s we bid a fond farewell to summer and welcome some much-needed rainfall, we also look back on a September that claimed the life of Carlos Martínez, a brave firefighter in the horrific wild fires that destroyed large parts of the Sierra Bermeja Mountain range in Estepona. Head to page 44 to see a stunning tribute by photographer Ana Yanis. September also heralded the completion of a new Marbella landmark which is currently dividing opinion amongst locals. A small majority seem to approve whilst maybe a more discerning minority feels it looks cheap (I’m sure it wasn’t) and a tad tacky. What do you think? E-mail us your thoughts and we will share the more entertaining opinions next month!
October may just be our favourite month of the year. Instagram has showcased a welcome return of stars arriving on the coast now the travel restrictions have been relaxed once again with Millie Mackintosh sporting a large bump enjoying a baby-moon at The Marbella Club, Love Island favourite Amy Hart dining at The Harbour in Marbella and Emily Atack making the most of the coast’s finest beach clubs! Talking of famous faces, our cover stars this month are none other than cosmetic and aesthetic surgeons husband and wife duo, Dr. Kaye and Dr. Casabona. Together they have more than 30 years of experience and are both highly reputable names in the industry. To learn more about this powerful twosome and everything Ocean Clinic has to offer turn to page 18. The Leaf Elite’s Clare Navas is ‘Cooking with Cannabinoids’ on page 38 and The Midlife Mentors discuss the lowdown on intermittent fasting on page 40. Moreover, the Mojo boys talk lawyers on page 54 and why having a lawyer you can trust when buying a property is vital. All this combined with our regular dose of music, movies, fashion, books and more should keep you entertained while you make the most of the end of the summer sun. ‘Til next time…

hether we care to admit it or not, we’ve all stood in front of the mirror wishing certain parts of our body looked different: tummy smaller, nose straighter, thigh gap bigger, skin less saggy… It’s natural to want to look a particular way but going to a clinic thinking one simple operation or treatment is going to fix everything isn’t exactly how it works. At Ocean Clinic, Marbella, founder Dr Kai Kaye, and his wife and business partner, Dr Gabriela Casabona, like to take a holistic approach to their client’s treatment. “It’s not just surgical and non-surgical,” says Dr Kaye. “It’s about a person’s psychological needs and desires too. Every time someone new comes to us, we’ll find out exactly what they want and then take them through all the ways we can help them achieve that, in an honest and open conversation.” Combined, Dr Kaye and Dr Casabona have more than 30 years of experience, and are both reputable names in the industry. German-born, Dr Kaye studied in France, Los Angeles, and Munich, before moving to Spain and setting up Ocean Clinic, in 2008. He is a Board Certified Plastic Surgeon and specialises in multimodal facial rejuvenation, autologous fat transfer, breast augmentation, 360 degree lipoabdominoplasty (tummy tuck), and also burn surgery. When he isn’t working at the clinic, he’s writing research papers, attending internationally renowned events and lecturing at prestigious conventions.

His wife, Dr Casabona, is a medical director for aesthetic and skin cancer departments, as well as a consultant and research director. She joined Ocean Clinic in 2018, but prior to coming to Spain she had her own clinic in her home country of Brazil, for 18 years. Dr Casabona is incredibly well-travelled, and like her husband, speaks at many international events. She’s also a consultant for aesthetic medicine companies, Merz Medical and Dermapen. Together, the couple are able to combine a variety of techniques, creating a completely unique treatment and journey for each client. “Everyone is different and it’s not always just a simple nose job or chin tuck. We have to look at a person’s anatomy first, why do they look the way they do? It could be that the jaw is set too far back, creating excess skin under the chin, making the nose look bigger than it is. Everything is linked and it’s no good doing one thing without the other.”

Coldplay are back with their ninth album, Music of The Spheres, launching on October 15. From the launch video, it looks like the boys are taking us on a psychedelic journey through outer space with this one…

With an album name like =, it’s easy to guess who this one’s by. The world renowned singer-songwriter Ed Sheeran is releasing his fifth studio album on October 29. Across the 14-tracks, Sheeran reflects on his recent life changes: getting married, becoming a father, experiencing loss. He’s been working on this one since 2017, and if it’s anything like his previous albums (which all reached number 1 on the UK’s Official Albums Charts) we expect it to be a cracker.

TAKEN TOO SOON
I
t was a sad day when Sarah Harding’s mother took to the ex Girls Aloud star’s Instagram feed to announce the heartbreaking news that her daughter had lost her battle with cancer. After a year of fighting, Sarah passed away on September 5, at just 39-years-old. It started as a cyst on her breast but after removing it, doctors realised the cancer had advanced to other parts of her body too, and that even with intensive chemotherapy she probably only had months to live. In her book, Hear Me Out, she wrote: ‘My doctor told me the upcoming Christmas (2020) would probably be my last. I’m trying to live and enjoy every second of my life, however long it might be’.

The winner of five Olympic gold medals, one silver, two bronze, and eight world titles, was tearful as she told the world that the Tokyo Games would be her last ever Paralympics. She’s been competing since age 13, when she made her debut at the 2008 Games in Beijing, but after 13 years of intense training, she’s not sure she has another three years in her. Instead, she’s packed her bags and headed home for some much-deserved downtime.

hree months ago we’d never heard of 18-year-old Emma Raducanu. Now, her dazzling smile is in every paper and on every sports channel, thanks to her US Open victory on September 11. Since beating 19-year-old Leylah Fernandez in the major event, the teenager from Bromley has overtaken Johanna Konta as British number one and broken records as the youngest woman to win a Grand Slam since Maria Sharapova won Wimbledon, in 2004 at 17. And - more impressively - the first player to break through three qualifying rounds of a grand slam before winning the entire tournament without losing a single set. Impressive.

Celebrity Spotlight
A day in the shoes of...
Sarah Jessica Parker
M
ost people know the glamour icon that is Sarah Jessica Parker for her starring role in Sex and the City. But before that, she was actually a Broadway actress, with leading roles in The Sound of Music and Annie (she played Annie!).
Born in Nelsonville, Ohio, Parker was singing and dancing from a young age, often taking paid gigs so that she could help support her family - she’s one of eight, and her mum’s single teacher wage didn’t go very far. She landed her first Broadway role in 1976, in The Innocents, and her family moved to New Jersey to encourage her career. And encourage her they did. By
24
the early 80’s Parker was already gaining national attention, especially after TV sitcom Square Pegs aired, where she played an endearing geek. The jobs continued to come in after this with appearances in films like Footloose, Girls Just Want to Have Fun, LA Story, Hocus Pocus, and The First Wives Club. Then, in the late 90’s, it was all about Sex and the City. The American comedy
series proved to be a total hit all over the world, mostly due to the brilliant chemistry the four women (Parker, Kim Cattrall, Kristin Davis, and Cynthia Nixon) had on screen. The show had a rather basic storyline, ‘four female New Yorkers gossip about their sex lives (or lack thereof) and, despite their differences, stick together through the ups and downs’, but it revolutionised depictions of female sexuality.
Celebrity Spotlight
But of course, wherever they are, drama always seems to find them.
Though no new episodes of the show have been made for almost 20 years, people still watch it time and time again - many probably have an old box set lying around somewhere. It was just that good. So when Parker announced the girls were getting back together earlier this year (minus Kim Cattrall, who played Samantha), for a 10-part revival, it was met with huge delight by fans.
The new series is called And Just Like That and it’s due to launch later this year on HBO Max. The storyline will be much the same but this time the girls are navigating life in their 50s, and without their fourth amigo, Samantha, it could be a little different… There has been a lot of speculation about why Cattrall isn’t joining the girls for the remake. Many people believe it’s because of a long feud that the actor has had with Parker, as well as problems throughout the filming of the original series. To keep up with all the latest gossip about And Just Like That, follow @justlikethatmax. In the years Parker wasn’t making the iconic show, she went down the fashion route, creating her own brand SJP, in 2014. She mostly sells shoes - her character ‘Carrie’s’ love for shoes is a real life crush too - as well as fragrances, gifts and accessories. Beautiful though the shoes are, they’ll set you back around $400.
For six years the girls gave us six seasons of entertainment, each one wittier and more daring than the one before. The women were real, honest and relatable, which is probably why they were loved so much. Whether you fancied yourself as glamorous and pun-loving Carrie, a sexual libertine like Samantha, an incurable romantic like Charlotte or a no-nonsense Miranda, there were aspects in each character that resonated with the audience. In 2004, we thought that was it, Sex and the City was over. But in 2008 the girls were back on our screens with a Sex and the City movie, which saw Carrie and Big decide to take their relationship to the next level and get married… that was until Miranda, frustrated with her own husband, related to him the reality of marriage and he got cold feet - many people have classed this as ‘one of the best films of all time’. Two years later, there was another film, Sex and the City 2, which takes the girls to Abu Dhabi.
She also has an award-winning wine brand, Invivo X SJP, which she made with the guys at Invivo. Combine New York sass, some of the world’s best wine regions and New Zealand winemaking know-how and the result is pretty special. There’s two lines, rose and white.
Even after three children, Parker still looks fabulous, always sporting the most fashionable pieces. The star married actor Matthew Broderick in 1997, who she has three children with, son James, and twin daughters Marion and Tabitha, who were actually born via a surrogate, as the couple struggled to fall pregnant again after their son. The lovebirds met on Broadway back in the early 90’s and they’ll be back on stage again together very soon, with the show Plaza Suite. It seems there’s just no slowing down for this charismatic lady.
Now, where did I put my old Sex and the City box set... 25

