Claire Pettibone W

edding talent Claire Pettibone grew up in rural New York in a 19th century farmhouse on acres of rolling hills. As an only child, most of her time was consumed exploring the surrounding streams and forests, picking wild raspberries and dreaming. Among the trees, ferns and wild flowers it was very easy to imagine and believe in a world of fairies and magic castles. Some of Claire’s earliest drawings are of princesses and brides dressed in elaborate gowns. With both parents working as professional artists, Claire was exposed to galleries and museums and encouraged to develop her creativity from a young age. She studied classical ballet for years and the stories and costumes of the ballet continue to influence her ideas of elegance and grace. As a teenager Claire began pouring over European Vogue where the world of couture was revealed to her. Following which she studied fashion design at Otis Parsons School of Design in Los Angeles and began her career in design.

“ It has always been my

desire to create exquisite feminine clothing using the finest fabrics and precious details; to combine a vintage feeling with modern style ” Claire Pettibone

“It has always been my desire to create exquisite feminine clothing using the finest fabrics and precious details; to combine a vintage feeling with modern style,” revealed Claire. In 1994, with the partnership of her husband Guy Toley, Claire Pettibone was launched. “Over the years, it has been a joy to see our collections carried in the finest boutiques in the world. I have a very romantic vision of how fashion can enhance our beauty and indulge our dreams. I invite you to share that dream.” This season CONFETI magazine caught up with the talented designer to dig a little deeper and discover the truth, stories and inspirations behind Claire Pettibone.

I became a My husband bridal designer and I st arted because… I have the business… always had a very feminine and

romantic style. We started our business in lingerie, and through the experience of working with laces and embroideries, and developing as a designer, brid al became the next step. I felt I had a unique take on the wedding gown, and a modern approac h that would be appreciated. Years of hard work and dedication mixed with good fortune, and here we are!

out of our house the same yea r we were married, and it quickly grew. Over the years, our product evolved. At one time we were the largest sleepwear vendor to Neiman Marcus. Ove r the last few years, bridal has become our largest category.

My Earthy Paradise Collection is… inspired by a

sapphire sea, an endless blue sky, the scent of

sweet flowers drifting on the breeze, and a girl dreaming of her lover. Dutch born Victorian artist Sir Lawrence AlmaTadema painted scenes of languid beauties reminiscent of Roman deities, but his subjects are unmistakably human. Caught in a moment of relaxation or idle daydream we can almost feel the cool marble and the warm Mediterranean sunlight. Elements of precious embellishment, sun drenched colour and effortless luxury set the stage for our modern goddesses. One of the paintings entitled “Spring” depicts a village gathering to celebrate the season. The

CONFETI 31

women and girls wear flower wreaths in their hair, and ribb ons are streaming. What could be more romantic?

My favourite part of my job is… developing a concept

for a new collection, and the n on to creating fabrics with the world’s couture mills and embroidery houses, and fina lly seeing the entire collection come together with music, make-up and lights on the runway.

32 CONFETI

My favourite trend right now is… touches of colour, cap

ped sleeves, and having a wedding that reflects the couple’s personality.

For next season I predict… sleeves, modest nec

klines, subtle sensuality and refined eleganc e.

Photo b y Anton Oparin

n Oparin Photo by Anto

I am constantly inspired by… art,

all eras of costume history, from 1920’s clothing and accessories, to 40’s wall paper, to lace from the 1800’s. Nature and flowers, birds, butterflies, clouds… the natural world is such a rich tapestry of color and design and is a reoccurring theme in my collections. I research and collect objects related to a specific theme for direction when developing a collection. Ultimately, the theme is just a starting point for me to draw from, and my goal is to make a woman look effortlessly breathtaking. I feel with a wedding gown, a sense of timelessness is important. I want my brides to be able to look back on their photos and almost feel that the photo could have been taken in a bygone era. I love combining inspiration in an eclectic way that is vintage inspired, but fresh and a bit unexpected.

A Claire Pettibone bride is… not a single “type”

but rather an assortment of muses. Every bride is different, but they do share a desire to have a truly unique gown that expresses their personal style. If that happens to be feminine, timeless beauty, then that’s my bride! My clients seem to really connect with my work and are very emotional about it. It’s a great feeling to know that the heart and soul that I pour into my designs resonates in a very

personal way...it’s not just a dress, it expresses who they are, and to me, that is the most beautiful thing!

I most like to dress… my devoted

clients.

My preference when it comes to fabrics is… embroideries, laces, silks and cotton… all the finest quality, and unique in their beauty.

My favourite designer are… designers who have a defined point of view: Alexander McQueen, Valentino, Balenciaga.

A day in the life of Claire Pettibone is…

up at 6:30, fresh veggie juice, get the little one ready for school, drop her off, quick stop for a chai latte, then on to the office. Answer emails, interviews, meet with my patternmaker, production team, and graphic/social media teams to go over the day. Select fabrics, research ideas for the collection, sketch and brainstorm with my husband and partner. Make it home in time for dinner, homework and story-time, snuggles with my daughter, a little reading, and lights out!

CONFETI 33

When I am not working I… spend

time with my daughter and husband visiting botanical gardens, museums and such, and of course children’s birthday parties, and play-dates! I am so happy to do what I love for a career, and to have my amazing family by my side.

When searching for your wedding gown my advice would be… plan ahead! It can

take 6 months for your dream dress to be made, so start early, and really think about who you are, and what you want to project on this day. With that said, don’t lose sight of what the day is about, and try to enjoy the process of finding your gown by not putting so much pressure on yourself!

You might be surprised that… I’m a pretty good

dancer, and met my husband at a nightclub in Hollywood…many years ago!

If I was not working as a bridal designer I would be… an interior designer, jewellery or shoe designer, or perhaps art director…I would have to do something creative.

You can purchase a Claire Pettibone dress from…

our flagship boutique in Los 34 34 CONFETI

Angeles as well as over 50 boutiques both in the US and internationally. Visit our website www.clairepettibone.com for our boutique locator. Next on my agenda is… moving our flagship boutique and headquarters to a historic Los Angeles building this summer. I can’t reveal details yet, but it’s going to be an amazing location for our brides to find their dream gown! Truly my life does sometimes feel like a fairy-tale.

Bridal Insider Aruna Seth

A

runa Seth has lived every little girl’s dream, growing up surrounded by shoes as her father owned a prestigious shoe company. It was in her blood and only a matter of time until she launched her signature brand. Acclaimed around the world for her exceptional red-carpet styles and attention to detail. Each shoe is made with a special ‘cashmere like comfort’ padding and curves to elongate the legs. Like her shoes, Aruna can be found in the fashion capitals of the world, including London, New York, Milan, and Moscow where she maintains showrooms for personal appointments and in over 50 luxury department stores and boutiques across the globe. Aruna Seth shoes have been spotted on the British Royals and celebrities worldwide who all love her designs and iconic butterfly motif

36 CONFETI

Every great outfit starts with the shoes first. Always dress from the feet up. Aruna Seth

symbolising elegance and femininity. Aruna Seth shoes are beautiful inside and out, they’re designed to be worn all day and are uniquely comfortable, irrespective of the heel size. Between her busy schedule Aruna found the time to exclusively share with Confeti her secrets, inspiration and style. How did you become a footwear designer? I have a family heritage in shoes, my father has been making shoes for over 40 years and he is my biggest inspiration. Designing and creating beautiful shoes is in my blood. My father has worked extremely hard over the decades to build up a successful shoe empire, he is my biggest influence. He encouraged me to work within his company from a young age so as a child I was selling other children trainers at school and I spent a lot of time in the office around designers. Together we spent a lot of time travelling when I was

younger and I visited all the factories around the world. I remember coming to my father’s office and working over the summer holidays helping in his warehouse, factory and with shoe orders. My father has a tremendous work ethic, he has built up a multi-million pound shoe empire in Russia, India, Europe and the UK; I’ve grown up watching him work long hours and put huge dedication into building his business. Watching my father has instilled a huge work ethic in me and I’d hope to be as successful as him.

What is your favourite part of your job? I love my whole job because it’s so varied; there are a lot of elements I love about my job! For example the whole design process from completion to finish. Also I can be in Italy one day in the factory inspecting the quality of the shoes and then the next week flying off to New York for meetings. I also love meeting with clients in person and hosting events.

