re you doing anything special for Valentine’s Day? Here’s hoping that your other half will be splashing the cash a bit to take you somewhere memorable on the 14th and if they are, we have some great suggestions for the hottest venues in town. Read our reviews of two fabulous Marbella restaurants and then tell me that you still can’t decide where to go! We are so lucky to have such amazing eating places on the Coast. So that’s the night out sorted but, gents, have you thought of what you’re going to buy the woman in your life? You might pick up a few ideas by looking at our David Lynch inspired exclusive photoshoot with L’Agent for Agent Provocateur with MAC model, Hailey Queen. How about it? That car is a stunner – so whoever you are our February fashion feature is guaranteed to drive your other half wild! We have also included some ideas for other Valentine’s gifts for him and for her, so you have no excuse for not finding something suitable. January was spent mostly deciding who would be the best person to grace the cover of our February issue. In the end Katherine Jenkins was the perfect choice; in her role as the Forces’ Sweetheart she has flown into danger in Afghanistan and she has also sung with some of the best in the classical music business, Spain’s Placido Domingo being just one. This is a lady who is seldom out of the news and is just as likely to be pictured busting some moves on the dancefloor (she did rather well on Dancing With the Stars in the USA) or mingling very successfully at some high society do or other. With her brand new album, Home Sweet Home hitting the highspots in the classical charts, it’s likely that La Jenkins will be acknowledged as one of the best mezzo-sopranos in the business for some years to come – and her beauty won’t be holding her back, either! January was a busy month and, as is usual at Society Towers, we have attended some terrific parties, most notably the launch of Aesthetics Solutions Spain, which was held at La Sala. This very glamorous event brilliantly introduced the many guests to this new addition to Marbella’s growing beauty industry. If you are thinking of having a beauty treatment in the next few months make sure that you book with co-owner Lisa in good time because that place is going to be buzzing for some time to come. We were also delighted to hear that those well-known real estate experts at Jackson Grundy are opening their first two offices on the Coast at Centro Plaza and opposite La Sala on Avda. Manolete. An established name in the U.K, it’s great to know that these property experts will be lending us their years of knowledge. It’s been all go for MAC Models too. As you all know, Marbella is the home of some of the most beautiful girls in the world and if the next Kate Moss is discovered as she sits enjoying a drink at La Sala...well, we wouldn’t be at all surprised. However, there is no doubt that the modelling industry values professionalism above all and MAC’s Modelling Course aims to produce the next generation of famous faces. Attendees learned all there is to know about make-up and hair styling tips, the importance of a good diet for clear skin and how to ‘own’ that catwalk. Whatever you are doing this February, here’s hoping that it’s pleasurable, productive and profitable! Until next time... Andy Clark

CELEBRITY SPOTLIGHT We delve a little deeper into the life and times of classical crossover singer Katherine Jenkins to reveal surprising facts about the Welsh beauty

hey certainly know how to produce great singers in Wales, from the likes of Sir Tom Jones, Dame Shirley Bassey and SOCIETY Marbella’s cover girl this month – Katherine Jenkins OBE - the small country has generated some of the most impressive vocal talent of the last century. The mezzosoprano Katherine Jenkins, famed for her rendition of everything from operatic arias to musical theatre tracks and church hymns, has won several Classical Brit Awards, performed in concerts for British troops in Iraq and Afghanistan and has even won the hearts of our friends over the pond in the USA.

It is no secret that she is both a talented and beautiful artist, but here I bring you 10 things that are much less widely known about the Welsh singer, proving that Katherine is so much more than just a pretty face.

Katherine has beauty and brains it seems! The singer achieved no less than 9 ‘A’ grades at GCSE and four A-levels, including Welsh. Alongside her academic studies, she passed her Grade 8 in singing and piano both with distinctions.

Don’t be tricked by her ultra feminine style, the 34-year-old loves rugby as much as any man, even fulfilling the role of official mascot for the national Welsh team in the 2003 Rugby World Cup. Incredibly, the singer was signed by Universal Classics on first hearing! In fact, as soon as they heard her voice, they offered Jenkins a six album deal there and then. Katherine sings many songs in different languages. She is not just singing these from memory, but understands every word since, at the prestigious Royal Academy of Music in London, she studied Italian, German, French and Russian.

CELEBRITY SPOTLIGHT Jenkins ran the 2013 London Marathon, raising £25,000 for her father Selwyn who died of lung cancer when she was just 15. She finished the course in five hours and 26 minutes. Katherine has visited the Armed Forces in Iraq on several occasions. On her first trip out there the helicopter in which she was travelling was targeted by missiles. Anti-missile flares were deployed and the group landed safely. The singer first appeared on the Sunday Times Rich List in 2007 as the 62nd richest young person in Britain with an estimated fortune of £9 million. Several years later in 2010, the same newspaper placed Jenkins at number 11 in the Top 20 Young Millionaires list with an estimated wealth of £11million.