As millions sat back and binged from July to September, our athletes jumped, ran, dived, fenced, cycled and boxed their way to glory and the only time the majority of us came close to matching their explosive power was when deliveroo finally rang the doorbell with the curry. Full of highs, lows, the odd controversy, and occurring a whole year late under the inescapable cloud of the total, unmitigated FUNSPONGE that is the global pandemic, both events were nevertheless epic validations of the athletic heights humans are able to reach when they apply mind to body. To celebrate, we’re reminding ourselves just how fascinating, complex and, let’s face it, gross our meat-suits are.
in Israel calculated the average body replaces approximately 330 billion cells per day, the majority blood cells. At that rate, your body is making over 3.8 million new cells every second.... even when you’re just sat on your arse watching Judge Judy! Though it differs with age (shorter intervals for babies, longer for adults), on average we regenerate our entire layer of skin every 27 days, or 900 times over our lives. If you’re wondering why all pensioners aren’t nearly indestructible super beings with skin 900 layers thick, it’s because of course we also shed our old skin cells. Unlike snakes, who wriggle out of theirs in a neat, compact, easily cleanedup fashion, we go around dropping bits of skin here, there and everywhere. Although it’s occurring on a microscopic level, we’re constantly doing it. You’re doing it whilst you read this. You should be ashamed of yourself.
Pound for pound our bones are stronger than steel, with a block of bone the size of a matchbox said to support 8 tonnes of weight.
On a cellular level, our bodies are in a constant state of activity, with cells decaying, dying and being replaced all the time. Using complex research methods and more than a few grey cells, biologists Ron Milo and Ron Sender of the Weizmann Institute of Science

About 60% of the adult body is made up of water. Add sand and cement and you’ve got concrete. Add Robinsons and you’ve got squash. On the subject of water / 60% you, scientists have ascertained that the skin on our fingers and feet wrinkles when submerged for prolonged periods in water to act like tyre tread, channeling away droplets and providing better grip
and stability. Evolutionarily this would have helped our ancestors hunting, gathering and walking in wet conditions but now primarily stops us dropping our iPad in the bath. Experts say we’re on average 1cm taller after a night’s sleep since the rigours of the day cause compression in the cartilage of our knees and spine. Personally I’m not buying it. If true, a month spent in bed would mean you’d grow 30 cm and I didn’t see giants loping about everywhere after the furlough scheme ended. This one’s bullshit. Pound for pound our bones are stronger than steel, with a block of bone the size of a matchbox said to support eight tonnes of weight. Again, not sure about this. I once broke a finger on a stag do (and we hadn’t even started drinking yet) and one time when I stubbed my toe I swore so loud the neighbours’ neighbour heard... And i’m bigger than a matchbox.
saliva each day, the majority swallowed, reabsorbed and recycled, some sprayed in righteous indignation whilst reading the Daily Mail. Over a lifetime, that equates to 28,000 litres, or enough for about 280 lovely, relaxing baths full of human goz... You didn’t know how good you had it when we were just discussing ear sweat. Although it accounts for only around 2% of our body mass, the brain siphons a whopping 20% of our oxygen and blood supply. Whilst this thought should seem greedy and elitist to us, it doesn’t

because our brains tell us not to think like that.... but then they would wouldn’t they?....while they’re sat in their ivory towers, giving orders and honking down a bit more oxygen and blood your freezing toes probably would’ve loved. The human eye can differentiate between a few million shades of colour. Nevertheless, approx 1 in 33,000 people only see in black and white or shades of grey, a condition known as monochromacy or achromatopsia. Interestingly, we all occasionally dream in black and white. Research shows that the generation who only had black and white TV when they were young dream that way vastly more often then their colour TV-spoiled descendants. The implication that what we watch leaves a critical imprint in our subconscious brains suggests future generations will mainly be binge-dreaming scripted “reality” visions of vacuous, bleach-toothed, fake-tanned narcissists arguing - the average human body might have 10,000 taste buds, but that doesn’t mean we have taste.
This is a nice one: Earwax is a type of sweat. Mmmmmmm. On the subject of ears, they never stop growing (at least while you’re alive). On the plus side, when the grandkids are laughing at your BFG-beating King Lears, you’ll finally be able to fit a roll-on in there for that waxy ear sweat. Since you’ve already been put off your lunch (it’s full of the waiter’s dead skin anyway), let’s press on and discover that we produce on average a litre of

Clare’s Cooking with Cannabinoids
I
t’s the month of October and I’m just thinking how lucky I am to live in this fabulous town with its beautiful sunsets and fabulous Autumn climate. Now is really the time to embrace the little pleasures in life; what nature has to give us and of course the wonderful food we have to eat. With the evenings getting longer there is more time indoors and experimenting in the kitchen with some new cool recipes infused with CBD is the prefect way to bring some fun into the kitchen! Celebrating my birthday with cannabis we embraced some new delicious flavours as the team at Celicioso prepared an awesome gourmet gluten free cannabinoid feast! Including some super cool CBD salads and some even more delicioso cup cakes which my guests were super excited to try. We also had Nero provide the vodka for the CBD shots adding a completely new twist on the gourmet beverage, everyone loved it. Enhancing your endocannabioid system with delicious and nutritious foods is the perfect way to bring balance and help you keep healthy. With the cooler months approaching we are all in need of topping up our immune system and with the help of a little CBD we can all be on our way to a happy and healthier life!
So what is CBD and why is it so good for you? CBD is just one of the 152 cannabinoids found in the cannabis plant. This is a non addictive and non psychoactive substance that can be used to help treat a wide range of health issues. It is closely related to the other well known compound in the plant THC. The phytocannabinoids in the plant respond to our endocannabinoid system reacting to our neuron transmitters CB1 and CB2 that our present in our central nervous system, peripheral organs, and immune system. These then activate the compounds anandamide and 2AEG. The cannabinoids work with our own bodies system creating proteins which are vital for our bodies to function. The plant adapts to each individual uniquely infiltrating it to bring us into homeostasis and find our point of balance.