How did you start your own company? I was lucky because my father helped with the initial start-up of the business. His footwear is completely different to ours though so I was left to make all my own contacts etc. for example he has never made shoes in Italy and I do!

What is your favourite trend from the current season? I love my new Candy Coloured shoes in rose leather! They are the perfect shoes to make people happy and jazz up an outfit. They would look especially cute mismatched with one of our satin butterfly aqua handbags for a Marbella wedding!

What trends do you predict for next season? For Autumn Winter 2013 it will continue to be all about investments in classic shoes! All you have to do is spot what Victoria Beckham may be wearing for the seasons ahead. She has been spotted in lower pointy toed heels a couple of times these past few months and everyone will be wearing them soon. I am currently creating a family of pointy toe comfortable classic shoes in grey, beige and tan! Who, what and where inspires you? Creativity to me is taking in inspiration from my surroundings and sitting down and drawing out ideas in my note-pad. My designs are based around what I love from shoes, the places I frequent and my travels. I love attending events and socialising. Before I started the brand Aruna Seth I could never find the perfect shoes for day to evening occasions. I wanted to create shoes for the red carpet with that extra ‘wow’ factor. The signature cerise wedge with Swarovski crystals and bow is a best-seller, girls will literally grab my feet as I walk past wearing them to ask me where to purchase them!

What epitomises an Aruna Seth bride? A lady who loves a bit of glamour! A bride who loves Aruna Seth shoes is someone who would like to add a bit of dazzle and spice to their wedding day! Our butterfly shoes are the perfect choice for the glamorous bride who would like to add a touch of sparkle underneath their dress! We love our adventurous brides who like to stand out with a bit of colour, our fushia pink shoes and especially our range of blue shoes to satisfy ‘something blue’ are perfect for this!

Who would you most like to wear your shoes? I’d love to see Kate Middleton wearing our shoes as she is a style icon and gains so much interest in what she wears! Kate Middleton is doing a tremendous job of looking superbly classic and hasn’t put a fashion-foot wrong. She has a highly pressurized position of looking utterly fabulous at all times. I’d love to offer her some of our Aruna Seth flat ballerinas to run after the arrival of the new Royal baby in July! What is your preference when it comes to styles? It really depends on the activity but I’ll always have shoes on with a bit of sparkle! I love my range of butterfly shoes for day to eveningwear! The butterfly flats are great for day-time wear and then upping the glamour factor for the evening!

I chose the butterfly as an emblem of Aruna Seth shoes as it is extremely feminine and signals freedom! Our butterfly shoe has sold amazingly well. Brides love the shoe because it adds a slick bit of crystal from appearing below their gowns. It is also a great fashion investment shoe for ladies because it can look classic with the butterfly and also glam up a day outfit with a glam pair of shoes. Who are your favourite designers? My style is classic, I love investing in well-made designs and pieces. For example I have spent a lot of money investing in Roland Mouret and Victoria Beckham dresses. The pieces I buy are good investment pieces because they last and the quality is high. My aim for Aruna Seth is to be a classic CONFETI 37

What is your top bridal secret? Choose Aruna Seth shoes if you want to be comfortable! We like to differentiate ourselves from other designers as our USP is the special padding in our shoes. It is plush leather padding which supports the foot for all-day wear. We feel as though our shoes are glamorous yet comfortable for all-day wear, cashmere-like comfort for feet. Goldie Hawn wore Aruna Seth’s Cinderella shoes covered with 3,000 Swarovski crystals peeping from her beautiful black dress to a Nine Film Premiere in New York in December 2009. Goldie Hawn was super impressed with the comfort factor and said “The minute I put them on I did not want to take them off. They were so comfortable... and for evening shoes that’s saying a lot”. brand which stands the test of time, I’d love to grow the brand to be a Chanel in 70 years. For shoes, I’d go with Manolo Blahnik as I love his inspiring designs and images that he draws with each design! His shoes are colourful, great shapes and I love his iconic design which featured on Sex and The City. I love the magic he has created behind the brand. Describe to us a day in the life of Aruna Seth… I usually wake up and look through our client orders to see how many shoes sold on the internet overnight! I’ll have a meeting with our shoe designer for an hour. Chat to our PR lady about which newspapers to approach and which countries to ask journalists for interviews in. It may involve looking at the website and re-designing the look. I usually call around a few of our best clients to try and arrange some one-on-one appointments to stay in touch with them… What do you do when you are not working on your collection? I am quite busy running a business so the only hobby I really have time for outside of this is shoe shopping!! It is great heading to Harrods on the weekend and it’s perfect research for the shoes… What advice would your offer our readers when search-

38 CONFETI

ing for the perfect wedding shoe? Material, heel, comfort, style, what suits the size and shape of foot and ankle etc, how it works with the dress... Choose a shoe you love and you’ll cherish, it’s your wedding day after all. Comfort is key, if you’re accustomed to wearing 3inch heeled shoes then I’d be cautious about wearing 6inch heels on your wedding day just because you look good. Also quality, it is worth investing in more expensive shoes, the materials are of superior quality and will last longer than cheaper shoes if you look after them well with polishes and re-heeling! You could theme your shoes along with your wedding, for example many brides have a butterfly theme and choose an Aruna Seth pair of shoes and handbag. If your dress is long then it may be nice to wear our Aruna Seth signature cerise heels with crystals down the back, when you lift up your dress you see a hint of sparkle. For shorter dresses, you

could go all out and wear a pair of all over Swarovski wedges with purple crystals on. Work with your wedding dress to find the perfect shoe. Use material swatches to compare your dress and shoes. Pick a shoe colour matching your wedding dress colour; a pristine white dress goes best with white or a pale pearl colour and an offwhite gown, goes best with pearl or ivory-coloured bridal shoes. If your dress is long, shoes with embellishments or spike heels may damage the fabric. If your dress is short then shoes are on display, a bit of fancy sparkle on your shoe may be more important. Tell us something about yourself that may surprise our readers… I started Aruna Seth company at the age of 26! I kept my age to myself though as I think some people were surprised about me starting off so young and the brand grew quickly!

If you were not a footwear designer what would you be doing? I’d most likely be a glamorous travel writer. I travel a great deal, last year I went to New York three times, Los Angeles twice, Hong Kong and Singapore, Milan, Paris and then St Barts for an actual holiday. I also went to India to start promoting the brand in Mumbai and New Delhi for the first time. I feel particularly connected to India because my father is Indian and my heritage. Many of my designs are inspired by India for example the vivid bright colours and crystals as they love detailing. The shoes have proved to be a popular success in India. I’ve had an interview featured in Cosmopolitan India and we are hoping to book in ELLE India when I travel to Mumbai in April. All my travelling is usually in nice hotels and restaurants so I’d have lots of information for a GREAT travel blog! What is next for you? We would love for the brand to become more well-known internationally. Over the past few years we have focused heavily on the US and especially building a client base in NYC and Los Angeles. Next we are focusing on Asia. We recently did two amazing events in Singapore and Hong Kong, the market out there is strong and the ladies know how to shop!

ONFETI talks to...

Thomas Knoell This year wedding brand Watters collaborated with bridal accessories designers, Toni Federici and Thomas Knoell, to offer exquisite and luxurious accessories; the perfect match to their Fall 2013 Watters bridal collection.

T

oni Federici, an artisan and creative force behind every design that features her name, created a collection of exquisite, hand crafted veils to offer for the Watters bride.

Thomas Knoell, mechanic turned jewellery designer, has created a collection of hair combs, earrings, necklaces and belts that perfectly compliment the Watters Bride aesthetic. Opulent and romantic stones combined with rhodium plated metals give Thomas’ accessories a luxurious and organic feel; the exquisite compliment to the vintage Miami inspiration behind the Fall 2013 Watters Brides collection. This season Thomas took a moment out of his hectic schedule to share with Confeti the inspiration and ideas behind his current Watters collection. C: Tell us about your new collection? Thomas Knoell: Our new Fall 2013 Collection is unlike any other collection we have designed. You will see more regal pieces in Antique Gold finishes with three dimensional design elements that give the pieces more of an artistic feel to them.

42 CONFETI

C: What inspired the collaboration? TK: We have been doing trunk shows alongside Watters for many years. Our products work so well with their dresses that after so many successful events together, we decided to create this collaboration so that we could formally introduce products that combined both of our design aesthetics. It’s been very exciting!

