Hello and a warm welcome from
Inside Flintshire magazine Hello and a warm welcome to our December issue.
Contents
It’s late November as I write this month’s editor’s colummn and it’s already starting to feel a lot like Christmas with all the festive adverts on the TV, the Christmas lights going up around Flintshire and not to mention the Christmas songs in the local shops. So keeping with the festive theme, we have some great editorials to browse through, including our Christmas gift ideas with a difference for Him and Her on page 6-7. If you’ve not yet decided on where to go for New Year take a look at this month’s holiday review on pages 16-17.
48
One of my favourite times of December used to be taking the children to see Father Christmas (They’re a bit too old nowadays though) so we’ve come up with a list of the best venues across the region to get the family in the festive spirit and have a great day out visiting Santa pages 20-21.
32
A lot of us like a tipple or two during the Christmas period so take a look at our hangover cures on page 24, just in case you have one too many. Why not try our Cherry Pecan Christmas pudding recipe on page 32 and really impress the family at Christmas Dinner? There’s lots more going on inside this month’s issue so please take a look.

PROSECCO : A JOY OF LIFE
There are many producers of sparkling, aromatic, prosecco wine. For this quest I searched for a company that produces a range of high-quality prosecco wines, with impressive bottle presentations. Bottega has a very interesting history, both during the 20 century and into the 21 century. The eye-catching bottles and a great number of the wines are award-winning. The bottles are created by artisan crafts people and are really distinguishable. From their prosecco range I found the following to be very impressive. th
st
Bottega Poeti Prosecco (DOC) is fresh, fragrant and has a floral bouquet. This wine is a very popular, dry production and favoured by many. Bottega Valdobbiadene Prosecco Superiore (DOCG) Extra Dry is another poets’ wine which is also very popular. Having a brilliant strawyellow colour, too, this fresh and fragrant wine graces many dining occasions, regularly. Bottega Prosecco (DOC) Biologico Extra Dry is often chosen and has many devotees. This organic production is, again, a brilliant strawyellow colour. Very fine, fresh, fruity and delicate is how I would describe this, much sought-after, prosecco. Bottega Prosecco (DOC) Fundum I found to be a splendid dry production, that has plenty of fruits, to please. The mouthfeel and palate sensation is fresh, with a good finish. Gold Poeti Prosecco (DOC)
as o wine h Prosecc e been th always f o ion express y. nd poetr a s s e in p p a h
is a further very classy production from Bottega. Fresh, aromatic and very impressive, this wine comes in a magnificent gold-coloured bottle. Again, a fruity bouquet prevails, which leads, enticingly, to the wonderful mouthfeel. The palate is treated to a sensation that is impressively pleasant and memorable. The glamour of the bottle presentation adds to the pleasures of this production, which is extremely popular for special occasions and also makes a really wonderful gift.
Prosecco wines, having a persistent and fine perlage, are perfect for apĂŠritifs and excellent to pair with starters, also fish, seafood and white meats. Prosecco and other wines, including grappa, plus liqueurs, along with a range of other products, are all made with much knowledge, love and devotion, so the finished Bottega productions are of the highest quality and quite exceptional. New Year getaways: great hotels, pubs and cottages
Baby it’s cold outside… The Bell at Skenfrith, Monmouthshire. Photograph: PR
The Bell at Skenfrith, Monmouthshire
The 17th-century coaching inn the Bell at Skenfrith is now an award-winning restaurant with 11 boutique rooms. It’s not cheap, but if you want to splash out for a special celebration, its two-night New Year package includes champagne, cocktails and canapes on arrival; dinner, music and dancing; fireworks and fizz at midnight; and full Welsh breakfasts. The three-course New Year’s Eve menu (£85pp for non-guests) features lobster ravioli, guinea fowl, and white chocolate and raspberry creme brulee. The pub provides pamphlets for six circular walks that will blow away the cobwebs on New Year’s Day; its bar is designed for muddy walkers (and pets), and serves ale from the Wye Vallery Brewery and cider from nearby Whitehouse Farm.
room and swimming pool. The smart restaurant is in the former library, serving the likes of sticky (Hereford) beef bourguignon. On New Year’s Eve there’s a special five-course meal.
Two-night package from 30 or 31 December, with dinner, bed and breakfast each day and arrival drinks, from £212pp (low-season B&Bfrom £89). 01989 730211, brookscountryhouse.co.uk

