It’s Personal. By Katherine Brook

Have you ever walked into a room and felt instantly alive? Feeding off the energy of shapes, textures and colours, all singing in perfect harmony. This is what interior designer Heidi Gubbins aims to create in every single space and project she works on.

“I like contrast. The juxtaposition of simplicity and grandeur; the infusion of something different. Just as with food or music, spaces should make you feel something you never forget.”

20

H

eidi Gubbins Interior Design studio is based in Marbella, just off the Golden Mile. Specialising in interior architecture & design for residential and commercial projects. Heidi’s award-winning boutique atelier is a breath of fresh air in a world that’s cluttered with mundane high-rises and uniform apartments. She has worked with clients from all over the world, and on a whole range of contrasting projects such as villas, restaurants, retail spaces, and boutique hotels. Offering a true point of difference, Heidi not only designs, renovates and refurbishes spaces, she also creates one-of-a-kind and limited edition pieces, produced to measure by skilled craftsmen. “Everything is focused on matching and enhancing the home or venue,” says Heidi. “When we create décor, it has to be beautiful to look at, wonderful to touch, as well as functional too, while also

encapsulating the DNA of the space and its owners”. For Heidi, the choice is easy; quality comes before quantity. She would rather dedicate herself fully to select commissions than take on too many. It is a philosophy that allows her and the team to truly immerse themselves in creating gorgeous, bespoke, decorative spaces. “The places we spend time in, be they a home, workplace or a commercial venue, should add to the quality of our lives,” says Heidi. “Design is so special because it allows us to produce something beautiful that transcends mere visual attractiveness and makes us feel good. This is the ultimate goal I strive for when designing interior and outdoor areas – creating that special spot that brings out the best in you.” Heidi delivers soulful and unique projects with the assistance of her professional in-house team, as well as her collaborations with architects in Spain and internationally.

“We make sure that every piece or collection we work with are personally sourced, unique, and made in small numbers. We attach value to quality, taste and creating decoration that has a timeless appeal and sense of style.”

21

“Our team is skilled, creative and professional, but also constantly evolving and growing,” adds Heidi. “It is this ability to be flexible and open to new influences that fuels our originality and the flow of ideas. It’s part of what makes our work so fascinating.”

“Trends detract too much from the uniqueness of each project and space to be allowed to dominate the décor, but dare to express your own style and you transcend them to make your home a true personal statement. A source of pleasure” 22

This captivating debut novel tells the story of a trio of ballerinas who met as students at the Paris Opera Ballet School. Fourteen years ago, Delphine abandoned her prestigious soloist spot at the school for a new life in St. Petersburg taking with her a secret that could upend the lives of her best friends, fellow dancers, Lindsay & Margaux. Now 36 years old, Delphine has returned to her former home and to the legendary Palais Garnier Opera House, to choreograph the ballet that will kickstart the next phase of her career, and, she hopes, finally making things right with her former friends. However, she quickly finds out that things have changed, and secrets don’t stay buried forever.

He has her favourite book, piano music and a hunky sweater which must mean he is good-looking. With the help of a friendly cab driver, she tries to find the mysterious owner whilst also researching her parents’ story and comes to realize that real life isn’t nearly as perfect as she imagined.

BIG REVEAL by Jen 3 THE Larsen An alluring novel about a girl who isn’t afraid; a discussion-provoking exploration of the mixed messages our society gives young women about their bodies and sexuality. Addie is a talented dancer; when she is accepted into the prestigious dance program of her dreams, she thinks nothing can bring her down – until she realises, she doesn’t have enough money to go. Refusing to give up, Addie and her friends decide to put on a top-secret invite-only burlesque show to raise finances. But word soon gets out and the body-shaming begins; has Addie been resisting the patriarchy, or playing right into its hands?

Right now, the algorithm is telling us you have to rap this way, you have to sound this way, but they’re not telling you how it’s supposed to feel. My algorithm is going to give you a feeling, not a sound.”

“DON’T PASS UP THE OPPORTUNITY TO LIVE AND TO LOVE.” MAHESH JADU

Fans of The Witcher series on Netflix already know that season 2 is coming out this month. How exciting! But did you know that one of the main characters, the mysterious mage named Vilgefortz, is played by Mahesh Jadu?

He is also known for playing the controversial role of Ahmad in the historical Netflix show, Marco Polo. A couple of years ago, actors of Marbella Film School - including myself - had the pleasure to learn firsthand from Mahesh himelf while he was in Marbella. Due to the darker nature of his roles, it’s only fitting that he had a lot to share about “how to play a villain”. We ended the course with a professional showreel shoot under his direction. At Marbella Film School we have been and will be hosting a series of masterclasses. If all goes well and mandates allow, we will have Mahesh Jadu back next year. In the meantime, we had a chat with him about his previous visit and upcoming plans:

30

l You’ve been to Marbella a couple of times before. How was you experience? What did you enjoy the most? Growing up, I had always wanted to visit Spain. A couple of years ago, I was working nearby and decided to do some travelling around Spain in between some work dates and was thrilled to be able to visit the school in that time. Although the first trip to Marbella was very short, the opportunity to return and spend a significant period directing local actors presented itself a year later. I came and facilitated a short course. I made many dear friends and learnt so much by workshopping scenes with the local actors in Marbella. Aside from having a fantastic time working with the school, I enjoyed the multicultural aspect of Marbella and its proximity to many beautiful Spanish cities. Oh and the beach. I am always happy if i am within earshot of the ocean.

l Have you thought about shooting a film here?

A big influence of mine, for stories, is music; and one of my most favourite genres is Flamenco. So who knows.

l What would you like to teach at Marbella Film School, once you have a chance to come back? I would perhaps explore playing with ‘Stakes’. Being able to identify and heighten the stakes in a scene and a script, infuses passion and elevates the theme. But, I’m not sure yet. I’ll have to see when I can return and what ideas I would love to explore as I get closer to the time. I’d be very happy to take suggestions from the actors in the school. I would like to work more with the crew before the shoot dates also. Last time, I directed a scene in Spanish. I would love that challenge again.

l What advice would you give to those starting out on their acting journey? Live a full life. Don’t delay an opportunity to live and to love. These are your stories which will enrich all the work you could possibly do as an actor. Read deeply. Travel broadly. And Love as fearlessly as you can. I wish I did one of those three sooner.

I’m yet to embark on my filmmaking ambitions. Though, I don’t think it’s far away at all. And I do have an idea in mind that may work well in Spain.

