Bijan Laufer
When Design is
THE ART
If you love design then you will love Bijan Laufer, an interior stylist with a knowing touch that reflects his vibrant personality. For the founder of THE ART, decoration is a very personal art.
“I
have loved design as long as I can remember, in me it fuses with being a people person and having my innate business sense,” says Bijan Laufer, who recently launched THE ART at the Marbella Club. He brings with him a world of experience, as this well-travelled interior designer has worked in Germany, where he grew up, as well as Switzerland, London, New York and Thailand. My approach was, and has always been, to listen carefully to what clients say, take in details such as how they dress, the lifestyle they aspire to, and then deliver that within their living environment, which becomes the canvas for that lifestyle. The goal is to create comfortable, luxurious, yet functional spaces for my clients. Basically, I am in love with life and enjoy inspiring others to change their own lives for the better, even if it is just through the redesign and/ or adding pieces of furniture or art to their home. There are many combinations that get

you to that perfect design solution, and that exploration with my clients is so satisfactory, and brings me personal joy and fulfilment.
Make design a joy The Art Interior Design work code ethics focus on the design and decoration process being a joyous one that becomes an enriching experience for the homeowner too. “We all do better work when we’re happy, and what could be a nicer job than to create a beautiful living environment or setting for a commercial venue, so I also like to involve the client in this creative experience and let it be part of the process that injects life and happiness into a home. After all, a home as a place of well-being is so much more than the sum of its decoration and furnishing. Having an eye is one thing, but you have to be able to execute.” explains the designer. Bijan, who has come from an international background himself, sees that Marbella has such a sociable, cosmopolitan way of life. “The natural beauty, gastronomy and outdoor Californian lifestyle is very much me. I love the energetic way of thinking here, and saw early on that my style of design fits well into the properties and lifestyle of the Costa del Sol.” Through an exploration of colour, materials and an intuitive eye, The Art
Interior Design team curates a wealth of their combined experiences into every space. “Sensory experience is at the centre of the design approach. Mixing classic with innovative design to get fully inspired by bespoke pieces, cultures, art and natural elements is what truly inspires me and my team. Design and art have had a history of constantly colliding and co-merging and are continually overlapping more and more, to the extent that the design can be viewed almost as art in its own right” says the designer. “The final results could be almost reviewed as an art piece”
The Art-Interior Design Experience A mixture of Interior design and lifestyle expertise, along with his entrepreneurship and philanthropic personality convinced the designer to launch THE ART at the Marbella Club. The team will be attending to private and commercial clients to provide that knowing touch that transforms a house, apartment or commercial area into a spectacular, cosseting home. THE ART-Interiors main offering is furniture packages delivered in a timely manner, to both private individuals, developers, and real estate agencies, as well as bespoke singular furniture and art pieces. The full-service design studio and team is located at the prestigious Marbella Club. Core values are to provide the vision and organizational skills to make beautiful
transformations happen. Artistic and elegant with liveable comfort. Modern aesthetic mixed with sumptuous decor that maximizes and fosters simplicity and serenity. The key is detail, detail, detail, add experience luxury and above all comfort as the primary focus! Timeless luxury is crucial. “I’m in touch with the commercial and practical element of each design project, and have worked on everything from decoration to complete renovations, and I love them all. It’s an exciting phase in my life and one in which I bring all my international experience to, years of travel and my personal inspiration to creating highly individualised designs for villas, apartments and also commercial projects in this region. I will continue to work internationally, but in Marbella I have very much found the place where I feel at home and wish to make a contribution with my very personal approach to interior design.”

CARRIE UNDERWOOD – Denim & Rhinestones
Carrie Underwood’s latest album embraces a classic country aesthetic and marks her return to the countrypop genre after she released her first Christmas album, “My Gift,” in 2020 and her first gospel album, the Grammywinning 2021 religious’ collection, “My Savior,”. “We cover a lot of ground on this album,” Underwood said in a press release. “We have a lot of songs that have a bit of a ‘throwback’ feel, but they sound super fresh. I grew up listening to so many different kinds of music and that is extremely evident in this body of work. These are musical influences that are all in me and work their way out, and I just decided this time not to get in their way,” she continued. “I think this whole album ended up being a big reflection of me as a person and as an artist.”

GEORGE EZRA – Gold Rush Kid
George Ezra’s third album, Gold Rush Kid is released this month. The record was written and produced entirely in London with longstanding collaborator Joel Pott. It follows George’s No.1 albums Wanted On Voyage back in 2014 and Staying At Tamara’s from 2018, the latter of which earned him his first No.1 single in ‘Shotgun’ and won him the 2019 BRIT Award for British Male Solo Artist.
ACROSS THE WATER – Elton John 3 MADMAN Elton John is celebrating the 50th anniversary of his 1971 album Madman Across the Water with a deluxe reissue that pairs the LP with demos and BBC recordings from the era. The reissue features 18 unreleased tracks, mostly in the form of John’s piano demos of all of Madman’s album tracks, including his classics “Tiny Dancer” and “Levon,” as well as three different takes on the title song: Piano demos from 1970 and 1971, plus the original version that featured guitarist Mick Ronson. The deluxe edition’s third disc includes John’s eight performances from a 1971 taping of BBC Sounds for Saturday; video of that concert, as well as John’s Dec. 1971 gig on the Old Grey Whistle Test, is featured on the Blu-ray component of the deluxe reissue.

To say Chilli FM Radio hit the ground running would be a huge understatement. This uber popular station has now firmly cemented its place at the head of the Marbella radio scene. Launched in 2020 during times of lockdowns and business uncertainty proved the perfect storm to create the all new radio and entertainment channel of english broadcasting across the entire costa del sol, and also globally across all their devices. Chilli creators Kane and his fiancé Dana decided it was the right time to launch the Costa del Sol’s finest on-air and multi-platform entertainment channel. Kane comes from an entertainment background as an actor and former radio jock and knew exactly what was lacking on Spain’s south coast. We sat down with Kane to discuss why Chilli FM has proven so popular. “Chilli’s audience has been growing exponentially every month as more and more people tune in and hear a fresh new feelgood radio station that also kept everyone smiling through uncertain times” Kane says “recognising that successful radio stands and falls on the audience popularity, Chilli FM was borne out of the need for a more local and unique radio station that would reflect the audience and the local community. A radio station has the ability to hold up a mirror to the audience and reflect that vibe, that sense of place, that local attitude. The network originally started out as a radio station serving the immediate Marbella area from its studios near Puerto Banús Photo credits: Eva Neilson, Anastasia Vishnickaya

