This last month has seen a vast increase in “to rent” boards and much talk of empty locales especially in our flagship shopping area of Puerto Banús. As much as we would all prefer these designer stores to be full of the latest offerings it is nevertheless understandable that they close as their leases run out, take some time to recharge their batteries, refresh and return to negotiate a new deal more in line with the current economic climate. This raft of empty stores is only temporary, and normality will return hand in hand with our much-missed holidaymakers. Restrictions are easing by the week and we can tentatively begin to talk tourism again, small steps but progress, nonetheless. This month we welcome International Women’s Day, British Mother’s Day, St. Patricks Day and World Wildlife Day! With restaurants reopening after last month’s brief closure, be sure to support local and treat your loved ones to lunch to celebrate these occasions. If the last year has taught us anything it’s to make the most of family-time and support all the businesses now working harder than ever to offer us all a semblance of normality. This month’s cover star needs no introduction, known simply as Gisele, the Brazilian born supermodel is also the wife of American football quarterback, Tom Brady. These two define the term power couple with an estimated combined net worth of $650 million. ow known simply as ‘Gisele’, it´s hard to believe that supermodel, Gisele Bundchen, never turned heads in school and was even teased for her appearance. “I was taller and skinnier than everyone else and they called me Oli, short for Olive Oyl”,(a reference to cartoon Popeye’s gangly wife) she recalls. One of five sisters, Raquel, Graziela, Gabriela, Rafaela and her non-identical twin sister Patrícia, Gisele Bundchen’s life changed when she was scouted at age 14 in a shopping mall. Gisele had attended a modelling course with some of her sisters and friends. The course ended with a trip to Curitiba, Rio de Janeiro and Sao Paulo. It was during this trip that scouts spotted Gisele and invited her to come to their modelling agency. With the ambition to be a volleyball player, Gisele first dismissed

the thoughts of a career in fashion but reconsidered at the idea that a little extra money might help her out. In 1995, Gisele traded her tranquil, humble country-girl life for the hustle and bustle of the big city moving to Sao Paulo. Giselle’s career started out with teen magazines and endless castings in Brazil before debuting on the catwalk in 1996. Despite not speaking English, she moved to New York in 1997 aged just 16, where she caught one of her first big breaks when designer Alexander McQueen chose her for his runway show. Her successes continued, gracing the cover of Vogue and many of the other fashion magazines across the globe. By the end of 1999, she already had an impressive three Vogue covers under her belt. Gisele steered a big change in the fashion industry, with brands saying goodbye to the pale-faced, pencil-thin, “heroin chic” look and hello to a sexy,

healthy body, with curves in all the right places. In 2000 Gisele made headlines signing a $25 million deal with Victoria’s Secret as well as being named “The Most Beautiful Girl in the World” by Rolling Stone magazine.

In 2004, Gisele made her acting debut in Taxi starring Queen Latifah and Jimmy Fallon. She also appeared in The Devil Wears Prada as Serena, a friend of long-suffering assistant Emily in 2006. Gisele enjoyed a very high-profile romance with actor, Leonardo DiCaprio before meeting American footballer Tom Brady. The couple tied the knot in Los Angeles in February 2009. That same year they announced they were expecting their first child. A baby boy, Benjamin was born December 8th 2009, and their daughter, Vivian followed in 2012. In 2010, Gisele signed a contract to represent Dutch brand C&A in Brazil. After Gisele’s commercials aired, sales soared 30%. Following the 2010 Haiti earthquake, Bundchen donated a generous $1.5 million to help victims of the tragedy, more than was given by many governments, and when asked why at the time she simply answered: “because I can”. Gisele is an avid supporter of a variety of environmental causes, including clean water initiatives, environmental sustainability, and the preservation of South American rainforests, as well as cancer research and treatment. She has also donated money to help the victims of natural disasters including Hurricane Katrina and the 2011 Japanese earthquake and tsunami. Apart from being a goodwill ambassador for the United Nations Environment Programme, she also heads the non-profit organization, Rainforest Alliance, involved with biodiversity conservation and sustainability. Before retiring from the catwalk in 2015, Giselle was named Forbes’ highest paid and most successful model amassing a fortune of around 400 million dollars through lucrative contracts with everyone from Victoria’s Secret to Louis Vuitton, Christian Dior, Dolce & Gabanna and Ralph Lauren. Not since the original supermodels of the Nineties has there been a model with such power and influence as Gisele Bundchen.

ast month the Duke and Duchess of Sussex announced that they are preparing to welcome a brother or sister for their son, Archie Mountbatten-Windsor. The couple shared a black and white photo of themselves sat under a tree with Harry resting his hand on Meghan´s head as she cradled her bump. The photo was taken by longtime friend and photographer, Misan Harriman. Mr Harriman shared the photo on social media, adding: “Meg, I was there at your wedding to witness this love story begin, and my friend, I am honoured to capture it grow.¨ The happy news follows Meghan´s devastating miscarriage last year. After the decision not to give son Archie a royal title it is safe to assume baby number two will also follow suit.

espite their breakup, Justin Theroux is continuing a tradition of paying tribute to his ex-Jennifer Aniston on her birthday. She may not be his lobster, but she’s still his “B”! Although they split just after Valentine’s Day 2018, the 49-year-old actor has sent his ex birthday love on social media every year, even referring to his nickname for her, B. Theroux and Aniston wed in 2015 and made the mutual decision to split at the end of 2017, a couple of months before they officially announced their breakup. In a 2018 interview with The New York Times, the actor said, “It was kind of the most gentle separation, in that there was no animosity.” If only every relationship could be this agreeable!