So by incorporating CBD into your daily routine you could experience reduced anxiety, better sleep quality, and improved symptoms of movement disorders. It may also help people with a variety of neurological conditions, mood disorders, epilepsy and even some cancers. So why not give it a try?
FEEL-GOOD FACTOR
Infusing CBD into your Foods I love Cannabis and get to see the benefits first hand, so I try to use it as much as I can and in as many ways as possible. A fantastic way that CBD oil can be added to your routine is through cooking. I have tried various cannabinoid dishes and love them all, but there are some rules that you need to remember. Due to the fact that this is a natural product the compounds change when heated and can reduce its effectiveness, so stick with recipes that bake at 175 C or less or try to avoid heating it at all if you’re worried. Instead you can try no-bake treats like protein bites (Check out my Instagram for the Almond Chocolate and Hemp variety) or stir it into a pesto sauce or a soup. This way all the natural properties of the CBD oil are retained including its omegas, terpenes, flavonoids and minerals. To improve the absorption of the phytocannabinoids in our system its always a good idea to add it to the fat, this way your body is able to metabolise it better!

So here is my favourite easy CBD recipe for you to try!
TIE’s Elite CBD Banoffe Pie This gluten free banoffe pie recipe is the perfect sweet CBD treat to show off to your friends at social gatherings! Its super easy to make and utterly delicious with all the CBD needed to lift your guest’s moods and enlighten any party! INGRIDIENTS (SERVES 6-8) 220g gluten free biscuits 100g butter 10 drops Elite Full Spectrum CBD 10% (and 5 for the top if desired)
2 x banana 2 x condensed milk 270g 1 x 250 ml whipping cream
METHOD Boil the 2 tins of condensed milk in a pan of simmering water for 2.5 hours. Crush the biscuits using a rolling pin, melt the butter and stir in the CBD drops. Line a round 7” Dish with some baking paper to make it easy to remove. Add the biscuits to the melted CBD butter. Pour the mixture into the cake tin and press down firmly. Cut up the bananas into slices and place on top of the biscuit. Remove the tins carefully as they are extremely hot and leave to cool in the fridge. Once cooled spread the golden caramel onto the base. Whip the cream and dollop on top. Decorate with chocolate shavings and with some extra drops of CBD!
HERE ARE SOME USEFUL TIPS FOR COOKING WITH CBD OIL! • Use high-quality CBD oil: quality matters, and there is no substitute. Look for a reputable brand! • Start small: Don’t overdo it. Start with just a small amount of CBD oil when you’re first starting out. (If you’re using a 1000mg a drop is around 4mg) • CBD works best in recipes with some sort of fat in them. • Store your CBD in a cool dry place to keep it fresh • CBD can easily be added to salad dressings, smoothies, lattes, and Soups • CBD can be added to hot drinks too coffee and herbal infusions work well • Do not heat your CBD oil on direct heat. Heating the oil too high will have a

decrease in the oils overall effectiveness. • Bake at 175 Celsius or less to retain the properties of the CBD oil! Once you start feeling the benefits of CBD there is no going back! Consuming them in the way that suits you is the most important thing. Enjoy your life, make the most of every experience and embrace the things that make you feel good!

The answer is yes - we do but of course there are a few caveats and it may not be for everyone, however, it does work to help you improve your body composition, if you’re lifestyle will allow it. First, what is intermittent fasting? Well as the name suggest, you have an eating window (anything from a few hours to a few days) and a fasting window (again anything from a few hours up to a couple of days). There are many different ways to intermittent fast and while we’re going to recommend one here and the benefits, if you decide to go down this route it’s important you find a protocol that’s going to fit your lifestyle, like anything it only works if you’re consistent with it. This is where many people go wrong: fasting one day and then eating normally for a few days, then missing a meal, essentially, being random with your approach, won’t pay dividends. Pick one method and stick to it. There are several different approaches to intermittent fasting out there but be far the most popular two are the 5:2 and the 16:8. Let’s explain. On the 5:2 you eat normally for five days of the week, then fast (eating below 500 - 600 calories a day) for two days of the week. The advantage of this method is that you’re eating normally for five days, so that part is easy. However, the two days fasting are likely to be hard and timing when you do those can be tricky. When we’re fasting for long periods then we can be low on energy, our concentration can suffer, and we can get light headed. So probably the working week won’t be great. Then at the weekend you want to relax and enjoy life - so again, the fasting might not suit you.
40
FEEL-GOOD FACTOR
One thing to note about the 5:2 is that because of it’s feast then famine nature, people tend to overindulge during their five days eating (you still need to be hitting your calorie targets!) and consume too much food, negating the results. There’s also research that suggests it can make certain individuals more prone to eating disorders, as there’s a focus on restriction of food over the two days. The approach does work, but there is a better way that is easier to fit into your life, especially if you know how to hack it, and we’re going to tell you how… On the 16:8 protocol you fast for 16 hours and eat during the other eight hours of your 24 hour day. Now that might sound hard, but remember, you’ll be asleep for at least half that time. Example timings would be breakfast at 9am and your last meal of the day at 5pm (I know, indecently early for Spain!). Or you could have your last meal at 8pm and breakfast at noon. Now, the longer you can fast up to 16 hours the better, BUT, you can hack this.
Well, number one it works. We follow it and our clients follow it and get amazing body results doing what we’re about to explain. It’s also easy to follow, and because you have a small eating window you will more naturally restrict the amount you eat, so while you need to still be aware of your calorie targets, it’s less of an issue.
Aim to eat your dinner as early as possible, then don’t snack or drink afterwards. In the morning push your breakfast as late as you can. Then, three to four times a week, when you get up, do some exercise while you are still fasted. Now, a word of warning… this takes getting used to. Your blood sugar is low, and if you do long workout you’ll spike the stress hormone cortisol, which will negate your results. So, you want to get up, power up with some green tea or black coffee, then train at intensity for 15 to 20 minutes doing a high intensity interval workout. This type of workout creates an oxygen debt, further spiking your metabolism for 14 to 48 hours after training (and will have you flooded with feel good endorphins). Because you’re fasted and your glucose and glycogen (the body’s preferred fuels)
are low, you will have to tap into body fat for energy. This works. We do it (and we love our pizzas and wine!) our clients do it, and we love it. You feel great, you’re energised for the rest of the day, and it gets results without massive changes to your lifestyle or big long workouts. Keep the HIIT short (no more than 25 minutes) and fuel yourself straight afterwards when your muscles are primed for protein uptake. Like anything you’ll need to give this time to work, but most people start to see results in around two to three weeks - and you still get to enjoy meals out and life in general.
Well, let’s look at some of the changes that occur in your body during fasting: • Your insulin levels drop, meaning you’re primed for fat burning and lowering your insulin resistance. In basic terms your body is burning fuel more efficiently and you’re lowering your risk of Type 2 Diabetes. • Levels of Human Growth Hormone (HGH) rise, which also facilitate both fat burning and muscle growth, as well as having other benefits. • Autophagy take place - your cells can expel waste and repair themselves, which reduces oxidative stress. • The combination of lower insulin levels and increased HGH levels work to increase your metabolic rate, break down fat and facilitate it’s use for energy. • This means you’re hitting your goals be hitting both sides of the calorie equation - your metabolic rate (your calorie burn) increases, at the same time the small eating window means less calories in.