and today, broadcasts over 150 miles along all Spain’s Costa del Sol on multiple connected FM transmitters. Chilli now also streams online internationally across various smart devices. We have apps for your smartphone, smart TV and smart speakers, so have the potential of reaching millions of people.” How would you describe your audience? Our target demographic is predominantly over 30’s and we play music from today’s current contemporary artists such as Bruno Mars and Ed Sheeran, mixed with the top tracks and classic hits from the 1970’s, the 80’s and the 90’s, therefore appealing to a very diverse audience. The majority of the Chilli FM audience however are female. Women are the movers and shakers in our society and especially in our economy. Therefore, none of this would have been possible without a female touch, which Dana oversaw expertly. Chilli connects to the listener. It’s all about being in the moment, and connecting listeners with their favorite music. Chilli FM takes each listener on the musical journey throughout the day, playing more uplifting songs in the mornings, calmer music at lunchtime and more upbeat hits during the day with specially selected tracks for the evening listener. We have been innovating right from the start with new ways of delivering quality sound, production tricks and original ideas that have never been heard on the Costa.
CHILLI SHOUTOUTS A NEW ERA IN AUDIENCE INTERACTION Everybody is talking about it …what is it? Everyone wants to be on the radio. What better way of giving people that experience by harnessing the power of tech, and WhatsApp was just the solution. Chilli Shoutouts is a dedicated WhatsApp number where listeners can send in a voice message about anything. They can dedicate a song, tell a silly story, say happy birthday to someone, virtually anything they want, and we’ll play their message on the show, followed by the song they suggested. For the first time, radio listeners can create their own show.
This was the first time English radio on the coast had real audience interaction on a global scale. We all live in connected era, so to connect to our listeners directly, you just needed to know the number 717 12 12 12. Once we defined the marketplace, it was then a matter of releasing the number. The results were astounding with an explosion of voice messages being sent from Chilli listeners itching to get on the radio from Spain and all over Europe.
If you like your music a little spicy and you fancy an interactive listening experience then turn that dial to 91.5FM and make a change your ears will thank you for.

Let’s do
COFFEE
King of coffee Sean Le Tissier talks exclusively to SOCIETY MARBELLA From rugby player to coffee king… Please tell us about your background, how did you end up in the coffee industry? Ha ha, I think I was a good prop (which was my position) but as an overall player, maybe not that great! I started life as a chef and moved around in different industries such as building, technology (initially mobile phones in the early days but advancing to networking and computing), mechanics, working through Europe with many large Plc’s in communications. I ended up as the CTO (Chief Technology Officer) for a large telecommunications company until 2005 when I then formed my own company. Today I have multiple companies working through different industries such as telecommunications, energy, ICT, car repair centre, hospitality and now of course coffee. Apart from providing the products and services and working with a great team of people, I am totally focused on the
delivery of excellence, introducing my brand and quality to the market. I consider myself as one of the best in the industry at both commercial and household level. Where does Coffee King come from? Interesting question :-) My head?? My passion for coffee developed over the years through working in Europe. Having taken the decision to start a coffee company I wanted to develop a brand that could be recognisable and associated with quality, by giving a great taste. This took time, working with one of the biggest roastaries, we developed premium blends from some of the best Arabica coffee beans. This whole process took over a year. It had to be not just right but excellent and market leading.
Why did you choose Marbella? As we are offering a premium Coffee product, we wanted to have our showroom in an area that reflected that. The location is perfect, very central and an important area that is recognised throughout the whole of Spain, if not the world. What distinguishes you from your competitors? Quality and flavour Service and knowledge Excellent extended aftersales support Mobile phone app to drive brand, promotions, locations, partners, interactive community Product development and training Academy of Excellence Special offers and discounts for B2B Great branding You partnered up with “Coffee Quality Institute”... what does this guarantee for the customer? This is my passion, we are here to give the best quality coffee we can. Whether

establishment. The students will receive an extended set of training standards that will train baristas in multiple types of equipment along with bean to cup, payment and Epos systems, customer service, stress and pressure management, staff management, stress related management of clients, staff and difficult situations, customer service and so on. Ultimately, a barista is trained in how coffee is made, from seed to cup and we extend the training to be more complete for use in the hospitality environment. Which other countries do you have a presence in?
it’s with our commercial partners or our e-commerce sites or for home coffee drinkers, our focus is quality. Being a partner of the coffee quality institute simply means that, we can, would and will only sell quality, which gives peace of mind for the customer; all our products are quality checked. Tell us about your different blends? We have developed for the commercial hospitality sector and the avid home coffee drinkers three fantastic premium blends, each one suits different tastes and establishments and are based around flavour and the caffeine kick. The Original blend delivers a punchy strength, our Barista blend a much smoother experience but with the flavour people look for, our Italian Gourmet blend delivers a fantastic smooth rich flavour with no bitterness just an enjoyable after taste. We decided to launch here in Spain with our Italiano Gourmet blend as this rivals the best known brands available here. Our Frappe (ice drinks) range and syrups are all vegan friendly and endorsed by the vegan society. Flavours available are: Cookies and cream, Sticky toffee pudding, Vanilla and Chocolate. Our Capsules / Pods use the Verona blend which is considered one of the highest quality available in the market today. They will be available from July and will not only offer the fantastic Verona coffee but also infusions which include, Caramel, Vanilla and Chocolate. Tell us more about your “on the road” baristas? Fully trained baristas from our Academy, using conventional expresso and bean to cup machines, creating mobile rounds, visiting companies and events, schools etc to serve to the public, shopping centres, train stations, even film studios (pinewood
studios) use our mobile barista services, we are soon to also launch a franchise option in the UK and Europe. How do you like your coffee? Strong and long, I like a strong 180ml americano, never been able to appreciate or get used to the concentrated traditional espresso unfortunately. Where do you see the business in 5 years? I see Coffee King expanding throughout Europe as a major brand, delivering excellent coffee and becoming recognised for quality and affordability. We will increase our focus on eco and social responsibility including our foundation to help causes that need our help. And your Academy? The Coffee King Academy will rival the current international barista standards with an added difference. We will deliver a more advanced set of trading certification standards which will help both the Barista and the hospitality
We also have a Coffee King UA company (Ukraine), copyright has already been secured, I continue to be committed to this arm of my business and whilst the war is on, we are planning our launch for the future. However, in the meantime, I am doing what I can to help; I have donated coffee to a fundraising event where the money went to a Spanish charity offering relief to Ukraine. I have sponsored one couple to leave Ukraine and housed them for 5 weeks, plus I’m currently sponsoring two more Ukrainian families with children to help them flee the country and have accommodation and food in Romania, where they will be safe. You also give back to the local community... Coffee King is here for the long term and we also want to show our commitment to local charities. We have already made donations to a local dog rescue centre and we were active during the recent fires in Sierra Blanca, arranging (through the local town hall) the delivery of grains, hay and vegetables to the local wildlife affected by the fires. We want to continue helping local groups and charities and soon will have news on our very own charity that will help organisations along the coast. The Coffee King is here to stay.
Let’s Meet For Coffee! You are cordially invited to the grand opening and launch of coffee king, the premium coffee company in spain. WEDNESDAY 22ND OF JUNE FROM 5PM TO 8PM CENTRO COMERCIAL CENTRO PLAZA Av. Manolete 1, Local 9 (down the escalator)Nueva Andalucia