he Queen’s granddaughter, Princess Eugenie has welcomed her first child with husband, Jack Brooksbank. The 30-year-old gave birth to a baby boy on the 9th of February weighing 8lbs 1oz. A statement from Buckingham Palace announced that, “The Queen, The Duke of Edinburgh, The Duke of York, Sarah, Duchess of York, and Mr and Mrs George Brooksbank have been informed and are delighted with the news. This is Princess Eugenie and Jack Brooksbank’s first child, The Duke of York and Sarah, Duchess of York’s first grandchild, and the ninth great-grandchild for The Queen and The Duke of Edinburgh. Her Royal Highness and her child are both doing well.” Eugenie took to her own Instagram page to share the happy news with her 1.2million followers as she shared a black and white photo of her and Jack holding their newborn baby boy’s hand.

While Woodley has continued to keep quiet on the personal milestone, the 37-year-old football pro made sure to credit the star for her support, even if not by name. “2020 was definitely a crazy year filled with lots of change, growth, some amazing, memorable moments,” Rodgers said as he accepted his award for 2020’s Most Valuable Player. “I got engaged,” he revealed, “and I played some of the best football of my career.” Although the news of their relationship is fairly new, a source close to the couple revealed the twosome “spent the entire fall together and lived together throughout.” Congratulations to the pair!

arbella regular and TOWIE star, Mick Norcross was sadly found dead in his home last month. Essex police said the death was not being treated as suspicious. The businessman and father of Kirk Norcross first appeared on the reality show back in 2011 in his position as owner of Sugar Hut, a popular Brentwood nightclub often frequented by the cast. The morning before his death the star tweeted to his over 500,000 followers saying, “At the end remind yourself that you did the best you could. And that’s good enough.” In tributes on social media fellow TOWIE stars past and present, including Gemma Collins, who briefly dated Mick and James ‘Arg’ Argent, called him ‘one of the good guys,’ and ‘a true gentleman.’ RIP Mick.

Interesting facts you may not know about this mysterious month…

Victoria Wood is a freelance writer and mother of three based in the south of Spain. Life for her is primarily based around a healthy diet, lifestyle and educating herself and those around her how to live well. Victoria has been a writer for the past twenty years and her work includes an environmental column, journalistic editorials and social media management. She is also a proofreader and editor, and is currently working on her first novel.

The name of the month March stems from the Roman god of war; Mars. This you might already be aware of but back then March was actually the first month of the year in the Roman calendar as January and February did not exist. So the first of March would have then been New Year’s Day. Speaking of the Roman calendar the mid point of the month was names the ‘ides’ - you may have heard the phrase “beware the ides of March”. March the 15th or the ides of March was the first full moon of the year and the date that Shakespeare’s Julius Caesar was warned about as this would be the day he would fall. Turns out this was the date on which he was murdered by approximately sixty conspirators!

The birth flower of a March baby whether Aries or Pisces, is the daffodil and the birth stones are both aquamarine and bloodstone which represent courage. March always finishes on the same day of the week as June, year in year out. It also marks the beginning of spring when the animals wake up from hibernation and the Vernal Equinox. This means that the sun sits directly in line with the equator and the day and night are exactly equal in length.

March madness is a stateside phenomenon that celebrates the illustrious basketball tournament when the NCAA (National Collegiate Athletic Association) basketball teams compete for the national championship, and it is just basketball madness over there during the season.

Well known for his appearance in Lewis Carroll’s Alice in Wonderland, the March hare was depicted as a crazy character who scarcely made much sense, in fact nonsense is definitely how you would describe his speech. The phrase ‘mad as a march hare’ stems further back than Carroll’s writing and refers to the antics of the European hare during mating season which falls in March. It is now widely used to describe anyone or anything that acts or behaves erratically, unpredictably or overexcitedly.

So this went on to be a phrase used by people sending a warning to one another to beware of this cursed date…a bit like Friday 13th. It was also a deadline for settling debts.

It is reported that the first ever telephone call was made in the month of March, on the 10th in 1876 to be precise. The inventor of the device Alexander Graham Bell placed a call to his assistant requesting his presence. This correlates nicely with the launch of Twitter having also been in March when founder Jack Dorsey inaugurated the site with the very first tweet: “just setting up my twttr.” Slightly different forms of communication but the concept behind it is similar!


A record was set on March 27, 2015, to March 2, 2016 when astronaut Scott Kelly and his twin brother entered in to a unique experiment. The identical twins were split up for an entire year as Scott went into space to live as an astronaut - the longest period of time spent in space to date. The idea was to learn better the genetic, physical, and cognitive toll of being in space for a long period of time by comparing the two brothers after completion.

Other March launches include the founding of the Peace Corps - JFK’s volunteer organisation that has aided developing countries with health care, education, and more since March 1st, 1961. Also the Eiffel tower was climbed (literally - the elevators were not yet operating) for the very first time on Sunday 31st March 1889. Gustave Eiffel showed some of the famous personalities of the day what was then the tallest tower in the world; he led them to the top of the tower which took over an hour as they climbed the 1665 steps from the esplanade to the top. This is not, and was never, open to the public who would only be permitted to use the 674 steps from the bottom up to the second floor a couple of months later.

