, the juniper remained a popular flavour to use as distilling methods improved over time. It was actually the Dutch physician Franciscus Sylvius who is credited with the invention of gin. By the mid-17th century small Dutch and Flemish distilleries had popularised the re-distillation of malt spirit or wine with juniper and other flavours, and these were used to treat all sorts of medical problems, including gall stones, gout and tummy trouble. However gin soon found its calling as an essential cocktail component, and it quickly became one of the three most essential drinks for home entertainment – and bartending. To this day, we argue that there is little more refreshing than a perfectly-made gin and tonic!

MOJITO LOVERS Traditionally, mojitos are made from five ingredients: white rum, sugar (or sugar cane juice), lime juice, soda water and mint. But where does its story begin? Mojitos come from Cuba, of course, and were first made with spearmint or yerba buena. We know it was originally made in Havana, although its exact birthplace is the subject of debate. It is a Mojito’s winning combination of sweetness, refreshing citrus and mint (which helps combat the potent kick of the rum) that has made it a very popular summer drink. So how do you make it? Well, to start with, lime juice is added to sugar (or syrup) and mint leaves. The mixture is then gently mashed to release the essential oils and flavour. Next, the rum is added and the drink is stirred to dissolve the sugar and lift the mint leaves up from the bottom. Finally, the cocktail is topped with crushed ice and sparkling soda, and the glass is garnished with mint leaves and lime wedges. Cheers!


HOW WELL DO YOU KNOW WHISKEY? Whiskey – one of the world’s most popular drinks – is a distilled alcoholic beverage made from fermented grain mash. Different grains can be used, including barley, corn, rye and wheat. The word whiskey actually comes from the Classical Gaelic word for ‘water’, while distilled alcohol comes from the Latin ‘acqua vitae’ or ‘water of life’. Early forms of the word include uskebeaghe in 1581 and usquebath in 1621 – so it’s easy to see how that evolved into ‘whiskey’ in modern times. But the beginnings of this infamous drink actually dates back further than that. The Greeks in Alexandria made their earliest chemical distillations in 1AD, while the Medieval Arabs adopted the distillation technique in 9AD – but it wasn’t quite alcohol yet. That didn’t start until much later, in the 15th century, when alcohol was distilled in Scotland and Ireland for (mostly) medicinal purposes. In fact, the first Irish distillery with a licence is the Old Bushmills in Northern Ireland, which dates back to 1608! Today, whiskey is a strictly-regulated spirit with many classes and types worldwide. Its unifying characteristics are the fermentation of grains, the process of distillation and the fact it is aged in wooden barrels. Now, which is your favourite whiskey?

THE ICE KING When you take a sip of your cool, refreshing drink, do you ever wonder how ice became a part of it? Funnily enough, many of the drinks we know today were actually first served hot – as a remnant of British culture where drinks are served warm to ward off chills. Back then, ice was difficult to keep cool all year round, so it was only the rich who could enjoy access to it. Then along came Boston Frederic – a businessman who realised there was a lot of money to be made from exporting ice from the USA to the Caribbean. It wasn’t an easy business though, as so much the ice actually melted during transportation – and nobody seemed to know what to do with it either! Thankfully, Tudor persisted and he solved his melting problem by packing the ice with sawdust. As a result, he even managed to get it as far away as India without it melting. Back then, ice was mostly used to store food and medicine, but the rich also realised how much better their drinks tasted when they were cold – and ice became more and more popular. As Tudor himself said: “Once the people had tried the cool drinks, these could not be anymore submitted hot.” Thanks Tudor!


the jigger Whether you know what the ‘jigger’ is or not, you will have seen it countless times. Can you take a guess? Yup! It’s the small tool used by bartenders to measure the amount of liquid that goes into your cocktail. The origins of the name itself are hard to pin down – although some say Royal Navy sailors would measure their daily portion of alcohol in honour of the sails on their smaller ships (the jiggermast). Others associate the term with the Jigger – a drink with a little bit of alcohol in it that was drunk in small quantities a few times a day. Another theory still, is that ‘jigger’ simply means ‘thingamajig’ – meaning there really is no other name for it! Whatever the reasoning behind the jigger and its name, all you need to know is that it measures how much alcohol makes it into your cocktail. We think that makes its quite an important thingamajig!

Cocktail Shaker We love watching it in action, but who actually invented the famed cocktail shaker? Well, back in 1848 a journalist called George Foster makes reference to a bartender with “the sleeves of a rolled up shirt and his face wrapped in the glow of a fire, it looked like he was pulling out a long strip of julep from a cup of metal”. That sounds like the first description of a shaker to us! Back then, drinks were mixed with longhandle spoons and thrown back-and-forth between two glasses… It made for a great show but wasn’t the best way of mixing things! Custom shakers came on the scene around 1850, made from metal, alloy, brass and silver-plated materials. The Cocktail Shaker Parisienne was the most popular version sold in Europe – elegantly shaped into an urn and including a strainer, it was quickly sent adopted by the American market too. In the decades that followed inventors tried to improve the shaker’s design in many ways. But it wasn’t until 1884 that Edward Hauke from Brooklyn in New York registered his metal shaker – which was divided into three parts with a built-in filter. His design has remained almost unchanged till today – and for that we thank him!

The Toddy Stick Before the muddler came the Toddy Stick – which was used to beat up sugar and stir it into a drink. Legend has it, the name for this tool is attributed to Robert Toddy, the owner of a colonial tavern in New York called the Black Horse Tavern.