Rebel Wilson has revealed the news that she was once sexually harassed by a male co-star who then tried to destroy her career. The star of new release, Senior Year, shared the details in an interview with People Magazine in which the actor pulled down his pants and asked her to perform a sexual act. The actor says that after complaining to the film studio behind the movie, she discovered she wasn’t the first person to make a complaint. “I thought even complaining to my agency was a big step,” she said. “And to complain to the studio. I found out I was like the fourth person to complain about the guy. Such gross behaviour, but a lot of women have had it way worse.” She eventually finished the film with the unnamed actor, saying she wanted to “do the right thing, be a professional” but says with hindsight, she would never do that now. “He called me into a room and pulled down his pants,” Rebel recalled. “It was awful and disgusting,” she added. “And all the behaviour afterwards — this was all before #MeToo — where they kind of tried to destroy me and my career. If it had happened after #MeToo, then I could have just blasted them.”

Netflix reportedly wants to time the show’s release around the same time as Prince Harry’s memoir is released. Harry and Meghan, who famously stepped back from their senior royal duties in early 2020, are said to be allowing cameras behind the scenes at their Montecito home and during trips, including one they took to New York in September.

homas Cruise Mapother IV, better known to us as Tom Cruise, was born in 1962 in Syracuse, New York. His mother, Mary, was an amateur actress and schoolteacher and his father, Thomas, an electrical engineer. The family moved around a lot to accommodate Thomas’ career, but his parents sadly divorced when he was 11 and the family moved to New Jersey after his mother remarried. Suffering from dyslexia made academic success a struggle for Tom but he excelled in athletics, hoping for a career in professional wrestling before an injury in high school cut that dream short. At the age of 16, a teacher convinced Tom to participate in the school musical Guys and Dolls and a new career was born. After he left school, he moved to New York struggling through acting auditions before landing a role in 1981’s Endless Love with Brooke Shields and another in military school drama Taps

co-starring Sean Penn. In 1982 Cruise appeared in Francis Ford Coppola’s The Outsiders followed by Risky Business which made him a recognizable actor. In 1986 the big-budget film Legend was released as well as Top Gun starring Meg Ryan, Anthony Edwards and Kelly McGillis. This went on to become the highest-grossing film of the year and pushed Tom to the forefront of the film world. In 1987 Tom married actress Mimi Rogers, he also became a student of Scientology, the religion founded by writer L. Ron Hubbard. While his spiritual life thrived, his marriage didn’t have the same triumph, with the two parting ways in 1990. The same year he met Nicole Kidman and after a brief courtship the pair married in Colorado on Christmas Eve 1990. Married for 11 years the pair adopted two children, Isabella and Connor with whom they kept out of the public eye. Following his remarkable professional achievements, Tom worked with Paul Newman in The Colour of Money and Dustin Hoffman in Rain Man before taking on the role of veteran Ron Kovic in Born of the Fourth of July which earnt him both an Academy Award nomination and a Golden Globe for Best Actor.
In 1992 Tom took his place alongside Jack Nicholson in the military courtroom drama A Few Good Men which resulted in another Golden Globe nomination, followed by The Firm in 1993 and Interview with a Vampire in 1994 alongside Brad Pitt. Blockbuster Mission Impossible hit screens in 1996 as well as the highly acclaimed Jerry McGuire directed by Cameron Crowe. The latter earnt Cruise his second Academy Award nomination and Golden Globe for Best Actor. Further awards followed with the release of Magnolia before the long-awaited hit Mission Impossible 2 in 2000. In the subsequent years, Tom continued her success with Vanilla Sky, Minority Report, The Last Samurai and War of the Worlds which grossed more than 600 million US dollars across the globe.
In 2005 Tom made his first public appearance with Katie Holmes which was quickly followed by the famed appearance on Oprah Winfrey’s couch claiming he was ‘in love’. The relationship skyrocketed with Katie revealing she was converting to Scientology, getting engaged and announcing the arrival of their daughter, Suri. The couple remained together until 2012 when Katie filed for divorce. Fast forward to this year and Tom Cruise’s success continues to flourish with the release of Top Gun: Maverick. Over 35 years since the release of the original film, Tom is back to relive the magic of the original film and reprise his most famous role to date. With the Duke and Duchess of Cambridge even making an appearance at the London screening we are sure this will once again be something special.
Tom showed no signs of slowing down with successes including Mission Impossible 3, Valkyrie, Mission Impossible Ghost Protocol, Oblivion and the fifth instalment of the blockbuster franchise, Mission Impossible – Rogue Nation.