Another record-breaking March moment was when on March 17th 1973 (also St. Patrick’s Day) Pink Floyd’s best-selling album ‘Dark Side of The Moon’ went on the Billboard Top 200 chart list at 95. It remained on the list for fourteen years which was, and still is a world record.

March is famously known for hosting St. Patrick’s Day on the 17th when the world goes mad in the name of the patron saint of Ireland dressed in green and guzzling Guinness! Easter Sunday may also take place in March; an occasion causing Easter bunnies, eggs, and bonnets to appear but really should be celebrating the resurrection of Jesus Christ on the third day after his burial.

Nicole is of Dutch and Indonesian descent born in Holland and raised in Andalucia, Spain, and attended Aloha College. In 2004, she attended the prestigious Stella Adler Academy of Acting in Los Angeles and graduated in 2007. She has worked and lived in Holland, Spain, UK and USA gaining invaluable experience working with some of the world’s most talented actors and directors including Rutger Hauer at The Film Factory, as well as Director, Peter Yates. She founded the Perth Film School (Australia) & Marbella Film School (Spain).

Lights, Camera...Action!

One of our wonderful teen students at Marbella Film School, Fred Pritchard, secured a role in ‘Warrior Nun’, playing the role of ‘Diego’, a sick orphan who shares a room with the lead character, ‘Ava’, played by Alba Baptista. To date he has starred in two episodes, so we decided to sit him down and find out a little more about his experience.

Can you tell us a little bit about how you got into acting? After moving to Spain 5 years ago at the age of 9, I developed a love of acting through performing in drama lessons and productions at my school, Laude International College in San Pedro. I continued to learn and broaden my experience through attending classes with Nicole at Marbella Film School. My first experience of filming was appearing in a live action trailer, Anthem Conviction, for the EA Sports video game which was directed by Neil Blomkamp. It was filmed in Ubeda and Sabiote in Andalucia in a spectacular medieval castle. The experience was amazing but performing in a Netflix series felt even more exciting.

What was it like being on set and how did you feel? The excitement started when I arrived and was given my own trailer to relax and get ready into my costume, that is when it really began to feel real. I was driven to the location with my fellow actors which made me feel very important. When we arrived on set it was a hive of activity. I couldn’t believe how many crew members are involved behind the scenes from the lighting, sound, props, make up, wardrobe and camera

operators to name just a few! Each person plays a crucial part and seems so busy, but as soon as the director calls ‘silence’ and ‘action!’, everyone stops completely still and you could hear a pin drop. Each scene was shot several times with different camera angles, or until the director was happy.

What was it like working with the rest of the cast? I feel so lucky to have worked with such professional and talented actors. My scenes were mainly with Alba Baptista from Portugal who is incredible in her role, Frances Tomelty, who is a very experienced and well-known actress from Ireland and Tristan Ulloa, a popular Spanish actor. Although I was very nervous, they were all so patient and kind to me and gave me plenty of advice. I worked with two different directors on different episodes, Jet Wilkinson and Agnieska Smoczynska. They had different styles and I realised how each project can be given a different dynamic by the director.

Mahesh Jadu plays the character ‘Vilgefortz’ in ‘The Witcher’, an important character in the villainous side of the story. Mahesh is a tremendous actor who is well known for starring previously in ‘Marco Polo’ on Netflix. Every summer Mahesh teaches master classes at Marbella Film School. I personally attended one of these courses, where he focused on tackling villainous characters, and I even got to film a short scene under his direction. This entire experience was hugely rewarding, and I extremely enjoyed it. He helped me understand what mindset you must put yourself in and refined my skills and techniques.

It was an incredible and exciting experience for me, and I have learnt so much about how the film industry works. In the future I would love to continue my acting learning journey and I hope to study Drama at University one day. In the meantime, I will carry on enjoying my classes with Nicole at Marbella Film School.

CONTROLLING CRAVINGS Those pesky cravings, whether it’s crisps, chocolate, a swift half or a glass of vino, we all get them, but why? And what can we do to help control them? In this article we take a look at the evolutionary foundation of cravings, common causes, factors to consider and more importantly how to manage them?


Firstly let’s practice some self-compassion. Although we live in a high tech world, our bodies are still playing evolutionary catch up from our days as hunter gatherers. As we never knew where the next meal might come from, there’s evidence to suggest that we’re programmed via our genetics to overeat when there’s abundance.

If you think your cravings are getting the better of you and you’d like to start getting them back under control, it starts with awareness. Here are some factors to consider:

l NUTRITI NUTRITI ON AL :

Track your portion sizes at main meals and the balance of carbohydrates, proteins and fats. You want to have a good idea how much you’re actually eating, and what you’re eating.

We have a hormone called leptin that signals when we’re full, but certain foods trigger it more than others (more on this later) and some of us have lower levels to begin with, meaning we’re more prone to overeat. Research into eating habits has shown that when we’re faced with an over abundance of food, we’ll tend to overeat by 30 50% (there’s a fascinating psychological experiment with secretly self-filling soup bowls that’s a great read!). That’s why the all you can eat buffet is a danger zone, and why the old adage of using smaller plates to serve food does work if we’re looking to drop weight. It appears we’re programmed to eat by what’s in front of us rather than by what we actually nutritionally need.

Of course snacking feeds into this as it’s when we think we need some extra food (or a drink) when in fact there’s no nutritional need for it. There are many causes for cravings, including stress (when our flight or fight is triggered we crave high energy food for the physical action that these days rarely accompanies the stress response), lack of sleep, dehydration, magnesium deficiency, habit, boredom, and of course, actually being hungry.

