Hash Brown Casserole

Ingredients:

2 lb. frozen hash browns

1 tsp. salt

1/2 tsp. pepper

1/2 stick of butter

1/2 cup chopped onion

2 cups grated cheese

8 oz. sour cream

8 oz. cream of chicken soup

Directions:

Let potatoes partially thaw. Mix all ingredients, and pour into greased 13 x 9 casserole dish. Bake 45 minutes at 350° uncovered, or until bubbling.

Optional: Top with cheese covered with melted butter or breadcrumbs before baking.