Here’s what one of the actors who attended Mahesh’s Villain Course had to say: “The Villain acting course with Mahesh Jadu exceeded all my expectations. The toolset and techniques we received are so valuable and immediately actionable. I watched many of the actors on the course get visibly and noticeably better under Mahesh’s guidance in a matter of days. Everyone’s acting jumped by orders of magnitude and to have that skill captured in a showreel at the end is the best way I know of to land your future roles as you will undoubtedly produce some of your best work here.

FUN FACT: Mahesh started as a student at Perth Film School, our Australian school, getting help with his very first auditions before becoming one of our masterclass teachers.

Nicole Moerland Founder of Marbella Film School

Whether you are a new actor, trying this for fun as an experience, or a seasoned professional, the depth and subtlety of Mahesh’s approach and the quality and calibre of what is taught is such incredible value for money.” Tariq E Q Amawi

Rumours have mounted over the past few weeks that Kim Kardashian has been dating the Saturday Night Live comedian, Pete Davidson, months after she filed for divorce from her husband, Kanye West. nd just like that it’s Christmas again. Back home we’re all wondering if we can top the absolute barnstormer that was Xmas 2020, when the grinchiest of grinchy last-minute bans on travel and indoor mixing put a beautiful bow round an absolute gift of a year. (Mostly) Undeterred, we’ll attempt to get you in the appropriate spirit with a motley melee of festive facts, like a Happy Shopper box of mince pies, initially sweet and appetising, yet culminating in a bitter aftertaste. Like most “facts” disseminated these days, these were nabbed straight from a quick Google search (involving the words “Christmas” and “Facts”). There was of course little to no effort at corroboration or source verification. Tell your mates.... Not sure who exactly ran the numbers on this, but apparently Santa is visiting 822 homes per second and travelling at 650 miles per hour to get the job done. I’d love to be impressed, but it’s basically just confirmed it was Alan the next door neighbour who brought our presents round when I was about 6. My brother always had his suspicions cos he saw him pull his beard down to sip some tea and he flirted a bit with my mum, but this pretty much proves it. The tradition of shoving tangerines into stockings comes from 12th Century French nuns leaving socks full of fruit and nuts hanging on poor people’s homes

38

at Christmas. Right, so it’s ok to leave socks with rotting food hanging on poor people’s houses, but when I dump a stained mattress on the verge in our cul de sac, that’s a problem??! Once again, it’s one rule for the 12th Century French nuns and another rule for the rest of us.... According to tradition, you must eat one mince pie on each of the 12 days of Christmas for good luck. If you read that as, “According to tradition, you should eat 12 mince pies on Christmas day – good luck,” that’s totally normal. Just leave space for cheese. Meanwhile, according to Oliver Cromwell, “Lord Protector” of the British Isles in the 17th Century, Christmas pudding, mince pies and other treats were the stuff of satan, banned in an effort to eradicate gluttony from a populous who couldn’t even turn to Noel’s Christmas House Party for some festive cheer. The subsequent madeup sounding, but not made-up “Plum Pudding Riots” in Kent proved people prefer not be “protected” from fun.... Today, our glorious leader outright refuses to protect us from anything so at least lessons have been learned. The UK’s Brussels sprouts industry (it’s an industry) is worth around £650 million and the area of land covered by Brussels sprouts is equivalent to 3,240 football pitches. So, just by getting rid of something everyone hates, we could put 650 million quid back in the public purse and re-wild 71,280 footballers....and that’s not including subs. Will it happen though? Of course not. Now shut up and eat your sprouts!

On Dec 25 each year, according to the tradition of Takanakuy (Quechua for “to hit each other”), residents of Chumbivilcas village, near Cuzco in Peru dance and fight one another to clear the air of old conflicts and start the new year off with a clean slate. Conversely, residents of villages in the UK practise the tradition of Monopaluy (Monopoly) where simmering resentments are merely reinforced year to year. No one dances. According to Guinness, the tallest Christmas tree ever felled was a 67m Douglas fir that was displayed in a Seattle shopping centre in 1950... just in case anyone had forgotten what an assault on the environment Christmas was. Luckily we’ve come a long way since the 1950’s.... That dead tree’s in an Amazon depot now. According to Facebook (sorry, Meta), Dec 25th is the day of the year which records the least number of break-ups, implying the secret to a solid relationship is substantial alcohol consumption, excessive cheese, better than average television, cosy socks and having family close by.

they’re getting away with in London, you can see why Boris getting his pants on the right way round one morning is evidence the government is doing a “good job”. Thanks to an extremely successful marketing campaign 40-odd years back, it’s become tradition for millions of Japanese families to head to KFC for an X-mas dinner “barrel”.... Because chicken is a perfect substitute for turkey and a brightly lit, homogenized fried food mega-chain with uncomfortable seating, sticky tables and poorly-paid, homesick staff is a perfect substitute for chestnuts roasting on an open fire. Finally, they say doing your Christmas shopping early is a good way to avoid the crowds. That’s bollocks - I’ve just been out a whole year early to prepare for Christmas 2022 and it’s just as busy as ever....

Data also shows September is the most popular time of the year for births in America. Trace that back nine months and you’ll find a record number of people getting jiggy around Christmas. That makes sense given the substantial alcohol consumption, but when you also consider the excessive cheese, better than average television, close presence of both family and socks, serious questions need answering. For the official classification of a “white” Christmas, a single snowflake need be observed to land on the roof of London’s Met Office in the 24 hours of December 25th. Hardly enough to warrant buying a sledge is it? If that’s the kind of hyperbole

ou don’t need to venture to Sierra Nevada for the après-ski experience with the return of Marbella’s most anticipated winter pop up - the La Sala Ski Lodge.

40

It’s the most wonderful time of the year and there are few venues who do Christms like La Sala.

While skiing might be fun, the best part about gallivanting off to the slopes is that wintery indulgence, après ski. However, it’s not always possible to drop everything and head off to the nearest ski resort, so thankfully, La Sala have the answer. Back for its fifth year, La Sala will be transformed again into a wintery spectacular. The Ski Lodge is the ultimate party venue making it one of the coast’s top spots for a festive gathering. So if you’re pining for that Alpine life right now, head down to La Sala faster than a pro on a black run.

