Making the most of your leisure time Some say print is dead. While statistically that is hype, I am thankful on one hand that it’s not true — although you may be reading this on an iPad, laptop, desktop computer, or your smartphone. But, the statement on its own is irrelevant. We are not in the print business, newspaper business, or magazine business — we are in the business of communicating to people how to make the most of their leisure time. As a result, we change our form of conveyance as society changes the way it receives information. Just as having a new child doesn’t make you love your prior child any less, new ways of communicating don’t always diminish previous methods. But, like the additional child, they all compete for your limited time.

Buying time Years ago, my old friend Mike Fleming said, “No matter how much money you have, you can’t buy more time.” Bill Gates may have millions of times the wealth I have, but he’ll never live to be 10 million years old. Granted, he can spend less of his time doing the mundane: cutting the grass, hitting the grocery store, or toiling at a job. He can elect to use an enormous percentage of his time having fun. For most of us, this luxury proves elusive. Thank God for that. It keeps me employed! As your leisure time is limited, it becomes more valuable, and like any investment, you want to research to make the most of it.

Romantic resource Love is another thing you can’t buy, and if life has blessed you with a special someone, you have a double bonus and your time with that person has a precious value. We think of this a lot during Valentine’s Day. While little bits of jewelry provide mental reminders of this love while apart, time together carries the greatest value. And, it’s in this spirit that we present this issue, which is packed with ideas for romantic getaways. And, the ideas keep coming! Check out our free weekly email blasts

Guidebooks and Internet sites can be very helpful in determining what to do when you reach a destination, especially if you know nothing about the area and it’s a far-off locale. But you can also glean some of the best information from people you meet on your trip. A simple “hello” in the airport gate waiting area can lead to great local secrets. Jane and I celebrated our 40th anniversary a bit early with a trip to St. Croix, perhaps the leastvisited of the U.S. Virgin Islands and a place we’d never traveled. While walking to make a connecting flight in Miami, we fell in step with a delightful woman who turned out to be a St. Croix native returning home. She offered valuable advice from a local perspective, especially since we were renting a car but knew little about the relative distances to towns and attractions. She confirmed that our resort, the Renaissance Carambola, was an excellent choice. Our conversation was overheard by another traveler, a businessman who makes frequent trips to St. Croix. He offered advice on dining spots and assured us he’d never had a bad meal on the island. Simple conversations with waitresses, store owners, and tour guides yielded further insights, leading us to shops and sights we might never have found on our own. We also discovered a deep connection with the Mid-Atlantic region. One waitress hailed from a community 10 minutes from where we live and her husband graduated two years earlier from the same high school as Jane. Another waitress was from Pittsburgh, which naturally led to Steelers-Ravens football talk. Our Cruzan Rum tour guide came to St. Croix from Washington and the other couple on the tour was from Northern Virginia. Everywhere we turned there were connections: a bellman’s engagement to a Frederick, Md., woman; people with relatives in Baltimore; and a wedding party from Philadelphia. Each of these acquaintances created opportunities to share information about island experiences. A couple from Charlotte, N.C., made the “snowman” in the picture and kindly took our picture for this page. The resort concierges were great, both before and during our visit, but advice from others proved valuable in lots of ways. Bottom line: When you’re headed to an unfamiliar destination, the people you meet along the way can be great resources. Look up from your iPad, e-reader, or book and say hello!

From Hemingway’s homes to romantic Maryland getaways Ernest Hemingway, who won the Nobel Prize for literature in 1950, had four beautiful, intelligent wives and a home you can visit in Key West, Fla. He was married to Hadley Richardson for six years, to Pauline Pfeiffer for 12 years, to Martha Gellhorn for five years, and to Mary Welsh for 25 years. Except for Richardson, whose primary interest was music, all were journalists in their own rights. No doubt they all influenced his writing, but some scholars think Pfeiffer’s editorial skills enhanced his work. He was living and working in Paris when he met Pfeiffer, a Vogue editor who was close friend of Richardson, his first wife and the mother of his son Jack. Upon learning of his affair with Pfeiffer, Richardson divorced him. He married Pfeiffer in 1927 and had two more sons, Gregory and Patrick. The Hemingways left Paris and moved into their Key West home at 907 Whitehead St. in 1931, thanks to the generosity of Pfeiffer’s uncle Gus Pfeiffer, who gave it to them as a wedding gift. Built by Asa Tift in 1851, the Spanish-style home features furnishings purchased by the Hemingways in Europe. The home provides an inside look at the personal lives of the famous couple and his literary work. He wrote For Whom the Bell Tolls and To Have and Have Not while living in Key West. Pfeiffer continued to live in Key West after their divorce

