Welcome to the September issue of Inside Chester magazine. We hope you had a fantastic summer and hopefully the sun will shine throughout September. Thank you to everyone who entered our competitions last month, the response was massive and you can check if you were the lucky winner on the right hand column of this page. So what do we have for you to look forward to in this month’s issue? ild Goose Lakeside Bar and restaurant is located on the outskirts of Chester in Dodleston, It is situated on Chester Lakes which has the most tranquil setting surrounded by 100 acres of beautiful parkland and lakes. The amenities surrounding the lakes include The Wild Goose Bar and Restaurant and also a brand new Burger basement for the 2021 season. You can stay in your own tent or caravan or hire one of the amazing Bbq pods which sleep 4 Surrounding the lake there are seven fishing lakes open to the public, playgrounds to keep the children entertained and relaxing walks and bike trails to really take in the
beautiful Cheshire countryside and rolling Welsh hills. On approach to the Wild Goose we could not believe we had never been here before, the setting is spectacular; even more so on a summer’s evening where you can take advantage of the view of the lake and the al fresco dining. It’s a beautiful area outside, the beach huts overlooking the lake and surrounding woodland are fabulous and offer cover from the unpredictable weather and of course shade if needed. There are also ample more seating areas in the sunshine. The inside of the Wild Goose is stylish with pale Oak
flooring and tables and muted brown and tan furnishings to complement the modern look. The staff welcomed us immediately and asked if we would like to sit outside or inside for our meal. We said we would have a drink outside first and decide later where we would eat. Nothing was too much trouble and they said they would set a table inside as well just in case we changed our mind. Our drinks were ordered and brought over promptly along with the menu the bar has a great selection of Cheshire ales and familiar beers while the wine selection brings together quality wines from small independent vineyards which I was more than looking forward to sampling, we perused the menu whilst taking in the amazing view of the lake and enjoying our drinks and quickly decided we would start with a sharing platter of mixed Kalamata
When presented both dishes looked amazing and was piping hot. The slow braised lamb shank was accompanied with buttered potatoes and seasoned seasonal vegetables. The Lamb just fell from the bone and was cooked in a rich red wine jus. The veg were cooked to perfection especially the tender stem broccoli and the jus that the Lamb was cooked in was rich and flavoursome.
The menu serves locally produced seasonal food and the majority of the food was traditional English dishes but a few dishes did have an international twist which we really liked after major deliberation as the menu was amazing we finally made our selections just in time for our sharing starter arriving! The platter was perfectly presented; the olives were as good as any olives I have had from Greece, the bread rustic and warm and the dipping oils plentiful! What more could we wish for really, perfect setting, beautiful wine and a gorgeous rustic starter. We were excited to see if the main course lived up to the same standard.
I had decided on Pan Fried Sea bass which was accompanied by samphire, buttered new potatoes and salsa Verde dressing. The presentation was impeccable and I was intrigued to taste Samphire
For the main course we decided to eat inside as it had gone a tad chilly, it was nice to appreciate the inside dining
for the first time. It was vibrant green and looked great on the plate against the delicate sea bass; it was crisp and salty and tasted a little like baby asparagus which again worked perfectly with the delicate flavour of the sea bass. The sea bass was cooked to perfection and the salsa Verde dressing finished it off perfectly. We both agreed both meals were faultless so it would be rude not to sample dessert.
We are both huge fans of cheesecake so although there was an amazing selection of desserts cheesecake won hands down and let’s just say we certainly was not disappointed! It finished a wonderful dining experience off perfectly. So if you want somewhere scenic and relaxing with a good selection of wine and tasty, locally produced, wholesome food with a slight European twist try the Wild Goose you won’t be disappointed!

stripped of gold medal
On September 24, 1988, Canadian sprinter Ben Johnson ran the 100 metres in 9.79 seconds to win gold at the Seoul Olympics. Johnson’s triumph, however, was temporary. On September 27, he tested positive for steroids. He denied using steroids, claiming that a herbal drink he’d been given before the race had been spiked. The International Olympic Committee refused to accept his explanation, and Johnson was stripped of the gold medal, which was given to Carl Lewis. He returned to Canada in disgrace.

Long given up for dead, Plymouth residents were amazed to see Drake and his small ship return to Plymouth Harbour in September, 1580. Once Drake had been reassured that Queen He landed the Golden Hind, full of treasure and jewels, at nearby Saltash, and in the process became one of the most famous men in the world. The total value of the items on board was 160,000 Elizabethan pounds, or almost half a billion pounds in today’s money. Drake was duly knighted by Queen Elizabeth I on board the Golden Hind in Deptford, London.