t’s Spain. It’s June. That can only mean one thing – babies getting jumped over by devils of course. Each year in the village of Castrillo de Murcia, the festival of El Colacho sees some 100 newborns laid out on mattresses in the street as traditionally dressed men leap over them in front of thousands of spectators. Dating right back to 1620, historians believe the event may have started as a fertility festival (Nothing says foreplay like a bright yellow berk hurtling over a wailing infant) and today represents the triumph of good over evil as the jumping devils (el Colacho), driven along by pounding drums and the pious black-clad atabalero draw evil spirits out of the bemused babes. Onlookers berate the Colacho to rid themselves too of a year’s bad luck, though they risk receiving a retaliatory bit of mouth and a horsetail whipping. It’s all so bloody kinky you can see why it was thought to boost fertility, although the inclusion of babies from far and wide in recent years, where before it was just locally born sprogs suggests perhaps new births have actually been declining. That or the village babies decided to unionise. To date there have been no reports of injuries, although speculation that organisers plan to combine the baby jumping festival with the running of the bulls has health and safety officials up in arms. Perhaps it’s not the jumping of babies you’re into, but the carrying of wives? Fear not then, Finland’s got you covered. First conceived in 1992 but with roots tracing back to the 17th Century, the annual Wife Carrying World Championships take place in the small town of Sonkajärvi, where
52
entrants must negotiate a 250m, obstacle strewn track on foot, whilst lugging their betrothed. For those keen to compete but unlucky in love, the rules state a neighbour may be borne in place of a spouse. The heavier your burden, the harder the course but the richer the spoils as the winner receives their wife’s weight in beer (It’s all so progressive!!) According to legend, local villain Rosvo-Ronkainen lead a gang of 17th Century crooks who he initiated and trained through gruelling obstacle courses. His actions, combined with reports of wife-stealing from neighbouring villages are said to form the basis of this bizarre event.
A true spectator sport if ever there was one, prizes are also awarded for the most entertaining couples, so outlandish costumes and carrying techniques abound. A highlight has to be the relay where teams of three beerchugging men exchange human wife-batons as commentators furiously articulate the insanity and onlookers cheer and indulge in widespread karaoke.... obviously. Unlike the leaped babies of Castrillo, the carried wives of Sonkajärvi are required to wear helmets.... So there’s that at least. When you’ve spent a hard day humping your missus past obstacles and bounding over your petrified offspring, it’s nice to be able to just chill out with a hurled tomato to the face, so where better to scratch that particular itch than Buñol, Valencia? La Tomatina has
been happening there annually since 1945. That was the year the allies finally overcame the Nazis, only for a new threat to emerge in the form of a rowdy mob who stripped a Spanish vegetable stall of its tomatoes and began an almighty food fight. Choosing to embrace the anarchy rather than risk WW3, the town now dedicates an entire week to the celebration of tomato-luzzing. With an estimated 145,000 kg of the fruit/vegetable (depends who you ask) chucked in 2015, the festival has found worldwide fame, featuring in films, TV show and even video games. Due to spiralling popularity, the event became ticketed in 2013, capping participants at 20,000. Unfortunately COVID saw la Tomatina on hold the last two years, so organisers are expected to play ketchup in August. When it comes to weird and wonderful world festivals it seems babies just can’t catch a break. In Spain they get jumped over by devils and during the Naki-Sumo festival in Japan they get manhandled by participants whose sole aim is to make their baby cry first or loudest. Traditionally it’s believed that crying babies ward off evil spirits and demons (doesn’t seem to work for the ones getting jumped over) and what better means to get sprogs bawling than being jiggled by duelling sumo wrestlers. Spectators around the country turn out in droves to see the pudgy little nappy-wearers... and the babies they’re holding, confident that any short-term trauma for the infants will be eclipsed by long-term good fortune. The tradition dates back some 1600 years and even
has its own proverb which translates as “Crying babies grow fast”... not as fast as sumo wrestlers. It doesn’t get much more British than a boat race in Brawby.... where the boats are Yorkshire puddings. Conceived unsurprisingly by a man in a pub (well, in fact a man staring out his window at a pub, but a pub was involved obviously) it’s also not exactly a race, since there’s a start, but no defined finish. As the old (slightly adjusted) proverb goes, “When you’re floating down a river in a load of beaten eggs and flour, the journey is the destination.” Taking place sporadically since 1999, when first conceived by eccentric artist Simon Thackray to reenact a “mythic legend” his poet mate made up, the event’s vessels are captained by young enthusiasts and coated in several layers of yacht varnish to avoid instant submersion. No doubt a hoot to watch for artist and poet types, anyone with a brain will be questioning why, given the ever-present risk of shark attack we are now constructing our boats from pudding??

Harmonious Hormones It can be tough keeping the weight off in your 40s and 50s, but before you’re too hard on yourself, understanding that there’s a cocktail of hormonal changes happening that can make it harder to shed body fat and keep it off, can help bring compassion, and identify what to steps to take.
Understanding what’s going on with your body, and the interplay between hormonal processes, movement, recovery, mindset and emotional state, allow you to take steps to work on multiple aspects at once without making massive changes to your lifestyle. All too often people will make the mistake of just opting for a diet (short term solution) and/or some sort of exercise programme without considering what else is going on internally and what else they should be doing.
Surprisingly doing things that sounds like they should work, like working out for longer and really restricting your food, can actually work against the results you’re looking to achieve at midlife. Providing a solution to this complex web is what we excel at. With over a decade of experience working with thousands of clients, and leveraging our backgrounds in psychology, stress management, NLP, nutrition, personal training, gut health and menopause, this is what we specialise in…
So, to help you understand what’s going on, and make positive changes, here’s a brief overview of how your hormones could be impacting your weight loss in your 40s and 50s.
1
YOU’RE LOSING MUSCLE MASS: your sex hormones are declining - whether you’re a man or woman you’re experiencing falling levels of testosterone and from a body fat perspective, a similar thing is happening… you’re losing muscle mass. That not only means you’re losing strength, but your metabolism is falling too, as muscle is metabolically active. If you’re eating the same, then fat gain will be the result. What to do about it: Start resistance training hitting each muscle group twice a week.
3
2
YOU’RE BECOMING MORE PRONE TO PUTTING ON MORE ABDOMINAL FAT: not only are you losing muscle mass but you’re also becoming more insulin resistant. This essentially means you’re less efficient at transforming food to energy and are more likely to store excess calories as body fat. What to do about it: cut back on sugar in your diet, especially “hidden” sugars in many foods so you can move towards better insulin sensitivity.
YOU’RE HUNGRIER OR OVEREAT: you have lower level of the satiety hormone leptin, meaning you’re more likely to get hungry or overeat. What to do about it: priorities lean protein and healthy fats in your diet to stimulate leptin
58
FEEL-GOOD FEEL-GOODFACTOR FACTOR
4
YOU’RE STRESSED: you have consistently raised levels of stress hormone cortisol. This acts like a multiplier for many of the negative effects laid out here: increased insulin resistance, tendency to lay down and hold on to abdominal fat, poor digestion, anxiety, low mood, muscle breakdown, lowered libido…
What to do about it: get your stress under control. We coach various techniques to our clients, including recognising your triggers and picking a different reaction.
5
YOUR GUT HEALTH IS POOR: stress (hello cortisol again) can impact your gut health, as can a diet that has raised sugar, that is high in processed food or low in natural fibres. This can lead to bloated bellies, poor digestion or IBS. Poor gut health can also impact your metabolism making weight loss harder. What to do about it: cut back on processed foods, increase your natural fibre intake.
6
YOU’RE FEELING FLAT SO LACK MOTIVATION AND ENERGY: this can be down to falling levels of your sex hormones, oestrogen and testosterone, which play a role in mood. As well lowered levels of neurotransmitter serotonin due to lowered estrogen levels.
9
YOUR BRAIN IS REWIRING AND YOU DON’T HAVE GOALS OR PURPOSE SO YOU FIND IT HARD TO START OR MAINTAIN A HEALTHIER LIFESTYLE: as we age our brains shrink but not only that, they can actually rewire. When we allow anxiety or stress to prolong (those falling sex hormones, serotonin and raised cortisol) it can wire it’s way into the brain making us more susceptible to it in the future. What to do about it: set goals as research shows working towards something helps our brain health, as does learning new skills, and surprisingly, exercising. Be aware of your state and take active steps to change it if needed do you wire in a new default setting of happy.
10
YOU LACK SUPPORT & ACCOUNTABILITY: technically, this isn’t a hormone point.. but, with all these hormonal changes going on it can feel hard to make headway… and it can be confusing trying to work out what is going on with your body and mind, and why things aren’t working. What to do about it: work with someone who’s trodden this path, who knows what they’re doing and who will not only give you a proven strategy that works, but support you and keep you accountable.
What to do about it: as well as moving your body more and resistance training consider hormone supporting supplement: vitamins C and D, and mineral zinc play a role in supporting our sex hormones. Supplements like black cohosh for women and ashwagandha for both sexes can help balance hormone levels.
7
YOU’RE NOT SLEEPING WELL: when you don’t sleep well, you get stressed, and you’re more likely to put on weight. Again your sex hormones play a role in sleep, as does the hormone melatonin which decreases with age.
Over to you! We hope you found this information useful, and more importantly that you can apply it to your own life.
What to do about it: ensure you practice good sleep hygiene: keep your bedroom dark, slightly cooler, free of electronic devices and establish a routine of going to bed and rising at the same time every day. Move away from screens two hours before bed as the blue light impacts melatonin production.
8
YOU’RE ANXIOUS OR DEPRESSED OR LACKING CONFIDENCE, WHICH IN TURN IS DERAILING YOU: see all of the above - sex hormones, neurotransmitters, stress… you’re facing a melting pot of hormonal changes that on their own can cause anxiety. Add in the physical effects and further psychological anxiety can be triggered. When we’re stressed and anxious we’re also more likely to reach for energy rich food, leading to weight gain. What to do about it: adopt a morning routine, start practising daily gratitude, and work on cultivating a positive mindset focused on opportunities, not obstacles. This mindset work is the main part of our programme, using tools from NLP and hypnotherapy to rewire for success.