TALKS LAWYERS This month, the Mojo boys, Per and Jacob, are joined by the Mojo girls, Lorena and Gema, the company’s lawyers, to discuss why it’s so important to have a lawyer you can trust when buying a property.
B
uying or selling a house is never a simple task. Full of paperwork, hidden fees, and a house-buyinglingo that can make things tough to get your head around. Add that to trying to buy a house in a foreign country, where more often than not you don’t understand the language, hidden clauses, illegal builds, and many people trying to cut corners, things can start to get a little complicated. In Spain, just having an estate agent isn’t going to cut it. You need a lawyer too. Someone to do the due diligence; to talk to the bank; to negotiate on your behalf. Someone you can trust. But as co-founder of Mojo, Per, says: “Just like not all builders are good builders, not all lawyers are good lawyers…” Mojo is more than just a real estate agency. In fact, there are five different sub-divisions in the company: Mojo Estates, Mojo Capitals, Mojo Invest, Mojo Sharing, and Mojo Rentals. On top of this, they also have in-house legal services. The boys call this the ‘House of Mojo’. When I sat down with Mojo lawyers Lorena Rus and Gema Martinez, I immediately noticed how warm and friendly they were. I felt calm in their presence.
54
This, Per tells me, is just one of the reasons he hired the girls. “You need to feel safe and comfortable with your lawyer. There should be mutual trust between you.”
The right qualifications Both Lorena and Gema studied at Malaga university, and grew up in Andalucia too, so they know the local area very well. Combined, they have over 20 years of experience and five years at Mojo. They know all the right questions to ask, all the background checks to do, and make sure no stone is left unturned.
Communication The girls speak brilliant English, which many of Mojo’s client’s are happy to communicate in, but if a specific language is required, they have plenty of others in-house who are able to translate. Lorena tells me this is incredibly important as they speak to their clients every step of the way, unraveling the rather complicated Spanish system and navigating them through the process.
Lorena Rus From: Marbella Age: 36 Studied at: Córdoba University (2009) & Málaga University (2011) Qualification: Law degree & Master in law practice Time at MOJO: 2 years

Contacts If you have bought a house in Spain, you’ll know there’s A LOT of paperwork. And unlike other countries, it can’t be done online. The lawyer has to physically go to the public institutions they’re speaking to, such as utility companies, and the Town Hall, so having good contacts and relationships is key. Otherwise, things can take a very long time…
Avoid the court Unless there really is no other way out, Lorena says you should avoid going to the courts at all costs. The minute you do, the power is taken out of your hands and put into that of the judge. “If your lawyer often ends up in arguments over the little things, don’t mistake this for due diligence, some lawyers feel like they have to make a fuss about everything,
Gema Martínez From: Antequera Age: 33 Studied at: Malaga University (2012) Qualification: Law degree Time at MOJO: 3 years
to make it look like they’re worth the money. A good lawyer should be able to settle (most) issues, out of the court.”
Trust If all of the above is done correctly, trust should come naturally. When you sign the power over your lawyer, you should do it with confidence and excitement. You’re about to buy a house in Spain…
Why is Mojo different? It might sound cliché but Mojo really does have your best interests at heart. They’re honest - at times brutally. They offer a 360 degree service, thanks to the House of Mojo, which means you can do everything in one place, and they have brilliant knowledge and contacts, not to mention years of experience in the property market.
Uniquely, Mojo also offers a 50% discount when you use one of their in-house lawyers to buy a property. And if you’re selling one of their properties, they’ll give you a lawyer completely FREE. Shall I show you where to sign?
Tips and tricks: If you’re selling a house, get a bank evaluation; if you’re buying one, make sure it has one. Do your due diligence, does your lawyer know their stuff? Make sure the house is legalised. Make sure you create a will in Spain, the process will be easier and faster. Do you buy a property with furniture? Remember you’ll need to pay tax on this.
“A lawyer should make you feel safe, confident. There should be mutual trust between you.”
It’s all about your mojo! Contact Mojo team for advice! (+34) 951 774 547 info@mojoestates.com mojoestates.com

KRY S T OF E R KIM M E L was raised in West Palm Beach, Florida, where sports - specifically football and track - were a huge part of his life, alongside art. His love of athletics was the inspiration for his current ‘Footballeurs’ series, presented in La Poética de la Cancha. Kimmel currently lives and works in Paris. However, before this, he worked for paint manufacturer Guerra Paint and Pigment, was director and curator of At Large - an artist-run gallery in Brooklyn - and has most recently exhibited with East Projects (NY). “My work examines movement and the abstraction of figures through distortions of form, colour, and time. As a subject, I have been exploring football for compositional richness, due to the passion for football which unites people, and for the symbolism it contains, which forms its own visual language.” Krystofer Kimmel. krystoferkimmel.studio @kryskiml

Henry Swanson, who have created solo projects: La Poética de la Cancha, and Ankle Biter. Both born in 1993, studied at the same art university and with a BFA from the Rhode Island School of Design (RISD) and both emotive and provocative in their own ways.
H EN RY S WANSON, from Dallas, Texas, uses his artwork to express the comedy of youthful strife. Using an absurdist image base riddled with standins and totems, Swanson takes aim at the spectrum of youth, including everything from questionable parenting to domestic settings where ‘cherries were popped’ and wild decisions were made. Playing himself both as the hacky overworked, religiously-adjacent parent of a child and the impulse-ridden demon living inside that child’s brain, Swanson’s work wryly portrays the future of millennial parenting in a black hole of vague boomer philosophy. “My art balances the mixed emotional perfectionism in the dynamic between aged creative process and unfettered creativity, within the domestic space. The continuing and abstract desire to ‘improve upon’ what is immediate and the escape both old and young people seek to mediate. Additionally, my Ankle Biter show discusses the notion of parenting and the tailormade consciousness that comes with creative instinct.” - Henry Swanson. henryswansonart.com @henry__swanson
The exhibition is running until November 7, at the Wadström Tönnheim Gallery, in Nueva Andalucia, Marbella. To see the brilliant works of Swanson and Kimmel, appointments should be booked prior to visit, via the gallery. Great design starts with the right materials What’s it made of? This is the key question in the design of any new product, especially one we may live in for a long time. We talk to the architects and designers of Vista Lago Residences, who take materials and finishes to a whole new level, never before seen in a residential development. Article by Vivion O’Kelly. Keep it Real
A
work of great architecture starts from the ground up. Whether residential, commercial or institutional, it builds upon its chosen site to become an integral part of the landscape, using materials and design that will not damage, either visually or environmentally, the land upon which it was built. And a work of great interior design starts from the floor up. In each case, the key element is the materials used. The quality of our lives is directly affected by the raw materials we live with every day. Getting them right is of vital importance to our well-being. The first one sees of any structure is from the outside. First impressions may relate to size and shape, how it looks and how it makes one feel approaching the front entrance. All this has to do with architectural design, and with regard to Vista Lago Residences, the architects and interior designers at UDesign aimed to create something original and spectacular from the outside. But
they wanted a lot more than that. They wanted to ensure that, as one gets closer, it gets even better. And that’s what they have achieved, not only through exceptional design but through the exceptional quality of the materials used in every part of the house. On entering a house, one sees what it’s made of, and disappointment will inevitably follow if it doesn’t match the quality on the outside. What it’s made of, the materials used, is probably the most important factor of all. One may choose one’s own furniture and decorate the house to personal taste, and change it if need be, but if the materials that make up the house are anything short of perfect, it will never be perfectly right. What this means is that the designers of the home must start with the right flooring material before they can consider the walls, doors, windows and other elements. One cannot really change the floor afterwards.
Made in Italy UDesign did not rush out and order the most expensive materials on the market, the best that money can buy. They didn’t approach it from that mindset, because the best may not be the most expensive, but the most difficult to find. They source their basic interior (and some exterior) materials – tiles, stone, marble, porcelain – from Italy and Spain, in that order. The Italians have been in the business so long now that they know what to do with the raw materials, which are more or less the same everywhere. It’s what one does with them that counts, and over time, they have developed the systems, the machines, to produce the very best in the world. That’s not to say that UDesign do not search in other places: some Belgian companies, for example, come close.
Shopping in the right places Each year UDesign visit the Cersaie International Exhibition in Bologna, perhaps the foremost tile and bathroom furnishings show in the world, and to the Cevisama exhibition in Valencia, the leading Spanish equivalent that showcases all kinds of stone and ceramic materials. The range on offer is extensive, from ceramics, stone, porcelain and marble to wood, doors,
69

kitchen facilities, bathroom furnishings, taps, lighting and so on. They have it all, and they have the very latest. The Italians have designed the machines that can print on porcelain, for example, so these new porcelain tiles can look and feel like stone. They take incredibly high-resolution images of the real stone, print it on porcelain and add texture. That, among many other reasons, is why the designers of Vista Lago shop where they do. Shopping for such materials requires knowledge and experience too. No use sending the trainee sous-chef to the local market to buy the materials for dinner in a top-class restaurant – the chef himself must go. Only he has the knowledge and creativity to know what to do with what’s available at any particular time. He plans from the ground up, so to speak. He cannot design his menu before seeing what’s on offer, and he wants the best. He goes to the market to be inspired, and UDesign do the same.