“ I’m really looking forward to it. Will I be playing Queen songs too? ... Absolutely!!” Rock icon Roger Taylor recently made the surprise announcement that he will play a UK solo tour this Autumn, introducing brand new material and revisiting some of his very own Queen classics. With the pandemic putting Queen + Adam Lambert’s epic UK and European tour on pause until 2022, the acclaimed drummer has decided to hit the road for a set of intimate shows. The upcoming concerts will showcase his distinctive percussive, vocal and song writing talents that have been integral to Queen’s live and recorded output since 1970. Marking his first live performances outside Queen in over two decades, Taylor will tour the UK across October playing 14 shows. Taylor’s 2021 tour will open at Newcastle
O2 Academy, Saturday October 2, followed by dates across the UK that conclude at London’s O2 Shepherd’s Bush Empire on Friday October 22. As the songwriter of many of Queen’s biggest hits and much-loved tracks including ‘A Kind of Magic’, ‘Radio Ga Ga’, ‘I’m In Love With My Car’, ‘Sheer Heart Attack’ and ‘These Are the Days of Our Lives’, while also being one of rock’s most distinctive vocalists, Taylor promises a solo tour with an enthusiastic foray into Queen and his own classic catalogues, while also including new songs written in lockdown that feature on the multi-instrumentalist’s new album. ‘Outsider’ is Taylor’s first album of new material since 2013’s ‘Fun On Earth’. Over the last decade, the drummer has also released the occasional solo track reflecting on his worldview and observations in songs like ‘Journey’s End’ ‘and ‘Gangsters Are Running This
World’. His most recent was Isolation, which was written and recorded in response to the first lockdown last year. On recording the ‘Outsider’ album after isolation Taylor says: “I’ve had a bit of a creative spurt and suddenly found myself with an album, which was lovely. You may have embraced wearing a fitness watch to collect data about your resting heartrate, fitness and sleep habits, but the same technology can also be built into clothes.
Omsignal has created activewear, workwear and sleepwear (above, left) that collects a raft of medicalgrade data without wearers noticing. Its bras, t-shirts and shirts are made using smart stretchy fabric with built-in strategically placed ECG, respiration and physical activity sensors. The data collected by these sensors is sent to a recording module in the clothing, which then sends it to the Cloud. It can be accessed, analysed and viewed using an app to help people work out ways of staying calmer under pressure at work, or how to sleep more soundly. The recording module can collect data for 50 hours without the need to be recharged and is splash and sweat-resistant.

A company called CuteCircuit makes clothes and accessories that can display messages and tweets (above, main pic).

Most of our clothes have a negative effect on the environment, especially those made from non-biodegradable fabrics. But Adidas is doing its bit to make greener trainers (above, right). The UltraBOOST Parley trainer has a PrimeKnit upper that’s 85% ocean plastic and is made from 11 plastic bottles plucked from beaches.
While the eco-friendly trainer isn’t brand new, the design has a sleeker silhouette and has just been released in a ‘Deep Ocean Blue’ colourway that Adidas said is inspired by the Mariana Trench, the deepest part of the world’s oceans and the site of the deepest-known piece of plastic pollution: a single-use plastic bag.

History
An old British breed, ‘Yorkies’ were developed by crossing three Terriers - the Skye, the Manchester and the Dandie Dinmont. Originally used to hunt rodents in Yorkshire mines and cotton mills, they later became companion dogs and were very fashionable in the Victorian age. The Kennel Club finally recognised the breed in 1886, and their present name was given in 1870 when a reporter for The Field wrote ‘They ought no longer to be called Scotch Terriers but Yorkshire Terriers for having been so improved there’. They quickly became fashionable dogs for high society ladies, as they were playful, easily picked up and pretty.
Appearance
Well-proportioned dogs, Yorkshire Terriers are small, with a flat head, strong jaw and a little black nose. They have long, straight glossy coats, small ears and a docked tail of medium length. The hair on their head is very long and can often be seen tied with a bow on top of its head. Puppies are born black and brown and after two years have characteristics of golden-brown and metallic grey.
Temperament
These highly-energetic little dogs are brave and intelligent, as well as cheerful and alert, making wonderful pets. They’re very obedient to their owners, getting along very well with children and other animals but they do not like to be left alone for long periods. Often, if they sense danger or if unfamiliar people come near them, they will bark.
Things to watch out for
Yorkshire Terriers are very sensitive to the cold weather, so need to wear protective clothing. Their long hair may require frequent grooming to avoid knots and owners will need to be careful to tie up the hair from around their eyes so that they can see.
Is a Yorkshire Terrier for me? If you want a family-friendly dog that can be easily trained, the Yorkshire Terrier is a fantastic option for you!
Due to their size, they are well suited to people living in flats and apartments, and they also make super guard dogs. However, their size means that they only enjoy short walks so could adapt to less active owners. You will need to be able to dedicate spend time grooming them daily or get their fur trimmed regularly.