Katherine took on various jobs to help her earn a living before she hit the big time, one of which was a stint as a tour guide on the London Eye!

The Welsh wonder will no doubt continue to delight concert goers and radio listeners for many years to come, putting the ‘class’ in classical music.

Whilst singing at a Christmas concert several years ago at the Brangwyn Hall in Swansea, when Katherine hit the high note in O Holy Night, there was a huge bang. Her voice had cracked one of the chandeliers above the stage! Ever the professional, she continued to sing even as small shards of glass fell to the floor around her. The Welsh beauty has also turned her hand to acting. She appeared in two episodes of Emmerdale back in 2007, in which 11.6 million viewers tuned in to find out who killed character Tom King.

As part of BBC Two’s The Super Rich season, we are invited inside the doors of one of the world’s most expensive and exclusive holiday resorts – Richard Branson’s Necker Island. Broadchurch The Voice

The Voice also made a return to our screens at the beginning of last month as pop sensation Rita Ora joined the panel of judges, which includes Will.I.Am, Tom Jones and Ricky Wilson, to find the next big thing in the world of music. The Voice does what it says on the tin, so to speak – it’s all about the vocals. As such, the four judges have to select a contestant to progress to the next round of the competition based only on the voice they can hear.

It’s finally back. January was full of doom, gloom and post-Christmas bankruptcy but one thing that made it just about bearable was the return of the BAFTA Award winning drama Broadchurch. David Tennant and Olivia Colman have picked up exactly where they left off in Series One, facing new trials and tribulations. The plot has been kept tightly under wraps so we can say little more other than it would be criminal to miss this second series.

A couple who evoke feelings in others of a fairytale romance. Also, both parties involved in the power couple have tremendous influence over people around them because of their devastating good looks and seemingly perfect relationship with their significant other.

This pairing caused much controversy back in the 1960s, mainly due to rumours that Japanese Yoko was responsible for the split of The Beatles in April 1970. Against all odds, the couple weathered the storm and were together for 12 years, campaigning against the Vietnam War and writing music before Lennon was tragically assassinated in 1980.

Duke and Duchess of Cambridge

They have captured the hearts of not only the UK but overseas as well with their dashing good looks and down to earth manner. Not only that, but the royal pair announced Kate is pregnant with a second child at the end of last year, before releasing the most adorable snaps of their first son Prince George. We’re in love!

Angelina Jolie and Brad Pitt When the world refers to you as an amalgamation of your two names, you know you have reached the dizzying heights of power couple status. Equally successful, this pair of Hollywood film stars has worked on some of the most memorable movies of the decade, as well as pursuing humanitarian activities around the world. Then last year they finally sealed the deal by marrying in the most intimate of weddings, surrounded by few guests other than their five children, before donating the $5 million generated from their wedding photos to charity.

Pierre and Marie Curie Surely possessing two Nobel Peace Prizes between them qualifies this pair to have power couple status? Pierre Curie, a French physicist, was initially attracted to Marie because of her great love for science. The pair dedicated their lives to the sciences, pioneering milestone scientific advancements such as the theory of radioactivity and magnetism.

This American power couple has an estimated net worth of over $1 billion, but most importantly they seem ‘drunk in love’. Despite some rumours of marriage troubles last year, the pair continued to be photographed out at various events together. They also spent the majority of the year performing side by side on their ‘On the Run’ tour which, on the last night, culminated with a stunning video of some of their most precious moments spent as a family.

This undeniably good-looking twosome attracted media attention and public admiration throughout the world during the 1960s. The political scene in America had never seen anything quite like it. Despite rumours of infidelity, the Kennedys were undoubtedly the power couple of the US before the showbiz glamour of the Obamas.

Grace Kelly and Prince Rainer III

It was a real life rags to riches story when actress Grace Kelly married Prince Rainer III in 1956, becoming the Princess of Monaco. The actress was, however, successful in her own right, winning an Oscar for her role in The Country Girl in which she starred alongside Bing Crosby. The couple remained married for 26 years before Kelly’s tragic death in a car crash in 1982.