To keep the icy chills at bay, the Ski Lodge offers an abundance of delights: mulled wine, hot spiced cider and mugs of steaming hot chocolate. The French Alps Cognac, Coffee & Fresh Cream should help produce some fresh-off-the-slopes rosy cheeks while the Cranberry Mule Spiced Rum, Ginger Ale & Cranberry Juice is guaranteed to get your Christmas party started.

Returning this month, the alfresco pop up transports you into a unique festive experience. Snow tipped skis, an adorable life sized reindeer and twinkling fairy lights set the tone as you enter this winter wonderland. Enjoy a hot toddy in the instagram worthy cable car, bringing the perfect touch of #slopelife to Puerto Banús. The towering Christmas tree, heated terrace and thick woolly blankets allow for the full hygge experience. Ah, relaaax!

The Ski Lodge is available for private hire and group requests. A member of the La Sala team would be happy to talk through the arrangements. Christmas parties can be organised with exclusive access to the Ski Lodge, followed by a sumptuous three course Christmas meal with all the trimmings. A variety of options are available to please every palate. Finish off the night by rocking around the Christmas tree with a little help from the live entertainment.

Let’s not forget the little ones. Santa will be spreading a whole lot of holiday spirit and winter merriment throughout December. There will be a selection of meet and greet sessions where children can get up close and personal with the big man himself.

The towering Christmas tree, heated terrace and thick woolly blankets allow for the full hygge experience. Ah, relaaax!

It’s the most wonderful time of the year and there are few venues who do Christms like La Sala. Best of all, you don’t even need to slide down a mountain to earn it!

FEEL-GOOD FACTOR

GINGER BREAD RECIPE WITH CBD INFUSED ICING My childrens favourite thing at Christmas, (apart from the presents of course,) is Aunty Sharon’s famous Ginger Bread house, which gets more extravagant each year with its candy sugared windows and licorice roof. Here is my easy bake twist on the classic recipe … INGREDIENTS 175g dark muscovado sugar 85g golden syrup 100g butter 350g plain flour, plus extra for dusting 1 tsp bicarbonate of soda 1 tbsp ground ginger 1 tsp ground cinnamon 1 egg, beaten

GIVE YOUR GUESTS THE GIGGLES AS YOU PREPARE THE CBD NERO SHOTS CBD is a great tool to help alleviate stress, as it works with our receptors to help us keep calm and remain balanced. It does this by interacting with our Endocannabinoid system and although most of us love Christmas it is sometimes challenging. In order to keep the arguing at bay and ensure good spirits are in the air, I can recommend this to any evening menu.

NERO VODKA SHOT The CBD Nero Shot is an absolute explosion for the senses and a twist on the classic shot. The earthy flavour of the Elite CBD tincture when hit with the smooth vodka will really get the party season started.

T0 Decorate 300g Icing Sugar and water 10 DROPS OF CBD METHOD

WHEN IN DOUBT

STEP 1Melt the sugar, golden syrup and butter in a saucepan, then bubble for 1-2 mins. Leave to cool for about 10 mins.

JUST GO OUT!

STEP 2 Tip the flour, bicarbonate of soda and spices into a large bowl. Add the warm syrup mixture and the egg, stir everything together, then gently knead in the bowl until smooth and streak-free. The dough will firm up once cooled. Wrap in cling film and chill for at least 30 mins. STEP 3 Remove the dough from the fridge, leave at room temperature until softened. Heat the oven to 200C/180C fan/gas 6 and line two baking trays with baking parchment.

Do not beat yourself up if you cannot bare the thought of entertaining indoors. Sometimes it makes sense to soak up the festive spirit and go out instead! One of my favourite venues is the The Monkey Club at the Puente Romano. They will take care of everything and that includes the CBD! The Mary Jane has an exquisite taste, served in a bong shaped glass. It just elevates your mind to a new level.

STEP 4 Roll out the dough to the thickness of a £1 coin, then cut out gingerbread people with a cutter. Re-roll the excess dough and keep cutting until it’s all used up. STEP 5 Lift the biscuits onto the trays and bake for 10-12 mins, swapping the trays over halfway through cooking. Leave to cool on the trays for 5 mins, then transfer to a wire rack to cool completely. Use the icing to decorate the biscuits as you wish, and stick on chocolate or sweets for buttons. Leave to dry for 1-2 hrs. Will keep for up to three days in an airtight container. The Mary Jane by fabulous Monkey Club’s mixologyst Don Diego

How to have Festive Fun

without Piling on the Pounds

Now, it won’t have escaped your notice that it’s that time of year again, and after the last couple of Christmases it’s no surprise everyone is getting in on the festive active early. Back over in the UK we saw mince pies and Christmas puddings on the shelves in September. By the time you’re reading this we’ll be in the final run up to Christmas and delicious temptations will be everywhere. So, we thought it would be useful to give you some guidance on enjoying the festive period without getting the gift no one wants - a larger waistline… The popular myth is that the average person piles on five to seven pounds of weight over the festive holidays, but a more scientific approach found that in fact the average weight gain was a far more negligible pound, give or take. What tends to happen is that combination of rich foods we don’t normally eat, alcohol and far too much sugar leaves us feeling bloated and out of sorts as our digestion and insulin levels are disrupted.

Sugar is high in calories, highly addictive (once we have some we crave more) and consuming even moderate amounts regularly can lead to you becoming more insulin resistant (meaning you’re more prone to laying down body fat), and it’s inflammatory in the body. The problem is, it’s in everything, particularly our festive food and drink. One example are the festive drinks big coffee chains offer. They’re delicious, but some have more calories than a portion of

FEEL-GOOD FACTOR

Christmas pudding! As for the sugar… the Starbuck’s Toffee Nut and Egg Nog lattes contain a whopping 32 grams each, that’s around 8 teaspoons and already over your total daily recommended allowance.