C: What and who inspires you as a designer? TK: We are inspired by everything! Trips to museums, artwork, metals and crystals…but most of all we are inspired by our brides. Our line began by designing bespoke pieces for our clients. That is how we originally developed our collection and that is how we continue to build upon our designs, by seeing how our clients want to look and feel on their wedding day. C: Why did you feel Watters was the right fit for your designs? TK: Working with Watters has simply been an honour. We knew immediately when we met Vice President, Maria Prince, that she was someone very special, hard working and incredibly talented. As we got to know more of the Watters team, we realized that the entire Watters culture is one of professionalism, dedication and love and passion for their business. Any company that has that much talent and drive we are blessed to work with. C: What do you love about the Watters brand? TK: I love that the Watters brand feels more like your best friend, than a bridal gown company. They evoke a friendly, fun and very approachable image that makes brides feel comfortable trying on, and ultimately buying their dresses and accessories.

C: What is the best part of your job? TK: The best part of my job is to know that I am able to create something that makes a bride feel beautiful and special on their wedding day. Seeing the family connections during the wedding planning process is really amazing. C: What is your favourite style secret? TK: We tell our brides everyday to be true to themselves. Don’t be pressured by others to wear accessories that they don’t feel comfortable with. You want your guests to recognise you as you, not someone totally new. So if you normally don’t wear any jewellery, then stick with simpler pieces, but if you are always glammed up, then the sky’s the limit. Just be yourself and have fun! C: Where did your passion for design and in particular accessories stem from? TK: Before I got married, my wife used to make jewellery as a hobby so I took a class with her. When we were planning our wedding, I decided to make her headpiece for her. Once her friends saw what I made, they started to ask me to make them one, and then another a little different, and so on and so on. One day, I made a dozen pieces and walked into a local bridal store and they bought them all. That’s when we realized we had a new business! C: How do you recommend brides approach hairstyling when using an accessory? TK: I think it’s important that a bride has a general idea of how they are wearing their hair before choosing their headpiece. Do they want it all up, down, or half up-half down? Once they have

narrowed down a general look, then they should start shopping for accessories before finalising their hairstyle. Depending on what piece they fall in love with, they can then go to a hair stylist and produce a final look. The accessories work hand in hand with the hair, so it’s important to have your piece selected before finalizing any hairstyles. C: What is your favourite piece from your collection and why? TK: My favorite piece from the collection is the Euphoria Cuff bracelet with a big rosette center. I would consider this piece the best reflection of a chic, modern bride with an explosion of style. It screams the “wow” factor! C: What trends do you predict for 2013? TK: I think Gold is going to continue to be big in 2013. I also see an increase in bold statement pieces. C: What has been the highlight of your career so far? TK: By far, the highlight of my

career has been our collaboration with Watters. A personal highlight of my career is that my children are now old enough to take along with me to trunk shows. Having the opportunity to have my family with me during my travels is the reason why I started my own business. C: If you weren’t creating bridal accessories what would you be doing? TK: My dream would be to own a motorcycle shop. Otherwise, I think I would be in either some form of sales or in a health and fitness related business. C: What type of bride do you see wearing your pieces? TK: A bride that loves fashion and wants something truly unique for her wedding. Ultimately, I design for every bride because I can customize a piece to create something simple and classic to something avant-garde and over the top. watters.com

BENEFIT Ultra Plush Lip Gloss Sarah: Lately all glosses seem to have a mi nty taste or a tingling sens ation which really bugs me. Also, please exp lain to me why they are all full of glitter; I am not a six year-old. Hooray for Benefit Ultra Plush Lip Gloss for ticking all my boxes. I have actually bought all the colours available, but for my big day, I will be wearing the ‘A Lister’ shade.

MAKE UP FOREVER HD Primer Microperfecting Primer

Nicola: This has now become my number one primer. It nourishes, moistur ises and softens the skin, creating a glowing effect, whilst also softening lines and blurring imperfections such as my dreaded pigmenta tion. My make up stays put all day and still look s flawless if I have to go straight from work to dinner. I’m absolutely thrilled with this prod uct. Sara: This primer feels like a tinte d moisturizer yet offers coverage like a light set foundation. At first I was a bit disappointed as there didn’t seem to be any difference to my skin. However, once I started applying my foundation my skin tone evened out and I was very happy with the final result, so much so that Make Up Forever’s primer will replacing my Smashbox version.

CHANEL Les Beiges Nicola: This isn’t a run of the mill po wder, but one which blurs lines, ev ens out complexion s and gives your skin a fresh, he althy glow; think su permodel Gisele. Once you ha ve found your perfe ct match from the selection of five shades, you can honestly apply it with your ey es shut. I was match ed to shade #20 which actually looked way too da rk for me in the compact. Howe ver, as this produc t is designed to add warmth to yo ur complexion, once applied it transformed my co mplexion. I had a glo w that even Gisele would have envied.

DREAMWEAVE &CO Lash Construct Nicola: Regular readers will know that I never budge from my YSL False Effect Mascara, however I may have found a serious contender. Dubbed ‘eyelash extensions in a tube’ this mascara has a silicone formula which coats each lash with a fibrewrap, giving the wearer dramatically longer and completely smudge-free lashes. While I normally don’t like ‘comb’ type wands, this one was perfect - it didn’t deposit too much product onto my lashes and fanned them out to perfection with no clumping. For me, Lash Construct deserves all the hype. It’s simply a great product and in my opinion the best mascara since YSL.

Yasmina: I have three of these powders on the go: one shade to sculpt, another to glow and a third to finish. On my wedding day I want a healthy glow, not a bronzed look and I will definitely be using Chanel to achieve my desired look.

Jenna: Naturally being the mascara junkie that I am, I was looking forward to getting my hands on this. So what did I think? I saw a dramatic difference after one swipe; fantastic length and glossy black lashes. The mascara is very quick drying, so I would recommend that you complete your desired look on one eye first before applying it to the other. I didn’t need to use my lash curler beforehand or my lash comb. This says a lot in itself. To make really sure it would be suitable for my wedding, I wore it while crying my way through the Twilight saga and there wasn’t a smudge in sight.

Diana from Lavish share their expert wedding day hair and beauty tips

The question I am most often asked by brides-to-be is, “Should I have an up style or wear it down in big, soft romantic curls?” Your hair will make a big impact on your big day and as the saying goes, ‘your hair is your crowning glory,’ so a lot of consideration should go into deciding the look that would most complement you and your dress. To get some inspiration I suggest browsing wedding and hair magazines, which showcase everything from traditional styles to the latest trends. Most brides will already have a vision of how they would like to look, and your stylist should be able to bring these ideas to life. Always remember whichever style you opt for, you need to feel comfortable with it. If you don’t feel comfortable and do not feel like yourself, this lack of confidence will show up in your photos. No matter how amazing the hairstyle, to achieve that ‘bridal glow’ you 46 CONFETI

still need to feel like yourself, just a more beautiful version. Choosing the right wedding hair is an exciting part of planning you wedding, but don’t get carried away. A few key things to remember are; your future husband loves you the way you are, so try to avoid any drastic colour changes or a completely different look, unless this is something you often do. He wants to marry the REAL you. This year wedding hair is very diverse in style and many more brides asking for hair down. However, updos are still the most popular choice, with fringes being used in a variety of different ways. From elaborate headwear to feather centerpieces and bias-cut, embellished gowns, wedding details from the 1920s are popping up everywhere. Neutral coloured accents in creme and taupe along with pops of blush or mint offset classic black, while ornate patterns in metallic gold and silver help to create a striking atmosphere never to be forgotten.

This a mascara and irculation c s e v o r p im . hair growth stimulates Maybe you have not given too much thought about your eyebrows on your wedding day, but it really should be added to your beauty ‘to do’ list. It is amazing how many brides don’t even consider their brows when planning their beauty procedures, as eyebrows can make or break a look, as they not only create a balance for the whole face but the right shape can knock years off you.