in 1939 and until her untimely death in 1951. About 40 descendants of their famous five-toed cats still live on the grounds. Listed on the National Register of Historic Places, The Ernest Hemingway Home and Museum is open to the public and hosts Hemingway Days every July. (fla-keys.com) You can also learn about the fascinating couple at the HemingwayPfeiffer family home in Piggott, Ark., which they and their sons visited frequently. Pfeiffer’s father was a prominent businessman and landowner in northeast Arkansas. Now under the direction of Arkansas State University, the HemingwayPfeiffer Museum and Educational Center focuses on the life and times of the 1920s. The house and the barn studio, where Hemingway wrote portions of A Farewell to Arms and other works, are open for tours. Exhibits in the barn studio include a Hemingway timeline, big game trophies from the Hemingways’ African safari (financed by Uncle Gus), a manual typewriter, books, photos, and other memorabilia. The Hemingways had quite a love story, though it did not end happily. The museum’s membership program, Friends of the Pfeiffers, is sponsoring a trip to Paris, March 22–30. The trip is an opportunity to see two sides of Paris — the artistic Left Bank of Hemingway and other members of the “Lost Generation” (Gertrude Stein, Cole Porter, Pablo

Picasso, etc.) and the glitzy Right Bank of Pfeiffer and the world of Parisian fashion (Coco Chanel, Scott and Zelda Fitzgerald). Participants will not only visit Paris, but also Versailles, Giverny, and Normandy, which Hemingway covered as a journalist during the 1944 invasion. Around the Mid-Atlantic With Valentine’s Day and Presidents Day coming up soon, February is the ideal time to explore special places such as Maryland’s Carroll County, known for its farm attractions, wineries, inns, and restaurants. Exhibit rooms in the 1850s farmhouse and the Hoff Log Barn, plus out buildings, at the Carroll County Farm Museum at Westminster will be open to visitors free of charge through March. Artisans will demonstrate farm skills of the 1800s and early 1900s. Tea service will be available on Valentine’s Day and St. Patrick’s Day. (carrollcountyfarmmuseum.org) The Carroll County Wine Trail, which currently includes Cyngus Wine Cellars in Manchester, Galloping Goose Vineyards in Hampstead, and Serpent Ridge Vineyard in Westminster, will be adding new wineries soon. Participants in the Maryland Wine Passport program will find that these wineries offer unique tours, programs on wine-making traditions, and demonstrations on hand-crafting wines. For a nighttime thrill, All Earth Eco Tours in Western Maryland’s Garrett County offers a twohour “headlamp” snowshoe tour from 7:00pm– 9:00pm every Saturday night near Deep Creek Lake Resort. The night air is especially crisp and the magical feeling and look of a snow shrouded forest at night is a sight to behold. Celebrating St. Patrick Visitors are invited to honor St. Patrick at two cathedrals in Northern Ireland. In Armagh, location of the saint’s first church, a March 16 celebration concert features a variety of choirs. That will be followed by a live-streaming TV and radio broadcast from Down Cathedral in Downpatrick, St. Patrick’s burial site, on March 17. Northern Ireland is home to vibrant cities, breathtaking sea and landscapes, a rich cultural heritage, and is the backdrop of HBO’s hit series Game of Thrones. Four action-packed days, March 14–17, are planned around Dublin’s St. Patrick’s Festival, when some of the city’s most iconic buildings “Go Green.” The festival features concerts, street festivals, and a huge parade. Try the wine before it’s bottled Mason-Dixon Wine Trail hosts 10th annual ‘Tour de Tanks’ tasting event during March The Mason-Dixon Wine Trail’s Tour de Tanks event reaches its milestone 10th anniversary on Saturdays and Sundays in March, noon-5:00pm each day. The annual March weekend event to preview the year’s newest wines draws visitors to the 20 wineries scattered along both sides of the MasonDixon Line in Pennsylvania and Maryland. “We emphasize the experience that comes from visiting the different wineries as well as the tastings,” said Brent Burkey, who promotes the wine trail. During the March weekends wine enthusiasts are invited to exclusive tank and barrel tastings, special educational experiences, and light refreshments. The wineries, stretching

