he official title is the Metropolitan Museum of Art Costume Institute Benefit, but everyone who is anyone knows ‘The Met Gala’ is the fashion calendar event of the year. Colloquially known as ‘fashion’s biggest night out’ this black-tie extravaganza is held on the first Monday in May to raise money for the Costume Institute (a.k.a the fashion department) and welcomes celebrity stars, young creatives and industry professionals. This year the theme was arguably the most fitting to date, Camp: Notes on Fashion, a play on the famous Susan Sontag essay “Notes on Camp.” Whilst it isn’t stated that attendees have to dress in the style of the exhibition, it is encouraged.

The open-to-interpretation theme invited even the most timid dressers to step out of their comfort zone. According to Sontag, “the whole point of camp is to dethrone seriousness,” well let’s just say the fashion heavyweights took dethroning seriousness, very seriously! The hosts this year were Anna Wintour, who has the final say over every invitation and attendee, creative director of Gucci, Alessandro Michele, One Direction’s Harry Styles who just happens to be Mr. Michele’s muse and walked the pink carpet with the designer in a flamenco inspired gender-fluid look, Lady Gaga and Serena Williams. So who stood out? Host Lady Gaga arrived in a flamboyant pink dress but promptly stripped down to a black dress, a further pink dress and finally to her underwear. Actor Billy Porter was carried onto the famous pink carpet by six shirtless men dressed in a gold bodysuit and matching headpiece, which certainly grabbed some attention. Katy Perry arrived as a life-sized chandelier with electric candles and dripping with crystals designed by Moschino’s Jeremy Scott and Jared Leto showed up with an unusual guest, a replica of his own

head. It appears he was inspired by Gucci’s Fall-Winter 2018 show, where the models walked the runway with heads. Superstar Celine Dion graced the famous entrance in a 22 pound gold Oscar de la Renta gown that took 52 master embroiders 3000 hours to hand bead. The look was inspired by the legendary Judy Garland and the Ziegfled Follies, revealed de la Renta. Zendaya brought the house down arriving in a black Tommy Hilfiger gown before her stylist, waved a wand, and transformed her dress into a glowing version of the iconic baby blue gown worn by Disney princess, Cinderella. Yes, you see it all at the Met Gala! It wouldn’t be a fashion event if we didn’t talk about the KardashianJenner clan. The youngest of the bunch, Kylie and Kendall, opted for glamorous feathered ensembles by Italian fashion house, Versace, with Kylie even matching her hair to her purple creation. Kim opted for a waist cinching corset dress by Thierry Mugler, Mugler was ‘the’ hottest designer before he disappeared from fashion, but who other than Mrs. West would be selected to bring him out of retirement. The Kardashian crew’s supermodel pal, Gigi Hadid arrived on the arm of American fashion designer, Michael Kors wearing a metallic form-fitting

catsuit with matching cape and headpiece. Her sister Bella followed with a bejewelled black gown by Jeremy Scott for Moschino. So, what happens once they reach the end of the carpet? Posting on social media is banned once they step inside, it’s even rumoured phones are forbidden in case anyone tries to sneak in an Instagram story, although somehow Kylie manages to grab her annual bathroom selfie every year. Once entering the guests are met by a receiving line of the hosts, they then tour the exhibition on the way to the cocktail party. This is followed by dinner and entertainment. The gala remains the gold standard of parties and that by which other events are measured and this year was no exception.

It’s not only the fashion The Met Gala is famed for, its draconian rules are as famous as the triple A-listers. Here are a few of the laws the attendees must follow:
NO SELFIES
As we mentioned, phones are reportedly forbidden and that includes taking selfies and all social media. Former Met Ball planner Sylvana Durrett admitted in 2016 that staffers even check on guests mobile phone usage! “We aren’t sitting over people’s shoulders she said, but if it’s an obvious thing we might gently remind them.” She continued by explaining, “Anna is a sort of old-school

traditionalist, she likes a dinner party where people are actually speaking to each other!”
NO UNDER 18’S
Last year Maddie Ziegler reportedly wasn’t invited because she wasn’t old enough, despite Jaden and Willow Smith previously attending. Event planners told the Hollywood Reported that children would no longer be admitted saying, “it was not an appropriate event for people under 18’s.” At least it explains why we haven’t seen Millie Bobby Brown grace the carpet!

fter becoming the youngest self-made billionaire, Kylie Jenner, has branched her Kylie Cosmetics line into skincare, with the release of Kylie Skin. However as expected, the young entrepreneur isn’t stopping there. According to the U.S. Patent and Trademark Office, Jenner filled for trademarks for ‘Kylie Baby’ and ‘Kylie Baby by Kylie Jenner.’ Both trademarks were filed for baby and infant products across clothing, skincare and lifestyle categories. Following the birth of her daughter last year, Stormi Webster, it is no surprise Kylie is looking to expand her portfolio with the help of her little girl.

The Kardashian’s released the name and first picture of their fourth child born by a surrogate this month, a son, named Psalm West. Could the name be a reflection of where the couple are spiritually? As always the reaction to the announcement has been mixed, but then again, we always knew the West’s would opt for something that got people talking!

The couple who met on Love Island in 2017 announced the news via Instagram with the sweet captions, ‘The best is yet to come,’ and ‘Living the dream’. Whilst watching the most recent billion dollar offering from Disney-owned Marvel Studios, I was strangely less preoccupied with the fantastical effects or outlandishly intergalactic settings as the face of one of its leads. Though produced last year, Captain Marvel is set in 1995, the same year said actor, Samuel L Jackson effed and jeffed his way around New York with a hungover John McClane in Die Hard with a Vengeance. Despite exercising a decidedly more PG13 vocabulary, Jackson's recent Marvel character displayed the same youthful visage as his Die Hard counterpart. Relative youthfulness that is - as one of cinema's most ubiquitous actors it's easy to forget audiences were widely unaware of Jackson until he broke through with 1994's Pulp Fiction at the tender age of 46. Now 70, he's certainly aged well, but 70 is 70, even in Hollywood, where it's closer to 60. Other forces were clearly at work. As a film nerd, I knew going in his character had been “de-aged” using the same tech Marvel had implemented for brief spells in previous franchise entries but I wasn't prepared for how impeccably it had been accomplished across an entire movie. To the detriment of my plot comprehension (something about a cat), and whilst most men my age were probably ogling the female lead in her latex onesie, I spent the majority of the runtime squinting intently at the front of a pensioner's head, trying to spot the digital seams. Inconsistent lighting, airbrushed skin,