The quality of our lives is directly affected by the raw materials we live with every day. Getting them right is of vital importance to our well-being.
Design is in the details Tile size is especially important. Most tiles, whether ceramic, stone, marble or porcelain, measure 80 by 80 centimetres, or 100 by 100. That’s too small for top quality, because logically, the bigger the tiles, the fewer lines between them. They need to be 120 by 140, or 100 by 300. The results are evident in many ways, one example being the kitchen island. It should grow organically out of the floor, built in the same material with as few lines as possible. If the floor is stone, the island looks like one huge block of stone. It may, depending on illumination, look like it’s floating over the floor, but the materials must match. It’s the same with other architectural features in the kitchen and bathroom, and throughout the house. UDesign are creating relatively neutral spaces that will accommodate more visually exciting pieces of furniture and fittings. But the furniture comes afterwards.
The client knows nothing of the effort and creativity needed to achieve these results, and that’s how it should be. Their concern is the end product. They look at taps and sinks, washbasins and bathroom tiles, renderings and flooring, all the numerous elements that go into a new house, and they appreciate the results even if indifferent to how it all came about. If the materials are right from the start, they will last the course. And if chosen correctly, they will just get better with age and never go out of fashion. The development is located in the country club estate of Real de La Quinta and is just 15 minutes from Marbella town centre. POLTRONA FRAU BOUNDLESS LIVING
One of the main highlights of the Salone del Mobile this year was the launch of Poltrona Frau’s new outdoor collections, which took place in the stunning Milano Flagship showroom. With furniture and lighting by Roberto Lazzeroni, Ludovica, and Roberto Palomba (two design studios that have contributed to the company’s identity over the past ten years) and new collaborator, Japanese designer Kensaku Oshiro. The light and comfortable furnishings designed for relaxation or dining and inspired by the Mediterranean lifestyle explore a fresh and boundless approach to the indoor and outdoor spaces of the home. Among the collection’s centrepieces is Lazzeroni’s ceramic-topped dining table, part of his Secret Garden collection.
HERMÉS
EXPLORING THE LANGUAGE OF MATERIALS Staged at La Pelota in Milan’s Brera district, Hermés unveiled its new home collection rich in raw and tactile materials housed in five hand-painted structures, inviting guests to discover furniture, objects and textiles through a multisensory experience. Inside each monumental structure painted with geometric motifs referencing the collection’s palette of colours and shapes were displayed elements referencing North African vernacular architecture and solemn plinths that showed the new pieces through an interplay between lights and shadows. Among the pieces ‘designed to be touched’ stood the ‘Sillage’ armchair made from recycled paper fibres, and cashmere blankets hanging from wooden poles. In essence, the exhibition became a sensory homage to the physicality of craftmanship.

A conversation with Jason Harris, CEO of UDesign, about the architectural element of nature and why we should incorporate it into our homes. Article by Vivion O’Kelly. Images courtesy of UDesign.
76
Home Couture
Design was established at the start of the Great Recession with a carpentry shop, two designers and a carpenter. Since then, it has grown to become one of the most successful architecture and interior design firms in Southern Europe, gaining international recognition, designing and building projects all over the world and collecting the kinds of awards that some firms take many decades to achieve. Along the way, it never veered from the basic design philosophy of its founders, and given that most UDesign houses have been built in warm climates, a key part of this philosophy is the concept of inside/outside living. Or to put it another way, living with nature.
“SOMETIMES, IT IS THE GARDEN THAT INSPIRES THE ENTIRE DESIGN OF THE HOUSE, BECAUSE YOU DON’T FIGHT NATURE - YOU WORK WITH IT.” This means bringing the garden into the house. Not just that, but designing the house from the very start so that it can seamlessly incorporate a garden or elements of a garden within the structure of the house. “We like to bring nature right inside, into the living areas, the kitchen and even the bedrooms,” says Jason Harris, CEO and Creative Director of UDesign. “For us the integration of nature into living spaces is the key to architectural and interior design excellence. Sometimes, it is the garden that inspires the entire design of the house, because you don’t fight nature you work with it.” The idea, as Jason is quick to point out, is neither unique nor their own. They simply found a new way of using it. “In fact, the Japanese have been doing it for centuries. Zen is essentially meditation, and the meditation of nature plays an important part of it. A classic Zen garden may not be to everybody’s taste, but we took the
77
Home Couture
idea and refined it to suit contemporary taste, incorporating elements of the traditional Moorish cortijo, such as water and interior courtyards, into it as well. Like a Japanese garden, it must be created with great care to achieve the right balance between nature and the manmade, without which the result would be unsatisfactory.” Although the designer’s task is basically visual, the question of well-being cannot be ignored, as many city planners in the world are now beginning to understand. “We cannot live without nature”, says Jason. “You see what city planners are doing in all the great cities of the world. New York’s Greenways are a great example, especially the High Line, where nature is brought right into the heart of the metropolitan area. It not only looks good but is good in ways that were not fully appreciated in the past. Our overall well-being depends largely on our closeness to the natural world, and the architecture we do has reflected
78
Home Couture
this from the beginning. All our designs, even in a project in London’s Eton Square, feature natural surroundings to some extent, by bringing the inside out or the outside in, or both. In a way, we don’t just design houses or gardens, but garden houses. We try not to make the distinction.” How it works in practice is a question of design skill. It’s not easy, unless you believe a few potted plants strewn around a well-furnished room, or a fountain in a courtyard, will do the job. “Big rooms in big houses were traditionally decorated with large pieces of furniture, nice paintings on the walls, large mirrors and so on. Designers used lots of materials of different kinds, and they tended to leave out the most important of all, which is living nature. A tree, for example, is a piece of living sculpture, and a beautifully designed water feature is a piece of living art. A rock in the right place becomes a
79
Home Couture
work of sculpture, if it has the right size, shape, texture and colour to enhance its surroundings. An architect or interior designer is an artist who works without using paintbrushes on canvas, and at UDesign we decided to use much of the raw materials supplied by nature.” “Our Garden Villa is a good example to take, and the reason we chose such a name for it. The plot had no great exterior views, so we internalised the views by creating a magnificent garden. Nature was an essential element in the whole design project, the inspiration for the house itself. And our Olive Tree Suite is another excellent example of how nature can be brought right into the most intimate parts of a house. We took an olive tree and designed a bedroom around it, the result being a 75-year-old olive tree sitting in the centre of a master suite, acting as a room divider between the bed and the walk-in wardrobe, but more importantly, becoming a chunk of nature – a few square metres of the outside space – right beside the bed. One can lie in bed and watch the rain falling without getting wet, and night-time illumination turns it into an extraordinary spectacle of nature itself. A spectacle that talks directly to the soul.”

“OUR OVERALL WELL-BEING DEPENDS LARGELY ON OUR CLOSENESS TO THE NATURAL WORLD, AND OUR ARCHITECTURE HAS REFLECTED THIS FROM THE BEGINNING.”

