"I did not even know what 'Transgender' meant until i was in my 1st year of college". "For 19 years, the world perceived me as a man. So for 19 years, I experienced life as one. I experienced the sexism, micro aggressions, racism, homophobia, and violence as a racialised". Navya Singh a transmodel, a television actress and a Beauty Pageant winner ...... born in a small village Kathihar of Bihar. "Life wasn't that easy as it looks like" tells her story to our Chief Editor Bhavna Gupta over a telephonic interview...

Q: How was your early life? A: I was born as a boy in a Punjabi family. My parents were very happy with me... everything was normal till i was 5 years old. But i started realising that i am different, it was getting tough for me to find my identity. I loved using my mothers make up and it used to make me very happy. As the time passed, at the age of 14 my behaviour was more girlish... everybody started teasing me. I was regularly beaten up by my father because of my girlish attitude and for my love for dance. Nobody was understanding, what i was going through. At the age of 19 i told my mother that i want to change my SEX.... and she was shocked as hell. My father then decided to send me to Mumbai.... my aunts place. I was very happy that i am going to Mumbai "mere sapno ko to jaise par lag gaye the" my dreams got wings and now i can fulfill my wishes. Q: How Mumbai treated you? A: Mumbai has given me everything, my transformation from boy to a girl... and to chase my dreams. What my parents were not able to understand in 19 years my aunt understood in few hours. She took me to a doctor where i was told that i have a gender disorder. And i started taking my hormones injections from there and then. But life was rude to me and i had to leave my aunt's house as the people of their society had objection that why i am dressing like a girl... it will give bad effect on their children. So from there my real struggle started. Q: So.. how you survived in Mumbai? A: I had no money to survive, "khane tak ko paise nahi the", i had no money for food also, i survived on only one vada pav for whole day. The biggest challenge for me was to earn money which i needed for my body transformation. I met one trans girl Shonali who was a bar dancer, i stayed with her for sometime and joined my trans community. I started dancing at private parties to earn money and joined a NGO to earn some extra amount for my treatment. At one of my dance shows i came across a producer who appreciated my looks and my talent helped me give auditions for TV shows. I not only won two beauty pageants in 2013, but also got a lead role in one of the episode of famous TV series "Savdhaan India". People of my village who used to curse me... started praising me. My life changed overnight. "Me hijra se celebrity ban gayi thi", i was a celebrity for everyone not a transgender anymore (Laughs). After that there was no looking back for me. In 2017, i walked the ramp for Lakme India Fashion Week, i did an advertisement shoot for One Plus Mobile and now the promos are out on TV for "Shaadi ke Siyape". Q: How you dealt with rejections? A: OH it was really heartbreaking. I shot for Dance India Dance, but they never aired my audition because i am 09 INDIA ABSOLUTE August 2019 First Issue INDIA ABSOLUTE 11
transwomen. I got selected for MTV Ace of Space... but the team never called me back to join the programme. Then somebody told me about Trans Queen India pageant... there i met the founder of pageant Ms Reena Rai. Unfortunately i did not win the pageant but i got a loving mother (REENA RAI). First time i got so much media attention, that i got invite from Ted Talk... "Main haar kar bhi jeet chuki thi" despite losing the contest i was feeling like a winner (smile). Q: What is your take on casting couch in industry? does it exist? A: Yes very much...... i came across this several times. In 2016 i remember when i gave my first audition, i was told to remove my T-shirt in front of the camera as i was told its the demand of role. I removed my t- shirt and i was standing in my bra in front of that camera and a guy came to me and started touching my private parts. I panicked. I refused to compromise with him that's why he rejected me. I once thought of complaining about this incident, then i thought everyday lots of girls go through the same situation in this industry, nobody bothers to listen to the ... and i am a transgender, i knew it already that there will be no action on my complaint so i chose to keep quiet.
Q: Anyone special in you life? A: Yes, i am in a relationship from last 9 years and i share a beautiful relationship with him. He came into my life when i was nobody, he is my guiding force and always makes me feel special. Q: What are your future projects? A: Bollywood of course... i have recently wrapped up an International album, it will be out soon. If all goes well you will see me in a movie with Akshay Kumar, i am keeping my fingers crossed for that project. I am featuring for MYNTRA as well. Q: Any message for people? A: Stop humiliating transgenders, start respecting them... we are humans and equally talented as you all. So accept us as we are. I have a message for Honourable PRIME MINISTER NARENDRA MODI ji ..."hamain nazar andaaz na kare" please do not ignore us. I wish someday he will be doing our "Mann ki baat"