SO, TIP ONE IS TO CHECK THE SUGAR IN YOUR FOOD, AIM TO MINIMISE IT, AND KEEP THESE FESTIVE HOT BEVERAGES TO A MINIMUM. As a guide anything over 21.5% sugar is considered a high sugar food, anything less than 5% is low sugar, and we should aim not to consume more than around 24 grams a day total for women and 36 grams a day for men. Let’s talk about the obvious festive treat, booze. A large proportion of most alcoholic drinks is sugar, mixers too. Alcohol also disrupts our metabolism as our body favours metabolising the alcohol as a priority over food. Aside from that the alcohol also makes us crave salty and sugary carbohydrates, during drinking (as it stimulates our hunger hormone grehlin (I always refer to it as the hunger gremlin!) and when we’re recovering the next day. With that in mind aim for beverages lower in sugar: dry white wines, dry sparkling wines, clear spirits with diet tonic or soda water with a squeeze of lime all have less calories and less sugar than beers and cocktails. There are also now some great low and no alcohol spirits on the market, which give you the taste without the downsides. Of course cerveza sin is available everywhere too. Another tip is to moderate your eating on the days when you’re not celebrating. A Christmas morning breakfast, followed by traditional lunch, plus snacks, drinks, chocolates and left overs is going to put you in a massive calorie surplus for the day. Rebalance by dropping your calories the day before and after so that your lessening the impact of that overindulgence on your waist line. The penultimate tip is this: don’t neglect your movement. It’s so easy to sit around during this time but we’re fortunate to live in this wonderful climate. Get out and go for walks, if you’re daring enough take a swim, if you’re into the gym, do some short workouts. You’ll feel lots better for it and if you do let yourself sit around, you could well add more than that average pound.

A final word, remember to enjoy yourself, It,s only once a year after all.

Merry Christmas!

TopTips Watch the sugar Moderate alcohol and try low and no alcohol alternatives Balance your calories out by moderating either side of splurge days Get outside and move your body

Have fun!

Lucy Barnes of Lucy Diamonds has launched her eponymous jewellery boutique with the sole aim of combining her two main loves in life: jewellery and people. Her online brand combines all of her industry knowledge from over two decades of working as a the head buyer for the renowned family business, Anthonys Diamonds.

L

ucy fell in love with the world of jewellery at a young age, growing up around her fathers shop located in the famous Lanes shopping area in Brighton city centre, well known for antiques and jewellery. What started out as a childhood interest, evolved into an adulthood passion for innovative and exciting jewellery design.

“The right jewellery has the power to transform the look and feel of your entire outfit and is an expression of your individuality...” - Lucy Barnes

‘From my earliest days I have been intrigued by all aspects of jewellery, which lead to me studying gemmology in Hatton Garden, the historic gem and jewellery quarter.

Lucy then spent time traveling throughout Europe, Asia and the United States which in turn enables her to offer competitive prices, by drawing on a large network of diamond and gem dealers worldwide.

Diamonds are forever ‘I truly believe that diamonds capture a moment in time; in hundreds of years the stories they tell will outlive us all. Jewellery is for life.’ Lucy provides her customers with a unique experience through one of life’s most emotional journeys. ‘I achieve real pleasure from helping people realise their dreams, seeing the face of a fiancée as her eyes light up when she sees the diamond ring she is to wear for the rest or her life.’

With a knack for blending modernity and timelessness, her mission is to source jewellery that generations of clients will wear and adore. ‘I believe that the right jewellery has the power to transform the look and feel of your entire outfit and mood. It is an expression of your individuality. Your jewellery choice is a reflection of your personality. Thats why I select styles to suit the varying personalities of my customers. I pride myself on staying ahead of the trends, so I buy with an eye on the fashion, celebrity and jewellery markets to spot any emerging trends. This is why my clients continue to return to me. LISTINGS

The Mojo gents are back. And this time they’ve got an offer that’s hard to resist - how does 25% off your next listing fee sound?

P

eople can often be put off selling their property, especially in Spain. There’s mountains of paperwork, a lot of protocols, and multiple parties who have to be involved: selling agencies, listing agencies, and of course… lawyers there’s no escaping lawyers in Spain. Then add the cost of 21% IVA on top and it’s enough to make anyone rethink their next real estate move. “There’s very little that’s simple about the property market in Spain,” says Per. “There is a lot of wrong information out there as well as misguiding people in the buying & selling process - not to mention illegal builds that seem to crop up unexpectedly. “We created this new model to ‘rock the coast’, so to speak. We want to help our clients, show them it can be done in a seamless way where all parties benefit.”

It’s all about your mojo!

68

Mojo takes the entire listing process in-house, thanks to the ‘House of Mojo’, which offers a 360° approach to real estate. This is also why they can offer such a brilliant discount on the listing fee, because it’s technically one company - not three or four, as is common when listing properties.

To help manage this process, the boys have brought in Tristan van Huet. He’s broken the listing process down into five simple steps: “First we determine if the property is Mojo approved, this might sound a bit snobby, but we

Keep it Real

know exactly what our buyers are looking for. Then, we have to agree with the vendor on the asking price of course. The best way to get an honest price is to have an Independent bank valuation done, as this will give a true reflection of the market and mortgage options for the buyers.” he says. “Then there’s the signing of the listing agreement. Once this is done, the fun really begins. We’ll take a 3D video of the property using Matterport technology. This will create a dollhouse, so people can virtually fly through the property from anywhere in the world. In addition, we will do a walk-through video which we post on our

YouTube channel and send directly to our clients to give them the most realistic experience often including our personal comments in their own language in order to give the property the best chance to be sold online. The fourth step is to upload the listing onto the Multiple Listing System (MLS) and promote on all social media platforms. Finally, lawyers. They have a huge part to play in the sale of any property, but using our in-house lawyers, we can move things along much faster than usual.” “Our 360° approach means we can be that much more efficient,” adds Per. “And that’s why we get things done faster, better, cheaper.”

So, if you’ve been sitting on letting your property for a while, maybe it’s time to put your trust in the Mojo boys and their brilliant team. The Costa del Sol is bursting with new developments, and more and more people are investing in the popular sunny coastal towns every single day.

Meet Tristan Van Huet, Sales and Listing Agent at Mojo Estates. Tristan is Dutch and living on the Costa del Sol for more than 10 years with his wife and 2 sons. During these years he has been building, buying, renting out and selling villas and apartments from Benalmádena to Marbella and thanks to his previous role as sales director selling luxury yachts and worldwide yacht charters he has developed his skills to help connecting vendors with buyers and finding the perfect match. Tristan will be able to perfectly serve all listings in the latest developments from Benalmádena to Marbella. Please contact Tristan if you wish to sell your property through Mojo Estates. He will be happy to help!

INING In Style

WITH OMEO

Olivia O. gives us her expert advice on how to choose the perfect dining table for your space.

