Saratoga Casino debuts summer BBQ buffet By Vi Cooper

The Colorado Gambler has a confession: We never met a grand opening we didn’t love. This time, we ventured to Black Hawk to visit the summer barbecue buffet on-site at Saratoga Casino’s Garden Buffet. The brainchild of Executive Chef and Director of Food and Beverage Brian Grzyb, the season-long menu offers a host of home-style American favorites, ranging from miner’s slow smoked pulled pork and big home-style smoked brisket to fire-pot baked beans and hot roasted sweet corn and much, much more. Chef Grzyb believes his spread is the only complete barbecue menu in town, but, he adds, “If anyone else does it, they don’t do it as well as we do.” The Chicago native was driving to Evanston to enroll at Northwestern University, when, he recalls, he realized he preferred a career as a chef and turned around and headed for culinary school at the Cooking and Hospitality Institute of Chicago. His first job was washing dishes and mopping floors, graduated to cooking at a number of well-known restaurants in Chicago and ultimately, from sous chef to executive chef and director. He says the secret to the deep, rich flavor of the variety of food on the menu can be traced to the careful attention afforded each dish and the development of the special sauces that accompany them. For example, the Carolina-style pulled pork is slow roasted eight full hours and served with an accompanying apple cider vinegar, sugar and mustard sauce we found unique. “We cook it all right here, start-

ing from scratch, every day,” Grzyb said. The buffet’s mountain-style beer brats are served with caramelized onions and a beer glaze that imparts a smoky tang to the dish. The chef spent some time at the holy grail of barbecue, Texas, Louisiana and Mississippi. A work of art is the blast cap bacon explosion, an Italian sausage and ground beef combination that is then wrapped in lattice-laced bacon and glazed with a smoked barbecue sauce, creating a moist yet meaty hearty entree. The sweet Baby Ray’s barbecued spare ribs

are another product of patient, long-term roasting, resulting in meat that literally falls off the bone. For traditionalists, the menu includes garden-herb grilled chicken breasts, Mississippi honey barbecue chicken quarters, fried chicken, turkey and stuffing, fried catfish, Cajun smoked sausage and skewered beef. Besides the baked beans and corn, side dishes include cowboy potato casserole (a combination of grilled potatoes and special seasonings), spicy collard greens, baked macaroni and cheese, mashed potatoes, roasted vegetables, lima beans and cabbage with bacon. There is a range of salads, including a fully loaded salad bar. There are special soups daily (with corn bread and rolls) and for dessert, there’s Auntie B’s bread pudding, Sweeties’ strawberry shortcake, Granny’s old-time apple cobbler and a wide selection of slab-mixed ice cream. Non-alcoholic drinks are included in the $10.99 price (with player’s card, $12.99 without card). A full bar is also on site. Saratoga Casino’s Garden Buffet will feature the barbecue menu through Labor Day, although Chef Grzyb could probably be persuaded to extend the season if demand warranted a longer stay. The 124seat dining room is open Monday through Thursday from noon until 7 p.m.; Friday and Saturday from noon until 10 p.m.; and Sunday from noon until 8 p.m. There is a rooftop outdoor dining space that seats 30 people, with reservations recommended to ensure prompt seating.

My wife and I have made it a yearly trip over the past decade (only missing last year due to family commitments) and interestingly enough, I’ve only played in two large buyin events. This is because the live action is so good and the smaller tournaments around the main ones are continuous. And, to be honest - Las Vegas has gotten in the way, as there is just so much to do. But - this year / it’s bracelet time. Four years ago, while I didn’t cash in the $1,500 No Limit Hold’em tournament I played in (in fact, was out in the first 6 hours) - my wife and I had a great night in the VooDoo Lounge on the roof of the Rio that lasted until the wee hours of the morning with the sunrise peeping over the desert horizon. Overall, we lost a bit that year - but, we sure had a great time! Three years ago I had a good run at the cash $20 - $40 Limit Hold’em game on the first day,