There are a few different options to choose from. Semipermanent makeup can last for up to 3 years and has proved incredibly popular with the Towie crowd. You can opt for anything from a more natural brow to the bang on trend statement brow, think supermodel Cara Delevingne. Do remember that they are semi-permanent and you will have to get them redone at some stage, as they fade over time. Next we have eyebrow tinting, which is a form of semi permanent hair dye specifically formulated for use on the eyebrows. Even if you are one of the lucky ones who just need a visit to the beauty salon for a quick tidy up and shape, I would always recommend including an eyebrow tint, as it really does give a cleaner finish and helps define your eyes. Finally the hair removal method, wax, tweezing or threading? Go for whichever you are most comfortable with and always choose a therapist who is known for creating perfect brows. On your wedding day every bride wants to look her best, and this can be achieved by making the most out of all your features.

Multiple Ceremonies Many couples are opting to have multiple wedding ceremonies, whether it be for religious reasons, ethnic reasons, because you have family and friends scattered across the world or just because once wasn’t enough!

In one instance we heard of, the groom was Armenian and the bride was American. The bride found the perfect venue but it didn’t suit the requirements of a traditional Armenian wedding, which meant getting married in a church and enjoying Armenian food and drink. So the couple decided to have two weddings, two weeks apart and thus pleasing everyone! Of course it may also be because you have guests you want to invite from opposite ends of the world and they aren’t able to afford the travel, or it doesn’t suit everyone to come to you, so you can travel to two different locations. Whether you want to get married once, or five times, The Weddings Company is here to help you organize your perfect day. We want to make sure you get everything you require.

Mini foods are always a hit at events, weddings or any kind of celebration or gathering. They are easy and quick! Everyone is dancing, chatting and mingling, they don’t want to sit down for a couple of hours and have a three-course meal, so mini foods are the perfect alternative. You can come up with options that you would have for different courses of a meal and use them in a smaller way. This way people can get full up on lots of little things.

Peter Cannon Executive Chef, Purple Pepper Catering purplepeppercatering.com

Miniature food enables couples to incorporate a variety of styles and flavours into their wedding menu. This trend gathered steam toward the end of 2012, and has only got bigger (or more miniature?) in 2013!

JB FORT

Shooting from Outside the Box Exclusive Interview with internationally acclaimed photographer Jean Baptiste Fort Could you present us your background and tell us something about your work? I grew up in the south of France, in a small city called Perpignan. At the age of 22 I started my first venture, it was a web-design agency called ‘Dixia Technilogies’. I did my first photoshoot in Los Angeles at Warnerbros. studio, where I was shooting for an article about a TV show “Friends” featuring Jennifer Aniston. I have been shooting ever since. What challenges you in your line of work? Nothing challenges me as much as I challenge myself. I try to improve with every new photoshoot, and I just want to do the best I can with the possibilities that I get. I’m interested in doing photoshoots with big production, unique settings and styles, something really unique and unusual. And I believe I’m getting closer to this objective with every new shoot. How long have you working within this field? I’ve been shooting for about 8 years. Describe your photographic style? I believe it is classy and stylish, but always with a twist.

54 CONFETI

What is your photography process? Everything usually begins with inspiration. This could be a model that I meet, a place that I discover by chance, or just a photo in some magazine. After that I start to work on scenario and general moments of the shoot. All components must

be in harmony with each other, nothing should stand out from the story. I also try to find something special, some distinctive feature. First of all, it concerns light and light sources. But it could be some interesting detail or an accessory found by my stylist.

What is your favourite photography style? My favourite photographers are Kristian Schuller and Rankin. Even though they represent different styles, I like the edgy and perfectly stylished delivery of the images.

What is it about weddings that interests you so much? I consider myself a fashion photographer first of all. So I’m trying to bring more style into every new genre that I’m working with. This was actually my first wedding project, and it was a great experience to have. What type of lighting do you utilise and why? I use Profoto gear mostly: Pro-B4 for outside shootings and Pro-8 for studio shootings. I like the accessories and the quality of light. Sometimes I work with other brands when I don’t have other choice, but my preference is Profoto. It’s exactly what I need. Tell us about your favourite piece of work you have done this year. I really enjoyed the shoot we did in Minsk, Belarus. It was a studio shoot with very good styling and an interesting setting. We had some pieces of vintage furniture and accessories, unique couture dresses and even some birds. In the end we got some unique fashion shots with dramatic delivery. The vibrancy and clarity in your work is something that immediately stands out. Could you talk about how you achieve this effect and if you retouch your photos? I mostly don’t edit photos by myself, I prefer to entrust this to a professional. I think in fashion and beauty photography post production is half of the success of the image, and the whole work can be spoilt by wrong retouching. I’ve been working with the same retoucher for a long time, so it gives unity to my images. Tell us a little about the presentation of your images. What do you believe are your strengths and weaknesses?

I think my strength is that I’m not afraid to try something new, to take risks and experiment with styles, genres, locations. It makes me more professional and experienced, so I feel more comfortable when starting work on another project. What lessons have you learnt along the way? I’ve learnt that everything is possible... with time, professionalism and taste. But very often people can’t wait or lack professionalism or taste.

Who and what inspires you? My family, travelling, talented people. In fact, there’s plenty of things. What is next for you? Shooting in a big air balloon or in a palace in Venice. But speaking about longer perspective, I’m going to continue what I’ve started, take part in more challenging projects and continue to grow. DolceSitges VIVA LA VISTA

By Elena Koukis

R

ecently I was given the privilege of visiting and staying at the Dolce Sitges hotel whilst shooting our exclusive editorial featured in this issue. Watching our model Olga sashay down the winding spiral staircase, the train of her silk dress flowing gracefully behind her on the white marble steps it was clear we had picked the ideal location for this shoot. ‘This is where I want to get married’ Olga gushed. There was a murmur of agreement from the women on set. Dolce Sitges is the type of hotel that makes people want to celebrate their nuptials, every detail is glamorously accounted for, from the well groomed lawns, delicately speckled with bright, bursts of colourful flowers, to the classic and sophisticated interior which is continued throughout the hotel. Airy and spacious, but possessing a wow factor, this is definitely a very stylish hotel. Well received by the press and public alike, the hotel won the

prestigious Conde Nast Johansens award in 2012, it is an impressive venue boasting all the key ingredients to leave any guest satisfied. It took a quick, and scenic 30-minute drive from Barcelona airport to the hotel. The location is fabulous. Barcelona has emerged as one of the key cities in Europe for tourists, meaning Dolce Sitges has had to fight off a lot of tough competition to maintain the high reputation it has obtained. The hotel embodies the diversity and culture of the city, from the architecture of the building, down to the key placing of modern art dotted around the walls. It merges classic, traditional Catalonian style with contemporary quirks. Located 40 minutes from bustling city life, and resting on the edge of the Mediterranean Sea, means guests can enjoy stunning coastal views. Privileged guests may stay in luxurious rooms with private terraces which possess breathtaking view of Sitges.

After the shoot was all wrapped up, we took to one of the enchanting terraces. Clinking our glasses of wine together it was easy to imagine many a balmy, candlelit evening has been celebrated in style on these terraces. In fact, it isn’t hard to believe that every aspect of the hotel has been designed to ignite romance, the subtle lighting creates a warm ambience, flowers and their sweet scents subtly adorn surfaces and the chic, minalmistic interior adds to the charming location. It is clear that elegance is the hallmark of the design in the suite that I was sleeping in. I had a spacious lounge and adjacent bathroom. It was homely, comfortable and gorgeously laid out. Overall I had a pleasurable nights sleep and this was followed by a delectable breakfast. The hospitality at Dolce Sigtes was without a single flaw. We wined and dined like royalty, unfortunately only able to sample the cuisine from one of the hotels three restaurants, Esmarris. The Hotel Tamisa Golf is the Costa del Sol’s ideal wedding venue – a haven of peace and tranquility.

he famous Tamisa backdrop, which consists of the fabulous view across Mijas Golf to the mountains, was sadly lost during 2012 while Mijas Golf underwent a five million euro upgrade and the course had to be closed for 12 months. CONFETI is delighted to announce that it has now re-opened and the golf course looks better than ever, making it the perfect backdrop for wedding photos. Of course, the Tamisa is now being inundated with bookings for next year, so act fast or you may miss out on your dream wedding venue. Why get married at Tamisa? The wedding ceremony can be held in the picture-perfect hotel gardens, after which guests can enjoy chilled cava and canapés around the swimming pool, followed by a sumptuous dinner on the terrace. Delight your guests with a short firework display and then relax and dance under the stars; all at the Tamisa. The fabulous bridal suite is free of charge for newlyweds on the night of the wedding and Tamisa offers attractive rates for all wedding guests either at the hotel or in adjacent apartments, so it is ideal for all the family.