History
Spaniels as a group are named for the fact that they originated in Spain. As a whole they were brought to England on trading ships and there are records of Spaniels being in Wales as early as 300AD. Originally bred as a working dog, puppies from the same litter would be split and grouped by size with the smaller ones being used to chase woodcocks and the larger one for general use, springing the larger game. This led to the two being distinguished as Cocker Spaniels and Springer Spaniels and the divergence of the two breeds. The breed was officially recognised by the Kennel Club in 1902 and has since enjoyed popularity in the UK, US and Canada.
Appearance
Springer Spaniels have developed a double-layered coat to protect them against all weathers, water and thorns. Their longer topcoat can be straight or wavy and their fur is generally soft and
smooth throughout their lives. They have feathering around their ears and chest and sometimes down the back of the legs and around their paws. While Springers come in a variety of colours and combinations they are best known for the liver and white and black and white types. They also come in a blue and liver roan. They tend to be split between field and show types; show types are more colour than white and field types are more white than coloured.
Springers have a very keen sense of smell and a lot of energy. They are very speedy and love to chase things, in fact the only time they are likely to disobey their owners is in pursuit of squirrels!
Things to watch out for
Their floppy ears can block air circulation and become a bit of a breeding ground for mites and bacteria. Make sure you check them regularly, dry them after swimming or rainy walks and clean as necessary. As they get older Springers will become less tolerant of rough handling so may not get on as well with young, boisterous children or dogs.
Temperament
Springers are friendly and obedient as well as being very eager to please. They do get very attached to their owners and won’t like to be left alone for long as they may become anxious.

If you like a good daily walk and are able to have your dog with you most of the time then you will get along swimmingly with this active, loving breed. We do advocate always choosing a breed, breeder and puppy with care to ensure the best possible fit for you and your new friend.

Chicken & sweetcorn tacos
Serve up these healthy chicken and sweetcorn tacos for an easy midweek meal that’s full of flavour. Ingredients l 250g plain flour , plus extra for l l l l l l l l l l l
dusting 2 tbsp rapeseed oil 2 tbsp taco or fajita seasoning 5-6 skinless chicken breasts, sliced ¼ red cabbage , finely shredded 3 limes; 1 juiced, 2 cut into wedges Small bunch of coriander, chopped 4 sweetcorn cob , kernels sliced off, or 400g frozen sweetcorn 400g can black beans , drained and rinsed 2 garlic cloves , crushed 4 tbsp fat-free yogurt , to serve chilli sauce , to serve
Step-by-step 1 Combine the flour with half the oil and a small pinch of salt in a bowl. Pour over 125-150ml warm water, then bring together into a soft dough with your hands. Cut into six equal pieces, then cut four of the pieces in 32
half again, so you have eight small pieces and two large. Roll all the pieces out on a floured work surface until they’re as thin as you can get them.
2 Heat a dry frying pan over a medium-high heat and cook the small and large tortillas for 2-3 mins on each side until golden and toasted (do this one at a time). Leave the large tortillas to cool, then cover and reserve for use in the lunchboxes. Keep the small tortillas warm in foil.
stirring occasionally – you want the sweetcorn to char slightly, as this adds flavour, so you may need to leave it to cook undisturbed for a bit. While the sweetcorn cooks and chars, fry the chicken in the larger pan until cooked through and golden (you may need to do this in batches).
5 Tip the black beans and garlic into the sweetcorn and stir to warm through. Squeeze over two of the lime wedges.
3 Sprinkle the taco seasoning over the chicken in a bowl, and toss to combine. Toss the cabbage with the lime juice, half the coriander and some seasoning in another bowl, then leave to pickle.
6 Reserve two spoonfuls each of the chicken (about 1 chicken breast) and sweetcorn mix for use in the lunchboxes, then serve the rest in bowls alongside the cabbage, yogurt, lime wedges, remaining coriander, chilli sauce and tortillas for everyone to dig into.
4 Meanwhile, heat two frying pans over a high heat. Divide the remaining oil between the pans and fry the sweetcorn and a pinch of salt until sizzling and turning golden,

An L-shaped dormer conversion
This type of conversion is built by connecting two dormers together: one on the main roof, the other on the rear roof. The result is a much larger space, which can be used for either two bedrooms and a bathroom or one large bedroom and bathroom, or a host of other combinations. This type of conversion is particularly popular on period properties.
Hip-to-gable and rear dormer conversion
As the title suggests, this is a combination of the two different types of conversions, resulting in a large and airy space. Planning permission may be required - a big factor to take into consideration for your home improvements.

