Desserts Filled With Love
At Cheval Blanc Paris, pastry chef Maxime Frédéric and his team conjure a ‘chocomotive’ creation inspired by wooden toys. Shaped in the form of a steam locomotive and three chocolate wagons, chef Maxime’s creation evokes the excitement of travel as well as tempts those with a sweet tooth. Te locomotive is composed of a 75% dark chocolate bar, sprinkled with crispy chocolate-hazelnut Gianduja by chocolatier Nicolas Berger. Te middle wagon is made from caramelised chocolate-coated hazelnuts, while gingerbread, orange conft, cinnamon cream, and light-as-air mousse with green cardamom flls the third carriage, which are incidentally designed to resemble the windows of the Cheval Blanc Paris building.