unblinking eyes??... nothing. To my fairly keen photographer's stare, it was an immaculate blend of cinematography, performance and post-processing, the subterfuge only falling away in a scene which required Jackson to run... Face of a man in his 40's. Gait of a man from the 40's. When so many movies grow tedious through over-reliance on hollow CGI spectacle, some of the most impressive effects are those we don't notice. Or shouldn't notice. I'm sure Marvel wanted
WE ALREADY KNOW WE CAN'T BELIEVE EVERYTHING WE READ OR HEAR, BUT SOON WE'LL HAVE TO QUESTION EVERYTHING WE SEE. viewers to think “Wow, cool!” upon seeing a youngified Jackson, then lose themselves once more in the story, but I practically gave myself a migraine attempting to second-guess the effects geniuses for the next 90 minutes. The suspension of disbelief they expect for all the flying, monsters, and time-travel shit should probably extend to Sam looking a bit younger than he currently is but then ironically they went and did it too well and burst my bubble.
We don't have a real world visual reference for a spaceship entering warp-speed or a fire-breathing dragon so we more easily give those effects a pass. We do however implicitly recognise how the face behaves during speech. The same goes for the body in motion. Effects houses are having to match that level of scrutiny with rigorous attention to detail to keep ahead of the curve. Photorealism is a shifting paradigm; effects we heralded as photorealistic a few years back now appear glaring for their flaws (people also genuinely thought their own hair looked good in the 80's...) Captain Marvel hasn't reinvented the wheel when it comes to the painstaking process of de-aging but it finally straddled the “uncanny valley” of plastic skin and unrealistic muscle movement which has dogged many otherwise technically impressive productions. Next under the digital knife; Robert De Niro, Al Pacino and co in Martin Scorsese's upcoming The Irishman and Will Smith in Ang Lee's Gemini Man. Now we appear to have cracked what makes the face appear human, the ramifications of associated technologies are more contentious and far-reaching than mere entertainment. Whilst millionaire actors add their veteran gravitas to ADHD-inducing productions they might otherwise be deemed too creaky for, AI-powered deepfake videos are further blurring the lines in the posttruth society. We already know we can't believe everything we read or hear, but soon we'll have to question everything we see. People have found their privacy
WHEN IT COMES TO DIGITALLY REPLICATING THE HUMAN FORM, IT APPEARS THE GENIE'S NOW OUT OF THE BOTTLE. IT JUST REMAINS TO BE SEEN WHETHER THE TECHNOLOGY WILL BE USED IN THE PURSUIT OF STORY, GIMMICKRY, CRIMINALITY OR COLD, HARD CASH.
compromised - faces superimposed onto stranger's bodies in pornographic videos - whilst celebrities and even presidents can be made to say anything by digitally-augmenting their mouths in archival footage. Although Trump needs no help uttering idiocies and dangerous rhetoric, with cyberterrorism on the rise, the political and social implications of deepfake technology are frightening. Even obvious fakes can quickly make waves in a climate where we so frequently hit Share before stopping to question the legitimacy of online content or the consequences of its dissemination. Further ethical questions arise when dead performers' likenesses are wheeled out in the interests of fan-service or, let's face it, money. The fact that Elvis' untimely death has been attributed in part to his crazy junk food diet didn't stop Pizza Hut digitally inserting his hip-swinging image into a godawful 90s TV ad and whilst the “hologram” of deceased rapper Tupac Shakur which wowed audiences at the 2012 Coachella music festival slotted nicely into the Machiavellian resurrection narrative the man himself peddled, the plans to implement the tech for a posthumous Whitney Houston tour
(or ten) proved more controversial. A gifted singer whose later career became defined as much by her addictions as her talent, the idea a digital replica would be trotted out night after night to earn millions for those widely blamed for enabling her sad demise leaves a bad taste in the mouth. A similarly tragic talent, Amy Winehouse is also the subject of a mooted hologram tour, with some proceeds at least earmarked for the Amy Winehouse Foundation. Nevertheless, it's hard not to feel the vulnerable singer's legacy of candid, soulful music and her welldocumented struggles with drugs and fame would be at odds with an allsinging, all smiling high-tech facsimile - a trick of the light projecting our own ideals on someone else's true identity. When it comes to digitally replicating the human form, it appears the genie's now out of the bottle. It just remains to be seen whether the technology will be used in the pursuit of story, gimmickry, criminality or cold, hard cash. Hollywood's no stranger to all four, but just one remains non negotiable. Avicii may be gone, but his family are making sure his music doesn’t go unheard. Nearly one year after his death Universal Music announced the release of his new album, TIM. He had almost completed the 16 track album when he died last April and his collaborators picked it up where he left off with the aim to get as close to his vision as possible. Proceeds from the album will benefit the newly established Tim Bergling Foundation, which supports organizations in the field of mental illness and suicide prevention.

hildren need to read and be read to; to keep their imaginations thriving, advance their word recognition, context and improve their vocabulary as well as advance their spelling and literacy. This isn't ground breaking news but if you take a deeper look into the science of it all, you might be surprised to know why reading is that good for you and therefore an essential pastime for children. One of the best tools in the world to train the brain is to pick up a book (yes, an actual book with paper pages and printed words) and read it! Despite all the modern methods that have been developed, reading still comes out top as the best thing to nourish the brain. Recent findings suggest that children as young as six months who read books with their parents several times a week show stronger literacy skills four years later, score higher on intelligence tests, and may end up in more skilled professions than those who don’t.
How is this proven? If we investigate into the left temporal cortex, for example - the part of the brain which deals with language reception - it is evident that, when reading, the neurons (which work to process the letters and determine words, sentences and stories) are being encouraged to work harder and more efficiently than when they’re processing spoken language. When we read something we have time and space to contemplate, reflect and think about the words we are absorbing. Maryanne Wolf, EdD, director of the UCLA Center for Dyslexia, Diverse Learners, and Social Justice says that “reading gives you a unique pause button for comprehension and insight. By and large, with oral language—when you watch a film or listen to a tape—you don’t press pause.” One of the greatest benefits of reading is that it can improve your memory. Reading requires a deeper focus than listening or observing, so even after

you have put down your book your brain will continue to work at that level for days. This persistence is known as a shadow activity which is a concept similar to muscle memory.
ANOTHER PART OF THE BRAIN WHICH IS STIMULATED DURING READING IS THE AREA RESPONSIBLE FOR MOTOR ACTIVITY; THE CENTRAL SULCUS.
Another part of the brain which is stimulated during reading is the area responsible for motor activity; the central sulcus. During reading, triggers within the words will cause this part of the brain to become active; if we read about running for example, the neurons which control this activity cause your brain to play act that you’re running as well. The more parts of our brain that are active at a given time, the better our cognitive performance. When we are deep into a book and literally can’t put it down, this is when we are reaping the most benefit. During these moments we are increasing blood flow to areas of the brain which control cognitive and executive function. If you know a child with learning difficulties or dyslexia for example, persistent and consistent reading can actually help them to increase the ‘white matter’ in their brain; the tissue that carries signals between areas of grey matter, where information is processed. In other words, by reading their brains can be ‘rewired’ to benefit their learning abilities. Another interesting find is that ‘close reading’ is the type which is the most beneficial. Close reading is where you become engrossed in a story, not just scanning over some words, or pawing through a magazine and acknowledging snippets of
information. To read closely means you are fully absorbed by the text at hand; it is continuous, sustained and concentrated. To do this takes practice, and in today’s society what with various devices being our ‘go to’ for reading material we have become incapable of reading deeply. Training these specific brain muscles helps with our concentration, language, memory and focus. The only way is to take time out, turn everything digital off, grab a good book, and just read.

From here you can find books which will suit their personality and hopefully inspire them to read them alone. Ask them to read out loud every night, take turns with the book…it’ll soon become standard practice and something they’ll love and nurture for the rest of their lives.
This is an amazing gift to pass on to our children that will help them greatly in later life. Why? How? Because word power increases brain power. Deep reading encourages you to make connections between the chapters, the world going on around you, the thought process is consistent and critical, it means you are literally forging new pathways between regions in all four lobes and both hemispheres of your brain in the process. Over time, if practiced regularly this can support healthy brain function, promote quick thinking, emotional intelligence, empathy, and may defend you from cognitive decay. So get those pathways opening up at a young age and that mind will have the power to keep itself strong and powerful for the rest of its life. It isn't always easy to get a child to enjoy reading, you’ve first got to tap in to what it is they enjoy, you can do this by reading to them from birth and keeping this as a routine throughout their early years. Why is hemp and cannabinoids good for us? Hemp has been around for centuries and we have used this plant to house, feed and clothe us from the dawn of time. Ancient texts and scriptures revealed that it was an important remedy and used from everything from inflammation to treating cholera and seizures. So why does it work so well? The reason it’s so beneficial is that we all have an endocannabinoid system; in fact, all mammals do. The phytocannabinoids in the cannabis plant work with our own bodies like a lock and key helping our own body to naturally heal itself. The cannabinoids interact with our CB1 and CB2 receptors triggering a chemical reaction to help soothe the symptoms we are suffering from including the neuron system, the immune system and the endocrine system (hormones), basically everything our body needs to remain balanced.