Protein and fats trigger leptin, but many of us have diets that are too high in carbohydrates, which don’t trigger it as much. If those carbohydrates are fast energy releasing (high sugar) then the problem is exacerbated as we can snack, then crave more as our leptin levels haven’t been significantly triggered.

Make sure you track your drinks as well. Often when we feel hungry or fatigued it can be mild dehydration, so aim for 2 litres of water a day.

l PHYSIOLOGI C AL : Our hormone balance can be off, particularly if

we’re stressed and/or not getting enough sleep. The main culprit here is cortisol, which not only makes you crave high sugar and high starch snacks, but leads to the body holding onto body fat, particularly in the abdominal area.

l ENVIRONMENTAL:

Are you keeping a lot of the food you shouldn’t be eating a lot of around the house? If you are aim to minimise it or hide it, so you don’t see it and get triggered to eat it. Likewise if you’re around others who snack, explain to them that you don’t want to and ask them to support you in this.

l PSYCHOLOGI C AL : Snacking out of habit is a big one. We will have

triggers, like making a coffee and reaching for a biscuit, so learn to realise your triggers and then perform a pattern interrupt to break the habit. Replace the reward (biscuit) with something else - read a few pages while the coffee brews, call a friend, something other than eating.

Once you understand better what’s happening you can start to manage your cravings better, here are 10 tips to help you: • Make sure you’re drinking plenty of water, not only will it keep you fuller, it will ensure your hydrated and not mixing up dehydration with hunger. • Ensure your diet is healthy, balanced and that you’re getting enough protein to trigger leptin. Keep your overall sugars low. • Practice stress management techniques like meditation, breathing, going for a walk… whatever works for you to keep your cortisol levels down and ensure you’re getting enough good quality sleep. • Educate yourself a little on portion sizes and make sure you’re getting

your main meals broadly right, then you know there’s no physiological need to snack. • Keep temptation out the house, or if you have to have it, hide it so it’s out of your eyesight most of the time. • Learn your triggers and practice distraction when you experience the trigger - do something else other than snack or drink. • Remember that alcohol is actually a stimulant so won’t help you sleep better, and will trigger more snack cravings. It sounds dull, but try a herbal tea or fizzy water with some fruit.

• Eliminate ultra processed foods these are foods that are a long way from nature with a lot of additives - think “potato” chips in cans. It’s easy to over consume these types of foods as they bypass some of our hormonal triggers. • If you must snack go for high protein/ high healthy fat foods, like a small spoon of good quality peanut butter or a handful of raw nuts. • Finally, when you do snack, drinks a big glass of water first, eat a small amount and wait 20 minutes, it takes this long for the message to get from your stomach about whether you’re satiated or not.

Acknowledge & Release Before we even think about releasing stress we’ve got to acknowledge that it’s there in the first place. Have you ever had a pain in the body you can’t explain? Our muscles and tissues are great at healing themselves - so if the pain is lasting more than 6 months to 1 year perhaps it’s time to put down the foam-roller and dig a little deeper. We can have pain/ stress within the body because we’re not tapping into our parasympathetic nervous system enough (our relaxed healing body state), so we’re not teaching our bodies to release the tension naturally. Just observing the body to understand where the stress could be coming from,

acknowledging how it could link to our mindset is so important; a skill that takes practice none-the-less... Exercise; take 5-mins today to sit, take one hand to your belly and one hand to your heart then come back to your natural breath. Rather than turning off the brain, instead, think about all the stressors you have coming up in your life, and notice where in your body you can physically feel it. Perhaps it’s in your shoulders, your hips or jaw? As you breath out nice and slow, try to start relaxing that sticky area, let those tensions melt away. It may take time, but with patience and trust, you will let go.


More Oxytacin Let me introduce you to Oxytocin; the cuddle compound. A hormone wellknown for its role in child-birth, breastfeeding, and maternal bonding. It’s often called the “love hormone” which makes sense as it reinforces our relationships, plus it’s a total stress crusher! Humans are wired for social support to bump up levels of happy hormones, Oxytocin being a key player in lowering inflammation. A solo hug (furry friends included), and especially with someone you love can reduce cortisol levels (stress hormone), help you heal overburdened adrenals, and fight free radicals (toxins); not to mention it feels plain good! Activity; give the ones you love extra hugs, squeeze them tight for 20 seconds + (even if you feel more comfortable with a mask). Then think, do you know anyone who lives on their own? If so, remember they NEED this social interaction even if it’s virtual.

Anti-stress diet! We now know emotions & psychological wellbeing play their part with stress, but it’s also true that the body is totally connected. The feet for example are often linked to hip pain, love of processed foods could be a sign of poor sleep hygiene, and stress is frequently paired with unhappy gut-microbes (good bacteria within the digestive tract). After all anxiety is a symptom and thats one we want to keep away! So how do we make our belly happy again, and how did it become unhappy in the first place? Well, first we have to match our gut with where its at. If you’re someone who struggles with gut symptoms or IBS then munching RAW like Rodger Rabbit will only make your symptoms worse! For sensitive stomachs prioritise hot, cooked veggies, soups, stews and curries. Enjoy a diet containing mostly plants, but be in tune with what your body needs to fuel your lifestyle. Limit sugar, anything artificial and sorry

to say alcohol! Always pick whole foods rather than packaged, versus refined and perfect. Let herbs spice up your life, get among legumes (beans and pulses), dabble in fermented food, taste, explore and most importantly enjoy. Food choice is important but focussing primarily on the health aspects of food can sabotage our relationship with it (and others). This outlook can lead to further gut issues, and you guessed it stress! So let’s not forget food is about more than health, food is about community, culture, experiences and so much much more.