It seems David and Victoria Beckham have dominated headlines and graced magazine covers since the beginning of time. ATTRACTION This month SOCIETY MARBELLA popped into Reflections Hair, Nails & Skin Care salon for a chat with two of the most talented hair stylists on the Coast, Jonathan Yeadon and Gerry Tona. We wanted to get the low-down on that must have hair trend – extensions. Celebrity hairstylist Jonathan Yeadon, whose A-List clientele have included

You are both extremely busy already so why did you decide to get involved with hair extensions? Jonathan: We each have more than 25 years experience in hairdressing (God, that makes me feel old!) and there isn’t anything that we haven’t seen in that time, let me tell you. We are very knowledgeable about style limitations, such as bulk and length and, while we do our best to work around these factors, extensions give you the chance to rewrite any limitations. Gerry: Extensions remedy the issues that arise when hair is fine or thin. They also cover any split ends, pump up your existing hair body and add volume for that shampoo commercial look all women crave.

What are the benefits? Jonathan: Celebrities like Paris Hilton, Britney Spears and Victoria Beckham regularly surprise the world with different hairstyles, changing colour, style and even the length of their hair over the course of just a couple of days. How do they do it? This magic is made possible with the help of hair extensions and a talented stylist. There are times when you think that a hairstyle change is needed. Hair extensions are a perfect way of seeing the end result without making the full commitment. You can add colour without any damage to your hair, even a crazy bright hue, as you can easily take them out when you’re over it. Gerry: They are not permanent. Unlike colour and cuts, extensions are reversible. Try them out, if you feel they’re not for you then remove them with no ill effect to your real hair. Turn that bob into a mane. If your existing hair is as short as three inches long you can get extensions, although the extent of your transformation may be limited if your hair is very short.

You can grow your natural hair out, giving your hair a break and letting the extensions take the heat. While wearing the extensions your hair can grow to the desired length.

Will they look natural? Gerry - The goal with extensions is to obtain the most natural look possible. The way you cut extensions is key to this, it is all about the blending - no blunt cutting! You need to free hand, slicing to create a softer, more natural end. You can also play with the colour or length, and fill in spots that need it more than others; it’s a more accurate way to achieve the desired look. Jonathan - I have been disguising facelift scars for years so I think I can hide extensions! My pet hate is being able to actually see the extensions or when the natural hair is too short and the extensions are too long. It actually offends me. Seriously, a mullet doesn’t look good on anyone. I am a firm believer in using more than one colour to achieve a natural effect. Jonathan: Hair extensions, when handled properly, can give amazing results, but when applied with no care for the natural hair can leave the follicles and your own hair damaged beyond repair. I have had clients come in after having extensions applied by an unqualified technician and I have been shocked at the quality of hair and placement of the extensions. It was no wonder they had been losing hair. The other key issue is the maintenance. Extensions are not hard to maintain you just need to keep an eye on them almost like you would with colour or anything else. I

n Luc Besson’s spectacular scifi movie, The Fifth Element, set in 2263, Bruce Willis’ character, Korben Dallas, is a New York City cab driver in a world where autonomous flying cars are everyday transport. The Fifth Element was released in 1997, and 17 years on, we are still a very long way from such a scenario. But be in no doubt that the motor industry has already taken its first tentative steps towards autonomous driving cars. Today, I am at the Ascari Race Resort near Ronda for a passenger ride in the Audi RS7 Piloted Driving Concept car, nicknamed ‘Bobby’. The aim of this exercise is to show that it is possible, even at this relatively early stage of piloted driving technology, for a car to be programmed to drive itself around a given race circuit almost as rapidly as a professional race driver. The ‘almost’ is significant as the engineers told me they naturally have to conserve their precious prototypes, so hanging it all out on the bald limit is not part of today’s demonstration. First though, we were given an initial ‘proof of life’ demonstration, with the driverless ‘Bobby’ concept car set up to accelerate away from rest on the main straight, traverse the chicane at

the end, and carry on for a couple of bends before returning to the pits. While a human ‘pilot’ stood trackside with a remote control device not unlike the one advanced remote control model aircraft enthusiasts use, the amount of support Audi has in place for safety reasons is formidable. “We could do a complete lap of the 5.4 km track, but we simply do not have enough staff here to monitor this. So we are only covering a short stretch of track with no-one on board,” explained lead project engineer Thomas Müller. Later, with an engineer in the drivers seat as a precaution, we each had the opportunity for a passenger ride round the track. As Ascari is my home circuit, I was able to judge the mapped lines and gearshift points, and was amazed at just how quickly and smoothly Bobby negotiated this demanding track with its various level changes.

As Thomas said, Bobby was not out to break the lap record, but the way the steering spookily turned into bends, taking the ideal line from kerb to kerb and braking late and progressively just as a professional driver would was astounding, and has to be experienced to be believed. I also noticed just how late and strongly the computer braked the car, moving into the ABS activation zone in some instances, just as a professional driver would. “This depends on the friction level of the road surface, and the value the computer assesses in this case is not the brake pressure but rather the g-force,” Thomas explained. “Given an optimum road surface, the ceramic brake equipped RS7 can generate a peak braking force of minus 1.3 g, with a build-up line pressure of 150 bar/sec.”