I get questioned on a daily basis about “am I sure this stuff really works” “Will this make me high” and the answer is no. The US GOVERNMENT Own a Miracle Drug? The patent recognized the effectiveness of cannabinoids for treating oxidation-related diseases caused by free radicals, unstable molecules that cause damage to cellular organisms and lead to illness and ageing in humans, and their ability to protect neurons and heal damage to the Central Nervous System (CSN). “The cannabinoids are found to have particular application as neuroprotectants, for example in limiting neurological damage or in the treatment of neurodegenerative diseases, such as Alzheimer’s disease, Parkinson’s disease and HIV dementia,” claim the inventors of the patent. Journalist and Oregon NORML activist Angela Bacca said the U.S. patent of medical uses for cannabinoids has laid bare the contradictions and blatant hypocrisy of federal marijuana prohibition. “This patent shows that federal marijuana prohibition is a farce,” said Bacca. “[Prohibition] only exists to create profits for certain groups of people.” So although we cannot advertise the health benefits, and there are still a huge number of legal issues with even selling CBD or hemp based products. There is people who clearly know about this and the fact that there is at least evidence to suggest that a simple plant that grows like a weed can assist with a number of common issues. Not only that, by planting hemp across the world we can reduce pollution and climate change. Let’s help make a difference, support the cannabis community. Google it yourself! Funding for Clinical Trials Raphael Mechoulam the Godfather of the Cannabis industry, (my hero), the same man who found the compound THC, CBD and and the ECS has been pioneering for decades asking for funding for clinical trials without the needed support. He has been credited by countries and universities worldwide but still cannot get the necessary money to back these clinical trials that are apparently so necessary before they can prescribe anything to the public. So although The law in the UK was changed last November to make access
to medical cannabis legal, parents have been struggling to secure prescriptions, in part due to reluctance within the medical community. Ummm interesting it appears that only certain people will have the right to access and promote this plant? We will see. My aim is to promote cannabis in a positive way to help us get the funding this industry so desperately needs to make cannabis legal.

Quick Recipe
FEED ME MOMMA’s Vegan Cacao Crunch with a touch of CBD to help the serotonin explosion, sheer heaven. Pulse 1 cup walnuts and 1/2 cup of Cacao Nibs for few seconds in processor, you want a broken down texture not crumbs and place into a mixing bowl. In processor blitz 1 cup of pecans, then slowly add one at a time 1 cup of soft dates (medjool or soaked dates). 1/2 cup of Cacao Powder, 1 tsp cinnamon, 1 Tbsp. Maca Powder, 4 drops of 5% TLE tincture,1 table spoon of warmed coconut oil and 4 tbsp. of water. Want a slightly sticky texture, if too crumbly add a little more water. Place into bowl and mix well with other ingredients. Pour this all into a lined tin, 15 20cm, any shape, if you like them deeper use a smaller tin. Push down firmly, making the mixture stick together until it’s flat like a brownie, dust with a little cocoa powder and place in fridge for around 4 hours. Remove, slice and gobble up.

The Trendiest Diets of 2019 T
here are so many fad diets trending that I’m getting whiplash trying to keep track of them all. I have heard of extreme diets where people only eat one type of fruit for extended periods of time or delegate the majority of their daily caloric intake from animal protein. I am going to assume that you can red flag absurd diets like those as concerning, but I do want to discuss the potential consequences and benefits of some of today’s most popular diet trends.
I also want to note that I believe in a lifestyle, not a diet. Whatever method of consumption that you choose, ask yourself “Can I make this a lifestyle?”. If the answer is no, it’s probably not the program for you…
Paleo The Paleolithic Diet, or Caveman Diet, is a current trend in which people consume only foods presumed to have been eaten during the Paleolithic era. There is some variation in how people note the details of the Paleo Diet, but, in general, about half of the day’s calories are split between seafood and lean meat and the other half is split between fruits, vegetables, nuts and seeds.
Concerns
There are two huge issues I have with the fundamentals of this diet right from the get-go. First, modern humans are extraordinarily anatomically different from Paleolithic era humans, whom existed around 3.3 million years ago. Our digestive systems simply are not the same as they were back then, so we cannot assume that
the foods that were optimal for people during those times are ideal for us now. Second, there is still widespread debate over what foods were actually eaten millions of years ago. How can we expect to put our trust in a diet that is based on assumptions? My concerns extend beyond just the principles of the Paleo diet. I am a firm believer that the optimal diet is at least majority plant-based. I would never recommend that any of my clients get over 50 percent of their daily calories from any meat source, which this diet promotes. I am also extremely careful about what kinds of meat I put into my body. I am a fan of organic, free-range and antibiotic-free lamb and Alaskan, wild-caught salmon, but I would never recommend red meat to anyone. And eating too much fish, especially farmed fish, can be toxic for humans. I also think we should limit our egg intake, which the Paleo Diet does not denote. The rules of Paleo also encourage people to avoid legumes, which I do not think is beneficial for most people.
Benefits
I love that the Paleo Diet bans dairy, added salt, added sugar and most grains. Most human beings have at least a mild sensitivity to both gluten and dairy and the rates are continuing to grow at an alarming speed. Most of us benefit from cutting back on both of those kinds of foods and replacing them with plant-based protein and fiber sources instead. Today people also eat way too much sugar, and it literally feeds disease growth. It is also great that the Paleo Diet eliminates processed foods, since most of it provides no benefit to us.

Pegan In terms of restriction, a pegan diet is pretty high up there. As you likely guessed, it is a blend of paleo and vegan eating. This means that someone practicing a pegan lifestyle must avoid most meat and all dairy, whole grains, legumes, alcohol, coffee, oils and more.
Concerns
A big concern of mine with the pegan diet is deprivation. More than likely, someone is going to struggle with finding the appropriate foods to eat and end up feeling starved and rebound to be unhealthier than they were prior to their pegan phase. Plus, I find no problems with legumes and some whole grains. I do not think lectins need to be feared, as some people in the health community will have you believe.
Benefits
The positives of this diet are a blend of the benefits that come with both a paleo and vegan diet – no dairy, limited processed foods, no gluten, etc. But, for me, they are not sustainable, and I recommend passing on the pegan diet.
Vegetarian/Vegan Whenever my clients tell me that they want to experiment with a vegetarian or vegan diet, I let them know that this form of eating is actually not considered a diet if done correctly. Being vegetarian or vegan can be viewed as more of a lifestyle than a diet. It should not be restrictive and is a more sustainable way of eating that can last for months or even years rather than other diets, which are only feasible for shorter amounts of time. Vegetarian refers to someone who does not eat any meat (including fish) and vegan is a term used to describe a way of living without any animal products at all – this includes dairy, eggs and honey. I, myself, practice a flexitarian diet, which consists of about 80 percent vegan food and 20 percent high quality animal products like lamb, wild-caught salmon, ghee and collagen.
Benefits
I have seen countless benefits of people switching to a more plant-based diet – a decrease in blood pressure, lower levels of cholesterol, reduced acne, lower levels of stress, weight loss, lower blood sugar levels, and an increase in sex drive, just to name a few. I whole-heartedly believe that if everyone strived to eat more vegetables and fewer animal products, we would all be significantly healthier. I encourage all of my clients to limit their meat and dairy intake.
Concerns
I have seen a number of people who want to try vegetarian or vegan eating but end up replacing animal products with carbohydrates or other processed foods. This is counterproductive and can be very unhealthy. Do not fall for the healthy-looking vegan labels – just because a food is vegan, does not make it healthy (Oreos are vegan, after all). I also have some clients who went vegan, did not eat enough calories each day, as a result felt super restricted and bounced back to their original unhealthy habits. Make sure you prepare ahead of a transition to a veg diet, so you know which plant foods are best to use as replacements for animal foods.

