COOKING THROUGH CANCER WITH CHEF CARL

A

ccording to “Why Restaurants Fail,” a study conducted by Ohio State University, more than half of restaurants don’t make it past the first year, and 80% fail in less than five years. But Chef Carl Schaubhut has been fighting the odds since his first cancer diagnosis in 2014. His cancer returned less than two years later, but he didn’t let that stop him from opening his first restaurant, which has been enormously successful. Despite the hand he’s been dealt, Chef Carl uses his diagnosis and platform to promote healthy eating to greater New Orleans families. “As someone who’s battling cancer, I understand first-hand that the more funds, support and awareness that this type of community-wide wellness initiative can raise means that we can have even more resources available to help us live our strongest, healthiest lives,” he says. He knows that eating healthy doesn’t have to mean eating bland. Chef Carl enjoys whipping up tasty, yet healthy, options for patrons. “I love it when the guest doesn’t even know that it’s good for them, that it’s been modified to be healthful – and they enjoy it as just a fantastic-tasting dish. Some of our Eat Fit dishes have been among the best-selling dishes on the menu,” he says. You’ve no doubt heard the phrase, “You are what you eat.” Gut health is crucial to our immune systems, brain function and overall mood. Food is what fuels our bodies and helps us regenerate healthy cells. Wholesome eating doesn’t necessarily negate hereditary diseases like cancer, but it is certainly a major inhibitor and preventative verses poorer nutritional options. That is why it is important to choose wisely. Regarding his new attitude on healthy eating post-cancer diagnoses, Chef Carl says, “A lot of things needed to change – and it’s not a temporary thing; this has been a lifestyle change for me.” Chef Carl encourages families to make permanent lifestyle changes before it gets to that point. He devotes his time and energy to creating healthy meals and bringing awareness to the benefits of a nutritious diet.
