Go green with Colorado’s organic, naturally grown fruits certified “USDA Organic” or “Naturally Grown,” there is a good chance that it has undergone processes that leave much to be desired. Recently the new label, “Certified Naturally Grown”, was developed for direct-market farmers producing food without synthetic chemicals for their local communities, “explains Alice Varon, executive director of this program. Some small farmers who were previously in certified USDA organic programs are continuing to grow foods naturally but to not seek this certification because of the stiff record-keeping requirements and fees. This new label should result in lowering prices of naturally-grown foods. Eating naturally grown food is definitely the best way to go for our bodies and the planet. It may be somewhat more expensive because raising food this way is more costly and difficult for the growers. I never realized how complicated it is for fruit growers to raise USDA certified organic
crops until my husband and I toured Aloha Organic Fruit Company in Palisade during the city’s annual Peach Festival. Palisade, with its favorable 182-day growing season, is known as “The Peach Capital” of Colorado. This year due to a late frost, the peach crop has been reduced by about 15- 20 percent. Aloha’s owner Steven Sherer explained the many sequential steps of managing the trees and the soil year round to produce organic peaches. For example, instead of killing insects with pesticides, the orchard fights insects with organic oils and mating-disruption sex hormones. As we walked through the orchard, we were startled at first to hear a loud “pop” that resembled a firecracker. We soon found out that these pops are scientifically engineered to scare away the birds from pecking at the peaches when they get near a tree. Before we left, we were surprised by many more pops.

The tour really made me appreciate and value healthy, organic fruit. This Colorado orchard produces 11 varieties of peaches that mature at different times to allow harvesting and shipping of tree-ripened organic peaches from July to October. I learned that conventionally grown produce, like peaches, apples, and pears, can contain high levels of pesticide residue, due to absorption of these chemicals through their thin, delicate skins. In contrast, conventionally grown bananas, pineapples, and mangoes with thick skins pose little health risks. To be safe, it’s better to buy thin-skinned produce that is organic or naturally grown. That’s because my new phone can do everything except the laundry—and I might find out she does that too once I get to know her better. You’re probably asking, how I know my new phone is a she. I’ll tell you how: Because she talks. And I don’t just mean, “Please hang up and dial again.”

I mean, “Here’s the weather,” and “Should I look that up for you?” The other day she said, “I think therefore I am, but let’s not put Descartes before the horse.” I’m not making that up. She’s a show off. Maybe it’s time to do away with the word “telephone” altogether and call our phones, “Smart Personal Assistants Who, Among Their Many Talents, Can Also Make and Receive Phone Calls,” except that’s not very catchy and it takes up a lot of space in an advertisement. It’s not even 6 a.m. as I write this, and I’ve al-
ready used my Smart Personal Assistant six times, and not once to make a call—lucky for you, if you’re on my contact list. I checked the time, sent a tweet, read my email, and asked her to check the weather for me. When I thanked her, she said, “You’re satisfaction is all the thanks I need.” I think she’s still trying to impress me. She reminded me about a relative’s birthday, so I asked her for the address so I could send a card. I’m still waiting for her to fill it out and mail it for me. If I wanted, I could spend the day with my Smart Personal Assistant, listening to music, hanging out on Facebook, or even watching movies on her, though I’m not sure why I would do that, since I have a television screen the size of Seattle in my basement. Nor do I necessarily I want to read an entire novel on a device no bigger than a deck of cards, but I could. Or maybe she’d read to me. She does math problems if I ask her to. I wish I’d had her when I was in school. If I get lost, which I often do, I can ask my Smart Personal Assistant for directions. And if the electricity goes out, I can use her