Tine’s Daily Question… Currently wherever I go I am asked the same question by people I meet - what is the property market like? Or what are your predictions for the future Marbella property market? These strange times with restricted travel are the apparent reason for a somewhat quiet real estate market, however quiet is not the correct word as interest in Marbella real estate is extremely strong. During the last year people appear to have revaluated their lives, understood that work can be conducted from home thus offering the possibility of being abroad for a longer period of time without disrupting business. People have become hesitant of flying to Thailand for a few months, or Miami for a month or even 2 weeks in the South of France combined with two weeks in Marbella during the summer holidays. Therefore, the option of owning a private villa with a private swimming pool has become even more appealing. The ultimate goal is finding the right conveniently accessible location – alas where can one catch a 2–3-hour flight within Europe to a destination where warm sunshine can be enjoyed nearly 340 days of the year – Marbella, ticks all these boxes. Without a doubt when flights become more frequent and Covid-restrictions are lifted the real estate market will be booming. Although property acquisitions are being conducted by Facetime viewings the majority of buyers understandably still wish to inspect their dream home prior to purchasing. So, bring on the vaccine and open the borders – let the fun begin.

A cortijo is described in the dictionary as a traditional rural dwelling in Southern Spain, which has its origins in ancient Roman villas, often an isolated structure associated with a large family or livestock in the vast and empty

adjoining lands. And a small chapel. So far so good. We’d all love to live in a cortijo with a small chapel, and some of us might even welcome the large family and livestock…

But it’s the design of the traditional Spanish cortijo itself that interests us, and this is a masterpiece of architectural concept, with its open courtyard being the architectural and social hub of the structure surrounding it. And the concept went right back to Roman times. The Moors improved on it, mainly with the introduction of water, both flowing and still, as a key design element rather than a basic necessity. From flowing water came beautiful gardens, and thus we have the classic cortijo that we know today.

The aim of the UDesign architects was not to simply copy this elegant design that has developed over many centuries, but make the best use of its most outstanding features to create a luxurious contemporary Mediterranean home. Architectural symmetry is the ideal counterpoint to nature in the raw, and here we can see how this perfect symmetry, best observed from any central point of view, is balanced by asymmetrical elements within the architecture, by varying tones and textures, and by differing heights and shapes in the furniture, trees and plants. In short, the symmetry is horizontal and the asymmetry is vertical. The result is sublime.

The view over the courtyard is an excellent example of this symmetrical perfection, recalling the formal beauty of the Alhambra Palace gardens, where symmetry creates an understated masterpiece of patio architecture. With white travertine marble and Moorish doorways on each side, this is indeed an outdoor living area reaching into the heart of the house itself, all cooled by clever design and the sound of flowing water. “Most designs of this kind don’t take seating into account, at least not enough,” says Jason. “The temptation is then to walk past, as if the patio were a transient area, on the way to somewhere else. We placed stone seating around the decorative

pond, with cushions to invite people to sit and enjoy its cooling effect on the warm summer days. They’re slighted elevated and illuminated from beneath in such a way that they appear to float, especially at night. As beautiful as many contemporary homes are these days, they often lack the intimacy we all need, so we have gone to extraordinary lengths to ensure that one feels at home and completely comfortable in all parts of this villa and its courtyard. Good design is not about scale, but about intimacy and character and how it makes you feel. It brings nature into the heart of the home in a very structured way.”

Quite apart from the wonderful views over the sea, mountains and surrounding countryside, all the rooms in the villa, from bedrooms to interior living spaces, also look out on the courtyard, which becomes the hub of the entire villa. And at night, the courtyard is illuminated to show nature at its most magical. “The garden is very beautiful, what you might expect in a very expensive hotel. For me there is no difference between the inside and outside. The same architectural criteria needed for a perfect interior are also needed for the exterior, even in the layout of the garden.

A good designer is like a good chef: he understands his materials and knows how to use them. He knows about taste and texture, colours and even the shape of things. And I’ve assembled all these elements in the garden in the same way that I assembled the architectural elements in the building itself.” The concept of the cortijo goes back to Roman times, and there is a classical Roman quality to this villa that has, perhaps, been lost over time to the more Andalucian design elements of the traditional cortijo. I contacted two Andalucían companies that fly hot air balloons and immediately heard back from Glovento from Granada, who would take me next time the conditions were suitable and they had space in their basket. The following week brought gale force winds, but then the seemingly eternal summer returned and the date was set.

A Classic High A HOT AIR BALLOON FLIGHT OVER RONDA Ever since I read Jules Verne’s book ‘Around the World in 80 Days’ in my youth, I have wanted to fly in a hot air balloon. What could be more timeless and irresistible than floating wherever the wind takes you? Since we moved to Ronda in southern Spain, I have often seen balloons over the town and one day I asked myself “What am I waiting for?” With the current world situation, none of us knows what the future will bring. If we want to do something and it is possible, legal and not too immoral, we absolutely ought to go for it. Or throw our caution to the wind, as was my case. The decision was taken – I was going up in a hot air balloon at the first opportunity.

