The interiors of the Park Hyatt Shanghai have been created by the award-winning New York-based designer Tony Chi, whose vision was to create a sophisticated, modern Chinese residence, designed with respect to traditional Chinese geometry and architecture, while providing all the comforts of a stately home.All the rooms have spectacular views of the Huangpu River and the Pudong city skyline, and measure from 55 to 6o m2 (592 to 646 ft2), making them the largest in the city (the average room size in the city’s other five-star hotels is around 4o m2). Coupled with the generous 3.1-m ceiling height, they will feel particularly spacious. Park Hyatt Tokyo’s New York Grill, with its bold space and sweeping city views from floor-to-ceiling windows, is a fitting backdrop to artist Minoru Nomata’s collection of 2o artworks titled “Metropolis.” The collection draws viewers into a visionary world that transcends time and space far above the everevolving city of Tokyo, showcasing the artist’s unique style that fuses painting with architecture. Born in 1955, Nomata studied design at the Tokyo National University of Fine Arts and Music. He constructs a unique artistic world in his paintings of imaginary buildings that he calls “fantasy architecture.” He paints buildings standing quietly in natural settings, with no human figures present, exuding a sense of déja vu even though they do not exist in reality.The precision of his creations gives these fantasy buildings a strong sense of presence. Serves 4
Parboil the asparagus and set aside.

première lamb chops saddle of lamb pork crepine (caul) lamb sweetbreads green asparagus from Provence fava beans savory head of romaine lettuce butter chicken stock espelette chili Thyme lamb meat jus
Shell the fava beans, parboil them and remove beans from their skins. Remove the ribs from the romaine lettuce and set aside. Sauté the saddle of lamb in a pan. Grill the lamb chops. In clarified butter, sauté the floured lamb sweetbreads in a pan. Warm the asparagus and the fava beans with the butter.Add the savory and the chicken stock and reduce until the vegetables are well glazed. Finally, add the romaine lettuce ribs. Plate the lamb and vegetables, and add the jus.
Bone the saddle of lamb, retaining the skin. Rub the meat with the espelette chili and the thyme. Roll up the saddle, add the pork crepine and tie with string.