to complete payment for your mortgage. So an ideal buyer will be 50 years old in order to have 25 years of mortgage.
* Knowing when to exit is equally as important as getting in early. Generally, off plan phases 1 or 2 are the most attractive for investors.
* Location, location, location…. Leave it to the Mojo experts to recommend the hot spots.
* New built or Resale? Buying privately or through a
spanish company? Properties purchased through an “S.L” offer taxes advantages. It might be the best option for you. Let Mojo team advise you. New built purchase = 10% IVA (plus 1,2% Notary stamp) Resale purchase as private person = 7% ITP Resale purchase via SL company = 2% tax

VISTA LAGO: Key Factors in its Success
Article by Vivion O’Kelly. Images courtesy of BRIGHT
What exactly are we looking for in a well-designed luxury villa? The impressive success of Vista Lago Residences provides us with the answers.
S
uccess in relation to architectural design, construction and marketing may be difficult to define successfully, but if a luxury development of 18 villas is put on the market and 12 of them have been reserved in a relatively short space of time, then we have a definition. The first villas sold in 2021 will be finished by the end of next year, while the entire project will be finished by second half of 2024. Add to that the winning of major awards (World’s Best Residential Development and Best Architecture in Europe in the International Property Awards) and most relevant of all, a close look at the development itself, and we have what could be described as a roaring success in every shade of the word’s meaning. Considering previous successes by the BRIGHT/ UDesign partnership, which includes the award-winning Villa Alcuzcuz, this is as expected. Identifying the key factors that make Vista Lago Residences stand out from all the others may be a useful way of sorting out what exactly we want in a well-designed luxury villa. Without being dogmatic about it, we can reasonably assume that most people decide where they want to live before deciding what they want to live in, and this brings us to location as the most important factor of all.
86
LOCATION AND VIEWS Location means general geographic area, specific location within that area and site location, and if a single reason for the success of Vista Lago is to be identified, it is matching the most outstanding properties with the best possible location. And that would be Andalucía, Marbella and the actual Vista Lago site in the Real de La Quinta estate, situated in the hills above Marbella and bordering Spain’s newest National Park, providing views over the Mediterranean coastline to Gibraltar and Africa beyond.
AMENITIES The amenities on offer are two-fold: those within the 200-hectare (that’s a snip short of 500 acres) residential country club of Real de La Quinta and those outside but close. The former includes a 35,000 square-metre lake with beach, water sports and lake club, tennis and paddle tennis courts, golf course and academy, running and biking track, equestrian centre, boutique hotel and wellness centre, small shopping centre, bar & restaurant and children’s play area. Vista Lago residents and their guests are welcome to use these facilities all year round. The vast range of cultural, commercial, sporting, leisure and entertainment activities available in and around Marbella are simply too numerous to mention here, as are the professional and government service offices and health centres, and all are within a fairly short driving distance of Vista Lago.

WORLD-CLASS DESIGN You cannot buy good design. You cannot sign on the dotted line and expect good design in exchange for money. It is not a commodity available in specific quantities at varying prices, but something intangible that involves a certain knowledge of design on the part of the buyer. As far as design is concerned, you have to know what you’re buying.
That, along with location, is the reason most of the new Vista Lago villa owners have decided to purchase here. They have recognised the enormous creative effort that has gone into every aspect of every Vista Lago villa, from exact site orientation and construction to the finest architectural and interior design details both outside and inside. The style is luxury minimalism adapted to a warm climate, where the living is as much external as internal, the difference between the two being barely noticeable.

PRIVACY AND SECURITY Vista Lago is a gated community within a gated community with full security staff. Each villa, with stateof-the-art security technology used throughout, has been designed individually, each different from the next but maintaining an overall unity of design as a complete development. No property is overlooked by any other.
SUSTAINABILITY AND TECHNOLOGY Both Vista Lago and its mother estate, Real de La Quinta, are fully sustainable developments, with BREEAM certification having been granted to Real de La Quinta and Vista Lago currently in the process of obtaining theirs. This is an internationally recognised guarantee of sustainability, ensuring health, safety and peace of mind for all residents. All properties are smart homes, each with advanced domotics for security, lighting, music, heating and air-conditioning.
CUSTOMISATION Individually tailored packages have been developed to suit the varying tastes and lifestyles of future owners in Vista Lago, allowing the buyer to become as much involved in the design and finishing process as he or she wishes. The complete range of customised options is wide, from Turkish baths and saunas to fully equipped home offices or entertainment rooms.
Comfort and easy living probably best describe this contemporary style, achieved through the use of natural materials in a creative and innovative way, with floor-to-ceiling glass windows and doors, and nothing in the way of the magnificent views from almost every living space. If ever proof were needed that design influences the way we live, it is here in Vista Lago.
INVESTMENT For the numerous professionals involved in a major project like Vista Lago, including developers, architects, interior designers, builders and many more, one of the most satisfying stages is the last, which is seeing all the villas lived in. Many developments take years to reach this stage, but in the case of Vista Lago, with only six villas still available for purchase, it is just around the corner. An investment in Vista Lago is an investment in a secure and attractive future.