Brooks Country House, Pengethley Estate, Wye Valley
For a lord (or lady) of the manor experience, hole up in Brooks Country House, set in 13 acres of grounds on the Pengethley estate in the stunning Wye Valley. There are great walks on the doorstep, and the valley’s main attractions, like pretty Symonds Yat village, are all situated close by. The 22 rooms are sleek and elegant (some with fourposters), while the manor house has lounges, a games

Inn at South Stainley. Photograph: Pavel Szylobryt
The Inn, South Stainley
The Inn at South Stainley (formerly the Red Lion) reopened this summer after a £1.5m renovation by the Seafood Pub Company. The bar/restaurant, between Harrogate and Ripon, has 12 contemporary rooms in shades of grey.
The regular menu is unsurprisingly seafood-heavy – tikka-spiced monkfish, crab pizza – and the cocktail list imaginative (the 90s cosmopolitan gets a rhubarb and blood orange twist). Its inaugural New Year’s Eve party features a “fruits de mer spectacle” and “roast meat stations”, and entertainment including magicians and DJs.
Doubles from £150 (low season from £75), £44.95pp for the NYE party. 01423 779060, seafoodpubcompany.com
Dale House, Dove Holes, Buxton, Derbyshire
Combining rustic charm with all mod cons, Dale House in Derbyshire is a party pad. There’s a modern kitchen, dining room for 30, two large living rooms, 12 bedrooms and 12 bathrooms, across two properties. Litton village is a short walk away and the market town of Bakewell is nearby, as is Buxton; but it’s the rural location – surrounded by five dales, with great walks on the doorstep – that makes this place such a treat.
Due to a cancellation, four nights for up to 30 people at New Year is £6,000, or £50pp per night (low season £6,500 a week). coolstays.com
Cottage Lodge, Brockenhurst, New Forest
A charming low-rise, whitewashed building just five minutes’ walk from Brockenhurst station, Cottage Lodge has 15 pretty rooms named after local woodland beauty spots, several with Tolkienesque four-posters.
Dale House
The restaurant, White Tails, has a six-course NYE gala dinner for £65 a head, including a glass of prosecco and a “surprise tipple”. The waiting staff will include an actress recreating Julie Walters’ role in Victoria Wood’s Two Soups sketch. There is a range of forest walks from the door to blow away the hangover.

The interior of the restaurant is cosy and minimalistic, a key feature being a glass window in which you can see how spotless the kitchen is and also watch the speed and culinary skills of the chefs hard at work.
Our starter came just as we were finishing up the Crackers and we both agreed the presentation looked impressive. It arrived on a huge platter which was kept warm over a table top food warmer. On the platter were Singapore-style Spicy Meatballs which were very tasty, Malaysian Curried Samosa which were delicately spiced chicken and potato wrapped in a triangular parcel and deep fried, Malaysian Skewered Spicy Sate Chicken which had a rich peanut taste to it, Aromatic Fragrant Chicken which was presented in an impressive crispy edible potato basket and tasted divine.Last, but certainly not least, were Spare Ribs in Honey and Chilli Sauce, which were absolutely delicious and just fell of the bone.

Asian dishes on offer so we decided to ask the waitress what she recommended and she was extremely enthusiastic in her choices so we thought we must be on to a winner.
The first recommendation she made was Honey and Chilli Crispy Beef which she said was spicy and she certainly wasn’t wrong! Again this came presented impressively in a potato basket and, like the sauce on the ribs, it was delicious. It had exactly the right amount of sweet yet spicy, sticky sauce smothering the crispy beef which was then finished with sesame. The second recommendation was just as good – it was a Bangkok Green Curry, which was a fragrant sauce cooked with green chillies to make a spicier variation of curry thickened with coconut milk and then cooked with bamboo shoots strips, fine beans, aubergines, sweet basil leaves, shrimp paste and fish sauce.
Although the restaurant was busy the service was excellent and staff were plentiful, ensuring orders were taken quickly yet efficiently. All the staff made you feel welcome and nothing was too much trouble. The extensive menu has a variety of spicy food from around South East Asia, Including dishes from Thailand, Vietnam, Malaysia and Singapore, offering something for everyone, and we were keen to try as many dishes and different flavours as possible. With that in mind, we went for a Malaysian Combo starter. Whilst we awaited our platter our waitress brought over Thai Spicy Prawn Crackers and a Hot Chilli dip; They had a kick to them and had a crunchier texture than the normal Chinese prawn crackers.

