THE 5 PILLARS OF QUALITY SELECTION The quality of illy coffee starts with the raw materials. To ensure consistent quality the company has purchased its coffee directly from growers from 20 regions for over 20 years buying only excellent Arabica, with our 150 quality checks to ensure every bean meets illy’s standards.

AGEING & PRESSURISATION Just like fine wine, illy coffee undergoes an ageing process. In 1932 Francesco Illy developed the pressurisation technique, a packaging system that replaces the air inside the cans with an inert gas under pressure. The patent is maintained to this day and has been successfully proven to ensure bean freshness throughout its life.

THE iperESPRESSO CAPSULE The iperEspresso Capsule is a perfect extraction system, protected by 5 international patents. It is made of an outer casing, made of food-grade polypropylene, which contains about 7g of ground and pressed roasted coffee. Inside, the capsule contains a small extraction chamber that works in a two-phase process: • hyper-infusion, where water comes into contact with the coffee at the perfect pressure, extracting the most intense aromas; • emulsion, as the coffee passes through the opening of the elastic valve, it enters a sort of antechamber in the lower part of the capsule. This creates a crema with a dense, velvety consistency that persists for over 15 minutes. This innovative extraction ensures that the coffee reaches the cup without any direct contact with the machine. This avoids the possibility of coffee deposits becoming trapped in the machine, which could become rancid and affect the taste and aroma of the drink. The illy iperEspresso Capsule is fully recyclable.