Trans Mom I was called as "MAD" when i told everyone about my project "Miss Trans Queen India". I was threatened by the trans community, i was called as fraud, my participants were threatened but i refused to step back and courageously moved on to chase my dreams. "These trans are disheartened, they crave for acceptance....they only want LOVE" says Ms Reena Rai, Founder of Miss Trans Queen India. In conversation with Bhavna Gupta ...Ms Reena Rai takes us through her emotional journey of "Making of Trans Queen India."...
Q: How did Trans Queen India concept happened? A: This actually came out from my heart. Everyone does normal stuff, but i am born to do something "hatke" (unusual). I am from a conservative family of Delhi 6, where girls are not even allowed to step out from their houses without parents permission. I told my concept to my mother and she laughed.. but she said "i know if you have thought about something, no matter what, you will do it ". These words were enough for me to proceed further. Q: What hurdles you faced during the Trans queen India season 1? A: "OH MY GOD"....At one point of time i wanted to commit suicide..... i was called as fraud. Trans community was not trusting me at all as they were amused that why i want to do beauty pageant for trans why not for normal gender. There were allegations on me that i will take their money and will fool them. I remember i had 16 participants and all were getting threatening calls from trans community to leave my pageant. But i didn't give up...and when i completed my first season whoever were discouraging me, cursing, now they were all appreciating me. That moment i felt like a winner. Q: How you see the success of Trans Queen India? A: I remember one restaurant denied me space... for my curtain raiser event for my season 1. But now when....my winners are all over making headlines in media, they are First Issue INDIA ABSOLUTE 14
doing television shows, they are on big ramp shows as show stoppers, they are being called as honourable guests at events, some doing tamil movies..... earlier those who were feeling ashamed to stand next to these transgenders, now coming to have a selfie with them ...the crowd gathers just to have glimpse of them. It feels so proud that despite of so many difficulties i managed to earn respect for them (Smile). Q: You earned them so much respect ...so in what gesture they thank you? A: "I am Trans MOM" a trans sister...... what better gesture you can ask from these people who are abandoned by their own families. They Crave for LOVE, they crave for acceptance. I now teach people that they will not harm you ...love them, accept them with your heart and in return they will give you the same amount of respect. Q: Anything new in Trans Queen India 2019? A: Yeah...This time it will be more of a celebration rather than pageant. We all are in a celebration mood, so the theme will also be based on bright colours. We will be sharing the success stories of our winners to motivate upcoming participants and to show the world that how Trans Queen India brought a change in their lives.

M
onsoon is the season of joy, with the end of scorching heat, monsoon brings frequent rain spells to enlighten our moods. But along with the joy and rains, the humid moisture of monsoon makes an excellent playground for breeding virus, bacteria and thus an onset of many health problems including cold, cough and upset stomach. A little caution in ones diet provides an easy way to protect overall health and boost our immunity to avoid all health related complications. The first and foremost action is to increase the overall intake of fresh water. Water is one of the best cleansers for our body. We lose a lot of water in perspiration as the weather is humid and we usually get dehydrated during monsoons. On the other hand drinking a lot of water also helps the body wash out the bacteria and allergens from our body with ease. Apart from plain water consuming a good quantity of green tea such as tulsi, jasmine or hibiscus tea is an excellent way of First Issue INDIA ABSOLUTE 16
cleansing your system. It is advisable to include soups of vegetables or watery dals made at home, in your regime as the temperature starts dropping. Monsoons are also a time which increases the kapha dosha in the body. For balancing the dosha natural herbal concoctions can be made at home such as one containing ginger, black pepper and tulsi leaves. Taking such a concoction once or twice daily would clean out the system of any pollutants. It is also essential to watch what you eat during monsoons. The first rule of eating during monsoons is to eat hygienic. This means avoiding street foods like Bhel, golgappa and chaat which may result in diarrhoea. Do not eat a lot of fried stuff like pakoras which are a common delicacy during rains. Try to eat the seasonal fruits such as apples, strawberries and bananas. And bitter vegetables like karela, parwal and bottlegourd are the perfect score during monsoons. Try to use ginger,
garlic and asafoetida in all your preparations to boost your immunity and improve your digestion. It is also advisable to reheat food before eating it, try not to eat foods straight out of the refrigerator. For those who prefer to consume a little alcohol, consumption of red wine is a good way to keep oneself warm and well during monsoons. It is essential to be careful with your basic hygiene too including regular washing of hands. Also make sure to wash all fruits and vegetables before consumption and boil drinking water to stay on the safer shore. Enjoy monsoons but remember health comes first.