paid for the trip, and decided to enjoy the rest of it with the wife and didn’t play anymore (yep, I really won that trip!). My wife met numerous great players, watched the final of the big $50,000 tournament, and just had a great time. On this trip we went to two shows, totally relaxed, and were able to enjoy Las Vegas. Two years ago, I played in another $1,500 No Limit Hold’em event and did much better - although with the same results. I made it into the 2nd day (always fun to bag up chips) but went out when my pocket Kings lost to an A - K. All the money was in before the flop - so I felt good about the play, just really wanted to go a bit deeper into the tournament. I was lucky enough to win most of the buy in back in cash games and was defiantly pokered out after the hours at the tournament table and then battling the live action. That’s the one great thing about being in Las Vegas - there is always somewhere to go or something to

do. In our case, we went over and saw the show Rock of Ages, partied with the cast after, and had a blast. There is something about the entire setting of The World Series of Poker that is truly magnificent and simply awe-inspiring. The large hall where the main tournaments are held is like a huge, wideopen cathedral and its atmosphere is continuously highly charged with the hope of every player in the room. It’s then father electrified by the pain of the 90 percent of those players losing (as only 10 percent are paid usually), and then re-energized through the day by the jolts of fresh enthusiasm as new players begin their own journey to infamy or a bone bone-crushing defeat. Even if you don’t make it to Las Vegas for the grandfather of all tournaments this year - follow it online, on ESPN, or follow your friends / it’s always fun to sweat them and cheer. But for me - as I said above / it’s Bracelet Time Baby! Remember - Play your Game!

The Daytona 500, America’s Race, is the official start of the NASCAR racing season, while the Indy 500 is the climax in IRL open-cockpit racing. The Indy 500 is etched in motor sports history by thrilling racers run by great teams and led by legendary families in racing history. Second and third generations in today’s sport include three members of the Andretti family, a fourth generation of the famed A. J. Foyt legend, as well as the third generation of Colorado’s legendary Unser family. With the thrill of the racing sport today, it’s well worth recalling the beginnings of the thrilling sport. And it all goes back to the Unser family and a simple dream and a magic mountain, that evolved into the Indy 500. It started right here in Colorado. The story of America’s most thrilling auto race is filled with history, lore and a legendary racing family. It is the story of ingenuity, camaraderie, competition and community spirit. It is the race to the clouds, a trail that winds and weaves its way to the top of America’s inspiration point – Pikes Peak. The auto race to the top of America’s most picturesque mountain

began as a tourist attraction. It succeeded, and is now known the world over. Spec would be pleased to know his many thousands of dollars spent for the world’s highest paved road is still paying off - some ninety years later. Spec is the wealthy Spencer Penrose of Cripple Creek mining millionaire fame and the money if not the brains, behind the Pikes Peak Hill Climb. It all started, as these things often do, with a slow economy and a million ideas for a quick fix. Spec had the ideas and the millions to go along with it. In 1914, when the automobile was the new craze sweeping the country, Spec envisioned a grand highway to the peak of Pikes Peak and to promote the highway; a first ever automobile race to the top! A long two years later, the road was completed, with the first auto race to the top of America’s beloved landmark taking place on Aug. 12, 1916. With great fanfare, Spec announced the first Pikes Peak Hill Climb. The nationally famous cigarsmoking racer, Barney Oldfield, agreed to race, but placed 12th in the finish. The winner of that first historic race was Rea Lentz, driving a Romano racecar up the 12.5-mile road in 20.55.4 minutes. A grand ceremony was held at the finish line atop the summit. Spec presented an