We thoroughly enjoyed our meal at The Hot Wok. The service was excellent, the presentation impressive and the food delicious. We enjoyed trying different dishes from South East Asia and not just having the usual Chicken Curry or Sweet and Sour Chicken. We both agreed we would definitely return to try more dishes on the menu sometime soon.

Christmas and New Year
Hangover cures For many of us the holiday season is synonymous with partying and with that, of course, comes the natural temptation to over-indulge. Food and, more specifically, alcohol are consumed in copious quantities and even the most
hardened party-goer can be left feeling the worse for wear. These handy tips will separate fact from fiction and hopefully help prevent Christmas and New Year turning into one long hangover!
Te mts
Having a fry-up the morning after: Alcohol causes blood sugar to fall, tricking your body into thinking it needs more calories. We therefore crave fatty foods as they are the most concentrated form of energy, but they don’t make us feel better. Hair of the dog:
There’s no evidence to suggest that having another alcoholic drink the following morning reduces hangover symptoms. It’s more likely to merely postpone its effects.
Eating before bedtime:
The alcohol cannot be absorbed in this way. The food has to be in your stomach first.
Drinking water the morning after:
This will not flush out the alcohol. It will help, but it is much more important to take on water while you are actually drinking alcohol.
Sleeping it off:
Spending the following day in bed will not help you recover quicker. The last thing you will want to do is get out of bed and walk around the block, but it is exactly what you should do. Alcohol leaves the body through urine and through your breath, so if you want to sober up faster, get yourself out for a walk or a jog.
Drinking a strong cup of black coffee: Sorry caffeine lovers, but this is another myth. Caffeine will increase alertness and focus your attention, but it won’t help your body process alcohol any faster. Not only that coffee is very acidic, so if you’re already feeling queasy then it might just make you vomit.
Te tuh
Eat before you start drinking: Food in the stomach (especially carbs and starch such as pasta and bananas) slows down the absorbtion of alcohol into your blood. Keep hydrated:
Follow each drink with a glass of water and drink plenty of water before you go to sleep.
Don’t drink dark liquors:
Try to avoid drinks such as red wine, brandy or whisky, which have higher concentrations of of congeners, chemicals which are toxic to the body.
Avoid spicy foods:
Don’t be tempted by a curry or kebab after drinking as they may upset your stomach.
Get some fresh air:
Walk home with friends - exercise helps increase the speed at which alcohol leaves the body.
Vitamin B is your friend:
Eat a bowl of cereal and milk, topped with a banana to replenish lost potassium, or a gentle probiotic drink.
Eggs: Eggs may have a beneficial effect in reducing the effects of a hangover because they contain an amino acid called cysteine which breaks down acetaldehyde, a toxin produced by excessive alcohol consuption. Moderation:
As a rule, men should not drink more than 3-4 units of alcohol per day; women no more than 2-3 units.
Avoid drinking too much!
Obvious, we know, but it’s still the best hangover prevention method available.

Recipe of the month
Christmas Day
Cherry pecan Christmas pudding This lighter version of the classic Christmas pud is still full of festive flavours. Citrus zest and brandy are added to this nutty spiced
fruitcake. Ingredients
1 medium carrot, finely grated | zest and juice 1 lemon | 1 orange, zested and segments cut out | 100g light muscovado sugar | 1 tsp mixed spice | 100ml brandy 50ml Disaronno | 100g butter, frozen, plus 25g extra for greasing | 2 large eggs, beaten 50g blanched almond, half of each chopped | 50g pecan nuts, half of each chopped 100g self-raising flour 175g fresh white breadcrumbs 2 tbsp golden syrup | 1 sprig of holly, to decorate (optional)
Method
1 Put the mixed fruit, glacĂŠ cherries, mixed peel, carrot,
lemon and orange zest in a bowl with the sugar and spice. Pour in the lemon juice and alcohol and stir really well. Cover and leave to soak overnight. 2 Heat oven to 160C/140C fan/gas 3 and boil a full kettle of water. Grease a 1.5-litre pudding basin and put a disc of baking parchment in the base. Stir the eggs into the fruit mixture, then stir in the chopped nuts, flour and breadcrumbs. Finally, grate in the frozen butter, stirring the mixture frequently so that it evenly disperses. 3 For the topping, mix the soft butter and golden syrup together, and spread over the bottom of the basin. Pile in the whole cherries, orange segments and whole nuts,