Pura Tanah Lot
About 20 kilometers northwest of Kuta, Pura Tanah Lot ("Pura" means temple in Balinese) is one of Bali's most iconic temples thanks to its spectacular seaside setting on a rocky islet surrounded by crashing waves. For the Balinese people, it is one of the most sacred of all the island's sea temples. (The largest and holiest Hindu temple in Bali is PuraBesakih, but recently local hagglers have been harassing visitors.) Every evening, throngs of tourists from Kuta, Legian, and Sanur find their way through a labyrinth of lanes lined by souvenir sellers to watch the sun setting behind the temple. Pura Tanah Lot was built at the beginning of the 16th century and is thought to be inspired by the priest Nirartha, who asked local fishermen to build a temple here after spending the night on the rock outcrop.
Mount Batur Every day in Bali's predawn darkness, hundreds of visitors begin the trek up the 1,700-meter summit of Mount Batur to watch the sun rise above the lush mosaic of mistshrouded mountains and the caldera far below. This sacred active volcano lies in Kintamani District in Bali's central highlands, about an hour's drive from Ubud, and the hike to the summit to watch the sunrise has long graced the list of top things to do in Bali. The hike along the well-marked trails is relatively easy and usually takes about two to three hours. Guided treks typically include a picnic breakfast, with eggs cooked by the steam from the active volcano. On a clear day, the views are spectacular, stretching all the way across the Batur caldera; the surrounding mountain range; and beautiful Lake Batur, the island's main source of irrigation water.
Uluwatu Temple Presiding over plunging sea cliffs above one of Bali's best surf spots, Uluwatu Temple (PuraLuhurUluwatu) is one of the island's most famous temples, thanks to its magnificent clifftop setting. In Balinese, "Ulu" means "tip" or "land's end" and "Watu" means rock, a fitting name for the location of the temple on the Bukit Peninsula along the island's southwestern tip. Ubud Monkey Forest Only 10 minutes' walk south of the town center in Ubud, the Monkey Forest, also known as the Sacred Monkey Forest Sanctuary, is one of the top attractions in this tourist town and a must-see for animal lovers and photographers. Besides the entertaining troops of grey long-tailed macaques that make their home here, a large part of the appeal is the evocative jungle setting where the monkeys roam free. Paved pathways lead through thick forests of giant banyan trees and nutmeg, where moss-covered statues and ancient temples loom through the dense foliage, imparting an almost mystical feel. The forest is intended to represent the harmonious coexistence between humans and animals. It also conserves rare plants and is used as a location for researching macaque behavior, particularly their social interaction.
The Sidemen Valley About 90 minutes' drive northeast of Ubud, the emerald-hued Sidemen Valley evokes the feel of Old Bali, before the tourist throngs descended on the island. Sleepy villages snuggle in the valley amid cascading rice terraces, and cloud-capped Mount Agunglooms in the background like a benevolent sentry. A highlight of a visit here is strolling around the small villages, surrounded by farmland and rice paddies, where the locals still tend to their traditional activities. TirtaEmpul Temple Dating from around 960 AD, TirtaEmpul Temple (PuraTirtaEmpul) in the lush tropical forest of Central Bali, offers a glimpse into a sacred purification ritual. This important temple complex, a national cultural heritage site, is divided into three courtyards, and the focal point is the large rectangular pool, fed by a holy mountain spring, where locals come to pray and soak in the healing waters that gush from a series of sculpted spouts.

Forex was driven by concerns over a pending turndown in global growth as the ECB announced that fresh stimulus is on the way, sinking the euro to a fresh low of 1.1101. The U.S. dollar picked up a bid and the DXY rallied to the highest levels since mid-June with eyes now on
the 98 handle ahead of U.S. Gross Domestic Product and Federal Reserve interest rate decision. EUR/USD has stabilized around 1.1150 after hitting a new two-year low of 1.1101 after the European Central Bank opened the door to cutting rates and QE but refrained from imminent action. The currency pair swiftly recovered afterward. President Mario Draghi has called government to do more. UK: New PM Boris Johnson's laid out his ambitious Brexit plans including ditching the controversial Irish backstop. His speech in parliament was swiftly rejected by the EU's Jean-Claude Juncker and Michel Barnier, with the latter describing Johnson's approach as "combative." GBP/USD remains depressed below 1.2500. Japan: Tokyo inflation figures came out 0.1% above expectations, serving as encouragement of sorts for the Bank of Japan. Japanese Chief Cabinet Secretary Suga is quick to come out on the wires, denying the Kyodo report that Japan could rule to remove S. Korea from white list trade status as early as Aug 2nd.
Suga noted that there is nothing decided yet on the time frame of a decision on removing South Korea from trade white list. USD/JPY extends its correction from two-week tops of 108.75 to near 108.60 region while USD/KRW trades better bid near 1,183 region. Geopolitics: Tensions around North Korea and Iran persist but fail to move currencies. US Secretary of State Mike Pompeo says the door is open to negotiations with North Korea despite the rogue regime's recent missile tests. Cryptocurrencies are on the back foot with Bitcoin falling below $10,000 once again. Markets ended the July F&O series on a woeful note as both the Nifty50 and Bank Nifty index crashed. The Nifty50 index slipped below the 11,300-mark to close at 11,252 as both Q1 results of major companies (declared so far) and the Union Budget disappointed marketmen, especially foreign portfolio investors. The Nifty50 index tumbled 4.98 per cent this series - the worst since October 2018; Nifty Bank and Nifty Midcap's fall in July series was also the biggest in 10 months. The Nifty50 futures witnessed a rollover of 73 per cent, which is much lower than the last month series (80 per cent); the three-month average was 75 per cent. Similarly, the
Bank Nifty also saw a rollover of 76 per cent, much lower than the last month position of 83 per cent, and the three-month average of 80 per cent. Marketwide rollover also slowed down to about 85 per cent, from 90 per cent earlier. However, the comforting factor is that despite such a sharp sell-off, India VIX, the volatility index, fell by about 1 per cent at 12.635 per cent, indicating Nifty could have only limited downside. Can we hedge our trades in high volatility market ? Yes, Definitely. One should always keep in mind that FII investment at a time would be only in single market segment. For Example, when there is ECB announcement in the market, Liquidity in Currency of that country with be huge and there would be huge inflows of cash. At this time, because of idle cash fund in hand people tends to invest in Equity market. So that they would be buying in Equity, Selling in currency of that country and buy in currency of other country for conversion where people wants to invest money. Live example is on date 25th July 2019: ECB was announced by European Central Bank after market, so at this time on 26th July 2019, Equity market in India was positive, EURUSD was gap down. Accordingly we can hedge the position on the basis of news.