There are many ways of bringing nature inside. Interior courtyards, green walls, indoor plants and trees, water features, sliding walls of glass that soften the line between inside and out, cantilevered ceilings that are difficult to identify as either inside or outside structures, swimming pool and garden areas reaching far into the interiors: it all adds up to a complete architectural entity that makes life really worth living. “And finally, we must not forget the wonderful scents of nature”, say Jason. “The beautiful fragrances wafting through a house. The lavender, the jasmine, the exquisite Dama de Noche we here in Southern Spain are so familiar with. Furniture only goes so far in interior design, and we put a great deal of

thought into how we use it, but for us, nature itself is a timeless and priceless architectural element that will never go out of fashion.” Architecture & Interior Design by UDesign: udesign.es

More than that the new GT3 is still naturallyaspirated, and has only gained 10hp over the outgoing 991.2 GT3 of 2017 thanks to a single-throttle-per-cylinder intake system first seen on the 991.1 Speedster in 2019. As with many things in life there is a good, better and best choice. Given that the 510hp 4.0 litre naturally-aspirated, dry-sump flat-six engine shared with the 911 GT3 Cup race car is only very mildly developed from the outgoing 991.2 GT3, it was very clear to Andreas Preuninger and his team at Porsche’s GT cars division that the most significant performance gains were going to come from advances in chassis and aerodynamics. Based on the 992 platform the new GT3 is longer and wider than before. Small savings everywhere result in this larger car only weighing an impressive 5kg more than before. You can tick the options box for the carbon-fibre roof our test car had, but that only saves 1.0kg. More impressive is the standard fit carbon-fibre front bonnet that saves 2.5kg over the aluminium equivalent. Thus, the six-speed manual version weighs in at 1,418kg, with the seven-speed PDK at 1,435kg. Its wider bodyshell and interior apart, the double wishbone front suspension that is unique to the 992 GT3 is the major technical talking point for the improved
86 86
chassis. While the 911s rear suspension evolved from trailing arms and torsion bars to coil springs with the 964 of 1989, and an all-new multi-link rear end with the 993 of 1994, all 911s from the 964 to the current 992 Carrera and Turbo models use McPherson strut front suspension. McPherson struts are popular across a broad spectrum of vehicle types because they are a compact design that works particularly well with frontwheel-drive cars, especially those with transverse engines where engine bay space is at a premium.
The new car uses 9.5J x 20inch wheels in front, shod with 255/35ZR20 tyres with 12.0J x 21-inch wheels with 315/30ZR21s rubber at the rear. As before the wheels are forged alloy and shod with latest Michelin Pilot Sport Cup 2 street legal trackday compound. In parenthesis the outgoing 991.2 GT3 used 9.0J and 12.0J x 20-inch wheels with 245/35ZR20 and 305/30ZR30 Michelins.
The disadvantage of the McPherson strut is its relatively poor resistance to high side force loadings. In the driving dynamics spectrum this means that geometrical accuracy under load is poorer than a double wishbone design, the quintessential system used by racing cars and the best high-performance road cars.
If you own or are familiar with the 991.2 GT3 the first thing you notice when you drive off in the new 992 version is the proportionately higher front tyre pressures highlighted by the tyre pressure monitor readout when you scroll through the information screens. 991.2 GT3: 1.9 bar front, 2.4 bar rear. 992.1 GT3: 2.3 bar front, 2.6 bar rear.
The 911 has always managed to work very well with McPherson struts simply because its rear-mounted engine results in considerably lower front suspension loadings than a car with a conventional front-engine arrangement.
While the slightly higher rear pressures of the 992 GT3 are a function of the larger 21-inch rear tyres, since the kerb weight is almost unchanged the higher front pressures reflect the fact that the all-new double wishbone suspension shares more

When Porsche introduced electric power steering (EPS) with the 991.1 generation in 2011, there was a lot of debate amongst the press and enthusiast customers about its lack of fine feedback compared to the hydraulic power-assistance system. For those not familiar with the hydraulic vs electric powersteering debate, EPS was devised for efficiency reasons to save fuel and therefore lower emissions. The electric motor only works when you turn the steering wheel. In contrast a hydraulic power steering pump is belt driven by the engine and imposes a constant load that saps power and therefore consumes fuel even when the car is going in a straight line. This fuel consumption is a small number in the overall scheme of things, but a few small savings here and there add up to a big one. Calibration and fine tuning are everything, and by the time the 991.2 generation arrived no-one was talking about EPS anymore and the feel and feedback from the GT3’s Alcantara dressed helm was as good as it gets for such a system. The same is true for the new 992 model, which has been suitable calibrated to the new front suspension, and Porsche has developed its EPS to the point where you don’t even think about it anymore in terms of weight and feedback.
of the load in hard cornering than the previous McPherson strut system. Together with the rear steering, which has been further developed from its predecessor the 992 GT3 now feels more balanced, neutral and allof-a-piece than ever when you really lean on it in the bends. Just to qualify that judgement we could never find anything wrong with handling of the previous version, which we rated as the best all round sports car money can buy back in 2017.
THE STEERING FEELS MORE RESPONSIVE AND MAYBE A TAD LIGHTER BUT WITH NO LOSS OF FEEL. 87
TORQUE TORQUE TALK TALK
What surprises you is how much better the turn-in is to the point where you feel the car’s handling is a function of that new front suspension. The improved roll stiffness, closer maintenance of optimum geometry under load, the greater mechanical grip from the slightly wider rubber, all backed up by the recalibrated rear steering system conspire to create a feeling of near instant response, superb balance and invincibility in the bends. You no longer even consider that this 911 has its engine hung out the back because it now really does not matter. If anything the weight of the engine over the rear wheels, which was always an advantage for better
traction out of bends, can now be fully exploited in a perfectly balanced dynamic partnership of equals. Setting up spring and damper rates on a road car is made all the more difficult when its aerodynamics confer high downforce. However, despite the larger tyres and higher pressures, the choice of spring and damper rates has produced a very civilised ride for a car of this type despite the spring rates being double those of the previous GT3 to help cope with the greater downforce. In a back-to-back with a 2018 991.2 GT3 on the same roads the secondary ride of the new GT3 was palpably smoother.
While the revised underbody aerodynamics and new front splitter confer reduced lift, the new swan neck rear wing is a far more visible talking point. It is when you see a bigger version of this design on the rear decks of the 911 GT3 Cup and RSR race cars that it all makes sense. Hung from above in this way this 20% larger aerofoil presents a much cleaner underside form to the air, thus delivering more downforce and lower drag for its surface area compared to the wing supported from below by two struts as before. The new GT3’s total downforce is 150% greater than its predecessor at 200km/h. In terms of drivetrain character, the PDK transmission remains near instant in its responses up and down its seven speeds, while the 510hp 4.0 litre flat six is now a tad less dominant in the overall scheme of things thanks to the chassis improvements.
As before this is Porsche’s formidable and ultrareliable race car engine made road legal for very strict exhaust emissions using the particulate filter that became mandatory from 2019. The 510hp arrives at 8,400rpm with the redline at a heady 9,000rpm. The peak torque of 470Nm at 6,100rpm belies the very strong low-end grunt available at much lower crankshaft speeds. Indeed, flexibility is one of the inherent strengths of this engine, which does smooth around town and bombastic on the open road with equal aplomb. The big numbers are 0-100km/h in 3.2 sec and a top speed of 317km/h for the PDK, with 318.5 km/h for the manual. However, despite now having a single throttle per cylinder the 10hp more potent engine does not actually feel snappier than before. The blame for this lies with the mandatory particulate filter. This introduces more back-pressure in the exhaust, thus nullifying the potential response gains of the single throttle induction. This filter is also responsible for the more muted exhaust note, which does not sound quite as spine tingling in a tunnel.

