Spaghetti Squash Chicken Saute Ingredients: 1 1 2 1
spaghetti squash can sliced mushrooms cups of broccoli stick of butter
2-4 chicken breasts 1 medium onion 1 garlic clove (minced)
Directions: Cut spaghetti squash in half, scoop out seeds, place face down in a baking dish and bake at 375 degrees for 30 to 40 minutes. While spaghetti squash is baking, place chicken breasts into a deep frying pan with a small amount of butter. Cook on a medium heat until chicken breasts are done. Once chicken breast are done set them aside. Chop up onion into large pieces. Wash and cut broccoli into pieces. Mince one garlic clove. Melt the stick of butter on a medium heat in the same pan that was used to fry the chicken in. Add the sliced mushrooms, chopped onion, broccoli, and minced garlic to the melted butter. Saute together until the mushrooms, onion, broccoli, and garlic are done. Chop chicken into pieces, then add back to deep frying pan with mushrooms, onion, broccoli, and garlic. Once spaghetti squash is done, let sit for 5 to 10 minutes to cool. The spaghetti squash will be tender when it is done. With a fork, gently scrape the flesh of the spaghetti squash. Once you have scraped all the flesh from the spaghetti squash combine it with your saute mixture. Saute again for 5 to 10 minutes and serve.