Kajal Vihir While I was adamant to go to Matheran, which happens to be one of my favorite places during the wet season, a friend suggested Anurayee in Shahapur. It is an eco tourism resort. A perfect getaway for people who look for that weekend of little peace and a time out from hustle and bustle of ever crowded Mumbai. And of course, for the ones who have a thing for simple living and complex shades of green! Every turn after leaving the highway was like endless mood swings of eternal feminine energy colored in green. And in it, nestled some small and smaller houses of the local folks. A village called Kajal Vihir. To me sense of places (civilized) is inspired by its scapes that hold both natural and human elements. So the inhabitants of a place are as important as the place itself. The village promised a few interesting photographs of the people of this land while we made our way towards the resort. And when our car came to a halt at our destination, I felt it was a good find, this place!

A brief walk into their lives… A moment or two… While the children remained innocent and oblivious to concerns of grownups, the elderly were vocal about their issues. And the problem was as basic as everything else that there was. Rain! Water! Although a river flows abundantly throughout the year, not a kilometer away from the village; the concern is its diversion or the infrastructure it takes to water their farms. Many of the people are tribals from Moha Pada, which is cut off by the river from the main body of Kajal Vihir. The people here are even simpler with more raw lingual skills and chiseled by life’s ever demanding challenges. They have got to be some of the fittest as they are the closest to nature. And nothing is as challenging as living out there. Even their canine friends are lean like their masters. However they are not as welcoming as the people. One gave me a hard time while I walked into his territory. Anyway, he was shushed away by his master. The master, the man folded his hands in a formal ‘namaskar’ along with a whole hearted smile. It showed that good mannerism is a condition and not a result. He spoke about his concerns and life like a thorough gentleman with his unique speech. The issue was still the same… Rain! Water! But this man didn’t know frowning. He mentioned a good man from ‘Dadar’, who offered help and his efforts, brought enough electricity to run the show. Also he donated few water pumps to keep the farming alive. While he spoke I saw a structure being built. On asking him about it… he said it was a poultry farm with utter enthusiasm and that it will be ready in fortnight. I wished him luck and moved on. On the morning after, while visiting Kajal Vihir, I realized that domestic fowl, mainly chicken is the pet of the land. And people shared a rather warm relation with their pets. Fed them with their own hands like children of their own! Everything about the place was uniquely simple and full of interesting visuals. On asking an elderly person who was sitting in the living room of his house, doors wide open and fixing his fishing net… what was his livelihood? He said “rice! And rice needs rains”… “If it was raining now” he said “we wouldn’t be sitting at home” All this with a smile of a person with undying hope. A common hope that keeps all of them bound together like a big family. Now that the relentless wait is over and rains have finally managed to immerse their farms for rice to grow, it would be a pleasant sight to see their houses locked.

Niraj Gera Niraj Gera, is an internationally acclaimed award-winning photographer, a social reformer & a motivational speaker. Gera & his associates are already in touch with Union Health Ministry of India regarding making a law regarding the suggestion made through this online petition.
Silenced by Society The society in general has been discourteous to the idea of opening up about anything even remotely related to periods. Consequently, women and specially young girls have been conditioned to not only live with the pain they bear but also to suppress any apprehensions arising out of this natural process. Seldom do we see a girl seek help when in physical or mental discomfort due to periods. How can we expect a healthy society when the bearers of it are themselves kept away from adequate knowledge and training about something they have to live with for a lifetime? Some women are fortunate enough to be able to afford a hygienic period unlike many others who outnumber these privileged women. There are women in various parts of this world, who have never used a pad. Instead, they have used materials which may give chills down your spine. Cloth may still be a luxurious options for those who use pads made of hay, ash, leaves, mud and soil and such other life threatening materials, not realising what it might do to their body. It is not only heart-wrenching but also terrifying to even imagine what they live. Why would one opt for something so dangerous if they are equipped with the knowledge of its impacts and are provided with far more safer options than those? Even in developed country like United Kingdom 1 out of 10 girls are using unhygienic substitutes of sanitary pads such newspaper, toilet paper, socks etc.
The photo tries to show how a woman has been conditioned to tolerate all kinds of labels thrown at her by the society across the globe. She has been tagged impure, cursed, untouchable, unholy and much more but is always expected to accept all of it with dignity. The photo is an attempt to show the helplessness and agony of those who think they are not empowered enough to break these shackles of labels imposed upon them and that there will be no one to stand up for them.�
Period Poverty is a term coined for lack of access to sanitary products, menstrual hygiene education, toilets, hand washing facilities and waste management due to financial constraint. Even today in rural India woman of the same family wash and use the same cloth on their periods. Pad is considered a luxury and so they believe that cloth, ashes, husk sand, newspapers etc. are good enough for something dirty like periods. Unhygienic menstrual conditions often result in women developing health problems which are further aggravated due to their inability/unwillingness to seek medical help on time. Nearly 60,000 cases of cervical cancer deaths are reported every year, two-third owing to poor menstrual hygiene and women living below the poverty line are more vulnerable than the rest.

