“I am not CIA. I’m a mother looking for my son.” Once she could utter that statement without dissolving into a bundle of giggles, Ashley Judd knew everything else would be a walk in the park. She mischievously added, “It’s kind
of daunting, you know. It’s no small thing to be a trained operative for the CIA. I didn’t take it lightly.” Judd, 43, portrays a frantic, determined mom, Becca Winstone in WABC-TV’s midseason replacement “Missing” premiering at 8 PM tomorrow. In each hour episode, Judd

manages to get chased, trampled, beaten, and shot as she treks through most of Europe’s major cities in search of her son, young Michael Winstone (Caleb Smith), who went missing during a summer internship in Italy. Although fans haven’t seen much of Judd over the past few years, she hasn’t been idle. Along with earning a Masters in Public Administration from John F. Kennedy School of Government at Harvard University, she also penned a memoir titled All That Is Bitter and Sweet. “Obviously, I was aware that this is a golden age in television, that incredible film producers are making special TV. That once rather impermeable membrane between film actors and TV actors has completely vanished,” the Kentucky native said. “I remember turning on “The Big C,” a show I enjoyed, and there was Liam Neeson doing a guest turn. While I was in school people were sending me a lot of television material, but it was either try to get an ‘A’ in Health and Human Rights or read a script. I figured that since I was in school, I might as well go for the grade.” After wrapping up her scholastic studies, she got the call. “My agent called me with that special lilt in her voice, the one which all actors love to hear – ‘I think I found the one.’ I flew to Los Angeles and met with the producers. What’s not to love?” asked Judd, whose “abundant life” includes a husband – racing car driver Dario Franchitti, a global ambassadorship for YouthAIDS, a preventative program under Population Services International, and three fashion lines – AJ, Love Ashley, and Ashley Judd. Working in television isn’t entirely new, considering Judd landed her first acting job back in 1991 on. “Star Trek: The Next Generation.” Graduating to the big screen, a partial list includes Ruby in Paradise, Kiss the Girls, Double Jeopardy, Where the Heart Is, High Crimes, and 2004’s Cole Porter musical bio, De-Lovely, opposite Kevin Kline, that garnered her a Golden Globe nomination. Judd loves to fight – “I find it easy and rewarding,” she said. The role calls on her to mix it up quite a bit. In fact, Judd does the vast majority of her own stunts in “Missing,” and fluently speaks French and Italian. Judd wouldn’t reveal exactly what happens, but promised, “I will tell you this story will close by the end of the season. You will feel satisfied and you will think, ‘Oh, my God. Now it’s going there.”

