Thesis Topic
My thesis is about how to help American college students eat healthier. As a Chinese student studying in the United States, I experienced a culture shock when I witnessed the U.S. obesity epidemic. I started to search for the reason for this phenomenon, and I realized that many obese Americans have been consuming too much packaged food and drink, as well as unhealthy food from restaurants, which contains a lot of salt, sugar and fat. While studying in America, I realized that it is not easy to maintain a healthy diet with a busy school life. However, eating healthy is very important for college students because they are developing eating habits at this age, and their diets will affect their health and studies. Many students also do not know much about the nutrition limits. Because I want to ensure college students have healthy diets and long happy lives, I am using graphic design to encourage American college students to eat healthy food more often.

A lot of food contains added sodium. Sodium is an essential nutrient needed for the human body to function; however, having too much sodium can increase blood pressure, cause a heart attack, stroke, heart failure, kidney failure and peripheral vascular disease. Besides that, it can also cause osteoporosis, stomach cancer, kidney disease, kidney stones, an enlarged heart muscle, headaches, bloating and weight gain.
Sugar
Many foods have a high amount of added sugar. People can become addicted to the sugar leading to overeating, obesity, high blood pressure and high cholesterol.
Fat
Having too much fat in your diet can cause heart disease, stroke, high cholesterol, obesity and Type 2 diabetes.
Grade A College Healthy Eating
Chapter 1: Problem
College Life
The lack of nutritionally dense foods is affecting students’ health in school and later in life. College is the first time for most young people to live on their own and make decisions for themselves. However, many of them are not establishing healthy eating habits. They lack access to healthy food, have limited knowledge about nutrition and are too busy with busy schedules to pay attention to eating properly. Most college dormitories don’t have access to a kitchen, and many times the food on campus is more of a revenue stream than a vehicle for improving health. Unhealthy food packed with salt, sugar and fat can lead to heart disease; the number one killer in America. The lack of nutritionally dense foods is affecting students’ health in school and later in life.

Whole Grains
Whole grains are an excellent source of dietary fiber, which can help improve blood cholesterol levels, lower the risk of heart disease, stroke, obesity and Type 2 diabetes. It can help people feel “full so they eat less and consume fewer calories.
Vegetables
Eating vegetables can help reduce the risk of heart disease, obesity and Type 2 diabetes. Vegetables can also protect against certain types of cancers, lower blood pressure, reduce the risk of kidney stones and decrease bone loss.
Fruit
Eating fruit can help reduce the risk of heart disease, obesity and Type 2 diabetes. Fruit can also protect against certain types of cancers, lower blood pressure, reduce the risk of kidney stones and decrease bone loss.
Protein
Protein is the foundation for bones, muscles, cartilage, skin and blood. It also helps the function of nervous system, the formation of red blood cells, the creation of tissue and the operation of the immune system.
Dairy
Dairy can help improve bone health and reduce the risk for osteoporosis, cardiovascular disease and Type 2 diabetes. It also lowers blood pressure.
Fat
Dietary fat is important, it supports metabolism. It also reduces the risk of stroke and heart disease. It prevents blood-clotting, builds cell membranes in the brain, provides energy during exercise and helps in the absorption of vitamins.

Chapter 1: Problem
The Importance of Eating Healthy
The US workforce will be affected by lower productivity and shorter life expectancy. Eating healthy not only reduces the risk of disease, but can improve a student’s energy level, ability to focus and academic performance. The prevalence of unhealthy food is due to the marketing strategies of big food companies. Today, many millennials, aged 22–37 and Gen Z, aged 21 and under want healthier, tastier and more affordable food to be sold on campus. There is a growing interest in local, sustainable foods, which is reflected by new food dining services in college, such as 1.5.0, Carolina Dining Services, a vendor in UNC’s Lenoir Hall dining facility.

Questioning
This is the broad thinking phase of the project. It involves generating question for college students about healthy eating. There are six different directions: clarification, assumptions, reasons & evidence, viewpoints & perspectives, implications and consequences, and the question. The six most important questions were chosen based on which ones lead to new insights and ideas, or opened more doors to new discoveries and possibilities.

Researching College Students
I talked with some students from my school Academy of Art University and UC Berkeley about healthy eating. I got to know a lot about their diets, how they use the cafeterias in school and what current difficulties they face regarding eating healthy. They also filled in a card so that I could know more about their relationships with food.

Insights from Discussion
Having farmer markets close by can make people pay more attention to eating vegetable and fruits. The healthy eating campaign created by college health centers hasn’t attracted student’s attention. Being more familiar with available healthy eating choices makes healthy eating much easier.

Bring Grade A’s healthy food to as many places as possible. Students are very busy with their college lives, and many of them do not have time to have a healthy meal in the cafe. To solve this problem, Grade A includes to-go packaging, which not only protects the food, but also clearly presents Grade A’s message.

Introduce Grade A’s healthy eating values to people together. Grade A provides part-time jobs to students in the cafe. The apron uniform presents the healthy eating habits that Grade A is striving to encourage. All our meals are freshly made, with organic ingredients from local farms. This apron represents our attitude and our values: we cook food with heart.

This is how Grade A spreads its message as wide as possible. Grade A’s website is where students can order their healthy meals, obtain healthy eating learning materials and learn more about how to eat healthy. It is also a place to apply to become a delivery partners which will increase the number of people working with Grade A. More business partners will attract more people willing to invest in Grade A so it can open more cafes in more campus, as well as attracted more local farms with which to establish long-term relations so that Grade A can have a reliable and stable ingredient source.