Lloyd Mortorff, who is both the owner of and winemaker at Four Springs Winery, southwest of York, Pa., concentrates on red grape varieties, though he produces a dry riesling and an oakaged chardonnay. He ages his red wines in oak barrels for 18 months. Four Springs celebrates its own 10th anniversary this year and has participated in all 10 Tour de Tanks events. “March is our biggest month because of the Tour de Tanks, but it also helps local businesses like restaurants and hotels,” Mortorff said. Royal Albin, at Royal Rabbit Winery in Parkton, Md., will likely offer Tour de Tanks visitors a lesson in how oak affects his chardonnay. “We’ll probably compare unoaked with first- and secondyear oak versions to show the difference,” he said, noting that the current trend is for a lightly oaked chardonnay. “This year we’ll also be showcasing a variation on one of our base red wines that results when we take some of the water out through freezing before it’s bottled. These are our Royal Frost versions and not ice wines,” Albin said. Insider Tip: The event is also a bargain because

The mountains of the Mid-Atlantic are dotted with cabins that are great retreats in the winter and spring. Choose your activity level, from skiing to cuddling before a fire, and you’ll find a cabin to suit your needs. Choose the amenities you want, from full kitchen and hot tub to rustic, and there’s a cabin experience waiting for you. Perhaps nowhere in the Mid-Atlantic are there more cabin choices than in West Virginia. From state park offerings to private owner rentals to cabin “resorts,” the Mountain State has cabins for every taste. The state offers a regional rental cabin directory at wvweekends.com. In the Eastern Panhandle, not far from Martinsburg, The Woods Resort offers cabins in addition to its other accommodations. Through March 31, rates start at $119 for a cabin with a fireplace. The resort includes the Sleepy Creek Spa, golf, indoor pool, and an indoor sports center. There are various stay-and-play packages as well. (thewoods.com) A bit to the south, near Seneca Rocks and the Dolly Sods Natural Area, LTD Vacations rents cabins that are pet-friendly. The four cabins sleep five to 12 people and feature hot tubs, gas fireplaces, and full kitchens. There are marked hiking trails and outdoor campfire pits. Take a ride on the Potomac Eagle scenic railroad, head out for some downhill or cross-country skiing, or take in one of the local caverns. In warmer weather, take a horseback ride to the top of Seneca Rocks for a unique view. Mountain bikers have access to the trails at Mountain Lake Retreat and anglers can enjoy two stocked ponds on the property in addition to numerous nearby streams. (ltdvacation.com) Near the popular New River Gorge in Hico, Country Road Cabins is a collection of one- to four-bedroom log cabins that are available yearround and include private hot tubs, fireplaces, and full kitchens. There are a variety of packages, including a romance package that can include champagne, breakfast, and a steak dinner or other amenities like massages. Winter specials provide a $100 per night savings on and two- or threebedroom cabin. Country Roads also offers activity packages for zip lining, whitewater rafting, and other sports in season. Pet-friendly cabins are available. (wvcabins.com) Also in Hico, Hemlock Haven offers five cabins on its 28 acres; four sleeping up to eight guests and one accommodating up to 12. All the cabins are dog-friendly with a private fenced yard and include luxury amenities with fireplaces, hot tubs, and fully equipped kitchens. Each cabin also has an outdoor fire pit. Working with local outfitters, the Hemlock Haven staff will assist in arranging whitewater rafting, horseback riding, ATV rides, golf, and fishing. There are walking trails on the property and plenty of hiking in nearby state parks and the national recreation area. A couple’s special runs through April 2 that includes chocolates and champagne. Value season runs through May 18. It’s February. Valentine’s Day is right around the corner and it’s the middle of the bleakest time of year. The weather is cold, drab, and snowy. We need a getaway — a romantic getaway! Something that will slice through the gray skies and frozen dirt to reveal blue skies, warm tropical breezes, turquoise water, white sand, and palm trees. Here’s an idea. Surprise your honey with a cruise from Baltimore to the Bahamas or the Caribbean. When you cruise from Baltimore, it’s easy, less expensive, and very convenient. The Port of Baltimore’s cruise terminal (cruisemaryland.com) is only 2-1/2 miles from Baltimore’s world famous Inner Harbor and just 10 miles from BWI Thurgood Marshall Airport. It is also the closest drive-to port for the more than 40 million people who live within a six-hour drive. All this makes the affordability of the cruise go way up because the cost of traveling to the cruise terminal is almost negligible compared to the cost of paying for flights to ports in other states, such as Florida. What to do when the sun goes down in the Mountain State West Virginia has lots of entertainment options You’ve sped down the slopes, tramped the trails, or taken in the sights on your West Virginia getaway. What to do when the sun goes down? There’s a surprising side to West Virginia that you shouldn’t overlook: Music and theater are a big part of life in the Mountain State. In West Virginia, the music is as varied as the spectacular scenery. From traditional Appalachian music to the rhythms of African-American hymns and southern gospel harmonies, to the driving beat of true country and bluegrass sounds, there’s something waiting for you. Pick a week, from early spring to late fall, and you’re sure to find at least one old-time, bluegrass, country, or gospel music event underway in West Virginia. This month, the Pocahontas County Opera House in Marlinton hosts some of the best musical talent from West Virginia and Virginia on Feb. 28. You can hear jazz concerts in Lewisburg’s Carnegie Hall or Wheeling’s Stifel Fine Arts Center, or at events such as Marshall University’s Jazz-MU-Taz in Huntington or “Wine and Jazz” festivals at Snowshoe Mountain and in Morgantown. The American Mountain Theater in Elkins presents “Branson-style” family-friendly music, comedy, and variety entertainment, beginning Friday and Saturday evenings in April. The cast of professional entertainers will keep your toes tapping and hands clapping throughout the two-hour mix of country, southern gospel, bluegrass, pop, and patriotic music. Most Sunday evenings in the capital city of Charleston you can be part of the live studio audi-