TORQUE TALK What is also immediately apparent though is that Bobby had been programmed to hold back from the limit. I noticed the computer short shifting from second to third gear on the straights after exiting from a couple of bends. Anyone familiar with this track would normally extend revs to the red-line for maximum slingshot effect and terminal velocity at the end of the straights. In the event, the lap times made for interesting reading as each of us had the possibility to do a lap in a standard RS7, before setting a Banzai lap to be benchmarked against Bobby. Bobby’s benchmark lap time was around 2 min 14.0 sec for the longer 4.0 km section of this 5.4 km circuit, which had been divided into two for this event. On the day, most of the participants managed around 2 min 12.0 sec, a whole 2.0 sec quicker than the robot pilot. The fastest human driver was Guido Naumann, the chief road tester and

pro race driver, from Germany’s Auto Bild Sportscars magazine, who set a blistering 2 min 04.30 sec time in the morning session. This was a spectacular 10 sec faster than Bobby. As I did not have a plane to catch, I was allocated the final slot of the day in the afternoon, but the changeable December weather decided to play foul and dumped rain on the track just before my turn to battle the stopwatch. I was not best pleased, and experiencing big understeer and oversteer in the slippery conditions, I cursed the rain as I manhandled the big, heavy RS7 around the track. Returning to the pits, I was convinced that my untidy lap would result in an equally untidy lap time, and was very surprised when the digital readout announced a 2 min 09.53 wet lap. The chief instructor explained that as a wet lap is about five seconds slower, this translated to around 2 min 4.53 sec in the dry, so I was not unhappy in the end. Audi did not just set one lap time for Bobby. The engineers went to the trouble of sending him out after every participant, to prove that the computer was also capable of very consistent lap times. Looking at the results, it was clear that Bobby could set lap times within around 0.2 sec, which is a top drawer professional driver level of consistency.

TORQUE TALK Interestingly, the rain I experienced during my session threw a spanner in the computer’s speed works. The system uses the cars sensors to detect slip, and its self-preservation protocols backed right off in the rain, resulting in a 2 min 23.6 sec lap time! As Thomas said, Bobby is a precious prototype! Back in the pits, I had the chance to speak with Thomas in depth about Audi’s RS7 Piloted Driving project, which was first demonstrated in this form at the last DTM meeting of the 2014 season at Hockenheim back in October. First off, I asked Thomas why the two prototypes were called AJ and Bobby. “They are named after the famous Indy 500 winners, A J Foyt and Bobby Unser,” he explained. “We find that having names for the cars is good because it helps us to build personal relationships with the cars,” said Thomas. “For instance, when the car comes back by itself after a test session, we pat the roof and say, “Good job Bobby.” I was curious what kicked off the Piloted Driving programme, where it is going, and how long it will be before

“The reality is that we will not achieve Level Four for maybe another 20 or 30 years,” said Thomas. “While the rapidly advancing speed and capability of computers will allow the technology to mature quite rapidly, there are many other issues surrounding it that make the practical implementation a steep uphill battle.”

we can actually buy a car that really can drive itself in all the scenarios people would require. “The SAE in America has mapped out four levels of competence for Piloted Driving. AJ and Bobby represent Level 2, while a completely autonomous driven car at Level Four will be able to received destination instructions from its occupants and take them there, Thomas explained. “However, it will still have a manualover-ride capability so a human driver can take over, while Level 5 uses exactly the same technology, but is a totally autonomous car with no manual over-ride possibility.”

“The biggest of these is worldwide legislation,” he explained. “While California has already passed legislation that allows such technology on its roads, we still have a long way to go elsewhere. The issue of liability alone in case of an accident is a veritable minefield.” Where aircraft require triple redundancy in their systems, as a car operates in two-dimensions, it only requires double redundancy for the power, braking and positioning systems, which are GPS and camerabased.

“At Audi, we are very conscious of driving fun and will always give the driver the possibility to take over and experience driving pleasure as we know it today” The systems constantly test themselves with check sums, and if the numbers do not add up, the system is deactivated for safety reasons, a red light goes on and a warning buzzer sounds, and the driver has to take over. “The crux of the idea is like the auto pilot on board an aircraft,” said Thomas. “The pilot is still there to set the destination and monitor the flight, and can take over again if needs be.” “However, there are mundane tasks like driving in traffic jams in the city or on the motorway, which can be given to an autonomous driving car so that the driver can get on with more productive tasks such as making phone calls, doing work on a laptop or tablet, or even watching a movie.”