We were never fans of the big flick switch gear selector on the 992 Carrera’s centre console so the GT team’s bespoke console featuring a PDK gear selector lever, which at first glance looks like a manual gear lever is to be applauded. Once you have tugged this lever to ‘D’ or across to ‘M’ you change gears with the steering wheel mounted paddles as before.
The revised cabin takes its basic architecture from the 992 Carrera with its ‘glass cockpit’ instruments that group computer generated dials around the large GT3 specific analogue rev counter that has traditionally been the centre piece of every Porsche instrument panel. Next to this above the centre console is the clear and bright widescreen infotainment screen. The GT department’s use of Alcantara, leather and carbon-fibre trim give the cabin a sporting, high quality feel that comes over in both visual and tactile terms.
In ‘M’ mode the automatic upshift function is disabled as before for full driver control, allowing you will go up against the rev limiter if you wish. Beyond that the drive mode selector knob on the steering wheel gives you the choice of Normal, Sport and Track. As before Sport is the best overall balance for snappy drivetrain response, with the Sport mode disabled from the damping via the button on the console as the ride on public roads is too firm

This is a good thing as owners who do trackdays found these one-piece carbon-fibre seats leave you a bit too upright and thus uncomfortable when wearing a helmet. We will have to test it with a helmet to be 100% sure.
Overall, the 992 GT3 moves the game to the next level, and if you are not into trackdays you have the choice of the visually subtler Touring version.

ART FOR LIFE The most recent exhibition at Wadström Tönnheim Gallery showcases two dynamic, emerging American artists Krystofer Kimmel “La poética de la cancha” and Henry Swanson “Ankle Biter”. Kimmel, based in Paris, works primarily in painting and was previously director and curator of At Large, an artist-run gallery in Brooklyn. His work examines movement and abstraction of figures through distortions of form, colour and time. Swanson, a New York based artist works in a variety of media to express memories and settings that recall the interplay of performative familial functionality at odds with the comedy of youthful strife. Meet the author:
BETTINA CAMPOLUCCI BORDI Tell us about yourself... I’m a self-taught chef and a big advocate for all things plants. I specialise in plant-based (vegan) and free-from recipe development for brands, as well as the hospitality industry. I love exploring the world of alternative foods, and showing people the benefits of eating seasonal, plantbased produce. I also run the Retreat Chef Academy, and work as the chef at other retreats throughout the year.
We sat down with chef, recipe developer, and author, Bettina, to find out more about her latest recipe book, Celebrate, and what inspired her deep-rooted passion for all things food.
How many books have you written? I have written three cookbooks, Happy Food, 7 Day Vegan Challenge, and most recently, Celebrate - Plant-based Recipes for Every Occasion. The book features hundreds of colourful, vegan recipes, with inspiration taken from cuisines all over the world. They’re perfect for everyday meals, and even celebrations and special occasions.
Where did your love for food begin? To really understand my background and where my love of food began, let’s go back to the beginning. My father is Norwegian, my mother Bulgarian/Danish, and me? Well, I was born in Denmark, but lived for the first 11 years of my life in East Africa - Tanzania to be precise. And after that in Sweden. In Tanzania, I used to go with my mother to the food markets, and I quickly learned the art of haggling for the best quality and price. We also used to visit a small farmer with just a few cows. I would sit in the back of the car with a bucketful of fresh milk that my mother would magically turn into butter, cream and yoghurt. I learned early on that good things were worth waiting for. There is a running joke about my father taking his time to cook because by the time the food was ready, we would all be starving! He would spend
104
hours getting all the ingredients ready, meticulously organised in between sips of wine and chatting, making sure each element of the dish was cooked properly and was just right. Our holidays were spent all over the world. In Bulgaria with my grandmother and auntie, and in Sweden with my other grandmother - all of whom were amazing cooks. I would sit for hours at the kitchen table, watching them make pineapple upside-down cake, crème brûlée, stews, and breads from
scratch. In Sweden, my grandmother would create jams and cordials from food grown in her garden or foraged from the nearby woods. I love travelling and experiencing different cultures and countries through food. There are untold stories everywhere and these are such a huge part of our lives. It’s magical. And that’s how I initially caught the food bug, which has blossomed into a lifeencompassing passion that won’t be going anywhere, anytime soon.

Pea & Mint Fritters with Garlic Mayo If you happen to have a bag of frozen peas lying around in your freezer, then I urge you to make these epic fritters. They are so simple, but I think one of my best little inventions. Dipped in a quick garlic mayo, what’s not to like?
So, where did Bettina’s Kitchen come from? My lifelong passion for food meant I appointed myself as the head cook at my retreats, and my hobby quickly transformed into my career, as a chef specialising in plant-based cuisine. From here, I specialised in gluten-free and free-from recipes, which form the foundations of my cooking. I went on to study at the Matthew Kenney Culinary Academy, in Los Angeles, to expand my cooking skills and knowledge and to learn the culinary arts.
Ingredients (Serves 4-6)
I started sharing recipes on Instagram and slowly but surely people wanted more, and Bettina’s Kitchen was born.
For the fritters:
• salt and pepper, to taste
• 250g (9oz) potatoes, peeled
• lemon wedges, to serve
Fast forward a few years and I’m now living in the United Kingdom and my passion is still very much plant-based cuisine. However, I am keen to include as much local and seasonal produce as possible, and will always try to make the vegetable the hero ingredient on the plate.
• 1 red onion, sliced into half-moons
Today, Bettina’s Kitchen encompasses culinary, yoga and mindfulness retreats, plant-based cooking workshops, recipe development, food writing, the Retreat Chef Academy and my cookbooks.
• handful of mint leaves, chopped
Everything I do honours my own beliefs about food and wellness and aligns with my philosophies: that we should eat seasonally, locally and from farm to table as much as possible; we should support small businesses within our communities; we must use roots, shoots and all - cooking waste-free is particularly important to me. The best plant food is fuss-free, simple, easy, inexpensive and speaks for itself - which people will see in my books (even the strict meat eaters!).
You can buy Happy Food, 7 Day Vegan Challenge and Bettina’s new book, Celebrate on Amazon.
• olive oil, for frying • 500g (1lb 2oz) frozen peas • 35g (11⁄4oz/1⁄3 cup) chickpea (gram) flour
For the garlic mayo: • 200g (7oz/3⁄4 cup) plant mayonnaise • 30g (1oz) chives, snipped • 1⁄2 garlic clove, grated • juice of 1⁄2 lemon • salt and pepper, to taste
Method • Cook the potatoes in a saucepan of boiling water, drain well, then mash in a big bowl. • Fry the onion in some olive oil in a saucepan over a medium heat for 5–10 minutes to caramalise. Set aside. • Add the peas to a food processor or blender and pulse until almost smooth, but still slightly chunky. Mix the pulsed peas, chickpea flour, caramelised onion, mint, and salt and pepper into the mashed potato. • Warm a layer of olive oil in a large frying pan (skillet) over a medium heat. Using a small icecream scoop, or two spoons to form quenelles, gently add the fritters to the frying pan and cook until nice and crispy on each side. • While the fritters are cooking, mix the garlic mayo ingredients together in a bowl and set aside. • Once the fritters are cooked, drain on a piece of paper towel and serve with the garlic mayo and lemon wedges on the side.

It’s risky business opening a restaurant during the pandemic but for new all-day eatery, La Mar, a spot on the paseo was too good to miss. And after being open just three months, it’s already become a go-to spot for those ‘in-the-know’.
Owned by Dutch family and friends, Willem Wolthuis, Marga Dekker, Jerge Ladru, Stijn Wolthuis, Noortje Wolthuis, and Nicky Bölte, there’s a real sense of camaraderie between them; so friendly and welcoming, their cheerfulness and passion are infectious. La Mar is open from 10am to midnight, serving French-Asian cuisine
- though a full English has crept onto the breakfast menu. For brunch, tuck into poached eggs, avocado and salmon on toast or light and fluffy pancakes, with fruit or even bacon.
THE PANCAKES CAME ON A LARGE WOODEN BOARD, WITH A WHOLE GRILLED DUCK BREAST, SLICED INTO SEGMENTS.
From lunchtime onwards, the full menu is available, with a huge selection of small and large plates that are perfect for sharing. My friend and I dined at La Mar in the evening and sat out on the large terrace. To start, we had a passionfruit cocktail, followed by ceviche and spring rolls. The ceviche was delicately cured with lime, and served on a bed of sliced avocado, topped with pickled onions, offering a nice contrasting texture to the soft fish. The spring rolls came with a sweet chilli dipping sauce, and were some of the best I’ve had on the Costa del Sol. They were lightly fried, golden and crisp, and the vegetables still had a good crunch. As we waited for our mains we swapped from cocktails to wine, selecting a perfectly cold bottle of Albariño - always a safe bet.