Keto The Ketogenic Diet has brought about debate within the nutrition community. It is a diet so low in carbohydrates that you begin using fat instead of sugars for energy – a process known as “ketosis”. Ketosis refers to the release of ketone bodies into the system as a by-product of the fat burning cycle. Many ketogenic dieters will actually measure ketones in their urine to ensure that they are in active ketosis. The diet involves a high fat ratio of 75 percent fat to 20 percent proteins and only 5 percent carbohydrates. Clinically, it was developed as a dietary treatment protocol for children with Epilepsy, but it has surged in popularity over the last few years.
Concerns
There is evidence to suggest that some people have experienced increased levels of cholesterol in the beginning of a ketogenic regimen. The keto diet can also be hard to follow, and people often end up eating significant amounts of red meat and other processed foods, which is extraordinarily unhealthy. We also do not know much about the long-term effects of a ketogenic diet since it has proven so difficult to maintain.
Benefits
Some people have experienced great benefits from a keto diet, some of which include improved weight loss, increases in insulin sensitivity, and enhanced mental focus. Some say that it may also be anti-cancer. There is evidence to suggest that most cancers feed off of glucose. By starving your system of glucose and running on fats instead, you may be effectively starving cancer cells. Even just a day or two on a ketogenic fast could potentially mitigate the threat of cancerous cells.
Whole30 This is technically an elimination diet, that urges participants to avoid foods that are often linked to sensitivities, cravings and low energy, and then they are slowly introduced back in. The diet’s founder, Melissa Hartwig, says that the purpose of Whole30 is a 30-day experiment to teach you how the foods you commonly eat are impacting how you feel and your overall quality of life. Foods included in the diet are vegetables, fruits, nuts and some organic and sustainably/ ethically raised meat, fish and eggs. Not allowed on the menu is sugar, alcohol, legumes, dairy, grains and sugar.
Concerns
My concerns about the Whole30 are similar to those of the pegan diet. I do not advise people to eat most meat, even if it is organic and sustainably grown (I also try to avoid the term “ethically-grown” when it comes to animal protein,

since, if I am being honest, there is no such thing as ethically-grown meat). As I mentioned previously, I am also a fan of legumes and think they have been given an unfair reputation based on some shoddy science over the years. It also requires significant time and planning, and you will need to avoid most restaurants during your 30-day experiment. Just like other diet fats, weight loss from Whole30 has not proven to be long-term for most people.
Benefits
I am a big fan of elimination diets for people who experience regular gastrointestinal discomfort. I love that Whole30 removes sugar and other processed foods and I do like that it at least specifies that any meat consumed must be organic and sustainablyraised, which is a big step above pegan and keto. Any diet that encourages more vegetable consumption gets at least a partial thumbs up from me.
Intermittent Fasting For so many years, we were all taught the importance of eating a big breakfast. In retrospect, I realise it was likely all based on the agendas of breakfast brand behemoths trying to sell us sugar laden cereals and yogurts. For me, a big breakfast never worked. It always made me feel more hungry, grumpy, or tired. When I skipped breakfast, however, I always felt great. Over the last few years, I realised that I was not alone in this when intermittent fasting rose in popularity. Simply put, intermittent fasting is the practice of condensing the timeframe in which you ingest food down to a six to eight-hour window. Rather than spreading out your three meals a day or snacking consistently, the idea is to give your system clear boundaries and time to recover. Typically, foods within an intermittent fasting protocol include high quality, nutrient dense, whole foods and starchy carbs tend to be limited.
Mediterranean The Mediterranean Diet emphasises foods that were commonly eaten by people in Spain, Southern Italy and Greece in the 1940s and 1950s. It encourages mostly plant-based eating with a focus on vegetables, fruits, whole grains, legumes and nuts. On the Mediterranean Diet, people avoid butter and instead use healthy fats like olive oil. Red wine drinking is allowed while on the diet and regular water consumption is encouraged.
Concerns
It is easy to overdo it on fats in the Mediterranean Diet, so it is important to be mindful of that. I do not love that red meat is allowed, even in moderation, since I think the focus should be on omega-rich fish and lean animal protein. Dairy is included in this
diet, but I think it should be limited. I also worry about the fact that grains are encouraged. While I am a fan of whole grains to some extent, I know most people do well with limiting their gluten intake so grains should be eaten in moderation.
Benefits
The Mediterranean Diet is definitely one of my favorites. I love that it is significantly less restrictive than keto, paleo, Whole30 and pegan and, thus, more likely to be sustained. I also love that water is a major focus of this diet, since most of us are not drinking nearly enough each day. I am happy to see that refined oils, refined sugar, refined grains and trans fatty acids are removed from the Mediterranean Diet along with highly processed and fast foods.
Concerns
While intermittent fasting is not meant to restrict the number of calories you eat in a day, it does restrict the times at which you eat them. Restrictive eating of this kind can lead to overeating or binge eating during the allotted hours. Some people complain of low energy levels during the first part of the day. For this, I recommend a little healthy fat in the morning like adding MCT oil or collagen powder to your morning coffee. This makes it a lot easier to hold off until lunch.
Benefits
There have been quite a few reported benefits with intermittent fasting. Some of them include enhanced mental function, increased insulin sensitivity, resetting of hunger hormones and improved ability to burn fat. For those of us who feel nauseous forcing down a big breakfast, it also makes the mornings more enjoyable.
Ultimately, I have found that extreme dieting in general does not work. With my clients, I have seen time and time again that if they feel deprived, they will maintain whatever diet they are experimenting with for a limited time but will often fall back into unhealthy habits and may even gain weight when they inevitably fall off the wagon. Plus, yo-yo diets, or those that lead to rapid fluctuations in weight loss and weight gain, are associated with increased mortality. Everyone is different, so what works for one person may not work for another. It is important to experiment with different foods and see what feels best for you. At the end of the day, I advise most people to follow an overarching lifestyle that consists mainly of foods like vegetables, fruits, legumes, nuts, seeds and water. Limit your intake of grains, meat, dairy, eggs and alcohol. As always, I recommend checking in with a doctor before trying out a new kind of eating.

We are once again joined by Reflections’ celebrity hairstylist Jonathan Yeadon, whose A-List clientele includes Victoria Beckham and Simon Cowell. Jonathan is loved not only for his mindblowing colouring skills but his outrageous personality as well.

just want to start off by thanking everyone who has called or popped into the salon to let me know how much they enjoyed last month’s column. I have always secretly wanted to write a book and the positive feedback might just have given me the kick up the bum I needed.
I did it my way This is part two of our warts and all confession style look into the life of celebrity hairdresser Jonathan Yeadon. This time we are starting in the early 90s when Jonathan opened not one, but two salons and finally hear the juicy details about his dramatic move to Marbella.

Never Let Your Standards Slip Right let’s take you back to 1990. Back in those days you could train at your own rate at City and Guild. The more competent you were at hairdressing, the faster you could get your qualification. I REALLY didn't want to be in college any longer than necessary, and this spurred me on. Along with my best friend, Lee we were one of the few who managed to get certified in under a year. I hit the salon floor running and started working like I do now. Yes ladies and gentleman I have been working twelve hour days, six days a week for nearly three decades. I feel tired just writing that. After only two and a half years, I thought I was ready to open my own salon. I partnered with a ‘friend’ who I didn’t realise at the time had serious mental health issues. The salon went from strength to strength till my partner’s psycho tendencies made an appearance and I got out of there like a shot. Not one to sit licking my wounds, I soon opened another salon, this time with a business partner. It is only now when I look back at that period of my life, that

I realise what an amazing team I had. I simply didn’t appreciate at the time just how lucky I was. Instead I spent years feeling as though I had been catapulted into someone else’s life. Eventually I decided to sell the salon. I had only ever worked for myself in the eleven years of being a hairstylist. I had
never actually been shown how to run a salon properly, I just got on with it. In order to grow in this profession, you need to be continuously learning, and that’s what I intended to do. I joined a well know salon in Manchester and simultaneously ran two of their salons learning every aspect of the business.

