Sunny Side Up

Owner Karen Widrick calls Sunny Side Up a retirement dream of hers and Chef Tim Widrick’s. “Upon opening SURV restaurant at 1800 Park Plaza, there was a breakfast location called Alfie’s that piqued my interest,” she explains. “After two years of being in Park Plaza, Alfie’s closed. It was then I knew our retirement dream would come about before retirement.” Widrick describes Sunny Side Up as a boutique breakfast and lunch spot offering scratch-made food. She calls The Lafayette Platter their most popular breakfast item with all seven of their Eggs Benedicts right behind it. The Forks Panini is a hit at lunch. Sunny Side Up serves gourmet coffee specially roasted for them by Allentown’s Mad Catter. They also have their own cold-pressed Sunny Side Up orange juice by Green Vida Co.

Modern Flair Flying Pig Tavern And Tap

Billy Kounoupis, Tim Kalavruzos, Chris Kolovos and Bill Diamantakos are the team behind Bethlehem’s Flying Pig Tavern. “My cousin Tim came up with the idea and name for the Flying Pig,” says Kounoupis, sharing that Tim owns several premier banquet facilities and used to say that he’d open up a restaurant when pigs fly. “We are proud to be the type of tavern that pushes the culinary envelope by taking classic dishes and creating a modern flair,” says Kounoupis, noting their double-cut signature pork chop and steak burgers. Drinks range from the finest IPAs to craft cocktails. “As a resident of Bethlehem, I am humbled by the amount of love and support from my community,” he says.

What are you most proud of about the work that you do?

I view HR as a part of the growth, sustainability and so much more. In my role, I am able to impact the full employee experience. From the recruitment of new employees, the well-being of current employees, training and development, to our culture of belonging and diversity—it is exciting and rewarding work!

What have you loved about building a career here in the Lehigh Valley?

I have had professional opportunities here in the Valley that will be with me taught me the true power in embracing our differences, celebrating diversity and challenging the status quo. There is a strong community of people here committed to making the Lehigh Valley a great place to work, live and play. We have incredible places to shop, explore history, for leisure and to eat good food. But in my opinion, the true beauty of the Lehigh Valley lies in its people.

In what ways do you involve yourself in the Lehigh Valley community?

LINC’s DEI (Diversity, Equity and Inclusion) committee. The one I am currently most passionate about is Valley Youth House. I serve on the Board of Governors as well as their DEI and HR committees. Their mission is to be the catalyst for youth to achieve their desired future through genuine relationships that support families, ensure safe places and build community connections. The work that we do today truly supports the next generation of Lehigh Valley residents and leaders.

Holistic Shopping Earthwise Pet

Kelley and Robert Spellman realized through the pandemic that they wanted to be of service to helping animals live healthier lives. Robert’s financial background combined with Kelley’s experience in natural therapeutics led them to opening a holistic pet store: EarthWise Pet. “Our mission is to educate and support people on the journey with their dogs and cats—to give them the fullest chance for a healthy and long life,” they share. “Helping parents learn how to feed their pets a species-appropriate diet and heal ailments with natural products is our joy.” This means that they research and evaluate the ingredients, manufacturer quality and value of all pet food brands in their store. “If the pet has sensitivities or special dietary needs, we carry and will help select the most appropriate pet food,” they say. “If the pet doesn’t like it or it is not working with their systems, customers can bring it back. We guarantee 100-percent customer satisfaction.” Kelley and Robert, along with Kelley’s son Cedar, are certified pet nutritionists and dietitians, and offer free consultations. What’s more, their approach to grooming is not one size fits all—they treat the individual skin and fur/hair of the pet at their Groom Bar. “We keep our spa calm and work with the pet to make it a positive experience or help heal the traumas that may have occurred in the past,” they share. Locals can also count on EarthWise for training classes and doggie day camp.
