CHRISTMAS SPICE CAKE WITH CREAM CHEESE ICING

Christmas Spice Cake Honey Cream Cheese Icing with BOOST YOUR FAVORITE BOX YELLOW CAKE

INGREDIENTS

• 1 box yellow cake mix • 1 pkg. instant vanilla pudding • 4 eggs • 1/2 cup pineapple juice • 1/2 cup melted butter • 1/2 cup Grand Marnier liqueur • 1 single serve container of apple sauce or 1/2 cup • 1 tbsp Madagascar vanilla

FOR THE ICING

• 16 oz cream cheese • 1 cup powdered sugar • 1/4 cup honey • 1/4 cup Grand Marnier liqueur • 1 tsp Madagascar vanilla

DIRECTIONS:

 Preheat oven to 350°  Using two 8” or 9” cake pans, cut parchment circles to fit and spray with cooking spray.  Mix all cake ingredients in mixer.  Pour equal amounts of batter in each pan.  Bake for 25 minutes, then test with a toothpick for doneness. If not done, check every five minutes until toothpick comes out clean.  Once cakes are done, let cool on rack for five minutes.  Invert cake pans on cooling rack to remove.  Mix the honey and Grand Marnier that will be used for the icing.  Brush bottom of each cake with the honey

Grand Marnier mixture. Use the remaining mixture for the icing.

FOR ICING:

In a mixer, whip cream cheese, vanilla, honey and Grand Marnier. Mix until well blended. If the texture is too loose, add powdered sugar until the consistency of whipped butter.