Trust Your Instincts In 1999, I lost my gorgeous friend Colleen. Before she died she made me promise that I would not die in Bradford and that I would, ‘Get the FxxK out of there.’ Ever since that day, any major life decision I have made, I have done so thinking of Colleen. I finally gathered enough courage to leave good old Blighty for good and secured a job in California. Then the Twin Towers blew up and I couldn’t get a working visa for love or money. As fate would have it, a friend of mine’s Mother had just bought a place on the Costa Del Sol. After hearing my tale of woe, my friend called me explaining that she had once lived in California and felt that Marbella had a very similar vibe. She promised I would love it there. On impulse, I arranged an inspection trip to the Coast, (having never been there,) and as soon as I stepped off the plane in Malaga the most powerful feeling came over me. I knew this was where I was going to live. Three days
later I had put down a non-refundable deposit on an apartment that hadn’t even been built. My Mum of course told anyone who would listen that I had finally lost the plot. Eight weeks later, I moved to Spain with my friend Sue. It was one of the most terrifying things I have ever done, but at the time I was more scared of staying in a rut. I started working at the old Colour and Cutting Cru, near Puerto Banus. It was there that I had the tragic misfortune of encountering my nemesis, Gerry, (well he would like to think he is,) and I haven’t been able to shake him off since. He will probably say that I followed him to Reflections. He wishes! Did I make the right decision moving to Spain? Without a doubt. I’ve been blessed to have met some incredible people from all walks of life, many whom I can now call my friends. Of course, I have had some ups and downs but everything just seems better in the sunshine.

rephrase that first. In my VERY limited free time, I love to read, especially autobiographies simply because I am nosey. My favourite pastime has to be sitting on the beach with a good book, my closest friends and a jug of white sangria. I don’t think you can top that. I also really love music, there is no life without music. I have Motown, Northern Soul and Rock ‘n’ Roll running through my veins. Shirley, Barbara, Whitney, I adore the original divas of music. Most of my clients will have witnessed the fights in the salon over the choice of music. I usually get my way, because I have the best taste obviously.
What I love most about living in Spain is… the way that the air smells,
the diversity of cultures all living in harmony and the Spanish language.
The hardest thing about living in Spain is… leaving your friends and
family behind. With the advances in technology such as WhatsApp and Facetime, it’s easier to keep these relationships alive than it used to be. You simply have to work harder at your friendships when you move away and I always try to make the effort to fly over for group gatherings. But it isn't easy, I miss them every day,
My advice for succeeding in Spain is...
don’t think you are better than you are. Learn the language. How can you expect to understand the people you are living alongside without it. I promise you, you will really miss out. Plus you won’t know what they are saying about you at the supermarket till you do, will you?

The standard Turbo width bodywork that gives the Coupe its visual muscle works just as well on the Cabriolet models. Here the big wheel arches filled with 20-inch wheels in front and 21inch wheels at the rear provide a visual platform for the sleek soft top whose profile is very close to the Coupe’s in silhouette. Its effectiveness in cutting through the air is borne out by its 0.3 drag coefficient, which is only marginally worse than the Coupe’s 0.29. All else being equal this slight degradation is the result of a floorpan reinforcement member compromising part of the flat underbody. The front of both models is identical as are the doors. The new exterior sheet metal begins aft of this where the wheel arches now blend upwards into a neatly styled rear deck profile that helps the Cabriolet look good whether its soft-top is up or down. At the extreme rear, the active spoiler is the same, but on the Cabriolet the control programming adopts the three-position algorithm normally reserved for cars with the Sport Chrono Package. In this case the third position is used when the roof is down since the airflow is then quite different. The industry norm for body-in-white torsional stiffness comparison has always been a static measure. This is gleaned by placing the bodyshell on a jig that applies twisting forces at defined points to elicit a defining figure in terms of Nm/degree. However, this static test does not realistically show how a bodyshell reacts to loads fed to the shell via the suspension hard-points when the car is cornering or negotiating bumps on real roads. So while the new MMB platform that both the 992 Coupe and Cabriolet are built on enjoys a 10% greater static torsional stiffness than its predecessor, Porsche proudly pointed out that its dynamic torsional stiffness also shows a 10% improvement. This was the first time dynamic torsional stiffness has ever been discussed at a press launch event, and the engineers also told

us that this stiffer shell allows them to offer the Sport suspension option on the Cabriolet for the very first time. This features a 10mm lower ride height with uprated springs and anti-roll bars. As on the Coupe, the ride and handling is aided by the latest PASM system, featuring Bilstein active damping whose valves react fast enough to alter their resistance in mid-stroke. Previously a damper had to wait for its piston to reach the top or bottom of its travel before altering its resistance, so the new system takes damper control technology to a whole new level, providing improved comfort at one end of the spectrum and improved handling at the other. The other thing that makes a difference to the driving dynamics of both Coupe and Cabriolet versions is the more forward location of the engine mounts that helps to reduce the polar moment of inertia at the rear both in cornering and over bumps.

With its frame made from steel, aluminium and magnesium components the new canvas folding top, its mechanism, and the structural reinforcement to the body-in-white extracts a 70kg weight penalty over the Coupe. It can cycle up or down in a swift 12 seconds, and be operated on the fly at up to 50km/h. The rear wind deflector is also a new design, and operates in about two seconds. With the side glass in place this deflector helps to provide a remarkably draft-free al fresco driving experience. When it is place the triple layer fabric roof insulates the cabin from the elements very effectively, and unless you glance over your shoulder you could just as well be in the Coupe. From the driving seat the view forward is identical to the Coupe apart from the switches that operate the roof and rear wind deflector. Thus the instrument pack with the big rev counter remains the analogue centrepiece, and is all that remains visible when you switch off the ignition and the electronically generated readouts on either side go dark.

The 10.9-inch widescreen display is intuitive to use, and the quality feel and precision of the five shortcut switches positioned under the screen is pleasing in use. The screen displays the image from the reversing camera that is standard on the Cabriolet. Another plus is the big, clear “M” for Manual button behind the small transmission lever that locks the transmission in the ratio you choose with the paddle shifter. This is important as the PDK gearbox software will otherwise automatically shift up or down even in Sport Plus mode. Another technical improvement in the cabin is an upgrade to the optional Burmester High-end audio system. Apart from revised DSP algorithms the system benefits from the dashtop centre channel speaker now being the same AMT (Air Motion Transformer) tweeter unit as used on each side. The advantages over the previous cone speaker are manifest in the improved imaging and transparency of instruments and vocals. The seats in our test car had fabric centre panels, which we prefer to leather because it is warmer in winter, cooler in summer, and holds you better in cornering. The 992 Carrera S Cabriolet and Coupe share the 9A2 Evo 2,981cc twin-turbo flatsix with its revised intercooler and intake arrangement. This develops 450hp at 6,500rpm and 530Nm of torque from 2,300 to 5,000rpm. With the rev limiter set at 7,500rpm there is plenty of rev headroom when you need it, and the strong low-end punch
coupled to a soaring, feral top end delivers the best of both worlds. The healthy torque spread delivers impressive flexibility and the aggressive full throttle soundtrack with the exhaust in Sport mode is emphasised with the roof down. The eight-speed PDK twin-clutch transmission is the perfect partner for this lusty turbocharged engine, delivering smooth and rapid ratio changes in both directions. Its closely stacked ratios provide a gear for every occasion, and where each ends the next instantly takes over to keep the snappy motor on the boil. With the tall eighth ratio making for relatively relaxed highway cruising - 120km/h corresponding to around 1,600rpm for instance - a tank of fuel goes even further than before. However, this depends on how you drive. We noticed that economy was good if we left the gearbox to its own devices, and that consumption rose steeply when we used the ‘M’ button and paddle shifts on entertaining stretches of twisty roads. As top speed is achieved in sixth gear, the tall seventh and eight gears effectively give you two over-drive ratios. A manual gearbox will be offered from September as the entry-level transmission. Despite being larger and around 50kg heavier than its predecessor the 992 Cabriolet is significantly more rapid. The Sport Chrono Package equipped Carrera S Cabriolet now takes just 3.9 sec to cover the 0-100km/h sprint, while 200km/h is reached in 12.8 sec. Top speed is marginally up at 306km/h.