When you consider how much of people’s lives are wasted in traffic jams, both in terms of lost work productivity and leisure time, the case for autonomous driving practically makes itself. “There are some aspects of driving which are no fun, no matter how much you like cars,” he continued. “Driving along a motorway within a low speed limit for miles on end is one of these uninspiring tasks that can be given to a machine that will not lose concentration and crash due to boredom and inattention.” “At Audi, we are very conscious of driving fun and will always give the driver the possibility to take over and experience driving pleasure as we know it today,” said Thomas. “Thus, we will always consider Piloted Driving as a driver support system and not as a

total replacement for human beings.” While Google may have been the first to test a pilotless car on public roads, Audi was the first car manufacturer to do so, having obtained a special licence from the State of Nevada to do so in 2013. The car used for this test instantly became known as “The Bond Car” as the Licence prefix issued by Nevada’s DMV for autonomous driving cars is AU, and the number issued was 007! Audi has a lot of experience with the high-speed autonomous driving cars, having established a 210km/h speed record for driverless cars, and sent one up Pike’s Peak in 2010. There are many aspects to Piloted Driving. and many of these are speed related. It is one thing to guide a car through a busy urban situation, quite

TORQUE TALK another to control it on the limit in a highspeed situation. “The latter is the reason why we have done so much race track work on AJ and Bobby, Thomas explained, “and we are working with other prototypes for urban scenarios. “For the demonstration you experienced here today, we wanted to show that you need a high level of competence to drive at the limit. The computer would never change lane while steering and braking, because the street is longer than it is wide and you need to control the car without ever making it unstable.”

“The computer has to think two steps ahead, which is why the speed of the sensors and the computer programming have to be very fast and well resolved,” he said. “In that respect, driving in urban traffic is much easier because the relative speed of everything is slower and more predictable.” In both cases, the Piloted Driving equipment is piggybacked on existing technology, which itself is improving step-by-step with each generation of production cars. “In the 1980s, we had cruise control, then we progressed to adaptive cruise

control with Stop-Go functions that can accelerate and brake to and from a set speed according to the pace set by the car in front,” Thomas explained. “This has also now been linked up with autonomous braking and other functions, and the sensors from these current production technologies are incorporated into our Piloted Driving concept cars with some additions.” A racing driver knows the precise line he has to take for the best speed through a given corner. However, as civilian GPS is not precise enough to guide a car to within a couple of inches, Audi has


TORQUE TALK to use correction data to improve the accuracy of their on-board GPS systems. For track driving, the way things are set up, you first need a path around the circuit. Some of us assumed that a professional driver sets up the perfect lines, which are then programmed into the computer. “This is not the case at all, and what we have here is a mathematical model where the outside limits of the track are plotted, and the computer calculates the fastest way round while incorporating its risk mitigation strategy,” Thomas explained.

The drive around Ascari for instance required the engineers to map the track, which took two days in itself. “Our team then went home and applied the algorithms they developed over the last two years, which checks all possible paths with regard to position and speed and comes up with what it thinks is the ideal line,” Thomas explained. “We came back three weeks later to fine tune everything before we were happy we could run this demonstration event perfectly.”

A

nyone who has made Marbella their home will tell you that, while there are plenty of restaurants that spring up – seemingly overnight – and exist for one summer season before closing their doors, a much smaller percentage stand the test of time. One thing that a venue needs to be considered a regular haunt by the Society Marbella gang is reliability, a concept that extends from the quality of the food to factors such as regularity of opening hours (is there anything more

irritating than making the journey to a favourite lunch spot only to be met with closed doors and a “closed due to unforeseen circumstances” notice?) and warmth of welcome. Well, we are pleased to report that experienced restaurateur, Timo

Hamalainen and his amazing staff will make you feel like old friends, even if it happens to be your first visit to this wonderful restaurant, which serves great Mediterranean dishes, often with a refreshing Scandinavian twist. The fact that Garum has been wowing

its legions of slavishly loyal customers for a decade (that must be about 70 years by Marbella standards!) is largely down to Timo’s outgoing personality, ability to remember a face on very short acquaintance and his ability to create menus that keeps his clients coming back for more.