THE ART OF FLYING A BALLOON After the hot air has brought the balloon into a vertical position, we are ready to board. I notice that the husband of one of the passengers who is standing back on the ground crosses himself. We rise so smoothly that it is almost undetectable, and suddenly the ground crew are the size of ants. Inside the basket a silent awe prevails. I stand beside Santiago so I can interview him during the ride. I start by asking why he became a balloon pilot. “It was the balloon that found me” he jests. He had always enjoyed doing extreme sports. One day he met a balloon and it was love at first flight. Now he has been a professional pilot for over 20 years.

While we drift towards Ronda, a motorized paraglider circles around us. We follow our own shadow as we float over Ronda’s Roman bridge, Arab baths and further into the historical part of town.

Balloons are completely unique flying vessels. They can only be steered vertically. The only way that they will move horizontally is with the wind. Pilots don’t want too much wind, but not to be completely without wind either, because that will take them nowhere but up. The best flying conditions according to Santiago are early in the morning when the wind conditions are more stable.

We fly over a farm and the dogs start barking. Santiago explains that he avoids using the propane burners, as the noise terrifies the hens. In a best-case scenario, they won’t lay eggs for a week. In a worst-case scenario, the shock will kill them. As nobody wants to have a mass death of chickens on our conscience, we wholeheartedly agree with him.

We hover over the world famous Puente Nuevo Bridge. Directly underneath us lies the Tajo gorge, with classical Spanish buildings literally hanging over the edge. This is probably what some would call a million-dollar view but to me it is priceless. As soon as you are up in the air, you are hooked. You simply cannot help but fall in love with this peaceful and most unique way of experiencing the world from above. It is like the flight brings out our most innocent and almost childlike joy. We land as we took off, on a field right outside Ronda and barely feel the little bump as we hit the ground. It has been an unforgettable experience. So when you plan your next trip to Ronda, make sure to book a flight, as nothing can top a hot air balloon ride over la ciudad soñada, the city of dreams.

PUPPY LOVE by Ian Greenland

S

o apparently, I’m a cliché. I

was running our small dog Jax around the puppy park recently, repeatedly fencing the automatic first question from every other dog-owner – “Is he a rescue?” As I only recently became a first-time “fur-daddy” (you have permission to thump me if I ever repeat that phrase without thick irony and a mock retch), I don’t know if this rote inquisition is a predominantly Brighton thing, evidence of how woke we all are here, or whether dog lovers

everywhere instantly invoke this gauge on how good a person you are – are you a trophy hunter or a selfless martyr to the canine cause?... a conceited show-boater or regular Joan of Bark? I still don’t know exactly how to answer this. Did I “rescue” him? I mean I didn’t drag him coughing from a burning building, wrestle him from the jaws of a crocodile or spirit him from the clutches of a vicious cockney dog-fighting ring. Although the hideous red faux-leather,

Rescue or no, my partner views his deliverance to us as verging on the heroic because I woke early, boshed half a pack of paracetamol for my chronically bad back and drove the nearly 500 mile round trip to bring him back from furthest Wales, but I don’t tell Brightonians this, lest they pelt me with quinoa for the selfishness of my carbon footprint. Anyway, back to the cliché part. Out and about with Jax, I quickly found myself navigating a new minefield of etiquette. Socialising a young dog, I was reminded of the early days of parenting, perpetually hovering around my toddling son as he interacted with other kids, ready to apologise virtuously for any toy snatching or occasional biting, only now the apologies were for spontaneous barking and unsolicited, somewhat comical attempts at humping. (Judging from his first few dalliances, we assumed he was gay. Then he branched out and we thought he must be bi.... Then he got all randy with a sofa cushion and we realised he just needed neutering...) Whilst excusing his randiness and my own inexperience at managing it, I mentioned we’d only had him three weeks and another owner chuckled knowingly and said “Oh, a lockdown pup”. I later found out this was indeed a thing.

The events of the last year have seen a huge rise in the purchase and adoption of dogs, as millions of people find themselves stuck at home with time to kill and a presumably increased yearning for companionship. The unfortunate fallout is many thousands of dogs are now needing to be re-re-homed as their new owners return to work or find they don’t actually like the sofa cushions being humped. We feel fortunate Jax seems remarkably well adjusted, someone’s always home and our sofa cushions have removable, washable covers. He’s staying. When my son’s in bed, Jax curls up between me and my partner and we nuzzle his neck, our hands vying for the soft fur on his tummy (oh my god, I’m such a freaking furdaddy...). We both marvel at how this scruffy little thing with twice as many legs

Realising a whole heap of labour-intensive, frequently fruitless hunting could be bypassed with the judicious application of the old “puppy eyes”, the ears dropped, the tails started wagging and a few thousand years later i’m apologising for my pet trying to impregnate a startled pedestrian’s leather boot. My son certainly never tried that, but then I guess this is the “new normal”.

