Summer Fund and Food Drive We Need Your Help
Hunger is a year-round problem in Alabama. That is why your cooperative is working hard to do our part to help fight hunger. Join us for the Summer Fund and Food Drive sponsored by WSFA and Dixie Electric Cooperative. We will be at the Chantilly Walmart in Montgomery on June 24 from 5 a.m. until 7 p.m. collecting monetary donations and food items. If you can’t make it to the drive, donations can also be made through the food drive link on our website at www. dixie.coop. This link will take you to the Montgomery Area Food Bank’s secure online donation center. Whether your donation is large or small, you can make a difference to a local family. Together we can help eliminate hunger in Alabama.
Coconut Shrimp
Ingredients: 1 egg 2/3 cup beer 1/4 cup all-purpose flour 24 shrimp
1/2 cup all-purpose flour 1 1/2 teaspoons baking powder 2 cups flaked coconut 3 cups oil for frying
Directions: In medium bowl, combine egg, 1/2 cup flour, beer and baking powder. Place 1/4 cup flour and coconut in two separate bowls. Hold shrimp by tail, and dredge in flour, shaking off excess flour. Dip in egg/beer batter; allow excess to drip off. Roll shrimp in coconut, and place on a baking sheet lined with wax paper. Refrigerate for 30 minutes. Meanwhile, heat oil to 350 degrees F in a deep-fryer. Fry shrimp in batches: cook, turning once, for 2 to 3 minutes, or until golden brown. Using tongs, remove shrimp to paper towels to drain. Serve warm with your favorite dipping sauce.