The webster’s dictionary defines the word ‘Myth’ as ‘a widely held but false belief or idea’. In this brief note, I shall decode sum of the myths that are related with money management.
If it is expensive, it must be good! Brand consciousness has crept into our society so much that most tend to believe that for something to be good it has to be expensive. We all need to learn the art of ‘value buying’ and develop the attitude of ‘delayed gratification’ in order to be excellent with our buying decisions. Value buying involves understanding the products better in terms of the quality and utility it delivers and comparing that with other options that are available. Delayed gratification focuses more on the ‘buying what you seriously need’ philosophy. Once you make up your mind to buy something, and then consciously delay that decision by a few hours, days or weeks, most often you may not end up spending that money as the impulse of buying wears away with time. Both these approaches save a lot of money in the long run.

This is my bonus money after all! Many people think the ‘unexpected income’ that comes to them in the form of incentives and bonuses can be used in un-wise or irresponsible spending. And they give such expenses the name of ‘guilt-free spending’. How can the very expectation of money coming in or not differentiate the perceived value of that money? Also, how does blowing away of such unexpected money not hurt one and keeps the person guilt-free? It sounds very illogical, but it’s a very common occurrence and therefore must be understood at a deeper level. The reason lies in a behavioural bias called ‘Mental Accounting’. We tend to keep different compartments for incomes generated from different sources and value them also differently. This is why lottery winners seldom remain rich for a long time. Therefore we need to always keep a holistic view regarding our incomes and account for expenses purely based on the utility that it brings about and not as a compulsive one.

A home loan is a burden and should be paid off asap!
If you are old school and love making FDs in banks, you are taking a huge risk known as concentration risk. This means too much of your money is getting concentrated in just one place and if the bank fails all of the money is gone! Ok, not all will be gone thanks to the insurance provided by the Deposit Insurance and Credit Guarantee Corporation which covers your deposits for upto Rs. 1 Lakh per bank! Yes, you read it right, it’s just Rs. 1 Lakh per bank irrespective of your deposit amount.
Home loan is the cheapest loan one can get and it would be very unwise if people repay it prematurely. Agreed, that EMIs have a very high irritability quotient and feels like a huge burden. However if you understand the term Net-worth , you will not feel the burden of the home loan at all – at least from a logical stand point. Net-worth is the difference between your assets and liabilities. For now, let’s ignore the value of the home that you live in as you don’t intend to sell it off to pay off the loan. However, you are saving up some money from your salary or business income to pay off the loan. Assuming that you have an outstanding loan of Rs. 25 Lakhs and accumulated savings of Rs. 10 Lakhs, your net-worth will be Rs. 15 Lakhs. Now, if you use the savings amount to pay off the loan, your outstanding loan amount will become 15 Lakhs and your savings amount will be zero. Even now, if
you compute your net-worth it will remain to be 15 Lakhs! Then what changed before and after you paid off your loan? Logically, nothing changed except for your feeling of happiness for which the reason is unknown! There are a few advantages of not succumbing to this urge to finish off the loan. One is that you can create a nicely diversified investment portfolio with the money that you accumulate which possibly can earn you better returns than the interest rate you pay to the bank. Second advantage is that you can continue to enjoy the tax break that you get on the interest paid. The third and most important advantage is that this money in the portfolio is available to you in the event of any need. If you pay off the loan, you will have no savings in hand and in the event of an emergency you may have to even borrow money at a much higher rate of interest!
The primary goal of investment is to ‘maximize’ returns! You must be wondering why this is a myth in the first place. Isn’t returns what we invest our money for? Absolutely! But the pursuit of maximizing returns is lopsided as it is not accounting for the risk involved in the investment. Investment risks have a tendency to provide superlative returns as well as erosion of capital. Therefore the primary goal of investment should be to optimize the risk undertaken to suit the purpose for which the investment is being made. If a goal can be achieved with a 7% rate of return, why expose it to a risk equivalent to 20% rate of return which if back fires can affect the fulfillment of the goal itself? Alternatively, if the goal requires your investment to grow at 15% rate of return for it to be accomplished, what is the point in investing the money in a 7% return instrument as it surely would lead to a shortfall. There are many more myths that need to be busted, but these are the most important ones that we come across in our daily lives.