2

CONSIDER YOUR NEEDS BEFORE SETTLING ON SHAPE Everything happens at the dining table: eating, working, talking, doing homework, catching up with friends, love and more…. No other piece of furniture knows you better. As an interior designer I always recommend my clients to consider some core factors when choosing a dining table. A good table should last a lifetime. For me, the best dining tables get better with age and use and are made from

materials that do just that. The number one rule: Your dining table has to fit your dining area as well as your own style. “A dining table is a deceptively large piece of furniture, and you need to account for space around it, to. We always recommend three feet of breathing room on all sides — and more is better — to comfortably sit in a chair and move around the space, therefore OMEO always offers a range of bespoke dining chairs that will perfectly fit each space”, says Olivia O.

OMEO’S FAVOURITE FIVE 1. The Omeo Table “We have this lovely very sculptural dark rectangular table with inserted porcelain tiles in a black marble finish. Porcelain is much more resistant while marble easily gets damaged and stained so this table is just perfect for spilling wine and all those crazy family dinners”. 2 & 3. Natural Materials I almost always settle for our Brutal Beauty Table. For this collection, OMEO worked with wood, copper

and gold to create a series of pieces that combine harmony through intersection. “I just feel that it gives such warmth as well as personal style to any outdoor space. I tend to like either a very sculptural dining table with tons of presence or a vintage table that is approachable and casual. I love the rescue of old-growth woods that have outlived their time and to reimagine them as modern furnishings for a next generation to enjoy. Our OD Table (2) does just that.” 4. Make it Personal “I always name the homes I create specific names that represent them. That’s also how I started designing unique pieces for each house.” The purpose of the OMEO Signature Collection is to offer a tailor-made

service. By choosing bespoke products, a space can be more individual and creative. For this specific line of tables, clients can choose any initials they prefer. 5. Elegant Lines “For the Marbella Modern family life I really prefer a square or rectangular table. I always go back to my roots of designing something elegant with simple lines in black & white that does not feel too precious. I love our OMEO Elegant Lines table. It has the most beautiful simple white table top. Simple is often times harder to find than you would think.” OMEO Design Interiors & Bespoke Furniture www.omeodesign.com

Iconic Furniture & Lighting

KEEP IT REAL

Vista Lago Residences is a designled community of 18 villas with some of the most iconic pieces of furniture we have ever seen in residential projects. Great furniture, whether ultra-modern or classical in style, will always stand the test of time. Article by Vivion O’Kelly & Anastasia Sukhanova. Images courtesy of BRIGHT.

T

o fully appreciate furniture, appreciate it by its absence. Take it all outside and walk around your empty house, because you will certainly notice that it has now become just that: a house rather than a home. How you choose to furnish your home says everything about you, and you will feel at home only if the furniture and fittings you have chosen can live with you in perfect harmony. In the unique Vistas Lago Residences, each of the 18 luxury villas has already been furnished. To whose taste will not be known until each resident moves in and decides whether to keep it all, keep part of it or start from scratch, as BRIGHT has taken the liberty of suggesting what might be suitable for each of the villas, all different in design, inside and out. Through the UDesign interior design team, they have chosen the very best of what is currently on the market and off it – some of the pieces have been custom made by UDesign themselves. Given the extreme high quality of all other aspects of Vista Lago Residences, each piece is either designer furniture or made by UDesign. This includes all fixtures, fittings and lighting, and the only commonality they share is their high level of suitability and creativity. It may be comforting to believe that we are all fully capable of deciding what and what not we like, but that is not exactly the issue. The real question is: do we know enough about interior design and market availability to choose the furniture that will respond most accurately to what we like? Perhaps, or perhaps not. In any case, BRIGHT is taking no chances, and offers suggestions as only top professionals know how. The complete range of suppliers is too extensive to write about here, but we have taken five of the most iconic pieces as samples of what is on offer in Vista Lago.

The Etcetera Easy Chair by Artilleriet Sometimes a piece of furniture is indistinguishable from a work of art, and looking at the iconic Etcetera Easy Chair, one can easily understand why. Its sinuous shape and ruby-red colour offsets the neutral tones surrounding it, providing just enough contrast to make all the tones and colours work in harmony against the deep blue colours on the horizon. The concept was created by Jan Ekselius back in the 1970s, while a student at the Royal College of Art in London, and it has become, in the meantime, one of the most recognisable easy chairs of our day. It was relaunched in recent years as part of a collaboration with the Swedish design boutique Artilleriet.

KEEP IT REAL

The Tracer Loop Lamp by Luke Lamp Co Simplicity of design can be complicated: the natural tendency is to elaborate, but the Tracer Loop Lamp, designed by Luke Kelly, performs its function with simple aplomb. A rope loosely strung along a horizontal pole hung from the ceiling. Simplicity was needed here, because one more design element in the overall picture would have been one too many. The designer was inspired to move into lighting design when he stumbled across some industrial light fixtures in an abandoned railway yard in New Hampshire, and his Luke Lamp Company now produces some of the most creative lighting systems in the world. The Vista Lago resident who finds this in his new home will very likely keep it, however adventurous or conservative he or she may be.

Utrecht Armchair by Cassina Neoplasticism is an art theory arising from the De Stijl movement in the Netherlands at the beginning of the 20th century, characterised by a reduction of expression to the essentials of form and colour. The Utrecht Armchair is a classic example of this rational approach to design, with a juxtaposition of right angles and the soft texture of the upholstery creating a statement piece of furniture. It is equally as perfect for the same space as the Etcetera Easy Chair, but will probably be chosen by a new owner whose sense of adventure runs in other directions. The modern-day Utrecht Armchair is a product of the historic Italian company Cassina.

The Euphonious Table by UDesign

The Bubble Chair by Eero Aarni We’ve all seen it before, or imitations of it, in films, stage sets or design fairs, but owning an original, in the right place, is a privilege restricted to relatively few of us. The Bubble Chair, younger sister of the earlier Ball Chair designed in 1963, has become one of the furniture icons of the 20th century. It was created by Finnish interior designer Eero Aarni, using moulded acrylic to form a perfect sphere hung from the ceiling. Once described by the New York Times as “one of the most comfortable forms to hold the human body”, the Bubble Chair recently celebrated half a century, having not just remained an icon of modern interior design but retaining its futuristic look.

As the name suggests (to those of us with a dictionary at hand), the Euphonious Table is a masterpiece of minimalist contemporary furniture design, almost melodic in its simplicity. Along with its accompanying chairs, also created by UDesign, it makes for a visual orchestral piece that is perfect for its spare setting. UDesign began making their own furniture when they failed to find exactly what they wanted on the open market, and have now established themselves as furniture designers on par with the best in the business. This table, set with its chairs in the half-terraced dining room of a Vista Lago villa, seems to hover over the floor despite a column-like base. It is made of KRION™, a new generation solid surface material that is warm to the touch and similar to natural stone.