ence of Mountain Stage, which R.E.M.’s Peter Buck called “the best live show on radio.” Featuring musical guests and styles from all over the world, the two-hour show is produced by West Virginia Public Radio 26 times a year and broadcast on more than 100 public radio stations, the Voice of America, and, more recently, on public television affiliates as well. Live theater in West Virginia ranges from touring Broadway productions to community theater, to a historical drama presented in a mountain theater in the warmer months. There are dinner theater opportunities at state parks and even a mystery dinner experience on an excursion train. The renowned contemporary American Theater Festival takes place each July in Shepherdstown, where the restored Shepherdstown Opera House also screens films.

Visitors can see exotic reptiles from around the world, including reptiles on loan from Clyde Peeling’s Reptiland, at the Virginia Living Museum in Newport News, Va., Feb. 14–16. The museum’s permanent residents, ranging from alligators to tree frogs, will also be in special exhibits and visitors can see live animal programs and feedings. New this year will be “Lizard Lounge,� displaying several exotic and native lizards. Romance meets adventure and history in St. Croix, USVI We were looking for a beachfront room in a place we’d never been as ingredients for an early 40th anniversary trip. St. Croix in the U.S. Virgin Islands turned out to be a great choice. As a U.S. territory, money and language are not a problem. Insider tip: While passports are not required, having one can make returning to the mainland easier. St. Croix is larger than the other U.S. Virgin Islands, but lacks the sometimes frantic pace of St. Thomas and offers more variety than St. John. The island offers romance, great food, diving, and interesting history. For romance, it’s tough to beat the Renaissance St. Croix Carambola Beach Resort and Spa, which is somewhat isolated on the north shore where the rainforest runs down to the beach. Two-story buildings hold only four or six rooms, each with its own screened porch, kitchen appliances, large bath, sitting room, and bed chamber. The open-air bar/restaurant and the larger Saman Restaurant offer exceptional cuisine and spectacular ocean views. A large pool next to the bar beckons those who don’t want to laze on the beach. A regular Friday night event features a mind-blowing fire dancing troupe and St. Croix’s traditional island stilt dancers. “We want people to discover something new,” said general manager Rick McKeown. “We have the dive shop so they can explore The Wall off our beach. But the island also has great history and culture. The resort’s concierges offered specific advice on driving routes (a rental car is desirable), restaurants, and attractions and even kept Marvin connected to Recreation News business when necessary.