Skylight conversion
A skylight or VELUX window conversion is one of the simplest and most cost-effective loft conversions to build, because the roof of the property is not altered in any way and only windows are added. This generally means that planning permission is not required. Space however is more restrictive than other types of conversions.
Dormer conversion
This is one of the most popular types of loft conversion as it provides a good amount of head height. It has the ability to add up to 50 cubic metres of extra space to your property. The dormer is usually built out of the slope of the roof and generally does not require planning permission.

How to make the most of your sloping outdoor space
AST month we gave you some ideas on how to use a sloping garden to your advantage and make the most of the feature. Here are some more suggestions. Our expert sloping garden ideas will inspire you to use an incline to your advantage, making the most of a sloping garden by creating different levels, each with a different purpose.
Enjoy a multi-level garden There’s incline, and then there’s ski slop-style that is hard to imagine where to start! The long sloped garden pictured (top left) comprised a height difference of over 5 metres from the upper terrace to the bottom of the garden, making the space pretty much unusable. The solution was to create a series of flat terraces, each serving a different purpose, with steps linking the different areas. A generous dining terrace was created at the upper level by the house, leading down to a lawn with flower borders and a secondary deck. This leads down to a sunken trampoline area from which you can walk onto the roof of the new studio/sauna.

Make a statement with lighting The different levels of a sloping garden provides the ideal layout to use garden lighting ideas to full effect. On a practical note it accentuates the different heights between levels, providing a safer way to navigate the journey through. In terms of design the lights add a more dramatic look, as they highlight key planting and bring the many zones to life with illumination. Try setting each zone to a different light level to ensure you can provide the right light for each setting – brighter in the kids’ area, more ambient on a terrace made for entertaining.
Gently transition between levels You can achieve a gente transitioning effect by combining retaining walls with slowly rising steps, which encircle the sloping ground to subtly transition the levels’, providing a design feature in the process. Use natural materials such as breedon gravel and gabion cages (pic, bottom left). With over-sized aggregates the level changes can be further softened to slow down the pace and thought of moving through the space.

Embarking on your road trip
The temptation may be to cover a lot of miles and pack a lot in (literally!). But remember that once you’ve collected your hired campervan the enjoyment is in the journey, not the destination. So try to take it more s-l-o-w-l-y than you would in a car, particularly if you’ve hired a vintage camper or motorhome. Relax, take it easy and enjoy the novelty of the ride. The driving experience is different for starters. While modern campervans will feel similar to a (heavy) car, vintage campers are a different story altogether and you’ll need to treat them gently.
Pitching up
So you’ve picked up your camper... but where to camp? If you’re holidaying in a quieter month then you can afford to be spontaneous and just pitch up, but at peak times or popular places it’s advisable to book ahead to avoid turning up after a long drive to find the site’s already full. For those used to camping under canvas, camper vans are much quicker and easier to set up: just make sure you select a flat pitch (avoiding wet or boggy grass) and choose one with an electric hook-up only if you intend to plug in 240v appliances such as kettles and heaters. Just raise the roof, wind out the awning and put the kettle on!
Do I need to stay on a campsite?
It’s a fairly common question for first time campers. While in theory the self-sufficiency of a campervan means you could ‘wild camp’, in practice it’s advisable to stay at campsites for two
main reasons. First, choosing a spot just off a road will lack essentials such as electricity, toilets, hot showers and washing-up facilities, and may potentially be unsafe. In Scotland too, wild camping in campervans is technically prohibited. However, on beach and countryside car parks informal camping is sometimes tolerated across the UK as long as you use common sense. This means obeying signs and bylaws, parking away from others, considering the cumulative impact of wild camping on local habitats, taking all waste away with you and never staying more than a night or two.
The lack of power steering and engine power will often dictate your pace of driving anyway, while you’ll have to use side mirrors much more frequently and will need to get used to parking! A final tip is to park well away from others and also seek out car parks with larger spaces for motorhomes.

Meals on wheels
Cooking is great fun in campervans. But with only two rings (plus a fridge and water on tap) you’ll need to be inventive with your meal planning! Quick-cooking meals involving pasta, couscous and chilli are staples, matched with ingredients such as pesto, chorizo, fresh seafood and herbs. When it comes to smelly foods such as fry-ups and kippers, our advice is to cook these outside on a barbeque or small stove!
Sleeping arrangements
While younger children can go to bed at their normal time in a larger motorhome or campervan with a pop-top roof (given separate sleeping areas), many families may find that it’s easiest just to share the same bedtime. You are on holiday after all! At night, pack the family off to the wash block en masse and get some much-needed space to make up the beds.