Falling For You Noelle & Johnny said ‘I do’ in the swoon worthy, beautiful town of Nerja.

VIVA ESPAÑA We had been to a few weddings abroad and had a fantastic time, so when we got engaged it was an easy decision for us; we wanted to marry abroad. We had visited Nerja the previous year and loved the town with its quaint white wash church dominating the main square. So when Johnny popped the question, it was the first place we both thought of. It was easily accessible for guests, boasted many lovely restaurants and seemed to tick all the boxes. For the venue we fell in love with the Hotel Balcon de Europa. The location was beautiful, and the wedding reception could be held on a private beach. We had also heard great reports about the service and the food. Sold! OUR VISION We really didn’t have any theme for the day, we just wanted to make sure that everyone was relaxed, had plenty of food and drink and enjoyed the day until the wee early hours. We felt that we could do with a little bit of help from someone actually based in Spain and decided to book a wedding planner in Nerja, opting for Sonya Casey (who also happens 62 CONFETI

to be Irish). We had heard great things about her planning skills and she certainly did not disappoint. From the first point of contact she was professional, helpful and “on the ball.” To say that she was amazing is an understatement. We settled on having a drinks reception with canapés at the Hotel Balcon de Europa, followed by the wedding reception itself. On the day the food and service were first class, with many guests remarking on the fantastic standard of both. IT’S ALL IN THE DETAILS My wedding dress was by the innovative designer David Fielding. I had always thought I would go for something simple, more Jenny Packham style. But when I tried on this dress it just felt so romantic; a style I was never going to have the opportunity to wear again….I just loved it! For my flowers I wanted a small, simple white bouquet, with pearls wrapped around the stem, something I had seen in a magazine. We decided to have a fresh wedding cake that would then be served for dessert, as it wasn’t something that was easy to carry home. We placed photos of our parents cutting their wedding cakes beside ours as we

wanted to incorporate them into the wedding as much as we could, family is very important to us. Oh, and to finish it off, we added a cute Mickey and Minnie Mouse cake topper given to us by Noelle’s nieces and nephew. Our friends, Stephen & Roisin, provided the music for the ceremony itself. Needless to say they were excellent. Noelle’s goddaughter, Shauna Molloy, also played the violin beautifully. Ian Preston provided his hosting, singing, entertaining and DJ’ing services for the reception. He was excellent; he knew exactly what to do, say, sing and play - the dancefloor did not empty the entire evening. It’s hard to believe he is a one-man show. Last but not least I have to mention our fantastic photographer, Jeremy Standley and his assistant Ruth. True professionals in every sense of the word. We wanted a natural feel to our album with only a small amount of posed shots as we didn’t want to be away from our reception for too long and that is exactly what we got; we didn’t miss a thing. We hardly even noticed them, they just let the day flow and captured all the best bits. Jeremy is so relaxed, yet gets the job done to the highest standard. He truly has got an eye for a good shot. OUR MAGIC MOMENTS The wedding ceremony itself was so special and there were so many moments we loved throughout

the whole day and night. Walking down the aisle with my father Noel, meeting at the altar, exchanging vows... the list goes on. We had sparklers for all the guests to light during our first dance. That was a really magical moment. Overall, the most amazing day; I honestly wouldn’t change a thing. CONFETI 63

Somewhere over the

Rainbow Claire and Sion enjoyed a fun-filled day set against the beautiful backdrop of the Hacienda San Jose.

OUR STORY We have both lived in Spain for many years and actually met through my best friend. Helen’s husband is Sion’s twin brother and funnily enough I am one of twins as well! We were friends for a long time before romance finally blossomed and we realised we had something very special. The proposal was a complete surprise. Sion whisked me off on holiday but wouldn’t tell me where we were going. With the help of the British Airways staff I didn’t know the destination until the air steward welcomed everyone onto the flight over the tannoy “Ladies and Gentlemen, welcome to this British Airways flight to Las Vegas”! We had a fabulous holiday in Las Vegas, staying in an incredible room at the amazing Bellagio hotel. At one point I did wonder

if Sion had planned to propose on the holiday as we had already spoken about getting married, but I put those suspicions to one side after I realised that I had done all of the packing for the trip and knew without doubt that he would

not have had a chance to pack a ring without me knowing. However, he proved to be a little more clever than that. Whilst he had left me nursing a gin and tonic in a bar at Heathrow Airport under the pretence of visiting the men’s room, he had rushed to Tiffany’s to collect a ring he had reserved for me. He tucked it in his jacket pocket and kept it hidden until he proposed several days later. What a surprise! OUR VISION We really wanted a wedding where our guests could just relax and enjoy the party with us, with the focus on celebrating how excited we were to have found each other and fallen in love. We weren’t looking for anything too flamboyant,

64 CONFETI

we just wanted to keep it “real”. Visually I knew very quickly how I wanted the wedding to look, and this became even clearer when I went to visit our venue for the first time. Spain had brought us together and we wanted to include a real taste of Spain as well as our own personalities. OUR STYLE I wanted a very fresh and unfussy look which is why I initially chose a very plain colour pallet with a traditional feel. My bridesmaids wore rich chocolate brown satin dresses, and the gorgeous pageboys wore traditional outfits which I managed to get handmade in Paris in a beautiful chocolate brown and champagne silk. Our flowers were white paired with

vibrant green foliage to help lift the more earthy colours. It wasn’t until I had pieced everything together that I realised the overall theme was actually Chocolate and Champagne... Sion absolutely loves chocolate (hence our chocolate bar), and of course Champagne is perfect for a wedding celebration! Entirely apt. THE FINISHING TOUCHES Our guests absolutely loved the caricaturist we had organised and also our Tequila Bar. I think they probably enjoyed the latter a little too much. All of the small decorative details I had enjoyed choosing came together wonderfully. From the table plan that I had made by sourcing diamante and ribbon from ebay, to the lovely birdcage for our wedding cards picked up from a local chinese bazar, to the more expensive items such as our beautiful marquee decorated with chandelier and fairy lights by FiestaSol and our stunning cake made by Sweet things by Fi which complemented everything beautifully. OUR TREASURED MOMENTS Walking into the charming La Virginia Church and seeing all of my closest friends and family there and seeing how happy they were for us, and more importantly seeing my future husband standing waiting for me. It was one of the happiest moments of my life and very emotional. We were incredibly lucky with the weather for a late October wedding. We had brilliant sunshine and blue skies for the marriage service, and then a little rain during the reception, but even this was a blessing. Thanks to the rain we had the most incredible rainbows over the venue that beat hands down any firework display that I could have organised. We really did feel very very special. What a start to married life.

Going for Gold Exquisite details and fabulous food set the tone for Frankie and Craig’s glamorous wedding THE PROPOSAL I moved to Marbella six years ago and had started working at the Marriott. I‘d arranged to meet a couple of girlfriends for a drink and when I walked in Craig was already there. We hit it off straight away and there was definitely a strong chemistry between us. We started seeing each other and things moved quite quickly. I was due to have an operation and Craig offered to move in for the aftercare, which had the effect of showing me the kind of man he was and we just went from strength to strength.

66 CONFETI

Craig had always made a point of stating that he would not get married but, as the old saying goes, all it takes is the right woman to spur a change of mind. Once a year we would spend a long weekend in Portugal, always dining in the same restaurant and, in September 2012, while we were enjoying a meal in our favourite place, he popped the question. I couldn’t have been happier. LOCATION, LOCATION As we are both Marbella residents and Craig has lived here

for over a decade we decided to get married in the city. There was a lot of red tape but it was worth it in the end. We settled on Garum Restaurant as our venue, as it is situated on the famous paseo maritimo and boasts stunning views from the terrace. The interior is strikingly minimalist, but the perfectly executed splashes of colour make it feel intimate and warm. The owner, Timo, concocted a fabulous four course menu for us, with some alternatives to suit everyone’s requirements and he also came up with dishes that were perfect for the children. Having been acquainted with Timo for some years and

knowing his fantastic reputation, I knew everything would be perfect. He didn’t disappoint; the planning and preparation, exquisite wedding food and impeccable service spoke for itself. IT’S A FAMILY AFFAIR My Dress was made in India. My parents visited the country in January and Mum called me to explain that she had found a fantastic dress maker, so I went with my gut feeling and said “go for it”, describing in great detail the style I had in mind - think Greek goddess and you will get the picture. It was a leap of faith

flew over and took charge of all the finishing touches, it was like a weight was lifted from my shoulders.