It also enjoys one of the best locations in the city, right on the bustling Paseo Maritimo, which is fine by us because if you like people-watching (that is, are incurably nosy!) and want to witness some of the best sunsets on the Costa del Sol then, what are you waiting for? Get yourselves to Garum as soon as you can. One thing that everyone seems to do at Garum is read the menu very thoroughly in case you miss something, because all of the dishes sound absolutely delicious. By the time that the Society Marbella gang made their choices on our latest

As a piscivorian alternative we also ordered the Grilled Prawns with Sesame Pak Choi, Chorizo with a touch of Chilli and Wild Rice Cookies, which showed that, when it comes to seafood, the Garum team is very serious about freshness and quality. We are familiar with the imaginative desserts on offer but, even so, we spent quite a few minutes lingering over the menu and wondering at some of the unique dishes. We were seriously tempted by The Italian Job as you would be when you read a description like, “Lasagne of Chocolate and Gorgonzola Cheese Mousse partnered with Wine Pear”. It sounded too good to miss to us, although in the end we elected to save that experience for a future session. visit, a quick reader probably could have read the whole of The Lord of The Rings – or The Hobbit, at the very least – but fortunately Timo and the team are very patient and left us alone with our drinks as we made these impossible decisions. Our starters somehow managed to look even better than they sounded: in the end we ordered Profiterole filled with Foie Gras, Fig and Pistachio and served with Hibiscus Salt and Blackcurrant Sorbet, Smoked Wild Boar with a Forest Mushroom Crème Brulée and Cranberry Ragout with a hint of Slivovitz and the Smoked Salmon Wrap with Spinach and Cucumber. We know how enthusiastic Timo is about the Scandinavian side of his menu and this was the perfect way to sample some of the fresh flavours for which this part of Europe is rightly famous. We were very impressed that, while the starters delivered huge bursts of flavour and hinted at the quality of cuisine delivered by the experts at Garum, they proved to be the ideal size, teasing our taste-buds while not leaving us feeling full.

Our final choices were The Irresistible (you’re telling us!) which consisted of a Chocolate and Pine Nut Fondant with Homemade Lavender and Honey Ice Cream and the Cucurbita Pepo, a Pumpkin Mousse served with Crunchy Nuts and Plum Dim Sum. Both of these dishes pushed the limits of our culinary imagination and ended our latest Garum adventure with a bang. With regular live music events, one of the finest locations in town and reliably brilliant cuisine it is small wonder that Garum is regularly packed with devoted fans. Our advice? Get there as soon as you can – oh, and leave plenty of room for dessert!

This was just as well, because we were determined to do justice to our main courses. The Rack of Lamb “After Eight” with Chocolate and Mint Sauce served with Potato Gratin and Sautéed Brussels Sprouts sounded (in the words of one of our party) “a bit mad” but was a complete triumph. Of course, including chocolate in savoury dishes is not unusual, but the combination of the chocolate and the more traditional mint flavour was exactly right for the dish.

& Olives

O

ne of the delights of the Spanish countryside in the morning when wandering near a village is the smell of freshly baked bread. Go into the baker, and you will be confronted with every shape and size of bread imaginable. And each form has its own use.What is suitable for breakfast may not be suitable for dinner, and in some areas, as in Catalonia, special breads in the form of hearts or crowns may be offered as a gift at a wedding or other festivity. This region also rejoices in a simple and delicious form of tomato bread, when crusty bread is rubbed with some fresh garlic and a juicy tomato before being sprinkled with oil and salt. Even more basically, who can resist crisp crusty bread with oil and salt before a meal, thereby totally destroying their appetite for the delights to come!? And when these delights arrive, the diner may

observe that bread may not be just bread. It may be the basis of a delectable culinary concoction. Quite often this may be the result of its having been married to oil, or garlic, or both. Throughout Spain the cuisine varies, but all have one thing in common; an extensive use of these three basic ingredients. Julio Camba (1882-1962), a Spanish writer and journalist, once made the sage comment

“Spanish cooking is thick with garlic and religion” (which is perhaps another reason why a priest is writing this article!).

Who has not encountered all i oli (sometimes barbarously shortened to alioli, which may well indicate that it is not simply pure pounded garlic mixed with oil, but merely a garlic flavoured mayonnaise!)?. Here in Andalusia, where the processions of Semana Santa testify to the deep religious sensibilities still dormant in what is becoming an increasingly secular society, this delicious sauce is a necessary adjunct to many a fish dish, particularly the magnificent Fritura

Malagueña; whilst in the north of the country the All Cremat, a casserole of crisply fried garlic, potatoes and rape just cries out for such an accompaniment. But garlic does not stop there! Bread, oil and garlic are the basic and main ingredients of Gazpacho (where the original Roman ingredients make a harmonious marriage with the Aztec tomato!). The Salmorejo of Cordoba , and particularly the white garlic soup Ajo blanco. Some of these dishes have been adulterated over the years, but having said that in Málaga the peasant Ajo blanco was long ago adopted and improved by the urban middle classes with the addition of pitted Málaga raisins or grapes as a garnish to the pounded raw garlic. Yet if we look hard enough, we are still able to enjoy dishes that have not changed substantially over the

years. Such a dish is Migas de pastor.

migas originated in the poverty stricken Spanish countryside. There nothing was wasted. Indeed, to throw away bread was considered a sacrilegious act.