Furniture, in general, comes and goes out of fashion, but some furniture, like these iconic pieces, stand the test of time. If well designed and built of durable materials, a piece of good furniture will be loved and handed down to the next generation.

Vista Lago Residences, developed by BRIGHT, comprises 18 design-led sustainable villas with exceptional views across the Mediterranean to Gibraltar and Africa beyond. For more information visit vistalago.es or call the Sales Team directly on (+34) 648 981 111

Olive Tree Villa: SMALL IS BEAUTIFUL A tree is a tree is a tree, but sometimes a tree means a lot more than just that. In this case, the tree is the inspiration for the entire villa. Text by Vivion O’Kelly. Images courtesy of UDesign.

92

Home Couture

93

Home Couture

Since time immemorial, the olive tree has been the symbol of the Mediterranean. Its origins go back many millions of years, being first cultivated some seven centuries ago in the Mediterranean region. It has long been considered sacred and holy, its branch having been a symbol of abundance, glory and peace. If you want an ancient olive tree in your garden, or in this case, inside your home, you could plant one there and wait a few hundred years.

You could also find one already there and build around it, which is exactly what UDesign did in designing their unique Olive Tree Villa. They looked at the plot and saw the concept immediately: the magnificent tree would not only remain standing but would become the entire focus of their design. The result is indeed unique, somewhat different architecturally from the usual UDesign villa in that it features a traditional Mediterranean sloped roof, and smaller than we have come to expect from this luxury-villa design team. Clearly, in the Olive Tree Villa, the tree comes first and all other design elements are subject to it.

94

Home Couture

95

Home Couture

The fairly simple and deceptively large layout is an open-plan living area with double height ceilings on one side and the rest of the house on the other, with the olive tree in the centre and a large, cantilevered canopy sheltering the expanse of terraced area with the pool in front. Partly sheltering might be a more accurate description, given the slatted design overhead that allows the sunshine to filter through and the open section on one side to take full advantage of the sun. As the light tones normally associated with contemporary minimalist architecture have already been broken by the colour of the traditional Mediterranean tiles on the sloped roof, the pool has also been designed in dark stone on the outside, contrasting beautifully with the whites in the terrace and the steps on both sides.

96

Home Couture

Looking at it from a distance, one could be forgiven for believing that this villa was here forever; at least, for a very long time.

That some architect, perhaps, had purchased an old country house and replaced the vinecovered front patio with a more solid, minimalist structure, and added an infinity pool. On closer inspection, however, it becomes abundantly clear that the entire villa was designed that way from the start, to create a work of architecture that combines minimal contemporary with rustic Mediterranean and where nature plays an essential part.

97

Home Couture

The surprise would be seeing how the inside and outside have been seamlessly linked by floor-to-ceiling glass walls and a floor plan that is oblivious to the very concept of strict delineation of structure, and the shock would be to see the ancient olive tree occupying pride of place inside the main structure. There it stands in a rough-grass garden of its own, surrounded on three sides by the villa, visible from almost everywhere within and framed against the mountains and the sky by the tall window surrounds from different perspectives inside the house. Illuminated at night, its supposedly magical qualities begin to seem believable.

Illuminated at night or seen against the light of day, there is simply no escaping it. The villa may be comparatively small, at 265 square metres of built space, but another surprise on entering this villa is just how big it appears. Open plan with low furniture, wide expanses of glass providing uninterrupted views of the outside and the surrounding countryside, spot colours in the cushions and some seats to reflect the vibrant colouring of the abstract painting on one side of the kitchen area, just enough contrast of dark and light on the floor and across the fireplace to carry the eye comfortably around this open area: every detail of this villa has been designed or chosen to complement the whole.

98

The overall result, as we see in the accompanying pictures, is a stunning interior that belies its true floor measurements.

Home Couture

The kitchen is cleverly camouflaged as a kind of discreet cocktail bar with comfortable high stools against a stone countertop, and one needs to look closer to see that it is, indeed, a kitchen, complete with all that is needed these days to define it as such. There is also, of course, a dining area outside, with its own barbeque, washingup and storage facilities. Three double bedroom suites complete the basic specifications. The surface of the dark swimming pool is almost perfectly level with the patio floor that surrounds it and stays level all the way into the interior of the house. This allows for beautiful reflections on a calm day, and it also binds the pool surface into the fabric of the house, visually extending its overall floor size right to the outer edges of the pool.

The Olive Tree Villa conforms to all the requisites of the UDesign team of architects (well beyond the demands of current building regulations) regarding sustainability, use of natural materials throughout, heating, cooling, ventilation and energy conservation, making this a home that will be extremely comfortable to live in and easy to maintain. But above all, this is a home with a unique heart of its own, and that is the grand old olive tree that inspired it. Architecture & Interior Design by UDesign: udesign.es

emember when the pandemic first hit and suddenly you couldn’t get loo roll in Aldi? Asda were out. Tesco and Sainsbury had none. You couldn’t even find it in Marks’. Didn’t matter if you marched into Harrods....or had your butler do so. The stuff was gold dust, hoarded ironically enough by the same selfish pricks who ended up constipated from all the pasta they’d nabbed off the shelves before the pensioners could get to it. Well, unfortunately the toilet paper shortage was just the tip of the errr.. arseberg. We’re currently witnessing a global paper shortage. As in, all paper. As anyone who’s used the money from the nights out they haven’t had, the commuting they haven’t done and the holidays they haven’t been on for two years to do some home improvements could tell you, the price of wood has skyrocketed. This is due to a lack of availability and production thanks to good old ‘rona. Those same supply issues affect paper production as it attempts to bounce back from the brink, with the added wrinkle that paper mills were already closing left, right and centre pre-pandemic as global shifts in demand saw more people watching funny cat videos than reading books or newspapers, whilst paper had been largely supplanted by plastic because, well, “FUCK dolphins and stuff.”

100

As paper mills shut, people who fixed machines in paper mills or delivered lumber to paper mills or drove forklifts in paper mills were forced to either retrain or face a life on the dole, attempting to get the cat to do something funny on camera. The printers who relied on the paper mills for supply had to look further afield for their product, increasing their cost and lowering their margins. The publishers and businesses who couldn’t stomach the subsequent extra costs at the printers went bust or shut up shop, using what little money they had left to buy “classically trained cats” from some of the hundreds of uncertified breeders popping up. Before you knew it, the whole world was watching cat videos on a big pile of dead dolphins whilst a confused three year old tried repeatedly to scroll down on a dogeared old picture book... As it stands, print media is on its knees, the future uncertain, but all signs pointing to... there being no signs cos when the paper ran out, the inkmakers then called it quits and so the sign-makers decided to just stay in bed and eat icecream straight from a plastic tub.