I chose a gold and white theme, as I like things to be uniform rather than left to chance. For the flowers I selected roses, lilies and foliage. Everything was co-ordinated by my elder sister, Sam Jones. She has arranged many functions so when she

Family was a key part of our wedding day. I had asked my niece to be my flower girl and my nephew the ring bearer. My younger sister is a hairdresser and makeup artist, so knowing I was in capable hands I just let her get on with it. I am not

sure how many brides would be comfortable with having no input into their hair and makeup, but I didn’t even think about it. Yes, she is that good! The ceremony itself was incredibly moving. We wanted a spiritual ceremony, which would mix emotion with laughter. Lizzie Marriage conducted it beautifully and added a lot of fun, keeping our guests entertained.

MY HIGHLIGHTS Marrying Craig of course, though the whole day was simply amazing. Everything looked fabulous, the sun shone, everybody had fun and shared lots of laughter. One of the highlights had to be when I forgot to pick up my bouquet and then it was handed to me just as the ceremony was finishing. Typical of me! CONFETI 67

A Fine Vintage Målaga based photography and videography experts, Bodakids, took their talents to the other side of the world to capture Nahir and Marco’s picturesque, laid back, Latino flavoured wedding in Venezuela.

IT STARTED WITH A KISS We started working in the same company on the same day, so I guess it was meant to be. After years of friendship and finding out how much we had in common, we fell in love. We both love good music, especially rock, we have a great appreciation of the Arts and we love to discover new places, different cultures, exotic foods - the list goes on. Our tastes are quite unconventional, so it was

68 CONFETI

pretty much guaranteed that Marco would arrange something memorable when he proposed to me. We were touring around Spain and when we got to Barcelona, Marco took me to the basilica of Santa Maria del Mar, also known as the cathedral of La Ribera, which is one of the most perfect examples of Gothic style architecture. In this breathtaking church he asked me to marry him; saying that it was an emotional experience would be an understatement.

LATINO LOVERS We wanted our wedding to be unique, very us which is why we chose Margarita Island, off the north-eastern coast of Venezuela, as the scenery is spectacular. We visited several venues, but as soon as we walked into the Chulinga Villa we fell in love. This haven of South American charm is hidden behind whitewashed walls, allowing for complete seclusion on a stretch of unspoilt coastline. The carefully planned layout and simply decorated interior offers subtle luxury whilst exuding a South American elegance. As you walk through the open-plan main house and onto the deck, you are hit with quite the buena vista. The canvas of palm-tree green stretches from left to right. The atmosphere is simply magical, the gardens, the sea the mountains, the details inside the house ... everything is perfect. We wanted our guests to feel special, feel free, feel spontaneous and we know that this villa would make this happen.

out by the floral arrangements. We opted for white furniture, with touches of black and candles at dusk to set the mood. The food was very varied to cater for everyone’s taste. We wanted different food stations so that our guests would have many alternatives - all were delicious, I have to say. Sicilian dishes, ceviche, pastas, grilled meats, seafood, salads, you name it, we had it. The buffet also meant that our guests could recharge themselves throughout the day. Given our love of music it was only natural that this should be a key part of our celebration and we were able to bring together a selection of excellent musicians. Firstly the Assembly Boheme performed their own versions of our favorite songs in a symphonic rock style with violins. Next, the Ghavana orchestra really got the party started by performing a mixture of dance music and finally it was time for top DJ, Grandpa.

DARE TO BE DIFFERENT My dress was a romantic, vintage style gown. I opted for silk, as it is very light and appropriate for the weather. My second dress was short and comfortable, allowing me to dance the night away. To continue the vintage theme, I clipped a birdcage veil to my hair; a full-on veil would have been too traditional and we are anything but that. Marco’s suit was also very retro and his bow tie blended with the colour palette of my bouquet. Our colour theme was lilac and pastels, which was also picked CONFETI 69

The Bodakids team, our photographers and videographers, certainly deserve a special mention; we were delighted with their work. They are artistic, unique, special and extremely professional. We will treasure what they did for us for the rest of our lives. SPECIAL TOUCHES The Candy Bar was one of the main talking points, as we made it fun and as personal as we could; we even managed to feature personalised M&Ms. Our cake was unique, as it was made of ‘cake pops’ (like lollipops) in chocolate and

vanilla. Our guests’ comfort was paramount so we organised fans to keep everyone cool, but my favourite wedding favour has to be the slippers for the female guests, so they could kick off their heels and dance all night. Favourite Moments The ceremony was the most important part of the day for us. We wanted to make it as personal as possible, so we chose a pastor who would perform a spiritual ceremony. It was very moving with lots of tears and I think everyone could feel the love between us. Certainly we were moved by our emotional day.

MEANT TO BE…

We were young, crazy and care free at 17 years old. We knew of each other through friends and in the few times we would bump into each other I would sometimes get a wink and a smile and he would get a little wave back. Who would have known that 17 years later, I would be married to him! Bhavesh and I met again after some years at a fitness centre and we recognised each other straight away. We started to meet up as friends and realised that we shared the same interests however our friendship drifted slowly

apart and we became quite busy in our own lives but we would call each other now and again over the years just to catch up until one day we decided to meet, enjoying each others company so greatly we began to spend more and more time together before falling completely and utterly in love. Two years later, we had been well acquainted with each other’s family and friends and we had been on a few holidays together and we were definitely ready to take the next step in our relationship. It was just a case of him popping the question. Last September we

went to Cuba and that was where Bhavesh proposed to me. We were on a tiny island off the south coast of Cuba and on our last night on the island (we were due to fly to Varadero the next day to continue our holiday), Bhavesh had booked us a table at a restaurant. When we arrived, I was surprised to see that he had arranged for us to dine in a private cabana that was beautifully decorated with candles, flowers and white curtains that were softly blowing in the breeze. During our meal, we were serenaded with beautiful Spanish love songs. At this point he told me that he did this for me

because he loved me and he just wanted to say thank you for being such an amazing girlfriend and so I still had no clue what he was about to do. It was after dinner when Bhavesh suggested that we go for a walk on the beach. As we walked towards the sea, I was holding on to him and walking with precaution as it was dark with only the moonlight to guide us, and the deck that led to the rocks above the shore had large enough gaps for my stilettos to become wedged in! When we arrived at the beach, the moonlight hit the waves that were rolling onto the sand - we just stood there in awe of the scenery. We held each other tight and reminisced about the amazing times we had been through together over all the years we had known each other. He then suddenly said, ‘Can you see that?’ I turned around to see what he was pointing at, and as I looked down, a light shone on to the rocks where there was a sign that read, ‘Marry Me?’. I then turned back around to see that Bhavesh had got down on one knee! He told me that he wanted to spend the rest of his life and more with me

morning, the blessing ceremony in the afternoon followed by cocktails and the reception party into the night. All were outdoors, the weather was amazing and all this infused with the surroundings and the ‘buzz’ our guests came with made it truly the best wedding, I myself, had ever been to, and I still can’t believe that it was my own.

We went back to our table where we finished off our champagne, when Bhavesh told me he had another surprise for me! What could possibly be better than this? I thought he may have booked us in for a spa day or he would take me shopping… No. He had booked us both in for a skydive! Fancy being proposed to and then kicked out of a helicopter at 12000 ft... romantic at first, daringly devilish to end.

I knew I wanted a traditional Hindu wedding with a twist of vintage and regal attire. Dianna from Party People and the team at Beau Rivaaaj ensured that the setting was just that and the planning was impeccable. The mandap was decorated with beautiful fabrics and hanging ornaments. It looked exquisite with traditional but subtle colours. The large pillars surrounding the amphitheatre were draped with beautiful images of Lord Ganesh. For the blessing ceremony, Dianna had stripped away the colours and left a beautiful plain white chuppah that was complemented by the surroundings of the Roman Stone amphitheatre. The ivory and soft pink flowers paired with our outfits made a perfect combination against the sunlight and the greenery.