As the name pastor suggests,

Bread is used in the Mass as the Body of Christ. Various methods may be used today in the making of Migas, particularly when vast quantities are required for festivals, but in the traditional manner, old, dry, bread is cut into thin slices and left to soak in salted water. It is then squeezed dry, and may be left wrapped in a cloth overnight. In a pan, peeled heads of garlic are fried in deep oil, and when browned the squeezed soaked bread is added. All is stirred until it breaks and separates into fine golden crumbs. A little milk may then be sprinkled over the mixture. On high days and Holy Days, a little chopped ham may be added. As an extension or variation to this delicious concoction, in La Mancha a dish called Gazpacho Manchego may be produced. This has nothing whatsoever to do with Andalusian gaspacho. It is a form of empanada, which itself is basically a form of bread rather than a form of pastry. The main difference here is that whilst a normal empanada requires an oven, and an Andalusian gaspacho is a soup, the Gazpacho Manchego is a sort of tart; almost a sort of pizza. No oven is needed, and the preparation should be made on an open wood fire out of doors. A large flat crust is baked over such a fire, and then covered in a thick stew cooked in a gazpachera, consisting of crumbled bread, garlic, onions, peppers, and whatever bits of meat come to hand. It goes without saying that in all cases we are talking about traditionally baked bread, rather than the wrapped soft pap which disgraces so many supermarket shelves today. It equally goes without saying that whatever is being cooked will be cooked in olive oil. Spain is the world’s largest producer.

This product has already featured in these pages, but the fruit itself also features prominently in Spanish cuisine. This is particularly true when it comes to whetting the appetite with a small copita of fino sherry or a dry Montilla. These olives are verdeo; preserved or semi-preserved olives designed for eating rather than oil manufacture. Many such olives are carefully picked by hand rather than being allowed to drop from the tree, or collected by machine; both methods may damage the fruit. The most popular variety is the Manzanilla, which is pale green and oval, as opposed to the larger and darker green Sevillana. This large and fleshy variety is also known as Gordal. An olive vaguely resembling the shape of a small gherkin, with a white tip and a hint of bitterness is a Cornezuelo. One olive which goes well with beer is the Cuquillo, which is round and black, and pickled with chopped onion and chilli. In Aragon one might meet the spiced Negrilla which is particularly suited to consumption with red wine.

And what could be better as a little snackerel than a good glass of such wine, some olives and a couple of slices of tomato bread? 107

f you want to feel like a real Big Spender then follow our advice and make straight for Nueva Kaskada. This six-star restaurant is a favourite of Dame Shirley Bassey, who couldn’t resist its siren call last time she visited Marbella. The singer seemed very happy to be photographed with her old friend, Ewald Fichthaler, whose imagination has made Nueva Kaskada the hot venue that it is today. In fact, if you want a top recommendation for your very important Valentine’s Day date then this is it. Ewald and his team of dedicated professionals guarantee to make your evening one to remember, with a warm welcome and fantastic attention to detail; the pats of butter have even been fashioned into little heart shapes. We love everything about Nueva Kaskada, from the beautiful setting in the hills above the city to the painstaking care that is taken with everything from the place settings to the presentation

of the delicious dishes. Host Ewald is obviously a man who likes things to be just so and those who long for the days when things were done “properly” will be captivated by the small touches that make all the difference to a night out. Don’t make the mistake of thinking that this restaurant is in any way stiffly formal, though; Ewald is a past master at making new customers feel like old friends and regular visitors are treated like a members of this experienced restaurateur’s large extended family. Nueva Kaskada is certainly one of those places that encourages us to be dressup divas for the night. While we love the places that we can visit on our way home from work, I think that the person who fails to put in at least a little bit of effort would probably feel under-dressed – unless they happened to have the chutzpah of Beyoncé or Rihanna, that is. Once seated at a table that allowed us to enjoy the amazing views from this elevated position, we were able to take our time over the menu, which is something that every first-time visitor should do. Making snap decisions about which dish to try is a big mistake! Treat this part of the evening like an enjoyable examination in which the aim is to

decide which is the perfect combination for you. If you can’t decide, don’t worry – Ewald is a past master at offering dithering diners a chance to sample several dishes at once. We decided to test the variety of starters on offer by ordering the Variation of Nueva Kaskada Entrees, which consisted of Satay and Tempura of Langoustines with Soya Dip, Prawn Cocktail with a touch of Chilli and Marinated Salmon with Ginger and Lemon. If you love great seafood then you absolutely must sample this compilation of flavours. To complete our starters order we also requested the Symphony of Spring Roll, Tartaletta of Langoustines and Chicken Satay with Cabbage, Carrot and Asiatic Dips along with the Seafood and Coconut Soup served with Cigala Roulade. It is at times like this that we are especially glad that we live in Spain; not only is it home to some of the best seafood in the world but we have such amazing chefs who can cook and present it so imaginatively. For our main courses we decided to move away from the fruits de mer and sample some meat dishes instead. The Yang Crispy Poulard Asian Aromas in a Soya Honey Reduction served with

We love everything about Nueva Kaskada, from the beautiful setting in the hills above the city to the painstaking care that is taken with everything from the place settings to the presentation of the delicious dishes.