The Waffles Hut, serves freshly baked eggless hand crafted Belgian Waffles, the perfect sweet bites located at small kiosks in malls and on high street locations, The Waffles Hut chain now has four self-owned restaurants and four restaurants run by franchise across the country. Mr. Bhosale was in London for 5 years footing his career in restaurant and QSR industry. After relocating back in India in 2012, he joined back his family import and export business, but his love for sweet and aroma of waffles never left his mind, that’s how he thought of introducing the concept of Belgian style Waffles in Pune. Along with accomplishment in family business, he decided to venture into the Waffles – thick doughy, and with beads of sugar that caramelize in the waffle iron. Started out with a single iron cast machine and now The Waffles hut, has more than 30 employees across four locations. It all started with the Waffle. “I didn’t know where this journey would take me, I kept on adding products, based more on necessity than on choice. French fries and now we serve mini pancakes and waffle sandwiches too. Worked as a solo entrepreneur in the beginning? Were there any unusual challenges or advantages? At the beginning I was doing this part time as I was pursuing another venture, I was building the brand of my own without any extended financial or investor’s financial support. I would work on my family business most of the time and on Friday's I would make the waffle dough in the house kitchen utilizing household equipment’s. Everything was challenge I had little background knowledge in food industry and I had no
idea what I was doing, I learned everything by doing, I had never baked a waffle in my life before I started The Waffles Hut. Starting out as an entrepreneur, where were some of the biggest time management challenge’s faced? What were your strategies for keeping up with the work of both running and growing the business? Strategy? I had no strategy. The original plan was to do this temporarily. I was only doing this on the weekend for my passion and kept going with the other projects. We could never get the second round financed and over time I spent more time baking waffles. The “Strategy” was simple one of not letting an opportunity go by unexplored. And in a very short period of time many people knew about the taste of The Waffles Hut. I was also doing a lot of different events for brand awareness.
Growing from a single iron to nine locations is a significant feat of scaling as concept. How have you dealt with challenges associated with growing and scaling the Taste of Belgium Business? Originally there was no concept. There was just the waffle. I think the concept started to take shape with the first QSR outlet in 2012 at Abhiruchi Mall at Sinhgad road. The opening was quite rocky, I didn’t know what I was doing. I kept on trying to hire people and fine-tuning our offerings. I was not sure how people would accept the taste of Belgian Style caramelized and chocolatiers waffles. But soon later opened one after another restaurant at Seasons and Phoenix market city Malls, one of the prominent malls in Pune, Mumbai and Bangalore. We began to build the manufacturing unit and corporate office and hire higher caliber people. We are now working towards the next phase of growth, patching the foundation,
rewriting the operation manuals, and defining the growth strategy. Scaling is only possible if you have the right people on the bus. Earlier all the outlets were selfowned, but now we off lately started following the franchise model and while it is a great model for scaling the business in a short time, it also has the advantage of leveraging the Franchisees local expertise. In a new city, no one knows the area better than the people living right there, and there is where the local expertise of franchise owners come into play. What personal time management tools and /or strategies do you use to keep up with the busy life of an entrepreneur? Over time, I have tried to define more rules and less options. The key to me to spend time away from the business. The number one rule that I applied soon after I opened the first kiosk was to work ‘ON’ the business and not ‘IN’ the business. It’s important to stay healthy and happy. I ran with a team and we have set schedules. I never missed a training, if you have options, not rules, you always have the option to do something else. I try to create more routines; it helps to get things done. But as the organization changes and my team grows, my role has changed a lot and that’s a work in progress. I'm constantly trying to be better organized. It’s a tricky as it’s not in my nature. I don’t work a typical 8 to 5. To further carry my passion in music industry I am learning.

How do you define success for yourself as an entrepreneur? What metrics do you use to measure success? I like to think of success as being able to achieve a balanced life and have the business run without me. If I don’t need to be there and things go well, the business is successful. There is always room for improvement and the biggest enemy of success is complacency. So I'm not saying I am not involved in the business as we are constantly trying to get better. But it’s good to be able to step away and know that things are not going to collapse. What is the top quality or value that you feel helped you become a successful entrepreneur /restaurateur? Resilience (you have to keep trying, running a business is not easy and there are plenty of failure to failure without loss of enthusiasm). If you let me pick two, I'd add adaptability. The business I'm running now is totally different from what I had in mind originally. What has been your best day as an entrepreneur? Worst Day? Difficult to pick one but two things have happened several times. When someone comes to me and tells me that I was the inspiration behind them starting their own business. The second one is whenever we promote someone from an hourly position to a management position. I get teary when I think about a few people who totally turns their lives around, started working for The Waffles Hut has they had no idea what to do with their lives, and then found a purpose a career and grew as cooks and managers. Worst day: All days can never be good days, it’s about life and we need to cope up and prepare to turn the bad days into good days. As in business we have lots of ups and down, as its very customer centric industry and in 7 years restaurant industry as faces lot of changes due to digital marketing and online portal system as prominent forum as customer choose their favorite delicacy based on ranking and the way its digitally projected.