Soon our table was filled with a beautiful spread of food: tempura prawn and salmon sushi, duck pancakes, lobster ravioli and seared tuna. We enjoyed building our own pancakes, topping the duck with the classic accompaniments of cucumber, spring onion and hoisin sauce, and creating a delicious little bundle. Our favourite dish was the lobster ravioli. Chefs at La Mar make the
COSTA CUISINE
pasta fresh every day, filling the ravioli with perfectly seasoned chunks of lobster meat, and poaching them in salted water for just a few minutes, until slightly al dente. The lobster shells are used to make a bisque for the sauce. It was heavenly; rich and deep in flavour, with a touch of truffle - the kind of sauce that begs for a slice of crusty bread so you can mop up every last drop.
YOU COULD TELL THE SUSHI WAS FRESHLY ROLLED, WITH THE RICE STILL SLIGHTLY WARM AND PERFECTLY STICKY. THE PLATE WAS DECORATED WITH EDIBLE FLOWERS, DOTS OF FIERY WASABI AND A SLIGHTLY SPICY MAYO.
AS YOU CAN EXPECT, THE TUNA WAS BEAUTIFULLY SEARED, SERVED ON A BED OF WOK-FRIED VEGETABLES, A BRIGHT PINK PUREE, AND A WEDGE OF LIME ON THE SIDE. Believe it or not, we still had room for dessert. And when they’re all made in-house, it’s hard to say no. We chose three classics: crème brûlée, cheesecake, and a chocolate fondant.
As much passion has gone into the design of this restaurant as it has the food, with each detail carefully considered from start to finish.
The crème brûlée was surprisingly light, with perfectly set vanilla custard and a thin layer of caramelized sugar (it passed the back of the spoon tap test).
Inside, the decor is chic - sort of boho vibes, with a miss-match of low hanging wooden lights, colourful vases, exotic plants and large ferns.
If you like chocolatey desserts, the chocolate fondant is for you: warm, soft cake with an oozing middle, sat on top of crushed blackcurrants, offering a nice acidic contrast to the rich cocoa. The baked cheesecake was also a winner, and surprisingly light too. It was accompanied by vanilla ice cream, a dark fruit couli, fresh mint and sugar tuile - a wonderful way to finish a heavenly meal.
One of the main features is the open bar, lined with stalls, where guests can sit and watch head mixologist, Jaron Burt, create a custom-made cocktail. The terrace (where we sat), while more simplistic, is just as appealing, with views across the ocean - a lovely spot to watch the sun set, or to simply sit and people-watch.
On certain days of the week, La Mar also has live music with DJs and singers - just another great attribute to this already muchfavoured spot. Lucky for the locals, La Mar is staying open throughout the winter season, serving up exotic cocktails and delicious food that will keep you coming back for more.

GET SOCIAL Eat • Drink • Play
Another dazzling destination restaurant from the La Sala Group, The Social is the place to go for live sports, great food and a side of competitive fun. Locals may remember this popular spot on the Banús roundabout as the Oak Garden & Grill, but earlier this year the Group decided to change it to The Social.
Open seven days a week, it’s the ultimate ‘social setting’, showing all the major sporting events on its many large screens. And if there’s not a game on, guests can entertain themselves with Pac-Man, Space Invaders and Pool, or simply sit in the garden with a cocktail, admiring the breathtaking La Concha mountain. The food is very good, home cooked and hearty. It’s not fine dining (that’s what La Sala’s Puerto Banús is for). Think loaded fries, burgers, stonebaked pizzas, and tender BBQ ribs.
First to the table was the chargrilled sirloin steak - medium rare, of course. Well seasoned, it came with a side of crispy fries, mushrooms and blistered tomatoes on the vine. It was succulent, tender. I think I ate most of this one myself. Next, an enormous stack of BBQ pork ribs arrived, generously coated in a rich and smokey sauce. The outside was almost caramelised and the meat, melt-in-your-mouth soft. These too came with a side of hand cut fries, mushrooms and tomatoes.
Our waiter then came out with a VEGANS AND VEGGIES ARE CATERED large pepperoni FOR TOO, WITH BEYOND MEAT BURGERS, pizza, dressed with a THAI GREEN CURRY, AND CRUNCHY little rocket on top. To start, we had a selection of small plates, including freshly baked garlic dough balls and cheesy garlic bread even the crust oozed with mozzarella. The Social is staying open all-yearround. Monday to Friday, the doors open from 7pm - midnight, and on weekends, 1pm - midnight. During the day, the kitchen will be serving a tapas menu.
As you can imagine, we were absolutely stuffed. So rather than order dessert, we grabbed a coffee then moved over to the pool table to see who was ‘all chat’, and who could actually pocket a ball. I lost three games to two.
IT’S EASY TO MISS THE LITTLE QUIRKY DETAILS OF THE SOCIAL IF YOU DON’T LOOK CAREFULLY. As I sat and wallowed in self-pity over my defeat (I always was a sore loser), I noticed the fairy lights wound around the trees and lanterns hanging from their branches, creating a relaxing evening ambiance. There were two old 1920s bikes turned into tables too,

Treat yourself
Name a Pup
Need your nails doing? Fancy releasing some tension with a massage? Or maybe treat yourself to a facial… At Salon de Monet, owner Tash offers a whole range of treatments, including techniques like microneedling, eyelash lift, and chemical peels. Situated up in the hills between Estepona and Marbella, it’s a secluded, quiet spot to relax for an hour or so. For many celebs, like Laura Hamilton from A Place in the Sun, Salon de Monet is a first choice when they visit the Costa del Sol, offering some muchneeded respite from busy Marbella. Treatments are modestly priced too, with facials starting at around €40, and they include a great little neck and shoulder massage. If you like to go bold with your nail art, Tash has been painting nails for over 10 years - no design is too challenging.
Specsavers Ópticas are running a competition to name a cute, young guide dog puppy. One lucky winner will have the honour of naming the pup, as well as winning a hamper of prizes. This will include a voucher for a pair of designer sunglasses, a selection of goodies from the charity, a certificate, and a photo of the puppy. The competition is free and entries will be welcome throughout the month of October via social media, emailing your entry to paul.ainsworth@specsavers.com or by popping into a Specsavers Ópticas store. The competition is being organised as part of Specsavers Ópticas’ campaign to raise 5,000€ for the charity by the end of 2021 and to raise awareness of the tireless work they do. The ONCE Foundation for Guide Dogs (FOPG) breeds and trains guide dogs, so they can be placed free of charge with people who have severe visual impairment in the community, enabling them to live the fullest lives possible. To breed, train and place a guide dog with someone, costs approximately 35,000€ and the charity relies on fundraising to provide as many guide dogs as possible for people who really need them. www.specsavers.es

One of One Ex Tottenham and international teammates Stephen Carr and Robbie Keane reunited at a training camp for aspiring young footballers in Marbella last month. And it seems they also share a passion for fashion with the pair both seen sporting Carr’s brand new luxury loungewear brand, ‘One of One’. Sold exclusively online, Carr spent months researching and exploring different fabrics in his quest to make the perfect loungewear. Eventually, he and fashion designer Georgia Clark landed on the ‘one’. The new range includes t-shirts, shorts, and hoodies, for both men and women, starting from €40. The collection was made to mix and match all year round – a collectable wardrobe addition that will never go out of style. From the fabrics to the packaging, One of One is made with sustainability in mind. The super soft fabrics are made from only the highest quality materials, grown, and spun indigenously in Portugal, and are sent to customers worldwide in biodegradable packaging from Carr’s warehouse on the Golden Mile. Nicky Byrne from Westlife was also recently spotted wearing the eco loungewear. www.oneofone.world |
