We asked her advice on food and she related two of her favorites—the traditional French onion soup and the sesame-encrusted tuna. We had them both and she was absolutely correct in her cuisine counseling. Since the review was arranged through casino management, the staff knew that we were coming to do a restaurant review. Greeting us at our table was Brian Grzyb, casino food and beverage director, who wanted us to sample some of the menu specialties prepared by sous chef Matt VanHorn, including the seared tuna and braised pork belly. The pork belly appetizer takes considerable tender care to prepare and is a great delicacy with pepper maple medley on grilled bread. The food presentations were expertly prepared and would make Johnson and Wales culinary experts smile at chefs Genaro Garcia and Matt VanHorn. A plate of fresh scallops was served in a rich cream sauce—forget the calories and enjoy the food. Another side dish of icy cold shrimp was followed by a pasta bowl of spicy shrimp and scallops in a spicy garlic cream sauce over linguini. The perfectly grilled steaks arrived. Gerri a filet and myself a 16 oz. ribeye grilled to perfection, accompanied with a side of loaded mashed potatoes. Saratoga staff and hosts stopped by our table to meet and greet us. We felt like royalty being treated so kindly. We met Rashad Wilson, director of marketing, and casino hosts Joanie Chavez, and Noy Sayasane. We were engulfed in wonderful food and hospitality and we loved every moment. Our intent is to visit many casinos and promote the great culinary menus being offered in our casino communities. For dessert, we chose a double chocolate fudge cake and a lime cheesecake. After a few bites, these delicious desserts went home in a box for a midnight snack. Another couple was seated nearby and I chose to introduce myself and explain that Gerri and I were doing a restaurant review for The Colorado Gambler. Bill and Rosalie Lund of Highlands Ranch were also enjoying the fine dining experience. They related to me how they love the Mill City Chophouse and I asked Rosalie for a few comments about the food. She said, “The food is always delicious and presented well. The staff is incredibly friendly and welcoming and we enjoy the whole atmosphere. The menu is complete and easy to read with ample selections, such as the aged rib eye, Colorado lamb chops, filet mignon, prime rib and freshcut chicken breast with Italian seasoned beurre blanc sauce. Chophouse specialties were selections of bourbon grilled salmon, St. Louis barbecue ribs and steak and shaved prime-rib sandwiches. Pasta dishes include garlic chicken linguini, spicy shrimp and scallops and shrimp scampi pasta. There is a full menu of side dishes and the highly regarded onion soup and salad that can come with some meals. The wine list is complete with reasonable priced choices of many well-known selections, such as Ravenswood and Red Rock Malbec, both $30. Meal selections range from $16 up to $38 for the filet mignon. The two-hour dinner was enjoyable and delicious. We headed downstairs to the sound of the casino music and slot machines. We had a very pleasant time and we thank the Saratoga management and staff for this wonderful experience. You are next.

along in battle to ensure that they were well fed and groomed. The horses sometimes wore masks, often as fierce as those worn by warriors, that protected the face while allowing the animal to see. The word “samuri” is derived from the word “saburau,” (which means to serve the nobility) Their heyday began in 1185, when the warrior class led by the shogun arose to protect private estates from indigenous marauding tribes and other clans. In 1192, Monamoro no Yoritomo established a separate administration at Kamakura, shifting power from the emperor’s court to Japan’s first warrior government, the bakfu or “tent government.” The samuri class remained powerful for the next 650 years. Samuri followed the concept of bushido or “the way of the warrior,” whose tenants included courage, sincerity, loyalty and self-control. The honor was passed down through families. A boy in a samuri family received his first sword (not a real one) when he was born. His training began when he was just six years old, combining bu (arms and the arts of war) and bun (literacy and culture). At 13, he received a real sword, armor and a warrior name, half his father’s and half his own, similar to our first and last names. Boys remained in training until they were about 20. Samuri girls were educated in a similar manner, and prepared to defend hearth and home when the men were at war. Although there were a few warrior women, girls were expected to look after the home, handle money and run a household. Since the Bushido forbade stealth and undercover work, a separate class of warriors arose. Their art, called Ninjutsu, may have originated in China. Ninjas were expert at subterfuge and stealth attacks, to the extent that people ascribed super natural powers to them, like the ability to become invisible. The exhibition allows a close looker at the skilled craftsmanship and techniques which combined many artistic techniques and created equipment that was both beautiful and deadly. For example, a saddle-maker would bend a sapling so that his grandson could easily carve the wood from the tree into the shape of a saddle. Armor, was

The samuri controlled the lives of the lower classes, to the extent that after the 16th Century only samuri were allowed to carry weapons. They prospered from the 12th to the mid-19th Century, with periods of unrest were interspersed with peaceful decades. In 1600 a 250-year era of unification began. The downfall of the samuri accelerated with the introduction of gunpowder. In 1868, under the Meiji restoration, a centralized government formed and dissolved feudalism. The samuri ceased to exist as an elite class. Since Samurai were the best educated and wealthiest men in the country, they subsequently assumed powerful positions in the government and military. Interestingly, the Japanese military during World War II functioned along the same lines as the Bushido, with strong allegiance to the emperor,

a strict code of honor and suicidal warfare, a.k.a. the Kamikazi pilots. Although these families are no longer all-powerful, a recent study at the University of California discovered that people with surnames associated with Japanese feudal class are still “overrepresented” in the upper strata of society. Many key Japanese officials trace their lineage back to the ancient Samurai families.