What advice would you give to other entrepreneurs starting out in the restaurant business? Think of your business as a collection of processes, not as a restaurant. Many people will open restaurants because they're good chefs. Building processes and make yourself redundant; too many people end up failing as they try to tackle everything. Try to work and be responsible as much as possible on the business and not in the business. At first you have to do it all, no doubt, but it’s not sustainable in long run.

Ingredients 1 kg Chicken Curry Cut, 4 tbsp Ghee, 1 cup Onion Finely Chopped, 5-6 Cloves Garlic Crushed, Salt to taste, 1 tsp Turmeric Powder, 2 tbsp Tamarind Paste For Dry Roasting: 1 tsp Cumin Seeds, 1 and 1/2 cup Fresh Coconut Grated, 10-12 cloves Garlic For Ghee Roasting: 2 tbsp Ghee, 3 tbsp Coriander Seeds, 1 tsp Poppy Seeds, 1/4 tsp Fenugreek Seeds, 1 inch Cinnamom, 1 tsp Black Peppercorn, 3-4 Cloves, 2025 Bydegi Red Chilli, 10-12 Guntur Red Chilli For Tempering: 2 tbsp Ghee, 1/4 cup Onion Thinly Sliced Instructions 1. Dry roast the ingredients for Dry Roasting in a pan until slightly browned. 2. Remove in a plate and let them cool. 3. Heat ghee for ghee roasting in a pan. 4. Roast all the ingredients listed under ghee roasting until they are nicely browned and fragrant. 5. Remove the ingredients in a plate and let them cool. 6. Add the dry roasted ingredients in a blender and blend to make a smooth powder. 7. Do not add water. 8. Remove the mixture in a bowl. First Issue INDIA ABSOLUTE 60
Mangalorean Chicken Sukka is a dry dish made using fresh chicken, masalas, grated fresh coconut and it is generously tempered using ghee as well as onions. Course - Main Course Cuisine - Indian Prep Time - 15 minutes Cook Time - 1 hour Total Time - 1 hour 15 minutes Calories - 591 kcal
9. Add the ingredients for ghee roasting in a blender and grind to make a smooth paste. 10. Add little water while grinding. 11. Keep the mixture aside. 12. Heat 4 tbsp ghee in a karahi / pan. 13. Once the ghee is hot, add onion and garlic and fry until onion turns translucent. 14. Add chicken and fry on high heat for 3-4 minutes. 15. Add the ghee roasted masala paste along with a cup of water and salt and cover and cook the chicken for 15-20 minutes or until almost done. 16. Now add the dry roasted masala powder and cook for another 10-12 minutes until the chicken is cooked and the masala is dry. 17. Add tamarind and turmeric powder and cook for 3-4 minutes. 18. Heat ghee for tempering in a pan. 19. Add sliced onion and fry until browned. 20. Pour the tempering over the chicken. 21. Serve hot.

Ingredients To grind into a paste : 3 tbsp Oil, 8-10 Dry Red Chillies, 2 tsp Coriander Seeds, 8-10 Black peppercorns, 1/2 tsp Fenugreek Seeds, 1 tsp Cumin Seeds, 3 tbsp Grated Fresh Coconut, 8-10 cloves Garlic Chopped, 1 tsp Ginger Chopped, 1 cup Onion Sliced For the curry: 2 tbsp Oil, 10-12 Curry Leaves, 1 cup Onion Thinly sliced, 3 tbsp Tomato Puree, 1 tsp Turmeric Powder, 1/2 tsp Garam Masala Powder, Salt to taste, 1 kg Chicken Curry cut, 1/2 cup Tomato Puree, 3 tsp Tamarind Paste, 2 cups Thin Coconut Milk, 1/2 cup Thick Coconut Milk Instructions To grind into a paste 1. Heat 1 tsp oil in a pan. 2. Roast the dry red chilies, coriander seeds, peppercorns, fenugreek seeds, cumin seeds, coconut, garlic and ginger until they turn brown. 3. Heat the remaining oil in the same pan. 4. Add onion and fry till onion is slightly pinkish. 5. Cool the roasted ingredients and add them in the blender. 6. Blend to make a smooth paste. Use little water if required.