Furry Fundraiser Animal lovers came together as one to attend a very special charity luncheon at La Sala Puerto Banus in celebration of the 30th Anniversary of local animal shelter, Triple A. A total of 3,700€ was raised on the day in aid of the many furry friends to be used to purchase new animal enclosures for the site which is currently being fully refurbished. The wonderful afternoon consisted of a 2 course lunch accompanied by free-flowing cava with Peet Rothwell providing the melodic soundtrack. Triple A Marbella cares for approximately 250 cats and 400 dogs with a monthly running cost of around 50,000€ per month, making fundraising events like this one crucial for their survival. After that the soft-top four-seater was always part of any new Mercedes model range, while two-seat roadsters wearing the three-pointed star remained relatively rare until the arrival of the 300SL in 1957. The huge US market had significant influence on European car manufacturers, and the drought of roadsters from the late 70s through to the late ‘80s was caused to the threat of impending US rollover safety legislation that never transpired in the end. When the Mazda MX-5 Miata opened the roadster and convertible floodgates in 1989 the rising tide swept the BMW Z4, Mercedes SLK, and Porsche Boxster into the burgeoning marketplace. Suddenly the sky had no limits again.
TORQUE TALK
A quarter of a Century down the road and a fickle and changing marketplace is once again witnessing upheaval in the open car market. The upswing in four-seat convertible sales has come at the expense of premium two-seat roadsters, with Mercedes axing their SLK and rebirthing the SL as a shared platform with the next AMG GT. Even the S-Class Coupe and Convertible have been victims of this cull on too many model variants in the marketplace. Four-seat practicality and wider engine choice are certainly factors, with the open versions of the C and E-Class having proven very popular. Enthusiasts are also well served by the more sporting AMG versions.
103
TORQUE TALK
Gorden Wagener’s design team has done a great job of increasing the eye appeal of the current Mercedes range, a fact reflected by strong sales numbers. His philosophy of removing superfluous lines certainly makes for a cleaner look that will better stand the test of time. The E-Class Coupe is a thing of beauty, and removing the roof of a car with such fine basic proportions has created an elegant convertible, so it is no surprise that our gleaming white E53 AMG Cabriolet turns heads. One thing that has definitely improved since the dawn of the motorcar is creature comforts, and you can have your posterior warmed or cooled according to your mood. Meanwhile your hair will be kept more or less in place by the power operated Aircap device that rises from the top of the front windscreen frame, and the wind deflector that emerges from between the rear seat headrests. Front seat occupants can even have warm air directed at their necks by the Airscarf duct built into the headrests. And with the state-of-the-art MBUX sat-nav guiding you either via the big screen or a simplified version on the instrument pack or even Head-Up Display, you should never get lost. The MBUX system also readily accepts voice commands. The punch and refinement of the 3.0-litre turbocharged motor is matched by the sheer sophistication of the rest of the car. The fit and finish of the body panels is as good as it gets in this segment, and the interior with its two-tone leather trim and stitched leather on the dashboard looks and feels suitably classy. When you are in the front seats with the three-layer ragtop in place, there is no difference between this car and the Coupe in the view forwards and refinement. Rear seat room is fine for all but the very tall, as is headroom. But perhaps the greatest irony is that the rear seat leg room is marginally superior to that of the larger and more expensive S-Class Cabriolet. You can choose from several kinds of wood trim, but apart from its susceptibility to fingerprints we liked the black piano wood fitted to the test car, where the dashboard and door trim panels have yacht-like inlays to add more visual interest.
The optional Burmester high-end audio system fitted to our test car plays music with superior tonal balance and realism than competing systems used by other car marques. Since the sound escapes into the environment with the top down the cabin acoustic is very different from the Coupe, but Burmester has a unique algorithm that compensates for this as best as possible. The one area all such cars run into a compromise is in boot space. Because the ragtop has to fold into its compartment behind the rear seat, the luggage compartment height is restricted when the roof is in the down position. This requires some clever packing with modestly sized bags.

Power from the bi-turbo straight-six motor is dispensed through 4Matic+, which is the AMG fettled variant of the Mercedes 4Matic all-wheel-drive system. This straight-six (M256) 2,999cc motor is part of the Mercedes modular engine family that encompasses the inline four (M264) 1,991cc, and V8 (M176) 3,982cc motors. These 2.0, 3.0 and 4.0-litre engines all share a common 83.0 x 92.0mm bore x stroke for an individual cylinder capacity of 500cc. Mercedes chose this straight-six engine as their first ever power unit to be mated with a starter/generator feeding a partial 48-volt electrical system that delivers a torque boost to improve low-end response and punch. On paper the smooth and potent straight six delivers 435hp at 5,900rpm and 520Nm of torque between 1,500 and 5,500rpm, with peak power torque boosted for short periods by an additional 22hp and 250Nm from the beltless starter generator. However, the additional structural reinforcement built into its shell means this 4WD Cabriolet tips the scales at a whopping 2,054kg, some 45kg heavier than the S500 that shares its engine! However, thanks to the peerless traction of the 4Matic+ all-wheel-drive the stopwatch records an impressively rapid 0-100km/h sprint of 4.5 sec, while top speed is electronically limited to 250km/h. The seamless application of the turbocharged six with the starter/generator system results in excellent low speed throttle response, eagerness to rev, and a strong and progressive flow of power, while the crisp straightsix soundtrack becomes more visceral at high revs, especially when you are driving al fresco. And with the exhaust flaps wide open as you pass high walls or drive through a tunnel this can even reach spine tingling levels. The counterpoint is that a good i6 engine is inherently balanced where a V6 requires a balance weight on the end of its crankshaft. The extra silkiness of the new engine is both palpable and quietly satisfying. With the active damping system adjustable at the touch of the rocker switch on the console we were able to instantly adapt the suspension to the road conditions. The Comfort setting works nicely around town, and helps to take the edge off the firmer ride from the optional 20-inch alloys fitted to our test car.