Singapore Noodles was excellent, a new spin on an old favourite with the flavours of the poulard substituting for the more famous crispy duck. We also loved the Tournedo of Beef Fillet Jasmine with Shitake Cream, Wok Vegetables and Crispy Potatoes; this was another crowd pleaser given a sophisticated new twist and certainly impressed the Society team. Our final choice was the Whole Crispy Sea Bass with Five Chinese Spices, which again displayed the skills of the NK team, with Mediterranean ingredients fusing impeccably with Asian flavours. After all this we only had a limited space left for dessert, which is a pity but the good news is that the Sweet Surprise is enough to delight every sweet-toothed diner. This was a mini taster menu, which included Chocolate Brownie, Lemongrass Panacotta, White Rose Foam and Mango and Passion Fruit Coulis and had us all fighting furiously over our favourite components.

A GOOD DEED

Carlitos de Hohelohe, owner of La Ratonera Restaurant in San Pedro, opened the doors for a charity lunch in aid of the Triple A animal rescue charity last month. The lunch, comprising three courses, had a cover price of €35 of which €10 was given to the charity. The amount raised was a little under €600 and donated to the charity on behalf of La Ratonera, by Richard Paine Smith and Annabel Milnes-Smith. Donna Jensen represented the charity with Pilar, who was responsible for the sale of Triple A related products, which raised further funds for the charity. Loretta Koch-Davies, George Fisher, Lorraine Powell, Lynda Woodin and James Kyle all contributed to the cause by purchasing group tables. The lunch was a great success and the hog roast was cooked to perfection, everyone went home happy and the charity benefited from a healthy donation.

Whilst staying in Marbella for their winter training camp, German football team Mainz visited celebrity hotspot La Sala for a relaxing night out between training and friendly matches at the Marbella Football Center. The most popular dishes of the night were Chateaubriand, Chargrilled Rib Eye Steak and the famous La Sala Pil Pil. “La Sala is one of my favourite spots in Marbella. Whilst it took several attempts to locate (we walked the length of Ave da. Jacinto Benavente and Avda. Ricardo Soriano on at least three occasio ns!), it was well worth the effort. My sug gestion for locating it would be that it is behind Farmacia Mingorance on Rica rdo Soriano and behind the Libreria on Benavente. Having a multitude of allergies from fruit and tomatoes to shellfish, spices and coriander, I know that I am a

nightmare! I have had restaur ateurs ask me ‘Madam, why do you bother coming out to eat’ on multiple occasio ns!! At Paellas y Mas, not only is Chef Javier Ponte a superb chef, he was also sympathetic and kind and cre ated a truly delicious paella, which I cou ld eat and enjoy without fear of retribut ion! The service was attentive with out being intrusive, the decor elegant and relaxing: this delightful restaurant is well worthy of Michelin acclaim. SAVING DOGS FROM DEATH ROW An assortment of Marbella’s best known personalities are highlighting the plight of abandoned animals in a sizzling new calendar. As the temperatures hot up, so does the calendar, with a total of 24 models appearing alongside their rescue dogs! The calendar is the idea of passionate animal lover and manager of ‘The Boardwalk’ Restaurant Kara Robertson. Kara has been helping rescue dogs for several years and the calendar will raise both awareness and funds for Last Chance Animal Rescue.

“All of the dogs that feature in the calendar were saved from certain death in the pounds” says Kara, “It’s really important that the charity receives support from the

local community and this calendar is one way to help. STEP INTO THE WORLD OF MOVIE MAKING The Madhatter’s Film Camp returns for another year of movie making fun as the Sotogrande International School confirm the film-making course as one of their summer programmes. The camp, which gives students a rare opportunity to work with industry leading equipment, teaches all stages of production from pre-production to post production, editing and rendering movies. Students will learn the conventions of constructing an effective narrative, the meanings and uses of different shots and camera movements and how to get the best from your subject. They will also discover how to use digital video cameras and record sound, fly drones and much more. They will capture and edit their work using

the professional editing application Final Cut, and even host their own premier once the two weeks are over. Students have the option to stay at the Sotogrande Boarding House for the two-week course, where they will be invited to join group activities in the evenings after the Film Camp ends for the day.