over-sized trophy, (on loan) and a cash prize of two thousand dollars. In the mix of all of this racing madness were three local teenage brothers from Colorado City. The Unser boys, Louis Jr., Joe and Jerry had raced motorcycles as well as a car or two with other locals. But they had never seen an actual race, let alone in their own backyard! That is until they watched the Pikes Peak Hill Climb. Louis and Marie Unser, and their three boys, arrived in Colorado City in 1909. The Unser family, European immigrants, found a home and improved health for Louis Sr., in Colorado’s climate at the base of Pikes Peak. Louis, a German immigrant, and meat cutter by trade, gained employment at the Borscht Meat Market, then located at the northeast corner of 26th Street and West Colorado Avenue. The young family of five lived above the market in the most modest of accommodations. While Louis worked below in the meat market, his Swiss immigrant wife, Marie, raised their boys with a healthy dash of religion and family values thrown in. The family pride, born of the old traditions, seems to have taken root in the boys, however, religion was quite another factor. Louis recalled in interviews

years later, “Mother made us attend church, down the street. Boy! We couldn’t wait until it was over to go play in the fields.” The family later moved to a small house in the 2700 block of West Colorado Avenue, which still stands today. The three Unser boys attended Midland School. After school, the boys often hung around the auto court at 2616 West Colorado Avenue. At the age of 14, Louis, the oldest of the Unser boys, quit school to learn about cars, and more importantly, racing. In an interview, Louis once described the art (or lack of) early-day racing, as a “pitch-in effort.” The Unser boys worked odd jobs to make enough money to buy auto parts. Often, they would “rummage junk yards for tires and such,” Louis recalled. In time, they managed to build a racecar with a Studebaker engine, a rusted Ford frame, and rummaged tires and wheels. The body was pieced together bit by bit until finally the Unsers had a racecar. Pikes Peak, often referred to as Unser’s Mountain, has been the official racing playground for this famous family. Since that first race, there have been only eight Pikes Peak Hill Climb races without an Unser competing. In 1916, all three brothers competed in the Pikes Peak

Auto Hill Climb where Joe was the top Unser finisher, placing in the top 10. Thus began the first generation of racing Unsers. Louis was the first Unser to win the race in 1934. From 1934 to 1947, only nine races were held due to World War II. Louis won eight of those nine races becoming “King of the Mountain.” The Unser legend was born, although neither Joe nor Jerry ever won the race, but came close several times. Joe finished 2nd four years in a row and was the first Unser to lose his life when testing a car for the Indy 500 on a Denver highway in 1929. Somewhere along the line, the Pikes Peak Hill Climb was dubbed “The race to the Clouds.” And it fit the Unser racing legend, for in 1937, Jerry Unser brought his family of four sons, Jerry Jr., Louie, Bobby and Al into the racing sport at Pikes Peak. This became the second generation of racing Unsers. In 1953, Uncle Louis won his last race to the clouds. By then he was also known as the “Old Man of the Mountain” and had accumulated a record nine wins, six of which were race records. A new era has dawned with the fourth generation of Unsers now racing the Pikes Peak Hill Climb, proving it is still “Unsers’ Mountain.”

Only seven privates did not complete their full term of service with the company; one was discharged in August and the remainder after mid-September, all for unknown reasons. All except those discharged served one month and 29 days. Captain Tyler received $70 a month, the officers less and the privates, only $16 a month. The officers and privates were each credited with $6.88 “for servants clothing” and “40 cents a day for use of horses and horse equipment.” Tyler’s Rangers marched all over northern and northeastern Colorado Territory, from springs to known Indian hangouts to early military forts. They repulsed several attempts by the natives to drive off stock, their own and ranchers. Twice they faced a party of Indians who retreated, but the Rangers were ordered by Gen. Mitchell to not follow the Indian tracks. The Rangers never actually engaged in a battle and their only injury occurred when a horse fell with a rider; the injured man recovered in a few days. The Rangers more than once scouted far past their rations and “suffered for want of provisions.” After scouting near the Bijou, they returned with relics of the

