At Idun we have a long experience with developing improvers, both for industrial customers as well as for small and medium sized. Our competent team of product developers and experienced bakers have taylored improvers for our customers spesific needs for more than two decades. With our in-house production and support we ensure the best quality in all stages from the development to production, to helping our customer succeed.

Both were developed for larger industrial production, but is also suitable for smaller productions. The improvers give good dough stability through out the production process, and is suitable for all types of bread products. The finished products gets a prolonged freshness and softness.

Idun Fersk Enzym and Idun Fersk Emulgator

Idun Grovt & Fint

A robust improver that guarantees a perfect result every time. Easy to dose, and suitable for all types of bread products both fine and wholegrain. Provides good dough stability and durability, volume and poring.

Idun Combisur Soft

Developed for traditional and sliced bread, to ensure extra long shelf life. Enhance stability in the production process, ensuring a robust dough. The improver makes the goods easier to slice, prevents sticking on knifes and provides a good softness.

Cool & Freeze

Idun Perma

Idun Perma has a wide range of applications. It can be used for all types of baked goods, and for products with high % of whole flour. Idun Perma was initially developed for yeast doughs going on freeze before baking. Today we also use it as a volume sensor in non-cool/freeze doughs. The improver is also suitable for pastry products.

Dosage:

Freeze up to 1.5 months: 1% of flour weight

Freeze up to 3 months: 1.5% of flour weight

Freeze over 3 months: 1.5% of flour weight

+2-2.5 % gluten

Idun Kjøl & Frys

Idun Kjøl & Frys(Cool & Freeze) is a robust improver developed to maintain the perfect quality for doughs during cool/freeze. Suitable for all types of bread products and easy to dose.

Starbake Polar (12169)

Developed to guarantee minimal quality loss for doughs going on cool and freez over a long time. Starbake Polar enhances dough stability during production and freshness in finished goods. Suitable for finer doughs and pastries.

Idun Procedura

Idun Procedura is developed for doughs with long processing time and is very good for doughs with a high water content. The improver ensures that during the long ripening time, the dough develops in a correct direction, even when you have might not always have the same temperature and processing time. Idun Procedura ensures an ubeatable rising during baking and will give you a characteristic and open crumb structure and solid crust.

Idun Fersk hvetebakst allround

Idun Fersk Hvetebakst Allround is an allround baking improver for sweet doughs. It provides a unique softness, enhances freshness, boosts volume and gives a short bite. The improver is suitable for direct baking and over cool/freeze. For the best result for freezed products use in combination with Idun Perma, Starbake Polar or Kjøl&Frys.

Toast Improver

Idun Toast Improver (12075)

Idun toast improver is developed for doughs to be baked in trays, and is specially suitable for sliced bread. The improver enhances freshness and makes the bread easy to slice. Not suitable in recipes with coconut fat or dairy products.