as a flashlight. She’s easier to keep track of than my other flashlights because she rings sometimes. She’s not perfect though. She tries to correct my spelling, and she’s not as smart as she thinks she is. When I texted my son that we were going “canoeing,” she guessed I meant “canning.” Clearly she doesn’t know me very well. And she occasionally gets her directions wrong, which is the only thing we have in common. Plus there are a lot of things she can’t do. She can’t balance my checkbook. She can’t warn me not to back out of the garage while I’m texting. She can’t paint my house. But, she does a lot. And all she asks of me is that I keep her battery charged. That and pay our cell phone bill on time. One wonders what will become of the manufacturers of cameras, alarm clocks, calculators, and all sorts of other devices as more and more people get Smart Personal Assistants Who, Among Their Many Talents, Can Also Make and Receive Phone Calls. The Poker Book / Tracking Results We are eight months into 2013 and the question is: How are you doing with your poker results? Are you winning? Are you losing? BY Are you becoming a LARRY better player? And JOHNSON why are you winning or losing? If you have a poker book or some sort of system to track your session-by-session results you know the answer to the above questions and are prepared to react with some strong play in the final four months of the year. Players track different items in their books, but most document the following: • Winnings or losses. • Hours played. • An hourly wage (total amount won / lost divided by hours played.) • Some key takeaways from the session. In my case I keep a session-by-session and overall result log so I can track trends in my game. Sadly, at times an hourly rate is negative but the key is to have it positive

in the long run. Obviously, it’s easy and actually fun to record winning sessions. Those little plus signs are a blast to put in the book. The key here is to remember to record the tough sessions every time. This is where players fail to update their books, when they are losing. When documenting a losing session, it’s like experiencing the loss a second time. And yep, while it hurts, that’s what makes it effective - bringing the pain home. It’s tough to keep the book up sometimes, especially through losing streaks when nothing is going right - but in the long run, the documentation makes it real. Writing it down and being able to review the session allows a player to remember what went wrong and what needs to be corrected. Thus, documenting sessions allows a player to replay it a bit, learning, and becoming a better player in the long run –
hopefully. I am proud to say that I have not missed documenting a session this year (although I have had some tough sessions) and my book is up to date. I keep my book very simple for two reasons - first, I avoid messing it up (the math), and second, I find that if simple and easy I’ll document the losses more easily. Some interesting items from tracking my 2013 poker play: • I have played a total of 247 hours of poker this year (just under eight hours a week) with a one month sabbatical. Without that time off, the average is just over 12 hours a week. I will be playing more over the next few months, as this is poker season for me. • These hours includes three tournaments and 65 live sessions. The tournaments only took eight hours, thus there has been 239 hours of live play, with my average session length was just over 3½ hours long. Breaking the live action down: 15 hours of $2 - $5 / $100 Hold’em; 11 hours of $1 - $2 / $100 Hold’em; 8 hours of $20 - $40 / limit Hold’em (Commerce Casino); 4 hours of $40 - $80 Limit
Hold’em (Bellagio Casino); and 201 hours of $30 - $60 ½ kill Limit Hold’em. • 44 of those sessions were winners and only 21 were losers. My largest win has been $2,832 and the largest loss has been $2,000. • Of those 44 winning sessions 20 were under $200 (amazing in a large $30 - $60 ½ kill game), and, of the 21 losses, 10 were over $500. • Overall I am $1,318 ahead / or a $5.34 an hour average for playing poker in 2013. Are these results good? On one hand they are positive and show a consistency of winning, but on the other hand, they demonstrate that I am playing to break even at times and possibly not maximizing the opportunities. Thinking back over the actual sessions, that is the case. While I am happy to be on the winning side so far this year, I need to play to win all the time. I may not be playing aggressively enough when close to that “getting even” line and that must stop. The only way to allow the odds to help you is to play the odds - all the time. It’s only through the tracking of my own play that I am able to go back and take a look, making the necessary adjustments. Now, it’s time to make that information pay off and win. Remember, play your game!

Isle Casino Hotel Black Hawk provides incomparable experience By Tom Barry The drive to Black Hawk and Central City from Denver made me recall the splendor of previous trips to the area. Recent rains had greened up the foliage, as fall colors are right around the corner. Some of the tall aspen trees are already showing early signs of changing to the brilliant fall colors. My friend suggested we take the Central City Parkway into the gaming district. The well maintained wide road and ample-sized lanes made it easy to traverse the drive into the historical districts. We later took the colorful canyon road back to the city. We headed directly to the Isle Casino Hotel Black Hawk and drove into their expansive parking lot and quickly found an open space in just minutes. With some luck, we actually found a spot right adjacent to the entrance to the elevators.