An anonymous writer compared the “Ranchemen, some of whom are afraid to live, 20 together, in blockade houses” with “our mountain men, who ride alone 300 miles.” Another anonymous writer declared, “The mountain boys have already in two weeks done more than the [regular military] have in two years in thoroughly scouting the country.” A report on the troupes from the pen of Major Gen. Henry M. Teller survives. He wrote, “Discipline: Good. Instruction: Fair. Military Appearance: Good. Arms: Good, found by themselves. Accoutrements: Various, found by themselves. Clothing: Poor, found by themselves.” Tyler’s Rangers returned to Denver on Sept. 30 where Gov. Evans addressed them; the address was printed in the Rocky Mountain News. Evans praised them for being “more promptly at the point of danger than the U.S. 100-day fighters.” Because of the “careful guarding by white militias, the Indians retired to their safe haunts in the wilderness of the plains.” The Rangers had “pressed 300 miles down the line of communication with States to the place where the greatest depredations were being committed. A more noble and patriotic

service than yours has not been rendered by any body of men at any period in the history of our country … Your presence materially aided in preventing one of the most extensive and horrible Indian massacres ever planned by brutal malice and savage barbarity…The Tyler Rangers shall live in the praise and gratitude of all our good and true, loyal and just citizens.” While today we label Evans over-zealous, the settlers and their governor had reason to be frightened in 1864. In two separate raids, one on Cherry Creek and one below Fort Lupton, white men were killed, in addition to the Hungate family of four. On Oct. 14, the Rangers reached Black Hawk and were relieved from active service by order of Teller. Tyler had been elected to the first-ever Black Hawk City Council in April and he resumed his duties there. In House Bill 655 on March 4, 1917, the federal government granted pensions to the surviving officers and enlisted men of survivors of “certain Indian wars” from Jan. 1, 1859 to January 1891 inclusive. Were many of Tyler’s Rangers still alive 53 years after their meritorious service?

received many helping hands. Dr. Joan Armon, a Regis University professor who is on Gov. John Hickenlooper’s Urban Gardens committee, has been very instrumental in connecting us with outside resources and working in the garden, according to Sara Kammer fourth grade teacher. Armon got a permaculture landscape architect to design the organic garden and recruited Regis students to assist with the project. A drip system also was donated to facilitate watering. Kammer’s fourth grade enthusiastically sowed the first seeds three years ago. Proudly she explains now these experienced older students really know how to

work in the garden. “They love to dig carrots,” she said. Later a Boy Scout, a grandson of a former parent, built a garden shed to earn his prestigious Eagle Badge. Another Scout installed logs in the garden for students to sit on while they learn about gardening and observing nature.

Interactive learning

This garden project provides an interactive teaching tool. Classroom teachers utilize the garden to encourage students’ respect for nature and also for teaching language arts, science, religion, spelling, art, health and nutrition, etc.

Jennifer Jensen, the school’s life sciences instructor, teaches the children how to identify different plants and tells them about the beauty of nature and plants. The art teacher, who works frequently with youngsters in prekindergarten and kindergarten, encourages the children to draw garden vegetables. She tells them if you love strawberries, you need the bees to pollinate the blossoms to make strawberries. The garden project cooperates with the school’s federally-funded school lunch program, which aims to get kids to eat more colorful vegetables with their meals. “If they grow it, they will eat it,” points out Emmy Wood, the school art teacher. She added that students especially like to eat the sun gold cherry tomatoes. Larger tomatoes are used for spaghetti sauces and stews. The art teacher explains the older students save and plant the tomato seeds from the previous year in paper cups filled with soil, which has been enriched with dirt from composting with red wiggly worm beds. The younger children take great pride in transferring the small seedling into larger containers. Before transferring the tomato seedlings into the garden, students enriched the soil by composting it with layers of manure, leaves and cardboard. Students at Guardian Angels grade school are learning to respect nature by growing food in their own garden without harmful pesticides or fertilizers in inner city Denver. It is a space for students and their teachers alike to learn about growing green and developing healthy eating habits. All 171 students in the school from pre-kindergarten through eighth grade have been involved with the garden in some way, according to Principal Mary Gold. This is the third year that students have planted vegetables in their garden, and again they will feast on the harvest of their labors with a back-to-school picnic in August. Teachers and volunteers tend the garden in the summer and make pickles from the cucumbers using garden dill, bake loaves of zucchini bread from
