John Douillard, DC has been teaching Ayurvedic medicine, natural health, fitness, and nutrition internationally for over 25 years. He received his Ayurvedic training in India and holds a PhD in Ayurvedic medicine from the Open International University. Mark Bittman is a food writer for The New York Times weekly column, “The Minimalist”, and author of Food Matters: A Guide to Conscious Eating and How to Cook Everything.

Prep Time: 10 minutes Cooking Time: None Yields: 1 serving
Prep Time: 5 minutes Cooking Time: None Yields: 20 servings
15 or so chunks of fresh pineapple + ¼ cup juice
2 cups rolled oats ½ cup organic applesauce ¼ cup almonds 1 tbsp. cinnamon 1 tsp. vanilla extract 1 cup pumpkin puree 1/3 cup dried cranberries 1 tbsp. maple syrup 1/3 cup dark chocolate morsels
1 granny smith apple (with skin), cored and chopped 1 cup fresh spinach 1 frozen banana ½ of an avocado 1 tbs chia seeds ¼-½ cup almond milk Blend and enjoy!

• Preheat oven to 350. Mix all ingredients in a bowl. Spray cookie sheet with non-stick spray. • Scoop mixture into 1.5 inch “cookie” balls. Bake for 15-20 minutes.