Currently, fulfilment delays caused by pandemic-related labour and product shortages in many sectors are only exacerbated by covidera rules and regulations, whilst the world experiences a knock-on shipping container shortage which has seen international export fess explode. Shipping from Asia now costs around three times what it did before Asia’s most unwanted export hit the big time, yet the world’s left itself largely reliant on cheaply produced Asian goods, ignoring for decades the development of homegrown manufacturing infrastructure and personnel training to the point where soon even classically trained cats won’t be able to afford the Chinese-made selfie sticks and GoPros they need to keep their owners in Prada handbags (Made in China), Nike

Forcefully ending our reliance on cheap foreign imports and novelty tat could eventually reduce waste markedly, improving product quality whilst creating skilled jobs at home. trainers (Made in China), iPhone 13’s (Made in China) and Chinese takeaways (Made in Sidcup). It’s all a little worryingly uncertain / totally fucking predictable when you consider how monumentally we seem to be facepalming of late. On the face of it, forcefully ending our reliance on cheap foreign imports and novelty tat could eventually reduce waste markedly, improving product quality whilst creating skilled jobs at home. Similarly, a global reduction in paper usage might actually give the rapidly disappearing rainforests a chance to regroup and save us from our own climatepillaging ways but let’s face it, less paper just means more plastic. We haven’t got our shit together enough to spin a good hand out of this one. At least not in the short term. The reality is Boris will probably have a massive bonfire in London to prove there’s no shortage of wood and he’ll invite the whole country along via plastic flyers delivered to every door at a cost

of £37 billion and he’ll come down on his little zip-line, waving plastic Union Jack flags imported from China at great expense and we’ll laugh at what a fucking bell-end he is but also how much we kind of love and completely, unreservedly trust him to do right by us (just not with our wife) and as Status Quo, playing atop a Union Jack emblazoned, Farage-driven barge on the Thames bring us all to a very British frenzy, we’ll burn the last of the books in the street to prove there’s no shortage of paper and then all go home for a lovely cup of tea. In the morning we won’t read about it in the papers that there aren’t, but we’ll secretly wonder if we could have done things differently.... and also where our wife disappeared to last night. Jumping forward a decade, I’d like to think the invaluable service my articles provided when toilet paper first became scarce would buy me some status in the practically paperless post-apocalyptic wasteland now ruled by marauding gangs of late night newsagents already comfortable charging three quid for two rolls of

nanometer-thick single ply long before Covid hit, but the reality is I’d be one of the first strung up for crimes against our former humanity. It wouldn’t matter how much I claimed I’d recycled or that i’d taught my son to blow his nose with one sheet (true that), all anyone ten years from now wiping their arse on tumble-weeds and feral cats is going to remember is that I was once responsible for tens of thousands of sheets of A4 squandered on drunk animals, Steven Seagal vs. cheese and Alan Titchmarsh calling a geranium a slag. Or maybe they won’t. Maybe nobody’s been reading this shit all along, which just makes it all the more tragic. For three years I’ve been pissing in the wind and soon there won’t even be any bog roll left to wipe it off my shoes. Happy Christmas. Hopefully see you in the new year, but if this is the last you hear from me.... ….i’ve gone to buy a cat.

CELEBRATING TWO DECADES OF CENACULO The Cenaculo Golf Tournament, created and organised by Augustin Espada Haro of Haro Rent a Car, celebrated its 20th anniversary last month. Choosing Real Club de Golf Pedrena in the picturesque city of Santander. This esteemed course was where Spanish golfing royalty Seve Ballesteros learned to play the game he went on to dominate for many decades. Severiano’s brother Manolo (pictured here top right with La Sala owner Ian Radford) welcomed the players and shared some magical memories.

Royal seal of approval at las Brisas golf

Society Marbella were invited to sample the new menu at the prestigious Real Club de Golf Las Brisas restaurant. Featuring both classic and contemporary dishes with a strong allegiance to local produce, we enjoyed a complete dining experience on the delightful terrace setting, a space that encourages diners to relax and unwind, spending hours with family and friends whilst enjoying outstanding food.

R

eal Club de Golf aspires to be the club of choice for those who appreciate an exceptional golfing experience in a relaxing social environment. Their aim is provide excellent service, well maintained facilities, valet parking, superb all day dining and a variety of social events and recreational activities for the benefit of their members and their guests. Perfectly complementing the design of the golf course is the harmonious landscaping created by Englishman Gerald Huggan. Much like a botanical garden, plants and trees from all the continents of the world fill the course with imagination and colour. Though it may run contrary to the historical norm of food-and-beverage offerings being more amenity than necessity, Las Brisas have bucked the trend. They have the best golf product in the area and now under new management, they have the restaurant to match.

COSTA CUISINE

The refined and creative cuisine is inspired by the seasons, the Andalucian land and local products, and is matched with the most beautiful local and vintage wines, which is all enhanced on the terrace by the sweeping views over the impressive eighteenth hole. Guests will keep coming back for renditions of intriguingly seasoned crispy calamari, creamy burrata, fragrant tuna tartar and a pill pill bursting with sweet smoky garlic. Meanwhile, The Scandinavian Corner includes a range of traditional fish and meat dishes – the fried herring with mashed potatoes, parsley sauce and lingonberry compote, is a real saucy, silky number. For mains, the selection of dishes are a triumph of careful composition and texture. Generously dressed braised lamb shank and fresh asparagus tower over a base of cherry tomatoes, dauphinoise potatoes and seasonal vegetables. The miso and sake marinated oven baked cod, slowly cooked in its own juices, is silky on the inside, charred on the outside.

Weekly creative cuisine menus that are both fresh and ever-evolving are also available, skilfully prepared by their culinary team using only top-quality ingredients The desserts showed inventiveness, imagination and attention to detail. A chocolate coulant was nicely paired with a scoop of pistachio ice cream and licorice custard. Also pray that they’re

serving their drool-inducing Souffle ‘Grand Marnier.’ It was perfection. Sigh. From long family dinners to romantic date nights and large gatherings with friends, you will find yourself returning to this exceptional restaurant again and again! realclubdegolflasbrisas.com

Christmas veggie-tables a n i t t e B with Christmas is all about quality time and quality food. But it can be a tricky time to be vegan and or have dietary requirements and that’s not to mention the potential minefield of relatives upset that you won’t be trying their “famous” Christmas dish!

