Baked Fish Parcel Meal for Two

1 cup of pre-cooked rice, or 2 small yellow or red potatoes, sliced as thinly as possible
1 sheet of parchment, cut in half
2 sheets of aluminum foil, 12 x 24 inches
2 5-oz. tilapia, or other firm fish fillets
• Preheat oven to 450.
2 small tomatoes, cored and sliced into quarter inch thick slices
8-10 thin slices of red onion
2 T. olive oil
Juice of 1 lemon
4 sprigs of fresh dill
2 garlic scapes (if available)
Salt and ground pepper
• Fold each foil sheet over to make a double-thick square.
• Line foil with parchment (fold to fit). Rinse the fish and prepare the ingredients. Layer the cooked rice or potato slices, tomatoes, and onions on each square. Top each with half of the fish.
• In a measuring cup combine the olive oil and lemon juice. Pour it over the fish. Top the fish with dill, garlic scape, salt, and pepper.
• Fold the parchment over the fish then fold the foil into an airtight packet.
• Bake for 20 minutes.
• Place foil packets on a plate and carefully open them. Make sure the fish is cooked (return to oven if needed). Transfer to plates and pour liquid over each serving.

Wes Montgomery
This month marks the centennial of Indiana jazz guitar great Wes Montgomery, born in Indianapolis on March 6, 1923. Montgomery was one of the 20th century’s most influential and popular musicians on his instrument, and he’s the subject of a new documentary, Wes Bound, that’s airing on WTIU this month on March 5 at 1:30 p.m. and March 6 at 8 p.m. (And stick around for the one-hour tribute concert that follows, featuring guitarist Dave Stryker and an IU jazz ensemble with strings led by Brent Wallarab.)
We’ll be celebrating Montgomery’s legacy as well on our weekday afternoon jazz program Just You & Me, along with two Night Lights programs, “From Naptown to Paris: Wes Montgomery Live,” and “When Wes Montgomery Met…” The latter will air on Friday, March 24 in the midst of our spring fund drive, for which we’ll be offering two thank-you gifts that are new releases from Indiana jazz artists: Grammy-nominated violinist Sara Caswell’s The Way to You and Monika Herzig and Janiece Jaffe’s tribute to Joni Mitchell, Both Sides of Joni
Speaking of Joni Mitchell, our Friday evening vocal-jazz show Afterglow kicks off Women’s History Month on March 3 with a Mitchell salute featuring her songs performed by jazz singers such as Dianne Reeves. Other Afterglow programs for Women’s History Month cover Ella Fitzgerald’s Decca years, Billie Holiday’s 1940s records, and the career of singer Carole Sloane, who passed away in January at 85.
Finally, tune into Just You & Me on Thursday, March 30 to hear trumpeter Kyle Quass and writer and professor Joan Hawkins talk about their recent and upcoming jazz-andspoken-word collaborations.
