n the cover this issue is one of the hottest chefs in Manila, Le Cordon Bleu-trained chef Jayps Anglo, judge of MasterChef Pinoy Edition, and owner/chef of SARSA Kitchen + Bar. He calls himself “The Traveller”. Led by his palate and hunger to explore the taste of Asia, he is a frequent face on independent food safari tours. Preferring hawker food to gourmet fare, he loves to sample authentic street food and dishes.
And so it was that when we decided to zero in on Bacolod — land of sugar farms and glorious food — we thought of Chef Jayps. Bacolod is Chef Jayps’ hometown and the capital of Negros Occidental in the Western Visayas. It is also home to the Philippines’ all-time food favorites from fresh spring roll to inasal or grilled fare to the kalamayhati, sticky sweet dessert made from glutinous rice and coconut milk, the memory of which is enough to send any Bacolodnon back to his hometown. On pages 35 to 46, Chef Jayps, interviewed by Cielo Flores, talks about his favorite food hangouts in Bacolod and why. We are also featuring three top restaurants — ALIVE!, Yurakuen, and Wooden Spoon. (See pages 60 to 64) ALIVE!, a restaurant located in the spa complex of The Farm at San Benito in Batngas, is one of the Philippines’ longest running veggie restaurants, although it seems a mortal sin to label it that because ALIVE! takes healthy food to an all-new level. Chef Jayps Anglo Our insider Joseph Patrick Anglo, fondly called Chef Jayps, was one of the judges of the Philippines' Junior MasterChef and owns and runs Sarsa Kitchen + Bar, a restaurant in Bonifacio Global City, Taguig. In Bacolod, he operates two established restaurants, Chinese restaurant Mai Pao, and trendy resto bar Mu Shu. Chef Jayps received his culinary training at the Tafe Ultimo and Le Cordon Bleu in Sydney, Australia.

Asik-asik Falls in Alamada town,
North Cotabato in Mindanao looks pretty much like a place that time forgot. But what a stunning place. Asik-asik is a 140-meter waterfall thundering down from the stone crust on the mountain wall like a massive curtain. Come for a picnic and a dip in the morning, but be prepared for a longish journey — some two-and-ahalf-hour bus ride from Cotabato Airport from where you can board the local Weena bus to Libungan, a municipality in North Cotabato. From Libungan, hire a habalhabal (local motorcycle) ride to Alamada for P600, roundtrip fare. At Alamada, climb down 300 steps down a concrete path to the falls. Entrance fee is P30.