Once inside The Isle, we went to Calypso’s Buffet to view the offerings. There was a sign noting the “Made-to-order Pasta and Omelets,” which made our decision an easy one to each go for the superb all-you-can-eat lunch buffet. I found numerous selections that were posted, including barbecue peach pangasius and chicken ala king. The buffet also offers freshly sliced smoked brisket and a roasted turkey breast.

D’Cuisine at The Isle. “We even make our pizza dough from scratch.” The tempting selections were freshly made and continually replenished, as many of the offerings were creatively presented in their respective dishes. I quickly noticed the perfectly prepared mini turkey club sandwiches grilled golden brown to perfection that included fresh lettuce and tomato. The biggest challenge was selecting from the extensive array of entrees and specialty items that were freshly prepared. I then took a second large white plate and headed to choose some fruit and vegetables and some side dishes. The staff assistant had just filled up the fruit bowl with a colorful assortment of fresh berries. Behind the berries was a selection of freshly cut melon pieces that were delectably juicy. There was also a full salad bar featuring a complete line of nutritious fresh items. After seeing my friend’s madeto-order pasta dish, I could not resist. I decided to have a healthy dish with an assortment of fresh
vegetables, cheeses, some mushrooms and a bountiful helping of sizable shrimp that I conveyed to Amanda O’Rorke, the patient and pleasant cook tending to the pasta and omelet bar. Minutes later the dish was grilled to perfection and ready for me to savor the hot and appetizing ingredients on a separate plate. We then enjoyed our lunch in a comfortable and spacious setting. Calypso’s Buffet is definitely worth the drive from the metro area for the bountiful selection of wholesome and appetizing selections of hot entrees, fresh fruits and vegetables and delectable desserts at a very reasonable price. “I judge a buffet by the potatoes and they were great,” said Evelyn Ford. “This buffet has freshly prepared potatoes, not a mix like some other places.” Evelyn and her husband Terry drove from Colorado Springs to entertain their friends Ronnie and Ann, who were visiting from Dallas, Texas.

I then ventured into Farraddays’ Steakhouse to check out the ambiance of one of the state’s top restaurants. The formal dining room, named after a worldly adventurer, is quiet and subdued and can accommodate a special romantic date for two, a group of friends or larger groups in the private and secluded room. “We are far enough to be a getaway but still close enough to drive back home or spend the night in our hotel,” said Johnny Graziano, the food and beverage manager of the Isle Casino Hotel Black Hawk. “We pride ourselves on the quality of our extensive food offerings that are prepared by our expert chef and his staff.” Brian Watts, vice president and
general manager of The Isle, said, “Farraddays’ has the best lobster bisque in the Denver area. “Farraddays’ is competitively priced and its food quality is comparable with the other well known restaurants in Denver, rivaling the top competitors.” He shared that this respected and top-notch restaurant features locally sourced buffalo, certified Angus beef, along with fresh fish. Farraddays’ also offers guests nightly specials, which recently included sea bass and barracuda.
Poker players can enjoy the gaming atmosphere while having sports programs shown on numerous big screens at The Isle.

In addition, the Isle also provides guests a new menu at the adjacent Tradewinds Restaurant that features what the staff claims is the “best burger in Black Hawk.” The appetizing offerings range from the classics to a green chili and chipotle to the black and blue or mushroom and Swiss burger. Tradewinds also offers a mouthwatering cheeseburger burrito in a bright and colorful setting.
The Hotel
The Isle also provides guests a newly remodeled 402-room hotel. The guest rooms and suites are well appointed, roomy and comfortable with some exceptional views in this quaint mountain community. “We wanted to be in the middle of the area in the casino district,” said the Gamroths from Casper, while enjoying their mini-vacation at The Isle. The couple said they loved their spacious and comfortable hotel room.