breaking the pecans in half as you add them. Try not to just make a thick layer of fruit and nuts on the base – ease some up the side too. Spoon in the pudding mixture and level the top, then cover with baking parchment and foil. Tie the top with string or an extra-large rubber band, then place in a roasting tin and pour in the water from the kettle. Cover the whole thing with a tent of foil to seal in all the steam, then place in the oven for 6 hrs. This gives a light pudding, so if you prefer a darker one, cook for up to 8 hrs. Will keep in the fridge for 1 month. If you want it to last longer, omit the orange segments.
4 To serve, steam in a large pan with an upturned saucer on the base for 2 hrs, then turn out and decorate with holly, if you like. Serve with Brandy syrup cream.

Nothing says Christmas is on its way quite like the annual tradition (or ordeal) of putting up the family Christmas tree. Forget vacuuming up pine needles every day – it’s far easier to go artificial with trees,
and with so many great realistic designs that can last you for many years to come, we think it’s all the better to fake it. Take a look at the interesting new designs for 2017, all hoping to be the next big thing.

Best tinsel tree
Tinsel is back big time this year – we have it on good authority from John Lewis. You know they must stand by that claim because here is a tree entirely made of tinsel! If you want to make a style statement and break the mould of having a traditional pine green tree, go for tinsel! This statement tinsel tree is stylish enough just as it stands, but for further enhancement try dressing it with on-trend kitsch decorations. Keeping all the decorations to one colour palette or look will keep it looking the right side of stylish, rather than OTT. Best 3ft tree
Add a touch of Scandinavian charm to Christmas proceedings with simple Nordic pine tree. The incredibly realistic look of this faux fir tree is in part down to the genuine pine cones added for decoration, and the fact that each branch has been expertly handpainted. It’s the attention to detail that makes The White Company trees so fabulous. The aged zinc-effect pot is a lovely finishing touch too. Gardening tips for
December
Many of us do more shopping and planning for our gardens during the winter months than actual gardening, but that doesn’t mean there’s nothing to do. In the warmer zones, December is the start of pleasant weather and a chance to enjoy planting cool season vegetables
Lawns
Avoid walking on lawns on frosty mornings and when it is blanketed by heavy frost or snow, as this will damage the grass beneath. If it’s a mild winter, continue to cut the lawn if it’s growing, but raise the height of the mower blades. Spike lawns with a garden fork to improve drainage and in and prevent dead patches appearing. Send your lawnmower and shears to be serviced and sharpened while they are in less demand.
is the ideal time to Gardening tip This clean the greenhouse,
pots using a pot brush and trays in readiness for plant raising. Wash down all of your garden tools and give them a wipe of linseed oil on the wooden and metal areas to help prevent rusting.
Trees and shrubs
Protect newly planted trees, hedges and shrubs from cold winds and frosts, which can loosen and lift the roots. a temporary netting windbreak if there is no natural shelter. Thick dry mulches will protect the roots from cold, and A wooden frame with clear polythene stretched over it does a similar job for evergreens without blocking the light, but don’t let the polythene touch the leaves, as condensation could freeze or cause rot.
52 80
Plant some shrubs for winter interest. If you still haven’t planted your tulip bulbs there is still time, provided the ground isn’t frozen.
Flowers & Plants
Should you have a few spare hours available, pruning growth next season. Gather up fallen leaves from around the base of rose to reduce the chance of infection next year. Move containers of shrubs or bedding plants to a sheltered spot; clustering them together helps protect the Sowings can be made of coleus, cyclamen and geranium provided suitable temperatures can be maintained. Taller growing bush roses can be pruned down by about half which will prevent the wind from causing them to become loose through swaying and in turn damaging the roots. The branches of standard roses should also be shortened. Bare-rooted rose bushes can be planted this month.
Winter pond care
Use pond heaters to keep ponds from freezing over, as There are other precautions you can take to prevent your pond freezing over, if you do not have a heater. To make a hole in frozen ponds, hold a saucepan of hot water on the surface until melted through. Do not crack the ice, as this
Wild Birds
Wash and disinfect bird feeders and bird tables. Clean out bird baths too. Hang fat balls and keep bird feeders topped up to attract birds, who will in turn eat pests in your garden. Please remember to hang bird feeders at a height so that they will be beyond the reach of cats.