7. Keep the paste aside. For the curry 1. Heat oil in a pan. 2. Add curry leaves and fry for a few seconds. 3. Add sliced onion and fry till pinkish. 4. Now add turmeric powder and garam masala powder and fry for a few seconds. 5. Add chicken and fry on high heat for 3-4 minutes. 6. Add the ground masala paste and fry for a minute. 7. Now add salt and thin coconut milk and cover the chicken till it's tender. 8. Add tomato puree and tamarind paste and cook for 2-3 minutes. 9. Add the thick coconut milk and switch off the heat. 10. Garnish with fresh coriander and fried onions. 11. Serve hot with rotti. Recipe Notes To eat Kori rotti, place pieces of Rotti on a plate. Top with curry and chicken pieces. This curry tastes with anything like rice, laccha paratha, neer dosa or even plain chapaties. So just in case, Rotti is not available to you, go ahead and enjoy the curry with other options. Prep Time - 10 Minutes Cook Time - 15 Minutes Soaking Time - 3 Hours Total Time - 25 Minutes Servings - Jar Course - beverages Cuisine - Indian
Ingredients • 1½ cup 200 grams kokum / bhirand / muragalu / punarpuli / kaatampi, dry / fresh • 2½ cup water • 2 cup sugar • ½ tsp cumin powder / jeera powder • ¼ tsp pepper, crushed • pinch of salt INSTRUCTIONS 1. Firstly, in a large bowl soak 1½ cup kokum in 2 cups of hot water for 3 hours. 2. Transfer to a blender and blend to coarse paste. 3. Take the kokum paste to kadai. 4. Add 2 cup sugar and ½ cup water. 5. Mix well-dissolving sugar completely. 6. Further, add boil for 10-15 minutes stirring occasionally. 7. Boil until the mixture thickens and forms syrup consistency. 8. Turn off the flame and add ½ tsp cumin powder, ¼ tsp crushed pepper and pinch of salt.
9. Mix well and pass the mixture through a sieve. 10. Make sure to squeeze of the pulp completely. 11. Now kokum syrup is ready. refrigerate it and use as required. kokum syrup stays good for 2-3 months when refrigerated. 12. To make kokum juice from kokum concentration, take few ice cubes in a glass. 13. Pour 2 tbsp of prepared kokum syrup / kokum concentration. 14. Pour 2 cups of cold water and mix well. 15. Shikara Ride Just a couple of hours before the light was about to end its shift, we decided to do a trip from Nagin Lake to Dal Lake and back. A round trip not less than 2 and half hours… While the others just went for a brief ride in their Shikaras around Nagin Lake, we decided to make full use of whatever was remaining of day light. Our shikara was the last one to arrive; instead it should have been the first one to leave. Moreover, being Indians we would find all the ways to save up a few bucks. In this case; we six made a collective decision, of overloading a Shikara of a capacity to cater to max five people with six. Plus there was the old man’s consent to give us confidence. THIS old Kashmiri man of about 50-55, if not more, appeared to be a prodigy in his own capacity. Initially he did not welcome the idea of doing a full round trip at that hour. Later we found out he could have guided a shikara through the lakes even blindfolded. Experience showed in his eyes and the wrinkles that were not there. A man of 60 can easily be mistaken for a man of 45-50 here. Their livelihood is based on endless rowing since childhood. That is a strenuous workout for life. In addition the air they breathe is many times better than what we do and hence they apparently don’t age as much.

Wind blew swift and the twilight began to show its charm. Somewhere long over the hills scattered a few dark clouds, too few and too far to worry. The man rowed with confidence. And we all were busy gazing all that appeared. Serene! Terns fluttered their wings, airborne and dived at once to catch what the lake had to offer before the Sun called it a day.

The passing shikaras and the people it carried added to the life of lakes. It was there when we all said together for the first ै तो, यह है यह है यह ह!ै !! And this time… अगर ज नत कह ह… became a slogan for the rest of our journey through Leh.

As we crossed over from Nagin Lake to Dal Lake… like how a headline on India TV would read काले बादाल ने क ज नत के शान म गु ताखी Late evening downpour, stormy winds and loud thunders filled everything that was merry just a few moments back. The far away clouds weren’t far away after all. With a possibility of getting our petite, overloaded Shikara flipped by the swift winds there was no sense moving on. And the halt near Meena Bazaar!

Also there was the occasional lightning which was much dominating than the negligible light of bulbs. With every passing minute and stormy weather the man made lights started to succumb to darkness. Much time passed‌ After it became calmer (still drizzling) it was pitch dark and an hour and half away from abode. Thanks to our old Kashmiri fellow (I am very bad with remembering names) with the Shikara who knew every nook and cranny of both the Lakes even in the dark. Like a master he maneuvered our shikara in darkness. All we could do was to sit tight and hear the gushy water. He rowed through the infamous and rather stinky lanes of Dal Lake. The smell and lack of visibility made this adventure even more thrilling. After all no adventure is adventure without a sense of fear and thrill. Every one of us
remained quiet and spoke whatever they wanted to, in their minds. In my mind; one out of the myriad thoughts I had, was that of the plants that grew limitlessly underneath the dark water. I thought THIS Lake was actually the Dead Marshes found by Gollum, which lead him out of Mordor. I thought foul things lay underneath (crazy mind games). However, we went on‌ The man picked up help on the way to row harder. And seven became eight. Though we gained momentum we also gained weight. We were chasing the distant lights on the houseboat. And our chase got us closer to the destination with every passing moment. Before we imagined it would, the thrill was over! We were safe and back. And it was an unexpected yet awesome