The UK is the largest consumer and purchaser of plant-based milk, meat, cheese and ready meals in Europe. 25% of evening meals in the UK are now vegan or vegetarian, and one in three people in the UK have stopped or reduced their meat consumption, and Spain is not far behind. (Source: T Vegan Society) Bettina, our resident foodie, offers her insider knowledge on plant based cuisine and takes us on a culinary journey as she travels the world in search of gastronomic inspiration

Last year, up to November 2020, Deliveroo reported a 115% increase in demand for plantbased meals. In my hometown of Cambridge, Stem & Glory was the only vegan restaurant in 2017. Now there are five. Only those in denial about the unsustainability of animal consumption can ignore or pass off veganism as a ‘fad’. 2020 was the year of plant-based ‘meat’, attracting both consumers and investors. The IPO of US brand ‘Beyond Meat’ was the best performing first-day IPO in nearly two decades. The UK brand THIS™ Seedrs campaign was

Vegan Seafood

Vegan seafood has become a fastmoving trend all over the world, and seems to be following a similar trajectory to vegan meat, in that seafood junk – deep fried scampi, deep fried vegan shrimp, fish burgers, and fish goujons – is popular in both supermarkets and early adopter food outlets. We are however starting to see better quality attempts at vegan seafood, with greater attention to health and natural ingredients. Sebastiano Cossia Castiglioni from Vegan Capital is one of the best known and most active investors in the plant-based space. Vegan Capital is an early investor in seafood company ‘Good Catch’ and Sebastiano has observed rapid growth in this area. Sebastiano also notes that some companies that are still involved in animal seafood are now venturing into plantbased. Nestlé, for

the fastest ever campaign to hit £1.5m+ and closed on £4.5m in a matter of days. Investors are keen to invest in the plant-based space, and we’re seeing an ever-growing number of vegan and ethical investment firms. The plant-based movement has not only grown in popularity, but it’s now well capitalised and poised for even greater growth and market penetration. So, where is it we see new products starting to gain ground, and where do we see vegan products in the UK heading in 2021?

Healthier Fake ‘Meat’

I predict that 2021 will be the year we start to see a trend in the direction of healthier and less processed animal alternatives. For example, Ed Al Subaei, executive Chef at Stem & Glory, creates fake ‘meat’ out of vegetables, instead of highly processed ingredients. For example, he makes a show stopping ‘ham’ from smoked celeriac sheets, and ‘chorizo’ from beetroot. Using the classic flavours to make the experience, whilst remaining 100% unprocessed. It isn’t always the meat that is the reason you like a certain dish; it’s a combination of layers of flavour, and if you can create those same layers of flavour from non-animal products, you really can create the same taste sensation. We are not the only ones – Tabitha Brown’s ‘carrot bacon’ video made her a social media sensation this year, garnering over 12m views.

Vegan Ready Meals

One gap in the market appears to be quality ready meals. Tesco has been ahead of the game with their Wicked range. But for me personally, having sampled the offerings from all the major supermarkets, I am not convinced by taste or quality. All too often products are veganised simply by removing the animal products, without much attention to the taste or texture. At Stem & Glory we are in development mode for our new ready meal range which does have a focus on taste and texture, as well as innovative dishes. The aim is to bring restaurant quality to supermarket shelves and raise the bar on vegan ready meals. We believe we will also see a trend towards ready meals in general and grab-and-go foods in a wide variety of settings. A view echoed by Castiglioni, who predicts that ‘vegan ready meals will be the new normal, with a much greater variety of unequivocally plant-based options, easy to buy and ready to eat, taking over shelves everywhere, from gas stations to convenience stores’.

Vegan Cheese

Vegan cheese is the holy grail at the moment. The race is on to be the first company that creates a plant-based cheese that has the same taste and texture as dairy cheese. Personally, I feel there is a long way to go, BUT 2021 could see this start to change. A few brands are now on the verge of creating an authentic product with an engineered cow’s milk. Reuben Waller from Plant Candi, a wellknown vegan chef, believes ‘the slow demise of the traditional dairy business will provide a marked contrast with the rise of products such as laboratory engineered cow’s milk, which will signal a seismic shift for the vegan cheese market’. This echoes our view too. Imagine if you could get the full variety of cheese that we have all been brought up on tasting exactly the same as the animal counterpart, but made 100% from plants. What a huge change would come.

Michiel van Deursen from Capital V is one investor interested in the plant-based fashion space. ‘Leather is not sustainable at all, and since the alternative is often plastic, this has brought about a shift now towards plant based and biodegradable vegan ‘leather’. Michiel predicts massive growth in plant- based fashion and materials in the next few years, where demand is currently outgrowing production capacity. From an investor perspective, Michiel believes now is the time to get in and invest; ‘lots of investors still only look at alternative protein. I expect that to change in the coming year, when more funds and VCs enter the space. The market is ready to be disrupted. I think we are at that point in time where the major players of the future are now being built’.

Vegan Fashion

I am a lifelong customer of G-Star. Their range ‘Raw for the Oceans’ was making fashion from plastic pulled from the oceans long before Blue Planet, they are committed to 100% sustainable cotton, and use a wide variety of recycled materials in their products. G-Star is an excellent example of how a brand can use their sustainability agenda to grow their market share. Another great example of an established brand being ahead of the curve is Dr Martens which boasted that profits were up 70% year-on-year to March 2019 largely due to the success of their new ‘vegan’ range. Vegan Dr Martens however, whilst being an excellent hard-wearing product, are made from synthetic and non-biodegradable

These are my top five trends to watch for 2021, but one overarching trend which will underpin all others; sustainability. To date, plant-based has been labelled, by sole virtue of it being ‘made from plants’, as ‘sustainable’. Is something sustainable just because it is plant- based? We believe that 2021 will be the year that this comes fully under scrutiny. We all need to scrutinise our daily lives, and as businesses we have a responsibility to take whatever steps we need to reduce our carbon footprint – packaging, supply chain, ingredients. If we do this audit customers will feel safe knowing they are making ethical and more sustainable buying choices. And as we all know, this in turn will be good for business. In 2021 sustainability will be the greatest trend of all, with consumers utilising their purchasing power in support of those with truly circular and authentic sustainable credentials.