The bi-turbo flat six is sonorous with the exhaust in Sport mode, and makes for an engaging drive with the roof tucked away under the smooth rear deck. Better still if you can find a tunnel. We had to make do with some rock faces in the hills but they provided enough amplified echo to put a big grin on our faces. The improved structural stiffness is apparent from the comparative lack of scuttle shake on bumpy roads, and the new 992 Cabriolet dives for apexes and jumps out of corners with even more confidence than before. Unlike some mid-engine rivals its limit handling is more linear and predictable and less upset by having the top down.

Because the suspension geometry now stays closer to optimum under load the gains in handling and ride are real, and the dreaded scuttle shake, the bane of all open cars, is also kept in check. If you really push the car hard through the bends as we did on the coastal test route in Greece it becomes obvious that the Cabriolet is not as rock solid and incisive as the Coupe, which is the better choice if you want to do track days. That said, as with all convertibles, you can still feel an increase in rigidity on a bumpy road with the roof up, and the handling does benefit from this when you are really pressing on.

BLOCKCHAIN: The Impact on Charities & Aid Organizations T
he Bitcoin bubble has died down, but what’s catching people’s attention now is the technology behind it – Blockchain… Blockchain is essentially just a highly secure digital platform (ledger) that records and stores all kinds of transactions and information. Anything entered onto a blockchain cannot be edited or deleted, and a blockchain can either be public (like Bitcoin & Ethereum), or private (like the blockchains used in medical organizations). The technology is now being used in a wide range of industries from finance, to real estate, and even food – all thanks to its’ secure and transparent nature. This is exactly why it would work extremely

well in the charity industry for all parties involved; the charity, the receiving party, and the donator. What’s beautiful about blockchain is, not only is it highly secure, it’s also peer-topeer, so there is no middle-man required to make transactions. For charities and aid organizations especially, this would be incredibly useful since they often have no choice but to pay various 3rd parties in order to receive donations securely and store data securely. With blockchain it would go directly from the donator to the charity, or to the people in need - no 3rd parties. Couldn’t this eliminate charities altogether if people can donate directly to those in need? No. Charities will
always have an important value in the world, blockchain will simply help with their fundraising, donations, workflow and reputation. Let’s look at how…
GAINING BACK PUBLIC TRUST
Media reported scandals have lowered public trust in charities, but blockchain is here to provide a transparent path from donation to assisting those who need it, providing a ‘trust’ like never before. We all like to do our bit for charity, but let’s be honest, we also want to know that our donations actually reach the intended party! Unfortunately, this doesn’t always happen. Whether it’s due to overhead costs, 3rd party costs, errors, miscalculated expenses, or indeed
CRYPTO DONATIONS
Crypto-philanthropy is one of the more obvious ways blockchain could help charities, allowing them to receive donations in Bitcoin or other altcoins. Before being able to accept cryptocurrency donations, the charity would need a good understanding of cryptocurrency and blockchain, as well as how to convert crypto back to fiat currency effectively. This is just one reason charities may be slower to adopt than other industries, but I remain optimistic and this is why I continue to spread the word; to help people, businesses and charities understand how blockchain can benefit them.
OTHER TYPES OF DONATIONS
Blockchain is here to provide a transparent path from donation to assisting those who need it, providing a ‘trust’ like never before.
Since blockchain can record pretty much any type of asset, it would mean that a huge range of non-monetary donations could also be made. Things like property, vehicles, artwork, jewels, digital works, and many other valuables could be donated to a charity. The blockchain would then provide a secure, transparent record of the donations and what happened to them next. This would open up a whole new avenue for fundraising and charities would be able to receive a much bigger variety of donations (in an open and trustworthy manner), enabling them to help more people.
OVERSEAS AID
When charities are raising funds for international campaigns there are currently numerous problems that blockchain could significantly improve: The transaction fees – charities could use blockchain to cut the transaction fees associated with accepting payments and then transferring the money internationally to those in need. The time it takes to reach the intended party – Donors could donate directly to organizations on the ground (instead
of via various banks and overhead/ expenses along the way), so they could use it to get the supplies and hire local staff for clean-ups or rebuilds. The entire process could be transparent with things like photographic evidence of the supplies and materials being delivered, builds completed etc, all added to the blockchain. Security – blockchain minimizes the risk of funds becoming lost or stolen, plus it gives charities a secure way to store data and make transactions without 3rd parties.
OTHER WAYS BLOCKCHAIN COULD HELP CHARITIES
The technology has even been used to help the homeless in London, by tracking how rough sleepers are progressing with help from the charity, which is then independently verified by a local authority. Other smaller charities could use blockchain to gain more traction and visibility as they are able to show up, prove the results they provide, and get the funding they need easier than it ever has been. There are even talks and developments towards a secure ‘coin’ or token which would be for charitable purposes to eliminate the volatile problems of donations abroad.
BE PREPARED FOR CHANGE
All this is just a small overview about how blockchain can impact charities and aid organizations, but I’m sure there are many more unthought of use cases that will be revealed over the next few years. Every computer on that blockchain holds the same copy of information updated in real-time, so if anyone did try to make a malicious action, it would stand out like a sore thumb because all the other computers (nodes) would be alerted of the unauthorized transaction and everything would be trackable.

he other day a call came in from an unrecognised number. As a freelancer, any time that happens, I hope it's an enquiry which will lead to some money. And as a freelancer with a normal work ethic, I expect to have to first do something to earn that money. By earn I mean apply my expertise, time, energy and the expensive tools of my trade to satisfying the sometimes rigorous demands of a client's brief.... It never occurred to me I could pay my mortgage by simply being a clumsy tit who gouges their eye on a hanger in Urban Outfitters or scolds their mouth on a McNugget. Nevertheless, since the mid 90's, at least if the papers are to be believed, the UK has been cultivating a rampant “compensation culture”, following the lead of our high-calibre, semi automatic cousin, that beacon of hope, America. Yes, the land of opportunity... or opportunism in the case of Paul Shimkonis, a physical therapist from Florida who attempted to sue his local strip club for physical harm and mental anguish, claiming whiplash from a lap dancer's large breasts. Or Richard Harris (not that one), who tried to shake down Anheuser-Busch, again for classic emotional distress, since he couldn't drunkenly strike it lucky with the ladies as the brewery's ads promised he would. No doubt Unilever, purveyors of “The Lynx effect” were following the case with bated breath, terrified a precedent would see a million teenage boys litigating the fact they weren't chased down the street by models, having just choked their parents out of the bathroom with whatever vaporized badger-piss the company were calling

Voodoo or Java or Tempest.... in fairness, Africa is a barnstormingly timeless classic but I still never get... err... got chased down the street by models whilst wearing it. Digressions aside, the perception that we're in the grip of a spiralling blame culture where the easiest way to get rich is pointing fingers has not only lead to insurance companies hiking premiums, but the circling of vultures looking to pick the bones of your workplace injury or vehicular incident. The first time somebody with a clipboard stopped me in the street and asked (quote) “Have you ever had an accident?”, I was about 18 and genuinely confused. “An accident? Ever?! Like, tripping over? Or crashing my bike??... or, or weeing myself??!” On every count I thought, “Of course, hasn't everyone? But why are you asking and why the fuck have you got a clipboard?”