Sport is a nice compromise when you get onto faster roads with bends. However, while the Mercedes-AMG E53 Cabriolet feels responsive and agile despite its weight it is best described as a refined cruiser with a sporting edge, and in that respect it does what it says on the tin. Some enthusiasts have called these sporty six-cylinder models “AMG Lite”, but the fact is that they provide the perfect halfway house between mainstream Mercedes models and the hard-core AMG V8 genre with their rousing NASCAR grade soundtrack.

t has been a busy few months with the move down to our provisional shelter while important refurbishing work takes place at our old site. This year we celebrate 30 years since TripleA began, lots of changes are taking place and work continues to be challenging with over 500 animals to take care of. Our shelter relies so much on our wonderful volunteers and fundraising - we simply couldn’t remain open without the support of our Animal Loving friends in Marbella & San Pedro. To celebrate our 30 year anniversary we will be holding some exciting events over the coming months including 007 James Bond Night at Las Brisas Golf Club in June. To raise awareness and money we have also held a photography competition entries, here are the 12 finalists and the winning entry! The finalists were picked by a photography judge from Lincolnshire and the winner chosen by WildLife Fine Art photographer Jonathan ZLee whose work can be seen here: www.jonathanzlee.com We received over 100 stunning entries and all of them will be displayed in our Anniversary book to be released in July. Jonathan says “there’s personality, emotion and action conveyed in this shot and a palpable connection between the subject and photographer - there’s joy and trust in those eyes.” We are very grateful to Society Magazine for covering this competition and hope you enjoy seeing the entries. For any information, help with fundraising & volunteering please contact EliseTripleA@gmail.com
Thank you for your ongoing support!

The winning photo is by Lisa Ijsselstein who says “I like this picture because of his lovely happy face. My first walk at Triple A was with John and we spent almost an hour waiting for him to trust us enough to put the leash back on. This picture was taken a few days later, he has his leash still on because I didn’t know if I would be able to catch him after letting him off leash, but no need as you see :) I was so happy to see him come running towards me this time and see him having a good time. He’s the best!”

For many of us, hitting 21 marks (at least symbolically) a new, more senior stage in life. Sure, you can buy cigarettes and alcohol from 18, you can drive a car and even go to war but you’re still... well, fucking annoying frankly and say “like” and “literally” far too much and at the wrong time. 21 though, that’s proper adulthood dawning. You’re entitled to full minimum wage (woooo!). You can drive bigger vehicles like lorries and buses, fly planes and even adopt a child.
If you’re an iPod though, 21 marks not so much a new chapter as the end of the book. You’re toast (not, like, literally), as announced last month by manufacturers Apple. The current stock will not be replenished so once they’re gone, they’re gone.... or selling for a fortune on Ebay. The wildly popular product once revolutionised the personal music space and helped propel its previously floundering makers towards becoming the 3rd biggest company in the world, more recognisable than the very fruit they nicked the name off – The whole world’s population refer to Apple as “Apple” whilst only 5% natively refer to an apple as such.. and a large percentage of them blame one for us getting kicked out of Eden. When it launched in 2001, the iPod wasn’t the only digital music system on the market – portable mp3 players had been knocking about since the mid 90’s – but through a combination of classic design, functionality and space-saving utility, it swiftly became the industry’s high water mark. Speaking of which, former Apple big cheese Steve Jobs is said to have angrily dropped a prototype into an aquarium in front of engineers to pithily demonstrate via the escaping bubbles that there was still space to be saved internally. It’s the kind of signature, snarky move through which the tech genius simultaneously catalysed great innovation and scared the shit out of Apple employees, rivals and, well... fish.

Hitting the shelves sporting 5GB storage and a satisfyingly tactile scroll wheel, the first generation iPod held 1000 songs and paved the way for future iterations of various sizes and configurations, sporting enhanced storage, colour screens and cases, shuffle play and eventually, in the iPod Touch, touch screens, wifi-based browsing, HD cameras and full IOS app support – essentially an iPhone, but one your mum can’t reach you on. I still have mine from the early 2000s and though it only sounds through one side of the earphones and no longer holds a great charge, I’ll be damned if it’s getting thrown out. It provided untold joy and comfort for close to a decade of my life, travelling with me at all times and all over the world, making 20 hour bus journeys in India more tolerable and providing a soundtrack to countless nights of fun and hedonism the 40 year old, double mortgaged me tries not to dwell on, lest I turn misty eyed, get another tattoo, buy a motorcycle and abandon my family... the dog would be devastated. There’s no denying smartphones today are a technological wonder (albeit possibly a social catastrophe) and can do everything and more that an iPod could but that strangely dilutes their magic. A classic iPod was a gateway to music, no more, no less. There was a purity and romance to that. Do you really need anything except the road before you and the music in your ears? - a near-endlessly reconfigurable soundtrack to the story of your life – the good version too, the one in your head!
I vividly remember cresting a mountain in Kashmir on horseback 16 years ago and as magnificent views of a turquoise lake in a green valley opened up below me, Metallica’s symphony orchestra-accompanied rendering of Ennio Morricone’s The Ecstasy of Gold sent shivers down my spine. In that moment, I might as well have been Clint Eastwood. Had I been carrying a mobile, not an iPod, I’d no doubt have an insta-worthy selfie but probably half as vivid a recollection. As with an actual movie, music can augment and enhance any experience, more keenly focussing your attention on the here and now and not the there and then of your next social media post. In truth, the horse was more pack-donkey than stallion and I was only riding it because I’d sprained my knee. Five days into a Himalayan trek, sleeping in a tent, mildly infected facial piercing courtesy Ko Pha Ngan, I was more hairy dirty than Dirty Harry (I think I also had the runs...), but the scenery at least was every bit as awe-inspiring as I perceived it and the soundtrack tipped the experience over into the unforgettable. Not least because a lot of effort went into compiling an iTunes library for a year long global jaunt, my little black box was by far my most cherished possession and the ultimate travelling companion.... I think I might need to stroke it (the iPod) when I finish writing this. Of course these days most of us stream music on demand, with close to 100 million songs available online; too many for even the bravest device to contain and an administrative Everest to categorise and upload worthy of some foul dystopian nightmare. Apple clearly aren’t quite as sentimental as me, happy to send the iPod the same way as the cassette player and minidisc, relics of the past that brought unquantifiable joy but are no longer “relevant”. We might be continuing apace into the metaverse, but I’ll always have that mountain in Kashmir... the one where I had the shits on a donkey.

