2 T olive oil 2T butter 1 onion, finely sliced 1 clove garlic, crushed 8 rashers bacon, sliced finely 4 medium mushrooms, sliced 100mL cream Parmesan, shaved 1 egg yolk (optional) ½ tsp paprika freshly ground salt and black pepper fresh egg pasta - fettuccine or spaghetti works well for this lovely creamy sauce Bring salted water to a rapid boil in a large saucepan and then add pasta and cook as directed (fresh usually 5-7 minutes, dried 10-12 minutes). Heat oil in frypan and add onions. Cook for 2 minutes then add garlic and bacon. Cook for 3-4 minutes, before adding butter, mushrooms and paprika. Saute until cooked through. Grind in salt and pepper to taste and then add the cream. Heat through for 1-2 minutes, but do not boil. Gently and quickly stir through until the strands of pasta are coated. Add an optional egg yolk at this stage the egg yolk will create a glossy finish and enrich the delicious creamy sauce. Serve sprinkled with parmesan shavings and a fresh green salad. This pasta is simply heaven!