A very attractive wedding package drew a couple from Philadelphia to the Carambola, and we joined the celebratory dancing with their guests.

Adventure and history There are plenty of other beaches on St. Croix and divers and snorkelers can also find amazing tropical discoveries at Buck Island Reef National Monument, one of the few fully protected marine areas in the National Park System. Six licensed outfitters can take you to the island for half- or full-day experiences. Seven flags have flown over St. Croix, but the Dutch influence is especially strong, including colorful buildings dating to the 1700s lining the streets of Christiansted and Frederiksted. The Colonial forts and customs houses are interesting and intertwined with the life of Alexander Hamilton, who spent his boyhood and early manhood here. At Estate Whim, a preserved sugar cane plantation, we learned that, once sugar cane was introduced to the island, it became a primary product, along with molasses and rum. Our tour guide at the Cruzan Rum distillery, Charlene Nelthropp, moved to St. Croix from Washington, D.C., and eventually married into the family that has owned the distillery for seven generations. “There are 40,000 barrels of rum aging here at any one time,” she said. Free rum drinks are served in the hospitality pavilion at the end of the fascinating tour.

A spectacular sunset and scrumptious scallops awaited us at Eat @ Cane Bay, which resembled an open-air tree house, perched above Cane Bay Beach.

‘Picturing Mary’ exhibition celebrates an enduring figure A mother tickling her laughing baby is a common sight — except when the mother is Mary and the baby is Jesus. That’s not the usual Madonnaand-child image that comes to mind, but this very human moment depicted in a 14th-century marble relief by Andrea Pisano is one of the many ways artists have envisioned Mary. This piece and others are featured in the exhibition Picturing Mary: Woman, Mother, Idea, which is on view at the National Museum of Women in the Arts in Washington through April 12. The show presents 60 renditions of the Virgin Mary by master artists from the Renaissance and Baroque periods, roughly the 14th through the 17th centuries. The paintings, sculptures, and textiles — some of which have never been exhibited before in America — come from the Vatican Museums, the Louvre, and other public and private collections. Both male and female artists are represented. Whether you relate to Mary from a religious or a human viewpoint, or simply as a universal icon of womanhood, you can appreciate the exhibition on several levels. Artistically, the works are a marvel to behold, full of beauty, power, and symbolic meanings. Organized into six themes, the exhibition shows a more natural and human Mary, transitioning from the queenly approach of prior eras. The young

mother playfully interacting with her child eventually turns sorrowful when she realizes her son’s fate. Other portrayals include her roles as a daughter, a wife, a devoted servant to God, the ideal woman, a link between heaven and earth, and a revered figure for believers. If nothing else, you can gauge Mary’s importance by the sheer number of times artists have focused on her in western art. Two of the more famous paintings are Botticelli’s Madonna and Child and Caravaggio’s The Rest on the Flight into Egypt. Michelangelo, Albrecht Dürer, Jacopo Pontormo, Fra Filippo Lippi, and Giovanni Battista Tiepolo are some of the other male artists included, while the featured female artists are Elisabetta Sirani, Sofonisba Anguissola, Artemisia Gentileschi, and Orsola Maddalena Caccia, an Italian nun. The museum supplements the show, which mostly features Italian artists, with an online exhibition that has artistic images of Mary from around the world, an interactive map, and videos. The museum is the only institution in the world devoted solely to women and art, with 4,500 works from the 16th century to today. The five-story building on New York Avenue features a Renaissance Revival façade and a Grand Hall with a mezzanine, a library and research center, a perfor-