We then walked into the casino area and saw what game players experience with the Isle’s 1,100 slots and 24 table games, including nine poker tables. The spacious casino makes it easy for players to enjoy the diverse selection of slots, table games and other venues. The extensive staff at The Isle was notably friendly, as many wore smiles on their faces. The staff’s positive attitude and considerate style made our adventure enjoyable and a refreshing experience for the afternoon. “It’s all about the employees and the customer experience,” said Watts. “Any casino can buy
the same slots and provide comparable offerings. It’s about the relationship our staff has with our customers at The Isle that makes the experience special.” The Isle has recently introduced a newly expanded overflow room for players, which includes a table games pitfeaturing nine blackjack tables and a craps table. This spacious and nicely decorated area will provide an added dimension to the player’s experience. In addition, The Isle has just remodeled their large bar to be more spacious and efficient to serve players, providing a more expansive area that is surrounded by big screen televisions providing continuous sports entertainment. As the Denver Broncos approach the regular season games, the Isles extensive array of big screen TV’s will be telecasting the entire game, along with pre and post game interviews for guests to enjoy while playing there favorite games and slots. The Rockies games are also telecasts around the Casino to enjoy throughout the remainder of season. fter the run of daily showers recently, bright Colorado sunshine returned for the 2013 Cemetery Crawl, presented by Gilpin History at the Russell Gulch I.O.O.F. cemetery in the forest near the town. Cemetery Crawl brings history to life
represented and all were entertaining. The actors, guides, cashiers and even the commissioner who introduced the cemetery and the lodge that built it, were all dressed in Victorian garb. The popular annual Crawl moves to a different cemetery each year and portrays different stories. Producing this year’s Crawl took the combined efforts of 34 volunteers. The Crawl is a major fundraiser for Gilpin History, founded in 1970 as the Gilpin County Historical Society. The 2014 Cemetery Crawl will be at 11 a.m. on Saturday, Aug. 23, 2014, at the Knights of Pythias cemetery on “cemetery hill” above Central City.

he first man with a camera set foot in Colorado in 1853 as part of the Fremont expedition. Accompanied by several wagonloads of bulky equipment, Solomon Nunes Carvahlo produced Colorado’s earliest photographs, stunning views of the Rocky Mountains, Native Americans and landmarks, including Bent’s Fort in southern Colorado. Although the photos were clear, for reasons unknown, Frémont chose to include illustrations copied from the photos in his memoirs rather than the photographs themselves. Unfortunately, the original plates were destroyed by fire in 1881.

The Streets of Trinidad
T
rinidad has a rich history, molded by the Native Americans who called the area their home. From the Spaniards, who explored the land, to the scouts, trappers and traders who passed through this southern crossroad, all left their mark on the early history of this historic town. So too, did the gamblers, rogues and outlaws who came through the many saloons and gambling joints on Main Street. The laws in those early days were either loose or lost, until Bat Masterson, along with his kid brother, James, served as marshal and deputy marshal, in the spring of 1881. A year later, following the shoot-out at the O.K. Corral in Tombstone, Ariz., Wyatt Earp followed his old friend Masterson, to Trinidad to cool his heels. Even Billy the Kid spent time near Trinidad, nursed back to health from a gunshot wound by Sister Blandina, the pioneer Catholic nun who singlehandedly started the first Catholic school in Trinidad. Into this mix of early history is the little known gunfight of 1882. Unlike the gunfights on the streets of the Old West, portrayed in the Western movies, this gunfight was a blunder from the start, that ended in tragedy. This is how it really happened. Frank Loving, also known as “Cockeyed” Frank Loving, for reasons unknown, gained a reputation as a gunfighter following a shootout in Dodge City, Kansas in 1879.
A professional gambler, Loving arrived in the wild town of Dodge City, Kan., earlier in the decade, where he became a frequent customer at the famed Long Branch Saloon. Here, he gained his associations with other well known gamblers, gunmen and lawmen of the era, Doc Holliday, Bat Masterson, Wyatt Earp and a fellow named John Allen, who will figure prominently in our tale of Trinidad. On a rowdy Saturday night at the Long Branch Saloon (April 5, 1879), Loving finally got his chance to confront Levi Richardson, his archenemy, over a recent love triangle. Following a volatile exchange of heated words, the two exchanged gunfire, with Richardson firing first. His shot missed and Loving’s return shot misfired. Richardson fired the remaining rounds of his .44 toward Loving, but missed again. Loving regained his composure, aimed and fired at his opponent, who slumped into the stove and died. Following an inquest, which witnesses testified to the selfdefense, Loving was freed from any charges and left Dodge City for good. Wandering the West for a few years, Loving moved on to Trinidad in early 1882. Here he met up with old friends from Dodge City: Friends, Masterson and Holliday, who came to town from time to time while working with the Santa Fe Railroad during the Royal Gorge Rail War, and Bat’s brother James, who was the deputy

