The heart of a fine dining experience is elaborate dishes elegantly displayed and subtly, exquisitely spiced. The Royal Thai Banquet includes an array of starters, soups, main courses and desserts, which range in degrees of spiciness and represent an innovative approach to Thai cooking with a spectrum of recipes from the past and present with a look to the future. Starters include Chor Muang, a steamed flower shaped dumpling, Doi Kham Salad, purple eggplant salad with grilled scallops, Labb Salmon, a salmon tartar and Black Chicken Crispy Spring Rolls. Enticing soups include a choice of Tom Kha Kai Black Chicken, a soup of coconut milk and galangal and Tom Klong Wild Red Sea Bass, a spicy and sour soup. Main courses, a variety of seafood and meats, are tantalizing. and is rightly enthusiastic about a cuisine which reflects his passion both for global travel and culinary innovation. We begin in Northern Japan. Mark’s choice of appetiser is pan-fried Hokkaido scallops with roasted cauliflower and yellow curry. The juicy shellfish are lightly seared, their succulence complemented by delicate yellow curry aromatics and nutty cauliflower complemented by a zesty coriander oil. The main course, again ocean inspired, is a fantastic ‘Triple-A’ graded tuna loin, seared to perfection and complemented by a jalapeno and caper potato salad with wild rocket and lemon. Other chef’s recommendations reveal a capacity for adventurous combinations. Pan fried red snapper with a ragout of smokey chorizo sausage, tomato and chick peas; luxurious platters of Marennes Oleron oysters served over ice, while Middle eastern falafel provides an inventive vegetarian option. For carnivores, stunning Rangers Valley Wagyu Sirloin steak marble score 6 with asparagus and organic hens eggs with Béarnaise sauce admirably fits the bill. There are artisanal ice creams inspired by local fruits and crisp organic salads. The attention to detail is exceptional. Nothing is too much trouble. Every dish is accompanied by Book now exquisitely chosen vegetables and herbs with ONLINE matching sauces and dips. Ingredients are ultra-fresh. Most of the seafood is purchased twice daily from Rawai fish market, and there is a stress on local, organic produce. The wideranging meats are created in the resort’s own charcuterie, even down to regional sausages.

ith less than 18 seats, this newly-opened, exclusive little jewel – PRIME @ Rock Salt – is perched on the Rock Salt restaurant rooftop at The Nai Harn.

The entrance is through Rock Salt itself and up a discrete staircase. The early evening view from here is sublime: the whole bay spread out before you, yachts at anchor and a spectacular sunset ‘on the way’. Add to this the impeccable service and beverages selected (and paired) by internationally renowned critic, James Suckling, and you have a formula for guaranteed success. And that’s before we’ve even touched on the food! PRIME offers an assortment of roasted, smoked and chargrilled creations from custom-built kitchens, featuring a wood-fired brick oven. I started with Spanish Octopus (sous vide and chargrilled octopus, skordalia and gremolata) while my dining partner opted for the Cold Smoked Native Hebridean Salmon (lightly cured and cold smoked with raw crispy fennel salad, dill, granny smith apple, lemon, extra virgin olive oil and fresh root wasabi mayonnaise). I’m not usually a fan of octopus, which can be tough and tasteless, so this was my test of how good PRIME really is. It passed with flying colours! The octopus was surprisingly succulent and tender – and the combination of

flavours in the dish made for a mouth-watering beginning to our PRIME experience. The salmon was everything you’d expect. Delicate, yet full of flavour, and brilliantly enhanced by the imaginative salad combination. Main course for both of us was Ranger’s Valley Wagyu Rib Eye Marble Score 6, Grain Fed for 360 Days (chargrilled to the guest’s liking and served with truffle pomme purée, charred Romanesco cauliflower and red wine jus). Aside from the monster-sized portions that would satisfy the biggest of appetites, this was probably the tastiest, tenderest, most succulent steak I have enjoyed for as long as I can recall – and certainly the best ever on Phuket. One or two places renowned for steak may come close, but for steak perfection on a plate, The Nai Harn’s executive chef, Mark Jones, has put PRIME @ Rock Salt way out in front. For the view, the ambience, the service and – of course – the food and beverage, PRIME @ Rock Salt is a must-try. You will go back again but, with less than 18 seats, you’d be advised to book ahead. This is going to be one popular venue.

We descend from the road above to set foot in what feels like an enchanting film-set: wooden decking walkways lit by traditional lanterns, that lead past lily ponds and airy, rustic pavilions ready to welcome diners. Beyond, ancient trees, a verdant screen of sea-lettuce, and the lights of Kamala winking across the deep sweep of Patong Bay. We dine, literally, at the ocean’s edge. Unsurprisingly, their menu – a roll-call of authentic Thai classics – features an extraordinary range of dishes, all prepared from superfine ingredients. huge chunks of succulent crab. Unbeatable. For our main course, we order from the “The Pond”: steamed grouper served with a delectable chili and lime dressing. The flesh is firm and redolent of the sea, a reminder that such authentic fish is becoming more difficult to source. We conclude with a classic mango and coconut milk rice, surmounted by mango ice cream. Everything is perfect, but the menu is vast and we have only scratched the ‘à la carte’ surface. The attention to detail at Ta Khai is breathtaking: for example, “bite-sized dishes” range from miang kham with no fewer than six herbs, to buea tod with native water grass and prawns. “Wok-fried” fish offers a choice of seven different sauces. The sushi and sashimi at Taihei is incredibly fresh and each bite truly melts in your mouth. A nice touch is that all the sushi dishes come with small ramekins of eye-watering wasabi, soy sauce and pickled ginger, making it easy to tailor the taste of your sushi to your personal preferences with the condiments. The Rainbow Sushi is highly recommended: six pieces of succulent sushi including shrimp, salmon, tuna, avocado, mackerel and California Sauce. The portion makes a great sharing plate. Service at Taihei is impeccable, the staff going above and beyond ensuring that empty plates are cleared straightaway, drinks are refilled when the glass is half empty and condiments are kept full. Additionally, it is obvious that the staff really enjoy the food they are serving, and go into great detail when recommending menu items. It should be noted that they are also alert to food allergies, and quick to suggest menu alternatives to avoid any allergies a diner may have. Taihei restaurant excels with Japanese chef Shirashi at the helm.