Its production of Baskerville: A Sherlock Holmes Mystery continues through Feb. 22 in the Kreeger Theater. The world’s most famous detective pursues yet another case in this world-premiere adaptation by Tony Award-winning playwright Ken Ludwig. The comedy is based on Sir Arthur Conan Doyle’s The Hound of the Baskervilles. Five actors portray more than 40 characters in the show, which is directed by Amanda Dehnert. Gregory Wooddell stars as Holmes, with Lucas Hall as Dr. Watson. “A Sherlock Holmes mystery is the perfect foil for the winter doldrums,” says Arena Stage’s Molly Smith.

Jazz icon to trumpet Pennsylvania festival’s 25th anniversary in april Wynton Marsalis — one of the biggest names in jazz — played the first Berks Jazz Fest in Reading, Pa., in 1991. Now, 25 years later, he’s back. The trumpeter, composer, band leader, and educator will headline this year’s festival for its silver anniversary celebration. Wynton Marsalis Formally called Boscov’s Berks Jazz Fest in honor of a major sponsor, the event will be presented by the Berks Arts Council April 10–19. The dates are later than usual this year to avoid conflicting with Easter. The musical extravaganza draws more than 40,000 spectators from 36 states and Europe each year to Reading, the county seat of Berks County, a 140-mile drive from Washington, D.C. Marsalis’ return is “very exciting,” says the festival’s John Ernesto. “He’s quite the icon on the music scene now.” Marsalis is a multi-Grammy winner for both jazz and classical genres, and in 1997 he became the only jazz musician to win a Pulitzer Prize for Music. He plays concerts around the world and has 70 records to his credit. Marsalis, along with the Jazz

at Lincoln Center Orchestra that he directs, will perform at 7:30pm on April 10 at the Santander Performing Arts Center. The festival always has a diverse lineup, with various musical styles presented. Among other top performers this year will be Dianne Reeves, Boney James, Brian Culbertson, Fourplay, Jason Miles, and Ingrid Jensen. Special events include a Berks Bop Big Band performance on April 14 and 15; an All-Star Jazz Jam on April 16; and a memorial concert on April 18 for the late pianist Joe Sample. The final concert on April 19 will feature Kirk Whalum’s Gospel According to Jazz with award-winning vocalist Yolanda Adams. Some fans return year after year. “It’s a great way to see a lot of music in a short period of time,” he says. “We do everything in our power to make it a positive experience.”

TURNING somersaults in the kitchen: Sometimes successful, sometimes not As children, we learned how to turn somersaults. But, somersaults can be tricky and usually not something that you can accomplish on the first try. We had to practice, more than once, until we got it right. Kitchen adventures can be like somersaults — you blow it the first couple of tries! My neighbor, a wonderfully wise woman, collects small batch bourbons and unusual liqueurs. (I think that she does it not so much for the alcohol, but for the unique and often decorative bottles.) She recently approached me with a book titled The Home Distiller’s Workbook, and the notion that we (I?) could make our own. Reading the book, I noted two flaws with that idea: First, it is illegal to distill significant quantities of distilled spirits in the United States without first obtaining the proper licenses; and second, distilling drinkable alcohol is an involved process that takes considerable specialized equipment and skill. And, like turning somersaults, it takes lots of practice. Distillation is the process of separating one liquid from another; for instance, grain alcohol from water. Distillation does not create alcohol; fermentation does. Traditional moonshiners fermented a “mash” of grain soaked in water. Added yeast consumed the sugar from the mash and turned it into alcohol.

Because alcohol boils at a lower temperature than water, carefully heating the fermented mash separated the alcohol from the water in a classic distillation process.