marshal of Trinidad, greeted Loving warmly. Earp was there, running a stage to Raton Pass. Not so friendly was John Allen, an old gambling acquaintance, also from Dodge City. Allen worked at the popular Imperial Saloon, where Loving conducted his gambling abilities. The contentious relationship evolved over a period of months, surrounded by arguments over card games to accusations of certain house loan arrangements. The argument escalated to

violence on April 15, 1882, on Trinidad’s Main Street. The two men encountered each other and drew their revolvers, but friends intervened, saving the fight for another day. The next evening, Allen, with gun at the ready, waited for Loving to enter the saloon. He didn’t have long to wait, and when Loving entered, Allen pulled his gun. His first shot missed, while Loving’s gun was knocked out of his hand by the scramble of customers. Allen shot again, and Loving ducked, retrieved his Colt .45, and fired at Allen who ran for the rear door. Loving followed Allen, firing his rounds as Allen fled. Trinidad’s Deputy Marshal James Masterson responded to the shots, finding Loving in the alley behind the saloon. After disarming Loving, Masterson left to find Allen. Failing in this quest, Masterson returned to the saloon, only to find that Loving had rearmed with two revolvers. Again, Masterson disarmed him, and continued his search for Allen. During this cat and mouse search, Allen had been hiding out in the Catholic Convent of Sister Blandina, located down the street. Meanwhile, Loving left the saloon and walked over to George Hammond’s hardware store, to obtain yet another gun and ammunition. What he didn’t know was that Allen was following him. Suddenly, Masterson heard a gun

shot from the hardware store and ran to investigate. Loving stumbled near the door Masterson had thrown open. Frank Loving looked up at his old friend and said, “Jim I’m shot.” Three officers, led by Lou Kreeger, quickly arrived and arrested John Allen who had fled to the rear of the store. Meanwhile, Loving, with a bullet in his back, was taken to the home of a local doctor, where he was treated and made comfortable, as it was determined the bullet could not be removed. Frank Loving died five days later – he was 28 years old. It became known in outlaw history as the Trinidad Gunfight. Six months later, Allen went on trial for murder, but was found not guilty. He left Trinidad for good, returning to the town where it all began, Dodge City. Things did change for Allen, however. Perhaps seeing the error of his ways, he became a preacher and a traveling evangelist. Things changed in Trinidad as well. Bat and James Masterson hung around long enough to bring in real law enforcement that in time made Trinidad a fine city. Returning to Dodge City, the Masterson brothers continued in the profession, with James becoming sheriff in nearby Gray County. He later took part in the Oklahoma land rush and settled in Guthrie, while brother Bat began a new career in New York as a sportswriter.

Take your Beef Short Ribs and sprinkle them liberally with the salt and pepper. Place a sauté pan large enough to accommodate all the short ribs on your stove and heat for about 3 minutes on high. Once your sauté pan is hot, add the oil, it should almost want to smoke right away. Gently place the short ribs in the sauté pan and proceed to brown them on all sides. Once browned, remove and place in a roasting pan. Do not toss the oil. Add your vegetables, except the garlic, to the pan and oil and brown them on all sides. Be patient and do not move the vegetables too much. Once your vegetables are browned, remove them from the pan. Add the tomato paste and stir with a wooden spoon for about 1 minute. Add the red wine and cook for 1 more minute. Add the beef base and about 8 cups of water and bring to a simmer. Once your liquid is at a simmer add all of the ingredients except the ribs back into the pan. Pour this mixture on top of the short ribs in the roasting pan. Cover the pan with aluminum foil and bake in an oven for about 4 hours or until fork tender. Once done you may remove the ribs, strain out the braising liquid of the vegetables and herbs and reduce it by half in a pot. Serve with your favorite potato or side dish for a rich fall treat.