Today’s Birthday: Albert Einstein, 1879 What are you, some kind of smartass? Well actually, yes, he was. Albert Einstein, a legitimate genius, is considered one of the smartest men who ever lived. He grew up in Munich, where his father ran an electrical supply business. Young Albert had a probing, curious mind; compasses fascinated him, and he often built models and mechanical devices. Needless to say, he excelled at school—in psychics and math, anyway. By 1895 he was obsessed with magnetic fields. By 1904 Einstein had captured the attention of the world’s scientists with his scholarly studies and papers. The following year, dubbed his “Miracle Year,” Einstein published four groundbreaking papers, on the Photoelectric Effect, Brownian Motion, Special Relativity, and the equivalence of Matter and Energy. He developed the Special Theory of General Relativity in 1911 and perhaps the most famous equation of all time: e = mc2, where c is the speed of light in a vacuum. Einstein earned the Nobel Prize in Physics in 1921. Though Einstein was a non-practicing Jew he was appalled at the changes in Germany under Hitler. By 1933 he had traveled extensively to Japan, America, and Palestine, and he decided to relocate to America and continue his studies there. Aware of the strides German scientists had made, Einstein felt it was his responsibility to alert the American government that Germany was working on a nuclear bomb. As a result the Manhattan Project was undertaken, and America actually developed and used the bomb first with the help of Einstein and other German scientists who had fled to the United States. Einstein died in 1955, aware that a surgical procedure on his heart might prolong his life, saying he did not want to “prolong life artificially.” A Princeton surgeon, Thomas Stoltz Harvey, removed Einstein’s brain during the autopsy without permission and preserved it for future study. Years later, after obtaining permission from Einstein’s son, Harvey sent slices of Einstein’s brain to various scientists around the world. Several offered suggestions on why Einstein seemed smarter than other humans. One deduced Einstein’s brain was denser, and the inferior parietal lobe larger.
ARIES (Mar. 20 - Apr. 20) Take your own advice this week and move ahead with courage and a knowing of yourself and what you believe. There are times when sitting on the sidelines is the best choice, yet for you right now being actively involved and putting yourself ‘out there’ is the best choice. Go and do and be! TAURUS (Apr. 20 - May 21) Boundaries and limitations are key. Know what you can do and what you can’t and then stick within that. You do not have to be all things to all people; you only need to get clear on who you want to be and what you are capable of. I know that you can do almost anything if you put your mind to it, but some things are other people’s responsibility and not yours. You need to learn when this is so. GEMINI (May 21 - June 22) Focus is key. Find a way to get clear on what it is you truly want. You don’t have to know how you can get from where you are to where you want to be, you only have to decide where it is you want to be. Get a clear vision of it and then sit back and allow the Universe to figure out how to get you there. Give up the idea of creating a plan. Simply get clear on where you want to go and then let the plan unfold before you. CANCER (June 22 - July 23) Stick close to those you love this week. Spending time with those closest to you and good times at home will give the greatest reward. If you have been thinking of investing in real estate this is a good time for that as well. For the rest of you, cook a cozy dinner for a couple of your closest friends or for those with partners. Go the distance and do the candlelight thing. Intimacy is the key. LEO (July 23 - Aug. 23) In weeks past you may not have been able to

see a clear direction. Be prepared, this is about to change. Those ideas that have been difficult to get a clear sense of should begin to fall into place. Those places in which doubt or some kind of fog seems to be making things impossible to get a handle on will gradually be coming into focus. Wait for the clarity for it shall come! VIRGO (Aug. 23 - Sept. 23) Judging others or yourself is not the best choice right now. Everyone has reasons for why they do what they do, including you. Try not to judge yourself or those around you. We all have dark sides, so why get into making ourselves or others wrong for their dark side? Use the ‘darker’ energy as a creative energy and create something interesting. Cut out paper dolls, just do something creative! LIBRA (Sept. 23 - Oct. 23) Things may seem to be moving a little too slow this week. Honor those things that are delayed for you will eventually find out why the delays are happening. Trust them even when you can’t understand. Know that everything is right on time! SCORPIO (Oct. 23 - Nov. 22) This week is an opportunity for you to face your greatest fears and overcome them. Choose to look at the past as a reason to be confident and trusting of yourself in the future, rather than as a reason to be afraid of what may go wrong. Allow the past to be the past and move bravely forward. SAGITTARIUS (Nov. 22 - Dec. 21) Looking at the cup half empty or half full is the key. If you want to believe your life sucks then I’m sure you can look at things to prove this to yourself. If you choose instead to focus on those things which are working and which bring you joy, you just may find that you enjoy

Method Begin by setting an oven to 400 degrees. While it heats peel and slice the apples. In a saucepot add the sliced apples, pineapple juice, granulated sugar, and 1 cup of water. Cook over medium high heat for about 30 minutes. Once the apples are on and the oven is hot, lay out the eight slices of bacon on a sheet tray lined with parchment paper. Cook the bacon for ten minutes or until crispy. Now begin to heat two large sauté pans over medium low heat. At the same time crack the eggs into a bowl and add the cream, vanilla extract, cinnamon, and 1/2 cup confectioners sugar and whisk together. Next add 2 tbsp butter to each sauté pan. Dip each slice of bread into the egg mixture and cook in the butter on each side for about four minutes or until golden brown on each side. While the toast is cooking on medium heat check the apples. When they are soft and the liquid is beginning to reduce, take them off the heat and mix in the maple syrup. When the toast is ready, spoon some of the poached apples and the apple syrup over the toast top with a couple pieces of crispy bacon and a dusting of powdered sugar and enjoy. www.chefjoecipro.com