The one thing that we can all agree on is that COVID has wreaked havoc with our social lives. The kitchen is now a war zone and dinner discussions make you want to duck for cover. Restaurants having to close at 6pm is causing some serious indigestion and making dinner time anything but fun. We’ve graduated from baking banana bread and have given up on the despairingly desperate scrolls through various food delivery apps (how many times have you reordered that mediocre pizza just because it’s so much easier?). Well, there’s a solution to all of our foodie problems - BREATHE AT HOME. The hardest part is going to be deciding what to order! It ticks all the boxes, making sure everyone is catered for, yes, even the vegans. Plus it’s healthy! How long have you been a chef and what made you aim towards the greener, sustainable kitchen concept? I have been a chef for more than 20 years, I have mostly worked in Holland (I am Dutch), Ireland and Spain. I worked for Finca Cortesin, Health House las Dunas and Puente Romano. I saw that there was far too much waste and packaging involved in the industry. If it has to be in packaging, at least try to use biodegradable. I also use local produce and what is in season, it has more flavour and it reduces your foot print. We need to make sure that there is a healthy planet for the next generations.

Did Covid and the restrictions give you the idea for the at home experience? Yes, how can we give you a Breathe experience in your own house? This was my challenge. I had been talking with chef friends in Holland, and what they thought was a good way to achieve this. So I then came up with this idea for BREATHE and we made it work for us, staying within the BREATHE concept.

How would you describe the #BreatheAtHome experience? An evening at BREATHE in your own house. What could be better!

What would you order from the menu? The 5 course premium box! You have great products and flavours.. It’s perfect to impress your date! The 4 course box is also a fantastic option because you can choose the dishes yourself. It is like eating a la carte in a restaurant.

Do the dishes really give the same taste experience as inrestaurant dining? Yes, because we use the exact same

For those who are perhaps less confident in the kitchen, are the recipes easy to follow? Yes, extremely easy to follow. It is all based on what a normal household would have in their kitchen, no need for any fancy equipment. We do the work for you, you only have to finish the dish. We give you easy step by step instructions for all your dishes with photos of every dish with the end result plated. Plus, we supply you with all you need for plating a dish, from Bambu leaf to chop sticks.

How long does an entire meal take to cook on average? How long do you want your dinner party to take? The starters are quick and easy (no more than 10 minutes). The mains, 20-30 minutes and the desserts maximum 10 minutes to heat (if needed). If you plan it well, you can have your mother in law out of the door within the hour...

Is there an option for dietary restrictions such as gluten free or even vegan? Of course, most of the dishes are gluten free and we havemsome vegetarian/ vegan dishes on the menu already. But if you let me know your dietary wishes, I make sure it is specially done for you.

A lot of people still believe that healthy food means less flavour. Is this a challenge you’ve battled to overcome and prove otherwise? Healthy food does not have to be boring. I only use produce that is in season. If you use products when they are at it’s best, your dish will have so much more flavour. Use spices and fresh herbs, grill your meat and fish. Also, put vegetables and fruits on the BBQ or grill pan, this will give your

ingredients as in the restaurant. We deliver it cold, so it will not arrive pre-heated and soggy. You prepare it, serve it fresh and hot like you get in the restaurant.

We all love a cheeky Uber Eats prior to a Netflix binge, can you see this Breathe concept taking a similar role? Yes! You could have a babaganoush and the dim sum to start with, great to share. Then watch the first episode, followed by the wagyu burger. Click ‘Keep watching’ and have some cheesecake for dessert!. You can choose whatever you feel like. It does not take a lot of time to prepare and it is nice and hot when you eat it. This is the problem a lot of the time with takeaways. When it arrives at your house, you have to eat it quickly because it gets cold!.

The menu also offers alcohol, what’s your favourite tipple? All the wines in the restaurant are available. We have even chosen some special bottles to pair with our menus. (We have them in half bottles too)!. Ask us and we will advise you.

Which delivery zones do you encompass? The outer Marbella and Estepona area. Because we deliver everything cold, we can offer it to greater distance than the normal takeaway/delivery service.

Shortage of COVID vaccinations A delay in giving the vaccine to the over 80s comes after Malaga region received half the expected doses of the Pfizer jabs. According to media outlets, medical centres will now be calling those who are affected to let them know that their vaccine has been delayed. The area currently receives between 1,100 and 1,200 doses of the Pfizer jab each day; this number has now been halved due to the delays.

Positive changes for Brits flying to Spain The UK Embassy based in Madrid, has published an update on travel to Spain for British nationals who were already legal residents of Spain prior to Brexit. The embassy has shared a new list of alternative documents that UK nationals can now use. Rental prices drop for first time since 2015 Spanish rental prices have seen a fall for the first time in over 5 years as a result of the COVID pandemic. The decrease started at the beginning of the COVID crisis and has continued to decrease at a substantial rate. Gonzalo Bernardos, director of the Real Estate Masters course at the University of Barcelona, points out, these prices ¨reflect upward trends more accurately than downward trends.¨ He believes that real estates prices may have started to fall months ago. According to Bernardos, one of the reasons for the plummeting prices is a surplus in supply.