The intervening 20 odd years of spam emails, personal accident pop ups, cold calls, newspaper ads, junk mail, radio jingles, billboards and tabloid stories have convinced me otherwise. Having not owned a TV in a decade, no doubt I've dodged a few thousand TV ads implying you should sue Heinz for the hot bean juice you just spilled on your balls during The Jeremy
Kyle Show, but the ambulance-chasers are out there, counting on our calamity and moral malleability to claim their 25 percent. I suppose everyone's entitled to a voice when they're injured or financially wronged but the peddled rhetoric of culpability and justice is frequently a thin veil for brazen profiteering. The clipboard twonker randomly asking strangers “Have you ever had an accident....?” was not looking to offer free medical advice or a shoulder to cry on. He was the same kid stirring shit in the playground to see if any coins fell out of pockets when the fights started. It seems this media-branded “compensation culture” is dragging us all down into the gutter to look for loose change. Perhaps that's why I took such a cynical view when I received that call the other day. In place of a longed-for new client was someone who, with no formal introduction or identification of her employer, said she was calling to discuss my “...recent traffic accident”. When I responded I hadn't had one, without missing a beat or even reacting to the contradiction, she shot back, “have you ever been injured at work?” Incredulous at the transparent opportunism of the initial pitch and lightning pivot, I took a breath and stoically replied “PLEASE (Go...) DON'T (...fuck...) CALL (...yourself...) AGAIN (... bottom-feeder!)” and hung up. I instantly regretted not waiting to see if next she asked about PPI, timeshare or double glazing. Joking aside, with the Financial Conduct Authority (FCA) making August 29 the
deadline for PPI claims, the sky must be falling for many thousands of “legal remuneration specialists” (form fillerouters) who sprouted like weeds through the many cracks in the ethics of the banking world. Perhaps they'll use their last few hundred cold calls to develop a really bad case of RSI, then sue the hell out of their former employers when they pivot themselves into personal accident law. Or perhaps they're all looking forward to the opportunity to eat beans and watch more Jeremy Kyle. After all, he's the king of getting rich from stirring shit. The upshot of that call was it made me a little money in a roundabout way, although I did have to work for it. And whilst researching the idea it gave me for this piece, I discovered it's all bollocks anyway. Far from suggesting an epidemic of blame, claims are at their lowest in years. A recent report shows that of approx 600,000 people who get ill or injured at work annually, some 85% receive no compensation whatsoever. Work-based claims have in fact halved since 2002/2003 whilst last year's motor claims figures are the lowest in nearly a decade. So, if the headlines in the papers are propagating a myth and we're not all abusing the system, it makes you wonder what's really driving insurance premiums up??... Myanmar Last year was a huge year for my family and I; we moved house, and embarked on an adventure of a lifetime; a year travelling the world with our three children. Nothing was booked except the first flight out of Spain. This is where I will be sharing some of the highlights with you and bringing new and interesting places in the world to your attention from a different perspective to that of your regular travel guide.

his was a surprise stop on our trip, which I am so grateful we included as it has been one of the highlights. The tourism gates of Myanmar having only recently opened meaning that we were the only family of western origin with kids in sight. We arrived in Yangon and thankfully were staying with a friend as I wouldn’t have known where to begin having done no research on the place whatsoever!

The history here is steep and since becoming independent in 1948, Myanmar was in one of the longest running civil wars and then under military rule from 1962 to 2010, both giving rise to it being one of the least developed countries in the world. Yangon nevertheless is a sprawling city with huge diversity, plenty of culture and an abundance of religious
spires; they really celebrate their religion here; everywhere you look there is a Buddhist temple or pagoda. We visited the famous Shwedagon Pagoda which sits on extensive square footage and boasts hundreds of different shrines to the buddhist deities, uncountable stupas and statues; the devotion is relentless. It is a humbling environment to experience, we did feel a little out of place but no-one was impressing
that upon us, it’s just a strange thing to be; an obvious tourist in an active place of worship. The streets of Yangon are fairly crowded and dirty, you really have to be careful what you eat as food poisoning is a common occurrence for non-locals. Even after a few years of living there our friends still get the occasional upset. Having said that Yangon has every level of food available from a range of origins. From street food to overpriced gourmet and everything in between. One surprise to us was the sizeable ex-pat community there, we met with eccentricity from all over the west; predominantly Europe and Australia, and a few Americans. We dined with some of them in high-class restaurants fusing Myanmar cuisine with other Asian delights; there were foods from all over - Japanese, Chinese, Korean, Western, Thai, Vietnamese, and more. Our favourite place was a tiny side street place with traditional Myanmar food called Phar Khant; the tea leaf salad and the Kachin chicken were incredible. Others which were more on the expensive side (but still cheap in western terms) were Gekko, Rangoon Tea House, Shan Yoe Yar, and Shwe Li BBQ, all highly recommended. Yangon was surprising in its diversity; from fancy hotels and restaurants, to serious poverty dotted within the city. Not that this is a shocking concept to see such poles juxtaposed, but we hadn't thought it would be as extreme (at either end) as it was. You can go from valet parking and being waited on like a king to wandering through the sewage ridden streets, stepping over sleeping mangy dogs and smiling at dusty kids
playing underneath their family’s street food carts. Myanmar people are gentle, quiet and peaceful folk who smile when greeted and always offer a helping hand. Playing the ‘white card’ here goes a long way to getting superior treatment which is quite an embarrassment but a reality. Good things to know about arriving in Yangon is that you need to get a local SIM card at the airport and immediately download the ‘Grab’ app; this is the Uber of Asia which works really well. Using this saves you A LOT of money compared to regular taxis and is a reliable way to get around. Also US Dollars are useful here but only crisp
clean ones that have absolutely no creases, like they just popped out the ATM, if not - they won’t accept them! We left Yangon by train - it is a slow and bumpy ride but the best way to see the countryside and domestic flights are really expensive here. We had a private cabin with a toilet which had four double seats facing each other which slide down into two double beds. Above these were two more bunk beds all of which had sheets and pillows provided. We had all the windows wide open

There was an evening meal available on board which we accepted but I for one wish I hadn’t as for the following twelve hours it left me from the wrong direction and I haven’t suffered a bout of poisoning that severe in my life. This isn't intended to put you off travelling there

WE LEFT YANGON BY TRAIN - IT IS A SLOW AND BUMPY RIDE BUT THE BEST WAY TO SEE THE COUNTRYSIDE AND DOMESTIC FLIGHTS ARE REALLY EXPENSIVE HERE. or by train for that matter, just don't eat the food; bring your own when travelling. Seventeen hours later we arrived in Bagan, when you arrive here you have to pay a tourist entrance which provides you with a ticket they say you need to present on entry for all the attractions; we didn't need it once but came to understand why they need such donations in order to maintain such a vast expanse of incredible temples and land.
During its hey-day between the 11th-13th century over 10,000 Buddhist temples, pagodas, stupas and monasteries were built across the Bagan plains approx.104 square kilometers, now there are approximately 2,200 remaining. Some you can climb and watch the most incredible sunrise or sunsets, so long as there are only a few people. The upper floors are often closed due to their instability, wear and tear or earthquake damage, some are under restoration. I would recommend hiring scooters or electric mopeds which permit you to veer off the roads and explore at your own pace. You’ll probably never visit them all so it’s good to make a semi-plan of the areas you wish to see most, or just go for it and get lost off the beaten track (much more fun). We really enjoyed Bagan; three or four days was plenty to absorb all the culture and try out some of the restaurants. From here we had hoped to visit Inle Lake which is supposedly extremely beautiful and offers hot air balloon rides above the lake. However we were getting short on time; and with travel being something which does not happen quickly if you’re not flying, we opted to take a boat north to visit Mandalay and then a night bus back to Yangon a few days later.