Bettina, our resident foodie, offers her insider knowledge on plant based cuisine and takes us on a culinary journey as she travels the world in search of gastronomic inspiration.

Likewise, if you’re not a vegan but you’ve got a plant-based pal coming over for the big meal, it can be quite the challenge. If you’ve never catered for a vegan before, save your overwhelmed googling and have a little scroll over my top tips for the Merriest vegan Christmas including some exclusive recipes from my book “Celebrate” that just happens to have a whole Christas Chapter.

ALL THE SIDES: Vegans are used to living off sides after years of only being able to order off the “starters” and “sides” sections on the menu. So if in doubt, serve ’em what they know with some great veggie sides of mash/ potatoes, veggie dishes and more. DON’T LABEL DISHES: Cook amazing veggie dishes that everyone can enjoy without the unnecessary naming. Sometimes good food is just that. Good ingredients cooked well, without having to be labelled vegan/veggie. CLASSICS THAT ALWAYS WORK: It can feel tempting to slip into full force with Christmas flavours Cool spice here, winter berries there. And why not? If there’s one time a year to go all out, now’s the time. But, don’t forget

118

what works and is popular. All year classics like meze boards filled with Mediterranean flavours such as olives and soft, warm bread can be the happiest and fastest way to please both vegans and meat-eaters alike. COMMUNICATION IS KEY: If you’re hosting a vegan friend, family member or work colleague this holiday season don’t be afraid to ask them if they have any ideas they’d like to bring to the table. Chances are, they’ll have a few cracking recipes you might never have heard of that they’d be delighted to share with you. It’s also possible that they have a slightly flexible approach to their diet and are happy to make a few exceptions to the totally plant-

based rule. Equally, if you’re eating a vegan diet and you’re a guest around someone else’s table this Christmas (or if you’re heading out to an office Christmas party) make sure to flag this to whoever’s in charge of food well in advance. No one wants to get stuck with a plateful of plain sprouts on Christmas day. PREPARATION IS KEY: The more you prepare the more time you can spend with your guests. There are lots of things that you can prepare in advance here. HAVE FUN, BE TOGETHER: The holidays are there to have fun, be together, cook, laugh and love.

PLANT NUT ROAST WITH CAVOLO NERO & APPLE AND CRANBERRY COMPOTE This dish is brilliant in the sense that it is a proper centrepiece and can be enjoyed by all. It is equally as yummy the day after you make it and can also be transformed into a hash or squeezed between slices of bread for a sandwich. INGREDIENTS 2 parsnips (about 300 g), peeled and cut into 3–4 cm pieces 1⁄2 small swede (rutabaga) (about 200g), peeled and cut into 3–4 cm pieces 1 small sweet potato (about 150g), peeled and cut into 3–4 cm pieces 1 tablespoon olive oil 1 small leek (about 160g), washed and finely chopped 2 garlic cloves, chopped 1 small shallot, chopped 350g mushrooms (such as chestnut or oyster), chopped 50 g herb leaves (such as rosemary, thyme and sage), finely chopped 120 g cooked wholegrain rice (prepared according to the directions on packet) 200 g cavalo nero or kale, de-stemmed and roughly chopped 120 g ground almonds 160 g walnuts, chopped (plus an extra handful, toasted, to serve) 4 tablespoons cold-milled flaxseed 2 tablespoons tamari or soy sauce 1 tablespoon maple syrup 1 teaspoon Dijon mustard salt and pepper, to taste FOR THE SAUTÉED CAVOLO NERO: 200 g cavalo nero or kale, torn into small pieces and stalks discarded 1 tablespoon olive oil pinch of salt 2 garlic cloves, chopped 2 tablespoons tamari or soy sauce 1 tablespoon toasted sesame seed oil FOR THE APPLE AND CRANBERRY COMPOTE: 4 red apples (such as Braeburn or Royal Gala), unpeeled, cored and diced 100 g fresh or frozen cranberries 3 cm piece of fresh root ginger, grated 1 tablespoon maple syrup juice of 1 lemon 100 ml water

METHOD Cook the parsnips, swede and sweet potato in a large saucepan of boiling water for about 20 minutes or until tender. Drain well, then roughly mash. Heat the oil in a large frying pan (skillet) and cook the leek, garlic and shallot for about 5 minutes until softened. Add the mushrooms, herbs and some salt and pepper, and fry for a further 5–10 minutes. Preheat the oven to 220°C (430°F/gas 8). Mix the vegetable mash, mushroom mixture, cooked rice, cavolo nero, ground almonds, walnuts and flax seeds together in a large bowl using a spatula until smooth. Line a 900 g (2 lb) loaf pan with baking parchment, then add the mixture. You can also use a patterned, fancy, Christmas non-stick mould but I recommend brushing the inside with olive oil just for good measure (this cannot be lined with baking parchment as that would hide the pattern).

To cook the cavolo nero accompaniment, massage the leaves with a little of the olive oil and a pinch of salt until soft. Preheat a medium frying pan (skillet), add a drizzle of olive oil and the garlic and fry the cavolo nero for 5 minutes. Add the tamari/soy sauce and sesame seed oil, then set aside. To make the compote, add the apples, cranberries, ginger, maple syrup and lemon juice to a large saucepan, then pour in the water. Bring to the boil and simmer for 10–15 minutes until the mixture is soft and chunky, and all the liquid has been absorbed. Once the nut roast is ready, allow to stand for 10 minutes before serving. Serve on a platter with the sautéed cavolo nero and apple, cranberry and ginger compote, then top with some toasted walnuts. as that would hide the pattern). Reduce the temperature of the oven to 200°C (400°F/gas 6), then roast the loaf in the middle of the oven for about 40 minutes.

Reduce the temperature of the oven to 200°C (400°F/gas 6), then roast the loaf in the middle of the oven for about 40 minutes. Remove the loaf from the oven, then lift out of the pan along with the paper (if using). Turn the loaf upside down onto a baking tray (pan) lined with baking parchment. Mix the tamari/soy sauce with the maple syrup and mustard, then baste the loaf before returning to the oven to bake for a further 15–20 minutes.