ALL I EVER WANTED AND MORE…

The wedding planning begun almost immediately after we had returned back to the UK. I had always dreamt of an outdoors wedding, with beautiful scenery and romance. I already knew that this would be the theme throughout. We decided to marry in Spain as we both travelled there often. Spain has always been a destination close to home and close to my heart... the ambience, the people, the laidback attitude, the weather and climate.... we had to get married in Spain! I wanted a wedding with a difference and I loved the idea of our closest friends and family all coming to celebrate our wedding abroad and also enjoying a holiday at the same time. We decided to have a three day event, with the first being the mendhi night. The second day was a leisure day at the Crowne Plaza Estepona with golf and spa in the morning, a pool party in the afternoon and a dinner in the evening and the last day was our big day - with the Vedic Hindu ceremony in the

Bon Appetit Wedding Fayre Uncovered

Bravo!

Interview with Miguel Ángel Martín Bravo, Head Chef Meliá Don Pepe

Do you have a signature dish? If so what is it and why? I do not usually have a favourite dish, I love to try new things every time, although I feel a “weakness” for my land products. What ingredient do you favour for wedding menus? Freshest and seasonal ingredients always possible. Who do you draw your inspiration from and what have they done to make you the chef you are today? I always loved cooking since childhood, and my family has been closely tied to the kitchen. Fortunately, in my twenty-year career, I was fortunate to meet great chefs and while cooking with them I learned everything I know today. What style of wedding feast is your favourite and why? All weddings are different, and the challenge is to satisfy our customers, it is what motivates us. It is a real treat in this environment to make weddings in this beautiful “paradise”. Share with us a wedding cuisine secret... 74 CONFETI

Love what you do, listen to your customers, and many hours of work. What is your number one wedding ‘DON’T’? We have hosted many weddings, large and small, at the pool, by the sea, in the garden with elaborate or very simple menus, but I remember with particular fondness a wedding we did for an Arab Princess, spectacular, where the Gran Meliá Don Pepe was transformed for one night into scene of the Arabian Nights. Do you offer tastings for wedding couples? We offer a comprehensive tasting menu, so that our customers can choose between all the offers that we propose.

Table Talk

CONFETI talks to Purple Pepper Catering’s affable chef, Peter Canon about his love of Spanish fish, his innovative style and the secret to his success.

Where did your love of food stem from? Growing up I always loved food and enjoyed trying new things whenever I had the chance, so I think it is something that was just there in me from the beginning. I also take pleasure in preparing food for other people and watching them enjoy it. What is your background? I was very lucky to serve as an apprentice in London, working in five-star hotels. This enabled me to learn about all aspects of the kitchen. Following this I headed up the team as executive chef at The Goodwood Park Hotel, then as executive chef at Oakleigh Court Hotel in Windsor and finally the Manleys in Storrington. After a decade of dedicating myself to my work in the UK I decided to move with my young family to the Costa del Sol some 15 years ago and found it the ideal place to pursue my passion for outside catering. This has given me complete freedom to work on many projects covering everything from corporate events to the most elegant wedding. Do you have a signature dish? I don’t really have just one signature dish but I love to prepare beautiful meals using fish. The vast selection that we have on the Costa del Sol is simply outstanding; tuna is one of my favourites. A succulent tuna steak cooked rare and served with a chilli and garlic oil 76 CONFETI

is simply stunning; sometimes simplicity is the key. What ingredient do you favour for wedding menus? As Purple Pepper Catering always works closely with the client when creating a menu, the selection of favoured food is too vast to mention. However what we do favour is using the finest and freshest ingredients, whatever they might be at the time. Are there any ethnic food styles you favour? I would say that Asian food is a firm favourite. The way that the foods are combined creates unique and exciting flavours and again my love of fish comes into its own. I favour combinations such as the freshest prawns served with delicate ingredients such as lemongrass, coconut and the fiery bite of Birdseye red chilli. What is the most important skill for a chef? I really think the most important skills for a chef are passion, flair, great sense of taste, commitment and an orderly mind. Who has inspired you during your career? During the time that I was training in the UK there were several chefs who came into the spotlight and instigated a revolution in the way we thought about presenting and serving food and, of course, how

ingredients were combined. Marco Pierre White and Gary Rhodes were young and brought a fresh twist to the culinary world. Nouvelle Cuisine was all the rage with the Roux Brothers being instrumental in demonstrating this new style of delivering first class dishes. Share with us a wedding cuisine secret... If I tell you I’ll have to kill you! Seriously though, simplicity is our secret ingredient. What is your number one wedding DON’T? The most definite DON’T do is do not go to another catering company before talking to us at Purple Pepper Catering and Events. Do you offer tastings for wedding couples? Yes of course. Once menus have been chosen we invite the couple along for a prewedding tasting which means that they can enjoy their chosen wedding feast in a calm and relaxed atmosphere. This is great especially for the bride who often doesn’t eat much on the actual wedding day as there is so much going on all around her. How much input do you offer a couple? We have a selection of menus that we will show each couple as a starting point. However, every

wedding is individual and we work closely with each couple discussing their preferences, making sure that we note any particular favourites or dislikes and - of course - any allergies. How do you put your unique spin on a wedding menu? The Purple Pepper spin is to make sure that each and every wedding is special and bespoke; our professional and courteous team give us that extra special edge. How important is the presentation of wedding food? Presentation is all important; all our dishes are made with the finest ingredients and displayed beautifully to entice. After all, we eat with our eyes first, don’t we? If it looks great we just have to taste it.

A PIECE OF

Cake I

By Padre Peter

t is said that a confectioner in Fleet Street during the Victorian heyday received an order for a wedding cake. He wanted to do something different, and as he scratched his head he glanced out of the window. There he beheld the spire of Saint Bride’s church glistening in the sunlight. He had an inspiration! The modern tiered wedding cake was born! It’s a lovely and romantic story, but, alas, like so many lovely and romantic stories it has little or no basis in fact. The first three tiered cake appeared in 1882, and was remarkable in that it was entirely edible! It was made for the wedding of Prince Leopold, Duke of Albany. As a haemophiliac he had problems finding a wife. He contemplated marriage with Alice Liddell (she of “Alice in Wonderland” fame – he eventually became godfather to her second son). He approached others, but Queen Victoria tired of his philanderings and hitched him to Princess Helene Friederike of Waldeck-Pyrmont. It was a happy, if brief, marriage. The three tiers of their wedding cake, however, sat one upon the other. Piers only made an appearance in about 1900, and started as lengths of broomstick covered in icing. The tiers represented wealth, and only the wealthy could afford so much white sugar. When, in 1840, white

icing had been used for Victoria and Albert’s wedding cake, it immediately became known as “royal icing” (which today includes egg white. As it appeared on Victoria’s cake it was inedible.

nance of the groom over her”. One cannot imagine this custom being too prevalent today, although the thought of a baguette being broken over a bride’s head might lead to an interesting episode!

During World War II when tiered cakes were made of plaster, with a little cake in the top tier, these were also inedible!) The cake was described as “consisting of the most exquisite compounds of all the rich things with which the most expensive cakes can be composed, mingled and mixed together into delightful harmony by the most elaborate science of the confectioner”. It weighed nearly 300 pounds, and was three yards in circumference. Covered in pure white sugar, a figure of Britannia, nearly a foot in height, appeared in the act of blessing the bride and groom. Albert had a dog at his feet, Victoria two doves. It cost £100 (a housemaid, if she was lucky, earned £12 per annum).

In the middle ages in England a tower of cakes was created, over which the bride and groom kissed. It is said that this tradition was witnessed by a visiting French confectioner, who promptly returned home to create the “Croquembouche”. Alas, once again, a wedding myth! This delight had to wait until Carême in the 19th century, and is, of course, still popular at French weddings today, where profiteroles are piled on a pastry base before being enveloped in spun sugar. Such towers are again gaining fashion in the form of piled cup-cakes (which are not too far removed from the mediæval sticky buns).