My neighbor’s book gave detailed instructions for making a number of distillation devices, including a stove-top still using a teapot as the main component. However, after reading the text, I determined that creating such a device could be expensive, time-consuming, and potentially dangerous. (Oh, yes, and possibly illegal.) Building the still and actually making alcohol worth drinking would require adopting moonshining as a hobby. I don’t like disappointing my neighbor, so I cast about for an alternative less-involved means to reach the desired end. I remembered a story from my father about making “applejack” when he attended college in Upstate New York. His friends would fill a barrel with crushed apples, let the goop ferment, then take advantage of winter temperatures to freeze the barrel’s contents. Just as alcohol boils at a lower temperature than water, water freezes at a lower temperature than alcohol. After a night or two of the area’s Arctic-like climate, any water in the barrel would freeze, leaving only the alcohol as liquid applejack.

With that tale in mind, I visited a local home brewing shop. The salesperson first informed me that the process was illegal, then sold me all of the necessary equipment and chemicals. For six weeks, two gallons of apple mash sat in a huge jug in my kitchen, happily fermenting. I then siphoned off about a gallon of apple cidery-smelling liquid and popped it into my freezer. As it froze, I tapped off an even more ciderysmelling liquid. Finally, in the bottom of a Mason jar, I collected 4 ounces of alleged applejack. It was horrid! I don’t know whether it was alcoholic or not; regardless, I am not drinking it. Like learning to turn somersaults, I clearly need more practice. In contrast to my failed moonshining, my experiments with making candy have produced much better somersaults. For the holidays, I experimented with marzipan and found it easy to make a delicious confection. Now, all I have to do is convince my neighbor to abandon booze and take up candy. Enjoying cold weather reds Winter is the time to snuggle up to a warm, cozy fire and indulge in comfort food and drink. When it comes to wine, this means replacing those delicate, fruity little numbers with bigger, fuller-flavored offerings that do a great job in combating the cold. At the top of the list has to be big red wine. Included in this large category would be Bordeaux, cabernet, zinfandel, pinotage, syrah/shiraz, Italian reds, and many others. As these wines are fuller and have more to them, they require special treatment such as correct serving temperatures, appropriate aeration or breathing time, and the use of proper glassware to maximize their appreciation. Let’s address serving temperatures first. All big reds should be served at room temperature, approximately 70 F. This means retrieving the chosen wine from your cooler storage space and letting it stand undisturbed somewhere in a warmer spot in your home until it comes up to room temperature. Just touch the

bottle to feel the difference. If a big red is too cool, it will be “dumb” and not deliver all it can on both the nose and palate. An hour or two should suffice. Next up is aeration or breathing time. With more body, substance, and likely more tannin, these guys are going to require more air to bring them around. This aeration process serves two important functions. It allows oxygen to penetrate the wine relieving it of any funky, pent-up bottle smells that may have developed. Secondly, and perhaps most importantly, it opens up the wine bringing the fruit, volatiles, nuances, and complexity out, making it more aromatic and flavorful. You can simply open the wine and let it stand. How long depends on the wine. A Bordeaux, for example, should be fine after about one-anda-half or two hours. An Amarone, on the other hand, might require three to four hours to come around. When one considers the size of the opening in most wine bottles, you can understand why this kind of time for aera-

tion is required. However, a better way to deal with this is to decant the wine. This means pouring the wine into a decanter, a larger container made from glass, china, or glazed ceramic that has a much broader opening with more surface area. It doesn’t have to be fancy. Even a pitcher will do. Just avoid using any material that is porous or made from metal, as this may leach undesirable components into the wine. Again, the structure and size of the wine will dictate just how long the wine should breath, but ultimately decanting will always give the wine more air in a hurry and the period of aeration will be much shorter. If you’re in a real hurry to aerate a wine, you could simply pour the wine back and forth from one decanter to another seven or eight times to speed up the process, but it is better to let the wine come around undisturbed. The final aspect of preparing this big red for consumption is the glassware. It’s an important consideration, because many a great red has been

ruined by the glass used for tasting. Use glass and only glass. No plastic or any other material! You’ll want to use a larger glass as well. As these reds are bigger, the broader surface area of a larger glass will allow abundant air into the wine, thus opening it up more. Ensure the glass is at room temperature only. If it has just come out of the dishwasher warm, let it cool down. Finally, fill the glass to only one-third capacity, allowing for further aeration by swirling.