ALL IN ALL MYANMAR LEFT US FEELING LIKE WE HAD JUST EXPERIENCED SOMETHING AMAZING. relaxed but fun atmosphere. Ned Kelly is also a really cool rooftop bar. And for a Mandalay breakfast head to Shwe Pyi Moe Cafe, ask for the Nan Gyi Tot. The boat ride was a 12 hour stint on a funny kind of small ferry; there were only around fifteen passengers on board and none of us even spoke to each other! We were served ‘breakfast’; a hard-boiled egg and a banana, some toast and jam. It was safe food! We basically just relaxed and took in the sights up the river, arriving to a beautiful sunset over the river-side temples of Mandalay. Here, we found ourselves in another steaming, sprawling, smoggy city. Slightly cleaner and more streamline than Yangon but the added energy of motorbikes (Yangon has none) assists in the noise and chaos levels rising somewhat. We had some crazy food here; one traditional Myanmar restaurant which was amazing and delicious called Mingalarbar. Each meal came with more inclusive side dishes than anyone could eat alone; they were a meal in themselves. The other was a huge outdoor place called Dad’s BBQ where they’d pretty much never had to serve anyone red wine before and few waiters spoke English; most of them ran away giggling in embarrassment when we asked them for something! We weren't sure what we had ordered but a soup/stew thing came along containing an entire chicken, including head, amongst some other strange and curious delicacies all served amidst a

It was a shame not really having had sufficient time to explore the city, but we got a taster. We didn't even make it to the palace nor the Shwenandaw Monastery, sadly only seeing them from our hotel balcony so I would suggest at least three or four days here. From Mandalay we headed back to Yangon on an overnight bus. This really is a great way to travel, really comfortable luxury coaches, inexpensive and fast. We had two more nights in Yangon before flying out to Vietnam, so we treated ourselves to a little luxury and booked into the Novotel which has a great rooftop pool and bar and incredible service which makes you feel on top of the world. In Yangon we also visited a few sky-bars or rooftop restaurants which helped to see the extent of the city. There are plenty of parks with things to do for kids and a zoo, which we were advised to steer clear of as it was just a bit sad. All in all Myanmar left us feeling like we had just experienced something amazing. We loved the people, the food, and the culture and would recommend anyone with a strong stomach for travel to go. The beaches in the south are also supposed to be beautiful so there really is something for everyone. I’d say

DO WINE MEDALS REALLY MEAN ANYTHING? I just spent three intense days at one of the world’s largest wine competitions, the itinerant Concours Mondial de Bruxelles (CMB), as one of 350 judges. We worked our way through 9,200 wines from around the world and a week later we learned the results.

Questions wine judges are asked THE RESULTS ARE FAIR BECAUSE THE JUDGES TASTE BLIND, WE HEAR. DOES THIS MEAN YOU’RE TOLD NOTHING? For the CMB we knew the colour and type of each wine (still white vs. sparkling rosé) as well as the vintage. We didn’t know what part of the world the wine was from or the grape variety, or if it was a blend or varietal (single grape) wine. We didn’t know how it was made, whether it was fermented in stainless steel tanks or large oak vats, for example.
HOW MANY WINES CAN YOU TASTE IN A DAY? WE KNOW YOU SPIT OUT THE WINE, BUT DON’T YOU GET A LITTLE DRUNK?
Spanish wines won more than those from any other country, 273 medals (Andalusia had a total of 7 wines with medals). Spain is also the world’s largest wine-producing nation, but you don’t win medals here for poor quality. Wine competitions vary hugely. Some are dubious local wine contests while others, such as this one, are events made to create international ratings, especially important to importers and exporters. The standards are high. Good competitions are one of the few ways for wineries to fight the noisy world of online influencers, where the desire for fame can outstrip honesty and reliability. I began judging wines in 2008 because I wanted to know whether I could rely on silver and gold medals to tell me something useful about their wines. At the top end, I think competitions’ medals are handed out fairly. Tough rules force us to work systematically. Judges at the CMB are held accountable and measured; the details of our scores are entered in a database and analysed.
People find it hard to believe that a) you would want to spit out wine! and b) that even if you do, surely you are swallowing some of it and you must eventually get a bit drunk. We started tasting at 9:00 and finished at 13:00 every day. Each table had about 15 wines in a flight, with 3 flights, so we had up to 50 wines in a morning. We can’t give a wine more than 5 minutes or we’re off schedule, so we have to stay focused – no jolly wine haze allowed. So yes, we’re good at spitting out the wines to be sure we can analyse all of them. But concentrating hard to use your senses of sight, smell and taste for four hours is mentally and physically wearing. Breathing alcohol does eventually bring on a measurable high: a few years ago I tested myself with a breathalyser after a morning-long competition and found I was right at the drink-drive limit.
compare the local wines. Restaurant staff must love us, because most judges aren’t keen to consume a lot, since we have to work the next morning. So a large group of us might leave several half-finished bottles on restaurant tables!
DO YOU DECIDE ON A MEDAL BY MAJORITY VOTE? No, we grade or mark every wine on a points basis with categories for sight, smell, taste. We do this individually. Today the big competitions are automated so we mark our scores on small electronic tablets.
IF YOU DON’T KNOW WHAT THE WINE IS, HOW DO YOU KNOW WHAT TO LOOK FOR? We look for wine faults, to start. No talk about aromas of cherries or lemons. When we drink wine with friends we look for what’s good, so it seems a bit perverse that judges are checking for what might be bad. Maybe the grapes were under-ripe or it smelled of horses or cabbage or celery or any one of many common faults that come from poor decisions in the vineyard to less than perfect hygiene in the cellar.
NO-FAULT WINES, OK, BUT WHAT MAKES A GOOD WINE? A silver medal is given to any wine that has no faults: clean, no flaws, and balanced in every way. A gold medal winner has no flaws, and it will have a wow factor. And then there is the rare “grand gold” winner. A bit of electricity whips around the table before anyone speaks – we all know right away this is a true winner.
CAN YOU REALLY JUDGE HOW ORDINARY WINE DRINKERS WILL REACT TO THEM? Happily, most of us also like to drink wine and one of the perks of being a judge is that we end the tasting sessions with an aperitif glass and lunch somewhere. Evenings, we go out and order a crazy number of wines because everyone wants to taste and

I was quick to notice the clever influence of flavours from the other Sala Group venues, in particular the Sala by the Sea pizza boasting fragrant chicken satay and creamy peanut sauce and The Oak pizza topped with decedent Galician beef carpaccio, buffalo mozzarella and a healthy helping of fresh rocket. If you simply can’t wait to get stuck in, the light bites are a good way to get started. Choose from Oven Baked Garlic Bread, Mini Dough Balls with a garlic butter dipping sauce or my personal favourite, the Buffalo Chicken Wings with a Shwings twist and served with a to-diefor Blue Cheese dip. If for some reason you are not a pizza fan, firstly, you’re really missing out and secondly, it’s worth going just for the Shwings wings alone! The charming setting of Villa Toscana, complete with its enviable location makes it an excellent spot for pre or post dinner drinks, whether you are spending the evening at Oak or La Sala or even before heading into Puerto Banus. Alternatively, if you’re enjoying an evening of live music and drinks in La Sala and after a bite on your way home, Villa Toscana offer pizzas until 4am! Yes, your summer did just get a little bit better!

The latter arrived topped with succulent prawns, fresh garlic, tomato, mozzarella, smoked paprika, fresh chilli, cherry tomatoes and parsley. I can see why it is a recommendation, if you love a classic Pil Pil, this contemporary pizza twist will take you to gastronomic heaven!