This magnificent structure was the culmination of a long tradition. The Romans used barley bread to signify prosperity, and the groom would break a piece over the head of the bride to symbolise the “breaking of the bride’s virginal state and the subsequent domi-

Here in Spain the tradition of small cakes flavoured with almonds and different spices still holds sway, dating back to Moorish times. In many ways these small delicacies were far preferable to the “Bride’s Pie” which was served at English wedding breakfasts until the early 19th century. This

could contain almost anything, but it was considered the height of rudeness to refuse a piece. No doubt guests had the gravest reservations if it was known that the bride was partial to practical jokes! But it was not necessarily intended to be eaten. Pieces would be distributed for luck. Into it the bride would place a glass ring, and the maiden who found it would become the next to marry. This pie eventually developed into the “wedding cake”, but originally there were two. The maidens also benefitted from the “Groom’s cake”, a tradition that has now died out everywhere apart from the southern states of America. This cake was smaller than the bride’s, and composed of darker ingredients, including the covering which came almost exclusively to be made from chocolate. Like the original bride’s pie, it was distributed and not intended to be eaten (perhaps licked?!) Maidens would put their piece under their pillows, so that they could dream of the man whom they were to marry. (Another wedding myth?!) The bride’s cake was a traditional “plum” cake. Samuel Johnson defined a “plum” as “raisin; grape dried in the sun” and, indeed, “plum cake” (or

even “plum pudding”) has never contained plums as we know them. The earliest wedding cakes in this genre were Banbury cakes, which became popular in 1655. They tended to be rather more substantial than those cakes which we know today as “Banbury”. The first mention of such cakes is in 1586, and like all fruit cakes they were a sign of virility and fertility, thus being very popular as most happy couples wanted as many children as possible to sustain them in their old age. As sugar became more obtainable, icing appeared to denote virginity and purity, although it had to wait until 1769 for the first recipe to appear in the “Experienced English Housekeeper” by Elizabeth Raffald. Originally only the bride cut the cake, as it was her duty to distribute pieces amongst the guests to ensure fertility. As the icing became thicker, in order to support the tiers, so it became necessary for the groom to assist in this process. And in a gesture harking back to Roman times, it became necessary for the groom to ensure that his hand was over the hand of his bride as the first cut was made. He thus asserts his dominance! CUSTOM

and

PRACTICE By Padre Peter

84 CONFETI

Something old, something new, something borrowed, something blue, and a silver thruppence in her shoe.

T

his old Victorian rhyme is well known. I remember encountering silver threepenny bits as a boy, although most were in brass. These would have been most uncomfortable in a bride’s shoe, and so a “silver” sixpenny piece took their place. Like the colour blue, this practice signifies good fortune. Roman brides dressed in blue, with yellow veils. And shoes still play an important part in Turkish weddings. Guests write their names on the sole of the bride’s shoe, and after the ceremony this is carefully examined. The one most worn is said to be the next bride. This equates to “throwing the bouquet”. At one stage in England there also existed the custom of “lifting the stocking”. Female guests would invade the nuptial chamber and remove the bride’s stockings. They would then throw them at the groom, and the one who landed a stocking on his nose would be the next bride. In the 14th century it was not unheard of for the bride to be mobbed at the altar and her garter removed for a similar purpose. In Finland the bride wears a crown on her head. She is then blindfolded, and during a dance places the crown on the head of a lucky guest; who will, of course, be the next to marry. Whether this is lucky or not is, of course, debatable, but other “lucky” customs still exist. A small pouch containing a piece of bread, a sliver of wood, a bit of cloth and a small coin may be sewn into the bride’s dress to ensure a lifetime of food, shelter, clothing and money. But to finish off the rhyme, “something old” signifies continuity; “something new” signifies optimism for the future; “something borrowed” should be secured from somebody happy, on the grounds that happiness rubs off. Brides also often carry a horseshoe (usually in silvered cardboard!) This is because, so the story goes, Saint Dunstan nailed a horse-

shoe to the Devil’s hoof which caused great pain. Dunstan only agreed to remove the shoe after the Devil promised never to enter a place where a horseshoe is displayed. “Something new” is also usually taken to mean the wedding dress itself. Some dresses have a veil attached to signify modesty and virginity. Such veils tend to be going out of fashion today. In English law one cannot be married with the veil covering the face. This guards against the practice of a pretty sister courting a wealthy old gentleman, only to substitute her heavily veiled ugly sister at the altar whilst she makes off with the handsome coachman. Many Japanese brides still wear the tsuno-kakushi; a white hood that hides the horns of jealously. Viking queens worn small helmets on their heads (hopefully they took them off before climbing into bed), whilst in the Orthodox Church both bride and groom wear crowns, either metal or flowers. In Czechoslovakia these flowers are rosemary, and after the ceremony sprigs from the crown are distributed by the bridesmaids as symbols of fertility. In Moravia the couple light a beeswax candle from which the guests, in turn, light the candles that they are also carrying. As the lights spread through the

church the smell is bewitching and all evil is warded off. At one stage this was also effected by the bridesmaids wearing identical dresses to the bride. In this way any evil spirit seeking to do harm would be uncertain as to which female to approach! Perhaps the central point of any ceremony is the giving or exchange of rings. The circular shape of the ring signifies the eternal nature of love. It should be made of gold, as this metal represents beauty, purity and strength. In the Orthodox Church the rings are placed on the left hand at the betrothal, and changed to the right at the wedding itself. The custom nowadays, of course, is for an “engagement” ring to be worn on the left hand. This custom dates back to 1477, when Archduke Maximilian of Austria gave his intended bride Mary of Burgundy a whopping great diamond ring as a sign of his love. It is, however, to the ancient Egyptians that we owe the practice of wearing the ring on the third finger of the hand. They believed that the vein in this finger ran directly to the heart. They also believed that black cats brought luck, and the newlyweds would seek to gain favour from Ba’at, the goddess, by hosting black cats in their household.

It is said that cleanliness is next to godliness, and brides are meticulous in their preparation for the Great Day. Moroccan brides bathe in milk to purify themselves, and then submit themselves to a body massage with aromatic oils. This tends to beat a trip to the spa! And the bouquets that brides carry have little to do with the simple fact of their attractive appearance. They were originally carried to protect the bride against the odiferous pong of the unwashed bodies of the guests. This necessity is rarely to be found today, but the custom persists, and many other old customs linger on. The use of confetti became widespread in the Victorian era, when, under the influence of India, rice was also often used. This usage dates back to ancient times. In Wales grooms may still craft, or cause to be crafted, “love spoons” to present to their betrothed. These intricately carved wooden spoons hold a wealth of symbolism. In many African-American ceremonies the couple still leap over a broom to signify that they have jumped into their future together. Doves are often released to symbolise undying love. These should be treated with a certain degree of circumspection, as it is possible for a bird to make a forced landing and get caught in the bridal headdress. In the attempts to dislodge the bird an accident may well occur; but, hey, that’s good luck isn’t it? CONFETI 85

oast have partnered with the V&A to create a collection of stunning ball gowns inspired by the V&A’s fashion archives, available in selected flagship stores and online and ideal for a fashion-forward wedding gown or unique bridesmaid dress.

With access to the leading museum of art and design’s collections, the Coast design team have channelled the unrivalled archive into six dresses that exude the glamour of the past century. Each style echoes the silhouette and essence of the era it is inspired by, using modern twists and techniques to create something new and totally desirable.

Inspired by 1950s debutants the dresses are cleverly named; Blanche, Lottie, Phoebe, Patience, Cecily and Daphne and feature a level of corsetry, use of fabric and attention to detail usually reserved for the ateliers of a couture house. The Lottie Dress is inspired by the great couturiers of the 1950s. Exploring the incredible drape and architectural shapes of the ball gowns from this era, Lottie replicates the romantic full silhouette of this decade finished in seductive black. Inspired by the 1930’s trend of bias cutting and intricate panelling, the beautifully flattering Patience Dress remains a look that still resonates on the red carpets of today. The luxurious silk fabric creates dramatic fluid movement synonymous with the golden age of glamour. 1950s society photography provides

the inspiration behind Phoebe, a dramatic floor sweeping gown in delicate dove grey organza and the iconic silhouettes of vintage 1950s cocktail dresses have inspired the abundant soft tulle lemon layers of Daphne. The individually sewn couture beadwork and hand crafted cording on the bodice creates a show stopping dress, breath-taking in its attention to detail. Coast design director Kim Elliot revealed, “It was incredible to have access to the V&A’s amazing and inspirational collection to create the Coast Ballgown Collection. We felt truly inspired and very lucky to have this opportunity to delve into the glamorous past to create modern day glamour”. coast-stores.com