Bettina, our resident foodie, offers her insider knowledge on plant based cuisine and takes us on a culinary journey as she travels the world in search of gastronomic inspiration.
Tofu has been getting some serious spotlight as plant based eating becomes more mainstream. While it may look intimidating (or worse, bland and boring), this plant protein is easy to work with and versatile enough to take on the flavors of whatever you are cooking. But where did tofu come from?
Tofu originated in China more than two centuries ago. The production of tofu first began around 206 to 220 BC allegedly during the Han Dynasty. It finally reached Japan in the 8th century AD. In the 1960s, the Western world became more conscious of healthy eating, and tofu arrived on its shores. Although it was still an underrated plant based protein, tofu steadily began to grow in popularity. Tofu became so widely used that by the early 1980s, there were over two hundred thousand tofu manufacturers globally, over half of which were located in China. Others in Japan, Korea, Indonesia, Taiwan, and in many others in the Western world. These days tofu is widely produced and enjoyed in most countries around the world. With so many brands and variations out there it can be hit and miss! Even though I have

been cooking plant based for a while it has taken me time to get into Tofu. My revelation came when I first attempted to make it at home choosing beans that were well sourced and grown organically. Going through the process and eating tofu while it’s still warm and fresh changed my mind. With that being said, choose a good one and organic if possible. I was thinking about this recipe for a while, it includes noodles and a curried sauce with crunchy, coconut crusted tofu. This is an absolute winner for those rainy days where you need a nice big hug in a bowl. I’m always looking for creative ways to pimp up tofu and adding a tasty coconut crust worked really well for this laksa style creamy soup with noodles. Try out this lovely warm and comforting dish, I hope you enjoy.
COSTACUISINE CUISINE COSTA
Coconut Crusted Tofu with Shallot & Creamy Coconut Noodles INGREDIENTS: Makes 2 servings • 170g rice noodles • 260g hard tofu, sliced into 1cm thick steaks • 1 head of bok choi • olive oil for frying For the Crust: • 50g chickpea (gram) flour • 60g plant milk • ½ tsp baking powder • pinch of salt & pepper • 4 tbsp desiccated coconut (enough to coat the tofu steaks)
For the Broth: • 1 shallot, finely sliced into half moons • 1 400ml tin coconut milk • ¼ chinese cabbage, finely sliced • 1 tbsp yellow curry powder • ½ tsp salt For the Topping: • handful of thai or normal basil leaves • ¼ fresh green or red chilli (optional) • handful of black sesame seeds • drizzle of sriracha sauce
METHOD: Heat the olive oil in a pan and add the shallots, fry for 1-2 minutes and then add the cabbage, curry powder and salt and fry for another 5 minutes, stirring occasionally. Then add the coconut milk, stir well to combine and let simmer on a low heat. Meanwhile whisk together the chickpea flour, milk, baking powder and salt & pepper to form a batter. Dip the tofu steaks in the batter and coat all sides, then dip in the desiccated coconut to cover. Add a generous amount of olive oil to a pan and once heated, add the coconut crusted tofu stead and fry until golden brown on both sides. Add rice noodles to a pot of salted boiling water and cook as per packet instructions, but keep them slightly al dente. Before draining them, place the whole bok choi into the bottom of the colander and pour the boiling water and noodles over the top of the bok choi, letting them sit for a couple of minutes to gently steam it.
Veganism can be both very exciting and easy. I have three books to choose from - the 7 Day Vegan Challenge being the one that fits the ‘how to go vegan bill’ the best. All of the books are available on AMAZON.
Remove the coconut milk broth from the heat and add the drained noodles, stir to combine, then serve into 2 large bowls. Chop the tofu steaks horizontally in half to create triangles and lay these on top of the noodles. Then slice the bok choi in half and add to the bowls. Top with basil leaves and chilli (if using), sprinkle with black sesame seeds and drizzle with sriracha.

here are few better jobs than food reviewer, particularly when the food in question comes from the kitchens of one of the country's most respected, globally recognised hotels. Finca Cortesin luxury resort remains at the pinnacle of Andalusia's leisure scene, its signature restaurant REI arguably the new jewel in its crown... certainly come dinner time. Throwing open its instantly prestigious doors in March, REI (inferring thanks, gratitude, courtesy and reward in Japanese culture) offers guests a fusion of exquisite, traditional Japanese dishes and mediterranean influences, sourcing the very best seafood and seasonal raw ingredients locally. The sheer freshness of the produce is brilliantly evident, the experience only heightened by the open kitchen, allowing diners to watch their picks made-to-order by head chef Luis Olarra and his talented team. The young chef trained alongside Michelinstarred Ricardo Sanz in Madrid, joining Finca Cortesin in 2014 with a level of passion, precision and appreciation for quality produce sure to resonate with critics and guests alike. We tried the highly recommended degustation (tasting) menu for the complete experience, opting for the national pairing which saw sommelier Augustin Navarro bring crisp Cava to enjoy alongside our starters, a light Albariño perfectly paired with sashimi, cherry with tartare and a full-bodied white with our sushi. Delightedly working our way through the dishes and drinks, the perfectly curated balance of ingredients, textures and flavours is testament to both the attention to detail, finesse and, ultimately, talent running through the establishment, expertly conducted by manager Romello Borges. Friendly and attentive, Borges

exemplifies the standard of care you expect from the multi-award winning resort, the feelings of royalty the food and service invoked in us only somewhat undermined by returning home to find I'd lost my keys – If you're lucky though, you'll actually be staying over at Finca Cortesin (“Resort reviewer” - now there's a job!) Our degustation menu featured: Oyster “Marennes Olerón” with smoked avocado, lime zest and a Yuzu touch. Sanlúcar King Prawn tempura with Beluga caviar Crispy rice with seaweed cream and trout roe
There genuinely wasn't a weak link to be found, both presentation and pairing sublimely on point, though the nigiri were a highlight for me and my partner couldn't help but close her eyes whilst eating her dessert, which I think is a good sign (there were involuntary, deeply satisfied sounds too...) We also agreed the Teriyaki Angus cheek, combined with a medium red was a decadent showstopper. Despite having sampled more than a dozen
dishes, the prospect of a go-around with an International pairing menu featuring Champagne and other European specialities seems as good an excuse as any for an imminent return. Less than two months into being, REI at Finca Cortesin exudes a professionalism, confidence and quality in every aspect of service which suggests it, and head chef Olarra have a bright future here. The immaculate but inviting dining room had a perpetual, quiet buzz and palpable air of contentment - my partner's involuntary murmurs of satisfaction weren't the only ones we noticed, much to her relief – and the staff were uniformly excellent, exemplified by Olarra, whose open kitchen leaves nowhere to hide and produces food with absolutely no reason to.

farm to table How Cascada delivers on its promise of being a sustainable restaurant
At the core of Cascada’s international cuisine lies a deep commitment to sustainability and self-sufficiency. To support this notion, we operate our own plot of land, situated in healthy natural eco-system in Istán where, using only ecologically friendly agricultural methods, we grow and harvest quite a few of the ingredients that are served in our restaurant. Consisting of two main areas (farmed and wild), the land is extremely flexible and produces a wide variety of fruit, vegetables, and herbs, including one of the spiciest chilli peppers in the world, the Carolina Reaper. And of course, everything grows naturally without the use of any pesticides. It’s all part of the magic at Cascada! Our plot in Istán, pure unspoiled nature and the perfect place to grow food with simply exceptional flavours Collecting the day’s spectacular harvest, our executive chef Jacques Lagarde
The Carolina Reaper, not for the faint-hearted
Beautiful loquat, used in one of our amazing desserts
